below five years. Rotary isn't just a club for people to join, but rather “an invitation to endless opportunities.” Our club improves the lives of our members and the lives of others though our service projects. All our service projects, big or small, create avenues and opportunities for people who need our help. Our Club has grown in a sustainable and organic way with induction of new member Rtn Vasant Agshikar and many other new members are envisaged to follow. As we welcome our new members, we encourage their new perspective and experiences that will create a constant change renewal of ideas and energy. During the last 23 years since the existence of our Club, we are bounded by strong ethics, our passion for service above self, and our unique approach to problem-solving. One of our greatest strengths is how we reach across our communities and across national, ethnic, religious and political divides to unite people of all backgrounds and help others. This year besides our regular service projects we shall also concentrate on sports events, fellowships, family get together as these events which will endeavour to be another opportunity to grow stronger, more adaptable and aligned to our core values.

ARTICLE This word brought to my mind images of mist covered hills amid ample greenery since past 15-20 years. So when a trip to this idyllic place was suggested, I least expected a dilemma about visiting it. But with the graph of new Covid cases rising steeply we ended up cancelling a road trip to Coorg via Mangalore. Thankfully an option of direct flight to Mysore from Goa followed by less than 3 hours drive to Coorg and the boredom of no travel for last 14 months propelled us to make the trip at the end of March. The one and half hour Alliance Air Flight from Goa to Mysore was uneventful and reassuring due to the strict enforcement of wearing masks by the stewardesses. But the almost 4 hours delay deprived us of enjoying an evening in the beautiful Radisson Blu Plaza Hotel, Mysore. Next day, after a sumptuous and delicious breakfast at the hotel, we set out for sightseeing of

CHEF'S RECIPE

Easy Peasy Chocolate Cake

-by Annet Dr Nazleen Vaz

Dry Ingredients: Ÿ 2 cups (300g) all-purpose flour Ÿ ¾ cup (80g) cocoa powder Ÿ 2 Tsp (10g) baking powder Ÿ ¾ Tsp (3g) baking soda Ÿ 1.5 Tsp (7g) sea salt Ÿ 1 cup (220g) granulated sugar Ÿ ¾ cup (150g) brown sugar

Wet Ingredients: Ÿ 2 egg yolks and 2 large eggs (all

room temperature) Ÿ ½ cup of sunflower (any neutral

tasting) oil Ÿ 1 Tbsp vanilla essence Ÿ 1 ¾ cup of milk

INSTRUCTIONS: Ÿ In a large bowl, sift together the

flour, cocoa powder, baking powder and baking soda. Add the salt and sugar and whisk until thoroughly combined. Ÿ Separately, whisk the egg yolks

and drizzle in oil, a little at a time. Ÿ When it starts to thicken up, add

the vanilla essence, any remaining oil and whisk. Ÿ Lastly, whisk in the eggs, one at a

time. Ÿ Pour this mixture into the bowl with

the dry ingredient and gently mix until all the dry mix is evenly moistened. Its alright if it looks crumbly at this stage. Ÿ Heat the milk to a light simmer,

and pour into the batter. Ÿ The key is to mix until the batter

is smooth with no lumps and then mix no more. Ÿ Transfer the batter to a well-oiled

tray and bake at 175 °C for 35 minutes, until a toothpick inserted at the center comes out clean A few pointers: Ÿ Its always a good idea to oil your

baking tray beforehand and preheat the oven, because the active ingredients i.e. the baking powder and baking soda activate as soon as they are moistened, and you want to get the batter into the oven as soon as possible for airy, light cakes. Ÿ Cocoa has a tendency to clump

together, so sifting prior helps the batter to be smooth

Ÿ The idea of beating the egg yolk

with oil is to create a rich mayonnaise base that will add moisture to the cake. But you can forego the steps and whisk all the liquid ingredients (apart from the milk) together if you're in a time crunch. Ÿ Warm milk, vanilla essence and

coffee powder (you can add a teaspoon, and it won't lend a coffee flavor to the cake), all enhance the flavor of cocoa. Ÿ However, milk that is boiling hot

will burn the cocoa, so only heat the milk to a light simmer. Ÿ Overmixing the cake batter will

work the gluten in the flour and will result in a tough cake. So, mix only enough that the mixture is lumpfree and even

EDITOR’S MESSAGE

RTN. SANDEEP NADKARNI 2020-21 Friends,

Don’t Stop Until You’re PROUD

In the month of March there was a lull. But it was a lull before the storm. The second wave of Covid-19 hit the State. The number of cases are unprecedented and it should be our endeavour to overcome the same and also help each other in this hour of need. The club had endeavored itself to help the needy especially the frontline workers by providing them necessary and requisite items like masks, gloves, RTPCR kits, sanitizers, etc and Also necessary items like disposable items at the covid centres. In this hour of need, we should follow the Standard Operating Procedures notified by the Government and also help our brethren by donating blood and plasma. Our Club in this hour of need is embarked on helping the needy by providing them equipments and items. It is said that that there is always a silver lining beyond the dark clouds and we pray to almighty to help us in our endeavour of fighting against this Covid-19 devil. “ Worrying is like walking around with an umbrella waiting for it to rain. This too will pass. Stay Safe.”
