Bondi Beef and Beetroot Burgers SERVES: 4 PREPARATION TIME: 15 MINUTES COOKING TIME: 15 MINUTES INGREDIENTS: 500 grams lean beef mince 1 medium sized beetroot, peeled and grated coarsely ½ cup shredded tasty cheese ½ cup coarsely chopped parsley 1 teaspoon salt 1 teaspoon cracked black pepper 4 eggs ½ cup of store bought aioli Shredded iceberg lettuce and tomato

Method 1. Combine mince, beetroot cheese and parsley. Season with salt and pepper and form into 4 patties. 2. Heat oiled BBQ or fry-pan over high heat. Reduce to moderate heat and cook patties for 5 minutes on each side until well browned and cooked through. Press gently with flat spatula during cooking to ensure even contact with BBQ plate/fry-pan. Set aside in warm place. 3. Cook eggs on the BBQ plate/frypan. 4. Spread buns generously with aioli and fill with lettuce, tomato, burger patties and fried eggs.

Cattleman’s Beef Burger SERVES: 4 PREPARATION TIME: 15 MINUTES COOKING TIME: 15 MINUTES INGREDIENTS: 500 grams lean beef mince 2 large onions sliced Ÿ cup smokey BBQ sauce 4 tasty cheese slices 2 tomatoes sliced 1 teaspoon salt 1 t easpoon cracked black pepper 4 of your favourite burger buns 1 tablespoon olive oil for cooking

Method 1. Season beef mince with salt & pepper and combine. Shape into 4 beef burger patties. 2. Heat oiled BBQ or fry-pan over high heat. Reduce to moderate heat and cook patties for 5 minutes on each side until well browned and cooked through. Press gently with flat spatula during cooking to ensure even contact with BBQ plate/fry-pan. 3. Meanwhile, heat oil in large fry-pan over medium-high heat. Add onions; cook and stir 10 minutes or until golden brown, stirring frequently. Stir in BBQ sauce and set aside. 4. Fill buns with tomatoes, burger patties, cheese and smokey onions.

Turkish Lamb Burger SERVES: 4 PREPARATION TIME: 40 MINUTES (INCLUDES CRACKED WHEAT SOAKING TIME) COOKING TIME: 10 MINUTES INGREDIENTS: 500 grams lean lamb mince ½ cup cracked wheat ½ cup boiling water 1 tablespoons ground cumin ¼ cup finely chopped mint leaves 1 cup store bought hummus 1 teaspoon salt 1 teaspoon cracked black pepper Shredded iceberg lettuce, diced tomato and red onion 4 wholemeal pita breads, warmed

Method 1. Place cracked wheat in heat resistant bowl. Pour over ½ cup boiling water. Stand for 20-30 minutes until water is absorbed and wheat is softened. 2. Combine lamb, cracked wheat, cumin mint and season to taste with salt and pepper, form mixture into 8 small patties. 3. Heat oiled BBQ or fry-pan over high heat. Reduce to moderate heat and cook patties for 5 minutes on each side until well browned and cooked through. Press gently with flat spatula during cooking to ensure even contact with BBQ plate/fry-pan. 4. Split the top of the warmed pita breads to make a pocket. 5. Fill with 2 burgers patties, hummus and salad mix.

Asian Meatballs SERVES: 6 PREPARATION TIME: 15 MINUTES COOKING TIME: 15 MINUTES INGREDIENTS: MEATBALLS 1kg lean beef mince 2 teaspoons sesame oil 1 cup breadcrumbs 1/2 teaspoon ground ginger 2 eggs 2 cloves garlic, minced 1/2 cup sliced green onions 1 tablespoons olive oil for cooking ASIAN SAUCE 2/3 cup hoisin sauce 1/4 cup rice vinegar or juice of 1 lemon 2 garlic cloves, minced 2 tablespoon soy sauce 1 teaspoon sesame oil 1 teaspoon ground ginger

Method 1. Combine meatball ingredients and shape into balls the size of a golf ball. 2. Cook meatballs in large oiled fry pan on medium - high heat until cooked through. 3. While the meatballs are cooking, whisk together all of the sauce ingredients. 4. When the meatballs have finished cooking, pour the sauce over the meatballs and gently stir until covered. 5. Serve with steamed rice and iceberg lettuce cups. Sprinkle with optional garnish if desired. Optional garnish: toasted sesame seeds, sliced green onions

Chilli Con Carne SERVES: 4 PREPARATION TIME: 15 MINUTES COOKING TIME: 40 MINUTES INGREDIENTS: 600 grams lean beef mince 1 tablespoon olive oil 1 brown onion, finely chopped 2 garlic cloves, minced 1 tablespoon ground cumin 1 tablespoon ground coriander 1 tablespoon ground paprika 2 teaspoons cayenne pepper (optional) 1 x 400g can diced tomatoes 2 tablespoon tomato paste 1 x 410g can red kidney beans, drained, rinsed Salt and cracked black pepper pepper to taste

Method 1. Heat oil in a non-stick frying pan over medium-high heat. Add onion and garlic and cook for 3 minutes or until onions softens. Add ground cumin, ground coriander and cayenne pepper (omit if cooking for kids) and cook, stirring, for 1 minute. 2. Add mince and cook for 5 minutes, stirring to break up any lumps. Stir in diced tomato, tomato paste and kidney beans. Reduce heat to medium and simmer for 30 minutes, stirring occasionally. Season to taste with salt and pepper. 3.
