I

t sneaks up on you when you least expect it, like a toothache, a speed camera fine, or the surprise you get when you try on your summer jeans. Except it is much, much nicer. Spring is stealthlike. One day you are driving to work and the colours are earthy and dark, next day fluro-yellow is ubiquitous, it is flamboyant and bold, shouting at you from the roadside and gardens. One day the trees are bare and brown, and the next branches have exploded in a verdant popcorn surprise. And it keeps on giving… boisterous blossom, spring lambs, asparagus, love, sandals, bare legs it's like an avalanche of 'springness' – an unstoppable force of optimism and new life. Instead of shaking our heads at spring and asking “Where has the year gone?” we smile at everyone, feel younger, step lightly, breathe deeper and feel renewed. Spring is a frenetic time – there're flowers and honey bees and baby animals jumping for the sheer joy of life, and rampant growth. Nature is working overtime to get everything up and running in spectacular style before summer nudges in from the side-lines with its promise of lazy days. Emerging from winter, this unruly season can jolt. It takes a moment to shake the 'hunkering down' of winter from our souls. But to motivate us into embracing this energetic vibe, some of our city's hottest spots are putting on events that will lure us from hibernation. The Colombo's Food. Fashion. Design event is first off the blocks and a highlight on the calendar. Then, close on its heels is a whole week of beauty, fashion and style to enjoy with the first ever Ballantynes Fashion Week. FOOD, FASHION, DESIGN An event not to miss this month is The Colombo's evening of 'Food. Fashion. Design.' Every area of The Colombo will be transformed into a fashionista's paradise, ďŹ tted out to amaze customers who will be able to view live installations from local artists, and national and international designers showcasing their spring and summer collections. Q & Richard Uttley A “If you want to make new friends and enjoy good food, in an unpretentious setting you've found the right place.”

In April this year you took over The Little Bistro in Akaroa what inspired your decision? We've always loved visiting Akaroa; the wife and I are both keen on diving. Having grown up in a small village and The Little Bistro coming on the market, it seemed like a good opportunity to escape the city. We had heard great reports on the restaurant so to own it, work in it and live in Akaroa is living the dream.

estaurateur Richard Uttley has plied his trade in food and hospitality in some beautiful spots around the world. Hailing from Cumbria's Lake District in the UK he worked in numerous renowned restaurants including the Michelin-starred Box Tree in Ilkley. He came to Christchurch six years ago and many will remember him from Tiffany's, King of Snake and Bloody Mary's in the Rydges. Now Richard has once again found a beautiful restaurant in a magical setting – Little Bistro in Akaroa. I caught up with Richard to find out more about his latest move - owning his own restaurant, and getting back to his creative roots in the kitchen…

You have undertaken a number of roles in the hospitality industry the last being Food & Beverage Manager at Rydges – what aspect of the industry do you enjoy most? Hospitality is a fantastic industry, the social aspect is a big draw, but my biggest enjoyment is sourcing new products and ingredients. How are you enjoying putting on your chef's whites again? It's been a long time since I was behind the stove, and to be honest I needed to buy bigger chef's jackets. It's been a steep learning curve, I was pretty rusty, but The Little Bistro's head chef Josh Rogal has dragged my skill level back up. You have continued with the ethos of the previous owners which was to present local, fresh produce. What local ingredients are your favourites? Having such great produce on the doorstep is a great advantage to the restaurant. Akaroa Salmon and Barrys Bay cheese are some of the better known producers that we use, but there is a fantastic group of backyard growers in Akaroa who are constantly bringing in fresh produce. How would you describe your cuisine style? I've always been a fan of classical French cuisine, head chef at the bistro Josh Rogal is a little more contemporary, we've adopted a style of 'bistronomy' which is really working well. How has your menu evolved since taking over the restaurant? A big part of our menu evolution is the local produce, at this time of year we are

changing our menu on an almost weekly basis, as we meet more and more local growers and more spring vegetables become available. What type of things are on the menu at present? We have some amazing dishes at the moment, from the traditional escargot a la bourguignonne, snails in a garlic and herb butter, to beef short rib with bone marrow, and truffle bread and butter pudding. What are your favourite flavour combinations? There are some foods that we might think would never go together and somehow, they are delicious. Beetroot and chocolate is one of my favourites. How important is wine matching for you and how do you select your wine list? Having worked at a lot of fine dining restaurants I used to care a lot about matching wine and food. These days I don't get much time to stop and enjoy a good bottle of wine, so my philosophy has changed somewhat. Drink a bottle of wine because you want to enjoy it, not because you're told you should enjoy it. The Bistro wine list is a little different, it's about 50/50 New Zealand to French wines. I spend most of my free time looking for older French wines, and they are all the wines I'd love to drink if I had the time. What do you love most about being a chef? My biggest love is also my biggest hate, reviews. Chefs don't get much praise, but when we read great reviews it makes our day. But reading a poor review makes you question what you could do better. The Little bistro is number 1 on Tripadvisor and is The Lonely Planets top pick for Akaroa restaurants, so that's a driver to keep it there and keep getting better. What are the greatest challenges of being a chef? Work life balance is the greatest challenge, luckily I work with my wife, so I actually get to see her. The antisocial hours mean that a lot of chefs spend very little time with their loved ones.


Apart from menu, what other changes have you made in the restaurant? We loved the bistro as it was. We made a few little tweaks here and there, guests know there is something different but they're not sure what. We have some pretty funky new lighting and individual salt graters which are a little different. What type of foodie will enjoy dining at The Little Bistro? If you're looking for a quiet romantic night, the bistro probably isn't the place to be. As the name says it's a little bistro, really little. There are no quiet tables. If you want to make new friends and enjoy good food, in an unpretentious setting you've found the right place. How are you enjoying living and working in Akaroa? It's relaxing. It's been too cold to get out on the water yet, but I spend most mornings gardening, and walking the dog. Do you get back to the UK to see family very often? We went back last year, it was the first time in six years, and nothing had really changed. The family come to New Zealand every year, so I can't really escape them. What hobbies/ pastimes do you enjoy? I never thought I'd say this but I'm loving gardening. The wife won't let me start renovating the house until next year so I've been relegated to working on the garden. I also spend a lot of time reading, usually a couple of books a week. What music are you enjoying at present? When we moved I found my old iPod which hasn't been updated for a very long time. I'm currently listening to old school hip hop. What type of music do you play in the restaurant? Chillout, soft jazz, and lots of Miles Davis. What is your proudest achievement? The day I got married! I'm still not sure why Eiko said yes, she puts up with a lot.

If you could go back and tell your teenage self something what would it be? There wouldn't be much point, I wouldn't listen anyway! I thought I knew everything as a teenager. What is your favourite drink? I enjoy a good bottle of Pinot Noir, but Elijah Craig 21-Year-Old Single Barrel Bourbon is my drink of choice. What one book would you recommend everyone read? The Alchemist by Paulo Coelho, everyone should own a copy and read it at least twice. “The secret of life, though, is to fall seven times and to get up eight times.” Is one of my favourite quotes. What were you doing the last time the thought went through your mind, “I shouldn't be doing this”? I was bidding on a bottle of Dom Pérignon 1978 Champagne. I was pretty keen to own it. But the bidding was getting out of hand, I didn't end up winning it. What is one thing Metropol readers would be surprised to know about you? I love chicken nuggets and mayo, they are my comfort food. What do you love to do on a Sunday afternoon? Sundays are family day, we take our puppy walking and stop for a lazy lunch somewhere. What are you like at parties? I'm the guy that doesn't shut up and should have gone home about three hours ago. What is next on your wish list? We all wish for more than we currently have. DEEP WATER AT THE TANNERY Christchurch photographer Sabin Holloway's Deep Water exhibition attracted much attention at The Tannery recently. The large-scale prints were of photos he took from inside the red-zone, when he was contracted by a city business owner to photograph their building’s damage. Guests at the opening of the exhibition were moved by the beauty Sabin found in the devastating rubble.

One of New Zealand's best known actors, Mark Hadlow, returns to The Court stage as the most polarising of species - a middle aged man in lycra, a MAMIL. Bryan Cook is a property developer who has accumulated a small fortune building leaking homes. He's a stressed out, self-medicating, self-loathing middle aged man, killing himself to increase his bank balance while decreasing his golf score. When his business and life fall apart thanks to the global financial crisis, he joins a men's cycling group to relieve stress and get healthy. Ultimately faced with his own mortality, he makes a few startling discoveries… “Very few performers have the talent, technique and raw energy to hold an audience the way that Mark Hadlow can. CHRISTCHURCH MODELS TALENT OF FASHION WEEK Portfolio Model Agency and Kristen Stewart School of Make Up were celebrating at Fashion Week recently when their protégés were announced winning female and male models and winning make-up artist. Sarah Lake and Nichol Drayton (Portfolio) were the winning models in the hot new talent competition, and Emma Robinson (KSSM) won the make-up artist category. Fifteen finalists covering five categories (hair stylist/barbering, fashion stylist, makeup artist, female model, male model) were flown to Auckland to work with designers during fashion week. Finalists were chosen from hundreds of entries. The winners were chosen through public votes on Facebook.

An Art Exhibition featuring original paintings by local well-known Artist Rhonda Campbell is opening at The Classic Villa on Worcester Boulevard on Saturday 19 September at 10.30am. Rhonda will be showing her work all weekend, which is open to the public for the Saturday and Sunday 10.30am to 4pm both days, or after that by appointment. Her work is bright and vibrant with lots of movement. She has been painting professionally for 26 years and sold Internationally with many awards. Her clients come from all over the world and include some famous people including Bill and Hillary Clinton. Sweet Charity CPIT's National Academy of Singing and Dramatic Arts (NASDA) will be performing the musical Sweet Charity this September, which is based on Federico Fellini's screenplay for Nights of Cabiria. The musical follows the ups and downs of Charity Valentine, a taxi driver for a New York City dance hall and an eternal optimist. While working at the seedy Fan-Dango Ballroom, she is often exploited by men, and has been strung along in a series of bad relationships. Finally, she seems to have met a decent fellow in shy tax accountant, Oscar, but will it be a happy ending? The musical is presented by

That is the essence of Supper Club – a mystery dining experience and unique fundraiser for Ronald McDonald House South Island. After a pre-dinner function at The Transitional Cathedral in late June, Supper Club raised $94,000 for the charity.

$15M LUXURY SPA PLANS Hanmer Springs Thermal Pools and Spa has unveiled a new plan to create New Zealand's first true European-style luxury day spa in the village.

T

he pools' management team hopes to build Chisholm Spa in the Chisholm Ward of Queen Mary Hospital – a heritage building with a category one listing that has been unused since the hospital closed in 2003. General Manager Graeme Abbot says the development would be a major tourism drawcard for Hurunui and Hanmer Springs. “There is nothing else like this in the country. The plan for Chisholm Spa is for a luxurious retreat involving indoor and outdoor pools, a hammam (steam room) and an ice cave. It will also have treatment rooms, an eaterie and a retail boutique.”

Clinical Psychologist Nigel Latta, an ambassador the Hyundai Power Off/Family On campaign, says parents need to reduce their own and their children's screen time to form closer family relationships.

“T

he single most important thing we give our kids is our time. That's where we teach them all the skills they'll need to navigate life, and where we build our relationship with them. The pressures of the modern world are bad enough at eating into your time with your kids, but screens are a whole other layer of stuff trying to steal time from us. “Sitting in a room with the kids while everyone is watching different screens isn't

spending time together, and it isn't building a relationship, it's just taking up space on the couch. You need to make sure you all have time unplugged and engaged in each other's lives. That's where the important conversations happen. “You can do far more good in your children's lives during a walk, than you can returning emails on your phone while they shoot zombies on the games console. There is just no better way to build your kids up than the simple act of spending time together in the actual world doing actual things.” Latta says there are five key steps parents need to take if they are concerned about the amount of screen time in their children's everyday lives: 1. The most important thing is to lead by example. Make sure that you aren't looking at screens all the time. Set limits on your own use first.

2. Decide exactly what kind of devices people actually need and when they need them. You probably don't need a mobile phone when you're nine, for example. You also don't need every kind of device there is in the world. 3. Set limits for everyone about where devices can be used, such as: - No devices at the dinner table - No devices at cafes - No devices at Grandma's house - No looking at a screen during an actual conversation with an actual person - No devices after a set time each night. 4. Make their offline life as interesting as you can by encouraging them to get involved in real world activities as well. 5. Have regular 'device free' days or evenings where the family does something together that doesn't involve screen time. From a very early age she drew animals and horses and says, “this was more my early language rather than writing or speaking. I have grown to have a deep respect and understanding of nature and enjoy sharing what I see and feel on the canvas through paint.” Jess Skepper Jess grew up in Christchurch, with “good trout streams a short cast away, and the Southern Alps on my doorstep”. His first job was as a surveyor at Mt. Cook. The surrounding mountains held the elusive Himalayan tahr. Chasing these magnificent creatures, led him to an interest in wildlife photography. “I first picked up a brush in 2000, and so began an addiction!” Josephine Regan This exhibition with Eco Artists is my first in Christchurch and I am thrilled to be included. Tasty, healthy low carb brekky

A filling start to any day, a breakfast of three Zucchini Rosti with a poached egg on top has only 5gms of carbohydrates.

ZUCCHINI ROSTI WITH POACHED EGG Makes about a dozen rosti Ingredients 500g zucchini 200g red onion 5 eggs 1/2 teaspoon (3g) salt 10g coconut flour 10g chives, fresh 62.5ml olive oil Method: Grate the zucchini and remove all the liquid by pushing through a sieve or

squeezing through a clean tea towel. Grate the onion and add to the grated zucchini. Lightly beat 1 egg with the salt and add to the zucchini mix. Chop the chives, add the zucchini and mix in the coconut flour. Cover the base of the frying pan with oil and heat. Place 2 tablespoons of the mixture per rosti into the hot oil and cook until browned on one side, then turn and

brown on the other side. Drain on paper towel and keep warm. Using your favourite method poach 1 egg per person and serve with 3 rosti as a base. Proof is in the pudding As a chef I like to be prepared, so it's with trepidation that I check the cupboard for a spare Christmas pudding, left over from last year for this year's celebrations. With great relief I spot the pudding beautifully wrapped in a cotton cloth. For those of you who like to get on top of Christmas early, I include my favourite recipe… Ingredients: 450g each of currents, raisins, fresh bread crumbs and butter (melted) 8 eggs (beaten) 30g or 4 1/2 T flour 115g peel 1 t allspice 450g brown sugar Rind of a lemon, 1 wine glass of brandy

Combine all ingredients, except eggs and butter. Add well beaten eggs and melted butter, mix. Place into pudding bowls lined with cling film, cover. Rocksalt in Elmwood Village is one of my favourite eating places. Their blue cheese, rosemary and red grape flat bread has to be tasted to be believed. It is just so good. But Rocksalt has many other delights to tempt people with a passion for great food and coffee…

peaking of coffee, Rocksalt is one of only a few Christchurch cafes that serve Allpress coffee sourced from that company's Dunedin roastery. Allpress coffee is all about aroma, flavour and taste. This smooth, rich dark coffee is made from top grade Arabica beans, using innovative roasting technology ensuring consistent great quality. There's quality too in Rocksalt's pizza menu. We couldn't be happier with the final result. he end of winter and the start of spring is the beginning of the growing season and when work in the garden really determines results for the coming growing season. The old saying, “well begun is half done” can be applied to the garden, so start the season off properly by doing the right tasks at the right time… FLOWER GARDEN Feed daffodils and other spring bulbs with a dressing of potash fertiliser to encourage strong stems and next year's flowers.

Spring flowering shrubs must be pruned as soon as they have finished flowering so that they will have plenty of new growth to give next spring's flowers. Dead head plants and bulbs as the flowers finish and look out for aphids. Spray if needed to keep the plants healthy. Give roses and other shrubs that have been in the ground for a while a good side dressing of a suitable fertiliser to encourage new growth and flowers. Treat any perennial weeds as they begin to grow and before they get too big, among the shrubs, with spot treatments like Roundup gel. Once the ground is weed-free mulches

spread around the border will help to control weeds and also conserve water later in the summer. LAWNS Lawns need to be invigorated after the cold of winter by feeding with a good balanced lawn fertiliser. Once the grass has started to grow give the lawn a rake and then top dress with soil and seed if needed. Treat lawns for moss and aerate with a fork or coring to help stop the moss growing back. High Country Homes Ltd managing director Simon Banks doesn't do things by halves. Recently his boutique design and build company won first place in both $400k-500k and $500k-650k categories in the 2015 House of the Year. The company now looks forward to the national awards in Auckland in November.

“A

t Nelson College I twice received the school prize for art and woodwork, so after all this time it's still great to be considered relevant in both design and quality workmanship. The arts are very relevant in new house construction,” Simon notes. “It's 2015 and aside from quality, people want something individual as well.” Thirty-five percent of the HOTY competition is judged on design so Simon tries to mix practicality with a good South Island aesthetic. “I've got a keen interest in back country architecture and one of my main activities is balancing historic methods with modern products and systems.” Sustainability is somewhat of a specialty area for High Country Homes and Simon enjoys working with customers who want to factor such practices into their home design, like the

River Barn the company recently completed in Leighfield Village. The home consumes about $20 per week in energy costs for a family of five. Built largely from timber, it can be easily re-calibrated after a seismic event. “It always seems to be the lady of the house who contacts the company first,” Simon says, “and 50 percent of enquiries come from previous design work people have had done that they aren't happy with. “They seem to feel relaxed that I'm prepared to visit their site and then prepare them a concept drawing with no obligation,” Simon says. “If they like my drawings and styling then we move into CAD design and engineering after that. We also match some clients with the right sort of

architect or draughtsman and a balance of work comes from existing plans. Some clients are international.” Despite necessary periods of office time, Simon aims to stay on site two to three days a week. “I enjoy working with the guys; they've all got a good sense of humour and take pride in their work,” he says. “I have made it a goal not to discriminate between people who are high end and those who are at entry level. NEW JAGUAR XE:

O

nce upon a time Jaguar made a mid-size car. It was called the X-Type and it was crap. It wasn't bad because it was based on the Ford Mondeo – which it was – and neither was it bad because it was FWD – which it also was, although 4WD models were available – rather it was bad because it was a half-baked effort with derivative design and an awful interior. It sold dismally and was quietly dropped, whereupon everyone resolved never to speak of it again. Except for motoring journalists WHAT IS IT? As stated above, the XE is a new mid-size Jaguar, taking on the rapidly diminishing segment that the X-Type failed to even dent. But there is very good reason to expect things will be different this time around. The first car to be built on Jaguar Land Rover's new modular vehicle architecture, Jaguar claim the XE is capable of taking on the best in the segment as far as dynamics go, and with the current Jaguar design language featuring heavily both

inside and out on the XE, things certainly look good. The XE initially comes to New Zealand with a choice of four trim levels and three engines. The Pure, Prestige and R-Sport models come with a choice of either a 147kW/320Nm 2.0-litre inline four-cylinder petrol turbo engine or a 132kW/430Nm 2.0-litre inline four-cylinder diesel turbo, both hooked up to an eight-speed automatic transmission.

The single S model is only available with a 250kW/450Nm 3.0-litre supercharged petrol V6, also using the ZF eight-speed transmission. The Pure starts off the range at $74,900 for the petrol and $76,900 for the diesel. The Prestige costs $78,900 for the petrol and $80,900 for the diesel. The R-Sport lands at $79,900 for the petrol and $81,900 for the diesel. The V6powered S model costs $106,000 and is the sportiest (so far) of the XE variants.

WHAT IS IT LIKE? The XE can truly stand toe-to-toe dynamically with anything in the segment. It possesses razor sharp and precise turnin, while also boasting lithe playfulness to the chassis that is quite unlike anything else in the segment. FIRST IMPRESSIONS? A deeply impressive effort that successfully erases memories of the XType, the XE is a car that can truly take on the Germans. Whether it beats them or not will depend on what you want out of a car.

The XE excels in handling, has a superb ride and is something outside of the obvious in the segment. It doesn't, however, quite offer the same level of intrinsic quality and excellence as the leaders in the luxury mid-size segment. The BMW 3 Series still offers a more involved driving experience, while the Mercedes C-Class is utterly gorgeous and has a thoroughly magnificent interior and the Audi A4 simply oozes quality and confident elegance. Still, one thing is certain; Jaguar has never been so startlingly close to the Germans as it is with the XE, even beating them in a few key areas. The fact that it is NOT German, handles brilliantly and has an exceptional ride will be more than enough for some people, and rightfully so. The XE is a thoroughly wonderful car.
