Every great design starts with a vision. Let’s find yours.

Stage 1: Consultation

Stage 2: Design

If you are updating an existing space, one of our designers will survey your property. If you already have plans of the new space, we would invite you to bring them into the showroom. We would talk through your vision and discuss everything, from appliances, worktops, colours, to styles of doors.

Next, we’ll start designing your dream kitchen, taking into account everything we’ve learnt about you, your vision, and your space. We’ll then invite you back into our showroom to talk through the design

Stage 3: Order

Stage 4: Delivery

We will conduct a final site survey to double check all measurements, and once you are completely happy with the design, the order will be placed.

As soon as we know when your kitchen will be ready, we will get in touch to organise an installation date that works for you. We will ensure a smooth seamless delivery and install of your dream kitchen.

New Image has dressed a lot of ladies in 2023, whether that’s for weddings, special events, holidays or for everyday wear. They have also dressed dignitaries, including previous Master Cutlers, the High Sheriff and the Mayor of Rotherham. In September, New Image were invited to showcase their collections at a fabulous charity fashion show at Wentworth Woodhouse, which was organised by outgoing Master Cutler, Dame Julie Kenny, and was part of the Master Cutler’s Challenge. Dame Julie is the Chair of Trustees of the Wentworth Woodhouse Preservation Trust and spent much of her year in office raising money for various projects relating to the spectacular house, “Wentworth Woodhouse was such a wonderful and beautiful setting for showcasing our collections,” recalled Lesley. “I would like to thank all the models who looked so stylish and did a fabulous job. “Our first section gave ladies a taste of sweaters, jeans and knitted dresses by Marble and stylish coats perfect for a day racing. Charity evening A curry night at popular Sheffield restaurant Prithi Raj has raised an incredible £60,050 for The Children’s Hospital Charity. Taking place on Thursday 19 October, it was the event’s fifth outing in support of Sheffield Children’s, again organised and sponsored by Graham Royle from Sheffield-based chemical firm GRI Group. The packed-out function saw Channel 5 News presenter and Patron of the Charity Dan Walker in attendance, along with fellow Patron and Olympic gold medallist Jess Ennis-Hill. The event was also supported by HSBC and Lloyds with match funding and volunteers.

New opening The Lane Boutique has recently relaunched with new business owner, Jade McCarthy at The Forge Shopping Centre in Dronfield. Originally working on the digital side of the business, Jade recently took ownership of the business and decided it was time to bring back the Lane Boutique to the high street, bringing a mix of the original plus-size ladies fashion the boutique was known for - with her own twist on some more unique collections and styles. The boutique is based in The Forge opening 10am-4pm, Wednesday-Saturday, however their online boutique is also popular with local customers as they offer free click and collect instore when you buy online.

WHAT TO WEAR ON CHRISTMAS DAY, BY FASHPACKSTYLE. ight let’s get down to it. The festive season is well and truly here and hopefully your party wardrobe is ready for the onslaught, now it’s time to focus on what to wear on the big day - 25 December. I find that most people either: a) Want to stay in their pyjamas all day b) Want to dress up c) Want to be somewhere in-between That’s usually me! As we regularly host the Christmas festivities, I like to be somewhere in-between, looking like I have made an effort with some kind of festive flourish (I love a stamens earring) whilst wearing something that can easily be washed (those pesky cooking smells can be hard to get out) but also be comfortable and cozy. Even if you prefer to wear your pyjamas all day, let’s make sure you look luxe doing it, so should a loved one pop round for a glass of something special, you still look put together and chic. Here’s a handy list to get your started:

trousers with flowing shirts to knitted tanks paired with flared trousers. A coord gives the feel of your favourite PJs but is evaluated enough to be worn on multiple occasions, maxing out your cost per wear. I always advise purchasing both pieces from a co-ord set. COS have some great sets in store, like the midnight blue knitted two-piece pictured. Just add your favourite statement jewellery and you are good to go.

Getting dressed up Going out? Then really dress up. Winter is a great time to play with texture which adds depth to a look. Take an allblack outfit for example. If you include pieces with contrasting textures you will be able to take it from drab to fab. Think

leather with cashmere, velvet with silk, sequins with mohair. The contrast is everything.

Somewhere in between If you’re staying home but want to make an effort, make comfort your priority. As I have said many times before, a long silk maxi skirt or slip dress is an absolute wardrobe staple. It can be dressed up with heels, a tux jacket with some statement jewellery or dressed down with a knit over the top and some knee boots. Make your own wrapping paper To make your gifts really standout this Christmas why don’t you try making your own wrapping paper? There are many ways to this, but a super simple option is to use classic brown paper and decorate with stencils or stamps. You could use metallic paint or paints in festive green and red. Not only will this create a beautifully homemade look, but you will save money and be helping the environment!

Hot Chocolate in a Jar This is a super simple DIY gift idea that is great to give to anyone who loves cosying up with a delicious hot chocolate. All you need is an empty jar, chocolate, sugar, cocoa powder and candy canes. First you will need to crush the chocolate 56 www.sheffieldvibe.com

and candy canes, then you start layering the ingredients in the jar starting with the chocolate, then sugar, cocoa powder and finishing with the crushed candy canes. Once this is complete you can decorate your hot chocolate in a jar with a ribbon and gift tag.

Twig Tree Decorations Making twig tree decorations is a great easy way to produce homemade ornaments and is perfect if you want to get the kids involved. All you need is some twigs and glue. Simply arrange the twigs into fun Christmas shapes, glue together and attach thread for hanging. You can then decorate the ornaments with glitter or ribbon to make them look more festive.

Paper Stars We love making decorations out of paper and these small 3D paper stars are a great craft to try this year. There are

loads of different ways you can make origami stars and you can find instructions online. But generally, all you will need is paper, a pair of scissors, a pencil and possibly some glue. The paper stars can be attached to string and hung on the tree or arranged on the mantelpiece for a little extra festivity. What’s more depending on the colours you choose the paper stars can be used as decorations all year round whatever the occasion!

Make a Wreath Arguably the ultimate Christmas craft, making your own wreath is a great way to welcome visitors into your home and get everyone in the festive mood. There are tonnes of different options for this craft. You could go classic and use foliage and moss or try something different and make a bauble or pom pom wreath. Oh, what a night!

LATE OCTOBER IN 2023... OVER 200 GUESTS GATHERED FOR THIS YEAR’S WESTSIDE & SOUTHSIDE RESTAURANT & BAR AWARDS. BUT WHICH CULINARY STARS WERE CELEBRATING? READ ON TO FIND OUT... It was a double celebration for West 10 Bar & Kitchen at this year’s Westside & Southside Restaurant & Bar Awards as they won the coveted ‘Restaurant of the Year’ award and saw one of its proteges crowned ‘Young Chef of the Year’. West 10 has undergone some significant changes over the last 12 months, not least with the appointment of head chef Scott Philliskirk who has completely revamped the restaurant side of the business. Working alongside young chef Charlie Downham, he introduced a 'blind' seven-course tasting menu, plus two signature snacks. The menus change every month, utilising seasonally available ingredients. “I wanted to provide a new experience that takes diners out of their comfort zones by challenging tastes and perceptions - in my experience, trying new things without preconceptions can be amazing and even change your mindset about food and ingredients,” said Scott. The reaction to these changes has been phenomenal and judging by the huge round of applause that greeted the announcement – made by our compere Chris Wilson, the former managing editor of RMC Media – it was a popular choice and welldeserved. Charlie Downham received his plaque after taking part in a special cooking challenge at The Sheffield College in September. Held on Monday 30 October at Owlerton Events and Conferencing (OEC), we gave out 22 awards to not just the region’s best bars, restaurants and chefs, but some further afield too. Over 200 people packed out the Hillsborough venue, which opened in

late 2019 and hosts a range of impressive multi-purpose suites with catering for up to 500 guests, a perfect setting for weddings, dinners, balls, conferences, live events and more. It was the perfect fit for our event; extremely well organised, the service was faultless throughout the evening ensuring that the awards ran smoothly and without a hitch.

The kitchen served a wonderful four-course meal which consisted of a lightly spiced parsnip and coconut velouté to start, followed by a fish course of salmon fishcake, pineapple and cucumber. For main course we tucked into roasted chicken breast with a chicken and sage wellington and for dessert polished off chocolate parfait with sour cherry compote and caramelised white chocolate gel. When it came to the 2023 Westside & Southside Restaurant & Bar Awards, competition was keen of course, and we were delighted at how many local restaurants, bars and cafes entered into the festivities. It was fantastic to see all of the nominees together in one room, celebrating the superb quality of independent eateries found in our region and beyond. One of our most popular awards on the night is the Readers’ Choice Award, voted for by yourselves of course. We had a flurry of entries and after a close call between The Maynard, The George and The Wortley Arms, it was the north Sheffield venue that scooped the prize for the second year in a row, winning by a significant margin of over 700 votes. Each of our 22 winners received an engraved plaque, which were presented on the night by publishing managers Mandy Ogle and SallyAnne Sharp and publishing director Amanda Roy. Once the awards had been dished out and the plates had been cleared, it was time to hit the dancefloor. And for some hardened party animals, the after-party continued into the small hours at Napoleons Casino, situated next door to the OEC. Competition, as always, was keen but it was West 10 Bar & Kitchen who triumphed, and received rapturous applause as they took to the stage. No-one was more surprised than owner Klaus Bach, who has overseen big changes at the Fulwood Road venue over the last 12 months. “It’s very unusual to have a ‘blind’ menu, customers usually like to know what they’re going to eat,” he said. “But our customers have grown to like it, I think people want to experience something different. It was a gamble but I have every confidence in Scott and Charlie.” Head chef Scott Philliskirk unfortunately couldn’t be there on the night – he was having his own celebration after the birth of his baby daughter – but watched the announcement via FaceTime. “It capped off a good week!” he beamed. “The staff deserve it and I’m glad they had a good night.”

Scott grew up largely in France and it was here that he discovered this ‘blind’ way of eating out, which ultimately provided the inspiration for his menu at West 10. “I think Klaus was a bit apprehensive at first but he put a lot of trust in me,” said Scott. “We put a whole new kitchen in and although bookings were slow at first, the last three months have been incredible. We’re now booked up to Christmas and beyond.” The Restaurant of the Year award made it a double celebration for

‘Young Chef’ Charlie Downham

West 10, who also saw chef Charlie Downham crowned ‘Young Chef of the Year’. Charlie had taken part in a cooking competition at Sheffield College’s training kitchen facilities in September and had been waiting since then to find out if he had won. Although he was quietly confident, despite not having taking part in such a competition before. “I knew it,” he said. “I was nervous at first put I’d practised a few times and was confident I could deliver a good dish. Time was my biggest worry but thankfully I got everything done.” Charlie joined West 10 in December 2022 and has been working under Scott ever since. “It’s a whole new level of cooking for me,” he added. “The competition was good experience and to win is the icing on the cake.” “I’m over the moon for Charlie,” added Scott. “For me to know that I’ve taught him makes me really proud. Service comes with a smile with the food presented beautifully, all in relaxing surroundings. “We’re up here collecting this award, but is not just about us, it’s about the whole team,” said head chef Jordan Garratt. “Everyone makes a big effort, whether that’s in the kitchen, front of house of wherever.”

A village pub and restaurant in the heart of Baslow, the Prince of Wales was recently awarded its second AA Rosette. The team serves a great selection of artisan ales, beers, delicious wines and gins and sources local produce from Derbyshire and the Peak District “This is totally unexpected,” said head chef Matt Booth. “Everything we use for our Sunday lunches is fresh and homemade and I like to think we consistently deliver a top quality lunch. This awards caps off a good year for Thyme Café, who also celebrated their 20th anniversary in 2023. “There’s not many restaurants in Sheffield that get to this stage and we want to thank every customer that has dined with us over the years,” said co-director Kevin Alder. Kevin and his business partners, Anton Corso and Matt Heap, took over the reins 18 months ago and while they have kept lots of things the same, there’s been some new additions too. The most notable is the conversion of the previously unused upstairs into a ‘supper club’. “I think the ‘bistro’ tag definitely suits us,” said head chef Mark Lingard.

You do wonder if Sheffield Cathedral is channelling a bit of divine inspiration but given that this is 1554’s fifth win at the Westside Restaurant & Bar Awards – you can’t deny that the decision to put a café inside has proved to be a winner. To win this against so much competition is just fantastic,” said manager Ruth Maher-Heslip. “It’s been a tough time but we’ve managed to bring back the staff we had to let go during Covid. Our customers are incredibly loyal; combined with the hard work of the team, it has contributed to our success.”

The Maynard, owned by Longbow Bars and Restaurants, started the year with a major refurbishment of its restaurant and bar areas and followed this by upgrading the garden with the addition of a new terrace, something that came into its own during the warm summer months. “It’s been a spectacular year and this award is the icing on the cake,” said head chef Gregory Robinson. “We’ve worked so hard and this is recognition for the team,” added Charlotte Barker. “We’re inspired by our staff, without them we’re nothing.”

Brocco have been regular visitors to the awards podium over recent years and despite changes in ownership and in the kitchen, continue to hit those high standards that have become so synonymous with the Hunters Bar venue. The award was a fitting send-off for Ben Hunt who is leaving for pastures new. “This is a nice leaving gift,” he said. “It’s been a challenge this year with changes behind the scenes and front of house but this justifies all the hard work. It’s fantastic.”

Everyone loves a good curry and Sheffield has some fine independent restaurants to choose from. Some of them are so good in fact it’s hard to choose between them but Prithi Raj has come out on top for the third time running. “It’s the food that keeps everyone coming back and I’d like to thank all our customers,” said Eiffran Shain. The Ecclesall Road is also known for its charitable endeavours and recently raised £60,050 at a fundraising event for the Sheffield Children’s Hospital Charity, which was attended by Dan Walker and Dame Jessica Ennis-Hill. The event was also supported by HSBC and Lloyds.

Martin Ng’s Chinatown restaurant has quickly established itself as a top destination for quality authentic Chinese food. Three menus - daytime dim sum and evening ‘English’ and Chinese menus - leave no stone unturned. Alan Lau collected the award on Martin’s behalf and said: “It’s a great honour, I think this is our fourth year in a row.” Asked why he though they were successful, he added: “I think it’s our portion sizes! Seriously though, the team of Martin, Lewis and Tony work hard to deliver a genuine experience for our customers, it’s what keeps them coming back.”

The Ecclesall Road restaurant is something of a Sheffield institution having been open for 27 years - and takes this award for the third year running. Like many restaurateurs at the event, owner Maurizio Mori felt this had been a challenging year but puts the restaurant’s success down to passionate staff and good, loyal clientele. “Nonnas has been built on love and passion and I think that shows in everything we do,” he said. The Assembly is the new bar and bistro attached to The Schoolrooms in Low Bradfield and opened in April. It’s split over multiple levels with two distinct dining areas; The Library and Caretaker’s as well as a spacious bar, mezzanine and tap room. On the food front there’s an ever-changing à la carte menu that puts a modern twist on traditional British dining and uses seasonal ingredients, many of which are sourced from local suppliers. “It’s been a whirlwind five or six months,” said manager Laura Helliwell. “We’re delighted to get this award. I would say that all our staff care and go above and beyond.”

The Wortley Arms, owned by Jamie Ellis, came out on top, largely thanks to their shrewd social media marketing campaign. “We have a lot of regular customers who like to support us,” said Jamie. “It’s great for our staff, they deserve it, not me.”

The Friars Head became part of the Fine & Country Inns Group in March 2023 and there have been lots of changes over the last eight months or so. Situated between Leyburn and Bedale in the heart of Wensleydale, known for its castles, abbeys and waterfalls, the 200-year-old pub-restaurant is part of Akebar Holiday Park. “There’s been a massive turnaround,” said Tara McKeith. “We’ve put a lot of work in improving the venue and to get this award so soon is just fantastic. It’s been a real team effort.”

You’ll find Manor Farm in Oldcotes, not far from Worksop. The property was bought by the Priestleys in 2012 and still remains their family home. Restoration has been key to their family vision; the transformation began with the conversion of the Victorian house into a holiday rental and in July 2020 they opened The Courtyard, which has since grown to house the Barn Café as well as a number of artisan businesses, including a new farm shop. “Just to get a nomination was amazing enough,” said Abi Priestley. “But to win… we’re thrilled. This has given us the inspiration to kick on.”

DN1 Delicatessen & Dining was taken over by Martyn and Sarah Pippard last year. Martyn is perhaps best known as ‘The Gentleman Fishmonger’ and his Doncaster market stall is famed for its fine quality fish and seafood, much of which features on the menu at DN1. Martyn has four chefs on his books – Marcus AshtonSimpson, Adam Barratt, Oska Ready and Taylor Firth – who split their time between the deli and market stall. “I’m lost for words,” said Sarah. “What a team we have. It’s been a challenging 18 months but onwards and upwards.”

Tickhill-based Zara’s has occupied its Sunderland Street location for over 20 years and is a favourite not just in the town but further afield too. Faruk Miah was on hand to collect their award and puts the restaurant’s success down to their consistently good, fresh food and thanked their loyal customer for their continued support. “Thank you so much for this award,” he said. “We’ve had a really good evening and are really happy to be a winner.” Returning customers have been the hallmark of Zara’s longevity.

Sukhothai is the home of authentic Thai food with two restaurants in Leeds and one in Harrogate. Since 2002, owner and head chef Ban Kaewkhraikot has received critical acclaim and won numerous awards for her fabulous, authentic food – this award adds to that collection. “I opened my first Sukhothai restaurant in Chapel Allerton in 2002. Over the next 21 years we’ve extended Chapel Allerton three times and opened new restaurants in Harrogate and on South Parade in Leeds city centre,” Ban said. “I’d like to thank everyone who's visited Sukhothai over the years and to the local suppliers that have supported me. You've helped make my dream come true.”

After winning ‘Best Contemporary’ for the last three years, Bank House showed that there’s much more to the Hathersage venue by scooping ‘Best Night Out’. “The bar is just as important as the restaurant,” said bar manager Elliott Smith. “We get a mix of locals and diners so it’s important to deliver good service – and to keep people smiling. id you know that England is one of the few countries in the world that doesn’t have a tradition for dining on Christmas Eve? It seems we reserve these rituals for Christmas Day where the focus is firmly on turkey and all the trimmings. With Christmas tending to be very meat heavy, whether you go for turkey, goose, duck or even a rib of beef, we think you should be eating something much lighter in the build-up to the big day and with that in mind have taken inspiration from an Italian-American tradition. The Feast of the Seven Fishes, or Festa dei sette pesci as it is known in Italy, is centred around fish and seafood dishes, which popular choices including baccalà (salted cod), fried calamari, mussels and clams. It sees Christmas Eve as a vigil or fasting day, with the abundance of seafood reflecting the observance of abstinence from meat until the feast of Christmas Day itself. With a nod to the festival, we have sought advice and expertise from three of

our local restaurants – all winners at our recent Westside Restaurant & Bar Awards – so you can create your very own ‘Feast of the Seven Fishes’ at home. We’ve not gone the whole turbot by featuring seven different fishes but have some tasty recipes that are easy to create and, more importantly, are absolutely delicious. You can choose to enjoy them on Christmas Eve, as tradition dictates, or at any other time over the festive period. There’s no better place to start than our ‘Restaurant of the Year’ West 10 and head chef Scott Philliskirk has put together a delicious cured salmon dish paired with a horseradish yoghurt and beetroot. “I chose this dish because it is simple but bold in flavour,” said Scott. “This dish is a fantastic opener for your Christmas eve meal, especially if you want to impress your friends or family. I wouldn’t say they are festive flavours as such but for the time of year I believe it has the perfect balance of being light and comforting.” Scott recommends an Esk Valley

Albarino from New Zealand to go with the dish. The West 10 chef will be working on Christmas Eve but goes all-out on breakfast. “We usually have French pastries followed by smoked salmon and scrambled eggs on toasted sourdough with lashings of caviar, all washed down with a cheeky glass of Champagne,” he added. Adrian Gagea is executive chef at The Maynard and The George and chose a dish that is simple, fresh and with great flavours – his nori monkfish tail is hugely popular with customers. “Monkfish is great fish for festive occasions, with great flavour and texture,” he said. “The nori sheets keep all of the flavour and succulence whilst the acidity from the capers and grapefruit cuts through the richness of the cream and butter from the beurre blanc.” Adrian recommends a Gomez Cruzado Rioja Blanco 2019 to complement this dish, which has notes of honeysuckle, stone fruit and toasty aromas with a layered palate revealing ripe fruits,

Wakame - Henderson’s & treacle cured salmon with hung horseradish yogurt, allium dressed beetroot, sage crisps

Perhaps predictably, Adrian is generally working on Christmas Eve but if he had to choose a go-to dish he would opt for salmon with a seafood risotto. At Bank House, Hathersage chef Andrew Warnes recommends a seasonally spiced cod fillet, which was inspired by its ability to encapsulate the essence of the season. “This dish features a succulent spiced cod fillet, accompanied by a delicate butternut squash puree, sautéed chanterelle mushrooms, and a saffroninfused fondant potato,” said Andy. “This dish features festive flavours that include the comforting essence of pumpkin and an array of aromatic spices. It includes a blend of turmeric, cumin, coriander, garam masala, and curry powder.” As with most chefs, Andrew will be working on Christmas Eve, a time when he immerses himself in preparing great, traditional festive dishes with a contemporary twist - often sampling these himself.

Ingredients (serves 4-6 people): 450g top loin fresh salmon skinned (ideally Loch Duart if you can source it) Horseradish (to taste) 160g natural yogurt 20g chives 1tsp Chardonnay vinegar 80ml vegetable oil 10 sage leaves 3 medium beetroots (if you want to save time, pre-cooked is fine)

For the horseradish hung yoghurt: Horseradish (to taste) 160g natural yogurt

Always get your fish from a reputable fishmonger to ensure top quality and freshness never cure shop-bought fish

For the beetroot (diced): 3 medium beetroot

For the cure: 100g soft dark-brown sugar / molasses 100g flaked sea salt 5g wakame seaweed 60g Henderson relish Orange zest 1. Either with a food processor or hand blender blitz the mixture until wet sand like consistency is achieved if you have neither of these mixing altogether by hand is fine. 2. Curing the salmon (this can be done the day before), cure time 6-8 hours. 3. Spread half of the cure mix the same size as the salmon and lay it on top covering the fish with the remaining mixture. Clingfilm and leave in the fridge to cure for 6-8 hours, once ready, rinse the fish under cold water and then pat dry ready to use later. For the allium dressing: 20g chives (roughly chopped ) 1tsp Chardonnay vinegar 80ml vegetable oil 1. Heat the oil until warm place the chives into the oil and blitz with a food processor/hand whisk. 2. Pass the oil through a fine sieve, add the vinegar and set aside in the fridge until ready to serve.

1. Place the natural yoghurt in a mixing bowl and incorporate the horseradish to taste. Once content with the heat from the horseradish place mix into a muslin cloth and hang in the fridge for 6-8 hours. Alternatively place in a fine mesh sieve and leave in the fridge until ready.

1. Top and tail the beetroots and season the tops and bottoms with sea salt. Place the beetroots individually in tin foil and place in the pre heated oven for 3545 minutes or until cooked. 2. Once cooked, allow to cool in the tinfoil, then dice to your preferred size and place in the fridge ready to serve. For the sage crisps: 10 sage leaves 1. Brush each of the leaves with oil and season with a little salt. 2. There are different ways to make the crisps: if you own an air fryer, put them in on the crisp setting for a few seconds at a time until crispy. Or you can simply place in a frying pan and toast each side until crisp (pat dry with kitchen roll). 3. Store in an airtight container or crisp just before serving. Plating method: 1. Portion salmon to desired thickness (I recommend a thin as possible) once portioned arrange on your plates to your desired look. 2. Mix the diced beetroot into the allium dressing and divide onto each plate evenly allowing some of excess dressing on top of the salmon. 3. Place the hung yoghurt into a piping bag and neatly dress the salmon with dots of yoghurt all over. Lastly break the sage crips up roughly and garnish the dish… Service! www.sheffieldvibe.com 77

For the Beurre blanc: Ingredients 50g Red onion 1 orange (juice and a half of the zest) 50g White wine 10g White wine vinegar 50g Double cream 60g Butter Salt & Pepper to taste

Method 1. Clean the monkfish from the silver skin, portion into 90g fillets, wrap them in nori. 2. Cook the fish on a tray lined with baking paper and season with salt and pepper. Place in the oven for 6-8 minutes. 3. Bring the beurre blanc to boil and then add the cod cheeks, add the capers and grapefruit, taste and correct the seasoning. 4. Blanch the samphire and pak choi, sauté in a pan and season with salt and pepper. 5. Plate in a bowl, adding the sauce first, add the pak choi and samphire, place the fish on top and garnish with a slice of grapefruit.

Method 1. Peel and finely dice red onions or shallots, zest the orange and then add the juice into the mix 2. In a large sauce pot add all the ingredients and bring to boil, then simmer for 10-15 minutes.

Seasonally spiced cod fillet, roasted butternut squash, butternut squash purée, sautéed chanterelle mushrooms, saffron cream & fondant potato Ingredients (serves two): 360g cod loin (2x 180g fillets) 4 tbsp cornflour 1 tsp each of turmeric, cumin, coriander, garam masala, and curry powder 1 butternut squash 100g chanterelle mushrooms 1 shallot (finely chopped) A small pinch of saffron (adjust to your taste) 300ml double cream 50ml white wine 1 large white potato (peeled and shaped into two rectangles) 3 tablespoons butter 2 cloves of garlic (crushed) and springs of thyme 200ml vegetable stock (using 2 Oxo cubes) Vegetable oil Salt Method: For the Cod (Total Cooking Time: 10 minutes, Prep Time: 2 minutes): 1. Cut the cod loin into two even portions. 2. In a bowl, mix cornflour, turmeric, cumin, coriander, garam masala, and curry powder. Coat the cod fillets with this mixture, leaving the skin side uncoated, and

season with salt. 3. Preheat the oven to 190°C. Heat a nonstick frying pan with a bit of oil. Once the pan is warm, reduce the heat to medium and add the cod fillets, skin side down, until lightly golden (about 2 minutes). Turn the cod to sear all sides, lightly cooking out the spices for about 1 minute per side. 4. Once the cod is seared, transfer it to an oven tray and bake for 4-6 minutes or until fully cooked through. For the Diced Butternut Squash and Puree, and Sautéed Chanterelle Mushrooms (Prep Time: 10 minutes, Puree Cook Time: 30 minutes, Sautéed Veg Cook Time: 5 minutes): 1. Top and tail the butternut squash, peel, and cut the top half into 2cm cubes, and the bottom half for the puree. 2. Boil water in a saucepan, add the cubed squash until al dente, then remove and set aside. Cook the chopped squash in the same pan until very soft and the water has reduced. Add 50ml cream and cook for an additional minute. 3. Remove the squash from the remaining liquid, reserving the liquid. Blend the cooked squash in a food processor, adding the remaining liquid gradually to

achieve a smooth and thick consistency. Add salt to taste. 4. Wash the chanterelle mushrooms, remove any dirt, and sauté them with the diced squash in a pan with a bit of oil over low heat until the mushrooms are cooked and golden in colour. For the Fondant Potato: 1. Preheat the oven to 200°C/400°F. 2. Peel the potatoes and cut the ends to create flat, rectangular shapes. 3. Heat oil in an oven-proof frying pan on high heat until hot. Place the potatoes flat side down and cook for 5-6 minutes, flipping as needed to prevent sticking, until golden brown. 4. Flip the potatoes over, reduce the heat to medium-high, and cook for another 5-6 minutes until golden brown. 5. Add the butter, garlic, and thyme, allowing the butter to melt and infuse the flavours for a minute. Baste the potatoes with the butter. 6. Remove the garlic to prevent burning and pour vegetable stock around the potatoes. Sprinkle with salt. 7. Place in the oven and bake for 15-20 minutes, checking for tenderness with a sharp knife. SYN RESTAURANT & BAR’S NEWLY-LAUNCHED CHRISTMAS MENU IS THE PERFECT PARTY-STARTER, WRITES RICHARD ABBEY. t’s beginning to look at lot like Christmas at SYN Restaurant & Bar, who has launched a festive menu, perfect for parties and celebrations. The new kid on the Kelham Island block occupies the ground floor of a brand-new apartment building and has that fresh feel that you expect from a new venue. The restaurant occupies the front half of the space with a large bar area and kitchen to the rear. Walls have been painted black with marble tables and orange and green booth seating providing splashes of colour. Soft, industrial-style lighting adds to the atmosphere and is complemented by music that is not too loud for restaurant guests but not too quiet for those in the bar – they’ve got the balance just right. Reece Elliott, who appeared on MasterChef: The Professionals in 2020, has been recruited to run the kitchen and has created a menu that is seasonal and makes the most of local produce. They’ve kept things simple with a choice

of four starters, five mains and four desserts. Being a bar as well, there’s a fantastic choice of drinks with over 30 different cocktails as well as a good selection of wines, spirits and beers, including those from local Kelham brewery, Heist. As part of the newly-launched festive menu, which is available now, there’s a seasonal selection of cocktails eight drinks and it only seem right to put a couple of those to the test. An Apple Brandy Old Fashioned (£12) used apple-infused brandy and was sweet and booze heavy whilst a Lavender Bee (£12), which saw lavender-infused honey added to infused Beefeater Gin, was light, crisp and refreshing. The star of the festive menu is, of course, the turkey which Reece had brined overnight before boning and butterflying and stuffing before rolling in Parma ham to make a ballotine. A sizeable slice is then served with glazed carrots and parsnips, creamed brussels sprouts with chestnuts, fondant potato and cranberry gel as well as a separate

jug of turkey gravy. Presentation, first and foremost and with all SYN’s dishes, was excellent but the proof is in the eating and turkey was a triumph, deliciously moist with a slight saltiness from the ham and herby overtones from the stuffing. We particularly loved the creamed sprouts as well, which worked harmoniously with the chestnuts. Our sweet finish came in the form of a warm brown butter treacle tart and cappuccino ice cream (£14), and spiced carrot cake, salted walnut praline, whipped cream cheese and vanilla (£12). A tale as old as time HELP BREAK THE SPELL AT WENTWORTH WOODHOUSE THIS CHRISTMAS. magical new Christmas visitor experience is set to sprinkle an enchanted spell over Wentworth Woodhouse, Rotherham’s Grade I listed stately home. A Tale As Old As Time takes up the story after a fairytale spell has been cast on the House and its inhabitants. The family festive event, which runs from Tuesday 28 November through to Sunday 7 January, is being created and staged entirely by Wentworth Woodhouse staff and their army of dedicated volunteers. A ‘Christmas crew’ is hand-building props and scenery, producing haunting soundscapes and bringing foliage, twisting branches and abandoned elements from the Mansion’s Gardens to transform the corridors and State Rooms into scenes akin to Sleeping Beauty’s castle. In addition, from dusk ‘til 9pm, the West Front Gardens beyond will be the scene of a half-kilometre outdoor Light Trail, with illuminated woodland grottos and pathways. The Christmas spectacular is a nod to the history of the mansion - from its lavish Christmas parties thrown by the

Marquesses of Rockingham and the Earls Fitzwilliam, its slide into decline in the 20th century to its new life, thanks to a careful and creative multi-millionpound regeneration by the Preservation Trust who took ownership in 2017. Visitors can explore at their leisure and are tasked with finding a hidden trail of camellias which can break the spell cast on the House and restore life and laughter. The Mansion is renowned for the camellia collection - one of the oldest in the western world - in its recently-restored garden Camellia House. They will enter via the 18th century Oak Staircase and State Corridor, both overgrown with greenery, to find a glowing fire and regal throne in the Whistlejacket Room, a sparkling champagne fountain in the Van Dyck Room and a dark and spooky forest in its Ante Room. A ballroom scene brings memories of the past to the majestic Marble Saloon and the experience concludes in the State Dining Room, where a giant banquet echoes the nights when a young Princess Victoria, then King George and

Queen Mary, were entertained. The Light Trail, which runs most evenings from Tuesday 28 November until Sunday 7 January, will feature fairy lights galore, mirror balls in unexpected places and swirling ‘carpets’ of light. There are fairy doors and woodland creatures to seek and find and a spectacular light tunnel finale. The Mansion’s baroque West Front facade will be beautifully lit throughout the Christmas period and a festive steam train will be running on its lawns and rear drive. A Festive Afternoon Tea themed around the event will be held in the Long Gallery and Christmas fayre is available in the Butler’s Pantry Café and food village on the West Front Lawns. SEASONAL AND STYLISH, THERE’S SOMETHING SPECIAL ABOUT THE PEACOCK AT ROWSLEY, WRITES RICHARD ABBEY. he Peak District is littered with fine historic houses, hotels and restaurants – and they don’t come much finer than the Peacock at Rowsley. Originally a manor house dating back to the 1600s, the Peacock is now a 15bedroom boutique hotel and three AA rosette restaurant serving a fine dining menu using produce local to the Peak District National Park. A more relaxed bar menu is also available. The hotel is part of the Haddon Estate and enjoys close links with Haddon Hall where The Peacock owners, Lord and Lady Edward Manners, currently reside. “Wherever possible, we serve truly local ingredients from right here in the Peak District, including organicallyreared beef and lamb from the Haddon Estate,” said head chef Dan Smith, who was trained by Tom Aiken. “We also source beef, lamb and pork from E. W. Coates in Two Dales.” In the evening you can choose from an a la carte menu (£62.50 for two courses, £82.50 for three) as well as a tasting menu, although the latter is only available on Fridays and Saturdays. We arrived at the time of year when you can smell the open fires before you enter the building – a very tempting invitation when the nights are drawing

in. We were a little late for our reservation after getting caught up in Chatsworth Halloween traffic so eschewed the offer of a pre-dinner drink (in front of said fire) and headed straight to one of two dining rooms. These formal rooms ooze historic features and are stylish and comfortable spaces to while away an hour or two. The set menu includes an amuse bouche – on this occasion a sourdough crumpet with lamb tartare and mint, and panis with sardine and tomato. This was followed by still-warm black treacle and sourdough bread and homemade butter. The choice of four starters was supplemented by two specials, one of which was in-season partridge served with celeriac, pear, walnut and a partridge and chilli jus. It was a delicate dish with subtle sweet and spicy flavours complementing the game bird. My wife’s red mullet, black rice, squid, fennel and roasted bone sauce delivered a real hit of harmonious and bold flavours. Haddon estate venison was also in season and cooked perfectly pink with accompaniments of crown prince squash, red onion, raisins and a pinenut and verjus sauce. It was a real autumnal dish that delivered on both flavour and presentation. I’d taken the fish option and was

seriously impressed with my sizeable fillet of halibut which was served with hand-rolled pasta, cordy ceps, cauliflower, chard, seaweed hollandaise and topped with shavings of truffle. A pre-dessert of coconut rice pudding and mango sorbet served as a palatecleanser before I tucked into a deliciously sweet and light dish of lemon curd, meringue, Greek yoghurt, fig and local honey. My wife opted for the cheeseboard which was complemented by crackers, malt loaf, celery, grapes and crab apple jelly. As we had driven over from Sheffield we shared a half-bottle of Fleurie La Madone, Beaujolais 2019 (£29.95). It’s been a long time since I’ve visited the Peacock. I remember being seriously impressed then and have no reason to change my opinion now. It’s stylish, special and delicious. Definitely worth fighting the traffic for. 10th anniversary concert The NHS Choir celebrated their tenth anniversary with a special concert held in conjunction with the Salvation Army Big Collection and Dronfield Brass Band. Silverdale School expansion opens After several years in the planning, Silverdale School’s state-of-the-art new building was formally opened on Wednesday 1 November by South Yorkshire’s Mayor, Oliver Coppard. The opening of the new facility is the culmination of many years’ work led by Sheffield City Council to expand the number of secondary school places to meet the need in southwest Sheffield, caused by a 25% rise in birth rates between 2002 and 2012. Silverdale School, which is part of Chorus Education Trust, has worked together with Sheffield City Council to deliver this solution to the shortfall of secondary school places for the young people of southwest Sheffield. The additional students that Silverdale School can now accommodate will, by 2027, result in an additional 300 students, including those with special educational needs or disabilities, being able to access high quality education within their own catchment area. The project, which was project managed by Gate and Bar and built by Portakabin, was designed to minimise disruption to students and the school’s neighbours. The resulting three storey building, which stands alongside the original school building, includes 14 state-of-the-art classrooms and a dedicated Sixth Form facility.

Make your Christmas gift matter GRAYSONS SOLICITORS’ LAURA COWAN OFFERS ADVICE RELATING TO GIFTS AND INHERITANCE TAX.

hristmas is around the corner and you’re probably thinking what Christmas gifts to buy. It’s never easy. Of course, you don’t have to give socks, a jumper or perfume – you could gift people something in your will, or even give it to them now. Whichever you do, don’t forget to consider the inheritance tax (IHT) implications. Our experts are regularly asked to offer advice relating to gifts – especially at Christmas time – so here, we offer some guidance. Gifts can be anything of value, such as money, property or other possessions. They can also include loss of the value of an asset, such as if you gift your home to your children. You can make as many gifts of £250 per person as you like at this festive time (or any time during the year), exempt from IHT, as long as a person does not benefit from one of the other exemptions. Each person has a £3,000 annual exemption per year, which can be rolled over to the next year. This is the amount they can give away each year without any IHT implications. In addition, you can give wedding/civil partnership gifts each year of £5,000 per child, £2,500 per grandchild and £1,000 to anyone else. The wedding gift recipient can also receive other gifts from within your £3,000 annual exemption. Birthday or Christmas gifts, and regular payments to someone to help with their living costs, such as paying rent for a child, paying into a savings account for a child under the age of 18 or supporting an elderly relative can be IHT-free if they are given out of your regular income and you can still afford your own living costs after giving them. You may be considering a larger Christmas gift and be thinking about passing your home to your family before you die. If you make a gift of your home, you should always take advice, especially if you wish to gift it to your children/ grandchildren and wish to continue living in it as it could attract IHT as well as capital gains tax – for you or the person you gift it to. You may also be at

risk if your children were to get divorced or become bankrupt in the future. You could also consider a transfer of equity – where all or part of the equity in your home is transferred to one or more people. Its value may not then be counted as part of your estate when you die. Again, there are potential risks and tax implications involved and you should take advice before doing this and you will need a conveyancing solicitor to complete the legal requirements necessary. Another valuable Christmas gift to consider is a trust. With the right conditions set, the value of the cash or assets you put into the trust will not count as part of your estate when you die, as they belong to the trust and not to you, so no IHT will be payable on them. Trusts are useful for children under a certain age, for example, as the trustees (which could include you), control the assets until the beneficiary reaches a specified age. Finally, if you are considering gifting to charity – and many do at Christmas, these gifts will be exempt from IHT.

RESTORING A 100-YEAR-OLD STAINLESS STEEL RING MADE FOR THE PERFECT BIRTHDAY GIFT FOR A NONAGENARIAN. iago’s David Raynes was the first jeweller in the city to make genuine Sheffield steel wedding bands and cufflinks and is one of few to still work with steel jewellery. Using steel from one of the few remaining local companies, David’s designs are approved by the Master Cutler, laser marked with the ‘Made in Sheffield’ trademark, and are a celebration of the birthplace of stainless steel. As well as designing bespoke jewellery, David can also repair and renew existing jewellery and was delighted to welcome Kathleen and her daughter Kathryn into store in the summer who were in need of his specialist skills. As an early 93rd birthday present, Kathryn had brought her mother to Tiago with her 100-year-old stainless steel ring, which had become too small and had to be cut off at a recent hospital visit. Kathryn thought it would be a lovely surprise – and gift – if David and his team could repair the ring, which is very unusual and has been in the family for generations. Born in 1930, Kathleen joined her older sisters working in the steel industry in 1945 (her siblings were part of the original ‘Women of Steel’) so not only is the ring treasured but holds many memories of her working life. “When they came to us the ring shank

was split from cutting so we laserwelded it back together,” explained David, who has 36 years’ experience in the industry. “It was a delicate signet ring with line engraving on top and the first I’d seen from the period.” Stainless steel is much harder than precious metals and specialist equipment is required to work with it, all of which you’ll find at Tiago’s Abbeydale Road showroom and workshop. A stainless steel ring such as Kathleen’s is very rare but the pair were delighted with the finished piece. “This was the mother and daughter’s first visit to us but they were very pleased with the repair and the service they received,” added David. “Kathleen was ecstatic that she can wear the ring again and it was fantastic to be able to

make a fuss of her.” Work such as this is all par for the course for David and his team – Jane, Paige, Phillip and Lily – whom collectively have almost 80 years’ experience in the industry. Tiago is run as a family and specialises in creating bespoke pieces and can design something truly unique for any occasion. I can spend hours with customers discussing a design,” David said. “I encourage people to come in, have a chat, find out your options, then go away and think about it.” To create bespoke pieces David blends CAD/CAM technology and traditional hand-making techniques. There is an impressive portfolio of realistic CAD drawings showcasing exactly how your ring will look, and David even offers an additional service of 3D printed models, so you can actually try on a version of the final design to get an accurate idea of proportions and dimensions. And, if you think a bespoke piece of jewellery will cost you an arm and a leg, fear not. “With the advancements in technology, something that might have took three to five days to make, only takes a few hours,” David reassured. “This means the labour costs are less and we can pass these savings on to our customers, so bespoke work can now be available to more people.” www.sheffieldvibe.com 127
