Editor’s Message Were you aware that a child is abducted every 40 seconds in this country? Moreover, did you know that over 40% of these children are African American? If not, you are not alone because few people are aware of this epidemic. The truth is that African American children receive limited media coverage when they go missing. Sadly, without this exposure it is less likely that they will be safely found. The staff at Peas In Their Pods works diligently to spread awareness about this issue by alerting media outlets as needed when African American children are missing or abducted. Our mission is to make communities aware of the plight of these children, and to make them a national priority. Peas In Their Pods are concerned about all our children, the organization strives to bring awareness to any child missing, no matter, race color. The commitment is to keep the public on alert and aware. There are many organizations across this country with missions are to provide resources to families in helping to building stronger and healthier children. Community based organizations are key factors in developing opportunities that will help our children advance to higher levels of achievement, without these additional support systems our children and families would lack the most. It's the time of year when I love making a few special meals for Mother's Day, Father's Day, or just a little something special for a few friends. Here are a couple of extravegant recipes that are not as complicated as they sound. The secret is to read through the entire recipe, prepare your ingredients and set them aside, and take it step by step! Organization is definitely the key to success. Give these a try and enjoy some quiet time with a few special people in your life. Next month we'll be ready to fire up the grill with some terrific recipes for 4th of July!! SEA BASS IN A RED WINE REDUCTION 2 fillets (5 oz each) Chilean Sea Bass or Halibut 1/3 cup pancetta cubed 3- 4 shallots unpeeled 6 white button mushrooms (whole) 4 cloves of garlic unpeeled 2 cups of red wine 2 tbs unsalted butter 4 tbs olive oil package of pre-washed spinach 2 tbs of water or more for spinach course salt and pepper to taste 18


This dish can be broken down into 4 elements: 1.

Pancetta & Vegetables

Blanch shallots (skin on) in boiling water for 2 minutes. Remove skin and set aside. Cook the pancetta until crisp and set aside. In the same pan, add 2 tbs of olive oil and sautĂŠ shallots, garlic and mushrooms until tender. You want the shallots to caramelize. Set aside and try to keep warm. Season with salt. Don't add salt while cooking because it will draw out the moisture from the mushrooms and make the whole thing too watery to "grill". All in all, it probably took 10-12 minutes to get the vegetables nice and tender. 2.

Wine Reduction

In the meantime, boil 2 cups of red wine in a small pot until it's reduced to 1 cup. Pour the reduced wine into the pan used for the veggies and deglaze the pan. Scrape the bottom and sides. You'll notice that the wine will start to thicken. Set aside. 3.

Fish

You can also use Halibut. Heat up 2 tbs of butter and 2 tbs of olive oil. When it starts to foam up, place salted and peppered fillets in the pan. Cook each side for about 3 minutes or so (4 minutes for thicker cuts), be careful not to over cook. Cook spinach while fish is cooking. 4.

Spinach (Cook while the fish is cooking)

I used an entire package of pre-washed spinach. Put a couple of tablespoons of water in the pan with th spinach. Turn the heat up to high and shake it until the spinach starts to wilt. Throw in a pinch of salt, you'd be surprised how quickly it cooks. Drain well. Pile a small mound in the centers of each serving plate. 19


How to assemble the dish: Place fish on top of the spinach. Spoon over vegetables on top of the fish. Drizzle the wine sauce around and on top of fish and veggies

CHEESECAKE: 16 ounces cream cheese (at room temp) 3/4 cup sugar 1 tablespoon flour 3 eggs 1 teaspoon vanilla extract

CARROT CAKE: 3/4 cup vegetable oil 1 cup sugar 2 eggs 1 teaspoon vanilla 1 cup flour 1 teaspoon baking soda 1 teaspoon cinnamon 1 dash salt 1 (8 1/2 ounce) can crushed pineapple, well drained with juice reserved 1 cup grated carrot 1/2 cup flaked coconut 1/2 cup chopped walnuts

PINEAPPLE CREAM CHEESE FROSTING 2 ounces cream cheese, softened 1 tablespoon butter, softened 1 3/4 cup powderd sugar 20 1/2 teaspoon vanilla 1 tablespoon reserved pineapple juice


Directions To make cheesecake, In large bowl of electric mixer, beat together 2 pkgs cream cheese and 3/4 cup sugar until smooth. Beat in 1 tablespoon flour, 3 eggs and 1teaspoons vanilla until smooth. Set aside. Meanwhile prepare Carrot Cake: In large bowl, combine oil, 1 cup sugar, 2 eggs and 1 teaspoon vanilla, blending thoroughly. Stir in 1 cup flour, baking soda, cinnamon and dash salt, mixing well. Stir in drained pineapple, carrots, coconut and walnuts. Spread 1 1/2 cups carrot cake batter over bottom of greased 9-or 9 1/2-inch springform pan. Drop large spoonfuls of cream cheese batter over carrot cake batter; top with large spoonfuls of remaining carrot cake batter. Repeat with remaining cream cheese batter, spreading evenly with a knife. Do not marble with a knife. Bake in preheated 300 degree oven 1 hr. and 20 minutes or until cake is set and cooked through. Cool to room temperature, then refrigerate. When cake is cold, prepare Pineapple Cream Cheese Frosting. In a bowl of electric mixer, combine 2 oz cream cheese, butter, powdered sugar, 1/2 teaspoon vanilla, 1 tablespoon reserved pineapple juice and dash of salt. Beat until smooth and of spreading consistency. Frost top of cheesecake. Refrigerate 3 to 4 hours before serving.

Rilya Alert Criteria •

The abduction is of a child age 17 years or younger

The parent must have contacted law enforcement to report child missing.

A RILYA Alert may also be issued if the child is classified as a runaway by the police. If the parent has reported missing child and has convincing evidence that child does not have a history of running away, an alert will be initiated within the 1st hour. We recognize that at times, not all information is readily available (ie. license plate numbers, name of abductor, or witness to abduction. In such cases, the available information will be reviewed and verified prior to RILYA Alert.

The law-enforcement agency believes the child is in imminent danger of serious bodily injury or death.

All children of color meeting the criteria for the Amber Alert will also receive the RILYA Alert If these criteria are met, alert information is assembled for public distribution.
