Cucumber with Hummus •

Mix the hummus, garlic, olive oil, lemon juice and salt well, with a fork.

Add cucumber and mix well. Keep aside.

1/2 a lemon juice

Grill the pita bread in the oven or on the stove in a nonstick pan.

1 finely chopped cucumber

Serve and enjoy.

1 finely chopped garlic 1 tablespoon olive oil Salt to taste 6 tablespoons hummus

Broccoli and Cheese Soup 1 cup broccoli 1/2 tablespoon butter 3 tablespoons shredded mozzarella cheese 1/4 cup cream or milk 1 cube chicken bouillon

- Boil potatoes, cube of chicken stock, salt and butter for 20 minutes. - Add broccoli and let it boil for 6 more minutes. - Pour the soup in a blender. Add cream and cheese and blend well. Return it to the pan. - Let it boil for 30 seconds, add more water if you want the soup thinner.

Salt to taste 1/2 cup chopped potatoes

- Serve with shredded cheese on top, sprinkle black pepper.

Pasta with Tomato and Meat Sauce 4 chopped medium onions 1 large chopped tomato 1 1/2 tsp black pepper Salt to taste 3 cups water

- Fry onions until transparent, add the meat and stir until the water from meat evaporates. - Add tomatoes and tomato paste and stir for 4 minutes. - Add the spices and keep on stirring. Add the water and green peas, when water evaporates add the pre-cooked macaroni.

500gm minced meat 5 cups precooked elbow macaroni 1/4 teaspoon cinnamon

- Stir for 1 minute, turn off the heat. Keep the macaroni covered for at least 10 minutes, for the macaroni to absorb the sauce and the spices. - Serve hot.

Shepherd's Pie - 500gm minced meat

- In a hot pan add the butter and the oil, add the onions and fry.

- 1/2 cup chicken stock

- When onion is transparent and about to change color remove 2 tablespoons from onions and keep aside.

- 4 finely chopped onions - 1/4 cup green peas - Salt to taste

- Add the carrot to the onion in the pan. Add meat, black pepper and cayenne pepper. - Pour the stock on the meat and keep cooking, when meat is done, add the green peas.

- 1 tablespoon oil - 1 teaspoon black pepper

- In a different bowl add the fried onions, milk, and salt to the boiled potatoes, and mash.

- 1/2 teaspoon cayenne pepper - Pour the meat in the baking pan leaving an inch and a half from the - 1 chopped carrot - 4 medium boiled potatoes - 2 tablespoon butter - 1/2 cup milk

Vanilla Cheesecake

Ingredients Crust:

- 1 cup any biscuit or cookie crumbs

- 1 1/2 cup cream cheese

- 2 tablespoons melted butter

- 1/2 cup sugar

- 1/2 teaspoon coco powder

- 2 eggs

- 1/4 cup ground almond

- 1 teaspoon vanilla

- 1 teaspoon sugar

Method Crust: 1- Mix all the ingredients together. 2- Press the mixture in the bottom of the baking pan. Make sure that the crust is raised a bit on all sides of the pan 3- Bake it in a preheated oven at 350F/180C for 5 minutes. Method Filling: 1- Beat the cheese cream until it becomes fluffy. 2- Add the sugar while still beating. 3- Add the eggs and the vanilla, and beat until well mixed. 4- Pour the filling on the cooled crust. Place the baking pan on a water bath and put it in a preheated oven for 50 minutes. 5 - Let the Cheesecake cool completely, then refrigerate over night or for 6 hours.

Almond Porridge

- 2 cups full cream milk

1- In a pan heat milk, add sugar, oats and cinnamon stick.

- 1 tablespoon chopped toasted almond

2- Keep stirring until it reaches the thickness you want.

- 4 tablespoons oats

3- Add the almonds, stir for 2 minutes.

- 1 cinnamon stick or 1/2 teaspoon cinnamon powder

4 - Garnish with sultanas and crushed almonds before serving.

Spaghetti Casserole Ingredients :

- 1/2 teaspoon coriander powder

- 500gm minced meat

- 4 tablespoons tomato paste

- Salt to taste

- 1 teaspoon black pepper

- 2 tablespoons olive oil

- 3 cups pre-cooked spaghetti

- 1/2 teaspoon cinnamon powder

- Water

1- Fry the onions until transparent. Add the meat and stir until the water evaporates. 2- Add the spices and stir until you hear a slight sizzling sound. 3- Add the tomato paste and stir for 2 minutes on medium heat. 4- Add enough water to cover the meat, around 1/2 an inch above the meat. 5- Let it boil for 2 minutes, turn off the heat. 6- Place the spaghetti in a baking pan. Pour the meat sauce on the spaghetti and stir to help the sauce mix well with the spaghetti. 7- Put the baking pan in a preheated oven at 350F/180C for 20 minutes. Turn off the oven and switch to the broiler for 5 minutes and your casserole is ready.

Almond Drop Cookies 1 whole egg 1 1/2 cake flour

- Beat the butter until smooth and lighter in color. - Add vanilla and sugar to the butter and keep on beating until it's creamy in texture.

- Mix flour with salt and add to the butter and egg mixture. Beat for 20 seconds on low speed. - Add the crushed almonds and mix well using a wooden spoon or a spatula.
