Roasted Plum Coconut Mojito gluten-free, vegan 2 plums, halved, pitts removed 1 tsp cinnamon ½ cup mint 4 oz lime juice 4 oz St. Germain 16 oz coconut water (Harmless Harvest is the best!) 8 oz rum ice Preheat oven to 400°F. On a parchment lined baking sheet, place plums, sprinkle with cinnamon and roast for 20 minutes. In a cocktail shaker, muddle plum, mint, lime juice and St. Germain. Add in ice, coconut water and rum. Shake and serve.
