Traditional Cherry Pie Recipe

With National Cherry Day on Tuesday July 16th, it’s the perfect occasion to bake a fresh cherry pie completely from scratch, for all the family to enjoy.

Ingredients • • • •

1kg fresh cherries Lemon juice 2tbsp corn flour 100g caster sugar (with extra for dusting) • ½ vanilla pod • 1tbsp cherry brandy (optional) For the pastry: • 350g plain flour • 150g cold unsalted butter • 100g caster sugar • 50g ground almonds • 2 large egg yolks • Cold milk

Method 1. Make the pastry: rub or blitz (in a food processor) the flour and butter until you have crumbs. 2. Add the sugar, almonds and egg yolks. Knead or pulse into a dough – you might need a dash of cold milk to help bind it together. 3. Wrap in cling film and chill in the fridge for at least 30 minutes. 4. Pit the cherries – add a squeeze of lemon juice and set aside. 5. Mix the cornflour to a paste with 2 tablespoons of water and set aside. 6. Put the sugar in a wide pan and scrape in the vanilla seeds. 7. Over a low heat dissolve the sugar, then increase the heat and cook without stirring until you have a dark caramel. 8. Lower the heat and add

the cherries and liqueur (if using). Once you have a dark compote, add the cornflour mix and stir until thick. Set aside to cool. 9. Pre-heat the oven to 200°C/ fan180°C/gas 6 and pop in a baking sheet. On a lightly floured surface, roll out twothirds of the pastry and use to line a 20cm by 4cm deep pie dish. 10. Fill with the compote. 11. Roll out the rest of the pastry to make a lid, brush the edge of the base with water. Lay the lid on top of the pie and crimp the edges to seal. Brush with a little cold milk. 12. Transfer the pie to the hot baking sheet and bake for 30-35 minutes until golden and bubbling. Rest for 10 minutes. 13. Dust with caster sugar and serve while hot or cold with cream or vanilla ice cream. Recipe brought to you by Haskins, www.haskins.co.uk.

NEWS FROM THE FOREST By James Clow, Ranger

Summer is here on Ashdown Forest and the bell heather (Erica cinerea) is just beginning to flower and attract all kinds of nectar-loving insects. © Silver studded-blue by Steve Alton

It’s a great time of year to explore; on a warm evening you can listen out for the churring song of the male Nightjar, they are nocturnal birds and can be seen at dusk and dawn at several areas of the forest. Their grey-brown, mottled, streaked and barred plumage provides ideal camouflage in the daytime. It is also the time of year to stumble across one of our heathland orchids. The commonest by far is the Heath spotted-orchid, found in open, damp areas. It comes

in a range of colour forms, from dark pink through to pure white.

As with many of the species that make the forest special, our orchids all have very specific habitat requirements, and the majority of them rely on management, in particular grazing, to prevent their open habitats reverting to scrub. For the first time in several years all four rangers, and the grazing team, are offering guided walks around their chases. Each walk will last between 1.5 and 2 hours. A great opportunity to discuss history and understand how everything is managed. The walks will include some hidden gems:

Our fundraising efforts are progressing with generous donations from organisations and community groups. The Uckfield & District Lions club are helping to buy much-needed tools, equipment and uniforms for our conservation volunteers. The Ashdown Forest health walkers have made a donation to help with the costs of reprinting our visitor map. The health walks happen every Wednesday at 10:30am and are extremely popular. Many different noises can be heard from rushing and whistling to music. It is managed primarily through

hearing aid use or noise generators. If you are concerned about tinnitus then please do come in and see us, even if only for an informal chat. Noise Protection & Swim Plugs We can take moulds of ears for all kinds of ear plugs, for example if you are a musician, work in a noisy environment or simply enjoy swimming! And finally… We are proud to be involved in the Starkey Hearing Foundation which supplies free hearing aids to some of the world’s poorest countries. James has visited Armenia on two occasions and will return there this year with the foundation. L E ONARDS L E E A Unique Sussex Garden In April, the much-anticipated re-opening of one of the Great Gardens of Sussex, Leonardslee Gardens, occurred to much local and national delight. Indeed, the estate was featured on BBC TV Gardeners’ World last month. After 9 years of closure, this opening signalled one of the biggest Grade I garden restoration projects in the UK in nearly 30 years. of it locally and that we needed to tread carefully as people knew it inside out… with a great love of the place. The locals felt that these were public gardens and not private, and they needed to be open for visitors to enjoy’.

Owner Penny Streeter OBE described how she first came upon the historic woodland gardens by chance when she drove past a ‘For Sale’ sign at the edge of the road and found beautiful gardens which had obviously been neglected for 9 years. She then set about transforming them back to their former glory during a 20-month project. Penny said, ‘It was a real sleeping beauty… overgrown forest of flowers, weeds and everything. Only by talking to local people, did I understand the significance

Leonardslee are foremost woodland gardens with an outstanding display of rhododendrons, 450 species in fact… around half the number to be found across the world! As well as azaleas, camellias and magnolias; many gathered from plant hunting expeditions, with some very rare specimens. There are several plants that are now threatened in their natural habitat, for instance Rhododendron Hodgsonii from valleys in China which have now been flooded. ‘The estate is identifying these specimens and sharing their seedbank with Kew Gardens’,

said head gardener, Ray Abraham, ‘so their survival is secured’. The restoration has included careful pruning and extensive clearance of neglected and overgrown areas and the rebuilding of nearly 10 miles of pathways through the woodlands.

LEONARDSLEE: A UNIQUE SUSSEX GARDEN CONTINUED

We take an in-depth look at some of the history of this special Sussex garden and how it came to have one of the most unique plant specimen collections in the world: One reason why Sussex boasts so many great gardens is that the fertile acid soil and high rainfall of the High Weald provide the ideal climatic conditions for experimentation with nonnative plants and shrubs. Add to this, sheltered positions and varying micro-climates across estates and one can see the area as a veritable paradise for gardeners. But we need to look more closely at why they all developed in the latter part of the 19th century and flourished in the years before the Second World War, with the “Sussex Style” reaching a peak in the 20’s and 30’s. All were in fact the indirect result of the expansion of the railways in the Victorian period which saw Sussex develop as an ideal place for a country estate for those who had made their fortunes in the City of London or in commerce. Such estates were perfect for relaxing after the pressures of work and for entertaining friends at the weekends. None of the owners came from the landed aristocracy; none of these estates had been given to ancestors at the time of the Norman Conquest. All belonged to families who had acquired their wealth more

recently and their gardening involvements provided a relief from the city, business and public activities. Although Leonardslee had been a country estate for hundreds of years, it was Edmund Loder of the famous Loder family who was a huge part of creating the masterpiece it is today. Clearly the Loder family is central in the development of the great Sussex gardens, since 3 of them were in their ownership. What was Edmund Loder of Leonardslee like?

The Loders originated in Dorset and the family fortunes had been based on the activities of Giles Loder, Robert’s father, as a successful merchant adventurer in Russia, a business later continued in London. His father died when Robert was 48 and he inherited a fortune. His own seven sons and three daughters were brought up at The High Beeches but in 1877 Robert himself moved to a splendid estate in Whittlebury in Northamptonshire. In 1876 his eldest son, Edmund, married Marion Hubbard, a childhood friend and daughter of the owners of the nearby estate at Leonardslee which Edmund later bought off his wife’s parents. It was Edmund who fully developed the gardens

Sir Edmund was akin to a latter-day Renaissance man with an extraordinarily wide range of interests, pursued with talent and vigour. He had been tutored at home before going to Eton and Trinity Cambridge and had “a quick and brilliant brain”. As well as travels which took him to Sweden, Finland, Russia, India, the Andamans, Burma, Java, China, Japan and the USA amongst others, his interests are listed as astronomy, optics and optical instruments, photography, zoology, nature, botany, horticulture and arboriculture, ballistics, mechanics and armoury! And as if that were not enough, he was described in his biography as “a thoroughly equipped and experienced sportsman, a hard rider to hounds, a good shot with a gun and one of the best with a rifle, a good fisherman; he had been a fine athlete, and till quite late in life an energetic dancer”. His gardening interests were evident as, in 1889, he had a cactus collection fine enough to be presented to the Royal Botanic Gardens at Edinburgh. He also had a sportsman’s museum which he later moved to Leonardslee. A feature which marked out Leonardslee from its neighbouring Sussex estates was the presence of a variety of animals in the grounds. Beavers, capybaras, Japanese deer, Indian blackbuck, wallabies, deer, mouflon, ibex, wild sheep and kangaroos were all introduced by Sir Edmund – the

Loder’s gazelle found in North Africa was named after him. Most of the animals were sold after his death though the wallabies still remain, a reminder of Sir Edmund’s hand in developing the garden, as well as earning their keep as the perfect lawnmower! Sir Edmund must have enjoyed entertaining his Sussex neighbours, and it was said that, “no one could pay a visit to Leonardslee without coming away feeling that they had acquired a vast amount of knowledge from his inexhaustible store”.

Sir Edmund could be abrupt and rather shy but when relaxed he was excellent company and an invitation to Leonardslee would have been prized. Yet Sir Edmund’s life was not as idyllic as this picture might suggest. He had weakened his heart during his travels and in 1916 he was struck by a cruel blow. His only son, Robin, with whom he had shared his interest in the natural sciences, was killed fighting in Palestine. One can only imagine the grief this must have brought to his parents and Sir Edmund probably never recovered from the blow, dying himself in 1920. But what about the garden? The rock garden was formed of natural rock and of Pulhamite, a concrete based artificial material developed by the contractor and hard to tell from the real thing. Its size and planting with azaleas and other flowering plants make it one of the outstanding features of the gardens.

The gardens enjoy a spectacular natural setting, sloping down away from the house to a valley with a stream and 7 small lakes, originally medieval hammer ponds. The valley hasn’t been ploughed for 200 years and remains much as it has always been. The gardens were started in 1801 by Charles G. Beauclerk, and when William Egerton Hubbard (Sir Edmund’s father-in-law) acquired the estate in 1852, the planted areas covered in excess of 100 acres. The 1852 sale particulars show how much planting had taken place in the previous 50 years, describing pleasure grounds which, “are very ornamental, and interspersed with walks beneath luxuriant growing Beech and other timber, and comprise the American Garden containing Magnolias, Rhododendrons, Azaleas and other flowering shrubs in great luxuriance, of great height, growth and beauty”. Sir Edmund had a keen aesthetic appreciation which meant that he planted large groups of colourful

shrubs without losing the natural effect of the woodland which was important to the gardeners of his day. In 1901-1905 Sir Edmund, planted a pinetum, though many of these trees were lost in the great storm of 1987. He also installed an ingenious watering system all across the gardens. But his main passion was for rhododendrons and if it’s not entirely true that “he made the rhododendron”, as one friend claimed, he was certainly central to its development in English, and above all, Sussex gardens. Sir Edmund saw the need for improving the rhododendrons so that they would flourish and bloom in a British climate. At first, he was a keen collector of rhododendrons and azaleas but then he turned to hybridisation in order to produce more sturdy stock. His method was to collect the best species then known from the Himalayas and from China and to cross them; by no means an easy task as hybridisation was rarely successful and, in any case, takes many years to show any result. Many hybrids don’t flower for between 6 to 15 years and some fail to flower after 20. It takes someone with a keen scientific interest and great determination to embark on such a project – but Sir Edmund’s perseverance was rewarded with some outstanding successes, many of which can still be seen at Leonardslee. His greatest achievement, Rhododendron x loderi fittingly commemorates his name. In the later years of his life Sir Edmund suffered from ill health and then from the loss of his son. His daughter Patience remembered what a solace the garden was to him at this time. He would ride up and down amongst the wonderful shrubs on his pony, Toby, who wore

a net muzzle to prevent him from eating them as they went. When a visitor wondered if there were not more than enough plants to share with the poor pony, Sir Edmund laughed and replied that Toby had an uncanny knack of choosing the rarest of them for his snacks! Sir Edmund is remembered with a memorial table at Leonardslee which is situated with a splendid view down over the valley. It carries the inscription: “To the memory of Edmund Giles Loder, who made and loved these gardens” , and seems an apt memorial to a man of impressive learning and achievements. When Sir Edmund died his grandson and heir Giles was only 3 years old and the estate was maintained by his mother until he was able to take it over in 1945. However, whilst Edmund’s wife and daughter-in-law did what they could to maintain the gardens, Giles’s mother was much more interested in breeding cattle, notably Red Polls and Dexters. Nevertheless, the Head Gardener Mr. Whitner continued to exhibit, particularly rhododendron hybrids that Sir Edmund had raised, and when Giles and his wife Marie took over Leonardslee the estate was in better order than it had enjoyed for many decades. Make a bird feeder

Get the kids immersed in nature this Summer holidays! Bug hunting Bugs are amazing creatures and great for kids to see close up with a decent magnifying glass. A good way to attract them is to leave something sweet like a banana with brown sugar sprinkled on top outside… leave it for a while and see what comes flying in. Or put the banana in a see-through container with a stone, water and green leaves, once the bugs have moved in, the container can be covered and bugs studied – make sure a gap is left for fresh air! If your child has a bug identification book, even better! (Let the bugs go by the end of the day).

Put a hole through an apple and put a piece of string through the hole. Get two twigs of about 20 cm each and make an X shape with them by using the end of string. You should have an apple sitting on top of the 2 twigs at the end of a piece of string. Push larger size bird seeds into the apple (tiny seeds won’t do). Finally hang up the bird feeder from a tree and the birds can perch on the twigs while pulling sees out of the apple. Hopefully the kids can do some bird spotting.

Make a wildlife pond Find an old bowl and any container, fill it with some gravel and stones, old pieces of brick or logs for creatures to land on (do not throw in earth as this will create too much algae) sink it into the ground if you wish. Leave it in a place that gets some sunlight but not all day light. Add one or two pond plants. See what wildlife comes your way, you may get a frog or three!

For a rainy day: make playdough Ingredients: 1 cup water, 1 tbsp vegetable oil, 1/2 cup salt, 1 tbsp cream of tartar, food colouring, 1 cup flour. Combine water, oil, salt, cream of tartar, and food colouring in a saucepan and heat until warm, remove from heat and add flour; stir, then knead until smooth. Store in airtight container.

Like many people, we recently watched the acclaimed HBO/ SKY ‘Chernobyl’ mini-series, and thought it was a perfect opportunity to approach Sheila Nash who runs this local branch, for an update: ‘Friends of Chernobyl’s Children’ Mid-Sussex is a small volunteer run charity working with very needy children who live in an area of Belarus most heavily contaminated by the Chernobyl nuclear disaster of 1986. Each summer we bring a group of 15 children aged from 7 to 12 years, to Mid-Sussex with the aim of supporting their health and immune systems and

providing a month's respite from the contamination and harsh living conditions.

Local charity, Clued-up Information Shop, is a drop-in service based at the Broadway, Crowborough. We provide advice, information, support and counselling by trained youth workers to 11 to 25 year olds. A Skate Park to Remember The family of local boy Hugo Palmer are trying to raise £30k to build an extension to Forest Row Skate Park as a memorial to him. Hugo (20), and his best friend Erwan Ferrieux (of Ashurst Wood and Forest Row) disappeared into the ocean in Australia whilst on a backpacking trip in February of this year. All signs point to the boys drowning in a rip current. This was national news at the time. Instead of a headstone, Hugo’s family wish to honour his skateboarding legacy by extending the existing concrete skate park in Forest Row in his name. So far they have raised nearly £12K of £30k target, most of which has come from support from the local community. The original idea was to build a timber stand alone ramp next to the skate park, but an expert advised that timber ramps require a lot of maintenance, and that the same amount of money could instead add to what is already there and create much needed space and new features to the oversubscribed park. It is frequented by a wide range of users from toddlers on balance bikes to adults, and is often very crowded. Forest Row Parish Council, who are supporting the project, are now finalising what space can potentially be allocated.

From there, planning permission will be sought and a specialist skate park building firm can begin the design and build process. The skate park is next to the newly opened youth club The Venu - a hub for local youths to gather safely in a supported environment. Fundraising for Hugo’s memorial has got off to a promising start with money raised at a charity yoga class at Yard Yoga, an upcoming night of live music at the Hop Yard (July 19th), Hugo’s mother and Aunt embarking on the Three Peaks Challenge, and fundraising skate stickers being sold at various local spots. Miss Moneywise CLEANING TIPS

Need to give clothes an extra good clean? Throw a couple of spoons of sodium bicarb in your wash tray, a great addition to your laundry. It’s chemical free and helps soften clothes and remove unpleasant odours. Descale your kettle Use vinegar or lemon juice, pour a 50/50 mixture of white vinegar/lemon juice and water into your kettle, allow it to boil, let it cool a little, then rinse the kettle out. Speed cleaning tips on-the-go After a shower use the steamed-up bathroom to your advantage. Half the works already done with the steam, take a few second’s to wipe the sink and mirror in the morning with a microfibre cloth… if you have time the shower tiles too!

Everything will look shiny and it would have taken just a couple of minutes. While waiting for your morning coffee/tea to brew, empty your dishwasher (this can be done without any brain power!), that way everyone can be expected to put plates and cups straight in after breakfast and then during the day, with a cycle being put on later when full! After dinner, resist the temptation to sit down with a cup of tea…do a quick post-dinner cleanup, wiping down work surfaces and putting away ingredients, even if you’re knackered. It’s so much harder to come back to it later! Also try to finish off loading the dishwasher if you can. Before going to bed, go round the house for a quick de-clutter of surfaces so these don’t ‘build up’ during the week.
