Member’s Voice The greatest part of NICA is the Membership! The Member’s Voice influences where the organization is headed and what it can improve, especially when it comes to which benefits are being used and which events people are interested in attending. The NICA Office has been continuing their survey of responses from Renewing Members. This month, we continued our look at our renewing Associate Members. Dan Sher, State Fair Mini Donuts from Minnetonka, MN, founded a company that produces mini donuts without the use of a deep fryer. He learned about NICA from David Penn, Family Foods & Concessions, LLC, and participates in the Fare Foods Food Show every other year. His relationship with NICA helps show him the ups and downs in the Concession Industry. He has worked at Fairs in the system of using a fryer and found that the hot oil could be prohibited in many venues. He spent two years developing new equipment: a 14” X 20” oven that can make 1200 mini donuts in an hour. He now works the other side of the fence, selling this equipment. He was very excited about the new FedEx benefit. He described it as “tremendous and how easy it was to use.” It more than pays for his membership. Dan enjoys reading the NICA News. To him, it is interesting to read about others and how they started and have continued in the business. He is very impressed with the fact that NICA seems to want to address the problems their members face. “It’s an association that wants to help its members.” Tom Burns, Grand Rapids Popcorn out of Comstock, MI, has been in business over 40 years. The company has been a member since 2007 and “will continue to be a member, as it is a good organization.” Tom likes to look through the NICA News to see what is going on in the industry. He also likes to watch the advertisements of his competitors to stay updated with the trends. His business is a family business and he has two sons who are interested in continuing it, similar to the Concessionaires who are generational.

Derek Tipsword, Hoelting Food Service of Decatur, IL, stated that his company joined NICA to help his company establish business relationships with the Concessionaires. He is aware of the many benefits that NICA offers, but does not make use of very many. Derek credits NICA with doing a very good job with the NICA News. “I take the time to actually read it.” He is the fourth generation in the business and grew up learning it from the bottom up. Their company uses a “straight 22 foot truck” and “hand load over 5000 cases a day. The average case is 28 pounds per box.” This company would love to do “the Fair business” year round because the Concessionaires are “genuine people.” Derek does not envy the Concessionaires’ jobs, as they have “a lot of unique headaches with the setups, tear downs and moving every week or so.” He feels the best relationships he ever built with his customers have been with Concessionaires. “They seem to be more appreciative of what we do for them.” James Meyerose, J & L Bakery Distribution from Rushville, IN, described his relationship

If the manager’s work ethic is high, so must the employees maintain a high level of production. The manager serves the public by making sure the product being sold is of the highest quality and is delivered in a friendly and professional manner. The manager serves the industry by maintaining quality equipment in the best of repair and appearance, as well as producing a product that the public desires. High quality service and products will produce profits for the manager and his or her business. Thus, the manager/servant will help him/herself by being of service to others. The best manager must also be open and honest in all communications with employees, with business associates, with Richard Busse, CCE industry management, and with yourself. 2017 Board of Directors Nominees The summer months bring with it the start of the annual election season for NICA’s Board of Directors. This year there are six nominees for next year’s Board: Don Delahoyde, CCE, Five Star Catering, Carmel Dyer-Pittroff, The Original Australian Battered Potatoes, LLC, Richie George, George’s Fun Foods, Kevin McGrath, The Best Around, LLC, Mike Kinnear, Dawghouse Concessions, and Mike Pence, CCE, Pence’s Concessions. Their nomination statements are below in alphabetical order:

Don Delahoyde, CCE Five Star Catering

“I am a motivated single person. I have been self-employed since 18 years old, I was in the restaurant business my first 8 years of business, owning and operating 10 different concepts. I got in the fair business by accident in about 1983. Our local fair had a notice for bid for beer concession. I liked the idea, won the bid and built my first beer trailer. From there it was Margarita trailers, then BBQ, Fish, Corn Dogs, Funnel cakes, Pizza, Lemonade, as well as Merchandise and Novelties. I feel I have a wide back ground in both business and the fair industry. We currently play 40 shows in California, Oregon and Washington, with over 95 locations. I served on the Board of Directors for the Western Fairs Association for six years, becoming the first ever service member to become President. I am a founding member of NICA West, and termed off that Council in 2015. I was part of the original group that negotiated the first contract between NICA and Sysco, as well as playing a major role in our first food shows. I have attended IAFE in Las Vegas for the past eight years. I was recently appointed to the IAFE task force on transfer of ownership as the NICA representative. I believe in the concept of NICA, I believe there is room for improvement, and I would like to be part of that. My responsibilities in my company will be greatly reduced in the coming years as my son and daughter in law Phil and Ania Delahoyde are taking over the day to day operation with me as a helper. Being a board member takes time and financial commitment. I am ready to put my time and energy in helping the industry that has been my career.”

The Original Australian Battered Potatoes “About a month ago I got a phone call asking if I would like to run to serve on the NICA Board as a Director. I immediately hesitated and said I needed time to think about it. Then I thought, ‘Why would I hesitate to give back to an industry that has been so good to me?’ Five minutes later I agreed to run. I have been in the Fair Industry for 39 years and, over time, I have joined the following organizations: NICA, IAFE, OABA, WFA, SHOWMENS LEAGUE and RAS (Royal Agricultural Society Sydney). I encourage you to belong to these organizations that work so hard for us. Participating at four major Fairs in Sydney, Australia, California, and the Midwest has taught me so much. We all need to work together so that we can learn from and help each other. NICA’s membership needs to continue to grow and my goal is to encourage more Concessionaires to join. Through the hard work of the very committed Board members, our NICA benefits are probably the best in the industry. “Together We Can!” 12

George’s Fun Foods “My name is Richard George, and I come to you today as a 4th generation Concessionaire. I am so proud of our industry, from our forefather’s foundation until today as we work together, Concessionaires and Committees, to close the gap on communications. I believe that “Together We Can!” If elected, I will work to bring all factions of our industry together so that we, as a group, can work on these difficult challenges that face our industry every day. Growing up in this business, I found out that the jobs are very unique. When I was seven years old, I started picking up rings in a Coke pitch. From there, I ran a merry-go-round. At the age of ten, my parents decided it was time for me to get started in the family business. I helped my grandfather run my family’s hot dog and lemonade stand. Today I still run my family’s business with my lovely wife of twenty-three years. Together, we are teaching our daughter the ways of the business. I am honored to be nominated for the NICA Board of Directors. We can make a difference!”

Mike Kinnear

Dawghouse Concessions “Hi, my name is Mike Kinnear. Along with my wife, Lisa and daughter, Vanessa Warren, we own Dawghouse Concessions. I have been a NICA member since 2000. I started in the food concession business in 1969 when my father purchased a Foot Long stand used at the Iowa State Fair and told me, “There’s your college tuition, go earn it.” Well, I did earn it and just completed a career in the information technology field. I started as a computer programmer and held various levels of specialist and management jobs, with the last 8 years devoted to IT Security. Throughout my IT career, we always maintained our concession business as a partial income enterprise, using our vacation time to work our fairs. We expanded to two stands and have worked various county fairs, town events, cars shows, and of course, the Iowa State Fair. Although our livelihood has not been dependent on our concession business income, that income has allowed us to travel and plan for our future, our children’s and grandchildren’s future. We owe a lot to this business for providing us with many opportunities. I would like to pay it forward by working as one of your NICA Directors. I believe my experience as a ‘vacation’ concessionaire will bring a unique perspective of a small, seasonal operation and the challenges faced to provide quality products and services. Many of these issues pertain to newcomers in our industry as well. Such as; how to book events, cost of operations, insurance needs, pricing, product development and selection and graphics are just a few of the topics I’ve received valuable information from my involvement with NICA. In addition, I have completed a United Way training seminar for Board Governance. “I started in the concession business in 1977 and have been a member of NICA since its inception. I left the finance industry where I supervised loan offices in Florida, Georgia and Alabama. The challenge of owning my own business lured me away from the comfort and stability of corporate life. I have never regretted that decision. In the beginning, my wife Gayle and I were in retail sales. We later expanded to a variety of food products and traveled the Midwest and Southeast. Today our company, The Best Around, Inc., is a family business. Our sons Kevin, II and Mike, their wives, and our five grandchildren (age 4-15), are all in the business. In 1993, I was among the nucleus of concessionaires who started NICA. It was my honor to serve two terms on the original board and I served as vice president. I have always been an active participant in NICA events. In 2012, Gayle and I were honored to receive NICA’s Hall of Fame Award. After many years of working from the sidelines, I have decided I have the time, energy and desire to become an active board member again. I will work tirelessly for the benefit of each and every member. As a veteran concessionaire I have traveled to conventions nationwide. I look around and see lots of silver hair. I would like to see more youth in our industry. Transfer of ownership has been a topic of conversation for many years. I would like to explore where the new owners are going to come from. I am fortunate to have family members who are interested in taking over our business; not everyone is in that position. We must find ways to successfully sell/transfer our businesses. I also plan to work diligently to recruit, educate, and promote youth to enter our great industry. Voting is one of your most important responsibilities of being a NICA member. Please vote in this election. For twenty three years I have worked for the betterment of NICA and our industry. If elected, I pledge to continue to do so.”

I have had the privilege of serving NICA in the past for two terms and holding every Executive postiion NICA has to offer. It has given me a great insight as to the inner workings of NICA and how best to benefit the organization. It has also allowed me to create many great relationships in our industry. Since NICA was formed, my wife, Etta, and daughter, Leslie, have been very active in the 15 July 2016 NICA News organization. Etta and I are lifetime members of NICA and have been honored to have received the CCE award. I am also a Member of IAFE, GOSA, IACDF, lifetime member of VFW, American Legion, and Masonic Lodge. I grew up in our concession business spending every summmer on the road except when I was serving our country in Vietnam. My grandfather started the business in 1902. I am the 3rd generation. Etta and I have three daughters (4th generation) and ten grandchildren (5th generation). Our food concessions are a multi-state operation. Florida Federation of Fairs Convention was on fire this year—figuratively and literally. There were well attended workshops, busy trade show booths, many sponsorships, and lots of people happy to see each other. And then there was a real fire in the trade show in order to remind us that certificates of insurance are important to have in place and how to be patient, supportive, and flexible in our planning.

Executive Manager Rey O’Day moderated the panel which included Paulette Keene, President, Sandy Class, Director, Justin Sattler, Director, Jim Ward, Pasco County Fair, and Marlene PiersonJolliffe, CFE, State Fair of Virginia. Each panelist shared stories about the success they experienced when Fairs and Joe Betras and Russ Joe Repass, K&K Insurance Harrison, Rudy’s; showing Concessionaires tackled an idea or concern at the trade show the Whirley-NICA 32 oz. cup together. One group provided new bicycles for the youth of the surrounding community; another took NICA was proud to be a Silver Sponsor of the Giles Ellis Memorial Golf Tournament. Joe Potillo all the proceeds from wholesale bottled water Jr., Richie George, Sandy Class, and Justin Sattler sales and put it into infrastructure improvements like the RV park and utilities, which raised money played as our foursome. The Convention began without raising rents or additional fees. Many successful community food drives and networking dinners with staff and others have been hosted together. Several Fairs have replaced exclusive commissaries with the input of Concessionaires. Other Fairs have developed procedures to support the sale/transfer of businesses by collaborating together. From the audience, Kevin McGrath, II, The Best Around, shared that his company supports local community groups by hiring their members as employees. All of these ideas led us to the obvious: form Vendor Communication Committees and reap the success of working together. NICA Members George’s Fun Foods and Sivori Catering sponsored the Friday luncheon that featured the video honoring Florida Federation Executive Director Lisa Hinton as the 2015 Woman of the Year in Agriculture. She was presented this well-deserved award during the Florida State Fair for her role in furthering agricultural education. The Saturday Luncheon was sponsored by Netterfield’s Popcorn and Lemonade, Inc. and O’Brien’s Food Service was one of the Golf Tournament Hole Sponsors. NICA is proud when its members support the events of our sister organizations. San Diego County Fair Rey O’Day, NICA Interim Executive Manager

Before many Fairs there is a Pre-Fair Concessionaires’ Meeting where information is received and friends are greeted. This one was in Del Mar, CA before the opening of the San Diego County Fair in early June. More than three-fourths of the Concessionaires at this Fair are NICA Members! Donna Ruhm, Concessions Manager, gave NICA permission to award Dale G. Smith his CCE Award during this meeting with his peers. NICA also held its 10th Annual Golf Tournament and its first Del Mar Poker Tournament during this Fair and is donating $1000 to the Don Diego Scholarship Fund, which provides financial support for deserving San Diego County college-bound students. Moreover, it was announced that Fred and Carmel Pittroff’s granddaughter was the top recipient of the $3000 NICA Scholarship and Dale and Cie Smith’s nephew was also awarded a NICA Scholarship. Both companies participate in this Fair and are all are very happy for these young people. ▲

Pirates & Strawberries Found on the Central California Coast Rey O’Day, NICA Interim Executive Manager Visiting Fairs early in the season is like “old home week.” It is so good to reconnect with the many NICA Members who are our dear friends. That was all the motivation I needed to head up the Central California coast and visit the Santa Barbara Fair and Expo at the Earl Warren Showgrounds and the Santa Maria Valley Strawberry Festival at Fairpark. Both were first time visits. The Santa Barbara Fair is a five day event that can be seen from Hwy 101. CEO Scott Grieve has been there for 13 years. He told me that their “thing” is to theme, and this year’s theme was “Santa ‘Aarbara” printed on a pirate’s treasure map with directions to say “Yo Ho Ho and have a barrel of fun!” While there, Betsy Hutchins, CEO Scott Grieve and Assistant Manager Pat Cary Violett Bonilla, and at the Santa Barbara Fair Efrain Ramirez all became NICA Members. I had great visits with Joe Mestmaker, Linda Davis, Bob Riggs, Bob and Betsy Hutchins, and Lola and José Ramirez.

Linda Hewlet, Flo, made us smile with her day job (her other job is as Big Fresno Fair Concessions Coordinator), and I had Longtime friends: Roger Sharp, Sharp Concepts and the chance to thank Tommie Fomby Roger Sharp, Sharp Concepts, for his support of the NICA Sysco Marketplace and introduce him to the NICA FedEx program. It was certainly a “sweet adventure” at the Santa Maria Valley Strawberry Festival! ▲

A Successful Survival Kit Sandy Class, Director Joe Potillo, Jr., Past President, and myself hosted a very successful Survival Kit event at the Clay County Fair in Green Cove Springs, FL in April. The lucky pail of sand was stocked with one $50 Racetrac fuel card, two $25 dining cards, one $25 Home Depot card and $25 in scratch-off lottery tickets. Total value: $150. What was not too love about this survival kit? We sold five tickets for $25, helping us raise a total of $790. We also gained one new member at the same time! A warm welcome to William (Billy) Level from Hog Wild BBQ, out of Ronceverte, WV. We would like to thank all of our members and non-members who participated. General Fair Manager Tasha Hyder pulled the lucky ticket and the lucky winner was Marc Dobson, The One Man Traveling Band, who also entertained numerous guests at the Fair.
