If you are a regular reader of my letters (thank you), you’ll know that I am a long-time resident of Naples. My family and I have seen the changes and growth that our town has experienced over 20-plus years. Aside from the obvious draw of beautiful beaches, our vibrant community and strong projected job growth have attracted new families and new neighbors. My street, and probably yours, doesn’t look quite the same as it did when we first moved in. But change can be good. Change brings new businesses, new restaurants, and cultural activities that we can all embrace and enjoy. When I look around town, I’m also delighted to see more renovations and a resurgence in the building industry. As Naples has grown, so too has Naples Illustrated. Many times when new residents arrive, they subscribe to our magazine to find out what Naples is all about, what to do, and where to go. This year alone we’ve added 2,600 new subscribers, which brings the total number of copies we mail into Naples homes each month to a whopping 22,000, which is significant in a coastal town of our size. This growth also means we’re increasing the number of magazines we print. Our press run is now at 30,000 copies, which we’re proud to say is the largest in our market! Changes in our city have also encouraged changes to Naples Illustrated, and in the coming months our editorial team will be expanding our coverage of stories to continually reflect our evolving and diverse community. To make room for these additions, my monthly Publisher letter will become a bit less frequent. With so much happening in Naples each month, we want to let the content in Naples Illustrated do all the talking. It’s encouraging for me and our talented staff to know that this magazine is welcomed into the homes of those we have welcomed into our community. Enjoy this issue of Naples Illustrated. Your new neighbors may be enjoying it as well, reading up on all the things that make this community special.

If you look for it, inspiration can be found everywhere. We’re always looking for the people who inspire our community and nudge us to look at it with fresh eyes. In this issue, we’re doing just that as we once again celebrate “Super Men,” our annual profile of seven accomplished and community-minded local men whom our readers chose in an online vote to appear in this much-anticipated feature. In this fourth annual search, our readers weighed in on a charmingly diverse group of local heroes, from a decorated war veteran to a nonprofit leader and president of the local PTA. Jeffrey Binder

Stage Smarts Jordan Matter

Like many, Jeffrey Binder fell in love with Naples during his first visit. While starring in The God Game at Gulfshore Playhouse, Binder and his partner, Michael Anderson, liked the town so much, they bought a home in Naples Park. The accomplished actor has appeared in The Lion King, Mary Poppins, and Side Man on Broadway and on TV in Damages and Law and Order, among many other roles. Binder joins the Playhouse this month as artistic associate. He will assist Kristen Coury, producing artistic director, to conceive, develop, and maintain the theater’s creative and artistic standards. Theatergoers will be treated to Binder’s acting talent in a number of productions, starting with Boeing-Boeing in November. (gulfshoreplayhouse.org) —Kat Smith

NI: Tell us about your Naples experience. BINDER: My partner and I really loved Naples. There were a lot of intelligent people who are very theater-savvy who came to see The God Game; you could tell from the talk-backs and discussions. Naples is comfortable but it’s not sleepy. The community is growing and the demand for a vibrant arts community grows as well. What will you bring to the Playhouse? I graduated with a master of fine arts from NYU in the late ’90s, so I have been a professional actor for 20 years, and I have done everything from Broadway musicals to The Lieutenant of Inishmore, an Irish black comedy. One thing I love about Kristen Coury is that she trusts the audience of Gulfshore Playhouse to have an artistic maturity, so she can bring things to challenge their ideas and sensibilities. I hope to bring that kind of sensibility as an artist. Do you prefer hero or villain? In broad strokes, the villain is almost always more fun. You’re always thinking, “What made you into this person?” Most villains don’t say, “I’m wicked; I’m just an evil person.” Most have an agenda, and think they are doing the right thing. Maybe just for them they are doing the right thing, but there is a drive to them that’s always fascinating. How you make it real and believable, and how you make it come from a place that isn’t just mustache-twirling—those kinds of characters are always fun. How do you spend free time? My biggest pastime is my daughter. With a 3-year-old, I know more about Mickey and Minnie Mouse and Mickey Mouse Clubhouse. I feel pretty domestic in that regard.

The Yearling, Marjorie Kinnan Rawlings Rawlings wrote her 1938 Pulitzer Prize–winning The Yearling in her Cross Creek cottage, located between Ocala and Gainesville. Suitable for all ages, the novel is about a young boy and his pet deer and is a reflection on nature and coming-of-age in 1800s Florida. Their Eyes Were Watching God, Zora Neale Hurston Hurston grew up in the Central Florida town of Eatonville—her father even became mayor in 1897. Her most lauded work is set in the same region in the early twentieth century and explores themes prevalent in Hurston’s own life, such as racism and women’s rights.

The Scam, Janet Evanovich Neapolitan Evanovich first catapulted to fame with her Stephanie Plum mystery series. More than 45 novels later, her newest release this month is The Scam, part of the Fox and O’Hare series she penned with coauthor Lee Goldberg that focuses on the adventures of a charming con man and a feisty female FBI agent.

The Invention of Wings, Sue Monk Kidd Following the success of her first novel The Secret Life of Bees in 2003, Kidd moved from Charleston to Marco Island. Her latest powerfully stirring novel, The Invention of Wings, was inspired by historical figures who were pioneers for women’s rights in early nineteenth-century Charleston.

Cell, Robin Cook Widely known for his bestselling medical thrillers, Cook first hit the best-seller list with his 1977 novel Coma, which was made into a film the following year. His latest thriller, Cell, revives the ethical debate first explored in Coma about patients being used as medical incubators, but this time adding a modern twist by exploring the smartphone’s role in medicine.

A Streetcar Named Desire, Tennessee Williams Hemingway may be the best-known Key West writer, but he’s not the only one. Playwright Williams visited and lived in Key West for more than 40 years. It’s rumored that he worked on A Streetcar Named Desire, a joy to read as well as to see on stage, while staying at the La Concha Hotel. 26

To Have and Have Not, Ernest Hemingway Perhaps Key West’s most famous former resident, Hemingway arrived in the 1930s and wrote To Have and Have Not, set in depression-era Key West and Cuba, while living in his Spanish Colonial home on the island.

A Good Scent from a Strange Mountain, Robert Olen Butler Butler is a Floridian not by birth but rather by profession—he is a writing professor at Florida State University in Tallahassee. Known for his short stories steeped in realism, his 1992 collection A Good Scent from a Strange Mountain received the Pulitzer Prize for fiction.

Truth or Die, James Patterson Nestled between musicians and business executives with comparable net worths, Patterson has become one of Palm Beach's most famous residents. He’s written enough books to fill multiple summer reading lists. In one of his latest, the summer release of Truth or Die explores a shocking secret, how good and evil can be hard to discern, and even the truth can be masked in shades of grey.

Skink–No Surrender, Carl Hiaasen Hiaasen just might be the quintessential Florida writer. Born and raised in the state, most of his best-selling novels feature a Florida setting. Skink–No Surrender, written for teen readers, is his latest mystery adventure and it resurrects Hiaasen’s most iconic and beloved character, Skink. —Mary Murray

Kaa and Sammie, the Naples Zoo’s pythons, have slithered from behind the scenes and into the spotlight in the zoo’s new open-air exhibit, where the public can get a nose-to-nose meet-andgreet (through glass, of course) with these exotic beauties. Kaa, a 20-foot, 190-pound reticulated python, and Sammie, a comparatively modest yet still impressive 10-foot Burmese, do more than just show off their good looks—they are front and center in a mission to preserve Florida’s environment. In addition to teaching visitors about pythons and their natural history, the exhibit draws attention to the increasing impact of several hundred invasive species (many of which are escaped or abandoned pets) on South Florida’s ecosystem. The exhibit includes information on how everyone can help rein in the spread of invasives like pythons. Caper Novelist

Tennessee housewife-turned-writer Gretchen Archer felt she needed to give readers something unique in her mystery novels. “There are all kinds of mystery series set in cupcake shops and ice-skating rinks,” says Archer, a part-time Naples resident. “What I wanted was to take the reader to a different place.” After her husband took her to a casino for her fortieth birthday, Archer was inspired with the idea for a new setting. “I was brand new to the [gambling] experience, but after putting in $200 and winning $40,000, that made me a believer and planted the seed,” she says. Now a USA Today best-selling author, Archer recently released the fourth installment of her Davis Way Crime Caper series, Double Mint (Henery Press, 2015), which centers on protagonist Davis Way uncovering a plot to rob the casino where she works during a convention. Archer and her husband plan on becoming full-time Neapolitans after their son graduates from high school. She also plans to continue writing. “I’d like to write mystery novels forever, but not always Davis. I’ve moved her through her life quickly since I wanted her timeline to mimic how our lives move, so three or four more books is the max of where I can take Davis in her career,” says Archer. —Anna Bjorlin

Jaguar Land Rover launches its Special Vehicle Operations performance division with the crazy-fast, super-loud Range Rover Sport SVR By Howard Walker Imagine, if you will, the cranium-exploding burst of a Florida thunderclap amplified through a wall of speakers at a KISS concert. Or the 117-decibel roar registered at a 1972 London concert by the rockers Deep Purple that earned them a spot in the Guinness Book of World Records as “the globe’s loudest band.” Or, in extremis, the eruption of the Krakatoa volcano in 1883 that was so loud its shock waves reportedly ruptured the eardrums of people 40 miles away and circled the planet four times. None of these comes close to the aural cacophony that is a Range Rover Sport SVR at pedal-to-the-metal acceleration. It’s insane. I looked for the official Office of Noise Abatement and Control government warning on the dashboard, but it must have been blasted off. This isn’t a gradual crescendo. Punch the start button on the handstitched leather dashboard and it’s like a bucket of dynamite letting rip under the hood. Thankfully, a tap of another button puts the Range

Rover in a stealthier, don’t-upset-the-neighbors mode. So what is this demonic dragster? It’s the poster child for Jaguar Land Rover’s newly minted Special Vehicle Operations. This is JLR’s version of Mercedes-Benz’s hugely profitable AMG division, BMW’s M Sport, and Audi’s Audi Sport. The new Range Rover Sport SVR is essentially Land Rover’s answer to the Porsche Cayenne Turbo S. It’s powered by a 5-liter supercharged V-8 that cranks out a mighty 550 horsepower—40 horses more than the regular Range Rover Sport Supercharged. Off the line, it’ll lunge from zero to 60 mph in a mere 4.5 seconds and won’t quit until the speedo needle is kissing the 162-mph mark. But this isn’t some straight-line race car. The air-sprung suspension has adaptive magnetic dampers that respond to body movements up to 1,000 times per second. At each corner is a 21-inch alloy—22s are optional—shod with Continental rubber that grips like Velcro on velvet.

MICHAEL STULL If Michael Stull looks familiar, you may have seen the personal trainer, exercise physiologist, wellness consultant, and speaker on television. He appeared on LIVE with Kelly and Michael as one of America’s “Top Trainers,” and shared his expertise during several on-air appearances in fitness segments locally on Fox 4 News. The Ohio native graduated magna cum laude from Heidelberg University with a degree in exercise physiology and sports management—health and physical education. He has dedicated himself to getting individuals and groups into the best shape of their lives, physically and mentally. Stull gives back to the community by hosting free wellness and fitness classes for nonprofits and other groups. Stull partnered with the Lakes Park Enrichment Foundation to build outdoor fitness equipment stations, and volunteers time and services to the Fellowship of Christian Athletes. Personal style: Fierce, contemporary, clean. What’s next: I am getting ready to publish a book, which has taken me more than two years to finish, a 365-day devotional book designed to enhance life in all areas from motivation, inspiration, nutrition, fitness, and faith. ANDY D.W. HILL The president and co-founder of Andrew Hill Investment Advisors Inc. set his sights on his future early on—he had his first subscription to The Wall Street Journal at age 16. In his first decade in Naples, Andy Hill started his first entrepreneurial finance venture. In 2010, the Canadian-turned-Neapolitan and his business colleague, Jennifer Figurelli, started his current business, which now serves more than 60 clients with about $60 million in assets. Hill’s other passions are on ice and water—he’s been on numerous hockey teams, most recently winning the Kegger Kup, a men’s league trophy, at Germain Arena, and is an avid angler. He and friend Terry McMahan won the RedSnook Fishing Tournament in 2009 and placed second and third several times. The 25-year Naples resident also devotes a lot of energy to environmental issues and education. He’s on the Regional Council for the National Parks Conservation Association and served as vice chair of the board of the Conservancy of Southwest Florida. Hill also serves on the Hodges University Johnson School of Business Advisory Council and the President’s Council. Legendary figure he admires: Hockey legend Wayne Gretzky. The “Great One” became the highest scoring hockey player by positioning himself where the puck was going, not where it was. It would be great to take Wayne fishing in the Everglades to see how his insight would be helpful in finding snook and tarpon. “Super” spot: The Everglades National Park, one of the most incredible places in the world. WILLIAM BOYAJIAN Anyone who has been to local charity events in recent years has likely seen the beautiful jewelry custom-designed by William Boyajian, owner of Port Royal Jewelers. The artist-goldsmith-gemologist, who has several degrees in jewelry design, creates unique pieces to raise money for seemingly endless nonprofits—from Make-A-Wish of Southern Florida, to Humane Society Naples, to Sunlight Home for unwed mothers, and more. He feels awed by the success of his jewelry donations at charity auctions, which sometimes raise more than triple the anticipated amount. Boyajian, a native Floridian and Naples High graduate, strongly believes in preserving the natural resources he grew up with in the community. He recently stepped up involvement with the Conservancy of Southwest Florida, serving as chair of its 2016 Magic Under the Mangroves gala and on the board. WAYNE OGDEN SMITH The accomplishments of Wayne Ogden Smith could easily fill an entire book. He has sandwiched a lot of experiences between his roots on a “small truck farm (minus the truck) in rural Kentucky,” as he puts it, to his life now in Naples. A U.S. Air Force Academy graduate, he became a weapons test pilot at Eglin Air Force Base, then flew 90 F-4 Phantom jet fighter missions over North Vietnam and Laos. He was shot down in January 1968 and was “a guest at the Hilton Hanoi,” surviving five years and two months as a P.O.W. His military honors include two Silver Stars, the Legion of Merit, two Distinguished Flying Crosses, two Bronze Stars, seven Air Medals, and the Purple Heart. The decorated veteran went on to a highly successful business career, serving as CEO of MidAmerican Energy, president and COO of B.F. Goodrich Co., and senior executive of Air Products & Chemicals Inc. Now retired but not one to sit still, he works with multiple veterans’ groups and on initiatives of the Naples Spirit of 4’ 5; speaks to at-risk kids in New Beginnings; and seeks ways to connect the legacy of “our greatest generation to our latest generation.” Personal style: Affable, casual, compassionate. DAVID CONTRERAS JR. On first visiting Naples in 1982, David Contreras recognized the unique splendor and put it on his list of places to revisit— then relocated to the city in 1999. As a connoisseur of fine wine and cigars, Contreras turned his passion into successful businesses, first opening Bacchus of Naples, a unique wine, cigar, and luxury gift shop, followed by his current venture, Bottles of Naples, a concierge online wine retail operation. In 2011, he was granted exclusive import rights for the wines of Granada in southern Spain. He is a member of numerous wine and food societies, including the Chaîne des Rôtisseurs (National), International Wine & Food Society, Confrérie des Chevaliers du Tastevin, and Society of Wine Educators. STEPHENS When he’s not engaged in his role as managing director–private wealth advisor at UBS Financial Services Inc., Naples, Jason Stephens devotes his time and resources to a wide array of local organizations, from coaching baseball with the Greater Naples Little League and soccer in the Naples Optimist, to serving as a planned giving board member for the David Lawrence Center. Stephens, who came to Naples at the age of 8, graduated from the University of Florida, and started in the financial services industry. He briefly worked in the World Trade Center in New York. He returned to Naples to form a highly specialized investment team and has gained recognition for his business successes, along with being ranked one of the USTA’s top 4.0 men’s tennis players in the state. His hero: My grandfather, a survivor of one of WW II’s greatest tragedies, the sinking of the USS Indianapolis. He is one of 321 survivors out of 1,200 aboard. NICHOLAS J. KOULOHERAS Nicholas Kouloheras, executive vice president, Habitat for Humanity of Collier County, knew that behind all its beauty, the area seriously lacked decent, affordable housing, something he works hard to change every day. Under his direction, Habitat of Collier has been recognized by Habitat International as the Affiliate of the Year two years in a row and was recently named the number one community and housing development charity in the United States by Charity Navigator. The Massachusetts native, whose family tree includes many educators and administrators, also devotes time to the Collier County School District. He became involved in the Osceola Elementary School PTA when his older daughter began kindergarten, and in 2011 he became its president. In what spare time he has left, Kouloheras trains for triathlons. He finished an Iron Man Triathlon in 2012, and plans to tackle another in November. Personal style: Athletic, casual, traditional. or the first time, the 2015 Dietary Guidelines for Americans acknowledges what many researchers have suggested for years: Diet can affect mental health. This is not a huge surprise to those who know they always get “cranky” when they skip meals or become lethargic from a “sugar crash” after eating one too many sweets. What has remained a source of confusion is trying to figure out which foods we should be eating to help us feel happier, as well as less stressed and anxious. “Most people are being derailed by high-carb foods, either sweet or starchy. Protein is still taking a backseat, and that’s part of the reason our moods are deteriorating,” says Julia Ross, psychotherapist, best-selling author and director of the Nutritional Therapy Institute Clinic (moodcure.com) in Mill Valley, California, which she founded in 1988. “Most of us are going from one stressor to the next, and some of those stressors never stop. We aren’t fueling the brain.” Ross has spent the last three decades researching the right brain “fuel” for her patients, studying the connection between the nutrients in foods, how they can improve your mood, and the process behind it. “The brain is where all our mood-regulating neurotransmitters, including serotonin, operate,” Ross says, “and the messages of happiness require proteins, amino acids, and certain fats to interact with the protein content in the cell. It’s like building our emotional muscle.” For example, tryptophan, which creates the serotonin that boosts our mood, is an essential amino acid you can only get from food. A healthy dose of tryptophan is found in fish (halibut, tuna), poultry, grass-fed beef, shrimp, and sunflower and pumpkin seeds. “Tryptophan is the one we need the most and we’re the most lacking in, when we feel pessimistic, worried, anxious, or irritable,” says Ross, noting this

essential amino acid requires a partner, vitamin B6, to convert it to serotonin. “You can only make so much serotonin out of tryptophan without an appropriate amount of B6. So if there’s a lot of B6, the sky’s the limit on the amount of serotonin you can make,” she says. While vitamin B6 is not the only nutrient involved, Ross points out that it is a critical one for making serotonin, as well as other major mood-regulating brain chemicals. For example, B6 is required to create the neurotransmitter GABA (gamma-aminobutyric acid), which calms us down, and the catecholamines (neurotransmitters commonly known as dopamine, norepinephrine, and epinephrine), which serve as our natural energizers. Foods rich in B6 that also offer a bonanza of other nutrients to support brain health include yellowfin tuna, salmon, red bell peppers, chickpeas, spinach, bananas, avocados, hazelnuts, peanuts, and sunflower seeds. A third vital component of our diet that significantly affects mood is fat, specifically omega-3 fatty acids, which are known as champions not only for heart health but also mental health. “In terms of fats, that’s the one for mood. It’s absolutely essential,” Ross says. “The brain cells that produce the neurotransmitters, like serotonin and GABA, require omega-3 to function optimally.” In fact, omega-3 fatty acids appear to be more potent than antidepressants in reducing depression, based on a systematic review of more than 54 studies of omega-3 and depres-

sion, according to Joe Hibbeln, a nutritional neuroscientist at the National Institutes of Health, who has been researching omega-3 and its effect on mental health for more than two decades. Dark-fleshed oily fish—especially Atlantic and sockeye salmon, sardines, and albacore tuna— are the richest in omega-3 fatty acids. If you prefer white fish, such as swordfish, you’ll still get some omega-3s, but on average it’s only up to half the amount you’d get from fatty fish. Hibbeln recommends eating fish at least three times a week for optimal brain health, and don’t forget shellfish. “Even though shellfish don’t have high concentrations of omegas-3s, they are high in vitamin B12, zinc, and other micronutrients that support brain health,” he says. When it comes to oils, Hibbeln points to olive oil and macadamia nut oil as the best sources for omega-3s, since they have the least amount of omega-6 fatty acids, which can create and accelerate inflammation in the joints, skin, and brain. Omega-6s are commonly found in processed foods, margarine, and corn and soybean oil, ingredients that show up in a wide variety of bottled salad dressings, for example.

Beyond Food: 5 Mood-Boosting Tips Drink up. If you wait until you’re thirsty to reach for the water bottle, you’re already dehydrated, which stresses the body, including the brain. So how much is enough? “Take your body weight, divide it in half, and that’s how many ounces of water—not coffee or juice—you should drink a day,” says Dr. Pamela Hughes, who operates the Hughes Center for Functional Medicine in Naples. For example, a 128-pound woman should aim for 64 ounces (or eight glasses) of water each day. Get moving. It’s no secret that exercise pumps up our endorphins, the feel-good hormones. The problem is that often when you’re feeling down or worn out, you’re more likely to skip a workout, which is when you should be upping the ante. Don’t make that mistake, Hughes says. “Take a brisk walk, paddleboard, swim, anything to get you moving. Ideally, weight training for 20 minutes, two to three days a week, is really recommended for bones, muscles, and long-term strength and energy,” she says. Stop sacrificing sleep. Research has long shown that disruptive sleep patterns, or simply not getting enough shut-eye, affects not only exhaustion levels and mental focus, but it can also affect your mood. “For happiness, energy, focus, and help with stress, sleep will give you all of that,” Hughes says. The National Sleep Foundation recommends on average between seven and nine hours for optimal health. Let the sunshine in. This is the easiest piece of advice to follow when you live in the Sunshine State. Hughes says, step outside and drink it all in. “It’s hard to get enough vitamin D through your diet and food alone,” she says. “If you spend 20 minutes a day in the sun, without sunscreen, that can help you get 1,000 to 2,000 International units of vitamin D, and most people need between 4,000 to 5,000 a day.” Try meditation. Whether you’re feeling anxious or just can’t quiet a racing mind, consider a mindfulness approach. Research has shown even a few minutes of meditation a day can provide therapeutic benefits. Among two of the latest clinical trials published in the journal JAMA Internal Medicine within the past two years, mindfulness meditation was found to reduce stress, anxiety, and depression, as well as improve sleep. High-Tech Health Consider these three health and nutrition apps, which are designed to help you make more conscious decisions about what you eat and how much water you drink. Probiotic foods like kimchi, kefir, and sauerkraut are loaded with “good bacteria” that can help reduce inflammation, improve digestion, and may, in turn, boost your mood.

Inflammation can be triggered by food allergies as well, and that can take you from happy to sad or irritable without you ever realizing the cause of it, says Dr. Pamela Hughes, who operates the Hughes Center for Functional Medicine in Naples. “Not unlike the pain you feel from an ankle sprain, a similar inflammatory response can happen in the body with certain foods,” says Dr. Hughes, who points to gluten and dairy as common culprits. “While we might not know we’re allergic to food, when we eat certain things we’re sensitive to, our gut will release that undigested protein into the body, which can cause inflammation and affect the brain negatively.” One possible remedy is to consume more probiotics to help keep your gut healthy. Chef Bryan Sutton’s culinary awakening began with his grandmother, a native of Sheffield, Alabama, who taught him classic Southern recipes. In lieu of cooking school, at age 14 he began working his way up in restaurant kitchens. “I wanted to save up money to buy a car,” he says with a laugh. After serving as sous chef at the original Campiello in Eden Prairie, Minnesota, he moved to Florida to help open the restaurant’s Naples branch. He later opened his own dining establishment, Tropical Reef, which closed in 2008. He took the helm as executive chef of Veranda E at the Hotel Escalante in Naples last year. Sutton’s focus on organic, healthy, and sustainably sourced ingredients is in part influenced by his dramatic personal transformation during 2008 and 2009, when decades of hearty cuisine caught up with him during a doctor visit. His blood pressure was alarmingly high, a discovery that motivated him to reduce his weight from 387 to 260. “Basically, I did it the old-fashioned way, with diet and exercise: avoiding junk food, eating less meat and more fish. I tried fad diets, but they didn’t work. It’s really a lifestyle change.” An intensive exercise regime has helped him keep the weight off ever since. —Mark Spivak Crispy whole red snapper

Aha moment: I’ve always said you can’t trust a skinny chef, but the doctor told me you can’t trust a dead one either. Most unusual item in his home fridge: Sprouted lentils and raw cashew cheesecake. I’ve started experimenting with raw and nondairy food lately as an outgrowth of my weight loss and lifestyle change. Ultimate meal: I’d start out with raw sea urchin and shrimp, similar to what I had at a restaurant in Apulia, Italy, a few years ago, and follow that with a bone-in rib eye smothered with shaved white truffles. Art of cooking: Someone brought a whole shark into the kitchen one day, and I watched the chef break it down and fillet it. It blew me away. I was fascinated by the artistry of it, with how you could take a huge fish like that and transform it into something you could cook and eat. Inspiration for his signature Hot-n-Crunchy Grouper: I was eating corn flakes one day, back in Texas, and I remembered my grandmother used them in fried chicken. So I tried breading the fish with them, and the sauce evolved with almonds, sesame seeds, chili flakes, and ginger. I was just learning about chutney at the time, so I finished the dish with mango chutney. Secret Garden: It’s a 3,000-square-foot organic garden, planted before I came to the restaurant in March 2014. I’m still experimenting with it, and people from the Naples Botanical Garden are working with me to grow everything from fresh herbs (basil, Hot-n-Crunchy Black Grouper thyme, lavender, and rosemary) to produce (eggplant, squash, tomatoes, and cucumbers). If I hadn’t become a chef … I’d probably be a teacher. My mom was a teacher. When you think about it, a great deal of this job is educating cooks, servers, and the public about food.

Is “stealing to order” trending in the world of spirits collecting? By Mark Spivak

ne night in March 2013, a gang of burglars broke into the cellars of Domaine Jacques Selosse, one of Champagne’s most elite small growers and producers, and stole 3,700 bottles worth an estimated $500,000. They also made off with 16,000 labels and 12,000 neck collars, which indicated to authorities that the thieves intended to manufacture fakes. The purloined bottles had already been packaged and labeled for export, making them difficult to resell without being spotted. The heist was newsworthy, but not unusual. In a sixmonth period that same year, there was a theft at a high-end Bordeaux estate every 15 days. The targets included famous properties such as Château Palmer and Château d’Yquem. In

all, more than $1 million in wine was stolen before French police apprehended the ring of 20 professional thieves. Similar thefts have occurred in the world of spirits, notably last year’s disappearance of 200 bottles of Pappy Van Winkle, the world’s rarest and most expensive bourbon, from the Buffalo Trace distillery in Kentucky. These incidents had a number of things in common. They were all professional jobs. (At Selosse, the gang used alcohol spray to eradicate traces of their DNA.) The products were the best of their kind, and the producers were carefully targeted. Virtually all the properties were in remote rural areas where the thieves could operate undetected. In every case, the wines were not bottles that could easily be sold on street

corners or from the back of a truck. Supply of the top wines and spirits is finite, and competition to purchase them from legitimate sources is fierce. Some observers compared these events to the famous 1990 art heist at Boston’s Gardner Museum. In that robbery, two men dressed as police officers overpowered security guards and stole 13 paintings by Rembrandt, Vermeer, Degas, and Manet. The thieves spent only a few minutes in the museum. They targeted specific works and seemed to know exactly where to find them. The paintings never surfaced on the black market, causing authorities to speculate that they were stolen for a private collector who gave the criminals a shopping list. The rash of wine burglaries conforms to the same pattern. According to British newspaper The Guardian, French detectives believe the wine was stolen to order. If so, we’ve opened the door on a strange new world of bespoke wine theft. It makes perfect sense in practical terms. Say you’re a billionaire collector who fancies 10 cases of 2000 Château Palmer for your cellar. You could buy them at auction (or more likely, have an agent buy them for you), but it would likely take years to assemble the bunch. You also wouldn’t have an ironclad guarantee of where the wine had been or how it had been stored. You could attempt to piece the five cases together from retail sources, but you’d face the same delays and concerns about provenance. Either way, you’d

have to have the bottles authenticated to avoid counterfeits. The best place to get your five cases of 1989 Palmer is from the château, since you can be assured that the wine has never been moved and is in pristine condition—although the château will only sell the wine through traditional distribution channels. Most wine collectors are probably too principled, or too scared, to engage in such practices. If someone offers you a batch of Champagne Jacques Selosse at a bargain price, however, proceed with caution. «

Kids’ Care Close To Home

Families in Naples will soon have more options for their children’s urgent medical care. Nicklaus Children’s Hospital (formerly Miami Children’s Hospital), in collaboration with Golisano Children’s Hospital of Southwest Florida, broke ground this summer on the first urgent care center in Naples devoted solely to pediatrics. Doctors will treat a myriad of ailments, including colds, stomach aches, animal bites, cuts needing stitches, ear infections, and even offer x-ray services tailored specifically to children. The clinic, located at the northeast intersection of Livingston Road and Pine Ridge Road, is projected to open in early 2016.

With choices ranging from guavas and grapefruit to spinach and squash, students statewide are invited to tap locally grown produce and participate in a chef competition sponsored by the Florida Department of Agriculture & Consumer Services. Open to all Florida students in grades 4 through 12, the contest aims to promote healthy living. Each competitor whips up a creative, original, and nutritious snack using at least one fresh, local fruit or vegetable for a chance to compete in a regional cook-off and win prizes. The Revs Institute for Automotive Research, Naples, presents the multimedia exhibition, “The Rivals: A Golden Moment in Grand Prix History,” which revisits the 1954-1955 Grand Prix season battle between two legendary cars—the MercedesBenz W196 and Lancia D50. Giving BACK

“Our philosophy is giving while living,” says Tim Ubben, who along with his wife, Sharon, concentrates considerable donations on a limited number of nonprofits, so they remain meaningfully engaged in each one. “It’s very satisfying to actually see the benefits we may have brought to an organization, as opposed to a bequest, which is giving when you’re six feet under.” The couple, originally from Glencoe, Illinois, became seasonal residents of Naples in 2000, but had been vacationing in the area since 1985. Earlier this year, the couple presented a $10 million endowment gift to the Boys & Girls Club of Collier County, which serves 3,000 kids aged 6 to 18 in after-school programs. It was the largest donation in the history of the BGCCC. “It’s so much more than just a place for kids to hang out after school and stay off the streets,” Tim says. “They offer one-on-one tutoring to supplement the public school education. There is a healthy lifestyle program that promotes exercise and nutrition, an arts program, and vocational training. It’s a needed organization in this community.” The couple has been generously supporting the BGCCC since 2003, and Tim has served on the board since 2007. “I’ve seen the evolution of this club during that period of time and have great respect for what it does,” he says. “I’ve also seen the need to provide some financial stability to this organization, as the club is taking on an expanded role in Immokalee.” The return on the endowment will help fund a new building in Immokalee, support operations, and create a scholarship fund. The Ubbens are also longtime charitable supporters of Artis—Naples, which Tim calls the “cultural gem of Southwest Florida.” Beyond the Sunshine State, the couple contributes to their alma mater, Depauw University, as well as the Posse Foundation, a youth organization in New York. “While it probably won’t happen,” Tim says, “we’d love it if the last check we ever wrote was to the undertaker, and it bounced.” —Teri Evans «
