s para mí una satisfacción presentar el primer número de la revista PUERTO PORTALS, nuestra nueva herramienta de comunicación para que usted conozca de primera mano los diferentes acontecimientos que día a día conforman la vida del Puerto. A través de noticias, entrevistas y reportajes de actualidad relacionados con náutica, gastronomía, moda, eventos o arte, entre otros, el lector tendrá acceso directo a la variada y selecta oferta de los diferentes negocios de Puerto Portals en un formato de alta calidad, en tres idiomas y con una imagen y una información celosamente cuidadas.

Tras celebrar recientemente y de manera emotiva nuestro 25 aniversario, los retos que nos aguardan en el horizonte son tan exigentes como apasionantes. Mantener e incluso mejorar la buena imagen de la que goza Puerto Portals, unido al buen servicio que brindamos a todos los niveles, seguirán siendo nuestras señas de identidad durante los próximos 25 años… y los que vengan después.

am delighted to present the first issue of the PUERTO PORTALS magazine, our new communication tool designed to enable you to find out first-hand about the events that make up the everyday life of the Port. Readers will have direct access to the varied, select range of services and products offered by the different business in Puerto Portals through news, interviews and currentaffairs articles related to yachting, gastronomy, fashion, events or art, among others, and all in a high-quality format, in three languages and with meticulously-prepared images and information.

After the recent and emotive celebration of our 25th anniversary, the challenges that await us on the horizon are as demanding as they are exciting. The upkeep, and even improvement of the good image that Puerto Portals enjoys, combined with the good service we offer on all levels, will continue to be our hallmarks for the next 25 years… and the ones after that.

The opening of new businesses in the Port, different events being held now and in the future, interviews with well-known figures, the latest yachting news, a selection of luxury and designer products, the boom of golf on Mallorca and an incursion into the world of art are just some of the contents you will be able to find in this first issue of the magazine. s ist mir ein Vergnügen, Ihnen die erste Ausgabe des Magazins PUERTO PORTALS vorstellen zu dürfen, mit dem wir Sie aus erster Hand über die Ereignisse und das tägliche Leben im Hafen informieren möchten. Mit aktuellen Nachrichten, Interviews und Reportagen, unter anderem aus den Bereichen Nautik, Gastronomie, Mode, Events und Kunst, erhält der Leser Einblick in das erlesene und vielfältige Angebot der in Puerto Portals ansässigen Geschäfte – all dies auf höchstem Niveau, in drei Sprachen sowie mit einem sorgfältig gepflegten Erscheinungsbild und seriösen Informationen.

Mit einer bewegenden Gala haben wir vor knapp einem Jahr das 25-jährige Bestehen unseres Hafens gefeiert. Die Herausforderungen, die am Horizont auf uns warten, sind so anspruchsvoll wie spannend. an mediado los ochenta, cuando el puerto emerge dominado por su Torre de Capitanía que ya aparece alzada. En la foto no vemos aún los pantalanes, tampoco los paseos o las hermosas palmeras, ningún barco, ni tan siquiera el faro. Sólo el espejo de agua y la Torre que mostraba su preciosa verticalidad, y que anunciaba el buen gusto de sus promotores infundiendo una especial euforia a quienes por entonces planeábamos instalarnos en el puerto.

Un optimismo que se materializaría poco después con la instalación de los primeros negocios que se abrieron para recibir a los barcos que fueron amarrándose en sus muelles como el Halla, el Burtham, el América, pues ya estaba construida la Plaza que albergaría los primeros locales abiertos al público, Tristán, el Bar del Puerto, lo que hoy es Flanigan, y el extinto Café Capricho, también el emblemático Wellies, en la esquina de la segunda fase.

Aquí tenemos un mediodía en construcción de hace más de 25 años. Malecón, muelles y Torre que fundamentaban la realidad de lo que sería una gran historia llena de historias: de barcos, de gentes, de negocios, así como de aventuras, sociedad y diversión. Un puerto que gracias a unos muy ilusionados emprendedores iniciaría la larga vida que hoy tiene recorrida con el éxito por todos conocido, referente del mejor Mediterráneo en todos sus aspectos.

alfway through the ‘eighties and the port emerges, dominated by its Captaincy Tower, now standing upright. In the photo we cannot see the jetties yet, or the avenues and the beautiful palm trees, there are no boats, not even the lighthouse. Only the mirror-like surface of the water and the tower that displayed its beautiful verticality, announcing the good taste of its developers and infusing a special kind of euphoria in those of us who were planning to install ourselves in the port at the time. An optimism that materialised shortly afterwards when the first businesses moved in, opening up to welcome the boats that moored in the docks, the Halla, the Burtham, the America; because the square was already built that was to house the first establishments open to the public - Tristán, the Bar del Puerto, now Flanigan, and the former Café Capricho, as well as the emblematic Wellies on the corner of the second phase.

Here we have midday in construction over 25 years ago. The breakwater, the piers and the tower that made up the basis of the reality of what would become a great history full of stories: stories about boats, about people, about businesses, and about adventures, society and fun. A port which, thanks to some very hopeful entrepreneurs, the Graf family, would begin the long lifespan it has now lived through successfully, as we are all aware, a landmark of the best Mediterranean in all senses of the word.

s ist Mitte der achtziger Jahre, als der Hafen entsteht, dominiert vom bereits errichteten Turm der Hafenbehörde. Auf dem Foto sieht man die Bootsstege, Spazierwege und die prächtigen Palmen noch nicht, kein einziges Schiff, nicht einmal den Leuchtturm. Nur Wasser ringsum und den stolz in die Höhe ragende Turm, der vom guten Geschmack seiner Förderer zeugt und all die, die wir uns damals im Hafen niederlassen wollten, mit einer besonderen Euphorie erfüllte. Der Optimismus zeigte sich alsbald in der Eröffnung der ersten Geschäfte, die die an den Molen anlegenden Boote empfingen. Der Platz war fertiggestellt und so öffneten das Halla, Burtham und das América dem Publikum ihre Türen. Das Tristán, die Hafenbar (das heutige Flanigan), das einstige Café Capricho und das bekannte Wellies gesellten sich in der zweiten Phase dazu.

Dieses Bild zeigt eine Baustelle vor mehr als 25 Jahren, aufgenommen an einem Mittag. Der Kai, die Molen und der Turm, die das Fundament einer großen Geschichte legten, die sich wiederum aus vielen Geschichten über Schiffe, Menschen und Geschäfte sowie Abenteuer, Gesellschaft und Vergnügungen speist. Ein Hafen, in dem dank der Entschlossenheit und Begeisterung der Unternehmerfamilie Graf der Grundstein für ein international erfolgreiches, prestigeträchtiges und langes Leben gelegt wurde, ein Hafen, der zum Besten zählt, was das Mittelmeer zu bieten hat.

UNA FIESTA PARA EL RECUERDO A PARTY TO REMEMBER EIN DENKWÜRDIGES FEST Dice el famoso tango de Carlos Gardel “que 20 años no es nada”. Sin embargo, los 25 años cumplidos por Puerto Portals el pasado verano sí que han dado para mucho. Entre otras cosas, para escribir un libro como el que se editó con el objetivo de celebrar el aniversario.

Una serie de jornadas dedicadas a eventos lúdicos, musicales y gastronómicos, sirvieron de preámbulo a la gran fiesta del 4 de julio de 2011 en la que se dio cita la flor y nata de la sociedad, la empresa, la cultura y la política mallorquina, más de 350 invitados en total.

Tras el acto oficial, protagonizado por el presidente del Govern Balear, José Ramón Bauzà, y el presidente de Puerto Portals, el Dr. Klaus Graf, los asistentes pudieron disfrutar de una exquisita cena en un ambiente elegante y relajado. El espectáculo “Heliosphère”, de Iguana Teatre, y reconocidos dj’s pusieron el colofón a una fiesta inolvidable.

Carlos Gardel’s famous tango says “20 years is nothing”. But by contrast, we could say that the 25 years of existence Puerto Portals celebrated last summer are really something. In fact, they are enough to write a book about, like the one that was published to honour the anniversary.

A series of days dedicated to recreational, musical and gastronomy events were the preamble to the big party held on 4th July 2011, when the crème de la crème of Mallorcan society, business, culture and politics gathered together, totalling over 350 guests.

After the official ceremony, performed by the president of the government of the Balearic Islands, José Ramón Bauzà, and the president of Puerto Portals, Dr. Klaus Graf, the guests were able to enjoy an exquisite dinner in an atmosphere that was both elegant and relaxed. The show “Heliosphère”, by Iguana Teatre, and wellknown DJs were the climax to an unforgettable party.

„20 Jahre sind nichts“, heißt es im berühmten Tango von Carlos Gardel. In den 25 Jahren seines Bestehens, die der Hafen Puerto Portals im vergangenen Jahr feierte, ist hingegen sehr viel geschehen. So wurde anlässlich des Jubiläums ein Buch herausgebracht.

Zahlreiche kulturelle, musikalische und gastronomische Events läuteten das große Fest am 4. Juli 2011 ein, auf dem sich die High Society sowie die crème de la crème der Unternehmer, Künstler und Vertreter der mallorquinischen Politk ein Stelldichein gaben – mehr als 350 geladene Gäste insgesamt. Nach dem offiziellen Festakt im Beisein des balearischen Ministerpräsidenten José Ramón Bauzà und des Präsidenten von Puerto Portals, Dr. Klaus Graf, genossen die Gäste ein Galadinner in eleganter, lockerer Atmosphäre. Das Spektakel „Heliosphère“ des Iguana Teatre und angesagte DJ‘s waren der Höhepunkt dieses unvergesslichen Jubiläumsfestes.

En marzo Puerto Portals fue el centro de operaciones del VIII Rally Clásico Isla Mallorca, una de las pruebas más importantes del circuito de coches clásicos de Europa. Los más de 80 autos inscritos hicieron las delicias de los asistentes que se acercaron hasta el Puerto para ver el parque cerrado especialmente habilitado para estas joyas de coleccionista, así como la salida de cada jornada. Este Rally es una mezcla de competición y placer que, tras la fenomenal experiencia, en 2013 regresará a Puerto Portals.

In March Puerto Portals acted as the headquarters for the VIII Rally Clásico Isla Mallorca, one of the most important trials on the European vintage car circuit. The over 80 cars that registered delighted those who came to the port to see the specially-prepared enclosure containing these collectors’ jewels and the start of the trial every day. This rally is a mixture of competition and pleasure and after this fantastic experience, is due to return to Puerto Portals in 2013.

Puerto Portals war im März Gastgeber und Basisstützpunkt der VIII Oldtimer-Rallye Isla Mallorca, eines der bedeutendsten europäischen Oldtimer-Rennen. Die mehr als 80 angemeldeten Vehikel erfreuten Augen und Herz der zahlreichen Besucher, die die wertvollen Sammlerstücke im eigens angelegten Park bewunderten und die täglichen Starts gebannt verfolgten. Die Rallye ist eine Mischung aus Rennen und Vergnügen und wird, nach ihrem phänomenalen Erfolg, 2013 erneut nach Puerto Portals zurückkehren.

ÉXITO DEL MERCADO NAVIDEÑO THE CHRISTMAS MARKET, A RESOUNDING SUCCESS PUBLIKUMSRENNER WEIHNACHTSMARKT La primera edición del mercado navideño de Puerto Portals recibió la visita de 20.000 personas que se acercaron a conocer y vivir la atmósfera festiva de un mercado al estilo alemán.

Residentes de la isla y turistas coincidieron en destacar el ambiente y el espíritu de este mercado, su variedad de atractivos y la ilusión generada.

Veinte casetas de madera con productos de alta calidad, desde vinos a artículos de decoración, bisutería y complementos, contribuyeron al éxito que espera repetirse en diciembre de 2012.

The very first Puerto Portals Christmas Market was visited by 20,000 people who came to discover and experience the festive atmosphere of a German-style market. Both residents of the island and tourists agreed that the outstanding features of this market were the atmosphere and Christmas spirit, the variety of attractions and the anticipation it generated.

Twenty wooden huts selling topquality products ranging from wine to decoration articles, jewellery and accessories all contributed to the resounding success of the market, which it is hoped will be repeated in December of 2012.

Rund 20.000 Besucher kamen zum ersten Weihnachtsmarkt nach Puerto Portals, um festliches Ambiente aus deutschen Landen zu erleben. Einheimische wie Touristen zeigten sich einhellig begeistert von der Atmosphäre und den Eindrücken des vorweihnachtlichen Treibens.

In 20 Holzbuden wurde den Gästen hochwertige Ware feilg e b o t e n , d a r u n t e r We i n e , Dekoartikel, Modeschmuck und Accessoires. Die Veranstalter hoffen, dass der Weihnachtsmarkt im Dezember 2012 genauso erfolgreich wird.

On Sunday 16th September the Puerto Portals installations will be hosting the X Anniversary of the SOS Animal Mallorca Annual Party, a classic event of the season which brings together hundreds of animal lovers. PORTALS NAUTICAL WEEKEND PORTALS NAUTICAL WEEKEND PORTALS NAUTICAL WEEKEND Puerto Portals es sede entre los días 26 y 28 de mayo de una atractiva feria dedicada al mundo náutico, organizada por empresas relacionadas con el sector. Una ocasión perfecta para ponerse a la última en todo lo referente a yates, veleros, lanchas neumáticas, auxiliares, motos acuáticas, efectos navales, etc. Durante los tres días de duración de la feria el visitante puede disfrutar de actuaciones musicales, animaciones y otras actividades que dan ambiente y colorido al Puerto. El horario de visita a la feria es de 12 a 21 horas.

From 26th to 28th May Puerto Portals is the venue for an attractive trade fair devoted to the nautical sector, organised by companies related to said sector. A perfect opportunity to catch up on all the latest in yachts, sailing boats, rubber dinghies, auxiliary vessels, jet skis, chandlery, etc. Over the three days the fair lasts there will be musical performances, entertainment and other activities to lend atmosphere and colour to the Port. The fair’s opening hours are from 12 noon to 9 pm.

Heming Holen, fundador y propietario, quiere que sea un día que deje huella en la historia del Puerto, y para ello no faltarán actuaciones musicales con percusionistas, dj’s y el grupo de música reggae Black Ghandi, de fama internacional. Durante todo el día no faltarán ni los mojitos ni el “fingerfood” servido en las terrazas del Diablito.

On 9th September Diablito Food & Music of Puerto Portals celebrates its 25th anniversary with a “day party” beginning at 3 pm and carrying on until midnight. Heming Holen, the founder and owner of Diablito, wants this day to make a mark on the history of the Port, and to ensure it does so there will be several music performances with percussionists, DJs and the internationally-famous reggae band, Black Ghandi. nlike the vast majority of European ports, which function as simple parking lots for boats, from the very beginning Puerto Portals has bestowed the utmost importance on its garden areas. Es precisamente en el boulevard, por su armonía y amplitud, donde se realizan la mayoría de eventos que tienen lugar en le Puerto. allorca ocupa un lugar fundamental en la historia de la cartografía náutica. Tras la conquista cristiana en 1229, la posición estratégica de la isla en medio del Mediterráneo intensificó el tráfico marítimo.

Este hecho, unido a la gran influencia de la erudita cultura judía, hizo que pronto Mallorca se convirtiera en un enclave náutico de primera magnitud del que emergió, entre otros, la importante Escuela Cartógrafica mallorquina.

Según los historiadores Julio Rey Pastor y Ernesto García Camarero, el conjunto de esta escuela que revolucionó el conocimiento de la geografía de la Tierra, la configuran una serie de documentos firmados en la isla, siempre con indicaciones en catalán y firmados por personalidades de origen mallorquín. Destacan por su precisión en los detalles del litoral y por las indicaciones de las rutas de navegación y puertos más importantes. Visualmente se caracterizan por sus colores vivos e ilustraciones muy ingenio-

After the Christian conquest of the island in 1229, its strategic position in the midst of the Mediterranean led to intensified sea traffic. This fact, combined with the huge influence of the erudite Jewish culture, soon turned Mallorca into a firstrate nautical enclave from which the Mallorcan School of Cartography, amongst others, emerged.

According to historians Julio Rey Pastor and Ernesto García Camarero, the greater part of this school which revolutionised people’s knowledge of the geography of the earth was comprised of a series of documents signed on the island, always bearing indications in Catalan and signed by figures of Mallorcan origin. They stand out for their precision in terms of the details of the coast and for the indications of the most important ports and shipping routes. Visually they are characterised by their bright colours and highly ingenious illustrations, which give a

Entre sus actividades, se dedicó a difundir la ciencia de la navegación, y aportó al mundo una de las creaciones más simbólicas: la rosa de los vientos.

DULCERT Y DALORTO. Los datos de la época son confusos, y no se sabe si Dulcert y Dalorto eran dos personas o una sola. Sea como fuere, a estos apellidos se les atribuye la creación del portulano más antiguo, de 1339, un tipo de carta náutica que permitió, por primera vez, guiarse con ayuda de la brújula.

ABRAHAM Y JAFUDA CRESQUES. El primer mapamundi de la historia se atribuye a estos dos cartógrafos mallorquines de origen judío, padre e hijo, entorno a 1375, por encargo del Rey de Aragón. Estos mapas, hechos “para conocer la imagen del mundo y de las regiones que hay en la tierra y de los diferentes pueblos que la habitan”, se conservan actualmente en la Biblioteca Nacional de París.

RAMÓN LLULL. Whilst the exact date of the appearance of this school is unknown, the Mallorcan philosopher, mystic and writer Ramón Llull (1232 – 1315) was definitely one of its fathers. Along with all his other activities he devoted himself to disseminating the science of navigation, and bestowed one of the most symbolic of creations on the world: the compass rose.

DULCERT Y DALORTO. The data from the era are confusing, and we do not know for sure whether Dulcert y Dalorto were two people or just one. Whatever the answer, these two surnames are attributed with the creation of the oldest portolan chart, from 1339, a kind of nautical chart which enabled ships to be guided with the aid of a compass for the first time.

ABRAHAM AND JAFUDA CRESQUES. The first map of the world in history is attributed to these two Mallorcan cartographers of Jewish origin, father and son, dated around 1375 and commissioned by the King of Aragón.

These maps, which were drawn up in order to “know the image of the world and the regions there are on the earth and the different peoples that inhabit them”, are now kept in the Bibliothèque Nationale in Paris.

DULCERT und DALORTO. Es gibt widersprüchliche Angaben darüber, ob Dulcert und Dalorto ein oder zwei Personen sind. Wie auch immer, den beiden Namen wird das älteste Portulan aus dem Jahre 1339 zugeschrieben.

Mit dem Schifferhandbuch konnten sich Seefahrer zum ersten Mal mithilfe der Kompassnadel orientieren.

ABRAHAM und JAFUDA CRESQUES. Die beiden jüdischmallorquinischen Kartographen (Vater und Sohn) zeichneten um 1375 die erste Mapamundi der Geschichte – eine Auftragsarbeit des aragonesischen Königs. Die Karten, die den Zweck hatten „um das Bild der Welt und der Regionen der Erde zu wissen und der verschiedenen Völker, die sie bewohnen“, werden derzeit in der Pariser Nationalbibliothek aufbewahrt.

on el fin de habilitar un espacio en el que disfrutar de las artes culinarias del chef y alma del Grupo Tristán, Gerhard Schwaiger, en un entorno más sencillo y accesible, el mítico Tristán se despide después de 25 años para dar paso al Tristán Mar. Specialising in fresh fish and seafood, this new restaurant with a Mediterranean atmosphere aspires to becoming a new gastronomic landmark for the whole island.

As for the Tristán Bistró, with its simple, relaxing design, this establishment will still be offering its seasonal menu with marketfresh produce and a wine list that rotates constantly. P.P. ¿Qué clase de reto supone para usted pasar de un restaurante con estrella Michelín a un concepto más desenfadado como es el Tristán Mar? G.S. Quiero demostrar que la calidad no tiene nada que ver con el precio, que lo verdadero es el producto natural de calidad, cocinado a la plancha, sin manipulaciones.

P.P. ¿Qué encontrará el cliente que acuda al nuevo Tristán Mar? G.S. Un espacio de aire desenfadado aunque con clase y una cocina alegre con la que podrá disfrutar de productos naturales elaborados con la técnica que nos distingue. Queremos abrirnos a un público más amplio, a la gente que vive en Mallorca, cocinar para todo el mundo.

P.P. ¿Qué criterios ha seguido a la hora de elaborar la carta?

G.S. Soy pescador desde pequeño, así que el pescado y el marisco ocupan un lugar destacado en mi concepto culinario. Pescados a la plancha, lubina a la sal, almejas, gambas de Sóller, productos puros, cocinados con lentitud.

Nuestra cocina toca el corazón, evoca sabores de la infancia.

Queremos volver a los orígenes.

P.P. What kind of challenge are you facing by moving from a restaurant with a Michelin star to a more free-and-easy concept like the Tristán Mar? G.S. I want to prove that quality has nothing to do with price.

That what is truly authentic is natural, quality produce, simply grilled and not manipulated in any way.

P.P. What will customers who go to the new Tristán Mar find?

G.S. A space with a carefree atmosphere, albeit with class, and cheerful cuisine which will allow them to enjoy natural products prepared using the technique that distinguishes us. We want to open up to a broader public, to the people who live in Mallorca. I want to cook for everyone.

P.P. What criteria did you follow when drawing up the menu?

G.S. I have always been a fisherman, so fish and seafood hold a prominent place in my culinary concept. Grilled fish, salt-baked sea bass, clams, Sóller prawns, pure produce, cooked slowly.

Our cuisine touches your heart, it evokes flavours from one’s childhood. We want to go back to our origins.

G.S. Ich möchte zeigen, dass Qualität nichts mit dem Preis zu tun hat. Das Wesentliche sind hochwertige Naturprodukte, die mit dem Grill und ohne Kunstgriffe zubereitet werden.

P.P. Was erwartet den Kunden im neuen Tristán Mar? G.S. Eine ungezwungene Atmosphäre mit Stil und eine fröhliche Küche, in der man Naturprodukte genießen kann, die nach unserer eigenen Methode zubereitet werden. Wir wollen uns einem breiteren Publikum öffnen, den Leuten, die auf Mallorca leben. Ich möchte für alle kochen.

P.P. Welche Kriterien haben Sie bei der Speisekarte angelegt?

G.S. Seit meiner Kindheit gehe ich angeln, Fisch und Meersfrüchte sind also die Hauptakteure meines Konzeptes. Gegrillter Fisch, Seewolf im Salzmantel, Venusmuscheln, Krabben aus Sóller, reine Produkte, die langsam zubereitet werden. Unsere Kochkunst geht mitten ins Herz, beschwört die Küche der Kindheit herauf. Wir wollen zu den Wurzeln zurückkehren.

ntes de nada, una curiosidad: ¿de dónde surge el nombre Flanigan?...

M.A. Cuando yo tenía 18 años estaba muy de moda la película Los Intocables de Eliot Ness. Uno de los personajes decía la frase “Te crees muy listo, Flanigan”, que empecé a utilizar muchísimo. El primer negocio que abrí, una discoteca en Cercedilla, mi pueblo, se llamó así, y posteriormente el restaurante de Puerto Portals.

P.P. En 2012 se cumplen 25 años del Flanigan. ¿Qué recuerdos guarda de entonces?

M.A. Tras viajar y conocer muchas marinas del mundo, sabía que el producto que faltaba en los puertos eran locales que estuvieran abiertos para el desayuno, la comida y la cena, ininterrumpidamente los 365 días al año, lugares de encuentro en los que la gente se encontrara bien, en familia. Cuando se navega no existe el reloj y, mientras los demás tenían cerrado, nosotros permanecíamos abiertos durante todo el día.

P.P. Por sus mesas han pasado personalidades de fama mundial, miembros de familias reales, artistas, empresarios…

M.A. Sí, y se sienten como en casa

irst of all, out of curiosity – where did the name Flanigan come from?...

M.A. When I was 18 a film called The Untouchables, by Eliot Ness, was very fashionable. One of the characters said the line, “You think you’re real smart, Flanigan,” and I began using it a lot. I named the first business I opened, a discotheque in Cercedilla, my home town, after it, and then later the restaurant in Puerto Portals.

P.P. In 2012 the Flanigan turns 25. What memories do you have of back then?

M.A. After travelling and seeing lots of marinas around the world, I knew that the product that was lacking in ports was somewhere that opened non-stop for breakfast, lunch and dinner, 365 days a year, meeting places where people could feel good, like a family. When you sail you don’t go by the clock, and when other establishments closed, we stayed open all day.

P.P. Internationally-famous figures have sat at your tables, members of royal families, artists, entrepreneurs…

M.A. Yes, and they feel at home because they know that we have maximum confidentiality and respect. My staff know that this is

M.A. Als ich 18 war, war der Film Die Unantastbaren von Eliot Ness groß in Mode. Eine der Figuren sagte den Satz „Du hälst dich wohl für schlau, Flanigan“ und ich benutzte diesen Satz immer mehr. Mein erstes Lokal, eine Diskothek in meinem Heimatdorf Cercedilla, hieß so und später das Restaurant in Puerto Portals.

P.P. Das Flanigan wird in diesem Jahr 25. Welche Erinnerungen bewahren Sie aus dieser Zeit?

M.A. Ich bin an viele Küsten dieser Welt gereist und habe erkannt, dass in den Häfen eines fehlte: Lokale, die Frühstück, Mittag- und Abendessen anbieten, die an 365 Tagen im Jahr geöffnet haben, wo die Leute sich treffen, sich wohl und heimisch fühlen können. Wenn man auf See ist, gibt es keine Uhrzeiten. Während andere geschlossen hatten, waren unsere Türen den ganzen Tag offen.

P.P. An Ihren Tischen haben internationale Berühmtheiten gesessen, Mitglieder von Königshäusern, Künstler, Unternehmer…

P.P. ¿Cómo ha sido la evolución de su restaurante en estas dos décadas y media?

M.A. Hace 25 años nadie creía en el éxito de los puertos deportivos, costaba alquilar los locales comerciales. Lo fácil es subirse al carro cuando todo va rodado.

Nuestra fórmula sigue siendo la misma: trabajar, trabajar y trabajar. Abrimos los 365 días del año.

Cualquier cliente, venga de Suiza o Alemania, sabe que al llegar a Puerto Portals encontrará nuestras puertas abiertas. El objetivo es que lo pasemos bien, tanto el cliente como nosotros. Comer y beber puedes hacerlo en muchos sitios. Pasarlo bien, no en todos.

P.P. Y respecto a la vida del Puerto, ¿Qué diferencias observa entre ayer a hoy?

M.A. El éxito de Puerto Portals se asienta en los mismos pilares que hace 25 años: su seguridad, su limpieza y su oferta. Para pasarlo bien, lo principal es sentirse seguros. Por este motivo, Puerto Portals se ha convertido en un punto de encuentro en el que la gente disfruta comprando, paseando y comiendo con total tranquilidad.

P.P. How has your restaurant evolved over these two-anda-half decades?

M.A. Twenty-five years ago nobody believed in the success of marinas, it was difficult to rent out the commercial premises. It’s easy to jump on the bandwagon when everything is already up and running. Our formula is still the same: work, work and more work. We open 365 days a year.

Any customer, whether he comes from Switzerland or Germany, knows that on arriving in Puerto Portals he will find our doors open. The aim is to have a good time, both our customers and us.

You can eat and drink in lots of places. But there aren’t so many where you can have a great time.

P.P. And with regard to life in the Port, what differences can you see between then and now?

M.A. The success of Puerto Portals rests on the same pillars as 25 years ago: its safety, its cleanliness and the services it offers.

If you want to have a great time, the main thing is to feel safe.

Which is why Puerto Portals has become a meeting place where people can enjoy themselves shopping, taking a stroll and eating out with total peace of mind.

Unsere Maxime ist nach wie vor dieselbe: Arbeit, Arbeit, Arbeit.

Wir öffnen täglich. Jeder Kunde, egal ob Schweizer oder Deutscher weiß, dass unsere Türen bei seiner Ankunft in Puerto Portals immer geöffnet sind. Die Kunden sollen sich amüsieren und wir auch, das ist unser Ziel. Essen und trinken kann man in vielen Lokalen, sich amüsieren kann man nicht überall.

P.P. Wie hat sich der Hafen im Laufe der Zeit verändert?

M.A. Der Erfolg von Puerto Portals ruht auf denselben Pfeilern wie vor 25 Jahren: Sicherheit, Sauberkeit und Angebot. Um sich wohlzufühlen, muss man sich sicher fühlen können. Aus diesem Grund ist Puerto Portals ein Ort, wo die Leute vergnügt und in aller Ruhe einkaufen, flanieren und essen.

on sus socios creó, en 1994, el vino más mítico de Mallorca, Ànima Negra. A la vez es enólogo de la Bodega Biniagual. ¿En qué se parecen ambos proyectos y cómo los gestiona?

M.A.C. Ànima Negra y Biniagual son dos proyectos diferentes y complementarios a la vez, unidos por una misma filosofía: quitar protagonismo a las personas que intervenimos en el proceso y transferir ese protagonismo a la tierra, entendiendo que éste es el camino que nos hará mejores. Esto se consigue, entre otras cosas, descartando las técnicas transformadoras y potenciando las técnicas protectoras de las características originales de la uva. En Ànima Negra se trabajan una multitud de micro parcelas en la zona de Felanitx, con la variedad callet como protagonista. En Biniagual se trabaja a partir de una sola finca, con el mantonegre como variedad principal.

P.P. ¿Es este respeto a la tierra lo que hace que un vino sea realmente especial?

M.A.C. Nosotros creemos en la palabra mágica: equilibrio. Este equilibrio debe de ser propuesto en origen, en el entendimiento y comunicación de las plantas, la tierra y el clima. Cuando este equilibrio es mantenido hasta la botella, pueden pasar cosas fantásticas y dar lugar a vinos excepcionales. Por el contrario, cuando este equilibrio se tiene que conseguir a través de la mano del hombre en la bodega, nos encontramos muy lejos de la excelencia. Entender el territorio en sentido amplio es el factor que nos permite aspirar a algo más.

P.P. ¿Qué platos son ideales, a su juicio, para disfrutar de ambos vinos?

M.A.C. Ànima Negra, por su delicadeza, combina con carnes, arroces y pescados con salsas, también platos de verdura tipo tumbet, entre otros. Los vinos de Biniagual pueden aguantar platos de caza y carnes con salsas más potentes, pero también arroces y carnes a la plancha. De todas maneras, más allá de la comida, para disfrutar de un buen vino hay dos cosas imprescindibles: tiempo y una grata compañía.

e and his partners created Mallorca’s most legendary wine, Ànima Negra, in 1994. And he is also the oenologist for the Bodega Biniagual winery. How are the two projects alike, and how does he run them?

M.A.C. Ànima Negra and Biniagual are two different yet simultaneously complementary projects, joined by a single philosophy: that of taking the leading role away from the people who intervene in the process and transferring that prominence to the land itself, in the belief that this is the path towards bettering ourselves. We achieve this, amongst other ways, by discarding transformation techniques and strengthening the techniques designed to protect the original characteristics of the grape. At Ànima Negra we work on numerous micro-plots in the Felanitx area, using the callet variety as the main grape. At Biniagual we work on one estate only, using mantonegre as the main variety.

P.P. Is it this respect for the land that makes a wine truly special?

M.A.C. We believe in the magic word - balance. This balance must be put forward at source, in an understanding of and communication with the plants, the earth and the climate that brings them together. When this balance is maintained until bottling, fantastic things can happen, giving rise to exceptional wines. By contrast, when this balance has to be achieved through man’s intervention in the winery, we are far removed from excellence. Understanding the region in the broad sense is the factor that enables us to aspire to something more.

P.P. In your opinion, what are the ideal dishes for enjoying with these two wines?

M.A.C. Because of its delicacy, Ànima Negra combines well with meats, rice dishes and fish with sauces, and also with vegetable dishes like tumbet, among others. The wines of Biniagual can hold their own with game and meats with more potent sauces, but also with rice dishes and grilled meats. In any case, above and beyond the question of food, a good wine should always be drunk in good company and with plenty of time.

usammen mit Ihren Geschäftspartnern kreierten Sie 1994 die mallorquinische Weinlegende Ànima Negra. Gleichzeitig arbeiten Sie als Önologe in der Bodega Biniagual.

Worin sind sich beide Tätigkeiten ähnlich und wie managen Sie das?

M.A.C. Ànima Negra und Biniagual sind zwei verschiedene, sich gleichzeitig ergänzende Projekte, die dieselbe Philosophie eint: im Herstellungsprozess hat die Erde, der Boden, Vorrang vor den Menschen. Das ist der Weg zu besseren Ergebnissen. Wir erreichen dies, indem wir u.a. Umwandlungsprozesse ausschließen, zugunsten schonender Verfahren, die die natürlichen Eigenschaften der Trauben erhalten. Bei Ànima Negra bearbeiten wir zahlreiche Mikroparzellen in der Gegend von Felanitx, hauptsächlich mit der Sorte Callet. In Biniagual arbeiten wir auf einer einzigen Finca und vorwiegend mit Mantonegro-Trauben.

P.P. Ist es der Respekt vor Mutter Erde, der einen Wein außergewöhnlich macht?

M.A.C. Wir glauben an das magische Wort ‚Gleichgewicht’. Dieses Gleichgewicht muss von Anfang an gewahrt werden, im Verständnis und der Kommunikation mit den Pflanzen, dem Boden und dem Klima. Wird dieses Gleichgewicht bis zur Abfüllung der Flaschen erhalten, kann Phantastisches geschehen und auserlesene Weine reifen. Erreicht man dieses Gleichgewicht durch Eingriffe des Menschen in der Kelterei, so sind wir weit von Vorzüglichkeit entfernt. Ein umfassendes Gebietsverständnis versetzt uns in der Lage, nach Höherem zu streben.

P.P. Welche Gerichte empfehlen Sie, um beide Weine zu genießen?

M.A.C. Der köstliche Ànima Negra passt zu Fleisch, Reis und Fischgerichten in Soßen, aber auch zu Gemüseaufläufen, wie Tumbet, etc. Die Biniagual-Weine sind ideal zu Wild und Fleisch mit aromatischen Soßen, aber auch zu Reis und gegrilltem Fleisch. Cómo se gesta el proyecto de esta escultura y cómo ha terminado siendo el símbolo del 25 aniversario del Flanigan?

P.S. La escultura forma parte de la serie “Riu”, y estuvo expuesta por Sotheby’s en los jardines del palacio de Chatsworth, en Inglaterra, junto a otras obras de artistas de todo el mundo. En un momento dado, el señor Miguel Arias, propietario del Flanigan, se interesó por ella para conmemorar los 25 años de su restaurante, considerando muy apropiada la simbología del anillo. El hecho de que el señor Arias, con el que me une una amistad de muchos años, pensara en mi obra para celebrar un momento tan importante es algo que me llena de orgullo.

P.P. ¿Qué le parece su ubicación?

P.S. Miguel Arias tenía muy claro dónde ubicarla desde el principio y, con la colaboración del propio Puerto, creo que el entorno es el idóneo. Me parece muy innovador que un elemento artístico, como es una escultura, se asocie a otro tema artístico, como es la cocina.

P.P. ¿De qué materiales está compuesta?

P.S. He utilizado granito, acero inoxidable y bronce.

P.P. ¿Qué proceso sigue a la hora de crear una escultura?

P.S. Para mí lo más importante es saber dónde se va a colocar la obra. A partir del espacio, genero ideas y propuestas que transformo en bocetos. Luego empieza el proceso informático, realizo fotomontajes que me ayudan a ver el conjunto de la manera más real posible, y es entonces cuando decido si sigo adelante o no.

P.P. ¿Es usted un artista más de inspiración o de estar en el estudio todo el día?

P.S. De estar en el estudio todo el día y además desde muy temprano. Aunque no esté muy inspirado, o no tenga ningún proyecto en el horizonte, considero que estar en el lugar de trabajo es fundamental para generar ideas.

ow was the project for this sculpture gestated, and how did it end up being the symbol of the 25th anniversary of the Flanigan?

P.S. The sculpture forms part of the series “Riu”, and it was displayed by Sotheby’s in the gardens of Chatsworth House, in England, along with other works by artists from all over the world. And then Miguel Arias, the owner of the Flanigan, took an interest in it to commemorate the 25th anniversary of his restaurant, as he felt that the symbology of the ring was very appropriate. The fact that Mr. Arias, with whom I have been friends for many years, should think of my work to celebrate such an important milestone is a source of immense pride to me.

P.P. What do you think of the site?

P.S. From the beginning Miguel Arias was very clear about where it should be located, and with the collaboration of the Port itself, I believe that the setting is ideal. I think it is extremely innovative that an artistic element, such as a sculpture, should be associated to another artistic theme, like cooking.

P.P. What materials is it made of?

P.S. I used granite, stainless steel and bronze.

P.P. What process do you follow when you create a sculpture?

P.S. The most important thing for me is to know where the work will be situated. Then, based on the space, I come up with ideas and proposals that I turn into sketches. Then the computing process begins; I make photo-montages to help me see the whole scene in the most realistic way possible, and that is when I decide whether to push ahead or not.

P.P. Are you more an artist of inspiration, or one who spends all day in the studio?

P.S. One who spends all day in the studio, and from very early in the morning at that. Even if I don’t feel particularly inspired, or I have no project on the horizon, I feel it is fundamental to be in the workplace in order to generate ideas.

P.S. Die Skulptur ist Teil der Serie „Riu“ und wurde von Sotheby’s im Schlosspark im englischen Chatsworth ausgestellt, zusammen mit den Werken anderer internationaler Künstler. Miguel Arias, der Besitzer des Flanigan, interessierte sich für die Skulptur anlässlich des 25. Jahrestages seines Lokals, ihm gefiel die Symbolik des Rings. Uns verbindet seit Jahren eine enge Freundschaft und ich bin stolz darauf, dass er eines meiner Werke für einen so bedeutenden Anlass ausgewählt hat.

P.P. Sind Sie zufrieden mit dem Ort, wo die Skulptur steht?

P.S. Miguel Arias hatte von Anfang an eine klare Vorstellung davon, wo die Skulptur stehen sollte. Dank der Unterstützung des Hafens ist die Umgebung ideal. Die Verbindung zweier künstlerischer Elemente – Skulptur und Kochkunst – halte ich für sehr innovativ.

P.P. Aus welchem Material besteht die Skulptur?

P.S. Ich habe Granit, Edelstahl und Bronze verwendet.

P.P. Wie kreieren Sie eine Skulptur?

P.S. Am wichtigsten ist für mich zu wissen, an welchem Ort die Skulptur aufgestellt wird. Vom Raum ausgehend entwerfe ich Ideen, die ich in Skizzen umsetze. Dann beginnt der digitale Prozess, ich mache Fotomontagen, um das Ganze so real wie möglich sehen zu können. An diesem Punkt entscheide ich auch, ob ich weitermache oder nicht.

P.P. Sind Sie mehr ein Künstler der Inspiration oder verbringen Sie Ihre Tage im Atelier?

P.S. Ich bin den ganzen Tag im Atelier, schon von frühmorgens an. Auch wenn ich mich nicht inspiriert fühle und kein konkretes Projekt plane, denke ich, dass man am Arbeitsplatz sein muss, damit Ideen reifen können.

esde el principio de su carrera, Miquel Barceló (Felanitx, Mallorca, 1957) ha hallado en el fondo del mar la inspiración para muchos de sus trabajos, algunos de ellos de grandes dimensiones, como la Cúpula de la Sala de Derechos Humanos de la ONU, en Ginebra, o la actuación en la capilla de San Pedro en la Catedral de Palma, ambos proyectos de gran repercusión global.

Pulpos, meros, arañas, anguilas, calamares, rayas y hasta ánforas de barcos que naufragaron entre olas de óleo y barro en el litoral mallorquín, son parte esencial de la obra “marina” de Barceló, llena de luz y de potentes contrastes.

Kraken, Riesenzackenbarsche, Spinnen, Aale, Tintenfische, Rochen, ja sogar Amphoren, die in mallorquinischen Gewässern zwischen öligen Wellen und Schlamm treiben, sind wesentlicher Bestandteil von Barcelos „Seestücken“ voller Licht und scharfer Kontraste.

DOS PROYECTOS PARA LA POSTERIDAD. Para su magna intervención en la Catedral de Palma –su “Catedral bajo el mar”inaugurada en 2007, Barceló trabajó durante años en la localidad italiana de Vietri sul Mare, culminando una obra de 150.000 kilos de arcilla que recubre 300 metros cuadrados de las paredes de la capilla de San Pedro. Actualmente puede visitarse de lunes a viernes entre las 10 y las 18,15 horas.

La otra gran obra de los últimos años de Barceló relacionada con el mar data de 2008. En la Cúpula de la Sala de Derechos Humanos de la ONU, el artista puso la técnica pictórica al borde de un precipicio para conseguir representar una escena común del litoral de Mallorca de forma muy personal. El resultado es la recreación de una cueva marina, con sus bellas y amenazantes estalactitas, y un mar que desafía a las leyes de la gravedad.

TWO PROJECTS FOR POSTERITY. For his great work in Palma Cathedral – his “cathedral under the sea” – inaugurated in 2007, Barceló worked for two years in the Italian town of Vietri sul Mare, culminating in a work comprised of 150,000 kilos of clay which covers 300 square metres of the walls of the chapel of Saint Peter. It can now be visited from Monday to Friday between 10 am and 6.15 pm.

Barceló’s other opus magnum of recent years related to the sea dates back to 2008. On the dome of the UN Human Rights Room, the artist took pictorial technique to the edge of a precipice in order to represent a common scene of the coast of Mallorca in a highly personal fashion.

The result is the recreation of a marine cave, with its beautiful, menacing stalactites, and a sea that defies the laws of gravity. An evocation of the island, bathed in waters of 26 colours that hang from the ceiling of the impressive dome.

ZWEI PROJEKTE FÜR DIE NACHWELT – Für sein 2007 enthülltes Meisterwerk in der Kathedrale zu Palma, seiner „Unterwasser-Kathedrale“, hat Barceló lange Jahre im italienischen Vietri sul Mare gearbeitet, um das 300 Quadratmeter große Opus aus 150.000 Kilogramm Ton, das die Wände der Sankt Petrus Kapelle ziert, fertigzustellen. Derzeit kann man die Kapelle montags bis freitags, jeweils von 10 bis 18.15 Uhr besuchen.

Ein zweites Bravourstück, das Barcelos enge Verbindung zum Meer belegt, stammt aus dem Jahr 2008. Für die Kuppel im Saal der Menschenrechte der UNO schuf der Künstler eine malerische Szene am Rande eines Abgrunds – eine sehr persönliche Hommage an ein an Mallorcas Küsten übliches Bild. So entstand die Reproduktion einer Seehöhle mit ihren bezaubernden und gleichzeitig drohenden Stalaktiken und eines Meeres, das die Schwerkraft schier herausfordert. Eine Reminiszenz an die Insel, die in Gewässern aus Stalaktiken von 26 Farben schwimmt, die vom Dach der imposanten Kuppel hängen.
