Mussourie & Hrishikesh -Ann Swati S. Shirodkar

Then, what excitement, jackets, shoes, Covid test and we were off to Uttarkhand via Mumbai. A taxi was waiting for us at the Dehradoon airport and we drove to Mussouri on a long, winding, narrow, cold drive of 2 hours. The scenery was spectacular. Mountains everywhere. We reached late evening and slept early as we were all

Mussourie! The very word brings visions of coolness and freedom. Is this the time to go?, we were asked. Yet, feeling a bit low due to retirement we just clicked and were already mentally there in our Sterling Resort. A couple friend of ours from Mumbai too needed a break and decided to join us.

ARTICLE excited about the next day.

We awoke early, took a change and were off to Hrishikesh for Ganga white water rafting and the famous Ganga Aarti. We had kullad tea which set us tingling and full of zest. We were taken by a jeep to the rafting area, which you feel looks easy but being strapped and belted you feel like a balloon ready to float.

We had 2 instructors, who showed us how to sit safely and pull the oars. Different command when a rapid is near. Excitement but fear too was building up! We were not young anymore! Only young at heart. Oh how we enjoyed the experience! They actually let us jump in the Ganga and float. It was bliss. After a ride of 12 km, we dried and changed and sat for the Ganga Aarti. It was sheer bliss! The ambience, the purity, the camlness sent me on a different trip. Tired but thrilled we returned to Mussouri late at night.

Next day we visited the famous Landor town, which is a small, cute colonial town of the British era. We met Pranoy Roy, he lives there and wanted to meet the great author, Ruskin Bond but due to Covid couldn't. The walk,

the Café, the French coffee, the yummy pastries stole our hearts away.

CHEF'S RECIPE

-by Maitreyi

Asian inspired Fish Burgers Dry Ingredients:

INSTRUCTIONS:

Ÿ 400 g Pomfret fillets (I used

Ÿ Finely dice the ginger stem and

the lemon grass stalks.

Pomfret but you can use any fish) Ÿ 11/2 finger sized piece of peeled

Ÿ Finely dice 3/4 of the pomfret

meat into an almost paste like consistency. Halfway during this process incorporate the diced ginger and lemongrass to get a homgenous mixture.

ginger Ÿ 3-4 stocks of lemon grass Ÿ chilli jam (alternatively you can use

chilli oil for an added hit of spice) Ÿ 1-2 tsp pepper powder Ÿ salt to taste Ÿ Burger buns Ÿ lettuce (1-2 whole leaves peeled

off a lettuce head per burger) Ÿ tomatoes ( 1-2 slices per burger) Ÿ Cheese slices Ÿ Oil for frying

Ÿ

Cut the remaining pomfret into chunky bits for added texture to the patty. Mix well into the remaining mixture.

Ÿ Add salt and pepper to season. Ÿ The mixture will get sticky

enough to mould into patty shapes. At this point you could keep the patties in the fridge to firm up before frying. (I got 4 medium sized patties from this mixture)

Ÿ In a flat bottomed skillet add just

enough oil to shallow fry the fish. Ÿ Once the oil heats up add in the

patties and fry till a nice brown sear appears on both sides Ÿ Add a dollop of chilli jam and flip

over to caramelize. Ÿ Add a slice of cheese and cover

the skillet till the cheese melts. Ÿ Meanwhile add a dollop of butter in

a flat bottomed pan and toast off the buns. Ÿ Assemble the burger with lettuce,

tomato and and the fish patty. Ÿ Serve hot with a cold beer

RTN. SANDEEP NADKARNI 2020-21 havoc, ground economies big and small and widen inequalities. This grey chapter will go down in the annals of history as one of the worst calamities to hit the globe.

Winners are not People who never fail But people who never Quit

Its has been a year since the novel coronavirus emerged and sent the world into a downward spiral. And contrary to popular belief it continues to wreck

The only silver lining has been the successful launch of vaccines around the world. Amidst the unprecedented pace at which vaccines are being developed from bench to bedside, a proud moment for India is to be bestowed as the pharmaceutical capital of the world winning us accolades from all corners. As the leading manufacturer of the world s vaccines and being one of the earliest countries to have eradicated both small pox and polio, it is safe to say we have both the expertise and the infrastructure to carry out large scale vaccination drives for the current pandemic as well. There is wide apprehension about the efficacy of the vaccines available to us. But as more and more people are receiving the vaccine, with few amongst them being adversely affected, strongly suggests the need of the hour is to strive towards majority of the population being vaccinated. As ambassadors of the society it is our duty to spread the message to the community at large to get vaccinated at the first available opportunity
