The BrewMaster Series is a collection of outstanding recipes that have been developed by selected Advanced/Commercial BrewMasters. We asked each to submit a favorite recipe — a version of a commercial beer or a highly successful homebrew. As with the Signature Series, these recipes are not within style, made to excess, and full of flavor!

Brewmasters, being Advanced or Commercial brewers, usually provide recipes that are designed for the All Grain process of brewing. To serve all customers, we adapt these recipes and offer both Malt Extract, and All Grain versions. Check out our website for a complete list of BrewMaster kits to choose from!

Brewmaster Matt Brynildson

"Pliny the Elder” Double IPA — Is Pliny the Best Beer in America? Well

Pale 31 Ale — The Pale 31 is what some refer to as "The Perfect American Pale Ale". It has won numerous awards including the holy grail of beer awards, a gold medal at the GABF in the Pale Ale category. Light in body and color, but strong in hop flavor and aroma, this is one of those beers that most beer lovers will always want on tap. The recipe consists of a light malt base with added Munich and Dextrin/Carapils for body and depth. The hops are a unique, yet perfect, blend of Fuggles, Chinook, Cascade and Centennial. Also check out our DVD31 (pg. 76) which features the Brewing Network brewing this exact recipe on a MoreBeer! BrewSculpture with Brewmaster Matt Brynildson. Matt recommends White Labs British Ale Yeast, WLP005 or Wyeast British WY1098. OG: 1.042–45 SRM: 4

Vinnie recommends using White Labs California yeast, WLP001. OG: 1.070–74 SRM: 10 KIT774 (Extract)......................................................................................................$49.99 KIT776 (All Grain)......................................................................................................$45.99

that's what readers of Zymurgy Magazine just voted for a record 5th time!! It is no surprise that this MoreBeer! exclusive BrewMaster Series Recipe Kit is our best seller. This recipe is not a clone; it comes directly from Vinnie Cilurzo, owner and brewer at Russian River Brewing Company. For the uninitiated, Pliny is an intense double IPA with high bitterness, a dry malt finish, 8% alcohol, 6 separate hop brew additions, 3 separate dry hop additions, and intense hop flavor and aroma. Pliny has a cult following, is very hard to get commercially due to a lack of supply, and sets the standard by which all Double IPA's are measured.

Consecration Beer lovers rejoice! Now you can brew the famous, hard to get, Consecration at home. But be prepared as this is an advanced beer making adventure that can take up to a year. Consecration is a sour dark ale aged in Cabernet Sauvignon oak barrels. It is aged and soured for 4 to 8 months with currants and brettanomyces. You can look for rich flavors of chocolate truffle, spice, tobacco, currants, and a bit of Cabernet. What makes this kit different and more exciting than any others we offer.... the secret ingredient: Authentic oak chunks from actual Consecration barrels! The recipe also includes an amazing two pounds of dried black currants. Vinnie recommends using White Labs Abbey Ale yeast, WLP530. OG: 1.073–1.077 SRM: 30 Following the lead of Russian River, MoreBeer! will be donating $1 from each kit sale to the Sutter Breast Care Center of Santa Rosa. Please Note: This is our most advanced kit. Please refer to our website for more in-depth instructions. You will need to purchase a yeast for primary, Brettanomyces for the souring/aging process, and Rockpile wine yeast for bottle conditioning. Please also consider that the time line provide is rough guideline, and this beer can take anywhere from 4 months to 12 months to perfect to your liking. Blind Pig IPA Recipe - The Original “Double IPA”! The Classic, multiple award winning IPA from Russian River. First brewed in the 90’s by Vinnie at the Blind Pig Brewery, this beer was bigger than IPA’s at the time and was the first, or one of the first, Double IPA’s. Now it might just be considered a big IPA but at the time the high bittering and hop levels along with an elevated starting gravity put it in a different class. Two dry hop additions along with 1 oz of American Oak are added directly to the fermenter after the first week of fermentation. Amazingly, the commercial beer, available in 16 oz bottles, is still in hot demand and very hard to get even close to the brewery. Brew your own and taste a little Craft Brewing history! Vinnie recommends using White Labs California yeast, WLP001. OG: 1.066–70 SRM: 11 KIT770 (Extract)......................................................................................................$39.99 KIT772 (All Grain)......................................................................................................$30.99

Double Barrel Ale — Winner of 7 golds and 4 silver medals and called DBA for short, this is one of our very favorite beers from Firestone Walker. At the brewery the beer is fermented in Oak Barrels on their unique Firestone Union fermenting systems. Our kit includes oak added to the fermenter to replicate their unique barrel ferments. This also has the benefit of adding a little mouthfeel, complexity and a nice aroma. The rich maltiness and subdued english style hops are designed to blend perfectly with the oak. One can easily spend all night drinking this smooth, copper colored ale ... in fact, many of us at MoreBeer! have done just that! Matt recommends White Labs British Ale Yeast, WLP005 or Wyeast British WY1098.OG: 1.049–52 SRM: 13 KIT804 (Extract)......................................................................................................$29.99 KIT806 (All Grain)......................................................................................................$28.99

Rogue

Brewmaster John C. Maier

Imperial India Pale Ale ( I 2 PA ) — If you’re daring, keep reading. I PA 2

is a massive, malty, Double IPA that is not as bitter or as hoppy as some of the other Double IPA’s on the market. The extract version comes with 12 lbs of malt extract and the all grain comes with 16 lbs of base malt. That is a massive amount of malt so be prepared to have a big boil kettle or mashtun. You cannot partial boil this kit in a five gallon kettle and you will need to have some fermenting “chops” to get it to finish out. Healthy yeast, lots of oxygen and temperature control. Besides the extract or base malt, the only other ingredients are Magnum, Cascade, Willamette and Amarillo hops. No steeping grains! We suggest you buy a bottle of Rogue I2PA and see how your version matches up against the original. John recommends using White Labs California Yeast, WLP001. OG: 1.076–80 SRM: 11 KIT794 (Extract)......................................................................................................$39.99 KIT796 (All Grain)......................................................................................................$42.99

Blackened Brutal Bitter — Since purchasing our B3-2050 Brewing Sculpture,

John has been constantly experimenting. We asked him for a recipe that stood out and he offered one of his experimental favorites that is an impossible-to-taste-unless-youlive-in-Newport, Oregon brew – Blackened Brutal Bitter! John took his production beer, the wonderful Brutal Bitter, tweaked it around a bit and added some Carafa for color. Features an IPAish starting gravity with Pale Ale type bitterness. Malty, black, & DELICIOUS. This beer is what John Maier, head brewmaster at the famous Rogue brewery with over 500 awards, does in his free time. John recommends using White Labs California Yeast, WLP001. OG: 1.063–66 SRM: 32 KIT797 (Extract)......................................................................................................$38.99 KIT798 (All Grain)......................................................................................................$30.99
