or some, a magical connection is made on a first date. Symantha Wilkins and Randy Young, married June 30, 2012, were just acquaintances at Sault Area High School, Symantha said. “In 2010, I was in my senior year of college at Central Michigan University and noticed on Facebook that Randy was down visiting his brother at CMU.” Symantha said she “nonchalantly mentioned I was here and he asked to meet up for a drink.” Following that date, Symantha said she was anxious about walking across the dark parking lot alone. Before being picked up by his brother, Randy walked Symantha to her car and without being asked, opened the car door. “He has had my heart ever since. I called my mom that night and told her all about him!” “As for our engagement ... it was a fairy tale come true,” Symantha continued. “Randy and I planned a European cruise and flew into Venice where our ship left for a 12-day adventure

around Europe.” Spending the first night of vacation in Venice at a hotel on the Grand Canal, Symantha said the couple got all dressed up, had dinner and decided to go for a gondola ride on the Grand Canal. “While we were on the gondola enjoying the beautiful scenery, Randy got down on one knee and said he had something for me. It was the most breathtaking and exciting time of my life, and most of all — a jaw dropping surprise!” Symantha and Randy had

talked about getting married but “with all our money going toward the trip, I was not expecting a ring. Randy picked out my ring on his own and did an incredible job. It is absolutely stunning and more perfect than I could have imagined. Together we picked out our wedding bands.” Engaged April 30, 2011, Symantha said she teases Randy to this day “because there were some very nice looking gondoliers and Randy happened to pick the one who was an older gentleman. I don’t think he wanted my decision to be a


tough one.” The Youngs were married a short two months from their fairy tale engagement. “I knew I wanted an outdoor wedding on the water ... but not on the beach,” Symantha explained. “We were married at Lighthouse Point in St. Ignace on June 30, 2012. It was stunningly beautiful and everything we wanted for our wedding. Lighthouse Point offered a gorgeous spot on Lake Michigan with the most perfect grassy area for a ceremony. Our wedding reception was also held on the grounds under a tent. “There are cabins on the grounds so our families and bridal party were able to stay there from Thursday until Sunday. Since we were traveling home from Texas this was the perfect way to make it a family reunion/ wedding extravaganza,” continued Symantha. As with many weddings, family members played special roles in the joyous occasion. Symantha’s mother handmade the couple’s invitations, wedding programs and a brooch bouquet for her daughter. “My mother made my wedding a dream come true. My bouquet sits on my mantle at home with more meaning than ever. My mother passed away from a short battle from cancer this past September ... she put her heart and soul into making it our perfect day and it was just that!” A string quartet played “Ave Maria” as Symantha’s processional. The hymn holds a special place between mother and daughter. Randy’s mother, Lois Kenney, is an ordained minister and performed the wedding ceremony, tailored to the couple, their personalities and as a true expression of love. Symantha said she and Randy chose the readings and her mother-in-law “did  Continued on page 8 Up North Bride

the rest. I loved it and wouldn’t have had it any other way. Randy’s mother is truly my second mother and did a wonderful job for us.” “My aunt gave the prayer. Both the setting and ceremony were so intimate,” Symantha added. The Youngs chose photographer Jim Hoffman of Jim Hoffman Photography in Sault Ste.

Marie. Symantha said that he had taken her picture as a newborn and all those leading up to her wedding photographs. Currently residing in Dallas, Texas, Symantha is a speech-language pathologist assistant for Atlas Pediatric Therapy and her husband is a technical representative for Duro-Last Roofing. Does she have any advice for newly engaged couples?

“My advice for newly engaged couples would be to embrace every step of the way, know that the wedding day is about you and your fiancé and many people will have opinions about what you should do, but go with your heart! Be patient with your fiancé, communicate, come to agreements and meet halfway ... embrace your love and everything will be perfect! p

This spring and summer look toward local seasonal flowers, bright hues and rustic garden inspirations. “For springtime weddings, I love using seasonal flowers like tulips and irises. They’re beautiful and abundant, so why not? For summer weddings, I love using local flowers (especially from my grandpa’s garden!). Dahlias, snapdragons, asters and zinnias are perfect focal flowers. Salvia, snow on the mountain, gomphrena and dusty miller all lend incredible texture and interest to a bouquet. I just love that overflowing, trailing, garden-y look in a bouquet or centerpiece. ... yum!” said Sydney Wormell, owner and designer of Upsy-Daisy Floral in Boyne City. Jamie Beth Platte, owner and designer at A.R. Pontius Flower Shop in Harbor Springs, notes that while many brides still prefer a classic style bouquet, the organic, “un-arranged” look has become very popular. “We love to use dahlias, garden and classic roses, hydrangea, dusty miller and we have

always loved ranunculus at Pontius. I also like to use greens that can be found locally; peony greens and baptisia are my favorites,” said Platte. Designer and manager of Flowers by Josie in Gaylord, Martin Van Til, AIFD, CFD points out that a lot of destination weddings take place in Northern Michigan. The inspiration can have a garden look to rustic themes in bright color combinations. “Most of the weddings are summer garden looks using roses, hydrangea, gerbera dai-

sies, ranunculas and a variety of accent flowers. I always think hydrangea as a background flower (either, cream, green or blue) is perfect and is fluffy and lavish. Roses are a great focal flower because they are available in so many colors and tones. I also like ranunculas, oriental lilies and tulips,” said Van Til. And, if you want a more casual summer approach, Van Til recommends sunflowers, solidago, gerbera daisies and daisy poms. When it comes to flowers and trends, things are always changing.

“Corals and purples seem to be pretty hot right now. Peonies are always a popular flower, but they have such a limited season! I end up using a lot of garden roses in place of peonies (which are available out of season, but end up with a hefty price tag since they have to be flown in from Alaska). Pinterest seems to be the most prominent influence that I see, so I get a lot of requests for burlap, lace, twine and mason jars. Common themes seem to be vintage, shabby chic and rustic,” said Wormell.

And, Platte notes that while baby’s breath is huge right now, five years ago no one wanted it. When it comes to the budget, Van Til will do what he can to make the bride and groom happy. “Most of the trends in the magazines are very pricey, so I usually have to convey the look and feel, but not copy. For example, a publication may show a gathered bunch of calla lilies just banded together tastefully without telling the reader that the cost could be several hun-

dred dollars. When the bride and groom come in with a much lower budget, they are disappointed. I will show them the same look with maybe all white tulips (for spring only). When it comes to centerpieces, I also started offering that if they purchase the bulk flowers from me, I will show them how to create a simple table arrangement that they can duplicate and choose the best type of flowers for optimum ability,” said Van Til. But, because they can get lost against a white dress Wormell suggests mixing up the flower variety for more texture. “Introduce some gray or green foliage to make it stand out a bit more. Most brides I’ve worked with want bouquets that have some amount of color in them, whether a white bouquet with pops of colorful blooms, or an all color bouquet,” added Wormell. When it comes to the bridesmaids’ flowers the bouquets should compliment the bride’s bouquet says both Platte and Van Til. “I suggest coordinating the groom’s boutonnière to the

bride’s bouquet and groomsmen to the bridesmaids. I almost always do all white corsages and boutonnières for the moms and dads so they won’t clash with the bridal party. Usually the moms don’t know what they are wearing until just before the wedding so all white will go with everything,” said Van Til. Platte is seeing new requests from mothers and changes for boutonnières. “I’m seeing more mothers that want small bouquets as opposed to corsages, and I love this! Boutonnières are getting more creative, often with a variety of textures and wrap to match the bridesmaids,” said Platte. Wormwell describes other concepts that she is seeing for

the bridal party: “Boutonnières with funky textures and foliage are fun and different — think craspedia (aka billy balls), baby’s breath, grasses, berries and twigs. And it’s always a special touch to incorporate charms or jewelry into these pieces. Corsages for mothers and other important female participants are popular, but brides could also opt to gift them a hair flower or a small bouquet or flower to carry.” Whichever way you chose to go, your floral designer will be there to assist you along the way. “Each couple is different and flowers have a unique way of showing a couple’s personality since the possibilities are endless!” added Platte. p

p North Bride has the privilege of following Jordan Spence, Petoskey News-Review reporter and Graphic editor, as she begins planning her Up North wedding along with financé, Nelson Knill. We will begin chronicling Jordan's journey in this, our Spring-Summer 2014 Up North Bride. We will continue to share Jordan's planning for her July 25, 2015, wedding in our Fall-Winter 2015 and Spring-Summer 2015 issues.

Up North Bride: Tell us how you two met! Jordan: I didn’t really think twice about a private message from this guy named Nelson Knill on match.com. In fact I ignored it completely because, he was a year younger and asked me out in the first message. A little forward for my taste. I was also busy between work, school and writing for the school’s newspaper. I didn’t have time to date. A couple months later friends dragged me to a bar I hated. He was there that night too, I didn’t see him, but he saw me. But it had been a bad night and he didn’t feel like meeting anyone. A month after that it was a couple days before Christmas. Nelson and his brother were

about to drive home to Gladwin and stopped at the restaurant I waitressed at along the way. As I was sweeping the floor I looked up as a couple of customers walked up. They were cute and luckily the manager seated them in my section. The whole time I was working I kept thinking to myself. “Please leave me you number. Please leave me your number” (which only seems to happen when the customer is weird). The boys left and as I looked at the credit

card receipt he had written, “I remember you from match.com. Here’s my number, let's speed up the process.” It took me about a day to get up the nerve to call him, but he answered, we went on a couple dates and have been together since. Up North Bride: Describe your engagement. Jordan: On Saturday, Dec. 28, we were getting ready to leave for my family’s Christmas celebration in Grand Rapids.

The whole day he was acting squirrely and nervous. He had some long excuse about a package from his Mom he had to pick-up and he was on the phone with the package company most of the morning. As we stopped to fill the gas tank one of our songs came on the radio. “Isn’t this a beautiful song? Isn’t it very meaningful to us?” he asked. I replied, “Yes of course.” I then turned around to face him and he was holding a ring. I said yes.

While an engagement at a gas station may not be everyone’s romantic fantasy, it was mine. It was intimate, just us two. Nelson later explained to me he proposed there because he was so excited and couldn’t wait any longer. I had also almost found the ring multiple times and he didn't want the surprise to be ruined. Up North Bride: What came next? Jordan: I would say our alterna-

tive engagement story also represents how I approach planning as well. The first thing we did was narrow down the time and location of the wedding. In order to take our time planning and saving for the wedding we decided to have it in the summer of 2015 in Petoskey. Even though most of our family live downstate it seemed wrong to not take advantage of the beautiful area. We decided to have the reception at the community  Continued on page 18 Up North Bride

Continued from page 17 center building at the Emmet County Fairgrounds after I read about it on a wedding community board online. By choosing the reception location first it helped us keep our maximum number of invited guests at 300 people. Creating the guest list was surprisingly simple — we created a spreadsheet in Google Drive so both Nelson and I could add people. Because we're paying for the majority of the wedding we've had to stay firm on who we can and can't invite. I also think it's important to prioritize what you want and what you don't want. We both agreed table favors are unnecessary. We also don't need to spend time and money on seating arrangements and place cards. This way we can spend more money on things we feel are important — like the atmosphere at our reception, the food and beverage. We both love music and hope our guests will want to dance! We are looking forward to celebrating our special day with family and friends. p

She and her husband just moved to Northern Michigan when he accepted the position as executive chef at the Perry Hotel in Petoskey. “I specialize in creative and new flavors and I love to add fresh flowers to my cakes to match the colors of the bridal party,” said Porosky. “I also like to create a sweets table with a chocolate fountain using fine French and Belgium choco-

lates.” Chai is a new flavor the Porosky has found some brides like. She also likes to make fruit fillings for the cakes with raspberries and strawberries or add Bailey’s Irish Cream to the filling. decoration. Sea salt and chocolate top the design. Bella e Dolce offers numerous flavors and combinations to satisfy any customer. They and their clients often get inspiration from Pinterest on the Internet. Since the Dutch Oven Bakery offers a wide menu of pastries, Sirvaitis has found some brides want doughnuts and a small cake for the pictures. Another surprise order was for a chocolate walnut zucchini cake. Gluten-free, dairy-free, eggfree, and vegan confectioneries are available at all the bakeries. “We have done rustic cakes for weddings at the Grand Hotel and very elegant traditional cakes for very simple small weddings,” said Erin Sonntag about the enormous variety of Bella e Dolce’s orders. After the tastings, the planning, and the preparation of these wonderful cakes and confectioneries, transportation is a major consideration. “For a large wedding of 450 people at Bay Harbor I created 3-tiered truffle tower. Getting it there was challenging,” said Glass. Bella e Dolce frequently encounters such challenges. “Yes, we have mastered the delivery system of the boatbike cart transportation system to the island,” Sonntag said. After 17 years in business they have never had a mishap. That is quite a feat since last year alone the company did 312 weddings from Mackinac Island to Traverse City. All of these efforts are to make everyone happy at these festive occasions. Just seeing pictures of these cakes would make anyone happy. p

or some brides, wedding gown shopping is a wonderful experience shared with their mother, maiden of honor or bridesmaids. To choose that very special dress can be overwhelming — so many to choose from — but most brides will say they “knew” the right gown as soon as they tried it on. To choose the dress for you, begin by defining your body type. There are silhouettes that will compliment it. Of course, there are no hard-fast rules so if you love the dress, it’s the dress for

Gerri Belfy, assistant manager of Petoskey Bridal, said gown trends for 2014 include “Lots of lace. Ruffles are quite popular and we’re seeing embroidery on

dresses, dresses made of chiffon.” Belfy says fit and flare silhouette is very popular among Northern Michigan brides. “Ivory and gold are very popular wedding gown colors. What it is: Flares out gently from the shoulder creating a subtle A shape

What it is: Not as close-fitting than a mermaid or sheath, the bodice has vertical panels of fabric and then the skirt flares out gently — an elegant style

Belfy suggests allowing 8 months to one year, ideally, to order a wedding gown. “This gives a bride time to have the dress arrive, to have time for any alterations that may be required.” Madison Fitzpatrick, sales associate at Petoskey Bridal, echos that “brides should order their dress as soon as possible.” This allows the bride to choose the color or colors of bridesmaid dresses, and order tuxedos for groom and groomsmen which complement her gown. “Many of our brides and their grooms are choosing suits instead of tuxedos, for a lighter, spring and summer like, look,” Fitzpatrick said. In addition to the selection of tuxes and suits for men,the salon in Petoskey offers an array of bridesmaid, flower girl, mother of the bride ( and mother of the groom) dresses. It also has carries shoes, wedding jewelry, tiaras, veils and more. Some brides are choosing the color, and type of fabric of the dress for their bridesmaids — allowing the bridesmaid to choose the style of dress which looks best for her. Restaurants provide creative options when catering the big day

n recent times the value of a unique wedding experience has grown tremendously. From the decorations, to the venue, many brides value a personalized wedding experience. This personalization can apply to the menu as well. The search for a unique wedding menu can be a challenge. But brides don’t need to look far for inspiring, alternative ideas. The answer may be in the menu at your favorite restaurant. “We have do have a catering

menu, however the selections are limited,” said Julie Adams co-owner of Julienne Tomatoes in Petoskey. “I like to sit down with the bride and groom and find out what they want to do.” She noted the weddings the restaurant caters tend to have about 150 or fewer guests. “I call us a boutique caterer, a bit smaller and a bit personal,” she said. “If you don’t just want to be one number in a massive number of events then choosing a restaurant is a good idea. I just think it gives you more flexibility.” Over the last few years Adams

noted couples have moved away from traditions and become more adventurous. “We’ve had so many different menus and menu styles,” she said. “For one wedding we did a taco trio dinner in a backyard. We created this awesome meal and served it family style. Then for the dessert instead of a cake they had a sweets table.” Many times brides and grooms have a favorite dish which they like featured too. “It seems like these days a lot of young folks like to feature local products, they also love to customize their wedding,” she said.


Jennifer Willingham, owner of Jeni’s in East Jordan has also seen the growing trend of customization when she began to cater three years ago. “We typically cater smaller weddings of about 200 people or less. We don’t have a set menu, we create the menu specific to the individual couple,” Willingham said. “I think a lot of times, by choosing to have a restaurant cater, brides have more options and the ability to be more flexible.” Most of the time brides that come to Willingham are looking for one or two things; Either they’re budget conscious, or the bride has something specific in mind. “I can make almost anything,” she said. “I had somebody who came in to tell me they were having a fall wedding. From there we brainstormed to create a rustic Italian theme to go with the time of year.” Willingham also had another couple tell her they were not a traditional bride and groom. So the created menu reflected their personalities. Willingham constructed the “ultimate burger bar,” which consisted of different kinds of toppings, buns and condiments. “If I could give brides any advice when it comes to catering, I would say they should be as specific as they can about their expectations,” she said. “What are you really looking for? For example some brides are looking to be more budget friendly. I would want someone to tell me that right up front. If brides could be very specific it could make for a much better experience.”

Creative menu choices don’t have to stop at dinner. Drue Wright co-owner of Happy’s Taco Shop, a food truck based out of Boyne City, said they’ve been asked to provide wedding guests with a late night snack. “We haven’t catered a full dinner, but we have been asked to make late night snacks,” he said. “Our menu is always changing but we’re willing to work with people on what they like and what we can offer. We’re just try to keep it unique and keep everything changing while we use the best ingredients we can.” These are not just the average beef, cheese and lettuce

tacos, he said. “We’re mixing the meats and pairing them with things that go well. We like to use different veggies that you typically wouldn’t on a taco. The sauces, and tortillas are made by us.” Wright said the couple would pay for the cost of overhead, pay for a certain amount of tacos and after if the number of ordered tacos exceeds that number they will be charged per sale. “It’s great to have something different and to keep it local,” he said. “It’s something fun and different for the late night snack. Couples just like to know that the food will be of high quality.” p

said. "Our father operated Keweenaw Star Excursions from Door County in Wisconsin, and now we're located in Charlevoix." The Keweenaw Star is a 110-foot, 130-passenger, excursion vessel suitable for private charter for special occasions. It has a full bar, air conditioning and heat with a dining room,
