Still overweight after dieting? Having food issues? Can’t get your mind off eating? Fed up of Turkey, think again! deficient. Thus leaving the body vulnerable to new diseases. The turkey tail mycelium has been shown to excrete strong antiviral compounds, which are specifically active against human papillomavirus (HPV). These are known causes of cervical cancer, and hepatitis C virus (HEP-C), which causes liver cancer.

Now that Christmas has passed I am sure everyone is turkey’d (sic) up to the eyeballs. Of course what followed was the million and one recipes for all those turkey leftovers... I would like to bring you attention to a little known turkey. Now this one is not related to our feathered friend but is a member of the fungi family. It is called Turkey tail due to the exquisite bands of colour on the upper surface resembling of course a turkey’s tail. Turkey tail fungi, Trametes versicolor, are a type of bracket fungi. They are found growing on deciduous dead trees, logs, branches, and stumps. The underside of the of the fungi is white and consists of pores rather than gills, which are incredibly minute. This makes them a member of the polypore family. Ok so other than the slight similarity with turkeys (which many of us have just eaten) why else do I bring this to your attention then? Well this is probably one of the most medicinal fungi yet discovered. It has been used in the East as a medicinal fungi for centuries, and at last now the West is starting to recognise the unbelievable potential of this incredible fungi. It has long been revered for its anti-tumour and immune building properties. Recently, in a ground breaking clinical trial involving women undergoing radiotherapy for breast cancer, these long standing beliefs have been proven as Turkey tails could positively affect the immune system of patients which rebounded after they ended their radiation therapy.

We evolved as a species living in probably more sunlight than we do today. When our skin cells are exposed to sunlight we make our own vitamin D. It is a known fact that people living in the northern hemisphere suffer from lower levels of vitamin D during the autumn, winter and spring. This leads to immune deficiency and leaves the those less resistant to certain viruses. But there is a solution, all fungi once exposed and dried in the sunlight absorb and hold vitamin D. Therefore in particular with Turkey tail fungi this helps boost the already immune building properties contained within. These high vitamin D levels are preserved for more than a year and even previously dried mushroom can be exposed to sunlight and will increase in vitamin D. Fungi are also intriguing because their cells are surprisingly similar to human cells. Fungi split from animals about 600 billion years ago. So this means fungi are actually more closely related to animals than to plants. In fact the mycelium of fungi breathes in oxygen and exhales carbon dioxide, just like us. Our understanding of the potential of fungi to aid in our health and the health of our fragile ecosystems is only now being really understood and explored and they are amazing both science and medicine. If you would like to know more on Fungi in general or in particular Turkey tail fungi then please don’t hesitate to get in touch. Please note that you must only consume any fungi once it has been identified by an expert and you are 100% satisfied it is safe to eat. Wishing you all a Happy New Year. The outcome of the trial was that Turkey tail fungi increase natural killer (NK) cells and CD8+T cell activity. NK cells are essential for fighting off and protecting us from tumours and viruses, they also play an important role in prevention of both early and metastatic breast cancer. 5. Track your progress

For each goal you have, write out a realistic plan of action to reach each one individually.

Keep track of each small success you make toward the larger goal. Short-term goals are easier to keep, and small accomplishments will help keep you stay motivated. Instead of focusing on losing 30 pounds, for instance, focus on losing that first 5.

2. If it’s food, alcohol, etc. that you want to cut back on then work out how to deal with temptation This could include calling on a friend for help and inspiration when you’re feeling weak. You could write down all the reasons you made the resolution in the first place and place it firmly on the front of the fridge (or some other such place).

6. Don’t beat yourself up If you have an occasional slip up then don’t worry that “all is lost”. Get yourself back on track and concentrate on the positives.

3. Talk about it Don’t keep your resolution a secret. Tell friends and family members who will be there to support you. The best case scenario is to find yourself someone else who shares the same goal, that way you can motivate each other. 4. Reward yourself Celebrate your successes along the way by treating yourself to something that you enjoy but which does not go against your resolution.

7. Stick to it There is a theory that it takes about 21 days for a new activity, such as exercising, to become a habit, and months for it to become part of your personality. Whether this is true or not, who knows? It’s probably different for everyone but certainly if you persist then the healthy/beneficial habit will start to become second-nature. 8. Keep trying There’s factually no real reason you can’t make a “New Year’s resolution” any time o of year.

BURNS

NIGHT

Robert Burns lived from 1 59 until 1 90. He was a gifted Scottish poet who came from very humble and hardworking origins being the son of a poor Ayrshire farmer. Life was very hard for the young Robert who in company with his brothers, had to work long, hard hours on the family farm. This unremitting work and a doomed love affair, prompted him to start writing poetry when he was just 18 years old. After this, he achieved a certain measure of fame and became a popular and notable philanderer in Scottish society. Burns’ prolific output of poetry ranged from sentimental love lyrics of exquisite sensitivity, to broad humour and scathing satire with very earthy undertones. He searched for and collected, many old traditional songs for the Scots Musical Museum and was consequently responsible for saving many of them from certain obscurity. Burns Night is observed every year on the evening of January 25th. It is then, that Scots at home or away, sit down to a special dinner during which a haggis, boiled turnips and copious drams of whisky are consumed. It is also traditional for the haggis to be brought to the table behind a lone piper in full Highland dress. Needless to say, any diners with Scottish connections no matter how tenuous, will have donned the ‘family plaid‘, and you’ll be hard put to find anyone willingly admitting to be a Sassenach. For those unacquainted as yet with the culinary delight of haggis, it should be explained it is a sheep’s stomach

filled with chopped offal, oatmeal and any number of highly secret ingredients. It sounds terrible but it is a wonderful eating experience and if you can’t eat all your haggis hot, it will taste just as good the next day eaten cold. Whisky of course needs no introduction. South of the border, the piper on the other hand is an ‘acquired taste’! If you get an invitation to celebrate Burns Night with a group of fanatical supporters, do accept. It will certainly be an evening to remember for many a long year to come!

January, the month for Thank Yous As we get over the post-Christmas blues, here’s some food for thought: January is National ‘Thank You’ Month and goodness knows there are many children that would hopefully be inspired by that fact (with a little help from their parents), especially in light of the many presents they have just received! Of course, we are all guilty of not saying ‘thank you’ enough especially to those closest to us. So this is a great opportunity to take a moment of time

to do so. Of course, saying thank you and being grateful are not just about the words; there’s an appreciation of the other person and a demonstration they are truly valued. Taking the initiative to show gratitude and acknowledge others even when it’s not expected, can cause a ripple effect of thank yous, so don’t underestimate what this simple action can do. Hopefully this will perk us all up in this coldest of months!

LOCAL HISTORY NOTES

Wallace H Hills by Dorothy Hatswell

Wallace Henry Hills was born in Chiddingly, Sussex, on July 1 th 18 3. His father, Matthew, who described himself as a whitesmith (a worker in tin or iron) was the chief engineer at Lewes Prison. Wallace’s mother, Ellen, was a dressmaker. Wallace, the oldest of their five children, was educated at Ardingly College and went into journalism with Farncombe & Co of Lewes, as a reporter, aged seventeen. Farncombes published the East Sussex News and later, the East Grinstead Observer. Even though Hills was only 18 years old he was appointed as the latter’s first editor. It was not just a desk job, he was also the chief reporter and covered most of the local events himself. He held this post until his death in 1932. He wrote a column each week over his nom de plume “The Chiel”. He had taken this name from a poem by Robbie Burns: “A chiel’s among you, taking notes And in faith, he’ll print it.” He married Lizette Miller in 188 at Lewes and they lived in Ferndale, Station Road for a few years and then moved to Lansdowne House on the London Road, after its vacation by the Queen Victoria Cottage Hospital. The site is now occupied by Carpetright. They had one daughter, Lizette Mabel, who died tragically at the age of sixteen in 1904. She is buried in Queens Road Cemetery, in a plot later also occupied by her father and mother. Mrs Hills, probably to keep her mind off the early death of her only child, organised many events for young people in the town. There were dances in the Queens

W.H.Hills Hall were the participants were served with non-alcoholic drinks and iced cakes. Hills took an active part in local life, he served on the Urban District Council, the fore-runner of the East Grinstead Town Council, for many years, being the Chairman in 190 , 1911 and 1912 and again in191 /18. He was secretary of the Conservative Association and also the Literary and Scientific Club. Hills served as a churchwarden at St Mary’s in Windmill Lane.

Among all his other interests he found time to write “The History of East Grinstead”, published in 190 . This was the first fairly comprehensive history of the town since John Stenning had written his “Notes on East Grinstead” some forty years earlier. P.D.Wood, a local business man and historian, wrote about Hills and his book: “Hills was no historian: he collected antiquarian facts like a magpie, heaped them uncritically together and served them up raw and unassimilated. His book,

in short, is a mess. Although it contains lists of early vicars at St Swithuns and wardens of Sackville College together with Members of Parliament, it is not good at pre 19th history. Once into the period he had known more personally, it is invaluable for the origins of such municipal works as sewage and street lighting.” For all its shortcomings, it was not superseded by another history of the town until M.J.Leppard wrote A History of East Grinstead to celebrate the Millennium in 2000. Perhaps his most important report is of the last Court Leet for East Grinstead in October 1923. East Grinstead had been under the manorial system for nearly a thousand years. Hills was invited to attend and wrote in that week’s Observer; “The only tenant who put in an appearance to do homage on the silver rods was Mr George Head... He strongly protested at being called a tenant when he had paid for the land. It was explained to him that it was copyhold, not freehold, Mr Head reluctantly paid the penny demanded. He was

mollified when asked what he would like by way of refreshment. ‘Sixpennyworth of hot whisky and a big cigar’, Head replied. He got both.” It was possible that Hills also threw himself into many activities to try to put his daughter’s death out of his mind. The book must have been started about the time of Lizette Mabel’s death. Once it had been published in 190 , he became Chairman of the Urban District Council for the first time. Hills was also interested in having a museum in the town. He might have spoken to the Rev. Blakiston about the latter’s growing collection in the church tower. A separate museum was not started until 19 when the East Grinstead Society assembled the disparate items that had been amassed by Blakiston, and the Town Council in three small rooms in East Court. The purpose built museum in Cantelupe Road opened in 200 , fittingly, on the centenary of the publication of Hills book. Wallace Hills died on January 5th 1932, at the age of sixty eight in

His wife lived a further nine years. She was living at the time of her death at 2 Morton Road. East Grinstead was fortunate to have the services of Wallace Hills. He left the town a legacy of service and commitment and a window on the past.

HANDSEL MONDAY In Scotland and Northern England a tradition of celebrating ‘Auld Handsel Monday’ took place on the first Monday in January. The word “Handsel” is in fact an Old Saxon word meaning “to deliver into the hand” and a hansel meant a small tip or gift of money given as a token of good luck. An 1825 glossary marks Handsel Monday as an occasion “when it is customary to make children and servants a present”. On this day, tips of small gifts were expected by servants, as well as by the postman, the deliverers of newspapers, scavengers, and all persons who wait upon the house.

Gifts given to employees, etc. on Boxing Day eventually supplanted Handsel Day. The handsel had to be a physical object, rather than money, but it couldn’t be anything sharp or it would “cut” the relationship between the giver and the recipient. Hansel Monday also included the custom known as “handseling a purse”. A new purse would not be given to anyone, without placing money in it for good luck. Money received during Handsel Monday is supposed to ensure monetary luck all for the rest of the year. I’m sure we can all agree that in January we could all do with some ‘monetary luck’!

1. Put the cabbage into a large salad bowl. Add the red onion, carrot, apple, lemon juice and raisins (sultanas would also do). Shredded vegetables with apples and raisins taste really good with a creamy soft cheese dressing. This is a bit like coleslaw, though with more going on! Serves: 4 adults Preparation time: 20 mins

Smart stew & dumplings This wonderfully tasty beef casserole is topped with fluffy dumplings. Great for a chilly evening! Serves: 4 adults Preparation time: 20 mins Cooking time: 2 hrs 0 mins

INGREDIENTS: • 2 tsp vegetable oil • 280g lean braising steak cut into chunks • 450ml vegetable or chicken stock • 2 medium onions chopped • 2 garlic cloves crushed • 2 carrots cut into chunks • 2 celery sticks sliced • 1 bay leaf • 250g closed cup mushrooms halved • 100g self-raising flour • 2 tbsp fresh parsley chopped • 50g spread • 1 pinch ground black pepper

WHAT TO DO: 1. Heat the vegetable oil in a large flameproof casserole dish or saucepan. Add the beef, a handful at a time, and cook over a high heat until sealed and browned for about 2-3 minutes. 2. Pour the stock into the pan, then add the onions, garlic, carrots, celery, bay leaf and mushrooms. Bring to the boil, then reduce the heat. Cover and cook over a low heat for 1½ hours, checking the liquid level from time to time, and topping up with a little water if needed. 3. To make the dumplings, sift the flour into a bowl and the parsley and some black pepper. Add the spread to the flour, then rub in with your fingertips until the mixture looks like fine crumbs. Add just enough cold water (about 2 tbsp) to make a soft dough. Knead the dough lightly for a moment, then form into 12 small dumplings. 4. Add the dumplings to the stew, letting them sit on the surface. Cover and cook for another 25-30 minutes, until the dumplings are light and fluffy. Tip 1: Always brown the meat thoroughly to begin with (but not burn), as this will give the stew a good flavour. Tip 2: If you’re using a casserole dish, you could transfer it to the oven and bake at Gas Mark 4/180°C/fan oven 1 0°C for 1 ½ hours, then add the dumplings and bake for a further 25-30 minutes. Tip 3: Be sure to serve the casserole with plenty of fresh or frozen vegetables, such as broccoli, cabbage, leeks or peas to help towards your 5 A DAY.

January 13th... A Cold Cold Day St Hilary’s feast day on 13th January has gained the reputation of being the coldest day of the year due to past cold events starting on or around this date. Smallfield resident, Patrick McIntosh has undergone treatment and recovered from bowel, prostate and skin cancer in the past two years and is now taking the incredulous step of going on an expedition to the South Pole! What inspired you to take on this epic challenge of going to the South Pole? The opportunity to explain to people that having suffered cancer operations, it can be perfectly possible to recover good health - and to demonstrate to everybody that the body is quite capable of full recovery and enormous physical feats. But fundamentally, going to the South Pole was a hook by which people would engage with me so that I could then explain to them about eating better food, taking more exercise and that cancer needn’t kill if you can catch it early. Why the South Pole in particular? I’m going to the South Pole because it’s iconic in the British psyche; 2015 is the 100th anniversary of Ernest Shackleton’s successful trip – whereby he went

down to Antarctica and managed to get all of his 2 men back, even though he ended up having to spend the entire winter there and didn’t achieve his goal of getting to the South Pole. It’s also the 103rd anniversary of Robert Scott’s ill-fated trip…I hope to be on the South Pole on the 103rd anniversary of his trip. …for me to be able to motivate people, the best thing to do is talk about the South Pole but then add on all the other things that I want to talk about! What preparation are you doing? What steps are you taking to get ready? I’ve done huge amounts of running, I was until recently running a marathon a week and walking a marathon a week with 35 kgs on my back. I did the Great Langdale Half Marathon, and the London Parks half marathon. I’ve been Nordic Ski Tracking in my garage…which is incredibly boring! 5kms a night. I’ve been swimming in a pool which is at about degrees, around 10 lengths a night. I’ve been doing as much gardening as I have time for, and

physical exercise outside. I’m about to go off high altitude training in Chamonix for days in order to try and acclimatise my body to high altitudes, because the South Pole is at an apparent height of 4000m above sea level. I’ve essentially been trying to acclimatise my body as much as possible to accept Antarctic conditions and just generally improving my strength. I’ve been doing a lot of weight lifting as well. Apart from all of the exercise, logistically I’ve been wonderfully assisted by my grand daughter, Gemma, who has been putting together all of the necessary equipment, food, clothing and electronic equipment to make sure that I can remain in contact with the outside world and that if I get into trouble we’ve got a means of communication; because this is going to be an unaided, completely self reliant trip! All this has taken a lot of time and effort to get everything in the right place, at the right time. What do you hope to achieve with this adventure? I hope to achieve a number of things. From a personal point of view, it will be wonderful to stand on the end of the world. But my primary objective is awareness. It’s about explaining to people that the NHS simply cannot afford to continue to look after us in the way in which we think of it today; the change in demographics is inevitable. We all could live a better life if we were to wake up to the fact that we must eat better food, we must take more exercise. We’re all going to live a hell of a lot longer than people have ever lived in the past and we could all have a very “good” death – meaning that we keep ourselves healthy into old age. But if we carry on the way we are

at the moment we’ll have a “poor” death, and it will be an impoverished death because the NHS simply is not going to be there for us. Therefore people need to wake up to this monumental dilemma. What support have you had from your family, friends and local people? I’ve had enormous support from my family and friends, and my clients. They have been unbelievably generous in donating money, giving me mental support, and helping in a variety of different ways to get my message out. Without them I couldn’t possibly have achieved as much as I have so far. Lots of the local papers have been incredibly supportive also; I’ve had articles in the Surrey Mirror and East Grinstead Courier, and I’ve been on BBC Radio Surrey which was a wonderful exposure. I have also had great support from neighbours and friends, and articles in my village magazine. Generally, we seem to have got the message out locally very well but I would love to reach a wider audience with my message of awareness. Locally based, world-renowned artist, David Shepherd is encouraging all children who love art to enter his Global Canvas competition.

If your child wants to get creative in the new year they may consider entering the David Shepherd Wildlife Foundations (DSWF’s) Global Canvas art and poetry competition! The Foundation is looking for imaginative groups under 1 years of age to use art, poetry, sculpture and words to create a mini-exhibition to reflect the 2015 theme ‘We can heal our World’. They can get together with their friends, class, year or school, etc. and send in a photograph of a proposed exhibition along with any poetry as word documents plus 200 words describing how the theme has been interpreted. Smartening up after Christmas

Once the Christmas decorations have been taken down, we are often confronted with a home that is, to say the least, not at its pristine best. It is at this time we start thinking of all the improvements that could and should be made. Short of a complete demolition job followed by rebuilding with all those little touches we dream of, what to do? It’s a fact that the shortage of ready cash even the most provident amongst us suffers from after Christmas, makes the smallest structural alteration almost prohibitively expensive. So how do we turn our humble dwelling into one of those showplaces featured in some of the glossy magazines and television programmes? There is a whole lot you can do to transform what you have, with probably less outlay than you might imagine.

will go a long way toward creating the impression you wish to give of the room. Whilst we are on the subject of colour, try to think beyond the whites, creams and magnolias we seem to have got stuck with over the years.

For a start, look carefully at your home as a whole, room by room, point by point. Decide which room you intend to start on and try to observe it as if you never saw it before. Do you for example, make the best use of the room available, is there too much furniture of the wrong sort cluttering up the floor space? If so, what is surplus to requirements? It could be that one multi-use unit would replace a lot of smaller items, and let’s face it, there is a market for reasonably good, second-hand furniture, so you may be able to sell your surplus to help finance such a replacement. There is nothing quite like clear floor space to give the impression of overall roominess.

If you have got to replace something, it will probably be the curtains. If your windows are reasonably new and draught-proof you discard the idea of curtains altogether. Roller blinds come in as many colours and patterns and can look really sensational on their own. They take up less room on the wall and can give a smoother, slicker look to a room in general. They are also a lot less expensive than you might think. Blinds do have the added advantage of being sponge cleanable, so worth thinking about.

Perhaps you feel you must decorate, well this is a good time to take a good look at the use and co-ordination of colour. Think about this and don’t just take the easy way out and repeat what you had before. If again your room is on the small side, bold patterned wallpapers will not improve the impression of size. Why not consider a woodchip or anaglypta paper that may then be painted or emulsioned? You could then afford to choose a colour scheme that would help to improve on the apparent size of the room. Co-ordinating the colour of walls, curtains, carpets and the rest of the upholstery will take the eye gently from focal point to focal point, and this

You may of course have to give due regard to your existing carpet when selecting colours and upholstery, especially if this time round you cannot see your way to a replacement. A good idea here is to get it professionally cleaned first. You could well be surprised how different your carpet will look after it has received attentions from the experts. Forgotten colours could be revealed with which you could balance your new scheme.

If your windows are old and draughty then curtains are almost a must, and these should be lined. There are thermal linings available, so an enquiry at your local upholstery shop will help. If your suite, three-piece or otherwise, is looking dingy you might wish to replace it, you can however have it covered. Loose covers or re-upholstery can transform a suite, and if it matches the curtains or blinds, your co-ordination will almost be complete. ‘Throws’ are even cheaper and easier to apply. So there you have it, you can transform your home, making the best mostly of what you have. All you need is a little imagination and a lot of ingenuity and energy, and those don’t cost a lot, do they?

East Grinstead Foodbank: Growing into 2015 Over the past year we have seen an increasing number of people coming to the foodbank as the recession continues to affect people’s lives. Many have previously been just about coping financially then something has happened to completely stop or dramatically reduce their income. The reason for this income crisis can include a sudden loss of earnings, change in family circumstances or housing problems. For many people on low income the cold winter months can mean a choice has to be made between paying for heat or putting food on the table. We have noticed that a number of clients have come to foodbank from the Lingfield and Blindley Heath area. For many this has caused extra hardship as they have had to rely on friends or family to provide transport or catch a bus, which they cannot afford. As a last resort some clients have even walked to the foodbank. For this reason we have decided to set up a foodbank ‘satellite’ in Lingfield. From Friday th March, clients will be able to bring their foodbank voucher to Lingfield & Dormansland Community Centre where foodbank volunteers will provide the necessary food to help them over a period of crisis. Lingfield Foodbank will be open on 1st & 3rd Friday of every month, 1:30 - 2:30pm. We would like to say a big THANK YOU to everyone who has donated in any way to the foodbank this year. We have been totally amazed at the ongoing generosity of our local community giving through supermarket collections, school & business enterprises ranging from non-school uniform days to staff & customer food collections, cake sales & sponsored bike rides, Harvest Festivals and most recently donations of Advent Calendars and all things Christmassy. It’s been such a privilege passing these items on to those who have come to us.
