W

e currently have SICK CARE, not HEALTH CARE Last year Americans spent $2.8 trillion on healthcare. That is around $8,000 per person. So does this mean that we are all healthy and living well? Absolutely NOT! In fact, we lead the world in heart disease, obesity, and cancer. Astonishingly, 5 out of 6 Americans will be diagnosed with either heart disease or cancer. If we were spending the most money in healthcare and had the healthiest people, maybe it would be worth it. But we are spending the most money AND have the unhealthiest people. In a study by the Journal of the American Medical Association, of 37 different developed countries the United States ranked 37th (dead last) in terms of overall health of the population. SO where are we spending all of this money? When we are sick or in pain, we go to the doctor. We get prescriptions to help cure and prevent illness and pain. What do we do when that medication has a side effect or no longer works? We go back and get more medications for the next side effect. Americans take up 5% of the world’s population, yet we consume 85% of the world’s medications. You would think that if drugs make you healthy then we would be the healthiest nation, and that is far from the truth. We had 1.1 million people die last year because of drugs and these are not street drugs like heroin or other illegal drugs. These are prescription drugs that were prescribed for the right condition, the right amount, the right time. Prescriptions are not the only culprit, a large amount of that money is spent in nursing homes and cancer treatment centers. We have so many sick and ailing people in our population that we are seeing more and more long-term nursing facilities. People

may be living longer, but we are not living better. THE JUNIOR LEAGUE’S 53RD ANNUAL ART HARVEST

T

he Junior League of Dunedin Clearwater-Dunedin will be hosting their 53rd Annual Art Harvest Festival on November 5th and 6th at Highlander Park in Dunedin. The Art Harvest Festival is a juried fine art show that attracts over 200 artists from around the country. This year’s featured artist is Linda Heath, a self-taught, local artist with a passion for the art of Gyotaku Fish Rubbing. Gyotaku is the traditional Japanese

method of printing fish. The natural imprinting technique began as a practical way for fisherman to chart their catches and since has evolved into a beautiful art form. Linda discovered the art of Gyotaku when traveling through Asia. Being an avid angler, she was drawn to the technique. She charts and creates with fish she catches in the Gulf of Mexico. Linda commented, "I have attempted to capture the essence and shape of each fish and I hope my Gyotaku fish rubs will give you a greater appreciation of our underwater nature and all its beauty." You can meet Linda and over 200 other artists the first weekend of November at Highlander Park in Dunedin. All proceeds from this annual event benefit the community work of the Junior League of Clearwater Dunedin. In the last 68 years, JLCD has raised more than 1.8 million dollars and contributed more than 1 mil-

lion volunteer hours to the community. They have funded many notable projects including the Dunedin Fine Arts Center, UPARC Foundation and The Rick Pitino High Point Center. Currently the League’s focus is on child hunger. Attendees will be given the opportunity to make a $2 admission donation that will support JLCD’s ongoing community projects. A SEMESTER’S WORTH OF HEALTHY HABITS DR. CESAR LARA

A

s soon as Labor Day passes, we know the season has changed. Even here in Florida, where the heat remains strong well into fall, the air is just a bit crisper and less humid. The last vacationers have returned from their trips. But perhaps the biggest sign that this is a new time of year is that children everywhere come in from the backyards, front lawns, and swimming pools of summer and head into the classrooms. This is the unmistakable season of “back to school.” Summer is a time for ease and celebration. It naturally comes with a certain degree of leisure and looseness in schedule and routine. Fall is more regimented, but that structure offers us some great opportunities for creating and achieving new goals. It takes a minimum of three months for a healthy and safe weight loss program to really take effect. Incidentally, it takes about the same amount of time to fully integrate a new behavior or habit into your lifestyle. For most children, the school year is divided into two semesters. Students enroll in a number of courses to study in a concentrated way for a few months, in order to fully grasp and comprehend the material. This is a great method to continue to apply as an adult. Visualize your goals for your health over the next three months. Would you like to take up a new sport? Incorporate more meditation? Get three servings of vegetables a day? Shift your body fat percentage to a healthier level? Visualization is a powerful tool, if you slow down enough to imagine how you will feel once your wants are actualized.

Meeting goals is a process that requires time; it won’t happen overnight. Once you know what you’d like to accomplish, think through the various pieces of the puzzle. Do you need to educate yourself about healthier cooking methods? Schedule time to take a walk a few days a week? Reach out to a friend who can offer you accountability and support when you’re struggling? You can treat these pieces as “lessons,” or even assign yourself “homework” if you wish! It all depends on how helpful you find the school metaphor. When we commit to long-term change, we are less discouraged by small bumps in the road. One day of missing the mark becomes minor, and we are able to step back and see the larger trajectory of our progress as moving forward, onward, and upward. Skipping one day of exercise is significant if you are measuring in terms of a week, much less so if you are tracking yourself for several months. It is normal that we will have moments of falling back into old habits, of eating mindlessly, avoiding the gym, or even forgetting to take our vitamins. These tiny setbacks are a natural part of the growth process. Using our children as an example, we realize that we don’t expect them to get every math problem right. We acknowledge that mistakes are part of the process. When we make an error, we can go back and see what we have done wrong, and this helps us better understand the formula for getting it right. Our children are always learning. So, it turns out, are we. Starting a semester-long exploration of your health also gives you ample time before the holiday season sets in. We talk about the holidays every year, and it’s worth addressing, because many people find the holidays stressful, and have difficulty retaining their healthy habits. It’s also astonishing how many of these same people find themselves declaring “I’m on a diet” two weeks before Thanksgiving. Imagine if you had the foundation of months of solid work toward your goals underway by the time the cookies and the cocktail parties rolled around. Instead of being a brand new student, you would be

or most women, it's a given and an acceptable sacrifice: Joint and leg pain versus a pair of fabulous high heels by Alexander McQueen, Jimmy Choo or Manolo Blahnik. After all, what was the alternative? Wearing a pair of horrendously thick-soled therapeutic clunkers? Well, bad news for ugly shoe advocates: A new study in the Annals of Internal Medicine says hideousness isn't particularly helpful. Researchers split a group of 160 people over the age of 50, all with knee pain, into two groups: Half were given normal walking shoes and the other half shoes specifically designed to reduce the walking load on knees. There was no significant difference in pain improvement or walking function. That might not justify wearing Manolos with 5-inch heels, but it does suggest that your old, battered, beloved Converses in the closet are OK. H-2-OH GO AHEAD, DRINK SOME MORE It's a common notion among dieters that drinking extra water with a meal will make one feel more full, reducing the consumption of foods containing actual calories. There's some new research to suggest the idea is empirically sound. Scientists had 19 study participants drink a milkshake on an empty stomach, then either quaff a few sips of water or an entire large glass. Magnetic resonance imaging showed that the stomachs of folks who drank the full glass of water stretched nearly twice as much as the sippers, boosting activity in the area of the brain that tells them they should be filling full. LITTLE STEPS BY CHARLYN FARGO

O

ne thing I've learned in the 25 years I've been a dietitian: Little steps/everyday decisions make a big difference in a healthy diet -whether it's what you order at the fast food restaurant, or whether you choose to eat fruit instead of a sweet. Those little steps become the big thing that helps you maintain, gain or even lose weight. Here's further proof from a study done at Virginia Tech: If people replace just one calorie-laden drink with water, they can reduce body weight and improve overall health, according to Kiyah Duffey, Virginia Tech researcher. "Regardless of how many servings of sugar-sweetened beverages you consume, replacing even just one serving can be of benefit," said Duffey, an adjunct faculty member of human nutrition, foods, and exercise in the College of Agriculture and Life Sciences and independent nutrition

consultant. Consuming additional calories from sugary beverages like soda, energy drinks and sweetened coffee can increase risk of weight gain and obesity, as well as Type 2 diabetes and cardiovascular disease. Duffey's findings, which were recently published in Nutrients, modeled the effect of replacing one 8-ounce sugar-sweetened beverage with an 8-ounce serving of water, based on the daily dietary intake of U.S. adults aged 19 and older, retrieved from the 2007-2012 National Health and Nutrition Examination Surveys. Duffey, along with co-author Jennifer Poti, an assistant professor of nutrition at the University of North Carolina at Chapel Hill, showed that this one-for-one drink swap could reduce daily calories and the prevalence of obesity in populations that consume sugary beverages. The 2015 Dietary Guidelines for Americans recommend that no more than 10 percent of daily calories come from added sugar and that calorie-free drinks, particularly water, should be favored. "We found that among U.S. adults who consume one serving of sugar-

sweetened beverages per day, replacing that drink with water lowered the percent of calories coming from drinks from 17 to 11 percent," Duffey said. "Even those who consumed more sugary drinks per day could still benefit from water replacement, dropping the amount of calories coming from beverages to less than 25 percent of their daily caloric intake." Duffey found that a reduction in the amount of daily calories coming from sugary drinks also improved individual scores on the Healthy Beverage Index -- a scoring system designed to evaluate individual beverage patterns and their relation to diet and health based on standards set forth by the Beverage Guidance Panel and the Dietary Guidelines for Americans. Duffey developed this index in 2015 with Virginia Tech nutrition researcher Brenda Davy, a professor of human nutrition, foods and exercise in the College of Agriculture and Life Sciences and a Fralin Life Science Institute affiliate. Their preliminary data showed that higher scores correlate to better cholesterol levels, lowered risk of hypertension, and in men, lowered blood pressure.


The broader goal of the index is to help people identify what and how much they drink each day, as drinking habits can impact eating habits. Higher calorie drinks, such as sweetened soda and high-fat milk, have been associated with diets rich in red and processed meats, refined grains, sweets, and starch, according to a 2015 review study by Duffey, Davy, and Valisa Hedrick, an assistant professor of human nutrition, foods, and exercise in the same college at Virginia Tech. Lower-calorie drinks, such as water and unsweetened coffee and tea, were associated with alternative diets rich in fruits, vegetables, whole grains, fish, and poultry. Diet drinks are also healthier alternatives to sugary drinks, explained Duffey, but other research has shown that people who drink water over low-calorie alternatives still tend to eat more fruits and vegetables, have lowered blood sugar, and are better hydrated. The bottom line? Take small steps to better health -- choose water over soda, choose fruits over cookies and cakes and choose a salad over a burger sometimes.

Q AND A: Q: How do I know if a cereal is healthy? A: Follow the 5-5-10 cereal rule, says the editor of Cooking Light magazine. Make 5 grams of fiber the baseline (daily goal 25g to 38g); more is better. You can increase the count with fresh fruit or nuts. For protein, aim for at least 5 grams. Naturally occurring proteins found in whole grains, nuts and seeds are best, instead of added proteins like highly processed isolates. For sugar, look for varieties with no more than 10 grams sugar; less is better. Any more than that, and you're in glazed donut territory. Added sugars should be low on the ingredient list, never first. -Cooking Light. RECIPE Ever made your own hummus? Williams Sonoma "Healthy in a Hurry" offers a quick and easy version that is worth giving a try. Roasted red pepper lends a sweet, smoky taste and warm color to the classic chickpea dip. Spread it on a sandwich or dip fresh veggies in it. The chickpeas are high in protein and fiber and the red bell

peppers are a great source of vitamins A and C as well as contain cancer-fighting anti-inflammatory compounds. ROASTED RED PEPPER HUMMUS • 1 (15 ounce) can of low-sodium chickpeas, drained and rinsed • 1 jar roasted red bell pepper, roughly chopped • 2 tablespoons olive oil • 2 teaspoons tahini • 1-teaspoon ground cumin • 1/2 teaspoon smoked paprika • 1/2-teaspoon sea salt FRESH LEMON JUICE FROM 1 LEMON In a blender or food processor, whirl chickpeas, bell pepper, olive oil, tahini, cumin, paprika, salt and lemon juice until smooth. Serve right away or transfer dip to an airtight container and refrigerate for up to 3 days. Makes about 1 cup (8 ounces); 6 servings. Per serving: 120 calories, 5 g protein, 15 g carbohydrate, 9 g fat, 0 mg cholesterol, 5 g fiber, 280 mg sodium.

EGGS IN FAVOR BY CHARLYN FARGO

W

e seem to have a love/hate relationship with eggs. Currently, they are in vogue, so it's OK to love them, according to two recent studies. Both studies suggest that eggs don't increase the risk for type 2 diabetes or coronary artery disease. Consuming one or two eggs a day had little effect on health outcomes, according to Alice Lichtenstein, director of Tufts' HNRCA Cardiovascular Nutrition Laboratory. The latest Dietary Guidelines for Americans agree - saying that the amount of dietary cholesterol in one large egg (185 mg) doesn't significantly contribute to unhealthy levels of cholesterol in your blood. As to diabetes risk, a review of 12 recent studies, published in the American Journal of Clinical Nutrition, found there was little difference in risk of diabetes be-

tween the highest and lowest categories of egg consumption. The 12 studies involved 219,979 individuals, 8,911 of whom developed type 2 diabetes. In a second study that looked at egg consumption and blood cholesterol, Finnish researches look at data on 1,032 men, initially ages 42-60, participating in the Kuopio Ischemic Heart Disease Risk Factor Study. Over almost 21 years of followup, neither egg consumption nor dietary cholesterol intake was significantly associated with risk of coronary artery disease. Participants average egg intake was about four per week, or the equivalent of about one egg every other day. The Finnish researchers (from the University of Eastern Finland) said that eggs are more than merely a source of dietary cholesterol. "Eggs are an inexpensive and widely available source of several beneficial nutrients, such as high-quality protein, unsaturated fatty acids, vitamins and minerals," they wrote. "Eggs are also a good source

of other bioactive compounds, such as lutein, zeaxanthin and phospholipids, which can have beneficial effects on inflammation, lipid oxidation, lipid metabolism and atherosclerosis progression." The bottom line? Go ahead and enjoy five to seven eggs per week. Just make sure it's part of a balanced diet. One large egg contains 78 calories, 5 g total fat, 1.6 g saturated fat, 185 mg cholesterol and 6 g protein, as well as 11 percent of the DV for vitamin D and 10 percent for vitamin B12, according to Tufts Health & Nutrition Letter, July 2016. Q AND A Q: Is lemonade a lower-calorie alternative to regular soda? A: Despite its healthier image, regular lemonade is not necessarily any lower in calories than an equal portion of a regular carbonated soft drink. Whether ready-todrink or made at home from frozen concentrate or a powdered mix, most lemonade contains about 100 to 120 calories in each eight-ounce portion. This is not


surprising since that eight-ounce drink contains the same amount of added sugar as a regular soda. Some powdered mixes have less added sugar, making them about thirty percent lower in calories. Other mixes and "light" bottled ready-to-drink lemonades are sweetened with zero-calorie sweeteners and contain ten or fewer calories, comparable to diet soft drinks. You may also see "lite" bottled lemonadeice tea blends. In these, calorie content is reduced compared to regular soft drinks, but some bottles are large enough that the calorie information listed pertains to just a third or half of the bottle. For any of these sugar-containing beverages, finishing a large bottle or drinking glass after glass on a hot day can make calorie and sugar consumption add up quickly. Unlike soda, some lemonade options may contain from 10 to 100 percent of the Daily Value for vitamin C. This is often because of added vitamin C and is not necessarily a sign of actual fruit juice content. If you're looking for a naturally low-calorie alternative

to regular soda, try adding a few splashes of lemon or other juice to plain club soda or seltzer. Or consider ice tea (unsweetened or very lightly sweetened) instead. - American Institute for Cancer Research. RECIPE 'Tis the season for fresh tomatoes and sweet corn from your garden or the local Farmer's Market. Here's a recipe that spotlights both. It's from the Iowa Food and Family Cookbook. Grilling the corn in the recipe carmelizes it - bumping up the flavor. GRILLED CORN SALSA • 5 ears fresh sweet corn, shucked • 3 jalapenos, chopepd • 1 red onion, quartered • 1 red bell pepper, seeded, coarsely chopped • 1/4 cup cilantro leaves • 4 cups coarsely chopped tomatoes • 2 cans (15 ounces each) black soybeans, drained and rinsed

1 1/2 teaspoons garlic salt 1 teaspoon dried oregano 1/2 to 1 lime, juiced Freshly ground black pepper

Preheat a grill to medium-high. Arrange the ears of corn on the grill and cook until lightly charred, turning occasionally, about 20 minutes. Remove the corn form the grill and let cool slightly. Slice the kernels from the cobs and measure 3 cups into a large bowl. Reserve any excess corn for another use. Place the jalapenos, onion, red pepper and cilantro in a food processor and pulse to chop. Add the tomatoes and pulse to create a chunky texture. Do not over process. Transfer the vegetables to the bowl with the corn and add the beans, garlic, salt, oregano, lime juice and pepper. Toss gently to coat. Chill the salsa for at least 1 hour to allow flavors to develop. Serves 18. Per serving: 62 calories, 3 g protein, 14 g carbohydrate, 0 fat, 0 cholesterol, 4 g fiber, 307 mg sodium.

dam Lieberman is a partner in The AJI Companies. “The Big Fuzz,” Adam was the original General Manager of their Fuzzy’s Taco Shop in Brandon, until recently when they brought in an Operating Partner to take over as GM so he can focus on scaling Fuzzy’s Taco Shop’s growth in Tampa Bay. Most of Adam’s day to day attention is focused on restaurant operations. He strives to build their team by hiring great people, and leading efforts to create a dramafree culture of FUN and positivity. Adam also leads the construction process for the new store under construction at USF and will continue to do so for all future projects. Adam relocated with his wife J-Ray back home to Tampa from Aspen, CO where he worked in the high-end hospitality industry for the last 5 years prior to founding The AJI Companies. We had lived in some of the greatest cities in the country and seen some amazing concepts and business ideas along the way. We wanted to bring one of those concepts home with us to build a brand in the city that will always be our home. Adam: It comes down to what feels the best and makes you happy. Outside the store, I am responsible for the “business” side of things and everything related to how we grow in the future. I’m also in charge of

the bar – don’t forget the bar!! J-Ray: Like my partners, I am a fulltime manager in the store and have done every job from dishwasher to cashier and cook. I also run our HR and store level social media. Adam: Day-to-Day operations for the most part. Our roles are constantly evolving, but making sure we have enough staff, trained staff, proper product, and execution at the store level is my primary focus. And as always, above all, make sure each guest has a FANTASTIC experience. Panache: What sets you apart from your competition? Ian: We are a fast-casual restaurant so most people come expecting a small place, but we are pretty consistently a lot more than what most people expect. Fuzzy’s are places to hang out and you definitely come for the FOOD and stay for the drinks. We have a full liquor bar with 20+ tequilas, specializing in all things margaritas, frozen drinks, and fruity cocktails. Great staff pretty much

rounds it out. We just have a blast doing what we do. Adam: Our product and staff. We say that our food is fresh, but seriously it is fresh. We make everything in-house within 24 hours of being consumed by the customer. You don’t have to be a trained foodie to appreciate the quality of product we are dishing out. And to top it off, having a friendly and personable staff that actually enjoys their job - to educate and entertain customers is a must. Panache: What would you be doing now if it weren’t for your business, taking money out of the equation? Ian: Building a business here in Tampa Bay for sure. Probably would golf more too!! Adam: Well taking money out of the equation?? Is it cliché to say traveling the world? My wife and I love traveling. Panache: What do you do for fun? Ian: Doing anything outside all year round!! Also, food and drink is a seri-


ous passion and trying new things in my kitchen or someone else’s will always be a favorite. J-Ray: Being new to Florida, I love spending any time outside the restaurant at the beach! While I miss my roots in the mountains, I feel very blessed to have the amazing Gulf in my backyard now. Adam: Love the state of Florida! The beach, the pool, the boat, it’s all great! Panache: Who or what is most important to you, personally or professionally? Ian/Adam/J-Ray: No question, love for family and friends. Our Grandparents just celebrated their 60th wedding anniversary. They are incredible role models for our entire family. Our Mom and Dad keep us level headed and honest and are heroes in business and in life. Ian: I drive a Toyota Prius and absolutely love it. There, I said it. J-Ray: Despite my many years working in the entertainment business and on camera, I can actually be very shy and private. Adam: I genuinely do not like Bacon. I think I fall in the .01% of America who does not like it. Panache: What are your personal and professional mottos? Ian: Never stop learning and follow your passion. J-Ray: Family is the most important thing. Adam: Work hard, set goals and greatness will come. Panache: When you were five, what was your dream to be when you grew up? Ian: Professional at coloring J-Ray: I wanted to be a Veterinarian or Dolphin trainer because I love animals. While I clearly didn’t follow that path,

I can’t promise that I won’t take our taco money and adopt all the animals in Tampa. Panache: Have you achieved all or most of your dreams thus far? Ian: Sounds cheesy to say, but I am literally living my dream every day. Working with Family, creating jobs, building a brand we are proud of, and serving customers in our hometown is the most rewarding thing I’ve ever done in my life. I’m excited for every day to come!! J-Ray: I think it’s safe to say that where I am now in my life is pretty darn different than anything I ever imagined! While preparing for auditions or shoots in Los Angeles, I never imagined I would wind up living in Florida as the owner of a taco restaurant! I am immensely proud to call myself a business owner and so grateful that I have wound up with this incredible family around me, in business and in life! T

he tough thing about getting older is changing our eating habits -- we just need as many calories, but we certainly need good nutrition in the calories we do eat. Here are five tips for eating to age well from Environmental Nutrition newsletter. --Consume more omega 3s. These healthy fats support heart health, brain function and memory during aging. They may also improve muscle strength. Eat omega-3-rich fish, such as sardines, herring and wild-caught salmon at least twice a week. Walnuts, chia and flax are also high in omega-3s. --Build a healthy gut. As we age, bacteria and other microbes that live in our gut decrease in diversity and may shift toward more harmful species. That may weaken

the immune system and raise the risk of obesity, type 2 diabetes and constipation. Besides yogurt, choose a wide variety of vegetables and fruits to provide material to nourish good bacteria. --Build your bones to maintain mobility. Your bones may need many nutrients beyond calcium, including vitamin D and vitamin K and magnesium. Increase calcium intake with milk and yogurt, canned seafood and kale. --Skip soda and drink more water. Sugary sodas cause inflammation and damage the may shorten the protective caps on the ends of DNA, called telomeres. The shorter our telomeres, the faster we age and the greater our risk of heart disease, type 2 diabetes and some cancers. Learn to love water -- add fruit or filter it. --Optimize protein intake. As you lose muscle mass with aging, you also lose strength and mobility. Fight back by spreading protein intake evenly throughout the day (20 to 30 grams per meal). To boost

protein at breakfast, try Greek yogurt, lowfat cottage cheese, milk or yogurt-based smoothies and eggs. Q AND A Q: Can something as simple as removing my candy dish at work really make a difference for healthy eating? A: Research suggests that convenient and visible candy on office desks can influence people to eat more candy, thus consuming extra sugar and calories. So, eliminating those prompts to eat even when not hungry can help limit those extra calories that can add up day after day. One study, for example, found that women ate more than twice as many pieces of candy when it was highly visible in clear dishes on their desks than when candy was less visible in opaque containers on their desks, and even fewer when the candy was six feet away. The women in this study underestimated how much they'd eaten when the candy was on their desk, and did not have that added


problem when they had to get up to get the candy. That may be because it's so easy to unconsciously grab a piece of chocolate or other treat when it's right in front of you. A candy bowl in a communal space can be challenging. It takes work, but you can train yourself to adopt habits like eating treats only as a dessert at a meal or only if you take a treat back to your desk and savor it. Other strategies may be to ditch the bowl on the desk, keep a healthy snack like fruit at your desk and get candy only by walking to a vending machine or waiting to get it on your lunch break. These new strategies can help you cut back without the mental baggage of making something "forbidden." It's worth considering whether grabbing candy has been a mindless habit or whether you are relying on that candy for more energy or to de-stress. If you need an energy boost, try getting up and moving every hour or so. If you turn to candy when stressed or as a reward, consider non-food options like taking a minute to look at a favorite calming

RECIPE If your garden is like mine, it's coming up all things zucchini. Here's a great bread recipe, from Cooking Light magazine, that pairs zucchini and chocolate for a low-fat version (thanks to using applesauce) of Zucchini Bread. CHOCOLATE CHIP ZUCCHINI BREAD • 3/4 cup sugar • 3 tablespoons vegetable oil • 2 large eggs • 1 cup applesauce • 2 cups all-purpose flour • 2 tablespoons unsweetened cocoa • 1 1/4 teaspoons baking soda • 1 teaspoon ground cinnamon • 1/4 teaspoon salt

• 1 1/2 cups finely shredded zucchini (about 1 medium) • 1/2 cup semisweet chocolate chips COOKING SPRAY Preheat oven to 350 degrees. Place first 3 ingredients in a large bowl; beat with a mixer at low speed until well blended. Stir in applesauce. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 4 ingredients (through salt), stirring well with a whisk. Add flour mixture to sugar mixture, beating just until moist. Stir in the zucchini and chocolate chips. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350 for 1 hour or until a wooden pick inserted in center comes out almost clean. Cool in pan 10 minutes on a wire rack, and remove from pan. Cool completely on wire rack. Makes 1 loaf; 16 slices per loaf. Per serving: 161 calories, 2.9 g protein, 27.3 g carbohydrate, 5.1 g fat, 27 mg cholesterol, 1.4 g fiber, 145 mg sodium.

Dali’s arrival to the fashion industry has been making numerous headlines; however designing is nothing new for this NY native. These are the go-to everyday jeans that have become the denim equivalent of leggings. The best skinnies are made to stretch for added comfort. For a twist, try a cropped

skinny jean. Or buy them in a dark wash this fall with a touch of ombre detail at the hem. (Mossimo at target.com) --Get distressed by it all. Worn and torn is the mantra for the latest "destroyed" jeans that sport rips and raw edges. You don't have to worry about breaking in these denim pieces that come with their own distressed personalities. Throw in a little bleach-like splatters and you've got even more distressing news. unglasses are no longer just a fashion statement; they're a necessity. But why not amp up the cool factor while at the same time protect your eyes from harmful UV rays? (Oh, and also cover up those puffy eyes from last night.) Here are a few ways to match the right style of sunglasses to the shape of your face: --Stick to opposites. The general rule of thumb has long been to go for glasses that are the opposite shape of your face. It does seem to work: Choose rounder frames for square faces; more angular frames for rounder shapes. If you have an oval face, you're in luck, since almost any sunglass shape will be flattering. --Face off in the mirror. If possible, try on sunglasses in front of a full-length mirror. You'll be amazed at what a difference it will make. You'll see the whole picture and be able to instantly tell if your sunglasses are in sync with the proportions of your body. Balance is key. Big, round, wide sunglasses do not normally flatter petite heads and body shapes. The same rule applies to larger men and women who should steer clear of smaller, narrower frames. --Choose classic shapes. There's a reason that the Ray-Ban Wayfarer and aviator sunglasses have been around for decades. They are classic styles that flatter a wide variety of face shapes. Now, they are updated in an array of colored frames, metals and lenses. "Foldable" sunglasses in classic shapes are also making a comeback. You can't go wrong wearing a pair of these iconic shades. --Make it personal. Many sunglass brands now offer personal customization so you get the style you want in the color you want. More than likely, you'll like the same color of sunglasses. We all know those people whose colorful glasses have become their signature look. Darker frames and lenses are great contrasts to cooler pale skin; and lighter tones look best on darker complexions. Hair color can also be a determining factor in choosing sunglasses. Who can forget those black Ray-Bans Audrey Hepburn wore in 1961 in "Breakfast at Tiffany's"? --Change up your outlook. If you've been wearing the same pair of tortoise shell sunglasses for the past ten years,

it's time to make a change. Even if you're a big fan of the classic shades, there are a lot of new ways to express yourself. Mixes of materials are making big news: sidepieces wrapped in printed leather or wood; reflective mirrored lenses in bold colors and even UV protective lenses to slide over your Google Glass. --Have an attitude. A glamorous pair of sunnies is one of the fastest ways to get into the movie-star mode. The retro shades of yesteryear are once again having a hey day on city streets and at the beach. There's a pair to fit every face. Don't be afraid to glam it up with frames decorated with graphic patterns or metallic studs. There are even plenty of cat-eye glasses that will make you purr.

EMBRACING A HOME'S PERFECTION JOSEPH PUBILLONES

Y

ou may have read before how tortured I feel when my housekeeper moves things around the house. Why does she move things that are perfectly placed; or why

did she place a discarded gift bow on a sculpture? Is it a joke or a social commentary on my desire to live a perfectly poised life? I know I have written about this once or twice before. However, sometimes the things you despise the most have a way of endearing themselves to you. Take for example when my dog takes to beating me to the bed and claims my side, or when a certain aunt must hit the share button everytime I post something on Facebook. But I digress -- back to interior design. A house's primary task is to shelter us from the environment. They are also

meant to hold our personal belongings. Houses are also meant to protect us and collect us into groups such as family, friends or roommates. Although houses are innately inanimate, they do tend to lay the groundwork for relationships or savoir vivre. In this regard it is clear to see that houses, in whichever form, from apartment to townhome to chalet, all are cleverly deciding how we interact. Architecture is a very powerful medium or language that a dwelling uses to engage us and our relationships. The way a floor plan is laid out can either unite a group of persons in a house or disperse throughout. The windows and doorways can allow light to flow through the home or restrict it, which can affect our moods. It is possible to enhance someone's mood with a good dosage of daylight and create an atmosphere of gloominess in a space that has little or no access to natural light. All houses are obviously not perfect, but rest assured that someone's hand or vision is at play in every built home, whether the architecture seems thought out or not. It has taken me nearly a half-century to realize that houses possess power over all relationships under a roof. Sometimes architectural spaces are able to make us relax such as a sleeping porch or balcony overlooking a beautiful view, and there are other spaces such as great rooms that although well intentioned, create anxiety and chaos when used by more than two household members because of the incompatibility of uses. A good lesson to be learned is the Japanese aesthetic outlook of "wabisabi" which is to embrace imperfection and find beauty in the things that are transient and not considered complete. In this vein, one acknowledges that a house is a living organism that is meant to change everytime we use or occupy it. Our acceptance and celebration of good traits our house may posses is what makes the difference between a house and a home. A house is much more than we may believe. It is the stage for our lives, and it interacts with us almost like a member of the family.

t’s not secret I love the idea of recycling and reusing scraps from my custom countertop business. I started many moons ago making dog feeders with the leftover scraps of a customers countertops. It was a nice gift to give to the customer then a cutting board. I actually noticed they have a dog and knew to roughly make the height of the dog dish about 4-5” lower than the top of the dogs shoulders. What was nice was that when I made a new kitchen for a customer whether the cabinets are made with bamboo, Kirei, Coconut Palm or even the popular materials like Oak and Birch..I saved pieces to make the base of the dog feeder and did the same for the countertops. GOOD THINGS IN SMALL PACKAGES JOSEPH PUBILLONES

T

he saying goes that "Good things come in small packages." That is true when it comes to perfume and jewelry, but in regard to real estate, it's something completely different. Everyone always wants more space, but it is amazing to compare what is considered adequate living space is different

places around the world. In the United States, an average home is 2300 sq. ft., which is considered the norm...but size is also dependent on where in the U.S. A New York City one-bedroom condo averages at 600 sq. ft. However, in Florida, the same onebedroom condo is usually 1000 sq. ft. In Spain the average home is 1100 sq. ft. with one bedroom condos averaging around 400 sq. ft. Small homes can be comfortable, wonderful and extremely stylish. Designing a small home has its challenges. But believe it or not, the opportunities that a small home can offer are amazing. Sometimes pocket-sized spaces

are able to make the most of design. To live in a small space requires a very clear idea on how to live and how to decorate. First tip for decorating a small space is to consider the space in terms of multitasking potential. For example, this could mean using a sofa as everyday seating during the day, as a dining banquette at times and as a bed during the night. With that could be a dining table that doubles as a dining table during meals, then as a desk when needed and as an area to stage projects or work at others. The second thing to take into consideration is the fact that storage is always lacking in small spaces. One must look to every nook and cranny for viable places to store things. Under furniture, behind drapery, and vertical space need to be investigated to make small spaces work. Sometimes this means giving up expected furniture such as nightstands in favor of chests or bookcases. Boats offer a great lesson for those decorating small areas, where there is a dedicated area for everything and no room for wasted space. The third thing to consider is that contrary to the belief that one larger space is better when it comes to separating functions, which is an important component of small spaces. Sometimes the layout of a small space has too many walls, but on the other hand those walls may offer the psychological idea of more space. When walls are lacking, the idea of space may be created by hanging floor to ceiling drapes, which create the illusion of walls. The fourth tip is about imagining space. I am not a promoter of walls of mirrors, but mirrors are another source when designing in tight quarters. Strategically placed mirrors can create the vision of more space. They can actually make it seem as though there is more space by reflecting a window or reflecting existing doorways to multiply the number of architectural openings. Ultimately, small spaces should be approached with outside the box creativity. The most successful small spaces are the ones that make you think "Oh, I would have never thought of that!"

CLEARLY SPEAKING BY JOSEPH PUBILLONES

E

very couple of years there are trends that develop in the furniture industry that can't be ignored. Sometimes it's a theme such as Shabby chic, Tuscan Country or French Provincial. Other times the trend is in the accessories world such as zebra covered anything, red corals and who doesn't remember the monkey trend. Monkeys were literally on everything... on fabrics, lamps and dishes. Lately there is hardly a furniture catalog or decorating magazine that doesn't feature polyacrylic furniture and accessories. In 2002, Phillipe Stark was credited with the revival of plexi. His ghost chair was a Louis style chair, which transparently followed the outline of the classic chair. In 2007, Alexandra Von Furstenberg designs a series of consoles in candy colored lucite which marks the return of this material to the forefront of the furniture market. Those of you that were around during the 1970s and 80s remember the clear plastic also known as lucite, Perspex or plexiglass and their use in interior design during the golden and glamorous days of disco. This age of sparkling opulence saw sleek designers such as Charles Hollis Jones, Vladimir Kagan, Karl Springer, Gaetano Scioleri and Gabriella Crespi designing masterworks using plexiglass in their furniture and accessories that today are considered highly collectible. This polyacrylic is nearly 80 years old. Originally this material was widely used in aviation and for military uses in windshields and airplane parts. Throughout the 1930s, plexiglass was used in fashion for buttons, handbags, and costume jewelry. During the Art Deco period, lucite was widely used throughout Europe and developed in the the United States by the Hungarian interior decorator and stage designer Ladisla Medgyes.

Medgyes uncovered the product while developing containers for the Helena Rubenstein's cosmetic line, and was intrigued by it such that he designed many pieces of furniture for Rubenstein's residence. Chairs, headboards, tables were all custom designed of this wonderfully clear material. Clearly speaking the benefits of using these lucite pieces of furniture is that because of their see through nature, they seemingly take up less space in a floorplan, and no matter whether 80 years ago or today have a futuristic sexy appeal. From the streamline designs of the 1930s to the modern projections of midcentury plexiglass, the sure thing is that they have become endeared to our hearts and have become design classics that mix well with the most precious of antiques.

IDYLLWILD, CALIFORNIA: MOUNTAIN GRANDEUR AND ARTS MECCA BY ATHENA LUCERO

T

here is only one Idyllwild in the world, according to Google, and during a weekend visit with friends at their home in this bucolic mountain town my husband and I rediscovered the dramatic San Jacinto Mountains, Southern California's second-highest mountain range, at 10,834 feet above sea level. Strawberry Valley, as Idyllwild was first known, was already attracting tourists in the late 1880s. With a name like that, who wouldn't be lured to such a place? By the early 1900s it was advertised as the "Alps of Southern California." Not a ski resort and still quietly famous for its pristine beauty, Idyllwild offers

more than you might guess. About an hour's drive from Palm Springs and two hours from Los Angeles and San Diego, Idyllwild's landscape -- lush canopies of ancient ponderosa pines, black oaks and sweet-smelling cedars; a gentle flowing stream; and legendary Tahquitz Peak towering above at 8,846 feet is renowned among artists and mountain-climbers. It is also known as a "sky island" because the forested mountaintop is surrounded by a sea of desert below, creating a unique bioregion, one of the few that exist in the world. With a population of just over 3,800 inhabitants there are no traffic lights, fast food or chain stores, which lends to its unspoiled appeal, drawing not just naturelovers but city slickers like me in search of an easy getaway to disconnect from a 24/7 plugged-in world. But modern tourists were not the first to discover Idyllwild. Millennia before, the Cahuilla Indians escaped unbearably hot summers in the lowland desert and migrated uphill to this alpine paradise, where they also gathered winter provisions, hunting small game and foraging acorns. Bedrock mortars - otherworldly looking flat rocks with symmetrical holes that were used for grinding the acorns -still remain in the area, remnants of the Cahuilla existence.

In the middle of the woods, our guestroom window framed mystical Tahquitz Peak (pronounced TAUK-wich) named after the legendary Cahuilla chieftain. Also known as Lily Rock, the massive granite formation was the birthplace of technical rock-climbing in America that began in the 1930s. By 1950 the Yosemite Decimal System -- the international standard that grades the difficulty of climbing routes -- was created. It is here that Yvon Chouinard (of Patagonia clothing fame, environmentalist and equipment manufacturer) along with fellow godfathers of American rockclimbing, Royal Robbins and Tom Frost, pioneered "clean climbing," an ethos respecting the fragility of the wilderness that encourages light use of equipment on the mountain to minimize rock damage and human impact. Idyllwild is also a resupply town on the famous Pacific Crest Trail, the 2,659-mile-long hiking route through national parks stretching from the U.S.Mexico border to the U.S.-Canada border. Commonly known as the PCT, it enjoyed the Hollywood spotlight as the setting for "Wild," the 2014 movie based on Cheryl Strayed's book of the same name. Reese Witherspoon snagged a best-actress Oscar nomination for her portrayal of the author's arduous and spiritual 1,000-mile


solo journey on the PCT. The town warmly welcomes the approximately 1,000 hikers a year who come off the PCT after weeks or months eager to shower, do laundry, buy provisions or gear, catch a hearty meal - and share tales with locals about their wilderness treks. While at Devil's Slide Trail, the most popular of Idyllwild's dozen wilderness hikes (it leads to the Palm Springs Aerial Tramway), we met such a PCT-er who had just hiked 800 miles. "How far is Idyllwild from here?" the lean, friendly, 20-something man from Maryland asked. It's a long walk we responded, then invited him to load his backpack into the Jeep and together we drove into town. Technically speaking, Idyllwild is the largest in a trio of unincorporated communities in Riverside County that includes Pine Cove and Fern Valley. You won't find a city council or chamber of commerce here, but there is an unofficial (albeit fourlegged) official -- Mayor Max, a regal Golden Retriever, the town's ambassador and most popular figure. Friendly and accessible, he sports a tie, welcomes photo ops and can be spotted riding around town in the back of a shiny white pickup. With a mayor like Max, there's a lot to love about this unstuffy and creative town that has evolved into a thriving arts and

culture community and ranks among the 100 Best Small Art Towns in America. Our weekend was also a "pilgrimage" to Idyllwild's annual Art Walk and Wine Tasting. Organized by the Art Alliance of Idyllwild, this September will be the event's 19th anniversary as the village transforms into an open-air art gallery exhibiting extraordinary works by local artists - paintings, sculptures, jewelry, ceramics, photography and more. "My son and I look forward to this event every year!" a Palm Springs resident enthusiastically shared as we crossed the street to queue up for our first wine sampling. With wine glasses in hand, we visited cafes, the Idyllwild Historical Society, shops and art galleries, visually feasting on original art pieces and meeting their creators while sampling a showcase of impressive vintages produced by wineries in the nearby wine countries of Temecula and San Diego. While perusing art exhibits on the grounds of the historical society, I gave up my place in the wine-tasting line and wandered through the back door of a small 1930s wood cabin a few feet away. Once the summer home of a family for three generations, it was purchased by the organization in 2001 and given new life as a permanent museum (admission is free). Oblivious to the crowd outside; wallto-wall artifacts; historical documents;

photographs; and logging, mining and mountain-climbing histories took me back to a thriving Strawberry Valley. Who knew this high country was the center of production of gorgeous Arts and Crafts-era log furniture also on display? And behind the rustic museum a 21stcentury climate-controlled archive and research center was built in 2009 to house 7,500 more historical items, an achievement that garnered awards from the Society of California Archivists and the California Council for the Promotion of History, becoming the first local independent historical society in the state to receive such honors. Art is a year-round way of life here, from concerts, stage productions and regular art fairs in the park to the internationally renowned Idyllwild Arts Academy, where young artists hone their talents at the residential college preparatory high school. And for artists of all ages and skill levels, the Idyllwild Summer Arts Program awakens the creative juices with high-quality instruction. Art in all its forms can be enjoyed at just about every turn around town, from galleries to unexpected hot spots like Higher Grounds Gallery at Idyllwild Coffee Roasters, Sky Island Natural Foods Market, the array of wonderfully eclectic dining spots -- and now the exciting Middle Ridge Winery and Gallery, an extraordinary pairing of tasting room and art gallery. "Idyllwild Deer Sightings," unveiled in 2015, is a permanent public exhibition of the Art Alliance of Idyllwild -- 22 life-size aluminum deer depicting all things Idyllwild painted by local artists and placed at various locations around town. Outside La Casita Mexican Restaurant I spotted "Rocky," a white deer painted with a fantastic scene of rock-climbers, and met Rocky's creator, Neil Jenkins.\ Jenkins spoke passionately about how much he and his wife Donna (both are artists and mountaineers) love living in Idyllwild.
