By Dave Scott Ten years strong… as businesses go in this day and age, surviving and flourishing is a milestone. At any one time within those ten years, just one set back could have spelled the end. But when Jeff and Tammy Scott and I got together to talk about their business, Great Lakes Physiotherapy and Sports Medicine, Jeff explained that they just knew their business was going to make it. Both kind of have that calm smile on their faces as they think back to their small beginning over on Union Street in Simcoe, across from the post office… Jeff doing the physiotherapy, chatting up as many local doctors as possible to let them know Great Lakes was there to help folks with everything from sports injuries, work related recoveries, to helping folks rehabilitate after accidents… Tammy taking care of the bookwork… Carol Pieters was their first employee and kept busy doing the bookings (Carol is still working with them)… but before we get too far into the story… perhaps we should get to know Jeff and Tammy a little more. Tammy Culver was born and raised in Simcoe. She attended Simcoe Composite School before heading off to Waterloo to study Kinesiology… that is where she and Jeff met… after Jeff’s studies, it was off to McMaster University to study Physiotherapy… school finished and the two began working. It wasn’t long before the couple found themselves work in Texas… opportunities were there, so for five years that was home… in that time their first two children were born. In 2001, the couple decided to return to Simcoe and start their own business… hence Great Lakes Physiotherapy & Sports Medicine was born May 23, 2002. A year later they had their third child. Great Lakes Physiotherapy & Sports Medicine began to grow almost immediately and Carol soon came on board. Shortly after that, Jay MacDonald joined the team, bringing with him, his business at the time, The NEXT Season . With the solid reputations of both Jeff and Jay in the field, they watched as the business quickly grew. Two and a half years later

they had outgrown their facility on Union Street. They headed over to Talbot Street in the building directly across from the rink… perfect location… eh! It was here that the business has flourished beyond belief. Jeff and Tammy truly believe it is because of the great staff they have, twelve in all… over the years, they have created a solid communication base between all the staff that creates top quality care for all the clients. Their staff is encouraged to continue developing their skills. Jeff and Tammy recognize that it is important to use all of the specialties their staff can offer. Off topic a little… last year when I was undergoing treatment at Great Lakes I really appreciated the sense of camaraderie between the staff and the patients… they make you feel welcome… and they want to help you get better. They educate you on your treatment and what you can do as well to help yourself. They understand that your injury is physical… but at the same time the positive environment also goes a

long way to help with the emotional part… I always wanted to get to Physiotherapy to get better and the positive encouragement from all the staff went a long way as well with the recovery… sorry got of track there… where was I? ‘So Jeff, Tammy… tell me about some of the unusual injuries you have treated over the years…’ Immediately Tammy laughs and tells Jeff, ‘No don’t tell him that story!’ Jeff kinda grins… my curiosity is peaked… he can’t tell the story, but it sounds like bars, singing and tables were involved… now that sounds like the Norfolk folks I know! In ten years the business sure has come a long way and today there are many different types of treatment available: Physiotherapy, Manual Therapy, Sports Injuries, Pre/Post Surgical Rehabilitation, Custom Orthotics and Bracing, Ergonomic Consulting, Educational Talks and Seminars, Acupuncture, Vertigo and Spinal Decompression. Folks from the larger centres, now come to Great Lakes for their treatment… as for Tammy and Jeff, they keep it
all in perspective… they enjoy their three children… Jeff enjoys biking and Tammy running, for their outlets, which all business people need… trust me! So… ten years of hard work… and sure like any business there have been highs and lows for both Jeff and Tammy while they have continued to provide high quality treatment and care for the folks of Norfolk… Thank You. By Dave Scott We touched base last week (sorry, could not resist that one!) about 15 year old Dallas Dalby. Dallas at the time, was busy organizing a 3 pitch tournament in Vittoria for kids… with the proceeds going to Tim Hortons Camp Day! Happily we are able to announce that the tourney went very well… 33 kids signed up… boys and girls… some who had never played ball before. Four teams were created and the games started, with the whole idea of the day being, to have fun and kids helping kids go to camp. The Tim Horton Children's Foundation helped out of course, with t-shirts and hats for the kids. Members of the foundation stopped by and explained what the funds would be used for and were pleased with the turnout. They thanked Dallas for his great initiative and for helping out. Dallas thanked everyone for coming out; the foundation for their assistance; Grant Nelson for his support; and the two ladies who stood behind him as he organized and implemented the fundraiser (his mom and nana). While setting up the tournament he drew on his family and friends to help out… when I arrived, his mom and nana

were busy flipping burgers… other family members were doing what they could, umpiring, coaching… even his 12 year old brother, Alex was helping… whatever they could do to help. Employees from Tim Hortons were also on hand, chipping in as well. His mom works for Tim Hortons in Simcoe while his nana works for Tim Hortons Delhi… I chatted with his nana for a moment at the tournament and she told me how when Dallas was a little younger he would always come to Camp Day at the Tim Hortons store in Delhi and help out… you could tell his nana is very proud of her grandson. The tournament raised over $1500 for Tim Hortons Camp Day and Dallas plans on hosting another tournament next year. He told me the day ended with the yellow team winning and at the end of the day everyone received a prize. The funds raised will go to Tim Horton Children's Foundation, which was established back in 1974. The foundation is a non-profit charitable organization committed to providing a fun-filled camp environment for children from economically disadvantaged homes. This year Tim Hortons Camp Day will be held Wednesday, June 6th at all Tim Hortons… so pop in, pick up a coffee and help a child get to camp!

Unique 1812 Bicentennial Outdoor Spectacle - Call For Local Artists And Performers! In early August of 1812, Norfolk County was host to the famous Major-General Isaac Brock. On August 7th, Brock and a small force were on their way to confront the American forces who crossed the river in Detroit to begin their first invasion of Upper Canada. Brock made a stop between Simcoe and Dover, tried to gain support from local settlers and Natives and assemble a reluctant local militia. The locals were more concerned about leaving their families and crops. However, after Brock made a stirring speech outside of Culver’s Tavern, the rallied militia sailed off into the sunset the very next day. This was just the beginning of many campaigns over the next two years. On August 11th, a special 1812 Bicentennial event will be taking place on the streets and waterfront in Port Dover. This event will combine theatre and music performed by many local artists and musicians. The

pageant will be written and presented by local performers working with Toronto’s Shadowland Theatre. The sunset pageant will include a parade from Powell Park to the lake featuring giant puppets, stilt walkers and musical numbers, with a finale at the pier featuring the tall ship, St. Lawrence II. A varied artistic approach has been chosen for this event to involve as many local people as possible in the creation of The Lion on the Lake. The project is being co-ordinated by the Port Dover Harbour Museum, with the support and involvement of Norfolk Arts Centre, Waterford Heritage and Agricultural Museum, Backus Heritage Conservation Area and others. Young people are needed (especially those 14 – 19) to take part in the event production. Singers, visual artists, theatre enthusiasts, musicians and history buffs are all welcome to attend the free workshops on June 9th and 10th, from 10am to 4pm at the Port Dover Harbour Museum. Ron Richards and his daughter, Olivia Richards (a former Simcoe Composite student) connected with each other as father and daughter while playing golf. They have always had a blast playing rounds of golf, which made their relationship stronger. In the game, you are forced to listen to each other, it teaches you social skills and etiquette, and it also teaches you to be polite on the course. I bet everyone is wondering, when did Olivia start playing golf? Well… your questions have been answered! About 9 years ago, Olivia was first introduced to the game and she stuck to it. Not even the frustration or the difficulty that came along kept her from mastering it. The sport is actually a family tradition that the Richards have. Her dad, uncles, aunts, and two of her cousins (who both played in the States on scholarships) supported and

encouraged her as her game grew. Nowadays, Olivia is playing with other elite amateur female golfers at the University of Detroit Mercy, where she is currently attending school on a golf scholarship… Olivia is excelling at both her academic and her golf game. In university, she just recently won a NCAA tournament in Florida, and because of that win, she received the Horizon League Player of the Week honour. While her very supportive father smiled at the thought of her success, he couldn’t help but admire everything that she has accomplished. "I’m very proud of her… she’s getting an excellent education, she gets to travel (around North America), and she plays golf too! I couldn’t be any happier for her than I am right now!" And you should be, Ron! Your daughter is doing very well as not only a student, but also as a golfer too. And I am sure that you’re one very proud Dad!

n interesting thing happened to me the other day; I was walking through a parking lot towards my car, headed home after running some errands. As I loaded a couple shopping bags into my trunk, the gentleman getting out of his car next to me leaned over, stuck his head in my trunk and marvelled, “wow, that’s a big trunk.” I smiled politely and excused the mess that he was gazing at; my daughter’s bicycle, my safety kit, some old car mats, a box of old books and now my few bags of groceries. We stood there for a few moments chatting casually about my Jetta; reviewing the mileage, the features and how much I love my car. As I got in my car, a huge smile spread across my face; I really do love my car. When I started working as a sales associate at Rick McCall Volkswagen in Simcoe, I could tell these cars were both great to look at and fun to drive. These are vehicles that are built smart, run efficiently and make us feel good about driving. Cruising home behind the wheel of my Jetta had me thinking; I want people to love their cars as much as I love mine. Driving this car makes me feel a sense of pride, a sense of satisfaction. As I stopped at the red light, singing to the radio and thinking about a way to share my joy and passion for the brand, another VW pulled up beside me. Without thinking I gave the driver a familiar wave; index and middle fingers extended with a big smile plastered on my face. Peace! I just gave that lady the peace sign! I couldn’t believe I’d done that; yet at the same time it felt wonderfully appropriate. It felt like I had just shared with her all the things I was feeling about driving my VW. As I carried on my way, I tried that same wave with every Volkswagen that came by. Some looked shocked, some looked confused, but most waved back. It made me feel like a secret code was shared between us as VW owners and drivers. I imagined that those drivers felt the same rippling happiness as I do, and carried on the wave with the next VW they saw. With a simple wave, drivers are being united in their joy all across the county. It’s a movement saying, “Volkswagen’s aren’t just a car, they are the car”. So I challenge you, as you drive down the road in your Volkswagen, share the joy. And for those of you who want to join the club, give me a call and we can find your joy.

By Dave Scott Asparagus, radishes, turnips, sweet potatoes, herbs, spinach, lettuces, sprouts, onions, cucumbers, ground cherries, collards are just some of the items (which are all darn good) that you can find Wednesday nights from 5:30-6:30pm at the Urban Parisian in Port Dover. Who brings us this great produce? Well, meet Amanda and Andrew McCracken who are now in their third year of business running Sweet Pea Community Supported Agriculture Farm (CSA). The CSA website explains what exactly a CSA farm is… farmers receive a set fee (from you the consumer prior to the start of growing season. In return, you receive shares (produce) in the farm’s bounty and you also share the risk due to weather and other factors beyond the control of the farmer. Most CSA farms grow organic food and provide a diversity of vegetables and herbs in season. CSA farmers are dedicated in using the land in a manner that will not allow depletion of its nutrients or value for generations to come. Healthy soil produces healthy foods. Three years back when this couple started we did a story… and at the time, knowing it would

By MARG WERDEN Invasive Aliens As I’ve been working in my garden, I’ve been noticing a lot of plants there that I don’t want there (commonly known as weeds!), so I’ve been trying to identify a few of them to see if they are at least useful to some other species even if they are an annoyance to me. I found out that the nettle is the host plant for the Red Admiral butterfly larvae and most people know that the milkweed is the host plant for Monarch butterflies. As a result, some of those plants may be made more welcome than others in the garden. However, there is one plant that we all need to get out of our gardens and our woodlots. Garlic mustard (Alliaria officinalis or Alliaria petiolata) was brought to North America as a culinary herb in the 1860s and has become very invasive, threatening native plants and harming some animals. This plant is most commonly found in moist woodlands, ditches and
be a tough go, I hoped that they would have success… Amanda and Andrew have great personalities… you feel like you could sit down and just have a great old chat with them… and of course they have strong work ethics… with a laid back approach… sounds a little distinct doesn’t it… but I don’t know how else to describe them. I chatted with Amanda and Andrew about how the sharing idea was going… and after two successful years, the couple has already sold out their spring shares! Awesome! I have to tell you the produce we have received has been outstanding… we have made some very delightful salads, and did some unique barbeque dishes with the sweet potatoes, turnips and asparagus. The selection is terrific, and like I said earlier the spring shares (which go to the end of July) are sold out but the couple is planning on winter storage crop share running from the beginning of November to the end of February 2013… so if this interests you… call soon to get a spot for the fall… and if you show up at the Urban Parisian in Dover Wednesday nights between 6pm and 6:30pm, any produce that is left can be
purchased. The other cool thing is once a week a newsletter goes out from Sweet Pea with information on the produce, whose farm it is from, an update on how the crops are progressing, tips for keeping your produce fresh, as well as recipe ideas… and of course volunteers are welcome to come help out… Andrew even throws in a joke here and there. Amanda and Andrew want folks to enjoy their produce and have a better understanding of the organic local produce they are eating… it is so important in this day and age to understand where our vegetables are coming from, how they are grown, and how long it takes for them to get to us… I have to say thanks to Amanda and Andrew for the great job they are doing… not only the great produce, but their commitment to bringing a safer higher quality product to our table, ‘Thank you!’ If you would like more info about Sweet Pea call (519) 410-3574 or email sweetpeacsafarm@ gmail.com.
The heart-shaped leaves of the invasive weed Garlic Mustard can be eaten, but the plant should be removed from the garden or woods to keep it from crowding out native plants. fencerows. Seeds are shed in June, and remain dormant for up to 20 months. Rosettes of green leaves grow close to the ground in their first year, remain green all winter and develop into mature flowering plants the following spring. Garlic mustard competes with native wildflowers that also flower in the spring, (such as spring beauty, wild ginger, bloodroot, Dutchman's breeches, hepatica, toothworts, and trilliums), stealing light, moisture, nutrients, soil and space. Wildlife such as insects that depend on these other early plants for food disappear when their food source is crowded out. Cows that graze on this weed produce milk with a garlic flavour. Certain butterflies mistake the flowers of garlic mustard for toothwort flowers, and lay their eggs on the garlic mustard, which is toxic to their larvae. Garlic mustard leaves first appear as heart-shaped, coarsely-toothed, and veined leaves close to the ground. They taste and smell (when crushed) strongly of garlic. Soon the second-year plants will send up their flower stalk; the leaves will alternate along the flower stalk and become thinner, and white fourpetaled flowers will appear at the
top. The first step to keep this weed from taking over the garden and woodlands is to prevent it from producing seeds. Pull out the plant by the roots, something this is usually quite easy to do if the soil is moist. Just breaking the plant off does not work as new sprouts will grow from the roots. If the seeds have already begun to form, they need to be destroyed to prevent the plant from shedding them and increasing the problem. Seed shed must be prevented for several years until all viable seed is exhausted, which may take up to two years. There is a slight bright side to this plant: it’s edible and full of vitamins and minerals. However, the leaves become bitter as the weather warms and it may already be too late to use them this year. I tried a bite of one this week, and it definitely was more bitter than it had been earlier, which means I missed my chance to try making pesto using it. According to some sources, other uses include chopping the flowers and leaves for salads for a nice pungent garlic flavour. As well, the roots can be collected in early spring and again in late fall, when no flower stalks are present.
These are very spicy and taste like horseradish. In the fall, the seeds, which have a mustard flavour, can be collected and eaten. Although I haven’t tried it, this is a recipe I found for garlic mustard pesto. • 1 1/2 cups garlic mustard leaves • 1 1/2 cups spinach leaves • juice of 1/2 - 1 lemon (to taste) • 1 clove garlic (or more to taste) • 1/2 cup pine nuts or walnuts • 1/4 cup olive oil • salt to taste • Blend above ingredients in food processor or blender and enjoy. It’s a bonus when you can get free food and help the environment at the same time.
