Dometic Follow the Sun is a bi-annual competition that sends three lucky couples or families on a three-month road trip down the east coast of Australia. Sweet Chilli Baked Eggs with Beans A hearty breakfast that will keep dad’s batteries charged throughout the day. Ingredients 1tbspoliveoil 1 clove of garlic, crushed 1 chorizo sausage, diced 1 tin of chopped tomatoes 1 tablespoon balsamic vinegar 1/4 cup Anathoth Farm Sweet Chilli Relish, Plus extra to serve Salt and pepper 1 tin cannellini beans, drained and rinsed 4 eggs 50g Feta, crumbled Grainy toast and basil, to serve
Method 1. Preheat oven to 170C (150 fan-forced). 2. Add olive oil into a pan and sautĂŠ chopped garlic until fragrant. Add in the diced chorizo, and cook for 3. 2 minutes, until lightly browned. Add the chopped tomatoes, balsamic vinegar and Anathoth Farm 4. Sweet Chilli Relish. Season with salt and pepper. 5. Add the beans and cook for about 5 minutes until heated through. 6. Divide into 4 single serve, over proof dishes. Crack an egg on top, sprinkle with feta and bake for 8-10 minutes for medium to runny eggs. 7. Remove from the oven, top with dollops of Anathoth Farm Sweet Chilli Relish, fresh basil and serve with grainy toast. Recipe developed by Iron Chef Shellie (@ ironchefshellie)
Slow Cooker Beer and Beef Stew
Fiery Tuna Risotto A delicious risotto with Jalapeno tuna lightly flavoured with fragrant lemon zest
This beer and beef stew offers a really simple and easy family dinner that is fulfilling, and requires little effort. Ingredients 1kg chuck steak, cubed 2 onions, diced 3 carrots, diced 6 button mushrooms 2 cups beef stock 2 bottles of beer (330-375ml) draft or pale ale 5 potatoes, quartered Salt Pepper 4 tbsp. flour 2 tsp cornflour 3 bay leaves 1-2 springs of thyme or 1 tsp dried thyme Parsley chopped (optional) Method: 1. Add flour to plastic bag, insert chuck steak and sealing bag, toss it around to coat steak with flour 2. Place onion, carrots and potatoes into slow cooker. 3. Brown steak in pan, then add to slow cooker. 4. In slow cooker add beer, stock, thyme and season with salt and pepper. Mix around. Set on high for 1.5 – 2 hours. 5. After 1.5 -2 hours- reduce slow cooker to low temperature for 4 hours. 6. 1 hour before serving. In a mixing cup put corn flour with a small amount of luke warm water to mix. Add to the slow cooker with mushrooms. 7. When serving add parsley. Serve with Rice, pasta, cous cous or polenta and a lovely loaf of bread (pane de casa, ciabatta). Variations: Great with beans and peas.
INGREDIENTS 4x 95g can MSC certified John West Fiery – Jalapeno, drained reserving 2 tablespoons of oil 2 cloves garlic, peeled and crushed 1 1/2 cups Arborio rice 4 cups boiling water 8 baby roma tomatoes, quartered 1/4 cup shredded fresh basil leaves 50g feta cheese 1 cup baby spinach leaves Grated rind of 1 lemon INSTRUCTIONS Step 1 Heat 2 tablespoons of reserved tuna oil in a large saucepan. Add garlic and rice and cook for 1 minute. Pour in boiling water; simmer for 15-20 minutes or until rice is tender and liquid absorbed, stirring occasionally. Step 2 Gently stir through drained MSC certified John West Fiery – Jalapeno tuna, tomatoes and basil, season to taste. Remove from heat stand covered for 2-3 minutes. Step 3 Spoon rice mixture into serving bowls, crumble feta over the rice, top with spinach leaves and sprinkle with lemon rind. Tasty Tip! Cherry or grape tomatoes can be used if roma tomatoes are unavailable
