CASHEW BUTTER:
2 cups Germack Cashews
2. Preheat oven to 325°F. Spread evenly in one layer, and toast for 10-15 minutes. Let cool for 10 minutes.
Coconut Oil
BAR BASE: 1 cup Cashew Butter ½ cup Maple Syrup or Honey 1 cup Coconut Flour 1 tsp
Vanilla Extract
¼ cup Coconut Oil, melted
CHOCOLATE TOPPING: 1 ½ cup Dark Chocolate Chips 2 tbsp Coconut Oil

METHOD
1. L ine 8x8" pan with parchment.

3. P rocess Cashews in food processor for 10 minutes, scraping down the sides of the bowl as needed. Once creamy, add 1 tsp melted Coconut Oil, and process for 5 minutes.

2 sticks Butter, softened 1 cup Sugar

1. Mix Butter and Sugar together. 2. Add Eggnog and Egg, stirring to combine.

3. A dd Flour, Baking Powder, Baking Soda, Chocolate Chips, Salt, and Nutmeg.

4. Chill mixture for at least one hour.

3 ¾ cup Flour 1 tsp
Baking Powder
1 tsp
Baking Soda
½ tsp Salt ½ tsp Nutmeg
EGGNOG FROSTING: 1 ½ cup Powdered Sugar ¼ cup Eggnog 1 tsp
Maple Syrup
½ tsp Nutmeg for dusting
5. P reheat oven to 350°F, and line a baking sheet with parchment paper. 6. Drop teaspoon-sized balls onto baking sheet, and bake for 8-10 minutes. 7. A fter removing from the oven, lightly press the tops of the Cookies with a spatula to flatten a bit. Allow to cool before frosting.
