sed to be that a thick steak cooked to perfection was all anyone expected from a Missoula restaurant—and it was fine dining if the chef could tell you the name of the cow that ended up

on your plate. Spices? The salt and pepper were within arm’s reach. Times have changed. While western Montana remains faithful to its meat-and-potatoes—or burger-and-a-beer—reputation, Feast 2012

more and more global culinary influences are creeping into local kitchens. Within one seven-block stretch, there are nearly a dozen different restaurants with menus inspired by specific regions far from the

Rocky Mountain West. We’ve selected five standout dishes found within that downtown area representative of just how far—literally—Missoula restaurants have come from standard cowboy fare.

Iza’s Bulgogi Beef

Holland, as well as a Marylandstyle crab dip. The skewered beef tenderloin served with a spicy Togarashi sauce ( Japan) and seasonal mushroom sauté (France) remain two of Silk Road’s most popular items, but the restaurant’s tapas style allows for affordable experimentation. That led us to the Shareen, an Iranian recipe featuring rabbit legs simmered in caramelized honey and a house-made Persian spice Feast 2012

called advieh. The legs are then braised with apricots, pistachios, orange and saffron, and served over crispy golden rice. The portions are small, so think about ordering two.

Korea Korean Bulgogi Beef, $10 lunch/$16 dinner Iza 529 S. Higgins Ave. Tobin Aroner studied business at the University of

Montana before traveling through Thailand and Sri Lanka and eventually working for three years as an English teacher in Japan. His time abroad helped spark the idea that his old college town could use an izakaya, a casual Japanese establishment perfect for sipping sake and chowing on traditional fare. In July 2009, he opened Iza on the Hip Strip. The Korean Bulgogi Beef has quickly become one of the


restaurant’s signature dishes. Cooked with garlic, onion, sesame and spicy chili paste, and served with organic greens and house-made kimchi, it’s available on both the lunch and dinner menu. Our suggestion: order it at lunch, in a Bento box, and wash it down with something from Iza’s extensive list of teas.

France Filet with Green Peppercorn Sauce, $37 Pearl Café 231 E. Front St. Pearl Cash first went to France when she was 21 and, like many chefs, the experience changed her career. “It all made sense to me,” she says. “They ate cheese for dessert and drank wine at lunch. What’s not to love?” Cash, now 56, returned to France as much as she could, and the visits helped shape most of the menu at her awardwinning restaurant. A 1979 trip in particular led to one of her more popular dishes: a filet with green peppercorn sauce. “I had never had [green peppercorns] before and I remember returning from that trip and immediately trying to have them mailed in,” she says, noting they were difficult to find back then. “I worked really hard to duplicate the dish and was so proud of myself for figuring it out from scratch. Then, when I finally found a regular supplier from California or something, I get a

case and there’s the recipe for the sauce printed right on the side of the can.” Figures. But Cash stuck with her own recipe, inspired from her trips abroad, and the item remains a favorite today, served alongside fresh vegetables and creamy mashed potatoes.

Thailand Tom Kah Goong, $14 Sa Wad Dee 221 West Broadway The reigning winner for Best Asian Food in the Independent’s annual reader poll serves up a cafeteria-style lunch and sit-down dinner full of authentic Thai cuisine. Locals swear by their own favorites, but the spicy Tom Kah Goong is a must from the dinner menu. This Thai-style hot and sour soup features shrimp, galanga, lemon grass, kaffir lime leaves, Thai chilies, lime juice, mushrooms and coconut milk. One word of warning: When Sa Wad Dee says something is spicy, it’s actually spicy. Let them know if you need it dialed down—or up—a notch.

or corned beef and cabbage, Indian samosas or fish and chips, coconut curry tofu or shepherd’s pie. While the new direction is admirable— after all, the Empire is now Missoula’s only Indian restaurant—old habits die hard. It’s

difficult not to order the Cornish Pasties in a public house situated just a few hours from Butte, America. The hardy beef, onion and potato pastries are best served with enough gravy to fill a miner’s hat, and a Guinness.

issoula’s deep appreciation of craft beer is usually measured by the existence of six different brewery taprooms or alehouses located within seven miles of each other. That healthy cluster of businesses—Big Sky, Bayern, Kettlehouse, Draught Works, Tamarack and Flathead Lake—means

Missoula is home to more breweries than department stores. It’s no wonder that Montana ranks second nationally for number of craft brewers per capita—and that we all wear Carhartt. Such a saturation of suds has created a secondary market targeted at local drinkers: ways to transport your favorite

beverage from the brewery to your home, or to the next potluck. What was once a fairly straightforward exercise in grabbing a six-pack has become as varied as the offerings from the local breweries themselves. Here’s a rundown of available beer vessels, as well as suggestions on when to use each one.


Standard Growler What it is: Half-gallon glass jug with a screw top. A true beer-drinker has at least five stashed somewhere in their house, garage or under their office desk. When to use it: You plan on drinking 64 ounces of beer within the next 24 hours. Where to find it: Every brewery. Some bars will even fill ’em. Ceramic Growler What it is: A work of art that happens to carry beer. When to use it: You plan on

It’s basically a cardboard box holding a plastic bladder, and the beer is dispensed through a plastic spigot. The whole thing can fit into a backpack. When to use it: You’re heading onto the water or into the woods, and an eco-friendly growler isn’t enough to satisfy your thirst. Or, a party pig (see next page) is too much of a commitment. Red Bird The classy Red Bird Wine Bar’s menu leaves bargainhunting food lovers agog. Start with the $9 Champagne Fondue, which comes with

bread and pears for dipping, nearly a meal in itself. The $12 Italian Sandwich is a behemoth of marinated goodness. Served on a house-made roll perfectly suited for sponging up liquid, the sandwich is a gaping maw filled with the salty love of genoa salami, capicolo, coppa, provolone and roasted red peppers. It also comes with an ample serving of potato salad. The sandwich is definitely big enough for two. Total: $21.


Scotty’s Table Many would assume that a space as elegant as Scotty’s couldn’t pass the PBR test. They would be mistaken. Get the $14 Penn Cove Mussels and Fries, pop open the bi-valves’ shells and pull out the edible interior, which has been marinating in a white-wine butter sauce. The farmer’s grip of house-made fries comes with a rich aioli for dipping. For dessert try the $7 Berry Crisp made with peaches and four kinds of berries. focusing on expensive mood lighting and oddly shaped plates, Biga creates humble, honest dishes made with as many local ingredients as possible. The seasonal salad, with roasted local beets, Bitterroot honeycrisp apples, bleu cheese, almonds, sweet chili vinaigrette and toast points, might be enough for two by itself. The calzone is laden with prosciutto di Parma, ricotta, mascarpone, roasted red peppers and mozzarella and slathered in extra virgin olive oil. Total: $20. A glass of wine or beer would be nice alongside these meals. Both Sapore and Biga offer $3 PBR tall boys, and Scotty’s has $3 Big Sky IPAs and Bayern Ambers on tap. Caffé Dolce offers a $5 glass of fine house wine.

Pumpkin Thai Rule the feast with Thai-style pumpkin custard by Ari LeVaux Holiday potluck season is just around the corner. And with it comes all the attendant anxieties, such as “What ever will I bring?” Given that there has yet to be a reported instance of there ever being too much pumpkin pie anywhere, you might want to consider that option. Perhaps not as easy as bringing a Le Petit baguette, or chips and salsa, but you’ll probably feel significantly less lame as you walk through the door. But wait—you suck at crust? 30

to know about pumpkin pie. But walking around a nightmarket in Bangkok, Thailand, I had an experience that turned my concept of pumpkin pie inside out. Street food in Bangkok is a universe unto itself, a sweet and savory maze of seemingly infinite culinary creativity. The treasures that await the streetwalking gastronaut include curries, noodles, soups, fried fish and skewers, as well as strange eats like fried bugs, steamed pig blood and

half-formed eggs from the entrails of slaughtered ducks. I was taking in the brightly colored jellies, tapioca balls and syrups of a dessert vendor when I noticed something beautiful and appealing: a squash that was sliced to reveal a bright-white custard filling. I bought a slice and was rewarded with a tasty juxtaposition between sweet and starchy squash flesh and creamy coconut custard. It had the flavors of a pumpkin pie, and similar ingredients, but completely different texture and presentation. When I say pumpkin pie, I’m referring to any type of winter squash, of which pumpkin is the poster child, pie-wise. And there’s no pastry “crust” on this pie. The Thai-style custard-filled squash, called sangkaya, is typically made with kabocha squash, which is dense and starchy. Most squashes, including pumpkins, are too watery for sangkaya, but buttercup and sunshine varieties—which, along with kabocha, all grow very well in western Montana—all work.

And while sangkaya is traditionally made with a sweet custard filling, it can also be made with a savory filling. I’ll explain how to make both.

Sweet Wash the outside of the squash and cut a ring around the stem, like you’re carving a jack-o-lantern. Remove the top and scoop out the seeds and inner goop. For a medium-sized squash (about two and a half pounds), heat one cup of full-fat coconut milk and a half cup of sugar. Palm sugar is most authentic, if you can get it, but regular sugar or brown sugar will work. Stir over low heat until the sugar has dissolved, and allow the mixture to cool to room temperature. Separately, beat five eggs—but don’t over-beat them. You don’t want foamy custard. Combine the eggs and coconut milk, and add a pinch of salt and one teaspoon of vanilla extract. ( Vanilla is a common and perfectly acceptable substitute for pandan leaf, which is what’s traditionally Feast 2012

used. Pandan leaf, also called screwpine, has a subtle, exotic flavor and a sweet, comforting aroma. If you can get it fresh, mince, blend or crush it with a mortar and pestle, and squeeze one tablespoon of its green juice into the mixing bowl instead of vanilla.) Pour this mixture into your hollowed-out squash, leaving about a half inch of space below the cut-out rim. Don’t put the top back on. Steam it for 45 minutes to an hour in a basket steamer. You might want to set the squash in a bowl for extra support as it steams, so it doesn’t collapse when it gets soft. After 45 minutes, check on the “pie.” The custard should have expanded into the top opening. Insert a butter knife deep into the custard. Using

a layer of slime on it when removed. Keep steaming, checking every 10 minutes until the custard is set. Then turn off the heat, and don’t disturb the delicate squash until it cools to room temperature. When it’s room temperature, cut the squash into wedges like a pie, and serve. The contrast of bright orange flesh and white custard is striking, and if it weren’t for the flavors awaiting you, you might be tempted to simply look at it and stop there.

Savory the point of insertion as a pivot point, wag the tip of the knife back and forth, like a paddle. If the custard is set, you won’t be

able to paddle. If the custard is still soupy, there will be little or no resistance against the moving knife blade, which will have

lic, herbs and other mixings to unsweetened pie filling. Since I began hunting, I’ve enjoyed putting bits of deer and elk into my savory squash pies. Old habits die hard, because no sooner had I licked my plate after devouring my first homemade custard-filled squash than I began scheming ways to make a savory custard to fill my next squash. I decided on pork panang curry custard. Cut one pork chop into half-inch cubes and pan-fry until they brown. Stir in two cloves’ worth of chopped garlic and one teaspoon of fish sauce, then stir-fry for about one minute. Add one can of coconut milk, a quarter cup of panang curry paste (or the curry paste of your choice) and a half cup of water. Simmer for about 20 minutes until the mixture thickens, then remove from heat and let it cool. When the curry has cooled to room temperature, beat four eggs and combine with the curry mixture. Pour the mix-

ture into the squash and steam as before, for one hour, until the knife test indicates the custard has set. The savory pork curry custard comes out light and rich and full of spicy curry flavor, which mixes nicely with the earthy side of the squash’s flavor profile. Or try a “bacon and eggs” custard: Beat four eggs and mix with a half cup coconut milk. In a separate frying pan, fry one to four slices bacon (depends on how bacon-y you like it) until crispy. Set the bacon aside to cool, then crumble it into the egg mixture. In the frying pan with the bacon grease, fry two cloves garlic, stirring often, until they get fragrant. Stir the garlic (and the grease, if you wish) into the egg mixture. Pour into a hollowed-out squash and bake for one hour, until the knife test indicates the custard has set. With these custard squash dishes, you’ll rule the holiday potluck.
