NIC INSTRUCTOR CRAFTS NATIONAL CURRICULUM Christine Lilyholm knows what it takes to be a master chef. The professional cook instructor at North Island College is helping shape curriculum for cooks across Canada.

The Canadian Tourism Human Resource Council recently selected her to review the National Occupancy Standards for the emerit Line Cook program, an Ottawa-based online training program.

The Ottawa experience confirmed her belief in NIC’s programs which, along with local students’ passion for food, creates a perfect recipe for student success.

“We are very fortunate to have Chef Lilyholm providing instruction at NIC,” said Cheryl O’Connell, NIC’s Dean of Trades and Technology. “She brings a wealth of industry knowledge, instructional expertise and passion for the culinary profession.” The program is being updated to meet increasing national demand for cooks. In BC alone, the provincial government estimates

“You’ve got to have passion, love food and love what you do,” she says. Lilyholm spices those ingredients with a willingness to learn, understanding, and the ability to work hard and bakes it into NIC’s Professional Cook program, where she sets the table with real world experience and – voila – serves up chefs.

“I always remind people TV is not real life,” she says. “Students think they’re going to become the next Iron Chef but you need to work to get on top of that ladder.” Lilyholm should know. Her career began in 1993 in Manitoba. She began her apprenticeship in Victoria and worked up and down the Island. After a decade in the industry, she began to teach, beginning her current NIC position in 2004. She has since trained 170 rising chefs in three levels of professional cook training at NIC’s Campbell River campus including more than a dozen students competing regionally and provincially. Co-operative Education (co-op) combines academic studies with practical experience. As a co-op student, you alternate periods of full-time study with full-time paid work experience related to your program of study. Recruitment for co-operative education takes place during the spring and summer season. Tourism and hospitality students are required to complete a co-op placement as part of their diploma.
