Welcome to NOFA Vermont’s Organic Farm and Food Guide! This is an exciting time to be an eater who is seeking local and organic food, or an organic farmer seeking a local or regional market—there is a mutual interest to meet the demand for a vibrant food system. We are fortunate, in Vermont, to be able to eat local and organic food—we don’t have to choose. If you have followed our work on a labeling law for foods containing genetically modified organisms (GMO) this year, you also know that eating certified organic food is the best way to guarantee your food is GMO-free. In this guide, you will find the farmers’ markets closest to your home and all of the producers of certified organic goods in your community, from those who make maple syrup to organic hay and forage producers (for those of you who raise chickens or other livestock). The number of organic farms and processors continues to increase in Vermont, so there are many farms and businesses to explore—in 2012, there were 576 certified organic farms and processors producing organic food on 103,827 acres in Vermont, and more than 20 percent of the dairy farms in Vermont are now certified organic! Those certified organic producers are participating in local and regional markets, maintaining working landscapes, and contributing to the success of other local businesses. You can find certified organic products at farmstands, stores, restaurants, and through web or mail order, or you can “pick your own” on the farm—there are so many opportunities to support Vermont’s farmers and processors and enjoy the bounty. NOFA Vermont has worked for more than forty years to grow organic farms, healthy food, and strong communities in Vermont. Whether you are a shareholder in a Community Supported Agriculture farm (CSA), purchase organic milk produced on Vermont pastures, or volunteer at your child’s school to support the inclusion of local food in the cafeteria, you too are strengthening Vermont organic farms. Provide Food and Farm Education to all Vermonters through our annual winter conference, on-farm summer workshop series and technical conferences. In addition, NOFA Vermont works in collaboration with FoodWorks and Shelburne Farms on the VT FEED (Vermont Food Education Every Day) project, which increases farm and food education in schools; we have nine Farm to Community Mentors who work statewide to develop relationships among schools, communities and farms; and our apprenticeship program places farm helpers and new and beginning farmers on farms.

Strengthen Commercial Organic Farms in Vermont through farmer education and technical assistance. Our technical assistance programs provide information and services to commercial organic growers throughout the state on topics such as pest and disease management, production issues, and business planning.

NOFA Vermont’s Organic Certification Program

Vermont Organic Farmers (VOF), the certification program of NOFA Vermont, was created in 1985 to help producers and concerned consumers define what it meant to farm organically. These standards for organic production in Vermont were created by the farmers who were dedicated to practices that used a holistic approach to soil fertility, pest control, and plant and animal health. In 2002, with input from the organic community, the United States Department of Agriculture (USDA) implemented the National Organic Program (NOP), which created national standards for organic food. The role of VOF is to certify farmers and processors to the NOP standards, which ensures that producers are achieving the necessary requirements. Our purpose is to provide a highly credible program for independent third-party verification of organic food production, and to assist Vermont farmers and 4

What is “Certified Organic”? Ten things you should know

Certified organic farmers & processors are committed to a food system that works with natural systems to improve soil, protect your health, and produce great-tasting food. Below are some of the requirements they follow to become certified.

Prohibited pesticides, herbicides, and synthetic fertilizers cannot be used in crop production. Furthermore, producers must maintain buffers that prevent contamination drift from prohibited substances and neighboring GMO crops. Organic production prohibits genetically modified organisms, including seeds, livestock feeds, and ingredients used in processed products. Livestock are fed 100% organic feed. They do not receive conventional, genetically modified corn and soybeans, hormones or antibiotics. They also must obtain a significant portion of their diet from certified organic pasture grasses during the grazing season. Farmers maximize animal welfare by raising livestock in an environment where stress is minimized and where they are able to exhibit their natural behaviors such as grazing, rooting, and scratching. Animals are given daily access to the outdoors, year round. Farmers use land management practices that protect natural resources, conserve biodiversity, and improve the health of their soil. Meat from animals treated with hormones, antibiotics, or synthetic parasiticides cannot be sold as organic. Farmers use preventive healthcare practices and only approved treatments when necessary.

For maple syrup production, sap is collected using practices that ensure the long-term sustainable management of the sugarbush and promote forest ecosystem health. Maple syrup is tested for lead levels, and synthetic defoamers may not be used when boiling. Processed foods (such as cheese, bread, or jam) are produced with certified organic ingredients. Artificial colors and flavors, preservatives such as nitrates, and other synthetic additives are prohibited. Certified organic products are randomly subject to pesticide residue tests. The allowable limit of pesticide residue on organic food is just 5% what the EPA allows on conventional produce. Organic certification is the only label backed by clear legal definitions and independent third-party verification. All certified operations participate in an annual inspection of their premises, purchases, and practices to ensure the integrity of the organic seal.

Why We Choose to be Certified Organic

W

hen my wife and I returned from suburbia to the family farm in the early ’70s, we seemed to learn everything the hard way. Luckily, my grandfather was a living encyclopedia of agriculture, and he taught us a lot about caring for the land, which led us to explore books on organic farming. The local old timers had paved the way for us with their belief in rotations, liming, cow manure and even natural additives like rock phosphates. Through the years we continued to learn more about organics and refined our approach to taking care of the land and pursuing our goal to leave the farm a better place for the next generation. I’m not going to say that we did everything right because we certainly made a lot of mistakes—we make mistakes now; that’s farming—but in the late ‘90s, just before the USDA came out with the nationwide organic standards, we made the decision to become certified organic. Organics had a rather loose definition in the ’70s and ’80s, varying from state to state in those states where it was defined at all. It was nice to see some consistent standards for the whole country. Some people think that the USDA’s National Organic Standards Board, which decides the rules for certification, is a bunch of government bureaucrats, but the process actually

includes a lot of public and farmer input. A while ago, I testified at an NOSB meeting on behalf of compostable mulches as a replacement for the plastic mulch that many organic farmers use to control weeds. I was pleased to see a nice mix that included farmers and environmentalists, people like you and me.

What about other labels? Certified Organic is the only label with a clear legal definition and mandatory, third-party inspection. What about all the other labels out there?

Federally Defined

Some people will tell you that the certification process can be difficult and that some rules just don’t make sense and, to be honest, they would be right! But as in all relationships, the commitment to a set of values that you hold dear is always worth the effort. We’re fortunate in Vermont to have lots of new young farmers committing to dairy, CSAs and all sorts of diversified agriculture. Some are happy to carry the “Locally Produced” banner while others will work towards “Certified Naturally Grown.” Those are good goals that will certainly help strengthen our state’s unique agricultural network. But for our farm, the challenge is a lifelong quest to be the best that we can be; we believe strongly that organic certification helps us to reach that goal. The certification process helps us improve our soils, protect our environment, supply healthy, safe food, all under a third party verification system that can leave no doubt. We think that is the best path for us.

Some food labels have standard definitions under the USDA. Producers can request a voluntary inspection to verify their practices—look for the “USDA Process Verified” shield logo to ensure that the standards have been met. However, producers can still use these labels without being inspected.

The years have passed and we now have customers who were kids when we started, bringing their own young children to the farm. That’s a satisfying sight. Knowing that these people trust us to provide their children with healthy, safe, organic food is quite a responsibility. School groups visit our farm every spring and I’m amazed at the knowledge kids now have about agriculture. When first graders ask me about rotation and chisel plows, it’s pretty amazing. Our own kids, now grown, have joined us on the farm, and we hope to pass the legacy of this place on to our grandchildren.

Local. The state of Vermont defines “local” products as those that originated within Vermont or 30 miles of the place where they are sold. However, the state does not conduct inspections or actively enforce this definition.

Every now and then I catch a customer reading our framed Certification on top of the produce cooler in the farmstand. I’m proud of that piece of paper. For me, certification means we are trying to be the best.

Humane. Multiple labeling programs make claims that animals were treated humanely during the production cycle, but the verification of these claims varies widely. These labeling programs are not regulated by the USDA.

Free-range. Used for poultry, this label indicates that the flock was provided shelter in a building, room, or other area with continuous access to the outdoors during their production cycle. It does not limit the use of antibiotics, hormones, or pesticides. Natural. Meat, poultry, and egg products labeled as natural must be minimally processed and contain no artificial ingredients. The natural label does not regulate farm practices and only applies to the processing of meat and egg products. There are no standards or regulations for the labeling of natural food products if they do not contain meat or eggs. Grass-fed. Grass-fed animals receive a majority of their nutrients from grass throughout their life, while organic animals’ pasture diet may be supplemented with grain. The grass-fed label does not limit the use of antibiotics, hormones, or pesticides.

Not Legally Defined or Regulated Cage-free. Used for poultry, his label indicates that the flock was able to freely roam a building, room, or enclosed area with unlimited access to food and fresh water during their production cycle. Pasture-raised. Due to the number of variables involved in pasture raised agricultural systems, the USDA has not developed a labeling policy for pasture-raised products.

Local Recipe Summer Berries with Lavender Crème Anglaise

Serves 4–6 This is a great recipe to celebrate summer flowers and honey!

T

he USDA Pesticide Data Program has found the residue of more than 50 toxic pesticides on conventional blueberries and strawberries, including known carcinogens and neurotoxins. These thin-skinned fruits tend to soak up pesticide sprays so residue can remain even after washing. That makes berries an important food to buy and grow organically—plus, some evidence shows organic berries to be higher in antioxidants and flavor! 3 pints local summer berries 1 pint half-and-half 6-inch top of 1 stem of fresh lavender such as Grosso, or 1/2 tsp dried lavender blossom 4 egg yolks 1/3 cup raw local honey, lavender or other mild variety Pinch of sea salt

Stem and clean the berries, and mix them together in a bowl. If the berries are tart, add a tablespoon of honey (gently warmed to liquefy) and stir. Set aside. Heat the half-and-half together with the lavender over low heat until it steams. Cover and remove from the heat. Steep about half an hour. In a bowl, beat the egg yolks. Add a ladleful of the half-and-half mixture to the yolks and whisk together. Then add the yolks back into the half-and-half and stir. Turn the heat back on under the pan, keeping it medium low. Stir constantly as you cook the custard, keeping it below the boiling point, until it is just thickened. Remove from the heat and strain into a bowl. Continue to stir in the bowl until the mixture is warm but not hot. Add the honey and stir until completely dissolved. Allow to cool. Refrigerate until ready to serve. Divide the berries into serving dishes and pour the crème anglaise over them. Decorate with a sprig of lavender and serve. 2013–2014 VERMONT ORGANIC FARM & FOOD GUIDE

So how can you support the other 197 organic dairy

certifies 205 Vermont dairy farms as organic. These farmers ship fluid milk, bottle their own milk, or make various dairy products including award winning cheeses, yogurt and ice cream. The best way to support these farmers is to purchase their products. Farmers who process their own dairy products include:
