We call it butchering. Sonoma Direct, whose preident Marissa Guggiana is not coincidently an editor of the innovative meat-as-metaphor mag Meatpaper, calls it lunch. Guggiana brings her grass-fed quality meats to the table for a four-hour lesson on how to bone out a lamb leg and a chicken, and break down a pig with a handsaw. Yes, with a handsaw. It’s all so very Hannibal Lector. Carnivores get the chance to go crazy with the machinery and then eat the meats of their labor in a local lunch. The Sonoma County Museum is full of great works of art, but sadly none that you can eat. You can’t even eat while looking at the art. One could go seriously hungry at the museum, but luckily the SRJC Center for Culinary, Wine and Hospitality presents it’s a dessert and dessert wine tasting. That’s right, double the dessert. As to what sugary works of art made by the students will be unveiled, it’s still a mystery, but many local wines like a black Muscat and an orange Muscat will be there for the pairing.
