s there no end to Ed Byrne’s talents? A staple of revered panel show Mock the Week, the comedian has also sledded down the side of a volcano for Dara and Ed’s Great Big Adventure, upstaged Martin Sheen and Robert Downey Jr on The Graham Norton Show, and demonstrated his driving skills on Top Gear and The World’s Most Dangerous Road. He’s also proven himself to be quiz show dynamite on the likes of The Chase: Celebrity Special, The Hit List, Pointless Celebrities and All-Star Family Fortunes. Never agree to attend a pub quiz with Ed Byrne. You will lose. But for all his dalliances with the world of television light entertainment, Ed remains at heart one of the world’s truly great stand-up comedians. He has honed his craft for a remarkable 30 years now, garnering a hatful of awards and a constant, borderline bewildering stream of five-star reviews along the way. Whisper it, but it’s tempting in 2023 to take story-telling skills and a wit as sublime as Ed’s for granted. However, while he prepares to take his 14th show, Tragedy Plus Time, on a comprehensive UK tour, audiences need to ready themselves because Ed Byrne is heading into highly emotional new territory. “It’s something of a departure, and I’m slightly worried about that,” he concedes. “I’ve never really had the desire to write a show that had an overly serious element to it. I got a lot of five-star reviews on the last show [2019’s If I’m Honest], but some four-star ones that opined, ‘well it’s funny, but that’s all it is…’ As if that’s not enough these days. Frankly, just being funny is a furrow I’ve been happy to occupy. But this new show features some heart-wrenching, soul-bearing stuff.” That much is indisputable. For Tragedy Plus Time, Ed bravely ventures into the world of grief and loss, a decision prompted by the passing of his younger brother Paul, aged just 44, in February 2022. Comedy that takes death as its cue is not unprecedented, but it’s a path that takes considerable creative courage to explore.

“I was in two minds about whether to do a show of this nature,” Ed explains. “Then I decided this was the subject I was going to tackle but I wasn’t quite sure how to go about it. But once I started down that road, that was it… Then my main worry was, how funny is it going to be and is it going to work?” These were legitimate concerns. Of course, there’s funny and there’s funny. In Tragedy Plus Time, Ed consistently delivers the latter while expertly locating the poignancy that sits at the intersection of sadness and loss. This isn’t gallows humour; this is something else altogether. “The first time I performed it,” he continues, “it lasted more than an hour. That surprised me, but it was too long, so I had to decide whether to cut funny jokes or material that’s meaningful. That kind of decision was new to me, and what’s really annoying is that the one person I would have asked for advice on that is the guy the show’s about. It’s like when you get dumped by someone and you’re heartbroken. The one person you’d usually want to talk to about it is the very person who dumped you.” Says Ed, “I’ve spoken to people who worked with Paul, who was a comedy director, and they’ve said that his thing was, ‘you can be as emotional as you like and as serious as you like, but there has to be a joke’. So the idea of saying something purely for the emotional gut punch was off the table.” Nor is Tragedy Plus Time unrelenting by any means. The genius of it is that it takes the most difficult of subject matter and encourages the audience to laugh in its face in a way they would otherwise simply never do. Ed has also deliberately eschewed a linear narrative structure in favour of an approach that mirrors the unpredictable nature of grief itself. “Obviously I don’t want the whole thing to be an onslaught,” he says. “That’s partly because of the digressions, and that’s why they’re there. But they also illustrate how grief works in that you can still have a good time, you can still be happy, you can still have a laugh about other things and be frivolous. But

grief is always there waiting for you when you’re done with being silly. “The show does elicit a very pure emotional response in the audience. There’s something about the fact that when somebody dies, everyone else carries on like nothing’s happened. Because nothing has happened to them. So there’s an anger in grief, too… how can everyone else carry on as though nothing has happened?” Ed candidly admits that mining his family’s bereavement for comedic effect would challenge his performing skills – and emotional bandwidth – in a unique way. Is this a nightly catharsis for the Irish comedian? To an extent, yes. “Death is universal. We will all lose someone. So the best thing to do is laugh at it,” he says. “Although I was aware, when I was first writing and performing this new show, that there was a danger I might, you know, lose it onstage. I did a work-in-progress at the Museum of Comedy and there was an audible crack in my voice. On the third performance I did actually cry on stage, and I’m sure for anyone who was there [assumes a very theatrical voice] ‘it was a very powerful experience’. But I don’t want it to be the sort of thing where I rip my heart out and stamp on it for the audience’s delectation. I’ve been able to throttle back my emotions and keep them in check.” Ed Byrne is touring nationwide, appearing at Ilkley Kings Hall on 8 December and then Harrogate Royal Hall on 3 March 2024 and Leeds City Varieties on 5 July . PARTY SEASON IS HERE FOR JORDAN ODU. f there’s one thing that puts the smile back on my face once the temperature drops, it’s party season. Yes, Mariah has been defrosted, the Christmas ads are on non-stop rotation, and my diary is packed with events and parties. I love Christmas. We kicked things off by hosting a light switch-on at Victoria Leeds, which was an amazing start and gave me all the festive feels. This was followed by a lively party at The Ivy, Victoria Quarter with some suitably festive food and cocktails. Their new menu is one word delicious. The twice-baked Stilton and Walnut Cheese Souffle is dreamy, the Baked Sea Bass with Mussels and saffron sauce is something else and as expected the décor was suitably fabulous, especially the new Polar bear host, manning the entrance. Back in the centre, Victoria Leeds is the spot to shop this Christmas, with no less than five new stores landing in the coming weeks, including luxe homeware brand Cox & Cox, Pour Moi lingerie and not forgetting my favourites Paul Smith and Reiss helping me to get party ready. On top of that, there’s Raspberry Pi for all the gamers out there, and a Curated Makers store, which will feature some of the UK’s best small indie businesses, ranging from clothing to candlemakers. It’s the perfect place to pick up gifts for those loved ones that seemingly have everything. Now, if central Leeds is short on one thing, it’s a stand-out Greek restaurant. Thankfully, The Olive Tree Brasserie arrives in the city in December, taking up residence in the stunning South Parade venue previously occupied by Stockdale’s. With a strong focus on modern Greek cuisine, inventive cocktails, and a

laidback ambiance reminiscent of the Med, I can’t wait to try this place, I’ve heard big things about the gyros. Next time you fancy some downright naughty food in town, you need to check out the BaoBros23 menu takeover at Archie’s Bar & Kitchen in Granary Wharf. Their innovative take on the bao bun phenomenon must be tasted to be believed. I had their famous lobster Bao Dog, which is unreal and pairs perfectly with Ossett Brewery’s rather fine cask ales. Speaking of drinks, The Alchemist is always one step ahead of the game when it comes to revolutionary cocktails and their latest sober-curious menu is on point. Crafted in collaboration with the Everleaf non-alcoholic aperitif team, guests can opt to go alcohol-free or add

the suggested spirit. My faves include the Winter Paloma, which blends Everleaf with grapefruit, lemon, spiced berry and oak smoke to create a truly refreshing serve (I went with the optional tequila in mine!). The White Choc Cherry is perfect for those who never say no to dessert, mixing up Everleaf with milk, cream and white choc cherry foam to create a sweet treat. I boozed mine up with some Mozart White Chocolate Liqueur and Vodka and it was perfection. I finally got my fine-dining head-on and checked out The Owl for the first time. Firstly, the waterside setting is stunning, but then you have the food. They didn’t put a foot wrong, with every course out doing the last but if I had to pick out a couple of highlights it

would have to be the sweet and succulent Whitby Crab, and the fallapart-tender 100-day aged beef sirloin with beer-battered oyster. Just wow and fantastic value. Despite being mega busy, there’s still several things on my winter check-off list. First up, I need to relive my youth and get my ice skate on, so a trip to the Ice Cube in Millennium Square is incoming. Harewood House is putting on some incredible experiences this winter, so that’s another place to visit with family. Lastly, Castle Howard has been transformed into a winter wonderland with plenty of festive events to enjoy. The festive season is well and truly here and hopefully your party wardrobe is ready for the onslaught, now it’s time to focus on what to wear on the big day - 25 December. I find that most people either: a) Want to stay in their pyjamas all day b) Want to dress up c) Want to be somewhere in-between That’s usually me! As we regularly host the Christmas festivities, I like to be somewhere in-between, looking like I have made an effort with some kind of festive flourish (I love a stamens earring) whilst wearing something that can easily be washed (those pesky cooking smells can be hard to get out) but also be comfortable and cozy. Even if you prefer to wear your pyjamas all day, let’s make sure you look luxe doing it, so should a loved one pop round for a glass of something special, you still look put together and chic. Here’s a handy list to get your started:

trousers with flowing shirts to knitted tanks paired with flared trousers. A coord gives the feel of your favourite PJs but is evaluated enough to be worn on multiple occasions, maxing out your cost per wear. I always advise purchasing both pieces from a co-ord set. Somewhere in between If you’re staying home but want to make an effort, make comfort your priority. As I have said many times before, a long silk maxi skirt or slip dress is an absolute wardrobe staple. It can be dressed up with heels, a tux jacket with some statement jewellery or dressed down with a knit over the top and some knee boots. Following surgery the area may be bruised and swollen for a week or two and you may have some discomfort up to two weeks after the procedure. Any pain should be able to be controlled with paracetamol and ibuprofen and regular ice packs. You are reviewed at the practice two weeks after the procedure to ensure the area is healing correctly and to remove any stitches. Depending on what is necessary at the time of surgery, the implant needs to be left for 3-9 months to heal before the implant crown can be manufactured to fit. The Friars Head became part of the Fine & Country Inns Group in March 2023 and there have been lots of changes over the last eight months or so. Situated between Leyburn and Bedale in the heart of Wensleydale, known for its castles, abbeys and waterfalls, the 200-year-old pub-restaurant is part of Akebar Holiday Park. “There’s been a massive turnaround,” said Tara McKeith. “We’ve put a lot of work in improving the venue and to get this award so soon is just fantastic. It’s been a real team effort.”

You’ll find Manor Farm in Oldcotes, not far from Worksop. The property was bought by the Priestleys in 2012 and still remains their family home. Restoration has been key to their family vision; the transformation began with the conversion of the Victorian house into a holiday rental and in July 2020 they opened The Courtyard, which has since grown to house the Barn Café as well as a number of artisan businesses, including a new farm shop. “Just to get a nomination was amazing enough,” said Abi Priestley. “But to win… we’re thrilled. This has given us the inspiration to kick on.”

DN1 Delicatessen & Dining was taken over by Martyn and Sarah Pippard last year. Martyn is perhaps best known as ‘The Gentleman Fishmonger’ and his Doncaster market stall is famed for its fine quality fish and seafood, much of which features on the menu at DN1. Martyn has four chefs on his books – Marcus AshtonSimpson, Adam Barratt, Oska Ready and Taylor Firth – who split their time between the deli and market stall. “I’m lost for words,” said Sarah. “What a team we have. It’s been a challenging 18 months but onwards and upwards.”

Tickhill-based Zara’s has occupied its Sunderland Street location for over 20 years and is a favourite not just in the town but further afield too. Faruk Miah was on hand to collect their award and puts the restaurant’s success down to their consistently good, fresh food and thanked their loyal customer for their continued support. “Thank you so much for this award,” he said. “We’ve had a really good evening and are really happy to be a winner.” Returning customers have been the hallmark of Zara’s longevity.

INSPIRED BY THE ‘FEAST OF THE SEVEN FISHES’, WE MAKE A CASE FOR CELEBRATING CHRISTMAS EVE WITH A TABLE OF FISH DISHES. OUR LOCAL RESTAURANTS PROVIDE INSPIRATION. id you know that England is one of the few countries in the world that doesn’t have a tradition for dining on Christmas Eve? It seems we reserve these rituals for Christmas Day where the focus is firmly on turkey and all the trimmings. With Christmas tending to be very meat heavy, whether you go for turkey, goose, duck or even a rib of beef, we think you should be eating something much lighter in the build-up to the big day and with that in mind have taken inspiration from an Italian-American tradition. The Feast of the Seven Fishes, or Festa dei sette pesci as it is known in Italy, is centred around fish and seafood dishes, which popular choices including baccalà (salted cod), fried calamari, mussels and clams. It sees Christmas Eve as a vigil or fasting day, with the abundance of seafood reflecting the observance of abstinence from meat until the feast of Christmas Day itself. With a nod to the festival, we have sought advice and expertise from three of our local restaurants so you can create your very own ‘Feast of the Seven Fishes’ at home. We’ve not gone the whole turbot by featuring seven different fishes but have some tasty recipes that are easy to create and, more importantly, are absolutely delicious. You can choose to enjoy them on Christmas Eve, as tradition dictates, or at any other time over the festive period. Doncaster’s DN1 Delicatessen and

Dining has quite the larder to draw on, not just from the deli but from owner Martyn Pippard, who is also known as The Gentleman Fishmonger. Head chef Marcus Ashton-Simpson has put together a seafood-inspired dish that could be eaten as either a starter or a man course. Butternut squash and prawn ravioli, with prawn bisque and sweetcorn is a worthy dish for any Christmas Eve table, with all produce sourced from the deli or Martyn. Thomas Robertson is head chef at The Coniston Country Estate & Spa and has chosen a dish that is fit for any feast. “The festive season is a time of indulgence, a period where we allow ourselves to revel in the richness of flavours and the warmth of family gatherings,” he said. “This Gravadlax recipe is a testament to that spirit, carefully developed to evoke the essence of Christmas, while also introducing a contemporary twist to a classic dish.” Gravadlax is traditionally a Nordic dish where salmon is cured using salt, sugar, and dill. Thomas has used Strawberry & Pink Peppercorn Cotton Gin to add a layer of complexity and modernity. The gin not only imparts a subtle fruity undertone but also complements the salmon’s richness with its inherent botanicals. Asked if there was a drink he would recommend to serve with the dish, Thomas said: “Alsatian Riesling: This white wine from the Alsace region of France is known for its bright acidity,

aromatic profile, and mineral undertones. The citrus notes in the wine will harmonize with the lemon and orange zest in the Gravadlax, while its acidity will cut through the richness of the salmon and balance the sweetness of the beetroot. “Alternatively, given this Gravadlax uses a unique gin, it would be fitting to echo that in our festive tipple!” Matthew Heaton is head chef at the Woolly Sheep Inn in Skipton, which is part of the Timothy Taylor stable, and has prepared a Parma Ham-wrapped Cod Lion, which he’s served with honeyglazed crushed new potatoes, parsnip and white chocolate purée, caramelised Jerusalem artichoke, fig jam and garlic aioli. “All the elements of this dish are in season at Christmas time and it is simple to recreate at home,” explained Matthew. “The parsnips are enhanced by the white chocolate and figs are very Christmassy.” Michelin-starred chef Michel Roux has partnered with Seafood from Norway to create some delicious and simple family meals that are perfect for a celebration. These cod and vegetable parcels are best opened at the table for a touch of theatre. “As a chef, I am always looking for exceptional ingredients, Norwegian cod and haddock never let me down,” he said. “They are so versatile and a delight to cook with in my restaurant and home kitchen, whether in a French classic or a more contemporary dish.”

Gin-cured gravadlax Ingredients: For the Gravadlax: 500g fresh salmon fillet, skin on and pinboned 50ml Strawberry & Black Pepper Cotton Gin 100g granulated sugar 75g coarse sea salt Zest of 1 orange Zest of 1 lemon 2 tsp crushed pink peppercorns 1 tsp juniper berries, crushed 1 tsp ground allspice A handful of fresh dill, chopped A small bunch of fresh rosemary, chopped For the Beetroot Discs: 2-3 medium-sized beetroot 250ml water 150ml white wine vinegar 1 tbsp sugar 1 tsp salt For the garnish: Parsnip crisps (store-bought or homemade) Micro cress Method: 1. Ensure the salmon is clean, with all pin bones removed. Pat, it dry with paper towels. 2. In a bowl, combine the sugar, salt,

orange and lemon zest, crushed black peppercorns, crushed juniper berries, ground allspice, chopped dill, and rosemary. Mix well. 3. Lay the salmon skin-side down in a deep dish. Pour the Strawberry & Black Pepper Cotton Gin over the salmon, ensuring it’s well coated. Then, pack the curing mixture onto the flesh side of the salmon. 4. Cover the salmon with cling film, placing a weight on top (like another dish). Refrigerate for 48 hours, turning the salmon and basting it with the cure juices every 12 hours. 5. Peel the beetroot and slice it into thin discs. In a saucepan, bring water, white wine vinegar, sugar, and salt to a boil. Add the beetroot discs and poach for 2-3 minutes until slightly tender but still holding their shape. Remove and let cool. 6. After 48 hours, remove the salmon from the refrigerator. Rinse off the curing mixture and pat dry. Dice the gravadlax into small cubes. On a plate, arrange the beetroot discs, place a ring mould on top, and pack with the diced gravadlax. Remove the ring mould, top with parsnip crisps, and garnish with micro cress of your choosing.

Michel Roux’s Norwegian Cod and Vegetable Parcels Ingredients (serves 2): 150g new potatoes, cooked and sliced 1 fennel bulb, thinly sliced 100g baby plum tomatoes, halved ½ lemon, cut into wedges 1tbsp olive oil 50ml dry white wine 1 pinch chilli flakes 1 thyme sprig 1 rosemary sprig 50g samphire 2 fillets of Norwegian cod – 200g each 20g pitted black olives, halves Salt and black pepper Method: 1. Put the sliced potatoes, fennel, tomatoes and lemon wedges into a bowl, Drizzle with olive oil, splash over a little of the white wine and season with salt, pepper and chilli flakes. 2. Heat a frying pan, then add the potato and fennel mixture. Cook over a gentle heat, stirring regularly, until everything is slightly coloured and tender. 3. Meanwhile, preheat the oven to 200°C/Fan 180°C/Gas 6. Cut 2 squares of greaseproof paper or foil, measuring about 40 x 40cm. 4. Divide the vegetables and the herbs between the squares of paper or foil and drizzle with a little oil. Add some samphire to each one, then a piece of fish, a few olives and the remaining wine. 5. Scrunch the edges of the paper or foil together to form 2 parcels and place them on a baking tray. 6. Bake for 20 minutes or until the fish is cooked through. 7. Spiced butternut squash and prawn ravioli, with prawn bisque & sweetcorn Ingredients: For the pasta dough: 200g ’00’ flour 6 egg yolks 1 whole egg 10ml olive oil 1. Place flour on work surface and make a well in the centre. 2. Mix egg yolks, oil and whole eggs together and then place the wet egg mix into the well in the middle of the flour. Using a fork work the flour and egg together a little at a time. 3. Once bound together, knead until smooth and then clingfilm and place in the fridge to rest. Chef’s tip - don’t add salt to the dough as it will cause a reaction with the eggs oxidising them and turning your dough grey/green. For the spiced butternut squash pasta filling: 2 shallots finely diced 1 butternut squash peeled and deseeded (please reserve the skins), roughly diced 2 tsp curry powder 1 tsp cumin powder 1 tsp coriander powder 2 cloves garlic, finely chopped 4 prawns (peeled and deveined) roughly chopped (reserve the shells and heads) Knob of butter 1. Sweat off onion and garlic. 2. Add squash to the mix and the spices. 3. Cook until tender on a low heat. 4. Mash and finish with a knob of butter. 5. Cool down before adding the chopped prawns For the garnish: 100g crayfish or brown shrimp 1 cooked corn on the cob - corn removed to garnish - reserve cob to use in the recipe

For the sauce: 1 stick celery roughly chopped 200g prawn shells and heads 3 tomatoes roughly chopped 1 onion white roughly chopped 2 garlic cloves roughly chopped The cob from the corn on the cob, roughly chopped 500ml water 25ml brandy 50g tomato puree 1. Sweat off all of the vegetables then add the prawn shells. 2. Add tomato puree and ‘cook out’. 3. Add the brandy and burn it off. Top up with water and simmer for 1 hour on a low heat. 4. Sieve the sauce into a pan and discard the veg. 5. Reduce sauce by half over a medium heat - check the seasoning and reduce until thickened.

Parma ham wrapped cod loin with honey-glazed roasted crushed new potatoes, parsnip & white chocolate purée, caramelised jerusalem artichoke, fig jam, and garlic aioli Ingredients: 140/160g Cod Loin Portion 2 slices Prosciutto (Parma) Ham 180g New Potatoes 5g Honey 50g Parsnip 10g White Chocolate 100g Jerusalem Artichoke 50g Figs 200g Jam Sugar/Caster 2 cloves of Garlic 50g Mayonnaise Salt and Pepper Vegetable Oil 1 Egg Yolk 1 Lemon Method: 1. Pre-heat oven to 200°C or gas mark 6. For the Parsnip & White Chocolate Purée: 1. Boil parsnips until soft. Once soft, drain the remaining water off (but retain to one side for now), add the white chocolate to the boiled parsnips. 2. Using a blender or stick blender, blitz

the parsnip and white chocolate until smooth. You may need to add some of the extra water to achieve the correct consistency. Season to taste. For the Honey-Glazed Roasted Crushed New Potatoes: 1. Boil new potatoes until soft, drain the excess water off. 2. Crush the potatoes in the pan then place onto a shallow roasting tray and pour the honey over to glaze the potatoes. Roast until golden. For the Caramelised Jerusalem Artichoke: 1. Peel the artichokes, cut in half, and then thinly slice. 2. Place a saucepan with a splash of oil on high heat. Once pan is hot, add the sliced artichoke and keep stirring until nice and golden in colour. Season to taste with salt and pepper. For the Garlic Aioli: 1. Crush garlic and gently simmer in a little oil until soft. Allow to cool.

2. Add the egg yolk and lemon juice to the mayonnaise and beat together. Stir in the cooled garlic. For the Fig Jam: 1. Quarter figs and place into a saucepan, add sugar and reduce until nice and sticky on low heat. For the Parma Ham Wrapped Cod Loin: 1. Lay two slices of the Parma ham close together on a chopping board. Place raw cod loin onto one side of the ham and roll the ham around the cod. 2. Once wrapped, place a frying pan onto a high heat with little bit of oil. Once nice and hot, place cod into pan, it should sizzle. 3. Colour both sides of the wrapped cod loin, then place in the oven to cook for 810 minutes until cooked (63°C internal temperature).

As if the industry isn’t hard enough, then you have to deal with this.” Although the family-owned venue had to close for such a lengthy time, they have used the opportunity to expand the building and are also working on

expanding the restaurant. They are also planning on turning the orangery into more of a traditional English pub with the addition of cask ales and a tailored menu. “Business has been going really, really well,” said Harriot. “We had bookings that we had to cancel but we have worked tirelessly to get the Mucky Duck open once again.” It’s a frustrating twist in what has been

a very positive year for The Mucky Duck, which saw a new head chef appointed in May. Doncaster College-trained Billy Frost took up the role after years spent working in prestigious kitchens, including The Ritz in London. Locally he’s worked at The White Swan in Blyth, the Earl of Doncaster, Caviars of Bawtry, the Separatist and the Black Lion in Firbeck. Latterly, he held multiple rosettes as head chef in both the tower hotel and The Lincoln Hotel in Lincoln city centre. Billy is no stranger to awards and loves taking part in competitions. He won the Escoffier Challenge in 2010 and also competed in the BBC’s Masterchef: The Professionals in 2012, and more recently he reached the semi-final of the national chef of the year. After settling in at The

Mucky Duck and revamping the menu, he already has another AA Rosette in sight and after completing the application, is awaiting the visit of an inspector. The a la carte menu has a firm focus on ‘affordable fine dining’, changes seasonally and utilises produce from local farms and suppliers. One of Billy’s signature dishes is the ‘Plate of FreeRange Pork’, which includes a slowcooked belly, braised cheek, pulled pork fritter, fondant potato, crackling, tenderstem broccoli, apple purée, mini toffee apple and red wine jus. Other autumnal dishes include butter roast fillet of cod, stuffed free range chicken breast and slow-cooked beef shin and Guinness shortcrust pie. And not overlooking dessert, you can tuck into dishes of sticky toffee and stout pudding, Belgian chocolate delice or autumn berry Eton mess. There is also a separate lunch menu and offers of afternoon tea as well as hearty Sunday lunches.

Celebrations are a big deal at The Mucky Duck; smaller ones can be enjoyed in the private dining room, which seats up to 24, but larger ones can take place in the larger Orangery, which can host 24-45 guests. A buffet menu and décor packages are available. The Mucky Duck at Drakeholes will be aiming to end the year on a high and have a range of Christmas packages as well as a special New Year’s Eve menu. Full of surprises BROWNS AT THE BUTTERCROSS IS BUILDING A REPUTATION FOR FINE DINING PAR EXCELLENCE, WRITES RICHARD ABBEY. ood things often happen when you least expect it. And that’s not saying I visited Browns at the Buttercross with low expectations; I expected it to be good, just not this good. The Tickhill venue, which sits opposite the famous stone structure in the centre of town, is housed in an historic building and can only be described as ‘unassuming’. There’s a small window filled with tasty cakes and treats but that doesn’t really tell the full story of what you’ll find inside. Step through the small doorway and be prepared to be surprised. Browns at the Buttercross was a new concept launched by Kate and James Brown in August 2020 with the aim of combining a fine dining experience with chef-prepared meals to be enjoyed at home prepared by the same Michelintrained chefs. Alongside those fresh cakes you see in the window, the main area of the venue is lined with tall fridges which house these ‘Enjoy at Home’ meals. There’s space to pull up a stool and enjoy a coffee but head into the back and you’ll find the ‘chef ’s table’ and upstairs a private dining room. It’s quite the change in direction for Kate and James whose background is in farming; they own Pollybell, a diverse organic farming business producing organic livestock, vegetables and grains. The farm covers 5,000 acres crossing the three county borders of Nottinghamshire, Lincolnshire and South Yorkshire. Much of the produce finds its way on to the menus at Browns and is utilised to great effect by the kitchen team of Tim Stamp (executive chef), Lewis Titley (sous chef), Josh Brockett (chef de partie) and Adele Stamp (pastry chef). A la carte and taster options of breakfast and brunch are served from

9.30am before lunch takes over from 122pm with a six-course tasting menu (£45pp). An evening nine-course menu (£105pp) is available on Fridays and Saturdays and Sunday lunch is also served. Everything must be pre-booked and the seasonal menus change on a monthly basis. We arrived on a Friday to sample the lunch menu and owing to a party booking in the private dining room joined four other guests at the chef ’s table. It was definitely the best place to be. The chef ’s table is more of a bench really and faces an open kitchen where Tim Stamp was already hard at work preparing the initial courses. We started with canapes of duck fat hash browns topped with black garlic ketchup, and wild grouse, puffed rice and soy before tucking into warm crusty rolls. The first course came in the form of Tim’s twist on cauliflower cheese, on this occasion served in a tart with truffle. The flavours all worked in harmony to create a rich, decadent introduction that was only bettered by the next course. Pan-fried scallop served with a brown shrimp and kombu sauce had more-ish, umami flavours and was complemented by a hit of fresh dill and chives and luxurious caviar. It was a real stand-out dish. Salt cured pork, which had been brined for 18 hours and air-dried for two days before being slowly cooked and then pan-fried, was served with apple and kohlrabi. But the real star of this dish was a pigs cheek croquette, which had been coasted in a spiced buttermilk seasoning before being covered in the most delicious katsu curry sauce. Pumpkin pie served with a spiced chestnut ice cream was the first of two desserts, amazingly light and packed with

lots of lovely warming, autumnal flavours. We finished with a ginger parkin which had been submerged in caramel before being paired with cubes of poached pair and a fragrant fennel ice cream. If that wasn’t enough, coffee from Huddersfield’s Dark Woods was complemented by some of the best petit fours I’ve ever tasted. A lemon meringue macaron was the real stand-out but the rum and raisin chocolate and homemade Daim bar were also exceptionally good. Our lunch ran over the two-hour mark and was definitely worth savouring. The chef ’s table offers a real immersive experience that adds to the quality of food that we tasted. Tim spoke to us throughout, explaining the intricacies of each dish, and was joined on occasion by other members of his kitchen team. Sustainability is a bit part of the ethos at Browns. Much of the produce is sourced from the farm or locally and Tim makes a great effort to minimise waste where possible. Even the ‘Enjoy at Home’ meals come in glass dishes to cut down on the use of plastics (a small deposit is required which is refunded on return). Kate and James’s new concept has really impressed. This maybe a real treat but with a monthly-changing menu there’s lots to return for. Why not treat yourself more regularly? In good company ROSS HEPPENSTALL JOINS A LIST OF HIGH-PROFILE GUESTS ENJOYING THE SOUTHERN INDIAN DELIGHTS OF THARAVADU. t says much for the increasing popularity of this delightful south Indian restaurant that, even on a dark, dank Monday night in early November, Tharavadu is very busy. My dining partner and I are booked in for 5.30pm and we are greeted warmly by the attentive, friendly staff before being shown to our table with a view of the hustle and bustle of Leeds city centre. Commuters hurry through the cold and drizzle to make their trains home at the nearby station but we are ready to devour some of the finest Indian cuisine that Leeds has to offer. Tharavadu, which opened in June 2014 and has since won a string of awards, takes its name from being the first authentic Kerala restaurant in the city. The Michelin-recommended venue has been visited by high-profile politicians such as Sir Keir Starmer and sporting stars including Leeds Olympic triathletes Alistair and Jonny Brownlee and India cricket captain Virat Kohli. The day before our visit, Kohli had scored a 101 not out on his 35th birthday in India’s World Cup win over South Africa, thus equalling the record of fellow India great Sachin Tendulkar as he hit his 49th one-day international century. “Virat comes here when India are playing at Headingley; he once brought 65 friends and family, taking over both floors of Tharavadu, and we closed the restaurant just for him,” manager Siby Jose tells us with a huge smile. “Virat has been with his wife, who loves coming here, and the Indian cricket team. We are very proud to host them.” Signed dinner plates from Kohli and other famous guests adorn the walls of Tharavadu as well as maps and images of India and specifically Kerala, a state on the country’s tropical Malabar Coast. Here guests can experience the flavours of traditional Keralan cooking from the hands of chefs who learned from traditional Nair Tharavadu.

Siby is the perfect host, taking time to speak to his diners and even to act as tour guide, showing us round the first floor of the restaurant which has been revamped so that Tharavadu can serve 150 diners at any given time. Tharavadu promises to take “Indian cuisine to a whole new level of sophistication” and, as we are about to discover, that is no exaggeration. Aside from the restaurant’s vibrant atmosphere, fascinating décor and quality service, the food is simply amazing and extremely competitively priced. There is a sleek bar which offers a wide range of wines, handcrafted cocktails and draught beers including Kingfisher, Cobra and Tharavadu’s very own Somarasam craft beer. We opt for a couple of pints of Cobra while we survey the menu, which offers a fantastic choice of starters and mains. A perfect appetiser comes in the form of a pickle tray and poppadoms. This comprises of Tharavadu’s homemade chutneys and pickles which complement their crispy Pappadavada, flavourful Pakkavada, savoury Kaya Varuthathathu and perfectly-seasoned poppadoms. It also provides much-needed time to pore over the menu and decide which mains to go for; it is not an easy choice. Being a fish lover, I order the Padipura mix seafood platter, which is a real treat to say the least. Expertly crafted to showcase a harmonious blend of flavours and cooking techniques, the huge plate includes batter-fried squid, perfectly grilled prawns, crispy fried fish, and savoury mussels. It is definitely a decision well made and my dining partner is similarly smug after opting for the Chilli Paneer vegetarian starter. This is Tharavadu’s most-ordered vegetarian dish and featuring freshly produced paneer - a delectable cottage cheese. Sautéed to perfection with aromatic spices sourced from the land of spices, the dish is complemented with a

medley of onions, peppers, and tomatoes. The portion sizes of both starters are very generous and serve as the perfect appetiser to our main courses. I opt for the Chef ’s Special, Kozhi Kurumulag, a Kerala-style chicken dish said to be a favourite in Wayanad, a district of Kerala where fresh black pepper is readily available. The dish consists of marinated grilled chicken cooked with fresh green peppercorns and a blend of homeground spices and coconut. The result is a mouth-watering combination of flavours that perfectly balances the heat of the spices with the creaminess of the coconut. My dining partner orders the Kerala Kozhi Curry, which consists of tender chicken cubes simmered to perfection in a sumptuous sauce made from roasted coconut, fragrant spices, and a hint of fiery heat. We both ordered lemon rice to accompany our main dishes and a Kerala Paratha, a form of naan bread, to share. To add to the excellent customer service, we are also brought two slices of Appam, made from a fermented batter of rice and coconut milk. Appam is a popular breakfast dish in Kerala and is often served with a variety of sides. After two more pints of Cobra, Siby offers us the dessert menu but we are already fully satisfied – or rather full and satisfied; ready to head out into the cold but already looking forward to returning as Tharavadu’s reputation continues to soar. More than just a bed for the night CELEBRATING ITS 20TH ANNIVERSARY THIS YEAR, EMMAUS LEEDS IS TACKLING HOMELESSNESS HEAD-ON.

omelessness has been front and centre in the news of late and is a growing concern in many of our towns and cities. Leeds has numerous charities and initiatives tackling this problem head on and one in particular is proud to have been making a difference for over 20 years. It was in December 1999, at a Christmas Carol Concert, that Emmaus UK President Terry Waite CBE introduced the charity to the city with Emmaus Leeds eventually opening its doors at Lincoln Green in November 2003. The homelessness charity provides more than just a bed for the night, supporting people who have experienced homelessness and social exclusion by offering a home, work experience and an opportunity to progress. The Emmaus Leeds community is made up of a diverse range of people. The charity supports 26 formerly homeless people (called ‘companions’), has a dedicated group of local volunteers, a small staff team and a wide range of supporters who shop, donate and get involved. Each companion is given their own ensuite bedroom and has access to communal areas, including kitchen, lounge area and study. They are expected to work 40 hours a week, or as much as

they are able, at the charity’s social enterprise and are required to to sign-off all benefits with the exception of housing benefit, which is claimed to help support the community. The Emmaus model has a huge impact on restoring confidence and self-respect, as companions take responsibility for keeping their community going and work hard to support themselves and others. The Emmaus Leeds social enterprise collects and sells a wide range of secondhand furniture, white goods, electrical appliances, clothing, books, vinyl, antiques, bric-a-brac and other household goods from their shop situated on St Mary’s Street in the city centre. They can also collect larger furniture items for free and also offer a house clearance service. “Companions volunteer in every area of the business – collecting and delivering furniture on the vans, warehousing, working in the shop and the collections booking office, eBay and PAT testing as well as cooking and cleaning for each other,” said Gina Morrison, who is executive lead at the charity. “When companions first arrive their confidence is often at rock bottom, so they are encouraged to volunteer and get in the swing of things as soon as possible, as helping others helps their own self esteem.

“Regular support meetings which focus on goal setting are held, and the support team is available 24/7 for emotional and practical help. Once the companion is ready to think about moving on, they are encouraged in their search for external employment. We also offer day release for further education or work experience to those who want to take this route.” Gina first became involved with Emmaus Leeds in March 2010 and started working as a part-time administrator. “I liked the idea of a charity that didn’t ‘rattle tins’ but worked hard in the community to earn money – the people benefitting from the charity also contributing to it was the main attraction for me, and 14 years later it still is,” she said. “Since joining in 2010 I soon moved into full-time employment and worked in various different roles, before taking up my current position in July this year. “ There are currently 30 Emmaus communities in the UK and each is a separate entity, governed by its own Board of Trustees. Over the last 20 years, Emmaus Leeds has grown through hard work and good service and is moving closer to its aim of being completely selfgoverning financially. The

only external funding they receive is housing benefit claimed on behalf of their companions. Companions vary in age and circumstances and are sometimes found by the charity while others are recommended to them. The average stay is three years, although Emmaus offers a home for as long as it is needed. “Usually companions find out about us through external agencies which help people find accommodation, although we do have some self-referrals,” added Gina. “There is quite an involved interview process and checks to be made before a new companion is asked to join, as the safety and wellbeing of the existing community is always of the utmost importance.” Some return to volunteer after they have moved on although most want to move on with their new lives and not dwell on the past. Christmas and winter in particular can be a difficult time for many people but can be especially hard for those affected by homelessness and social exclusion. “For some companions, Christmas is a very difficult time as everywhere you look the emphasis is on family life,” said Gina. 78 www.rmcmedia.co.uk

“Many of our companions have families they are estranged from or only have limited contact with, including their children. Even the ones without any ties can feel especially lonely at Christmas, which is why we try to encourage them to join the Christmas meal and not isolate themselves from their fellow companions.” All companions receive a gift on

Christmas Day and they cook a Christmas lunch for themselves. “The shop is decorated, but we leave it to companions to decide if they want to trim up their communal spaces – they always do!” added Gina. “We don’t extend the holiday beyond the two days as being inactive isn’t the best thing if you are feeling a bit low, but those who

are able to visit family are given additional time to do so.” After 20 years, Emmaus Leeds has many heart-warming stories, and it’s sometimes the smallest achievements that can bring a lump to the throat. “We’ve seen young people who’ve been written off as they haven’t done great at school passing entrance exams

and moving on into further education or apprenticeships,” beamed Gina. “We’ve even had a love story - two companions who met whilst living at Emmaus Leeds now live together in their own property and still pop into the shop regularly for their homeware.” Emmaus Leeds works in tandem with many other city initiatives with the

shared goal of reducing homelessness and improving the outlook of those affected. “Our companions support Homeless Street Angels and recently donated £500 to their Christmas appeal,” said Gina. “We also receive referrals for new companions from various Leeds agencies, and sometimes further afield. Emmaus Leeds is also part of a group of similar homeless charities supported by social enterprises, known as the Leeds Furniture Reuse Group.” In turn, the charity receives support from many local businesses, including Blue Yonder, Grainger, and Teamsport, but would like you to support them too. “We’re passionate about earning our own money, so if you live in the Leeds area and you are buying new furniture, please give us a ring to see if we can collect your old one,” added Gina. “If you have small items to donate, please bring them to our shop on St Mary’s Street – you may find a bargain whilst you’re here. Make your own wrapping paper To make your gifts really standout this Christmas why don’t you try making your own wrapping paper? There are many ways to this, but a super simple option is to use classic brown paper and decorate with stencils or stamps. You could use metallic paint or paints in festive green and red. Not only will this create a beautifully homemade look, but you will save money and be helping the environment!

Hot Chocolate in a Jar This is a super simple DIY gift idea that is great to give to anyone who loves cosying up with a delicious hot chocolate. All you need is an empty jar, chocolate, sugar, cocoa powder and candy canes. First you will need to crush the chocolate 86 www.rmcmedia.co.uk
