Mothers, grandmothers, wives, daughters, sisters, aunts and best friends – the dreaded disease doesn’t discriminate. October is Breast Cancer Awareness Month, a special time to acknowledge and support the many women and families in our community who are affected by breast cancer. To show our support, Profile celebrates the lives of women who have battled this inciclious disease and won, as well as those who are still fighting. We also tip our hats to those who are helping support those with breast cancer and their families. On our cover this month, we introduce you to two-time breast cancer survivor Wendy Barnes. Recently given a clean bill of health, Wendy wanted to share her story

LETTER OF THE MONTH I usually read with interest some articles more than others but this time, the article, “Excuse me waiter, I think there a weed on my plate” in your newsletter, caught my attention and made me oblivious of the rest! I am actively involved with a group growing their own crops, educating each other and teaching about edible foods as well as swapping excess crops with each other on a regular basis. So reading from one of my favourite magazines about edible weeds and having a whole list was tops, thanks for bringing it up to the general public! – Galiane Congratulations Galiane, you have won a high tea for two at Kingdom House (kingdomhouse.com.au), a new art gallery, tea house and meeting venue in Tanawha. I am very grateful to Ingrid Nelson and the team at Profile Magazine for sharing not only my story of overcoming adversity in my own life, but also sharing my vision for Stories of HOPE Australia and how it all began. The message is really simple, we have all been through hard times in life, but what we do with them is the defining point. CAUSE

Growing up, Raph McGowan and his four sisters and two brothers were taught about sun safety. Being of Irish descent, they were blessed with fair skin and always applied sunscreen and covered up when outdoors. “We would holiday in beach locations and Mum and Dad were always strict with wearing a hat and putting on sunscreen because you would see people around you who didn’t and they would get burnt. But the word melanoma wasn’t really on my radar, not until we heard it as a family.” Tess McGowan-Chan, Raph’s older sister, was a creative being. She loved music and acting and Raph remembers reluctantly attending school plays to see her perform. “I wish I took more of an interest in it and looking back over all of this, I certainly took time for granted in those early years.” In 2011, when Tess was three-months pregnant with her first child, her husband Victor, who was studying to be an anaesthetist, noticed a mole on Tess’s back and told her to get it checked, not thinking anything of it. “They got it checked and removed and it came back as a melanoma,” says Raph, explaining she chose to forgo chemotherapy because of her unborn baby. “Whether it had spread wasn’t quite known and it wasn’t until after the pregnancy that they found they had to remove the lymph gland and it had

spread throughout all of her organs.” Tess was given less than 12 months to live and within 11 months of being diagnosed, she passed away, aged 31. In the months leading up to her death, Raph and his whole family moved to Sydney. “I lived with Tess and her husband and was on hand to help out, whether it be feeding their daughter Mabel, or sitting with Tess when she went to her appointments. As the months progressed, you could see Tess was in more and more pain and that was the hardest thing, not being able to do anything, and it became about managing the pain and making Tess as comfortable as possible,” says Raph. “Over the next couple of months we knew the next step was palliative care. Tess wasn’t getting any better, the treatment she did start to have she wasn’t responding to and I found it quite surprising Tess never questioned, ‘Why did this happen to me?’ It was more about, ‘This is what’s happening’, and she really valued the time each of the family spent with her.” The idea for Raph’s hand-held lotion application device, called bakslap, came shortly after Tess passed away, as sun protection was understandably on his radar and he spent a lot of time at Melanoma Institute Australia – the world’s leading treatment and research facility. He has spent the past seven years

raising awareness and funds for the institute as a volunteer, as well as working in his full-time career, and as a result of this, Raph’s business has forged a corporate partnership with the institute and will donate $1 from each bakslap sold towards their research to find a cure. “I learned that people in Australia aged 20 to 39 years old, melanoma is the biggest killer out of all the cancers. That hit home because that’s my age and all my friends. You’re under the impression when you’re younger that it’s only going to happen when you’re in your 50s and 60s, after decades out in the sun, but it’s not the case,” he says. “I started noticing where people were getting sunburnt and as someone who enjoys cycling and surfing, when I’d sit on the beach and look at people, they would try to apply it to their back but no one has the flexibility or the reach and it’s this little triangle in the middle of your back that would be missed and I kept seeing it over again.

“Another thing people were saying is they don’t want sunscreen on their hands and would put their hands in a plastic bag and put sunscreen on and rub it in. In this day and age with all of the technology, people are using a plastic bag, or another person had a wooden spoon, one guy told me he’d squirt sunscreen on the wall in the shower behind him and rub his back on the wall – I thought there’s got to be a more effective approach.” Over the next year, Raph sketched ideas and began learning about what it took to manufacture a product and create a brand. In 2013, he started writing a business plan, but shelved it to raise more money for the Melanoma Institute and in 2016, felt it was the right time to commit to the project.

“I’VE CALLED BAKSLAP A LOTION APPLICATOR, BECAUSE IT’S NOT JUST FOR SUNSCREEN, ALTHOUGH THAT IS WHERE IT STARTED. DURING THE KICKSTARTER I HAD PEOPLE COME TO ME WHO HAD HAD AN OPERATION AND NEEDED TO APPLY MEDICAL CREAM TO THEIR BACK BUT COULDN’T REACH.” “I quit my job and came back to the Sunshine Coast and used everything I had financially to get it off the ground and I continue to work at a weekend job, so anything I had I put into getting this product out there,” he says. Raph recently wrapped a Kickstarter crowdfunding campaign, where he raised $48,000 in four weeks, gaining attention and support not only here in Australia, but in the United States, United Kingdom, Spain and Brazil. He has started the first stage of production, which involves having the moulds made, and in the coming months will do the first production run using the Kickstarter funds, to make sure bakslap is available for summer. “I’ve called bakslap a lotion applicator, because it’s not just for sunscreen, although that is where it started. During the Kickstarter I had people come to me who had had an operation and needed to apply medical cream to their back but couldn’t reach, a younger guy pre-bought one to give to his grandmother because she has mobility problems and can’t reach her leg and she gets dry skin. A world of other uses have opened up.” Given we live on the Sunshine Coast, among a lifestyle which beckons for us to be outdoors, Raph has one overarching piece of advice, “You can enjoy it, just enjoy it responsibly”.

When going under the knife for facial or oral surgery, it pays to know you are in safe hands. With 16 years training behind him and several years in practice, highly-skilled oral and maxillofacial surgeon Dr Trent Lincoln is the specialist you want holding the scalpel. DR TRENT LINCOLN AND PATIENT

A self-confessed accident-prone child, Dr Trent Lincoln says his fascination with the medical profession began at an early age. “I was always busting my head or knee open as a kid so I got to know our GP very well, in fact he became a mentor to me over the years,” says Trent. Raised on a Brahman stud farm, west of Rockhampton, Trent began his medical training at Monash University in Melbourne, graduating from medicine with honours in 2006. He then returned to his home state of Queensland to complete his resident training in Brisbane. It was during this time, the treatment of patients with facial injuries convinced Trent that oral and maxillofacial surgery would be his chosen field. “We treat conditions from the neck to the top of the head. Predominantly the face, jaws and teeth,” says Trent. “For most people who have a facial injury it’s often the worst day of their lives. I love the technical aspect of being a surgeon and combining that with helping someone with a facial trauma, it’s very rewarding. “Working with titanium plates and screws is like Meccano of the face. It’s pretty interesting.” As a unique surgical speciality, oral and maxillofacial surgeons are both medical and dental specialists, which requires many years of study. 10

“We are dual qualified,” says Trent. “I receive referrals from GPs and dentists, ear nose and throat specialists and emergency doctors, so it’s very broad,” he says. After working in ear, nose and throat as well as general surgery in Rockhampton as a registrar, Trent gained a highly sought after lateral entry to the dentistry program at the University of Queensland, allowing him to work within the oral and maxillofacial units of the major Brisbane hospitals while studying dentistry. After completing dentistry, he was accepted into the Queensland Oral and Maxillofacial Surgery training program, which required another four years of study while also working at most of the major Brisbane hospitals.

The modern, welcoming practice offers consultations at Buderim, with a visiting consultation service at Noosa Private Hospital. Providing the full scope of oral and maxillofacial surgery, with a particular interest in wisdom teeth removal, dental implants, repair and reconstruction of traumatic facial injuries and corrective jaw surgery, Trent is passionate about providing his patients with the latest techniques and first class aftercare. “I really pride myself on contemporary and cutting edge treatment, clear communication with patients and excellent post-operative care,” says trent. “Given my high level of training, my practice often deals with more complicated cases. I manage everything from removing wisdom teeth, dental implants through to reconstructing an eye socket after a car accident.” The new Buderim practice gives Sunshine Coast locals access to the highest calibre of treatment in this specialised field and the best news is Trent has no plans of going anywhere soon. “My primary goal is to provide excellent clinical outcomes for patients with a kind manner, which ensures the patient’s experience as positive as possible. I plan to provide these services on the Sunshine Coast for the next 30 years and beyond,” he says.

This year’s AMA Doctor in Training of the Year is truly exceptional. Combining her role in general surgery at the new Sunshine Coast hospital, Dr Mikaela Seymour also finds time to serve with the Australian Army, volunteer in remote Papua New Guinea, and is an associate lecturer at the University of Queensland – can you believe she entered medicine by accident? The fact Dr Mikaela Seymour is willing to don her surgical garb and meet me at her place of work on her only fatigue day, just goes to show how dedicated to the cause she is. “But it happened by accident,” she says of her entry into medicine. “I had a scholarship to go to law school when I was in high school and at the time I had some friends who were studying for the undergraduate medical admissions test and I was helping them study. I wasn’t doing too bad at the practice tests and thought maybe I’ll sit the exam – then I was offered a spot at Griffith Uni. I jumped in and I’m so glad I did because I can’t imagine doing anything else now.” Mikaela completed an accelerated three-year undergraduate degree in less than two years and went straight into four 12

years of medical school, graduating in 2015. She is now in pre-surgical training and has another 10 years ahead of her.

“WITH SURGERY, THE THING I LIKE MOST IS WE HAVE THE CAPACITY TO REALLY CHANGE PEOPLE’S LIVES, IF THERE’S A SPECIFIC PROBLEM, WE CAN FIX THAT, WE HAVE THE SKILLS AND ABILITY TO DO THAT SAFELY AND IT CAN REALLY MAKE A BIG DIFFERENCE TO SOMEONE.” Working in general surgery at the Sunshine Coast University Hospital (SCUH), Mikaela covers general surgery, urology, vascular, ear nose and throat/ENT, and she aspires to become a general surgeon. “Even though I have 30 or 40 patients in my ward-round, for each of those patients, I’m their doctor and it can be a life-changing event if they need surgery and it’s a privilege to be in that position and care for people when they’re vulnerable,” she says. “With surgery, the thing I like most is

FEATURE | PROFILE we have the capacity to really change people’s lives, if there’s a specific problem, we can fix that, we have the skills and ability to do that safely and it can really make a big difference to someone.” Like many other medical professionals, Mikaela spends a lot of time at work; up to 12 hours a day, six days a week, so how she finds time for all of her other incredible commitments, I’ll never know. As associate lecturer at the University of Queensland, Mikaela takes third year medical students and mentors them, integrating them into the hospital system. “Surgery is such a busy term, but you still want to give them a positive experience and have the time to inspire younger medical students to consider surgery as a career, especially more females,” she says. “The Sunshine Coast is amazing as we have a female director of urology, vascular and general surgery, really strong leaders, but overall we’re a minority, so this is a hub for gender equality here!” In 2015, Mikaela joined the Australian Army as a Captain in the 2nd Health Support Company at Gallipoli Barracks, and having come to the end of her training, says she will now be deployable. Mikaela’s training has been in trauma and primary health care, she doesn’t perform surgery like she does at SCUH, but if a soldier has a horrible accident, her focus is on resuscitating and stabilising them so they are well enough to be transferred to another hospital. “I spend so long here at the hospital, you get so wrapped up in that and forget there’s a whole different world out there. The army allows me to go out and serve the people who are putting their lives on the line for our country and be able to help them do their job and keep them safe.” In Mikaela’s final year at Griffith University, she was awarded a scholarship with the Ok Tedi Development Foundation and selected for the Queensland Rural Medical Education Placement to Western Province, the largest and most remote

province in Papua New Guinea. “We spent two months at the Kiunga District Hospital, learning about tropical and remote medicine, which was fantastic,” she says. Mikaela has since returned to Papua New Guinea five times to volunteer as a doctor in training, studying alongside PNG specialists and volunteering on the YWAM medical ship, delivering primary health care to some of the most remote villages in PNG.

“AS JUNIOR DOCTORS, WE WORK HARD FOR OUR PATIENTS, OFTEN AT THE EXPENSE OF OUR OWN FAMILIES AND WELLBEING AND NEED TO BE MINDFUL OF LOOKING AFTER EACH OTHER SO WE CAN CARE FOR OTHERS.” “That was a completely culturally different, but amazing, experience,” she says. “They achieve a lot with the few resources they have and it puts things into perspective. I’m so grateful for everything we have here, that I can give patients the imaging and pathology and services they need, but at the same time I look at the ‘waste’ we have in this system and look at what they can achieve in PNG with a quarter of what we have here.” While volunteering at Kiunga District Hospital, Mikaela witnessed the impact that critically low anti-malarial supplies were having on patient treatment and last year coordinated a malaria prescription service and record database of antimalarial use. This simple intervention has proven to have a real clinical impact on patient outcomes and is now supported financially by Rotarians Against Malaria. In recognition of her community service and advocacy at such an early stage of her career, Mikaela has been named the Australian Medical Association (AMA) Doctor in Training of the Year 2018. “This award was particularly special as it was peer-nominated. Being acknowledged by colleagues who understand the difficulties of junior doctor life helps keep me motivated to try and be the best doctor possible for any patients in my care,” she says. “As junior doctors, we work hard for our patients, often at the expense of our own families and wellbeing and need to be mindful of looking after each other so we can care for others. This is something SCUH does really well, and the caring environment reflects the Sunshine Coast community which we serve. I hope my varied experiences can help me continue to connect with patients and achieve optimal health.”

Equine therapy has been found to have significant benefits for returned service veterans and people with autism and asperger’s syndrome and now, Dr Bindi Bennett is looking into how horses can assist in mental health, specifically with young indigenous Australians. There are two things Dr Bindi Bennett is overtly passionate about – horses and helping people. Those close to her would argue that the former has grown to become an obsession, but through her many years spent with the gentle giants, she has discovered their true strengths in being able to heal people. That is why the University of the Sunshine Coast researcher and social worker is spending four months in the United States as part of an Endeavour Research Fellowship, to learn from the leaders in equine-assisted therapy for mental health. Starting in Durango in Colorado, Bindi will live on a working equine ranch, where they run the Four Corners Master of Social Work Program, and she is hoping to learn more about how their equine therapy programs are helping indigenous Americans complete university and how that could be tailored to help indigenous Australians. “In Durango, they run equine therapy with their students, 17 per cent are first nation people because they’re at the four corners. They also have an animal assisted research centre where they not only do research about the horses but all sorts of animals and how they assist our lives as humans,” she says. “I’m very curious to see how we can

utilise these programs or set up programs like this in Australia, and to find out how they’re evaluating their programs and measuring their success, especially with first nations people. I want to learn how they’re retaining their indigenous students using this type of program and how it’s affecting the people in the programs. “The problem with equine research in the world is it’s still very novel and still in its infancy so there hasn’t been any robust research around it yet to show it can be reliable and we can do it again and again with the same results. “Part of my going over there is finding out what makes a successful program, what could be replicated and bring it back to build on here.” Bindi will also visit a few equine businesses which are owned and run by first nations people, before spending time at the University of Denver’s Institute for Human-Animal Connection, to find out what they’re researching, what they’re learning and how they’re applying that to the rest of the world, and how that would fit into Australian culture. Equine therapy is structured on Gestalt therapy, which uses mindfulness and a focus on personal responsibility to build confidence and mental wellbeing.

It has been found that being with horses offers significant benefit for patients living with depression, anxiety, attention-deficit hyperactivity disorders, conduct disorders, dissociative disorders and other chronic mental health issues, and is increasingly used in a variety of social work contexts. “One of the reasons we use horses is they’re a very large animal and a lot of people are scared of them, nervous around them, or unsure around them and when you can conquer those fears that gives people a sense of currency and courage,” says Bindi.


“Also, because horses are prey animals, they have to be very mindful and be in the moment; they react to our emotions very quickly, so if you go to a horse angry, they will react, if you go to a horse gently, the horse will react and you can form a very lovely relationship with a horse. It’s one thing to teach a dog to walk beside you, it’s another thing to teach a 350kg animal to walk beside you and people often watch me in the paddock with four horses walking with me and say, ‘How do you get them to do that?’ I don’t get them to do that, they choose to do that. “Horses actually decrease our anxiety and heart rate when we’re near them, and they regulate our breathing, which helps us regulate our emotions and when we ride them, they give us a little zing of serotonin and dopamine, which makes us feel good and the riding helps our spine, our hips, our balance and increases our intelligence.”

When she was a young girl in Canberra, the family living behind hers owned horses, and Bindi would climb the fence to sit on the horses and sometimes sleep on them. “I ended up forming quite a bond with one of their horses and they ended up leaving that horse in our backyard and I would climb on and have a bit of a ride, but we never had the money for horses, they are very expensive creatures,” she says. “Then when I met my partner, he had a horse and he was moving to Sydney just before the Olympics and had nowhere to keep it, so he asked me if I would look after his horse; that was my beginning of owning horses.” Bindi’s latest project also draws on her 20 years as an Aboriginal mental health social worker, working predominantly with children and adolescents in schools and health facilities. “There’s a large history of intergenerational trauma with Aboriginal families, so that’s when

I started learning about trauma-based approaches and asking what it is about trauma (that affects people) and how we can start to try and fix it – I’m still trying to answer that question,” she says. “We know that culture is very important and now I’m wondering if marrying culture with equine therapy could be a really good approach to looking at improving trauma. Most of the research is around working with post traumatic stress disorder with veterans and it’s been very successful, so why wouldn’t it be successful with other results of trauma? “It’s also been very successful with people with autism or asperger’s, on that spectrum, PTSD and substance abuse. When you look at the Aboriginal community, it makes complete sense to bring that over and mix it with some traditional approaches and cultural thinking.” Bindi will return to the Sunshine Coast in December, and aims to establish equine therapy programs locally, as well as hosting a range of symposiums to further educate on the topic and bring it to the fore of educational conversation.

Former Rugby League star Matt Adamson had what many would consider the perfect life; the fast cars, the healthy bank balance, the fame and glory of a brilliant sporting career. But it didn’t come without a price to his health and his family. The father-of-three opens up about his remarkable journey that has shaped the man he is today. Born and raised in Taree, New South Wales, Matt Adamson had what you would call a good country upbringing. Taught the importance of hard work and helping others from an early age, it was these values that stood him in good stead throughout his sporting career. “I was made to work hard as a kid and my parents instilled good strong disciplines, it was part of our family culture,” says Matt. “They would always encourage me to help others and give back. I watched my mum and dad give so much back to our small community as a kid, I think we have lost a lot of that sense of community unfortunately.” Matt started his lucrative rugby career in 1990 as a fullback with Parramatta and finished with the Canberra Raiders in 2005. He played 157 games for Penrith with a total of 248 first class professional matches, which included a three-year stint with the Leeds Rhinos in the United Kingdom. Matt also made two State of Origin appearances for NSW in 2001 and played in the second row for Australia in the 1997 Super League Test series against Great Britain. Following his retirement from the game in 2005, Matt was offered the opportunity to work as a strength and conditioning coach with Les Catalan Dragons in Perpignan France. Twelve 16

months later, he and his family moved to Australia where he landed a job as assistant first grade coach with the Penrith Panthers. He then moved to a presenting role with Fox Sports and Channel 7 on Weekend Sunrise, and also opened several of his own businesses. “I’ve had an amazing career,” says Matt. “Rugby league can bring you a lot of joy but also a lot of heartache. I’ve been in the game for 28 years, 16 as a player and 12 as a coach.” Matt’s move to Queensland came after a successful year as the Storm’s NYC head coach before accepting a role as the club’s Queensland coaching director of the Melbourne Storm. “That’s how we came to the Sunshine Coast, to set up a program at Kawana with the Sunshine Coast Falcons. A lot of the young guys playing for Melbourne now are kids I recruited and developed, I love watching them evolve,” says Matt. “In rugby league, you have to be prepared to up and move, so my kids have lived in three countries and four states in the last 10 years and our family needed some stability so we bought a Queenslander at Peregian Beach and decided to make it home.”

But there is much more to Matt’s story than his successful rugby career. In fact, the end of his sporting career was really when his remarkable journey of selfdiscovery began. Matt had just come out of a successful 16-year playing career when his eldest daughter Charlotte was diagnosed with alopecia (an autoimmune disorder that often results in permanent total hair loss) when she was just seven years old. “One day you feel as though your whole world is in control and then something like that happens and it has such an impact,” says Matt. “Although it wasn’t life threatening, it was life changing and it had a massive impact on my wife Rebecca, still does, and a massive impact on me as her dad who wants to give his daughter everything, but can’t. It also really affected her siblings, and it is something we still have to live with today as a family.” In an effort to raise awareness around the disorder and help others who were going through the same journey, Matt and Rebecca started the Princess Charlotte Alopecia Foundation. “I was lucky at the time when we started the Princess Charlotte charity I had the rugby league family around me. We raised $350,000 and got the organisation up and running and it enabled us to buy wigs for kids.


FEATURE | PROFILE also faced his own share of personal challenges that really tested his strength of character and resilience. Ultimately it led him to seek spiritual healing, which changed his life and set him on a path to help others. “After a coaching stint I went into restaurants,” says Matt. “I bought a 180-seat restaurant in Balmain. It was an industry where I could use my profile, where people knew who I was. It was a successful business but the cost was my relationship. “You get caught up in the whole thing, but it’s all so surface, so fake. I would leave early and work until late seven days a week. I learnt a lot about myself and I learnt a lot about running a business, but I would also go to the cool room at 6pm and skull a six pack of Corona to get through the night. My wife caught me one night and said, ‘What the hell are you doing?’ But it was the only way I was getting through. It was a big wake up call. I’m so thankful for my wife, she has been so supportive and stood by me through some pretty tough times.” “We soon realised there was a lack of virgin hair. It takes 14 kids with the same hair colour to make one wig, it’s like gold. So, we started Tresses for Princesses to raise awareness of the importance of donating hair and Stephanie Rice came on board as an ambassador and Mal Meninga, it was fantastic.” Charlotte is now 18 with plans to become a school teacher and Matt couldn’t be prouder of the young woman she has become. “I believe it’s happened for a reason,” says Matt. “The skills and the resilience it has given Charlotte will give her the strength to do something amazing in life. She has so many wonderful qualities. She will inspire others and I think one day she will be a great ambassador for alopecia awareness.” Unfortunately, that is not where it ends when it comes to the heartache the Adamson family has endured. Their lives were turned upside down yet again when their middle child Milly was diagnosed with a serious heart condition. “Milly was just nine years old when we almost lost her to a terrible heart condition,” says Matt. “Her heart rate went from a normal 80 or 100 beats per minute to 320. She was rushed to hospital and we discovered she had an irregular rhythm and an extra electrical pathway. “Three years on it was having a massive impact on her life, stopping her from growing and maturing so they decided to operate. Thankfully, the 10-hour surgery was a success. She still has a few ups and downs but nothing like she used to. We are so thankful. It makes you realise what’s important in life, that’s for sure. “We are lucky that both Bec and I have beautiful strong families. Having that nucleus around us during those hard times allows me to sit here and tell my story, there were times I thought enough is enough.” Apart from the health issues his family have dealt with over the years, Matt has

I RECKON IF I CAN DO THAT AND INSPIRE THE YOUNGER GENERATION, I WILL BE HAPPY.” It was also around this time, that the Adamsons lost a relative in a tragic road accident that led them back to church where Matt found his salvation. “I was going through such a hard time,” says Matt. “I stood there through the service with my three kids with this massive ego and a massive chip on my shoulder and at the end of the service they asked anyone who was doing it tough to come forward. At this stage, my marriage was not in good shape. Becky went forward and this bloke (the pastor) put his hands on her shoulders and all of a sudden, these tears just started coming down my cheeks. “I thought, here is a woman I love, standing at that end of the room, and me,

the man who was supposed to be her shining knight and protector at the other end. Before I knew it, I was standing next to her. “He put his hands on my shoulder and said, ‘Life is going to be all good for you big fella’. It saved my life and I live life differently. “That was a tough process. It was at that stage I took all the heartache I have had through my sporting life, being a dad, marriage, business life, all the challenges we all face, to realise that there is somebody always worse off than us. I thought if I could steer my attention to doing good by others, I could live a better life.” Which is exactly what he did. In 2013, Matt became an ambassador for Destiny Rescue, an organisation dedicated to rescuing children from slavery and sexual exploitation. As a father of three daughters, it was an intensely challenging experience that completely changed his outlook on life yet again. “I travelled to Thailand with Destiny Rescue in 2015. My role was to go in and earn the trust of young girls who had already been identified by the police or Destiny Rescue and gain their confidence over a few nights, knowing they were underage and knowing we had a pathway for those kids to get out of there. “I went over there wanting to rescue every child I laid my eyes on. I thought I had an understanding of the situation, but once you are in the thick of it, it’s quite a different kettle of fish. It is so intense. “We rescued a dozen or so kids in a short space of time. It destroyed me emotionally, six months later I had to seek help because of what I had seen. I wear my heart on my sleeve and I was struggling to cope with how we live knowing what is going on there. Slavery has become a big problem, not only overseas but in Australia too and it’s at its highest levels ever.” Matt has now taken on a new role as the head coach of the Fiji National Rugby Team, a role he is thoroughly enjoying. Life is good. And while he is not currently an ambassador for Destiny Rescue, he intends to continue his work with the charity in the near future. “At the end of the day, I want to leave a legacy for my kids. I want them to say, ‘My dad was a giver who made a big difference to people’s lives.’ “I reckon if I can do that and inspire the younger generation, I will be happy.”

When Amy Quattromani courageously shared a heartbreaking and personal story about the passing of her dear sister Sophie, she never knew it would lead to a movement touching the lives of thousands and inspire others to share their own stories about mental health. Amy Quattromani and her family watched on for years as their sister, daughter and friend battled with mental illness, only to be told by doctors that she was just a typical teenager dealing with hormones. “She had a very tough life but our whole family didn’t know what was going on. No doctors could understand. But we knew there was something more,” says Amy. In 2016 she was finally given a diagnosis of bipolar and the family had some answers. Unfortunately Amy says the diagnosis came a little too late and within six months, Sophie had passed away.

“SO MANY PEOPLE OUT THERE FEEL SO ALONE, THEY’RE ACTUALLY NOT, THEY’RE SO LOVED.” It wasn’t the first time Sophie had tried to end her battle with mental illness. Five years ago she attempted to end her life and Amy says it was extremely difficult for her family to talk about. But three years on, when Sophie left this earth, Amy decided it was time to share her sister’s story. Although it was one of the toughest things she ever did, Amy spoke candidly about her sister’s battle with the hope that no one else would have to suffer in the way Sophie did. What happened next changed the course of Amy’s life forever. “After she passed away we realised we needed to tell people about it. Everybody needs to know about mental health and how important it is.

We were so open with everyone and from that it was like a movement within our community.” Just by sharing her story, Amy was flooded with support from friends and family. What is usually a taboo topic, was being shared within her community and the stigma was lifting. Soon after, Amy joined her best friend Kiah Stone and their close-knit community to establish Let Me Walk in Your Shoes as a support group for those suffering. From yoga classes and monthly meetups, to the annual Walk for Sophie, which was held in August, Let Me Walk in Your Shoes began to offer a space for anyone affected by mental health. Amy was so blown away by the support, especially from her best friend. “Kiah is just the most motivated person. She was so close to my sister as well, so it’s very

close to our hearts,” says Amy. “I’ve always had really close girlfriends but things definitely changed after we started Let Me Walk in Your Shoes. I went through a stage where I didn’t really want to be around anyone. It was such a dramatic change, everybody stuck together, even Sophie’s friends are my best friends now. Strangers I didn’t even know became my best friends. It’s crazy just seeing this community we have after creating this tiny little group that we weren’t even sure was going to work out,” says Amy. As the name suggests, Let Me Walk in Your Shoes is about empathy, something our society often lacks. “It’s having complete empathy and understanding of another person and their situation and putting your values and everything aside and just listening to them. It started off just as a support group for people who are going through a tough time,” says Amy. “It’s grown, it’s changing; it’s been pretty incredible to watch it grow.” Amy knows that Sophie would have been so moved by the legacy she left behind. “She didn’t realise how adored she was and I think that’s a really strong message in itself. So many people out there feel so alone, they’re actually not, they’re so loved,” she says. From the beginning, that’s been the biggest message Let Me Walk in Your Shoes has hoped to share with their community – we want you to be alive. If you scroll through their social media channels, the message is clear – you are loved.

“They feel like nobody wants them to be here. If you have bipolar or depression, that’s an illness. This isn’t your fault. It’s just like cancer, you can’t help it,” says Amy. In 2016, the year that Sophie ended her battle with bipolar, suicide accounted for over one third of deaths among people 15 to 24 years of age. It’s a devastating statistic, but one that is becoming widely recognised and challenged thanks to organisations like Let Me Walk in Your Shoes. “Within five years it has changed dramatically, people are talking about it. It’s incredible more organisations are being created. I know so many people who have been diagnosed who’ve had help. The doctors are taking it so much more seriously, they’re asking more questions and I know personally from friends and people around me that things are changing,” she says with a smile. Amy says while it’s been a beautiful journey with plenty of positive outcomes, it’s still an ongoing struggle. When asked what advice she would give to those supporting friends and family with a mental illness, she says on top of getting professional help for your loved one, you have to take care of you too. “I personally think they need to get help and family members need support as well,

because you can’t look after somebody if you’re not looking after yourself. That person is going through something, you’re just as important because you both will drown. Self care is so important. You need help, talk to somebody, get that professional help.” This is why Let Me Walk in Your Shoes has taken a step back from the frequent events and decided to create a digital platform instead. “Our motto is, just take baby steps. We don’t want to ever stress ourselves out because we’ve gone through enough. So we just take it day by day and that is the best thing for us. Obviously we want to keep on growing bigger and stronger and wider around Australia, we really want to connect with other people,” says Amy. This next phase is about gathering stories, much like the story Amy so bravely retold, and sharing them online to create a digital community. “We really want to connect with other people, gather more stories, that’s our goal. We really want people who have gone through something to share their stories, because it’s so powerful. Your story is so powerful and people don’t even know that; we’ve realised that with Sophie. It’s a brave thing to do and it can really, really help people in those times.”

Wendy Barnes is a survivor; a warrior who has fought the beast that is breast cancer, not once, but twice and won. Ten years on from her initial diagnosis, the courageous mother-of-three is finally free of the insidious disease and living life to the fullest. This is her story.

W

endy Barnes greets me with a warm smile and open arms at her Mooloolaba home on the day of our interview. Tanned and relaxed in a flowing white summer dress, she is the picture of radiance and health. There is a sense of calmness that surrounds Wendy and I find myself echoing her slower pace as we chat over a coffee on her deck overlooking the Mooloolaba River. “Strange as it sounds, cancer has changed me for the better in a lot of ways,” says Wendy, looking pensively out over the water. “I smell the roses now. I was always on the go, always rushing. Now I slow down and I enjoy life. “I feel it’s made me a better person. I am very grateful. When I wake up every day and my feet hit the ground, I remember how lucky I am. Even after what I have been through, I know I am one lucky lady.”

“STRANGE AS IT SOUNDS, CANCER HAS CHANGED ME FOR THE BETTER IN A LOT OF WAYS, I SMELL THE ROSES NOW. I WAS ALWAYS ON THE GO, ALWAYS RUSHING. NOW I SLOW DOWN AND I ENJOY LIFE.” Wendy was just 43 when she was first diagnosed with breast cancer in 2008. She and husband Trevor had recently moved their young family from South Australia to the Sunshine Coast and were looking forward to a new adventure when their world fell apart. “I felt a lump in my left breast the size of a pea, so I went to my doctor and she sent me for a mammogram, it all unfolded from there,” says Wendy.

After undergoing a lumpectomy, doctors discovered Wendy had an invasive ductal carcinoma, which meant having the cancer removed and a gruelling six months of chemotherapy followed by several weeks of radiation. “They were very challenging times. We didn’t really know anyone and we had no family here. The kids were only 15, 13 and seven so it was really tough,” says Wendy. Following her initial treatment, Wendy returned to hospital to have all 22 lymph nodes in her left arm removed, which unfortunately led to further complications. “I got an infection and then cellulitis, which meant my arm grew to an enormous

size, so I had to have another operation,” says Wendy. But despite the setbacks and challenges Wendy faced both physically and emotionally throughout her treatment, she maintained her fit and healthy lifestyle, which included swimming every day in an effort to remain positive. “I had some rough times, don’t get me wrong. I got through it, not only with the help and support of my husband and kids and friends but also by having a strong mindset. Exercise, meditation and swimming has helped me so much. I swam all through my chemo. Two years ago I met this amazing group called the Mooloolaba Beach Bums, I swim with them every morning at 6.30am.” In fact, rather than wallow in self pity, and think, ‘Why me?’, the pint-sized warrior used her illness to help others going through the same journey by taking part in charity walks and participating in the Rio Tinto Ride to Conquer Cancer in 2008, raising $10,500. Life was good and the Barnes family thought they had seen the last of this terrible disease until just days before friends prepared to board planes to come and help celebrate her five- year remission when Wendy was struck down with breast cancer for a second time. “I had no symptoms at all, apart from feeling a little bit tired, so I went to the appointment on my own because my husband was at a meeting in Brisbane, and we really didn’t think there would be anything to worry about,” says Wendy. “I knew something was wrong when two doctors came in they said, ‘I’m sorry Mrs Barnes, but we’ve found another lump’, and I said, ‘You are f##king joking me’! I was gutted. I felt sick. I had no idea I would have a relapse, it didn’t even enter my mind. “They did a biopsy there and then and we had to wait two days, which was horrendous. I got my husband to take me away on the motorbike and we were at Maleny when the doctor rang and said, ‘I think you need to come in’. “It was so cruel, I started the journey all over again. The second time is the hardest because you know what’s going to happen.” Despite the devastating blow, Wendy went ahead with her party. Determined to rid herself of this horrible disease once and for all, she was not about to give up without one hell of a fight. “It was the best thing I could do,” says Wendy. “We had Champagne and I made plaster of paris so my girlfriends could all take a scoop and put it on my boobs to make a mould of them.” That mould was something Wendy would treasure in the years to come as she had already made the brave decision to have a double mastectomy to give her the best chance of survival. “For me it was the best thing to have a double mastectomy. I can honestly say that,” says Wendy.

If there is one woman who epitomises true inner strength, courage, positivity and determination it’s Donna Penny. Despite living with terminal cancer, the vivacious mum-of-two is grateful for the extra time modern medicine has given her and is spending every single moment she has left with her precious family.

From the moment I met Donna Penny three years ago, I was struck by her vivacious energy and zest for life. Her sparkling blue eyes and bubbly nature were not what I expected from someone who had been given a terminal cancer diagnoses 18 months prior. Diagnosed with early stage breast cancer in 2008 at just 35 years of age, Donna initially responded well to treatment and after a double mastectomy was believed to be all clear of the disease. However, just five years later she received the devastating blow that the cancer had returned and metastasized (spread) to her bones. There was no cure. “I went back for the five-year check up and CT scan which showed that the cancer had spread throughout my bones and in my armpit,” says Donna. “I now have a big one in my adrenal gland and several lesions on my liver.” But despite her diagnosis, Donna has bravely fought the cancer for the past five years, enduring several gruelling rounds of chemotherapy and radiation. “They give you treatments to keep it at bay for as long as they can, I have just had my sixth line of chemo treatment,” says Donna. “Cancer is clever, so it changes all the time until eventually it won’t respond to treatment. The last treatment I was on made me incredibly sick. I have pretty much been in bed the whole time.” Sadly, Donna recently received news from her doctors that the cancer was no longer responding to treatment. “I had some scans and it showed the cancer in my liver has doubled in size and I have more lesions,” says Donna. “When we got the results, my oncologists said we could try another treatment but I decided I don’t want to be that sick again for a one per cent chance it is going to work. I want quality over quantity. “We stopped all treatment as of two weeks ago and I feel fantastic. I am going out again, I’m having lunch with my friends, I am spending time with my family.” However, as Donna is quick to point out, just because she has stopped treatment, doesn’t mean

she is going anywhere just yet! “I have been assigned a palliative care team who see you through to the end of your life, but it doesn’t mean you are dying now. It just means you have to have things put in place. “I’m only 45, I don’t want to go anywhere but I am not scared of dying, I have had a great life. “It’s just my son, Kai, he is only 12. I want to see him grow up and become a man but I know I’m not going to.” Always one to put a positive spin on things, Donna says she is so grateful to the doctors who have kept her alive and the friends and family who have been by her side throughout her journey. “Don’t get me wrong, when I found out I had no treatments left, there were tears. I remember driving home from that meeting, balling. I was swearing and banging on my steering wheel, I knew my time was now limited,” says Donna. “However, I got three years past my expiry date. I never thought I would get that long. The people of the Sunshine Coast and friends and family have helped me tick off many items on my bucket list and made my dreams come true, I have done lots of travelling, but I want to stay around home now. I’m very settled and it’s just about being with family. “I guess I am hoping for a miracle. At the moment I just have to hold on to that hope.” We are all behind you Donna.

Twenty-one years ago, palliative care nurse Margaret Gargan founded Bloomhill Cancer Care after being diagnosed with breast cancer. Having been on the receiving end of resounding support from her local community during her treatment, she wanted to give back and we’re so glad she did. For Jeanne Moloney-Nicholls, going through breast cancer treatment was invasive, painful and at times scary, but having respite at Bloomhill Cancer Care allowed her to soldier on, knowing her mind, body and soul were being taken care of. Jeanne, a mother-of-three, was diagnosed with invasive breast cancer in September last year after noticing a lump “the size of a cheerio” in her chest. “I thought I’d pulled a muscle because it was in my upper chest and it hurt me, and you’re always told that breast cancer doesn’t hurt, which is a fallacy,” she says. Jeanne disregarded the lump for several months and it wasn’t until she got the flu and felt excessively tired, a feeling she couldn’t shake for weeks, that she finally went to see a doctor. Suffice to say she was surprised when the GP immediately booked her in for an ultrasound and appointment with a breast cancer specialist. Jeanne started chemotherapy in November and had 16 sessions over six months which shrunk her 4.5cm tumour down to 1.5cm. She then had a double mastectomy in May and had 11 lymph nodes removed (three of which contained cancer cells), she then started radiation sessions in June, finishing her 25th and final treatment in August.

In December, Jeanne was introduced to Bloomhill Cancer Care in Buderim and the incredible services they provide, “A lot of people think it’s a place people go to die, but I like to say it’s a place people go to live, to bond with others going through similar journeys. The camaraderie and the fun makes it a truly special place”. Bloomhill is an integrated cancer care service where patients are case managed by a specialist oncology nurse to ensure they receive the best possible care. At Bloomhill, patients can access a wide range of services including allied health (psychology, counselling, exercise physiology, occupational therapy and dietetics) and complementary therapies such as oncology massage, reflexology and acupuncture. “The perspective is to provide a holistic approach to people’s wellbeing, looking after their physical bodies but also their emotional, spiritual and occupational needs,” says Bloomhill clinical services manager Trish Wilson. In the last financial year, Bloomhill cared for 1651 clients, including cancer patients and carers. “We know that people with cancer do well if their carers feel supported as well,

so they’re able to access limited services, including counselling, psychology and meditation,” she says. “We also have about 80 bereaved clients.” Jeanne says she knew chemotherapy would cause hair loss, but it was the other side effects she experienced which came completely unawares, including her nails lifting at the tips, some numbness of her fingertips and toes and occasional aching and minor swelling in her arm. But she says having access to the specialists at Bloomhill have allowed her to visit reflexologists, acupuncturists and lymphoedema therapists who are specially trained to treat cancer patients without upsetting or interfering with their medical treatments. Jeanne says the other services on offer, including art therapy, pilates, yoga and meditation, also helped ease the pain of cancer treatment. Given that Bloomhill is not-for-profit, 80 per cent of their revenue comes in through their 10 op shops across the Sunshine Coast and the remaining 20 per cent is raised at various events throughout the year, including the Bras n Bikes charity ride on 28 October and Next Property Group auction on 12 October, where a new Mercedes Benz will be raffled. Trish says the support they receive from the community is vital in seeing all of the services continue and last month they had to make the difficult decision to cease their art therapy class. “Because we have had such an increase in our clients in the last year and a high demand for services without the income matching our ongoing needs, we have had to really look at continuing some services and reducing some,” she says.

I recently purchased this “Gorgeous” shirt, to help me feel a little more gorgeous. You see, I’ve been battling with a vestibular disorder called vestibular neuritis. This condition has quite literally turned my life upside down. It came on suddenly and now I live with a constant feeling of being on a rocking boat (even when asleep), persistent vertigo (room violently spinning) and significant loss of balance (I’m always falling over when out in public and often look drunk when I walk). You know that feeling you get when you spin around 20 times with your eyes closed and then you try and walk a straight line? Well, that’s what it feels like for me all day, every day. I also have extreme sensitivity to light and sound. The supermarket is like

kryptonite to me – with the ridiculously bright colours and loud music, and need to manoeuvre through the rushing people moving in different directions. So, I have to avoid supermarkets, cafes and anywhere where there are people, lights and noise. These symptoms are because my vestibular system has been damaged. The vestibular system involves the inner ear and brain and is responsible for coordinating our balance and sense of where we are in space. There are several types of vestibular disorders including Benign Paroxysmal Positional Vertigo (BPPV), Vestibular Migraine and Meniere’s Disease, to name a few. I feel far from gorgeous nowadays, as I’ve lost my sense of self, my confidence and my life has completely changed – because this is a silent disorder. I’m sick and have lost function, but unlike a broken arm, my friends and family can’t see it because the problem is hidden inside my brain. So, when I found this gorgeous shirt, I was excited to buy it. But then that

self-critical inner voice started telling me, ‘People will think that you think highly of yourself if you wear a shirt saying that’, and other derogatory statements. Last week I wore that snazzy shirt for the first time. I used my walking stick and strutted (wobbled) into my vestibular rehabilitation appointment with my head held high, not giving two hoots about what anyone else thought of my cane, my shirt, my hair, my choice of fabulously red lipstick or what I had for breakfast. If you know someone with a vestibular disorder, appreciate that it’s a debilitating and life-changing illness. They will likely be suffering in silence, feeling alone and far from their normal self. Offer to hang the washing out for them, drive them to the shops, you could even do something to help them feel that little bit gorgeous. If you have been diagnosed with a vestibular disorder, a specialised vestibular physiotherapist may help you manage your condition.

Do you remember your first visit to the Original Eumundi Markets? Whether it was last weekend, last year or even 39 years ago – chances are you’ve seen Cookie and Peter from Hermitage Fine Foods. They are the originals. They’ve been at the Original Eumundi Markets since its beginning in 1979. In fact, they were even there before the worldrenowned markets began, with a stall around the corner at the Kin Kin Markets. “The Eumundi Market is like a family away from home,” Cookie laughs. So what keeps them coming back weekend after weekend, year after year? Real, handmade food. It’s that simple. “I have a passion for the country feel of a pantry full of gorgeous, homemade preserves and making bread and all things country,” Cookie explains. This love started cooking 44 years ago when Cookie met her other love, Peter. The duo met during a group play of My Fair Lady in Gympie in the ‘70s. “I fell in love with his lifestyle … this was living in the country, growing your own food and living a simple lifestyle. “We grew all our own veggies and I remember one time we had heaps of tomatoes which, when they ripen, would soon attract caterpillars and rot. This is when I started my first preserve, green tomato pickle!”

Fast forward 44 years and Cookie and Peter are still doing what they love. As it turns out, lots of others love it too. “We have customers who come back after 20 years and are thrilled to see us still there,” says Cookie. “We even have daughters of former customers who come along and say, ‘I came here with my mum when I was little!’ Now she arrives with her husband and buys the same preserves she bought all those years ago.” Cookie and Peter have even raised four beautiful girls all while keeping up appearances at their beloved stall in Eumundi. “When our daughters were small, they slept under the market stall and used to lift up the stall cover to peak at the people’s feet,” Cookie laughs. “Finally they grew tall enough to see over the counter and in the end, they became a part of the family business, managing the stall for some time.” Now with their eldest aged 35 and youngest aged 29, they are all living away with their partners but keep in touch. As for Cookie and Peter, the Original Eumundi Markets is just as much a part of their lives as it was 39 years ago. Living on their farm, named Hermitage, growing organic fruit and veggies and handmaking delicious breads, quiches, chutneys, pickles,

jams, sauces, pestos, biscuits, muffins, muesli and cakes, has been their life for the past four decades. “Pursuing a dream takes a lot of energy, hard work, determination and passion to keep up the amount of years we have done at the markets,” Cookie explains. “But the reward of customers appreciating your produce is all worth it.” And the secret ingredient? Love. Love for real food, the farm life and one another.

Michelle Knight and Hannah Fabian of Aura Eve are your quintessential millennials with a passion for life and an eye for good business. business, Aura Eve wasn’t an overnight success. The pair met through Michelle’s twin brother who is now Hannah’s fiance. The trio started share housing and Michelle and Hannah quickly became good friends with a desire to start a business. Although they are business partners and future sisters-inlaw, Michelle jokes that Hannah is just as much her wife as her brother’s.

“We have more joint bank accounts than my partner and I,” laughs Hannah. After a two year friendship, a business opportunity presented itself to the ladies and they haven't looked back. In 2014 Michelle started prepping for her first bodybuilding competition when she noticed a gap in the market for feminine bodybuilding apparel.

I started prepping and I couldn’t find a belt that fit me in a feminine colour. I went to Hannah and said, ‘We need to fill this gap’. So the first order of stock we did for our website launch was lifting belts, leggings and shorts,” she explains. “Michelle saw the gap in the market. That's when we decided to combine her accounting knowledge with my marketing and photography skills.” adds Hannah who was working as a dental nurse and digital marketer. Their skills proved to be a winning combination and they immediately launched Aura Eve’s Instagram account and followed it up with a successful social media competition. Their following started to build and the business grew. “About six months later we brought in

our booty bands, which have pretty much made our brand,” says Michelle. The booty bands came about after they identified another gap in the market. At the time, booty bands were marketed as resistance bands and used predominantly for agility training, martial arts and rehabilitation functions. With sculpted booties being a goal for many women, they repackaged and remarked the product to appeal to their Aura Eve audience, bringing a new functionality to an existing product. “Nine out of 10 of our orders are booty bands, so that really put us on the map on the online market and we’ve been growing our product line since then. So we went from lifting belts to a few pieces of active wear to booty bands and now we’ve got more active wear and more fitness products,” says Michelle. Getting to that position has required long hours and lifestyle changes for both Hannah and Michelle. Hannah is still working as a dental nurse but felt a sense of relief when she cut her work week in half and dedicated the rest of her week to Aura Eve. “We get up at 5am to do the orders before we go to our day jobs, and then go home and deal with emails at night. We’re already used to doing that so doing it for ourselves and being able to do it throughout the day is just such a weight lifted,” she says. Michelle finished working fulltime in an accounting firm in August to focus on Aura Eve servicing a handful of bookkeeping clients on the side. “Long story short, it wasn’t sustainable and I bit the bullet and said, ‘Let’s put more effort and time into our business’, because we were constantly time poor, and we’re still trying to find that balance. We’re still new to it all. “It’s now or never, I don’t think there’s a perfect time to do it.” The pair ensures they dedicate every Wednesday to Aura Eve and recently acquired a warehouse in Kunda Park for their stock. After living together in the early days of the business partnership and filling their spare rooms, dining tables and

garages with stock, it’s simplified their processes and their lives at the same time. “It means we can put all the stock in one place, where we can see what we have and organise our inventory,” says Michelle. Kicking goals is something these ladies are getting used to and they have big plans for the future. With a growing social media following, Aura Eve is on its way to be on par with the Lorna Janes or Ashy Bines of the world, but of course, they will do it their way. “We don’t want to be the next Lorna Jane, we just want to be able to provide a niche product to a niche market and keep our customer base happy,” says Michelle. With activewear being such a saturated market they’ve decided to bring it back to where it all started; fitness accessories and finding ways to make the male dominated industry more female friendly. They’re learning as they go, taking risks, getting help where they need it, and quickly adapting to changes to customer behaviour, and it’s paying off. In the future the ladies hope to grow their community, get their warehouse up and running and start looking at wholesale options. When you’re asking questions like, ‘Do we want to be stocked in Rebel Sport or do we want be stocked in other online retail stores?’ you know you must be doing something right.

Have you seen the stories where employees have been underpaid and companies are in breach of the Fair Work Act? There needs to be a shift in mindset about the role HR plays within a business. It can be detrimental if you lack knowledge regarding compliance and HR processes – the Fair Work Ombudsman doesn’t take ignorance lightly. Employee agreements: this sets out important information regarding pay rates, entitlements, hours of work, terms and conditions. This allows the employee to focus on productivity rather than their pay situation. It creates consistency and security for both parties. Award/pay rates: use your industry award or enterprise agreement to ensure pay rates are equivalent or better than what is legislated. You also need to be aware of increases every year and modify where necessary. Induction/onboarding: this may only take an hour, but it outlines the business vision, provides a background of the company culture and enforces company direction. It also makes the new employee feel a part of something – everyone wants to love the place where they work. Your business doesn’t have to have a full time HR person, you can outsource. There is no excuse for not being compliant.

Researchers have found that feeling authentic at the office has been linked to higher engagement, higher workplace satisfaction, better performance and better overall wellbeing. That’s why authentic leadership has become a gold standard at many companies and I believe there are three secrets to success. Know you, believe in yourself and be brave enough to show up every day as your true self and lead with passion. This makes authentic leaders stand out, it is their connection to their business as a whole. Leading with your heart doesn’t make you vulnerable, it will inspire others to be more productive and focused. Be true and authentic, even when it’s terrifying and hard. Show compassion and stand up for others when you know it puts you at risk. When challenged that you are not good enough, know you are and still take one step forward. That’s true leadership. Carry through and role model this to others to reduce the stigma and fear. Imagine if your most senior leaders honoured and respected the unique strengths and experiences you all bring, instilling true confidence and trust all the way through the workforce.

Going directly to your bank for a home loan is not always wise. In the wake of the Royal Commission, banks have tightened policies and built even more ‘buffers’ into borrowing calculations. Some of these buffers refer to interest rates, living expenses, debt vs income, investment loans and the amount of deposit required. In effect this means that if you were eligible to borrow a certain amount of money to buy a house 12 months ago, it may not be the case now. Refinancing a current loan to another lender is also affected by these buffers. Currently over 53 per cent of home loans are done through a mortgage broker and this figure is growing rapidly. The reason for this is that a mortgage broker can take these buffers into account to determine your borrowing capacity and recommend only the banks that will be best suited to you – it’s important to note that the bank that you have been loyal to may not necessarily be on that list. A mortgage broker will also know how to present your application to the bank for a favourable outcome.

1. ENDING – Unsure to stay or leave? Is your fear of leaving the overriding factor for staying? Do you wish you were out of the relationship, dread going home, hoping your partner would leave? The awardwinning milliner of almost 10 years provides us with some racing fashion tips ahead of the spring racing season. WE UNDERSTAND YOU WERE PASSIONATE ABOUT FASHION FROM A VERY YOUNG AGE, AND HAD A LONG FULFILLING CAREER IN DRESSMAKING AND RETAIL. HOW DID YOU TRANSITION TO MILLINERY? Initially, my love of fashion led into a position of manager for Jeanswest, which made me realise I had the potential to create my own business from scratch, and so Toucans Fashion was born in Bundaberg. After many successful years, a career change called. From there I moved into education and training, bringing industry and education together working on projects within both industries. Finally, here on the Sunshine Coast I rediscovered the passion for fashion and let my creative juices run wild. The love of creative freedom and the client satisfaction continues to drive me to experiment with different mediums in millinery everyday.

HOW AND WHERE DO YOU SOURCE YOUR FABRICS AND MATERIALS FOR YOUR GORGEOUS HEADPIECES? I often travel overseas to source materials and embellishments for a unique feel and it has taken a number of years to establish a group of trusted suppliers. I’m always looking for quirky and different materials and my husband always says, ‘You can look at a barb wire fence and create something out of nothing’.

WHAT ERA DO YOU TAKE MOST INSPIRATION FROM? My inspiration is from the ‘40s and ‘50s, when millinery was a part of everyday life. The work of Madame Paulette through these years may not be well known for those outside millinery but it has made a big impression on my career.

WHAT HAS BEEN THE MOST FLAMBOYANT HEADPIECE YOU HAVE CREATED? A very large bright orange curled and shaped feathered headpiece that was presented on the front cover of the Ladies in Racing magazine and worn by then-local model Monique Parry.

Without hesitation I would say winning the 2018 Overall HATalk Competition In London, of which there were 177 entries from all over the globe. This designer headwear is called Cosmic Concertina (pictured right) and was entered in the modern category. This state-of-the-art headpiece has been gilded with pleated concertina circles and feathered to form a voguish interpretation of an age-old squeezebox. The delicate bellow formation of waxed paper trimmed in gold with hand cut and shaped feather highlights with pearl beaded eyes presents as a futuristic and edgy design with a hint of the past.

To me, a sense of wellness is achieved when I can look at my life without all the extraneous stuff and think, “Yes, I am nourishing my soul, my family, my body and my mind”. It’s the feeling of contentment that we can experience even as we traverse all that is the human experience; the pain, joy, stress, calm, challenges and achievements.

WHAT IS YOUR BIGGEST BEAUTY TIP AS WE MOVE FROM WINTER TO SPRING? Spring often means more time in the sun, so if you’re not doing so already, remember the SPF in the morning.

WHAT IS YOUR NUMBER ONE BEAUTY RULE? Hydration inside and out. I believe that healthy skin begins in the gut so I try to keep my diet clean and simple and drink heaps of water.

WHAT IS YOUR PERSONAL BEAUTY ROUTINE? Like most of my life, I keep it simple. I follow the general cleanse, tone and moisturise routine in the morning and night. In the morning I moisturise with a light cream or squalene and at night I have been using rosehip oil for years and love it. In winter, I use the balm as a deeply nourishing night cream. HOW IMPORTANT IS IT TO STICK TO NATURAL INGREDIENTS IN YOUR BEAUTY ROUTINE? I think it’s important to put the emphasis more on finding nontoxic, rather than just ‘natural’ products. We can all do with less toxic load put on our bodies and skincare is an easy place to start. It’s important to do some research on ingredients, as claims that a product is ‘natural’ or ‘green’ may mean any number of things and is a process commonly referred to as ‘greenwashing’.

WHY DO YOU THINK PEOPLE ARE MORE INTERESTED IN TRADITIONAL AND NATURAL BEAUTY PRODUCTS NOWADAYS? In a world of more and bigger and mass-produced, perhaps people are looking for a throwback to simpler times when we could believe in the authenticity of products and their producers. People are more educated now and are realising that simple choices have serious implications. We’re conscious of microplastics and chemicals like triclosan and the impact these have on marine life. We know that our skin is our body’s largest organ and that it absorbs what is applied to it. We understand the people factor of manufacturing. All this knowledge leads us to make more conscious choices and very often the companies offering the best alternatives are smaller and are making themselves and their

These core values of our business came about because we wanted it to be a true reflection of who we are as a family and how we want to live. We have embraced minimalism and are continually looking for ways that we can live with less. The balm was developed as an answer to the many products that cluttered our bathroom cupboard that essentially did much of the same thing. We believe that one good thing is better that many superfluous things. We believe that all people matter and wanted to be sure that our business considered all people involved in our chain of manufacturing. For example, our production manager visited the factory that produces our tins to ensure working conditions were up to standard. We chose not to use castor oil (a foundational ingredient in many other balms) because it exposes the farm workers to ricin (a highly toxic substance); our coconut oil is sourced from a social enterprise in the South Pacific that supports local families; and sales from our online store help fund agricultural loans to women in Uganda.

Play is the most natural way for young children to learn. When they play, they learn and explore fundamental skills such as basic feelings, ideas and capacities to adapt the world around them. Through play, children learn skills such as imagining, recalling, questioning, predicting, wondering and testing, which are important processes. Play therapy helps your child engage in a more creative and fun way. It has the gift of revealing their internal and emotional world. Play activities help children build and understand relationships, manage their feelings and cope with challenges they may face. As play is associated with creativity, especially the ability to be less literal and more flexible in their thinking, it is particularly important for children with autistic traits. What are some of the reasons parents consider an appointment with a psychologist for their young child? Play therapy enables children to express their emotions, improve eye contact, read body cues, communicate with others, build friendships (asking others to join in a game/activity) and transition between tasks.

Choosing to have a breast reconstruction following a mastectomy is a personal choice. There is no one size fits all. However, for those who do opt for a reconstruction, cosmetic tattooing of the nipple and areola is the final step of a long journey. By the time women come to see me they have gone through a mastectomy and reconstructive surgery, I then provide the service of repigmentation of the nipple and areola for them. Using a specialised 3D technique, it’s possible to create incredibly realistic tattoos of the nipple and areola, and it really does look like the nipple protrudes. Because I am so passionate about providing this procedure to cancer survivors, I provide the nipple tattoo service free of charge in 2018. Another service provided to my clients is eyebrow tattooing. Many clients find that after chemotherapy their brows never fully recover. Cosmetic tattooing creates the illusion of natural eyebrows and frames the face giving back expression and identify, afterall, you want to look and feel like yourself when you look in the mirror.

With new technology, such as improved breast prosthesis combined with flattering lingerie and swimwear, you can still feel like your old self after having a mastectomy – no more filling your breast cup with tissues, fabric or a homemade breast form, or being uncomfortable in a poorly-fitted bra. There are dozens of prosthetic breast shapes, weights and sizes to choose from, matching as closely to your remaining breast as possible. There are also breast forms that can be used while swimming or exercising, so your lifestyle doesn’t have to change. For ladies who have had a bilateral mastectomy, picking the breast size you’ve always wanted to be is now an option. Post-mastectomy wear such as lingerie, swimwear, sportswear and casual wear have also improved in terms of support, style and comfort. Other good news is the Federal Government covers the cost of your breast prosthesis – up to $400 per breast every two years for the rest of your life, and many private health funds cover the cost of post-mastectomy bras. Don’t forget to have a professional fitting by a trained lingerie and prosthesis fitter.

October is Breast Cancer Awareness Month, which means ladies (and men), it’s a timely reminder to check your chest. Kelly Hart from BreastScreen Queensland Sunshine Coast explains who is most at risk and what can be done to reduce your risk of breast cancer. WHAT IS BREAST CANCER? Breast cancer is a disease in which abnormal cells in the breast tissues multiply and form an invasive (or malignant) tumour. Not all tumours are invasive, some are benign tumours that are not lifethreatening.

WHO IS MOST AT RISK? Queensland women have a one-in-eight chance of being diagnosed with breast cancer by the age of 85 and like many other diseases, the risk increases as you get older. Seventy-five per cent of breast cancers are detected in women over 50. Women are often surprised to be told that 90 per cent of

breast cancers are diagnosed in women without a family history of the disease. However, having an immediate relative such as one of your parents or siblings with breast cancer or a number of more distant relatives on the same side of the family with breast cancer increases your risk. About five to 10 per cent of breast cancers occur in women whose families have a gene mutation that is passed down through the family and puts them at a greater risk. Breast cancer does occur in men, however it is rarer and more difficult to detect. For this reason, men of all ages are encouraged to report any changes or concerns they have about their breasts to their doctors.

WHAT ARE THE SYMPTOMS OF BREAST CANCER? Changes which women should look out for include: • A new lump or lumpiness in your breasts, especially if it is only one breast • A change in the size or shape of their breasts • A change to the nipple such as crusting, an ulcer, redness or the nipple pulled in • A change in the skin of your breast such as redness or dimpling or puckered skin • A pain that does not go away

HOW OFTEN SHOULD WE PERFORM SELF-CHECKS? Even if you have regular screens, it is still important to check your breasts regularly because breast cancer can develop at any time, including in between screens. Everyone’s breasts look and feel different so it’s important to become familiar with the normal look and feel of your breast. There is no right or wrong way to check your breasts for any changes. Try to get used to looking and feeling your breasts regularly. You can do this in the bath or shower or when you get dressed. Whatever you feel most comfortable with. When checking your breasts; you need to make sure you check all parts of your breasts, your armpits and up to your collarbone. If you notice any changes in your breasts or something that is not “normal” for you then you should see your GP immediately.

WHAT IS A BREAST SCREEN? A breast screen or mammogram is a low dose x-ray examination of the breast. It can show very small breast cancers before


they can be seen or felt. The radiation, which a woman is exposed to during a mammogram is equivalent to six weeks exposure to natural radiation that exists in our environment. Mammograms are performed by radiographers. The radiographer will assist you to place one breast at a time between two plates on the mammography machine. The machine will press firmly on your breast for about 10 seconds to take the picture. Usually two pictures are taken of each breast, one from the side and one from the top. Having a mammogram usually only takes a few minutes.

deaths resulting from breast cancer has dropped and the five-year survival rate has increased to 90 per cent. However, like most screening tools, mammograms are not 100 per cent accurate. There is a very small chance that a screening mammogram will look normal even if a cancer is present. For every woman screened, less than one women in a 1000 was found to have breast cancer within 12 months of their screen, that was not picked up by the screening mammogram.

WHO NEEDS TO HAVE A BREAST SCREEN AND HOW OFTEN DOES IT NEED TO BE DONE?

There are many myths about breast cancer and sometimes it’s hard to know what to believe and what to ignore. Some myths we know are simply not true, such as that women with small breasts won’t develop breast cancer. Other common myths for the causes of breast cancer, which are not supported by research, are wearing underwire or tight-fitting bras, using antiperspirants or deodorants, stress or bumps or knocks to the breast.

A breast screen every two years is strongly recommended for women aged between 50 and 74, as the evidence of benefit is strongest in this age group. Women aged 40 to 49 and 75 years and over should talk to their GP about whether they should have a free mammogram. Screening mammograms are not effective for women under 40 years of age.

HOW EFFECTIVE IS IT? Mammograms or breast screens are the most effective, proven method of detecting breast cancer early. Essentially, they bring forward the time at which breast cancer can be diagnosed, so that the cancer can be found when it’s small, confined to the breast and hasn’t spread to the lymph nodes. The number of women being diagnosed with breast cancer continues to rise, with 18,087 women expected to be diagnosed in 2018. But with the help of early detection and the increased treatment options that are available the number of

There are, however, many positive lifestyle changes which women can make to reduce their risk of developing breast cancer and improve their overall wellbeing. Maintaining a healthy weight through an active lifestyle and a healthy diet is particularly important for postmenopausal women. But women of all ages will benefit from limiting their alcohol intake and quitting or reducing smoking.

No way! It was so much tougher! We have read social media comments saying the work is all for the cameras. Trust us, it is really that hard. We barely had a Saturday night that we slept and we had no recovery time. It was straight back into it the next day after judging.

WHAT WAS YOUR FAVOURITE ROOM TO TRANSFORM? The living/dining area. We feel it is the space that isn’t determined around a bed or sink or shower. It’s basically an empty box and you can put whatever you like in it.

As we get busier as a society I think the home needs to be an oasis to mentally reset.

WHAT IS YOUR ADVICE TO OTHERS CONSIDERING APPLYING FOR THE BLOCK NEXT YEAR? Be yourselves! Lucky the casting director is a hawk for people pretending to be someone they aren’t. Don’t tell the camera what you are like for example, “I’m really funny” or “I’m really fiery”. Let your personality shine and let them make up their own mind of what you are like.

With a combined 22 years experience in window tinting, Brad and Shannon Seipolt have used their knowledge of the latest technology and their attention to detail to become one of the most popular window tinting businesses on the Coast.

It’s not often you come across business owners who are this passionate about their work, but Brad and Shannon Seipolt know their craft so well that in the three years they’ve lived on the Sunshine Coast, they’ve grown to be one of the most sought after window tinters in town. 62

The couple has a combined 22 years of experience in window tinting, with Brad having the craft handed down to him from his father. Experience, great service and family values are integral to their business, but perhaps their biggest point of difference is their specialisation. “We specialise in residential and commercial window films only, so we don’t do cars, we don’t do marine. We’ve chosen to specialise,” says Shannon. “When you do lots of things you don’t necessarily do them all well. So we just do the two and we do it well instead of spreading ourselves thin,” adds Brad.

Brad explains the other two products on the market, dyed and metallic window films, are dated and not as durable as ceramic. Dyed based was popular 10-15 years ago and tends to bubble and lose its colour, so it doesn’t stand the test of time like ceramic films. Metal based window films are a newer technology but they still don’t possess the qualities of a ceramic film. “There are a lot of really great metal based

window films, but the issue we have with those is because there’s metal in them they can become corrosive over time. Some metal window film can interfere with Wi-Fi signal and they’re more reflective,” says Brad. The couple is extremely passionate and experienced in window tinting and have paid close attention to the changes in the industry over the course of their careers. “Ten years ago window films only lasted a few years. The technology has advanced so much in that time,” says Brad. The attention to detail comes through in the installation process as well. Shannon and Brad are so meticulous when they install their films that they offer a lifetime guarantee. They say that it doesn’t matter how much you spend on the product itself, if it’s not installed properly and you don’t have attention to detail, it won’t last. “It’s all about making sure you can minimise contamination by cleaning the surface. And that’s where we come into our own,” says Brad. In the future, Brad and Shannon plan to scale and grow the business so that they can continue servicing the Sunshine Coast, from Cooroy to Pelican Waters, while spreading to the rest of South East Queensland and beyond.

WHAT ARE THE BENEFITS OF GROWING YOUR OWN FOOD? There are many benefits to our physical health and also benefits to our emotional wellbeing from gardening and connecting with nature. When we grow some of our food we access nutrient-packed healthy foods that are seasonally grown and full of vitality, so that’s great for our health and wellness. Growing food saves money long term and also saves time as you can head outside to pick foods as you need them. You’re also caring for the earth when growing food, as sustainable methods are followed.

FOR PEOPLE WITH LIMITED SPACE, WHAT DO YOU RECOMMEND GROWING? In small areas, a lot of food can be grown with good planning. Pots and containers are the most common way where herbs, leafy greens, small fruit trees or shrubs and flowers can be grown. Hanging baskets are also a great way to grow herbs and vertical wall gardens are becoming popular in small spaces. Another great way to grow is with microgreens – chefs use these to garnish meals and they’re easy to grow and taste delicious.

WHAT ARE THE BEST INGREDIENTS TO START PLANTING NOW? In summer, I think about salads, barbeques and outdoor dining. Common foods to grow now are lettuce, rocket, tomatoes, basil, cucumber, capsicum and eggplant. These are all great companion plants and can be grown together in healthy, rich soil that’s been prepared a few weeks before growing. Establishing healthy soil is the key to growing healthy food, so start from the ground up.

HOW DO YOU AVOID HAVING YOUR HERBS, FRUIT AND VEGGIES BEING EATEN BY PESTS? Grow companion plants to help deter the bad bugs and encourage the beneficial ones, that’s why it’s good to mix plants together in the garden or pots. Also, encourage biodiversity in the garden, this attracts birds, frogs, spiders and other helpful critters to the garden to help keep everything in balance.

WHAT INGREDIENTS GROW BEST IN OUR CLIMATE ALL YEAR ROUND? In our subtropical climate, there are a few plants that grow well year round, especially if they are in a sunny location all through winter. Try rocket, assorted lettuce, sorrel and Asian greens like bok choy. Many herbs also grow year round like parsley, chives, rosemary, oregano, thyme and mint. Perennial plants, which I call forever plants, grow all year round and are great for harvesting as needed. Also, try sweet potato if you have a square metre garden bed.

WHAT IS YOUR FAVOURITE INGREDIENT TO GROW? I add parsley to most foods I eat and love freshly squeezed lime juice in mineral water and also when cooking Asian meals; chillies are also a favourite, as I love spicy foods!

WHAT IS YOUR GO-TO RECIPE USING THESE INGREDIENTS? I love cooking nasi goreng as it’s an easy dish to make and everyone loves it. I use a variety of seasonal ingredients and always have fresh chilli, limes and herbs ready to harvest.

Eight years ago, while working at the ABC in Sydney, Lee Holmes suddenly fell ill and couldn’t figure out what was wrong. Her hair was falling out, her skin crawled with hives and she dropped from a healthy 58kgs to 40kgs in just six weeks. Little did she know, it was all related to her gut-health.

Lee Holmes thought she had chronic fatigue and continued to work until she just couldn’t anymore. Desperate for answers, she went through what she describes as a fairly complex IBS (irritable bowel syndrome) medical system, seeing a host of different doctors and undergoing scans, until she was diagnosed with a non-specific autoimmune condition. “They thought maybe it was Crohn’s or fibromyalgia, which is an arthritic condition, and they put me on a bunch of different drugs but the drugs didn’t really help me,” says Lee. “It was only when I started to look at my diet and change a few things to improve it, that I found that my symptoms were getting a bit better.” Lee, who had previously studied nutrition and went to cooking school, started a blog to document her changes and share recipes, which she says were predominantly gluten free and sugar free, because they were what caused her the biggest reactions – her tummy would ache in response to gluten and if she had too much sugar, her hives would itch. Lee also found she had been consuming a lot of MSG in microwave meals (which she’d eat at her desk at work) and chemicals that are found in processed foods. Lee’s advice for others who may be at a stalemate, having exhausted options from medical professionals, is to look at your diet and start eliminating the offending foods you think are aggravating your gut and then take note of how you feel after eating. Those ingredients could be healthy, such as onion or garlic, but are giving you symptoms of bloating, pain or tiredness after eating.

“There are also things you can add to your diet to really improve gut health. I use a lot of turmeric because I find that to be very anti inflammatory. Another ingredient is aloe vera, which is lovely and soothing in the gut, peppermint and ginger are really good too, as are beautiful Indian spices, like cardamom,” says Lee. For people with sensitive guts, Lee says salads can be really hard to digest and make them feel really bloated afterwards, despite them being very healthy and enzymatically rich and beneficial. “Twice a week, on a Monday and a Thursday, I only eat cooked foods or blended foods, I call them pre-digested, and that makes a major difference, rather than eating a lot of raw foods, which can be aggravating,” she says. “It’s really great for soothing the gut and improving the microbio. In the morning, get up and have a glass of warm water with lemon in it to kick start your digestive system, and then have gluten free oatmeal for breakfast. In winter, it’s good to have something cooked/warm and in summer you might want to have a smoothie or smoothie bowl, which is pre-digested and very easy, but make sure you’re using ingredients that are nutritious and are going to give you energy. “For lunch, again have something cooked, and what I do for dinner is in the morning before I go to work, I put on something slow cooked, using a bone broth, a little bit of meat and some apple cider vinegar, lemon and garlic and when I get home I make a prebiotic tray bake with lots of pumpkin and sweet potato. Prebiotic-rich veggies like that feed your probiotics (good bacteria in the gut) and because they die every 20 minutes, you need to feed them root veggies.

“If you don’t want to do something slow cooked, you can whip up a soup which is really easy. The way I do my soups is bake them off in the oven with veggies and garlic and get lots of flavour going and throw them into a pan with a bit of veggie broth or bone broth, sometimes a bit of coconut milk if you want to sweeten it, a few herbs and spices and turmeric, and whizz it up.”

“THERE ARE ALSO THINGS YOU CAN ADD TO YOUR DIET TO REALLY IMPROVE GUT HEALTH. I USE A LOT OF TURMERIC BECAUSE I FIND THAT TO BE VERY ANTI INFLAMMATORY. ANOTHER INGREDIENT IS ALOE VERA WHICH IS LOVELY AND SOOTHING IN THE GUT.” Complementing the gut-friendly recipes in her cookbooks, Lee also has a product called Love Your Gut powder, which she adds to a glass of water every morning. “It cleans the plaque that sits inside the gut; there is between 1kg and 3kgs of gunk in each person, that sits on your insides and stops you from absorbing nutrients from your food. Cleaning your gut is just like cleaning your teeth, you can do that with natural food or my powder.” Having worked with doctors, gastroenterologists, scientists and researchers all over the world, Lee says the gut really is the epicentre for health, and according to new research, the gut is connected to your brain, your immune system, your thyroid and hormones, it affects the way you think, the way you feel, it’s also connected to sleep. “The gut is a mini ecosystem; you have

good bacteria and bad bacteria and you want to really build up the good bacteria by having prebiotic and probiotic-rich food and lessen the bad bacteria; things like smoking, alcohol, environmental toxins and sugar can proliferate that bad bacteria,” she says. “Stress is another thing that can change your bacteria and if you have an imbalance of flora in your gut and it’s more bad than good, you might start to find you’re craving more sugars and unhealthy foods and then start to get symptoms of feeling tired after eating, or pain or constipation or diarrhea; those symptoms could be a result of an imbalance of flora in the gut.” In February, Lee will release her new book Supercharge your Life, which she explains is returning to the old school way of cooking sumptuous good food, as well as an environmental slant of growing your own food and creating tablescapes with natural things from your garden. “It’s a very simple, minimal, beautiful way to sit down and enjoy food together because I feel like we’ve lost that community way of eating. It’s about coming together after social media has pulled us all apart,” she says.

ALOE VERA – THE NEW SUPERFOOD! If you have the plants in your garden, squeeze out the middle (don’t use the outside), and put it into jellies and smoothies, you can buy it from a supermarket in liquid form as well. I make little gummy bears with it with a bit of gelatin, they taste really good. Aloe vera helps to soothe the lining of the gut and settle it down. People with IBS or ulcerative colitis can really benefit from a soothing ingredient like that, which is going to settle everything down and put on a layer upon the mucus membrane and lining of the gut, which helps if you’re having anything acidic, it’s not going to burn as much.

PREBIOTIC TRAY BAKE WITH TAHINI DRIZZLE SERVES 4

INGREDIENTS 200g Jerusalem artichokes 1/2 lemon 200g parsnips, peeled and quartered lengthways 300g heirloom or baby carrots, trimmed 2 leeks, white part only, washed well, cut into 2cm rounds 2 red onions, cut in half, or into thick wedges 1 jicama (Mexican yam bean), peeled and thinly sliced 12 asparagus spears, trimmed 60ml extra virgin olive oil Aleppo pepper or red chilli flakes, for sprinkling

GARLIC TAHINI DRIZZLE 1 garlic clove, crushed Pinch of Celtic sea salt 3-4 tablespoons tahini 3-4 tablespoons lemon juice, or more to taste 2-3 tablespoons filtered water

METHOD Preheat the oven to 200ºC . Line a large roasting pan with baking paper. To prepare the artichokes, scrub them well, but don’t peel them unless the skin seems too rough. Cut in half lengthways and immediately rub the cut surface with the cut surface of the lemon, to stop it browning. Place all the vegetables, except the jicama and asparagus, in a single layer in the roasting pan. You don’t want to crowd the vegetables, or they won’t roast and crisp up, so use another lined roasting pan if necessary. Drizzle with the olive oil and rub to coat well. Bake for 25 minutes, turning the vegetables once. Add the jicama and asparagus and roast for a further 10 minutes, or until the asparagus is just cooked and all the vegetables are golden around the edges. Meanwhile, to make the garlic tahini drizzle, mash the garlic and salt to a purée, using a mortar and pestle. Transfer to a bowl and whisk in the tahini. Add the lemon juice and a little bit of the water, whisking continuously, adding a little more water each time until the sauce reaches the consistency of thick cream or runny yoghurt. Taste and adjust the seasoning. Serve the roasted vegetables with the garlic tahini drizzle.

NOTE: Tahini is a paste made from lightly toasted sesame seeds. It tends to separate on sitting, especially if kept in the fridge. You can bring the tahini back together by leaving the jar upside down for 15 minutes, then giving it a quick stir with a clean spoon.

Whether it’s an hour at the gym, joining a dance class or simply taking an hour to yourself to relax and read a magazine, it doesn’t matter, as long as it is improving your health and wellbeing. There’s no doubt today’s busy lifestyle leaves us little time to stop and smell the roses and it’s taking its toll on our health and wellbeing. Add to that our love affair with social media and the need to be constantly ‘plugged in’ and you have the perfect recipe for burnout. As a working of mother-of-three, it’s a struggle I am all too familiar with. Between the older kids’ school, part-time jobs and sporting commitments, not to mention their busy social lives, I am never out of the car ferrying them around! Just recently, I took the plunge and decided to do something for me. My husband and I joined a latin dance class and even though it is only an hour a week, it has made a huge difference to our wellbeing – and most importantly, it’s fun! Keen to discover how my guests refilled their buckets, I posed the question over a delicious lunch at Uptown Gastropub in Maroochydore. WHAT’S YOUR SECRET TO IMPROVED HEALTH AND WELLBEING? LIZETH: I’ve discovered the importance of regular exercise. I’ve never been able to sleep well, but since I have been exercising, I sleep like a baby. I have been doing pilates, which I have found to be amazing. It’s what my body needs and when I am exercising I can deal with anything. I particularly like the reformers. It’s low impact so you don’t feel like you are doing anything, which I love! It’s using your own weight as resistance. I highly recommend it. Now, when I don’t exercise I feel awful and I’m cranky. LAUREN: When I first became a mum and went back to work full time, people kept saying to me, ‘Make sure you take some time for yourself’. I didn’t understand it at the start, but now I do. Whether it’s leaving my phone inside and sitting in the garden for a while, getting my nails done or taking

myself out for lunch, I have learnt to enjoy my own company. I have learnt to take an hour here or there whenever I can squeeze it in. My son is four years old and full of beans so it’s good to stop and look after myself so I’m a better person for him and my husband.

“THE BEST ADVICE I WAS EVER GIVEN WAS TO EXERCISE, SO YOUR BODY LOOKS AFTER ITSELF AND THAT ALLOWS YOUR MIND TO LOOK AFTER ITSELF.” - ROBYN REBECCA: I’ve lived a pretty hectic corporate life. About 10 years ago I went to a girlfriend who is a naturopath and herbalist and asked her to give me something to patch me up and put me back out there in the ring and she said, ‘No, you need to cut back’. So I did. Now I don’t take anything except natural remedies. I have a good diet, with lots of green smoothies, I only buy my produce locally and I have discovered it has made a huge difference. I also quit wine and started drinking


champagne because of a wine allergy. A lot of people don’t realise they are allergic to wine because of the additives or chemicals. Champagne doesn’t have any of that, just the grapes, yeast and sugar. I’ve become really great at drinking Champagne! JESS: My background is in personal training. I started going to the gym, not for weight loss but because I wanted to be strong and I got into personal training because I wanted other women to feel strong. The more I got into personal training though, I learnt that not many people focus on that, it’s more about how they look in the mirror. The best advice that helped me was that fitness is not a way of punishing yourself or regretting anything that you have eaten, it’s a way to feel strong within yourself. There is so much conflicting advice but it doesn’t matter what you read, you just need to find a type of fitness that works for you and do what you enjoy. Do it because it feels right. GISELLE: I need to take time for myself more but I’m probably one of the best advocates for not doing that! Just recently I have needed to re-assess my work/ life balance, not only for me but for my husband and kids too, to make sure I am

through that. Two years ago I tipped the scales at the heaviest I have ever been and I didn’t feel good about myself. We have amazing international students at Tafe who do a work fit program for us and after working with them for 10 weeks I lost 18 kilos and I have maintained it since. Twelve months ago my husband was diagnosed with prostate cancer and I was in a place where I was healthy and my mind was able to manage that and be a support person for him. Fortunately he is in remission and cancer-free which is great.

going to be there for them for a long time and part of that is looking after myself. I have also been doing Pilates. But just taking time out at home, lighting a candle and using essentials oils gets you into a frame of mind that lets you be you and refreshes you for everything you need to continue to do. ROBYN: The best advice I was ever given was to exercise, so your body looks after itself and that allows your mind to look after itself. I went through a time in my career when I felt my most vulnerable and at my lowest and exercise is what got me

LEE: Mine is going to be very unpopular and at the cost of sounding like a wowzer, giving up alcohol was the best thing I have ever done. It has healed my mind, my soul and my spirit. I stopped drinking in November last year. It was the month of my son’s graduation, my birthday month, and lots of Christmas parties where there would be plenty of alcohol and I decided it was time to just do it. Also, I went to see a client whose husband had open heart surgery and she had cardiomyopathy and wasn’t allowed to have one more wine. Fortunately I have no medical conditions but I just thought I should quit while I was ahead and start looking after my health. Now I’m stronger mentally and I jump out of bed in the morning. I don’t miss it at all.

Uptown Gastropub I will admit, I had never even heard of a gastropub until the recent opening of Uptown Gastropub in Maroochydore’s Kontiki building. Popular in the UK, it is a relatively new buzzword in Australia. The phrase was coined in 1991 in London and is a combination of the words pub (short for public house) and gastronomy (the study of the relationship between culture and food). So, now that you have had that little history lesson, let me tell you about what you can expect at this stylish, new upmarket pub. Brought to you by husband and wife team, Lizeth and Adrian Chrisanthou, who is also head chef, the ethos behind Uptown Gastropub is restaurant-quality food in a friendly, pub-like environment. Designed with an industrial, retro feel, the concrete flooring and exposed brick walls work perfectly with the old-world features and contemporary timber furnishings. The dim lighting is reminiscent of an old English pub and adds to the warm atmosphere. Boasting an impressive bar, stocked with top quality wine and spirits and a great selection of premium beers, patrons can pull up a stool and enjoy a beverage and a snack or be seated in the expansive dining area if they are after something a little heartier. On the day of our visit we were seated at the long plush green sofa, which is perfect for private dining groups and can be sectioned off by drawing the heavy velvet curtains to create a cosy atmosphere. The food at Uptown Gastropub speaks for 74

itself. Lizeth and Adrian are passionate about using only the best local produce, which changes seasonally. Offering a varied menu, there is something to suit all tastes and appetites, including a vegetarian selection and plenty for the kids to choose from. Some of the popular choices on the day included the chargrilled chicken supreme, saute of potato gnocchi, chorizo and mushroom, broccolini and salsa verde; and the crispy skin barramundi, warm potato salad, romesco sauce and salsa verde. I couldn’t go past the portobello mushroom burger with halloumi, avocado, spicy relish, mixed leaves, jalapeno mayo and house bun. Fresh and tasty, it really hit the spot and was the perfect lunch-time portion size. Next time, I think I’ll have the chargrilled black angus rump steak (250g), with buttered mash, steamed greens, roasted field mushroom and red wine sauce – yum! Here’s a hot tip: make sure you have dessert! The share plate of delectable sweets we sampled on the day was to die for. Whether it’s a catch up with the girls over lunch, a fun night out with friends or a romantic dinner for two, Uptown Gastropub ticks all the boxes. Make sure you check it out!

OUR GREEN CHICKEN SERVES 4

Our green chicken came about as another way to use up all the coriander and parsley stalks from our garden. Coriander and parsley stalks have loads of uses, plus they’re full of nutrients and flavour. We pickle them, use them in chilli jams, hot sauces, pesto, stocks, salads, anything – we never throw them away. So this is another ridiculously easy recipe, but one that transforms the plain old chicken to a bit of a crowd pleaser. Start this recipe a day ahead.

INGREDIENTS 1 x 1.2kg chicken, cut into 8 pieces Zest and juice of 1 lime

MARINADE 100g coriander stalks 50g parsley stalks 3 garlic cloves, peeled 50g fresh ginger, peeled and chopped 100ml grapeseed oil 1 long red chilli, halved 30ml soy sauce

METHOD For the marinade, blend the ingredients in a food processor. Rub the marinade onto the chicken pieces. Put the chicken into a dish, cover and refrigerate overnight. If you can’t leave it overnight, at least marinate it for 3 hours for the flavours to get going. Remove the chicken from the refrigerator 30 minutes before cooking. Preheat the oven to 180ºC. Place the roasting chicken in a pan and roast for 20-25 minutes until cooked.

Remove the chicken from the oven, cover and leave to rest for 10 minutes. Season with a little more salt, pour over the lime juice, scatter with the lime zest and pan juices and serve.

CRUNCHY NUT SNAPS MAKES 700G

This is a great way of incorporating a lot of nuts and seeds into your diet without any of the refined sugar or preservatives that you find in commercial nut bars. They stay crunchy for a few weeks stored in an airtight container and are great as an office snack, or for the school lunchbox.

INGREDIENTS 110g Brazil nuts 110g cashews, unsalted 110g raw almonds 110g hazelnuts 2 egg whites 100g raw honey 90g shredded coconut 2 tablespoons flaxseeds 3 tablespoons sesame seeds 30g (1 cup) puffed rice

METHOD Preheat the oven to 180ºC fan-forced (200ºC conventional). Line a large baking tray with baking paper. Spread the nuts out on the lined tray and roast for about 15 minutes, checking and tossing every 5 minutes. Set aside to cool completely. Reduce the oven temperature to 100ºC fan-forced (120ºC conventional). Line a baking tray with baking paper. Whip the egg whites until stiff peaks form. Gradually add the honey and stir gently until you have a velvety mix. In a blender or food processor, pulse the cooled nuts until lightly crushed but not pulverized. Combine the coconut, flaxseeds, sesame seeds, puffed rice and crushed nuts in a large bowl and fold in the whipped egg white mix. Spread the mixture over the prepared tray, pressing it into the base and corners to make an even 1.5cm thick sheet. Bake for 2½ hours. Remove from the oven and cool completely. Break into long pieces and store in an airtight glass jar.

What Copenhagen lacks in size it makes up for in unique culture, design and colour. Having experienced five days of a stunning Copenhagen summer, I want to share with you a glimpse of the trip, a taster if you will – a day in the life of Denmark’s capital, Copenhagen. Known for its grandiose castles, picturesque canals and quality restaurants, Denmark’s capital is a vibrant destination just screaming out for tourist attention. It’s a small city, with a population sitting halfway between that of the Sunshine Coast and Brisbane, but the quality of food, design, history and architecture

means it possesses all of the qualities of any of the larger European capitals, and because of its pint size, it’s easier to see it all in a matter of days. On arrival to the Copenhagen central station from the airport, I take in the sights, smells and sounds of this modern city. Apart from the immediate and constant aroma of freshly baked goods (drool), the first thing I notice about my new surroundings is the sheer number of bikes taking up footpaths, bike lanes and parks. It’s well known as a city for cyclists, so-much-so that its inhabitants clock up 1.4 million kilometres on bikes in a single weekday. Within an hour of checking into The Urban House Hostel in the inner city suburb of Vestebro I make like the locals and hire a bike that will allow me to take in this gorgeous city over the next five days. The hostel offers its own bike hire facility along with many other handy amenities for all

types of travellers. There are even families staying in this hostel, which is a small but comforting detail when you are travelling by yourself. Once I have chosen a trusty sidekick in the form of a forest green bicycle, I decide to loop around the city centre on my new set of wheels, taking in canals, a historic fortress, a museum for design lovers, a recognisable childhood figure, and an Insta-worthy hub, before heading to a gentrified district famous for its restaurants. As I ride towards my first destination, The Kastelet Star Fortress, I admire the beauty of the Sankt Jørgens Sø; three rectangular lakes that have curved along the city centre since the beginning of the 16th Century. To the right are rows of gorgeous pastel five-storey buildings that I can’t help but be romanticised by. The unique architecture of this city ranges from charming to contemporary and I stop my bike every few hundred metres to take a photo of my ‘new favourite building’. As I ride, the dwellings change from five storeys to two, and the colours from pastel to dark grey. Their gardens are lush and green and these homes are perfect little cubes covered in vines and flowers, like something out of a story book. I plan my future life in these gorgeous cottages before riding on. The Kastelet Star Fortress is cemented in Copenhagen’s history and has served as a military site since 1662. Today, it’s a

THE UNION KITCHEN

Nyhavn is my next stop of the day. Initially built as a commercial port, it’s now one of the major tourist attractions of the city. With its brightly coloured buildings, abundance of restaurants and bustling atmosphere, you can easily spend a lot of time here simply doing nothing. I grab myself a bite to eat and sit by the edge of the water taking in the beauty.

well-preserved rampart consisting of beautiful architecture, inviting parklands and a moat. Nearby, I discover the Designmuseum Denmark, and considering the Danes designed Lego and The Sydney Opera House, and are known for their contemporary furniture designers, I figure it’s worth a visit. I’m not disappointed and spend a couple of hours wandering through the exhibits. With Copenhagen being home to The Little Mermaid author, Hans Christian Andersen, there’s naturally a statue dedicated to the much-loved story. Friends had told me the statue was an anticlimax, and once I push through the crowds and selfie sticks to witness my favourite fairytale character in real life, I understand their warnings. But while it’s an unassuming structure, you simply can’t go to Copenhagen without seeing it.

On my way to the Meatpacking district for dinner, I am astounded by the public architecture, infrastructure and design I encounter along the way. Public libraries are as beautiful as they are practical, walkways are wide and accommodating, bridges are fun and functional and the swimming baths that surround a waterway are free from pollution, allowing the locals to fully embrace the three months of warm weather they receive in a year. Copenhagen is at the forefront of sustainability and modern design and I have to stop and take in the jubilant screams of teenagers jumping from the public diving platforms into the deep blue water below, to acknowledge that this city was designed by and for locals, down to the most intricate details. It’s no wonder it’s one of the happiest cities in the world. I finally make it to the Meatpacking district for dinner. It’s 9pm and the sun is still up. There are plenty of restaurants, breweries, shops and spaces to see here, but I choose Monster Italian, which create saltwater sourdough pizzas. I wash it down with an Aperol spritz and reflect on my first day in this colourful city. I am one very happy traveller. I think about all the incredible things I still have to see. But for now, it’s back to the hostel to rest my weary legs ready to do it all again tomorrow.

Ben Dalzell is a Sunshine Coast street artist who recently found his feet in the industry after 25 years of painting as a hobby. He will join five other esteemed artists at the The Nambour Street Art Festival this October to beautify the town and celebrate the unique and sometimes stigmatised medium that is street art. From 15-21 October, Nambour Street Art Festival will see professional and emerging artists take on the biggest and most neglected walls in Nambour and turn them into masterpieces. Event organiser and long term signwriter Lorraine Taylor has been a Sunshine Coast resident for 20 years and moved to Nambour two years ago. “It was just a neglected town that could be lifted into a tourist destination,” she says. All that was required was a lick of paint. Lorraine came up with the idea for the Nambour Street Art Festival last year around the same time as local artist Ben Dalzell decided to focus on his street art full time. STREET ART BY BEN DALZELL

One of the six invited professional artists to the Nambour Street Art Festival, Ben has been an artist for 25 years and got into street art as a young skateboarder. “It was part of the culture. A couple of my older friends started to get into graffiti and I slowly got into it in about 1994. I’ve always been an artist, I’ve always drawn. It was just

It was the right type of artwork for me to get into and I just fell in love with it.” It was a wonderful coincidence or perhaps fate that Ben decided to focus on his art at the same time as Lorraine came up with the idea for the festival. “It was amazing. I don’t even know how we found each other!” he says. “I’m going to do The Shack, the homeless support building, and that’s going to be sponsored by the Endeavour Foundation. I’m quite happy about that because it’s right

in the middle of Nambour. And I’ve got another big wall to do on Bury Street for the festival as well.” While Ben doesn’t reside in Nambour, he is thrilled to be enhancing what he describes as an already beautiful little town. “They’re trying to gentrify Nambour and clean it up a little bit. Since I’ve been going there I’ve noticed there’s a lot of space for artwork and that’s what Lorraine wants. She wants to really pretty the town up and make steps towards cleaning it up,” he explains. Lorraine says she was inspired by Toowoomba’s First Coat festival, which saw the town come alive with street art and has turned it into a tourist destination. She believes the newly painted street art will give people an excuse to venture to Nambour (during and long after the festival) to witness high quality art for free. Emerging Nambour is also joining in on Lorraine’s quest to bring the festival to life, and will help clean up the streets in time for the unveiling of the art. While street art has the ability to liven up a town, there is a stigma associated with it. Ben hopes to inspire young taggers to harness their creativity and create art in a legal way. Students from local high schools will be given the opportunity to meet artists like Ben and harness their skills at the festival. “Street art has helped me. I could have gone down a really bad road but it kept me from doing that. “I really believe that the graffiti in a city and in a town really shows the soul of the place. It’s the part that the youth understand. I’m a big advocate for having everything painted, it’s a real shame that it’s considered vandalism. All my mates that I grew up with are really brilliant artists. Some have travelled the world doing their art but there’s still this real stigma around it,” he says. After the festival Ben hopes to brighten up the rest of the Coast with his colourful and unique street art. “The Coast has got this hip vibe, but it’s got no street culture, apart from the skateboarding. But I’m going to try and get some walls in Maroochydore and around the Sunshine Coast and try and get a bit of street art up here as well,” he says. Around 20 murals will be painted as part of The Nambour Street Art Festival by professional and emerging street artists and will involve students and volunteers from the community. The Sunshine Coast Craft Beer and Cider Festival returns to the Kawana Sports Precinct on Saturday, 1 December for its second year running and we catch up with a few local brewers and event organisers ahead of the daylong celebration to find out more about this thriving industry. After a popular inaugural event last year, that attracted a 4000-strong sell-out crowd, the Sunshine Coast Craft Beer and Cider Festival returns with over 50 of Australia and New Zealand’s best brewers and cideries alongside locally sourced produce and a mouth-watering line-up of street food vendors. Tanya Taber, festival founder and operator isn’t just a beer-lover. She’s created this event to showcase the Coast’s best craft brewers and bring national and international brewers to the Coast. “After the success of last year’s event, we look forward to returning bigger and better than ever for a massive day of great food, great music and more importantly a great day sampling some of the best craft beers and ciders available in the country,” says Tanya. “We’re excited to put Sunshine Coast craft beer on the map and showcase the amazing produce, scenery and talent that we have locally.” With the craft beer scene growing throughout Australia, Tanya knows there’s still so much more potential to be tapped into here on the Coast (no pun intended). 86

“Craft beer is beer crafted by those with immense passion for what they do, looking at flavours and aromas rather than the bottom line. As the craft scene is still relatively small here on the Coast, the Sunshine Coast Craft Beer and Cider Festival will be a great way for Coast dwellers to gain access to Australia’s best and unattainable craft beers which they might have otherwise not been able to try.” Matt Wilson from Moffat Beach Brewing Co is excited to join the festival for the first time in 2018. “It’s going to be a big day. Because we are so small and we don’t sell the beer

anywhere else other than our venue, it’s a great opportunity for us to get our brand out there,” he says. The recent winner of best small independant brewery in Australia says he hopes he’ll be able to sustain the appetites of punters at the festival, but we have a feeling his award-winning mid strength pale ale will be smashed on the day.

“CRAFT BEER IS BEER CRAFTED BY THOSE WITH IMMENSE PASSION FOR WHAT THEY DO, LOOKING AT FLAVOURS AND AROMAS RATHER THAN THE BOTTOM LINE. Likewise Daryle Cook from Sunshine Brewery in Kuluin also has a few awardwinning brews to offer to Sunshine Coast locals at the festival. “We’ll be bringing Hop Therapy, which is a hoppy pale Indian ale and our awardwinning Blue Sky IPA, which we just picked up a silver medal for in our first entry in the

Daryle says festivals like this are important to young and independent breweries, as it offers prime exposure to their target audience and expands the profile and branding of all local brewers. “It will build the whole profile for craft beer on the Coast because we’re growing and we all refer to each other, we meet every couple of months and network. Everyone helps everyone on the Coast here so it’s helping us all grow,” she says. And while the festival might cater to the 18+ audience, there will be something on for the whole family, including a sideshow alley boasting amusement rides, photo booths and competitions. Children under 16 will get in for free while young and old are sure to enjoy live music throughout the day.

MY FIRST JOB WAS… at a local restaurant that my next door neighbour owned. I begged her for a job and she finally relented as soon as I was legally able to work. My first real job was in the company I co-founded when I was 18 years old.

ON THE WEEKEND I LIKE TO… decompress from my week by trying to switch off the computer and phone as much as I can. I usually fail, and only really start to unravel by Sunday but then it’s time to start again on Sunday afternoon (I live in Los Angeles but the timezone means my Australian headquarters are up and running for their new week then).

MY FAVOURITE TRAVEL DESTINATION IS… anywhere new! I love to explore new destinations although I’m also a creature of comfort having vacationed in Hawaii eight times and India four times now.

IF I COULD MEET ANYONE IT WOULD BE… having worked with incredible talent over the years with Business Chicks – people from Sir Richard Branson through to Diane von Furstenberg and Rachel Zoe and Jamie Oliver – I’m not easily star struck. I would however have loved to have met Amelia Earhart, Maya Angelou and Kate Spade. MY HIDDEN TALENT IS… catching Maltesers in my mouth. THE QUALITIES I ADMIRE MOST IN OTHER PEOPLE ARE… kindness and tenacity.

MY MOST ANNOYING HABIT IS... my impatience. I’m working on it. MY DAILY ROUTINE CONSISTS OF… cold showers (by choice!), wrangling five children, and working across four time zones in my business. I LOOK UP TO… the stars, and always try and be grateful that I’ve received the gift of another full day. WHEN I’M NOT WORKING I AM… I’m never not working. As an entrepreneur your work never leaves you. I try and be present wherever I am, but I’m always simultaneously dreaming and scheming and wouldn’t have it any other way.
