Mrs. Claus makes a merry ’Chris’ mousse

he’s been dubbed Mrs. Claus because of her big heart and her involvement as co-chair of the Maple Ridge-Pitt Meadows Christmas Hamper for more than a decade. When the Mrs. was asked to share one of her favourite Christmas recipes, Lorraine Bates admitted to not being much of a baker and said she was hard pressed to find anything that was actually in written form. Merry ‘Chris’ mousse.
Crust ingredients: 18 chocolate sandwich cookies ¼ cup chilled butter or margarine 3 tbsp. sugar Preheat oven to 450ºF. Process cookies in a food processor until finely ground. Add butter and sugar, and mix until well blended. Press mixture into bottom and up sides of a 9” pie plate. Bake six minutes.
