ew England Design (neddesigns.ca) principal Amy Harris doesn’t want to make your typical cookie cutter design. She takes a very personal approach to her projects: focusing on the client’s personality and vision while adding her own artistic touches; prowling flea markets,

antique shops, even demolition yards looking for just that perfect piece. She works closely with clients to produce interiors that, while au courant and stylish enough for a magazine like this one, are also living and breathing spaces. She even has her own, somewhat unorthodox name for it: “badass design.”

Harris takes special pride in taking an artistic approach to her design Because of Amy’s “badass” reputation, one of the country’s top investment advisors, Dan Wynnyk, sought out Amy to put her creative stamp on his ski chalet in Blue Mountain. Dan had recently purchased the home, furnishings and all. “The chalet was built in the eighties and hadn’t really been updated since it was built,” Amy recalls. “It was in decent shape structurally, but really needed some serious love.” In fact, the chalet had become a bit of a time warp: dark cherrywood kitchen cabinets with green granite counters, inadequate overhead lighting and an imposing granite stone fireplace in the middle of the main floor. It was suitably rustic, but blocked out just about everything else – including the milliondollar view of the ski hills just across the road. Amy got to work, and every wood surface, from the ceiling beams to the flooring, was sanded and lightened; white shiplap walls and tongue-andgroove ceilings throughout added some needed character. The addition of pot lights and chandeliers brought the chalet out of the eighties at last. The most extensive changes were in the kitchen. “The upper cabinets effectively blocked all the light and the view from the kitchen window. After opening one of the cupboards and seeing only a single coffee cup in it, I knew Dan hardly used them. I decided we could lose them.” The effect was transformative. On one long wall, five new, white-painted open shelves with black steel supports add storage and display. The lower cabinets were salvaged from a barn that was taken down a year earlier. Add counters and three-foothigh backsplashes in Carrara marble, and it’s hard to believe it’s the same kitchen. 16 WINTER 2019/2020 ■

T

he fireplace wasn’t so easy, though. “Dan really liked the old granite and wanted to leave it alone, but as the refresh commenced, we agreed it was too heavy for the new brightened interior. So we faced it in white shiplap as well, and built in black cubbies for firewood and storage.” Now, a theme of white, light woods and touches of black steel carries throughout the chalet, giving it a crisp, masculine feel that’s relaxed, and perfect for entertaining in all seasons. At the same time she was renovating the Blue Mountain chalet, Harris set about effecting another, even more challenging transformation. Business owners Elizabeth and Darryl Porter had bought an old blacksmith forge in Belfountain, Ontario, that had operated as an auto service garage early in the twentieth century. They wanted to convert it into a store for their motorcycle apparel brand, Black Powder. The good news was its location: right on the Forks of The Credit Road, a main thoroughfare that was a hot spot for tourists, especially motorcycle travellers. But

the bad news was that the space, which had stood empty for some time, was in pretty sorry condition. Its old black-and-white linoleum floor slanted precariously; the ceiling was equally canted. The brick forge was still there, but the walls were pocked and cracked. Even with all this, Amy recognized a diamond in the rough. “I loved the space from the very beginning. The old blacksmith details were still there: exposed wood beams, the old forge, hooks for hanging chains and tools. The owners thought they should replace the floor, but I objected – I thought it was super cool.” Early on in the project, they discovered a shallow crawlspace under the building that, to a treasure hunter like Harris, was a goldmine. For along with old batteries and other interesting-looking car parts, she found hundreds of crushed motor oil cans that dated back to the early twentieth century, discarded and forgotten for decades. Rather than throw them out, she decided she’d find a way to fit them into the design somehow.

irst, the space needed some cleaning up: tongue-and-groove white ceiling boards helped to divide the store into sections, and highlighted the roughhewn ceiling beams. The walls were re-plastered and painted, and on one side a new faux-brick wall installed and painted black, which gave the space some masculine muscle. In the centre of the layout, next to the old forge, there’s a seating area, with old suitcases for side tables and vintage-looking leather sofas and chairs. “Black Powder is about the community, not just selling clothes. So they wanted a place people could meet and hang out.

There’s a guest book in this section that travellers can sign; it’s become a hub for the biker community.” The rest of the design is geared to play up this clubhouse feeling, with antique lockers, and shelves displaying the old batteries and other automotive themed pieces as well as the items for sale. And the cash area at one side, with its industrial-chic cage pendant lights, vintage bar stools, and matteblack painted corrugated metal facing, looks and feels more like a bar than a sales counter. But it’s the counter itself that crowns the quirky, sleek design of the store: for symmetrically laid out under glass are all those old 1920s motor oil cans, arranged in colour-coded

rows. “There were so many of them that we sorted out the best ones and pounded them flat. It took a long time to choose and arrange them just right,” she laughs. Harris takes special pride in taking an artistic approach to her design, while making successful living and working spaces for her clients. And it’s about respecting the existing space as much as possible, while making it work for today. “I love how we were able to keep all the existing elements in Black Powder and bring them into today. In the chalet, the view of the mountains becomes a backdrop for the design, which makes it look very cool! That, to me, is badass.”

HOUSE OF ROHL What’s really behind the beautiful, exclusive kitchen and bath fixtures of the international brand The House of Rohl: artisans who have been practising their craft for years, in some cases for generations, and the designers who revere their traditions. By Martha Uniacke Breen

We recently visited the sun-drenched St-Jerome, Quebec, showroom and factory of Canadian manufacturer Riobel, and learned the stories behind the brand and its four sister companies that collectively form the internationally renowned House of Rohl. Unlike mass-produced faucets and other fixtures, what sets each of the House of Rohl’s makers apart is that their products are proudly handcrafted, some using

22 WINTER 2019/2020 ■

techniques that have remained unchanged for decades, even centuries. With styles and finishes that range from uncompromisingly modern to authentically traditional, the companies that create these beautiful products for kitchen, bath and beyond are in many cases, as intriguing as the products themselves.


VICTORIA + ALBERT BATHS Victoria + Albert baths are made of a manmade product called “Englishcast,” based on a high-quality form of fine-ground volcanic limestone mixed with a high quality resin to produce a smooth, beautiful material that closely resembles porcelain, but is almost indestructible – and actually keeps your bathwater warm longer than cast iron. Each bath is handmade at the company’s Capetown, South Africa, factory, where the fine volcanic limestone that goes into the manufacture of the product is found in abundance. Because each Victoria + Albert bathtub is individually made, the product can be ordered with sides in a range of some 194 RAL custom colours in matte or glossy finish. The interior colour goes right through the bath instead of just the surface, making the odd chip or scratch nothing to worry about (and on the rare occasion when such a mishap occurs, repair is straightforward). The patented Intelli-Drain prevents accidental overflow by opening automatically when the water depth reaches a certain level without having a pre-drilled overflow.

The styles available are truly breathtaking, ranging from authentic-looking Victorian- and Edwardian-era models to ultra-modern, including the new Zen 60-inch-diameter circular tub. Other products in the full line include basins, accessories, washstands, and matching faucets.

PERRIN & ROWE Though it was launched by a pair of London entrepreneurs in 1978, Perrin & Rowe faucets are designed to emulate the finest-quality British and European fixtures of decades ago. The Britishmade faucets feature premium components such as German-made brass cartridges, the highest quality available. Five lines range from modern to traditional styles, and are often inspired by history: The Edwardian Era of the early 20th century was characterized by a return to classic, simpler lines after the ostentatious Victorian period. Elegance was the order of the day. The Perrin & Rowe Edwardian Series perfectly exemplifies the classic movement with its timeless details and unmatched craftsmanship. Each faucet conveys a sense of refined taste and sophistication that complements any traditional setting. A variety of finishes are available, including unique unlacquered metals that are designed to develop a soft patina over time. WINTER 2019/2020 23 ■


are made in a converted monastery in Boraccio, Italy, and are also available in copper and black stainless-steel versions. The Rohl faucet range is equally notable, with both modern and traditional styles. For one example, the Graceline series of faucets designed by product design master Michael Berman was inspired by the great luxury liners of the past – including, of course, the Titanic. One striking series, Campo, was influenced by 14th-century Italian waterworks, especially in a rich, burnished bronze called Tuscan Brass.

RIOBEL The sole Canadian-born member of the House of Rohl family, Riobel has been Canada’s top-selling faucet for years, and was originally founded in 1995 by a plumber and fixture retailer, Mario Belisle (who combined the syllables of his own name to create the memorable brand name).

Riobel faucets are designed, tested and assembled at the St-Jerome factory, where a number of important industry innovations were first developed: The RioWise Valve System, developed at the factory, combines thermostatic calibration (which ensures a consistent temperature) with pressure balance (maintaining an even flow despite fluctuations in supply, like a flushed toilet). It also developed 3D-printed design prototypes, which make testing and perfecting new models more precise and speed up production by months;

SHAWS Shaws fireclay farmhouse sinks are handcrafted in Lancashire, England, using a technique that has remained largely unchanged for over a century. The particularly fine, dense clay found in this part of England is the secret to the durability and beauty of these handsome sinks. The handcrafting process, which is performed with such pride that individual craftsmen sign each sink they complete, produces variations that factory-made sinks don’t. That’s why the company recommends you don’t cut the counter opening for a Shaws sink until it arrives, to account for minor variations in size and depth. But once it does arrive, expect it to last a lifetime.

Rohl’s headquarters are in California, but its handcrafted faucets and other products for kitchen and bath are sourced from a range of artisan manufacturers in Europe, New Zealand and the United States. You could say auto racing runs in Martin Barkey’s veins. He won his first regional championship back in 2012, before moving up to the professional level, where he continued to rack up top ten finishes – culminating in winning this year’s 2019 Blancpain GT World Series Championship, competing at the highest level of GT3 racing in North America against the top GT pro racers in the world.

When he’s not out on the track, Barkey heads up MBRP Performance Exhaust, a company that designs and manufactures performance exhaust systems for the car, truck and powersports markets. His passion for design, performance and sleek automobiles played a role in inspiring the contemporary house he, his wife Ginger, and the team at SML Contracting built on the pristine shoreline of Fairy Lake, just outside of Huntsville. “SML had built my earlier house, a timber frame style that you could say was the classic Muskoka style of ten years ago,” Martin explains. “But for this house, I wanted something completely different, something that could be the classic Muskoka style of five years from now.”

In their 26 years of building in Muskoka, SML Contracting has evolved constantly to meet the needs of their clients. In 2010 Sandy Jennings along with Jay Brubacher, joined SML founder Bruce Fitter as partners to create the entity that is SML today, which focuses on luxury waterfront homes and cottages throughout Muskoka. They work closely with their clients in a wide range of styles from classic Muskoka, to “Muskoka Contemporary,” to all-out contemporary. “We are primarily a design-build company, which can handle all aspects of a new build from beginning to end.” Martin had very clear ideas about what he wanted, and worked closely with the SML design-build team to make them a reality. He says it was fantastic to be able to go from what he saw in his head and combine it with SML’s vision.

The property for Martin and Ginger’s new home was an iconic rocky Muskoka shoreline with gorgeous views, but a little steep, not unlike most Muskoka waterfront properties. “The topography of Muskoka can be a challenge, but a challenge we are not afraid of,” Jennings says. “We can work with every challenge. What’s really important is to make each project design site-specific, so it works with the landscape rather than against it.” Wider then it is tall, the house spreads over the level part of the landscape, tucking a lower-level entertaining area with additional bedrooms on the slope face, where wide expanses of glass offer a special view of the lake. In fact, the entire house is designed around open expanses of glass, allowing sunshine, lake views and forest to become a major component of the experience from almost everywhere in the home. Yet from the exterior as you approach the house, it sits comfortably on the crest of the hill, nestled in to the landscape and virtually un-noticeable from a boat cruising by. The unique design of the house, especially its exterior, relies on commercial building products for many of its finishes, giving it the sleek, high-end auto atelier look Martin wanted. Custom concrete panels, metal cladding, and glass combine with rich clear hemlock and cedar soffits and insets. At the front door, forming part of the entry portico, is a vertical support panel clad in cut granite; the plane of this panel continues inside, forming one of the few walls on the main level.

Inside and out, almost no trim was used, making it imperative that the various finishing materials be fitted exactly at the points where they meet. This meant very precise measuring and construction, like the body panels of a high-end automobile. (“All of the millwork was done in-house at our factory,” says Jennings with some pride.) Shadow lines around major elements such as windows added to the precision fitments, accentuating the strong rectilinear geometry. One of Martin’s requirements was to incorporate an office, showroom and fully equipped shop for his passion for buying, reconditioning and custom-rebuilding cars. The living area is designed for entertaining and relaxing, with big open areas and an abundance of glass walls, making the view front and centre on all sides. The kitchen takes up one corner, with its sleek and seamless black-stained oak cabinetry with natural inset panels. T

here’s one element common to every meal Chef René prepares. It’s not a magical spice or an exotic oil. It’s not even a master technique or a fancy blade. It’s something very simple. René infuses everything he makes with a story. “I love to talk to people everywhere I go, from all over the world,” he says. “I ask a lot of questions; I listen and I learn.” Behind every Chef René menu are stories from friends, colleagues, clients and strangers. He learned about one of his favourite dishes, grilled beef tenderloin wrapped in a cloth called Lomo al Trapo, from

a client who had recently returned from Colombia. Another staple, Sigara Boregi or Turkish cigar, was inspired by the childhood memories of one of his team members, Hulya, who grew up in Turkey. This storycentred approach has led René to launch his new business, Chef René, offering catering, cooking courses and specialty products designed to bring people together through food. “I want the food I make to remind people of something, to comfort them, to inspire conversation, to create memories,” he says. Chef René’s food is remarkable in its simplicity – he’ll take a few highquality ingredients and combine them in a novel way to create dishes

that are unparalleled in both flavour and presentation. A dish as simple as chicken wings is completely reimagined in his kitchen. Grilled on a thick slab of Himalayan salt and glazed in honey and lemon juice, the wings are a far cry from pub fare: tender, sweet and falling off the bone. According to René, achieving complex and dynamic flavours through a simple cooking method is only possible by using high-quality ingredients. He’s visited farms, kitchens and factories all over the world to uncover the origins of the ingredients he uses, the processes that go into making them, and the stories of the suppliers and producers he works with.

t’s extraordinary when you find people who believe in what they’re making and who go to great lengths to ensure quality,” René says. “Raising grassfed animals, for instance, isn’t easy. It takes an extensive amount of work and knowledge and I admire that.” This year, René began working with Brian and Michelle Arnold,

owners of the Thunder Ridge Bison Company, a family-owned farm in the Oak Ridges Moraine of Ontario, where they raise and farm bison through a sustainable, grass-fed, farm-to-table approach. “For people with health issues or allergies, athletes, or those who are simply health-conscious, going with mainstream cattle isn’t always the best option,” he

explains. “Because of the bisons’ natural diet, the meat is superb and great for nutrition – not to mention very, very tasty.” The greatest compliment René has received from clients is that his food is eclectic and authentic. Finding inspiration in the people he meets and the places he visits, he doesn’t worry too much about rules or constraints.

“No one would say I’m refined or fancy. I have no interest in that whatsoever,” he says. “What I care about is the quality of the ingredients, the stories behind the dish, the way the flavours come together, and ultimately, the experience of sharing it with friends.”

THE STORY BEHIND THE RECIPE On a recent trip to Tuscany, Chef René found himself in a rustic restaurant atop a remote hilltop village. So impressed by the house specialty, a wild boar stew called Ragu di Cinghiale, René asked to pay compliments to the chef. He was whisked warmly into her kitchen as she prepared cheese platters with truffles and honeycomb and charcoal-grilled meats for her patrons. When asked about the stew, she excitedly led René into a small garden behind the restaurant to show him the bay tree and juniper bush that she couldn’t quite describe in English. Inspired by the simplicity, the ingredients so close at hand and the incredible flavours, René has adapted this Tuscan tradition to incorporate bison meat, making it the perfect dish for cold Canadian winters. Noble Estates has paired the Coppola Director’s Cabernet Sauvignon with this dish. The rich flavor and high tannin content in Cabernet Sauvignon make it a perfect partner to rich grilled meats, peppery sauces, and dishes with high flavour.

MARINADE INGREDIENTS 1.5 kg bison from shoulder or leg, diced in 1.5” cubes 2 tbsp olive oil

6 to 8 fresh bay leaves 12 juniper berries 1 sprig rosemary 2 sprigs thyme

10 peppercorns

Zest from 1 orange and 1 lemon STEW INGREDIENTS 3 tbsp olive oil

1 onion, finely diced

2 celery stalks, finely diced 1 carrot, finely diced

3 garlic cloves, crushed and chopped 1 cup red wine

2 cups bone broth

PROCESS Makes 4 Servings Mix all marinade ingredients together in a ceramic bowl. Cover and refrigerate overnight. Preheat the oven to 300°C. Place a Dutch oven or casserole dish over medium heat and drizzle with olive oil. Add onions and stir until onion appears translucent (approx. 4 mins). Add celery, carrot and garlic and stir for another few minutes. Add the marinated meat, along with bay leaves, juniper berries, rosemary, thyme and peppercorns. Stir well.

1 tsp nutmeg

Finally, add wine, broth and all other ingredients and bring to a light simmer. Remove from stove top, cover and place in preheated oven. Cook for 3 to 4 hours with the lid on.

Pinch sea salt

Remove from the oven and let sit for 30 minutes before serving. You can also put it in the refrigerator overnight and reheat for a next-day meal.

If you go looking for your own little corner of heaven, Ontario abounds with riches – some of the finest, most pristine vacation areas in the world are right here. There’s the untamed wilderness of Georgian Bay. The hiking trails and abundant wildlife of Algonquin Park. Great skiing at Collingwood/Blue Mountain. Prince Edward County is renowned for its great antiquing and quaint country inns. And Point Pelee is a birders’ paradise. But none of them is quite like Muskoka. Just what is it that makes this region one of the oldest and most revered of the cottage areas in this part of the world? Part of it is Muskoka’s abundance of beautiful lakes, just a few hundred kilometres north of one of the largest urban areas in Canada. There’s the perfect blend of sophisticated shopping and nightlife set next to miles of quiet, unspoiled nature. And there’s the history – there are people here who have been returning to the same family cottages for 100 years or more. It may be all of these things, or it may be something much less definable. But from the moment you pass through the big pink-granite roadcut on Highway 11 that unofficially marks the gateway to Muskoka, you sense a special magic that’s like nowhere else on earth. Whether you’ve been coming back for decades or you’re a relative newcomer, you’ll feel it. Dale Morgan is a perfect example of a relatively new convert to the unique Muskoka ambience. Dale grew up in Toronto, but never had a summer cottage here or really even visited much, until he came up to work in Gravenhurst for a couple of years in his twenties. He felt it then, and the feeling never left.

Today, he runs a successful brand experience design company, creating image campaigns for large companies. Not long ago, the business recently led him to relocate to Las Vegas with his family, so maintaining his Canadian roots became more important than ever – especially now that he and his wife are raising two little girls, now 4 and 2. They began looking for property for a summer cottage, and Muskoka was the natural choice. “I just love the idea of the Muskoka experience,” he says. “The way the topography is always changing, the beauty of the woods, the still water – the whole vibe of the area. It’s just a totally different experience from anywhere else.” The Morgans built a contemporarystyle cottage at Mortimer’s Point on Lake Muskoka, not far from Port Carling, working with Alex Foreshew at Foreshew Design Associates. It’s designed for entertaining as much as for family, with a wide openconcept main floor, plenty of guest

forward to makes it seem just magical to us – it makes our family time just that much more special.” But Muskoka is about more than just family time to the Morgans. It’s close enough to the GTA – just a couple of hours’ easy driving – that it’s a great locale for welcoming friends up for the weekend, whether in ones or twos or a whole crowd.“I love hosting friends here,” says Dale. “It’s about sharing with friends who might not be able to experience something like this otherwise. It’s symbolic of our hard work and good fortune, getting to share it with our friends as well as family.

“Being able to have 20 friends or more for great meals, throwing a steak on the barbecue, going swimming, wakesurfing or out in the boat, or just kicking back and watching the sunset by the lake… we get to be our own village for the weekend!” he laughs.

“Maybe because we just get those two months, we look forward to it all through the year. And for that time, it’s just the most peaceful, amazing, perfect place in the world. When I’m up there, there’s no place I’d rather be.” WINTER 2019/2020 109 ■

Sarah was born and raised just North of Muskoka. She enjoys the outdoors on the lakes of Muskoka, and islands of Georgian Bay. Sarah is passionate about travel. She has just returned home from Turks and Caicos Islands where she worked in Private International Banking. With over thirteen years of experience in customer relationship building, she is an excellent addition to the Cayman Marshall Team.

Jen brings a lifetime of Muskoka experience. Even prior to becoming licensed, she was already involved in the cottage market, acquiring land and building luxury cottages from the ground up on the big lakes. This invaluable knowledge means Jen understands many facets of cottage ownership. Combined with her dedication to excellent customer service, Jen helps her clients buy and sell with great attention to detail and the utmost satisfaction.

Michelle being born and raised on the northern shores of Georgian Bay loves being on the water and being involved in the real estate market. Her love for renos gives her an inside scoop in the world of home and cottage ownership and being the newest member, looks forward to being a valuable asset to the team!

Growing up in Barrie, Charlie made the move 3 years ago to Muskoka where she spent time growing up on the lake and always wanting to pursue her career. With over five years of experience in customer service and relations, Charlie is determined and focused on customers and team members of Cayman Marshall making her a great addition to our team.
