Green Apple Macarons Directions

Ingredients

Prepare macaron shells:

Line baking sheets with parchment paper or a silicone mat. Place a piping tip in a piping bag and secure it. Weigh and sift confectioner’s sugar and almond flour into a bowl. In a separate bowl, beat egg whites, sugar, and cream of tartar until stiff peaks form. Add food coloring. Gently fold dry ingredients into the meringue until smooth. Transfer the batter to the piping bag. Pipe rounds on the prepared sheets and tap to remove air bubbles. Let them dry until a skin forms. Preheat the oven to 295°F. Bake for 18 minutes. Check for doneness and bake more if needed. Cool the shells.

Make green apple white chocolate ganache: Combine white chocolate, heavy cream, and green apple flavor oil in a glass bowl. Microwave and stir in short intervals until smooth. Cover and let it cool to a good piping consistency.

Assembly: Match macaron shells of equal size. Melt white chocolate and drizzle lines on some shells, then sprinkle nonpareils. Wait for the chocolate to set. Fill a piping bag with ganache and pipe onto one shell in each pair. Sandwich with the partner shell. Store in the fridge for 24 hours in an airtight container for best texture and flavor.
