Traditional:

Karelian pastries

Karelian pastries are traditional Finnish food. It’s made of flour, water, salt, rice, milk and butter. If you want to, you can also make them with potato filling. And pastries are even more delicious with butter mix with boiled and chopped egg. In finnish, Karelian pastry is said “Karjalan piiirakka” Here’s the recipe: Ingredients: 2 dl water 1 teaspoon salt 2 1/2 cup rye flour 2 1/2 cup flour Filling: rice pudding Lubrication: boiling milk and butter How to make: 1. Mix cold water, salt and flour. Add flour, enough so that the dough should be suitably thick. Knead the dough into a smooth and bake into long sticks. 2.Divide the dough into about 20 parts. Roll them into flat and oval cakes and place them in a pile, but don’t forgot to put some flour between them. 3.Remove from the pies extra flour and and fill the rice pudding into pies. Turn the edges of pies with fingers. 4.Bake in oven about 250 degrees for about 15 min. Let them brew for a moment before eating, and if you want to, you can eat them with butter and boiled and chopped egg mixture.


Traditional:

Karelian Roast

800g pork and beef 3 onion 10 black peppers 1-1½ tee spoon water and salt Carrots

1. Cut the meat in small pieces and fry them a little so they get a nice colour. 2. Now put all ingredients to pot and mix them. 3. Turn the oven 150° C and wait for 3 hours. Then its ready.

Favourite:

The traditional split pea soup

Time: 2 to 3 hours 4 cup dried peas 2 litr. of water 500 g Smoked Pork or ham salt

Soak the peas in one liter of water overnight (or at least 6 hours). Put the steep boil. Cook over low heat for about 2 hours.

Chopp the meat in pieces and fry the meat so it gets nice colour. Put the meat in the same pot and mix with big spoon. Let boil for about 10 minutes. Spice with salt, unless the meat has got enough salt of ham. You get even more taste if you add onions or carrots. ( YOu can also try marjoram, rosemary, paprika, mustard, garlic, etc. Serve with rye bread or crispbread with. Put sweet mustard on top of the soup when served.

Cakes:

Coffee covered cakes

DOUGH 3 eggs 3 dl sugar 200 gr butter (melted) 2 dl milk 5 dl flour 3-4 teaspoons of baking powder 2-3 tablespoons of cocoa powder FROSTING 4 dl powdered sugar 5 tablespoons of melted butter 5 tablespoons of ready coffee 1-2 teaspoons of cocoa powder 2 teaspoons of vanilla sugar on top; cocoflakes or Melt butter and leave it cool. Whip eggs and sugar to foam. Mix all dry ingredients and mix them with milk to dough. Put last melted butter. Pour dough to baking tray and bake it in oven in 200 degrees 15 minutes. Mix frostings ingredients and put it on top of the baked dough. Put cocoflakes on top.


Cakes:

Strawberry Cake

Dough: 3dl sugar 3 egg 3 dl wheat flour 1 teaspoon baking powder Fill: 4dl whipping cream sugar 1 teaspoon vanilla sugar 300g fresh strawberries strawberry or othes red juice Foam eggs and sugar to a fluffy foam. Carefully mix wheat flour and baking powder mix. Spill batter in casserole (diameter about 22-24cm) and fry in mid oven for 1 hour (175 C). After taking the cake out of oven, let it rest. While the cake is resting, make the whipped cream, add sugar and vanilla. Slice some strawberries. Cut the cake in two halves. Put some juice on halves to make them soft and juicy. Spread 1/3 of the cream and some sliced strawberries on the first half of cake. Take the other half and put it on top of the first one. Spread the rest of the cream around the cake and decorate with strawberries.


Season:

Spinach pancakes

Ingredients: ½ l milk 2 ½ dl flour 2 eggs 1 ts salt touch black pepper ¼ dl liquid margarine or oil ½ packet spinach (frozen) To baking: liquid margarine Mix milk, flour, eggs, salt, sugar and pepper. Add oil and melted spinach. Let the dough to swell time. Bake the dough into a hot pan with thin pancakes. Serve with lingonberry jam.


Season:

INGREDIENTS: -150g margarine -1.5 dl sugar -1 egg -3dl wheat flour -1tl vanilla sugar -1tl baking powder -400g blueberries

BLUEBERRY PIE MAKING: Mix the sugar and the soft margarine, add the dry ingredients and mix dough smooth. Spread the dough on the pie pan on the bottom. Put the blueberries on the dough and spread them smooth. Bake it in 200 C oven for about 30 min. Serve with vanilla icecream or vanilla sauce.

DOUGH: -100g margarine -1dl sugar -2dl wheat flour


Dessert:

Chocolate balls

Dough: 3 coffee cups of oatmeal 100 g melted butter 1 coffee cup of sugar 2 spoons of dark cocoa 2 spoons of cold and strong coffee Cover: cocoflakes Mix it all well. Roll small balls and roll they in cocoflakes. Chill in the fridge.


Whipped berry pudding/porridge

Dessert:

for 3-4 persons 8dl water. 4dl lingonberries ½dl sugar 1Ÿdl semolina (wheat) a little bit of salt Boil the water and berries, let it simmer for about 15 minutes. Add sugar and salt and check the taste. Strain the broth if desired fruitpeel away. They can also be left in the porridge, then the porridge is not quite as smooth foam. Whisk in the boiling broth, semolina and cook slowly, stirring occasionally for 5-10 minutes. Let pudding cool. Whisk vigorously until fluffy, better use an electric mixer. Pudding can be eaten without vigarous whisking as a berry porridge, hot or cold with milk.


Snack:

After school sandwiches

Full corn wheat or rye bread / rolls Margarine Cheese ham, turkey, chicken, beef or tuna Lettuce, tomatoes, cucumber, sweet pepper Salad dressing, pickles Herbs Cut the roll in two halves or take two slices of bread Put some margarine on the bread / roll Take two slices of cheese Take two slices of meat of your choise, or tuna flakes Add the vegetables adn dressing / pickles Put the other half of a roll / other slice of bread Make a sandwich! Have milk, water or juice with your sandwich – what a great snack!!


Snack:

Raspberry milkshake

Ingredients: Raspberries Sugar Milk Vanilla Ice Cream Directions 1. Mix together raspberries , sugar and milk . 2. You can add a little with vanilla ice cream 3. Serve immediately


Celebration:

Rice porridge

Ingredients: 2dl water 2dl pud rice 2 tbls butter 1liter milk Boil up water and butter, and add milk and rice. Mix until bubbles begin. Then put stove on low heat. Mix well until it’s not bubbling. Give it rest for 40-50minutes. Add salt if you want. Serve with milk, sugar and cinnamon or with berries


Celebration:

Runeberg`s cakes

100 g butter 1 dl sugar 1 egg 1 dl wheat flour 1 dl breadcrumbs 1/2 dl almond flour 1 tl baking powred Frosting> raspberry jam and icing sugar 1/2 tablespoonl lemon juice 1 tablespoon water 2-3 dl powdered sugar

Whip butter & sugar Add an egg and whip well mix dry substances Add them into the dough and whip Place in 12 baking papercups put them on the baking tray bake cakes in 200 degrees for about 10 minutes Mix sugar frosting ingredients with a spoon Let bakings cool before frosting drip sugar ring on the surface of each cake Place raspberry jam in middle of the ring
