MOUNQUP: ACENTO FRANCES CONTRA UN MUNDO BRUTO EMERXENCIAS \ MOUNQUP: FRENCH ACCENT AGAINST A ROUGH WORLD

¿Quién es? Camille Hedóuin procede de Francia. Empezó en la música allí, a los doce años, y se embarcó en todo tipo de grupos : de r’n’b en la onda de Mariah Carey pasando por ska-punk, folk rock depresivo y música electrónica, explica ella. En 2011 llegó a Saumede (Ourense) para formar parte de un proyecto colectivo de rehabilitación del pueblo orientado hacia el arte y la cultura. Poco antes de llegar aquí comenzó MounQup, «en un momento de paro, sin estudio ni trabajo, lejos de mis amigos y mi familia. En la soledad completa, con mi ordenador y pequeños instrumentos, empezé componer. Unos años después, conseguí comprar una pedalera de loops y he adaptado mis tema para tocar en directo». ¿A qué suena? Todas las comparaciones llevan a Björk. Es una evidencia que no se puede negar, aunque ella también nombra a Animal Collective, The

Knife, Battles y Tune-Yards. «Mis letras hablan del mundo bruto en el que vivimos y de mis dificultades para entenderlo y encontrar mi sitio en él. De alguna forma, son políticas pero muy personales», añade. Trayectoria hasta el momento Apenas conocemos de ella una docena de temas que ha ido colgando en su página de Soundcloud a lo largo de los últimos cuatro años. Hace unos meses fue seleccionada entre las finalistas del concurso de maquetas del colectivo madrileño Autoplacer, y espera no tardar demasiado en grabar su primer disco. «Sólo me falta encontrar gente para las cosas técnicas como mezclar y masterizar», apunta. En vivo «Tocar música electrónica en directo es una verdadera problemática», confiesa. «¿Qué tocar en vivo, qué no, qué libertad de improvisación me dejo? Para mí, el directo debe ser un desafío, hacerlo yo sola todo es imposible y debo presentarlo como algo lúdico para que el público pueda seguir y entender lo que estoy tocando. Como soy sobre todo cantante, las voces tienen el mayor protagonismo». Durante este lustro ha tocado con frecuencia en diversas localidades gallegas, pero también en Portugal, Francia y Suiza. Pop en «galegish» MounQup compone en dos idiomas : gallego e inglés. «Por timidez no me atrevo cantar en francés por el momento», admite. «Los otros dos idiomas que hablo son inglés y gallego, que encuentro muy bonito, simplemente. También me hace gracia obligarme a escribir en lenguas que controlo menos. Es raro, pero me da más libertad para pronunciar las palabras como quiero. Who is she? Camille Hedouin comes from France. She started in music there, at twelve, and embarked on all kinds of bands: r'n'b in the style of Mariah Carey, passing for the ska-punk, depressive folk rock and electronic music, she explains. In 2011 she arrived to Saumede (Ourense) to be part of a collective project of rehabilitation of the village oriented towards art and culture. Shortly before arriving here MounQup began, "at a time of unemployment, without study or work, far from my friends and my family. In complete solitude, with my computer and small instruments, I started composing. A few years later, I managed to buy a looper pedal and I've adapted my songs to play live. " Their sound? All comparisons lead to Björk. It is an evidence that can not be denied, though she also talks about Animal Collective, The Knife, Battles and Tune-Yards. "My lyrics speak of the rough world in which we live and my difficulties to understand and find my place in it. Somehow, they are political but very personal", she adds. Her career so far Path so far. We hardly we know a dozen songs by her, which she has uploaded in her Soundcloud page over the past four years. A few months ago she was selected among the finalists of the demo competition of the collective from Madrid Autoplacer, and she hopes

she will soon record her first album. "I only need to find people for the technical things like mixing and mastering", she says. Live "Playing live electronic music is a real problem", she confesses. «Playing live, why not, what freedom of improvisation does it leave me? For me, live performances should be a challenge, doing all by myself is impossible and I should present it as something fun for the audience to follow and understand what I'm playing. As I am especially a singer, voices have the greatest prominence". During these five years she has played frequently in various Galician towns, but also in Portugal, France and Switzerland. Pop in «galegish» MounQup composes in two languages : Galician and English. "Because of my timidity, I do not dare to sing in French for the moment", she admits. "The other two languages I speak are English and Galician, which I find very beautiful, simply. It also amuses me to be forced by myself to write in languages that I control less. It is rare, but it gives me more freedom to pronounce the words as I want. People around here are amused tohear a French woman singing in Galician with a strong French accent". LA CLASE DE RUFUS WAINWRIGHT RUFUS WAINWRIGHT’S CLASS

Si tuviera que nombrar a un músico actual del que se hablará en la clase de música en los colegios cuando pase un siglo me quedaría con Rufus Wainwright. Este cantante, compositor y músico es hijo de cantantes folk, con seis años tocaba el piano y con 13 ya salía de gira con el grupo familiar. Tiene tanto talento que convierte cada nuevo proyecto en algo tan original como impresionante. En su trayectoria ha publicado desde 1998 nueve álbumes de estudio y tres en directo con un repertorio que va del músico alternativo, al pop más exquisito y melódico, a reinterpretar a Judy Garland o de homenajear a su madre cuando falleció. Desde hace unos años se dedica componer ópera (pretende escribir al menos tres y la segunda la estrenará en 2018). Además ha interpretado canciones para bandas sonoras de películas y colaborado con Elton

John, David Byrne, Boy George, Joni Mitchell, Pet Shop Boys o Robbie Williams. El día 18 de octubre regresará a nuestra tierra para dar un concierto único en Galicia en el Auditorio Mar De Vigo donde presentará su última maravilla “Take All My Loves: 9 Shakespeare Sonnets” (2016). Un álbum donde muestra su devoción por la poesía y por los sonetos de Shakespeare a los que les pone música que acompaña de voces como las de su hermana Martha o los actores William Shatner, Carrie Fisher y Helena Bonham Carter, entre otras. Una oportunidad única e irrepetible de ver en Galicia otra genialidad de Rufus Wainwright.

If I had to name a contemporary musician who will be talked about at the music lessons of the schools in a century, I would choose Rufus Wainwright. This singer, songwriter and musician is the son of folk singers, with six years he played the piano and with 13 he already went on tour with the family band. He has so much talent that he turns every new project into something as original as impressive. In his career he has published since 1998 nine studio albums and three live albums with a repertoire ranging from alternative music to the most exquisite and melodic pop, to reinterpret Judy Garland or paying homage to his mother when she died. For several years he is dedicated to composing opera (he intends to write at least three and the second will be premiered in 2018). He has also performed songs for movie soundtracks and worked with Elton John, David Byrne, Boy George, Joni Mitchell, Pet Shop Boys or Robbie Williams. On October 18 he will return to our land to give an exclusive concert in Galicia in the Auditorium Mar De Vigo. He will give an overview of his career, including his latest wonder "Take All My Loves: 9 Shakespeare Sonnets" (2016) where he shows his devotion to poetry and to Shakespeare´s sonnets, composing music that he accompanies with voices such as his sister Martha or the actors William Shatner, Carrie Fisher and Helena Bonham Carter, among others. Der Hund von Baskerville (Cornet, 1971) En 1974 el matrimonio formado por Jutta Gusenberger y Norbert Berger representó a la República Federal de Alemania en Eurovisión. La competencia fue especialmente dura: Olivia Newton-John se llevó la plata, Peret el bronce y ABBA presentaron Waterloo, relegando al dúo de Düsseldorf a los puestos finales de la

tabla. Conocidos por sus baladas sobre puestas de sol y amores de verano, tres años antes se tomaron la licencia de versionar Paranoid de Black Sabbath traduciéndola al alemán como El sabueso de los Baskerville, en homenaje al chucho infernal de Sir Arthur Conan Doyle. Sencillamente apoteósico.

Rot und schwarz (Polydor, 1969) El “ruiseñor checoslovaco” Karel Gott convirtió la épica antibelicista del Paint it black de los Rolling Stones en un trasunto stendhaliano titulado Rojo y negro. De apariencia frágil y naturaleza introspectiva, Gott ejerció de abanderado de los derechos humanos y embajador de las Bellas Artes. En sus mejores momentos, los arreglos orquestales y el trino característico de nuestro Scott Walker eslavo transgreden las fronteras entre la música pop alemana (schlager) y el folclore tradicional (volkstümlich). O lo que es lo mismo: la banda sonora de una revolución soterrada previa a la caída del Muro.

The "Czechoslovak Mockingbird" Karel Gott became the anti-war epic of Paint it black by Rolling Stones in a Stendhalian transcript titled Red and black. Apparently fragile and with introspective nature, Gott worked as a human rights champion and ambassador of Fine Arts. At his best moments, the orchestral arrangements and the characteristic trill of our Slav Scott Walker transgress the boundaries between German pop music (Schlager) and traditional folklore (Volkstümlich). Or what is the same: the soundtrack of an underground revolution previous to the fall of the Wall.

Lisa Bauer

Song Vom Hilfsarbeiter (Ariola, 1969) Perteneciente a una dinastía bávara de artistas de rancio abolengo, Lisa Fitz adoptó el apellido artístico de Bauer para postularse como estrella internacional de la canción. Su belleza gélida contrastaba con un repertorio

esencialmente luminoso (Nancy Sinatra, Sonny & Cher, The Mamas & the Papas); y aunque su adaptación del clásico de Dusty Springfield no terminase de cuajar en las listas, la idiosincrasia germana con la que tergiversa el calado melodramático de Son of a Preacher Man convierte a este single en un monumento al humor involuntario.

Belonging to a Bavarian dynasty of artists of ancient lineage, Lisa Fitz adopted the stage name of Bauer to run as an international singing star. Her icy beauty contrasted with an essentially bright repertoire (Nancy Sinatra, Sonny & Cher, The Mamas & the Papas); and though her adaptation of the classic by Dusty Springfield did not end curdling on the charts, the German idiosyncrasies with which she misrepresents the melodramatic draft of Son of a Preacher Man makes this single a monument to involuntary humor.

Was hab' ich dir getan? (CBS,1965) De niñas, las hermanas Johanna, Rosi, Eva y Hannelore Jacob solían amenizar a los comensales del restaurante familiar con canciones tirolesas; pero llegada la adolescencia, alcanzaron la fama imitando a The Shangri-Las y The Supremes en los platós televisivos de la ARD. Su popularidad las llevó de gira por Nueva York y Las Vegas, donde se codearon con Louis Amstrong, Sammy Davis Jr. y Duke Ellington. Su réplica en clave aria al Stop! (In the Name of Love) conserva intacto el punto kitsch de su estilismo (pelucones y caniches incluidos).

Johanna, Rosi, Eva and Hannelore Jacob used to entertain diners at their family restaurant with Tyrolean songs; but with the arrival of the adolescence, they achieved fame imitating The Shangri-Las and The Supremes in the ARD television sets. Their popularity took them on tour to New York and Las Vegas, where they rubbed shoulders with Louis Armstrong, Sammy Davis Jr. and Duke Ellington. Their reply in aria key with Stop! (In the Name of Love) remains intact the kitsch point of their styling (wigs and poodles included).

Gerd Böttcher

Ich finde nichts dabei (Decca, 1965) Especializado en grabar versiones de los éxitos estadounidense para el mercado autóctono, Böttcher firmó un contrato de exclusividad con la discográfica Decca a expensas de su productor y arreglista, Werner Müller. Una vez superada su etapa de galán adolescente, saltó de Elvis Presley y Ricky Nelson a Burt Bacharach y The Everly Brothers sin despeinarse el tupé. En su vertiente más dicharachera, consiguió llevarse a su propio terreno el It’s Not Unusual de Tom Jones, que es como imaginarse a Carlton Banks haciendo el paso de la oca.

Specialized in recording versions of American hits for the indigenous market, Böttcher signed an exclusivity contract with Decca at the expense of his producer and arranger, Werner Müller. After passing his time of teen heartthrob, he jumped from Elvis Presley and Ricky Nelson to Burt Bacharach and The Everly Brothers without messing his hair up. In his most chatty side, he managed to create his own version of It's Not Unusual by Tom Jones, which is like imagining Carlton Banksdoing the goose step.

La presencia de veteranos es más reducida en cantidad pero no en calidad, con Michael Rother interpretando el repertorio de su histórica formación anterior (Neu!), los clásicos del revival garajero King Khan & The Shrines o el maestro soul Lee Fields.

Jóvenes, británicos y con pasión por lo que hacen. Flowers son la nueva sensación procedente de las islas del norte, con su segundo disco "Everybody's Trying To Meet You" bastante fresco y muchas ganas de agradar a los melómanos del continente. Todo este rollo es para anunciaros la 49ª edición del Festival de cine fantástico de Sitges que se celebra entre el 7 y el 16 de octubre. Lo siento, pero lo de Internacional de Catalunya me parece una soplapollez, es un festival de “cine”, “fantástico” y se celebra en “Sitges”, lo de internacional es obvio, si no sería la muestra de cortos de mi pueblo, y que es Cataluña pues también, salvo que ahora se hayan vuelto todos los locos con los mapas. Para mi, es el festival de Sitges, ese al que hace 20 años decían de los raritos, no los gays, si no de los que van de negro y no tienen amigos normales, sí, los frikis. cos. En el madrileño parque del Retiro dieron sus primeros pasos humoristas junto con Pedro Reyes o Pablo Carbonell, Carlos Faemino y Javier Cansado. Ellos sacaron a los cómicos de las salas de fiestas y devolverlos a los teatros. Dios salve al absurdo!!!

HEMICICLO SOLAR SOLAR SEMICIRCLE

El estudio Ruiz-Larrea & Asociados, de los arquitectos César Ruiz-Larrea y Antonio Gómez, es el autor de este edificio de viviendas situado en la localidad madrileña de Móstoles, que fue promovido por el Instituto Municipal del Suelo de Móstoles (IMSM) y distinguido por el Colegio Oficial de Arquitectos de Madrid hace unos años entre otras particularidades por la de “seguir el sol”. “La envolvente se concibe como un gran captador solar durante el invierno y un inmenso umbráculo en verano”, como reza la Memoria del proyecto. Gracias a una solución constructiva flexible, con diferente niveles de apertura de dicha piel, favorece plenamente el sistema de ventilación –establecido en base a la regulación óptima de la temperatura del aire-, para alcanzar así el confort higrotérmico de los habitáculos más desfavorecidos de cada vivienda en función de la orientación. Se trata de un edificio bioclimático casi al 100%, complementado con sistemas activos y pasivos, que permiten la progresiva reducción de la

demanda energética y, por lo tanto, el mayor confort de sus usuarios al menor coste posible. Paneles solares para el agua caliente y fotovoltaicos para la generación de energía eléctrica, sistema geotérmico tierra-aire por movimiento convectivo del aire desde el subsuelo, realizado mediante chimeneas de apoyo, y el sistema de efecto invernadero de la fachada –comentado anteriormentehacen que sea posible cubrir por medios renovables hasta el 78% de la demanda de energía de todo el edificio. The studio Ruiz-Larrea & Associates, of the architects César Ruiz-Larrea and Antonio Gómez, is the author of this residential building located in the Madrid town of Mostoles, which was promoted by the Municipal Land Institute of Mostoles (ISMM) and distinguished by the Official College of Architects of Madrid a few years ago among other features becase it "follows the sun". El Plan estratégico de Detroit articula una visión futura sobre la otrora gran ciudad industrial del automóvil en EE.UU. y ahora en evidente decadencia –y bancarrota-. Se ha elaborado una imagen futura que revitalice la metrópoli en base a un proceso público de participación y análisis durante los dos últimos años que engloba a ciudadanos y actores principales que, junto con los expertos, han fijado las bases de la transformación social,

económica y de diseño urbano del Detroit del futuro. Las líneas de acción son: la capacidad cívica, los servicios dotacionales, los tipos de vecindades, las infraestructuras urbanas, los usos del suelo y el crecimiento económico.

Detroit´s Strategic Plan articulates a future vision on the once great automobile industrial city in the US and now in evident decline-and bankrupt-. A future image has been prepared, to revitalize the metropolis on the basis of a public participation process

and analysis during the last two years which includes citizens and key players who, along with experts, have set the foundations of the social, economic transformation and Detroit urban design for the future. The action lines are: civic capacity, public services, the different kind of neighbourhoods, urban infrastructure, land use and economic growth.

Una antigua estación de tranvía neoyorquina, que llevaba más de ochenta años cerrada, la histórica terminal de Williamsburg se convertirá en "el primer parque subterráneo del mundo", según sus creadores. The Lowline será el reflejo bajo tierra del ya famoso High Line (el jardín urbano de última generación construido obre una antigua línea de ferrocarril) y estará en el Lower East Side de Nueva York.

An old New York tram station, closed for more than eighty years, the historic Williamsburg terminal, will become "the first underground park in the world", according to its creators. The Lowline will be the underground reflect of the already famous High Line (the urban art garden built in an old railway line) and it will be in New York´s Lower East Side.

Las propuestas seleccionadas como premiadas en los Premios Galegos de Arquitectura e Rehabilitación 2016 fueron las siguientes: Premio Galego de Arquitectura, se concedió a la Casa Chao, situada en la localidad coruñesa de Corcubión, de los arquitectos Juan Creus y Covadonga Carrasco; Premio Galego de Rehabilitación, ha recaído en los cuatro edificios da sede del Rexistro da Propiedade de Vigo, en la calle Real, de los arquitectos Jesús Irisarri Castro y Guadalupe Piñera Manso. Ha habido un premio especial a la sustentabilidad para el Camping Illa de Ons, elaborado por los arquitectos Juan Zaballa Malcorra y Daniel Guisande Lago. Promovido por el célebre arquitecto británico David Chipperfield, muy vinculado a este territorio en el que lleva veraneando más de 25 años. Su vivienda unifamiliar es una buena muestra de esa sensibilidad por el entorno y un ejemplo de integración. El Plan pretende analizar este territorio de alto valor productivo y poner de relieve el potencial de toda la zona en torno a la ría.

El verano pasado visitamos la última edición del 16º pabellón de la Serpentine Gallery en el Hyde Park de Londres que este año lleva la firma del estudio danés Bjarke Ingels Group (BIG). Se estrena este arquitecto en territorio británico con una especie de “muro descomprimido” en forma de pirámide curvilínea que ha alojado en su interior diversas actividades familiares y una cafetería durante el día, y de noche ha acogido las interesantes Park Nights, con performances de artistas, escritores y músicos.

Su año de fundación fue 1531. El total de monumentos que atesora (según el Atlas de Infraestructura y Patrimonio Cultural de México) es de 2.600, reconocidos por la UNESCO. Disfruta de un sinfín de estilos arquitectónicos inolvidables e imperecederos, entre los que sólo vamos a citar Fortaleza, Gótico, Barroco Churrigueresco, Herreriano y Renacentista. Y está en medio de una tierra de volcanes. Es Puebla, la ciudad de los ángeles, la Ciudad Patrimonio, el corazón de México, con su pasado indígena y español, su batalla contra los franceses, su valor de símbolo para la independencia nacional, su acento, su colorido, su biblioteca, su música, su cerámica y su mole. En esta ciudad debía pensar el cantor de los versos “si muero lejos de ti, que digan que estoy dormido y que me traigan aquí”. Puebla es de una belleza inabarcable. En la Plaza del Zócalo se yergue la Catedral de fachadas renacentistas e interiores barrocos, con las torres catedralicias más altas de toda Latinoamérica y un altar mayor que deja sin aliento aunque hayas perdido la fe. La Biblioteca conserva su mobiliario original en cedro, pino, ayacahuite y coloyote, y más de cuarenta mil volúmenes y cinco mil manuscritos, muchos de ellos incunables. Cruzando otra vez el Zócalo, a tres o cuatro cuadras en dirección opuesta, espera la engañosamente austera fachada del Templo de Santo Domingo, contenedor de un retablo soberbio y un púlpito en ónix que resumen por sí solos el exuberante barroco mexicano. Éste explota en la Capilla del Rosario, con esculturas, pinturas y un minucioso trabajo en oro que cubren cada centímetro mientras las altas ventanas bañan el interior de la Capilla, justificando su sobrenombre de “la casa dorada”. Sólo son cuatro de los muchos iconos arquitectónicos de Puebla, que aún está disponible para caminar, escuchar las voces de mexicanos orgullosos y tranquilos o el tintineo de las marimbas, ver centenares de fachadas en todos los colores coloniales, balcones de forja, molduras y puertas mimadas por el artesano, encanto sin tiempo. Cosas que ensanchan el espíritu y abren el apetito. El mole poblano es la respuesta lírica a esa necesidad tan prosaica. Chocolate, chiles, tortillas, almendras, ajonjolí, nueces, clavo y cebolla. Un perfecto destilado de antiguas recetas indígenas, rescatadas por las monjas de los conventos novohispanos para añadir algunos ingredientes europeos, sin saber que este mole se convertiría en un plato de fama mundial. Acabas de descubrir a qué sabe México. Pero la calle espera y el viaje sigue. Si mueres lejos, que digan que estás dormido.

COCINA PERUANA (II). LIMA: DE MIRAFLORES A BARRANCO PERUVIAN CUISINE (II). LIMA: FROM MIRAFLORES TO BARRANCO

Si Lima es la capital gastronómica de América, Miraflores es el distrito gastronómico por excelencia de Lima. La carta gastronómica de Miraflores ofrece una gran variedad como reflejo perfecto de la cocina de todo el Perú –costeña, criolla, sureña, andina y amazónica-, junto con las mixturas de otros países: chifa –China- y nikkei – Japón-. Comenzamos por un afterwork en La Gastrónoma, un delicioso local con mostrador y estanterías a modo de viejo colmado, que sorprende con una cava sobresaliente al fondo y, lo mejor, unas mesas de jardín en el patio donde poder degustar productos bio locales: cacaos de cooperativas peruanas, como el Morropón y el single plantation Ecoperlacha o el Piura Libre; del obrador destacamos las empanadas o Bourecas de Mariella Böhl –más hojaldradas que las habituales- o la Tarta Tita, rellena con crema de almendras, arándanos y ciruelas bio; y productos ecológicos como la miel blanca de Los Andes producida a más de 4.000 msnm o las mermeladas de productores locales; así como los hongos silvestres de los bosques cusqueños secados y curados por 12 meses –setas nativas pardas y blancas, Boletus, Porcini y Callampa-. Mención aparte merecen los quesos servidos con unos panes excelentes de levadura madre: añejo y maduro de cabra de la granja Los Huarangos, Pachacamac, y el queso ecológico La Cabrita; el Huascarán de más de un año de añejamiento en la frescura de las montañas ancashinas y los Straquicocha, Cholombert y Huachucocha; para terminar con la stracciatella de Cadore, un productor local que sustituye a la burrata italiana en platos como el crostino con tomatitos confitados, arúgula y aceite de oliva. Por último, mención especial a sus vinos locales e internacionales: Corbú de Cantina Clara Marcelli, Rosso di Montepulciano de Poderi Sanguineto -un clásico de la tienda- y el Chianti Paterna. Continuamos adentrándonos en el corazón miraflorino para descubrir Rafael, que junto con El Mercado son los dos restaurantes del afamado chef Rafael Osterling: el primero presume de ser uno de los mejores de Lima, con una cocina de fusión local, mediterránea y asiática; y, el segundo es una cebichería más informal, con el encanto

de un invernadero, donde degustar los clásicos gastronómicos peruanos mezclados con unos tragos de pisco sours. Siguiendo por la misma calle de Rafael, llegamos a una deliciosa terraza-restaurante llamado La Plazita en el que degustar sus patacones –con guacamole, pico de gallo y crema agria-, una ensalada de quinua o un tiradito apaltado como platos más típicos, en un local en el que lo mejor es su ambiente y los excelentes vinos servidos por copa. Muy cerca están Papacho´s y La Central. El primero, del chef Gastón Acurio, es una especie de cadena de hamburguesas de autor –veggie burguers- con muchos más platos típicos peruanos en los que la patata es el ingrediente estrella –con más de 600 variedades descubiertas por el momento en el país, sin contar con las desconocidas en la selva amazónica-. Los tragos son variados y muy ricos aquí. El segundo, del chef Virgilio Martínez, presume de ser un elegante restaurante especializado en los productos de origen en altura (5.000 msnm) y suele estar en la lista de los World´s 50 Best Restaurants de Latinoamérica. Justo pegado a Papacho’s está Amaz –del que hablamos en la anterior entrega-, que junto con Malabar son los restaurantes del conocido chef Pedro Miguel Schiaffino, que persigue indagar en la cocina amazónica colaborando con comunidades indígenas, a la que dedicaremos otra entrega en próximos números. En el número anterior hablamos también de la cocina norteña que practica desde La Picantería de Miraflores el chef Héctor Solís, heredero de la cultura moche que reivindica esta cocina regional, cuna del cebiche. Como locales más modestos –pero no menos sugerentes- Isolina, ya en Barranco, es una taberna peruana con ambiente de otra época y, a la vez, muy actual. Cocina tradicional de la abuela como la sangrecita, acompañada de cervezas artesanales y unas tartas caseras deliciosas. Para terminar el recorrido pedimos un helado artesanal en el cercano Molle café-bistró, y lo degustamos mientras el paseo continua por este antiguo barrio que conduce, escaleras abajo, hacia los baños, con el mar Pacífico de fondo. If Lima is the gastronomic capital of America, Miraflores is the gastronomic district of Lima par excellence. Miraflores´ gastronomic menu offers a great variety as a perfect reflection of the cuisine of the whole Peru -coastal, Creole, Southern, Andean and Amazonian-, along with mixtures of other countries: chifa -China- and nikkei -Japón-. We start with an afterwork in La Gastrónoma, a delicious venue with a counter and shelves as an old grocery store, which surprises with an outstanding cava in the background and, the best, some garden tables on the patio where you can taste local bio products: cocoas from Peruvian cooperatives, as Morropón and Ecoperlacha single plantation or the Piura Libre; from the bakery we must mention the pies or Bourecas by Mariella Böhl -more flaky than the usual ones - or the Tarta Tita, filled with almond cream, blueberries and bio plums; and organic products like white honey from the Andres produced more than 4,000 meters high or jams from local producers; also the wild mushrooms from the forests of Cuzco, dried and cured for 12 months -native brown and white mushrooms, Boletus, Porcini and Callampa-. Special mention for the cheeses, served with excellent breads made with sourdough starter: mature and aged from the goats of the farm Los Huarangos, Pachacamac, and organic cheese La Cabrita; the Huascaran with more than a year of aging in the freshness of the mountains of the Ancash and the Straquicocha, Cholombert and Huachucocha; to put an end, the stracciatella by Cadore, a local producer who replaces Italian burrata in dishes as crostino with confit tomatoes, arugula and olive oil. Finally, special mention to local and international wines: Corbu by Cantina Clara Marcelli, Rosso di Montepulciano by Poderi Sanguineto -a classic in the shop- and the Chianti Paterna. We continue penetrating into the center of Miraflores to discover Rafael, which along with El Mercado are the two restaurants of the famous chef Rafael Osterling: the first boasts of being one of the best in Lima, with a fusion cuisine, local, Mediterranean and Asian; and the second is a more casual "cebichería", with the charm of a greenhouse, where you can taste the

Peruvian gastronomic classics mixed with a few drinks of pisco sours. Continuing along the same street of Rafael, we arrive to a delightful terrace-restaurant called La Plazita where you can taste their fried patacones, with guacamole, "pico de gallo" and sour cream-, a salad of quinoa or a "tiradito apaltado" (a kind of ceviche) as the most typical dishes, in a local where the best is its environment and the excellent wines served by glass. Very close are Papacho's and La Central. The first, owned by the chef Gaston Acurio, is a kind of signature hamburger chain -veggie burguers- with many more Peruvian dishes where the potato is the star ingredient, -with more than 600 varieties discovered so far in the country, without counting those unknown in the Amazonian jungle-. The drinks are varied and very rich here. The second, owned by the chef Virgilio Martinez, claims to be an elegant restaurant specializing in products originated in height (5,000 meters) and is usually on the list of the World's 50 Best Restaurants in Latin America. Just next to Papacho's is Amaz -which we mentioned in the previous issue-, which along with Malabar are the restaurants of the renowned chef Pedro Miguel Schiaffino, which aims to investigate the Amazonian cuisine collaborating with indigenous communities, to which we will dedicate another article in upcoming issues. In the previous issue we also talk about the northern cuisine practiced in La Picantería in Miraflores by the chef Hector Solis, heir to the Moche culture which claims this regional cuisine, birthplace of ceviche. If we have to mention more modest venues - but no less suggestive - Isolina, already in Barranco, is a Peruvian tavern with an atmosphere with remembers old times and at the same time, very modern. Traditional cuisine as that of the grandmothers, accompanied by home made beers and sme delicious homemade cakes. To finish the tour we ordered an ice-cream in the nearby Molle café-bistro, and we tasted it as we continued the walk through this old neighborhood that leads, downstairs, to the bathrooms, with the Pacific Ocean in the background. Bodegas Jiménez Landi. El Real de San Vicente (Toledo). D.O. Méntrida El nombre de Piélago coincide con el del monte en el que se encuentran las viñas utilizadas para elaborar este soberbio tinto monovarietal. Se trata, por tanto, de un vino que recoge la singularidad de las Garnachas de este pueblo toledano. Valoración de 92 y 94 puntos en Parker y Peñín respectivamente, lo que le hace figurar a la cabeza de los vinos de la zona. Se elabora con viñas de entre 40 y 70 años. Criado durante 15 meses en barricas de roble francés de 500 y 3.000 litros. •Uvas: 100% Garnacha. •Nota de cata: color rojo granate bien cubierto; en nariz complejo, con aromas a frutas maduras, hierbas aromáticas y maderas balsámicas; en boca es sabroso, goloso y envolvente, equilibrado, maduro, amable y fresco. Final limpio y persistente. •Maridaje: guisos de carne, platos elaborados con setas y carnes al horno. •Valoración: 23€.

The name of “Piélago” is also that of the mountain where the vines used to produce this superb red varietal are located. It is therefore a wine that reflects the uniqueness of this Garnachas grapes from this village in Toledo. 92 and 94 points respectively in the Parker and Penin guides, which makes this wine appear at the head of the wines of its area. It is made from vines between 40 and 70 years old. Toro Un vino joven de autor, de una zona continental, muy diferente del estilo típico de la región de Toro, con crianza en fudres y barricas de roble durante 5 meses, sin filtrar ni clarificar. La primera añada del nuevo Tío Uco de un autor muy especial. •Uvas: Tempranillo y Garnacha. •Nota de cata: color intenso rojo picota; en nariz, frutos rojos y negros maduros, recuerdos a especias dulces y frutos del bosque; boca goloso, paso muy suave y elegante. •Maridaje: quesos, embutidos y patés. •Valoración: 11€.

Los hermanos Roca en el Liceo

Durante la última quincena de septiembre se ha abierto en el Teatro Liceo de Barcelona un multiespacio llamado Ópera Samfaina, compuesto de 5 zonas: La Vermutería –de tapas-, Rocambolesc –la heladería de Jordi Roca–, la Odissea, la Diva y el Mercat; todos diseñados por el escenógrafo de ópera Aleu. Los chefs del Celler asesoran el espacio más espectacular que es Odissea, una mesa redonda para 16 comensales dentro de una

sala aislada y envuelta en pantallas de 360º que mostrarán un documental de 20´sobre la historia gastronómica catalana. No bajará de los 40 euros. En la Diva se harán degustaciones –entre 25-30 euros- en las que la esencia del plato se explicará mediante un sistema audiovisual. El conjunto promovido por Tast es una cueva gastronómica y cultural muy impactante.

Amazónico, viaje a la selva!

La apertura de la temporada en Madrid es sin duda éste restaurante exótico con mezcla de producto y cocina amazónica junto otras como la peruana, japonesa, india o brasileña. Derroche de creatividad en platos y espacio –diseñado por Lázaro RosaViolán-, que asombran tanto por la forma de elaborarlos –showcooking incluido-, como por el aire salvaje de la decoración. Tiraditos y ceviches conviven con carne de Kobe, teppanyaki y barra de sushi, así como con picaña, rodicio y hornos tandoori, además de un auténtico asador de piñas, que es el plato estrella. De la zona del Amazonas importan las frutas tropicales con las que elaboran algunos platos.

The opening of the season in Madrid is without doubt this exotic restaurant that mix the Amazonian products and cuisine alongside with others such as the Peruvian, Japanese, Indian or Brazilian. A display of creativity in dishes and space - designed by Lázaro Rosa-Violán-, which are astounding both for the way of cooking -showcooking included-, and for the wild air of the decoration. Tiraditos and ceviches coexist with Kobe beef, teppanyaki and sushi bar, as well as picaña, rodicio and tandoori ovens, together with an authentic pineapple grill, which is the star dish. They import the tropical fruits with which they made some dishes from the Amazonia.

El mito de la cocina vasca contemporánea aterriza en Negreira con un negocio compartido con otros amigos. Una casa rural, que abrió en septiem-

bre, de tan solo 7 habitaciones y con un restaurante de pocas mesas. En Santiago Bidea se fusionará la cocina gallega con la del País Vasco, “los platos tradicionales se van a someter a una especie de deconstrucción” asegura el chef, que asesorará a Oihana Chico –ha sido discípula suya en San Sebastián durante año y medio-, que será quien cocine. Ubicado en la parroquia de Gonte, Negreira, ha surgido de una casualidad: probando “el mejor chuletón de su vida” en Casa Barqueiro.

The myth of the contemporary Basque cuisine lands in Negreira with a restaurant shared among several friends. A country house which opened in September, with only 7 rooms and a restaurant with few tables. In “Santiago Bidea” there will be a mix of Galician and Basque cuisine, "the traditional dishes will be something like deconstructed", the chef says, who will advise Oihana Chico – his disciple in San Sebastian for a year and a half- who will be the cook. Located in the parish of Gonte, Negreira, it was created by chance: trying "the best steak of your life" at Casa Barqueiro.

... Es así como se le conoce a Iolanda Bustos, con más de 700 flores y hierbas catalogadas (y en uso) para armonizar en su cocina. Regencós, en la Costa Brava, entre el mar y la montaña, fue el lugar elegido para levantar su restaurante en donde antes había un teatro. Hojas de verduras en tempura, con sus pétalos y demás condimentos sutiles como el caviar son la base de los platos, a los que les añade otros productos más comunes como foie gras, atún o mejillones. Cocina de cuento con encanto visual y olfativo. Y de postre el florilegio, con frutas y flores, cómo no!

Regencós, on the Costa Brava, between the sea and the mountains, was the place chosen to raise her restaurant, in a place where there was a former theater. Leaves of vegetables in tempura, with its petals and other subtle seasonings such as caviar are the basis of the dishes, to which she adds other more common products such as foie gras, tuna or mussels. A tale cuisine with visual and olfactory charm. And for dessert, the floriego, with fruits and flowers, of course!

Un local que propone que sea el mismo cliente el que diseñe su propio cóctel de entre una larga y cuidada lista de bebidas y acompañamientos que incluyen diferentes tipos de botánicos, cítricos, especias y productos de temporada. Aconsejado solo si así lo requieres por el camarero, o como ellos se autodenominan, “prescriptores”. Puro self-service de lujo.

Al gin tonic le queda vida para rato, sin embargo después de intentar meter todo tipo de alimento en la copa llegándola a convertir en una auténtica ensalada bebible; parece que cada vez hay una mayor tendencia a tomarse las copas en pequeñas

cantidades. Más económico, más saludable y práctico como aperitivo. En Madrid lo sirven en Vacaciones , Arzábal y Celso y Manolo. En Barcelona son conocidos los de Torre Rosa y Primavera Café.

No pueden faltar las cervezas artesanales, el guacamole, los huevos benedictine o el cava. Los primeros en ampliar horario han sido los encargados de la Manzana Mahou 330 de Madrid, pero en Galicia no nos quedamos cortos: el Pacífico en Ourense o Pandelino en Coruña pueden dar buena cuenta de ello.

— El plan muermo de los 80 es el super plan del 2016. Bienvenidos a la era en la que los pringados dominamos el mundo.

Cuando era preadolescente y mis padres no me dejaban salir más que de pascuas en ramos -esto es, un viernes o un sábado cada mes o cada dos meses, coincidiendo habitualmente con el cumpleaños de alguna amiga o con alguna fiesta como carnaval o fin de curso-, mis fines de semana tenían un esquema predeterminado, pero eficaz: mis amigas y yo quedábamos en el videoclub, elegíamos una peli yo votaba siempre por gore o terror ochentero, y ellas por Meg Ryan besándose con alguien: en el Empire State, en una cafetería de New York, en un portal ideal de la Sexta con Madison... era igual, besándose y punto-. Luego íbamos a mi casa, tomábamos al asalto los sofás, pedíamos pizza y hacíamos palomitas en el microondas. Y nos parecía un gran plan (bueno, yo lo encontraba

más divertido si había posesiones o vísceras por todas partes, pero me valía). Una nueva generación de jóvenes adultos ha nacido, y pretende combinar las salidas nocturnas no, jamás dejaremos los bares, larga vida a la hostelería nocturna- con noches de sofá, peli y manta al más puro estilo 1990. A ello han contribuido múltiples factores, claro: la altísima calidad de los últimos grandes productos televisivos -The Fall, Hannibal, Stranger Things, Fargo, American Horror

History-, la proliferación de las plataformas de cable, con sus múltiples opciones multicanal y sus videoclubs online, y la llegada a España -¡¡Aleluya!!- de productos como Filmin o Netflix, que permiten, por un coste muy muy bajo, un acceso casi ilimitado a contenido audiovisual de calidad, y encima clasificado a tu gusto. El fenómeno empieza a convertirse en tendencia viral cuando traspasa las fronteras de lo intrínsecamente familiar, y quedarte en casa para ver una peli no es ya el plan para una noche tranquila, sino un motivo para llamar a tus amigos y organizar una fiesta en torno a la pantalla. Sí, como en 1990. Aunque ahora puedes cambiar la pizza por sushi y la CocaCola por un gin-tonic si prefieres. Y con la ventaja de no tener ya espinillas en la barbilla.

Sí, lo sé, lo sé. Todos querríamos vivir en un verano eterno. Levantarnos con el sol bien luminoso alumbrando ya la mañana, ver anochecer pasadas las 10, pasar el día en tirantes y comer de terraceo... pero, en realidad, nuestro cuerpo está diseñado para un biorritmo algo diferente, y aunque a nadie le amarga un dulce, no podemos alimentarnos de bombones. Por eso necesitamos el otoño. Especialmente, el otoño gallego. Aunque evidentemente es imprescindible abrigarse más -bajan las temperaturas, eso es un hecho, y tener cuidado con la lluvia, el otoño en Galicia tiene un montón de grandes y saludables ventajas: Más -y mejoreshoras sueño. Nuestro cuer-

po necesita entre 7 y 9 horas para descansar de verdad, pero las noches de verano se prestan a la jarana. Las noches de otoño son propicias para el descanso, con más horas de oscuridad y mejor temperatura para el sueño. Además, como todavía hay bastante luz, ni nuestro ánimo ni la vitamina D se resienten. Más -y mejor ejercicio-. Aunque hayas pasado el verano paseando por la orilla, desengáñate, eso no es hacer deporte. Recorrer unos 5 kilómetros diarios a buen ritmo -por debajo de los 50 minutos- sí lo es, pero eso es impensable a 35 grados. Por eso el otoño fomenta la práctica deportiva. Menos agresiones para tu pelo y tu piel. En Galicia el otoño no es especialmente frío -aunque

sí puede ser húmedo-, por lo que, pese a lo que puedas creer, es una etapa estupenda para lucir una piel y un pelo estupendos. A salvo del sol, el cloro y el salitre, y mejor hidratados, se verán mejor que nunca. Y por supuesto, buena mesa. Y no nos referimos solo a que sea deliciosa -que obviamente también-. El otoño trae a nuestra mesa las castañas, las nueces y las avellanas, llenas de omega3. También las ciruelas y las mandarinas y naranjas, llenas de fibra y vitaminas. Y no olvidemos las setas y champiñones, deliciosos y muy saludables si se modera su consumo.

¿A LA TERCERA VA LA VENCIDA? THIRD TIME LUCKY?

— Y aquí seguimos, casi un año después de que se disolviesen las cortes generales y con dos votaciones en medio, y entre pitos y gritos los españolitos -enorme, bajitos- seguimos sin gobierno. ¿Se avecinan terceras elecciones? Y lo que es más importante ¿a la tercera será la vencida?

¿Saben esa teoría que dice que la realidad siempre supera la ficción? Pues ni en los mejores sueños de Saura, ni en los más desternillantes guiones de Jose Luis Cuerda, ni en las locuras más surrealistas de Buñuel, jamás un español por creativo y desopilante que fuese habría imaginado una historia como esta. Imagínense un pueblo que convoca elecciones generales. Se disuelven las Cortes, se padece una eterna y reiterativa campaña electoral -¿para cuándo un buen brainstorming sobre cómo convertir las campañas en algo entretenido?-, la población vota, se escrutan los resultados, comienzan las negociaciones para formar gobierno... pero no hay manera. Mariano no quiere saber nada de Pablo, Pablo le hace ojitos a Pedro pero Pedro prefiere a Albert, y como Albert y

Pablo no se hablan... total, que, unos por otros, la casa sin barrer. Así que se acaban los plazos. Porque -menos mal- hay unos plazos para estas cosas. Y como no ha habido forma de montar gobierno, pues hay que volver a votar. Que uno piensa “pues oye, se ve que lo que decidimos la primera vez no estaba bien, si es que ya no sabemos ni votar”. Y votamos de nuevo. Otra vez campaña electoral. Otra vez mítines y papeletas multicolores en el buzón. Otra vez un domingo de votaciones. Otra vez recuento electoral. Y -oh, sorpresa- otra vez el mismo resultado. Vale, no exactamente el mismo. Algunos han ganado un par de votantes. Otros han perdido dos fieles. Pero, en resumidas cuentas, el balance final no ha variado... y por lo tanto, la formación de

gobierno sigue estando lejos. Y a lo tonto, a lo tanto, ha pasado casi un año. Un año de gobierno en funciones, un año de mítines, tertulias, papeletas y recuentos... Un año de pesadilla -o de risión, depende del sentido del humor de cada uno-. Y mientras los candidatos agotan -de nuevo, otra vez, viva el día de la marmotalos plazos, los españolitos -enormes, bajitos- nos preguntamos qué demonios tiene de malo lo que hemos votado ya dos veces, y por qué se empeñan en hacernos creer que nos hemos equivocado -dos veces- y que debemos cambiar nuestro voto. Y también nos preguntamos, claro, si el refranero será efectivo esta vez, y a la tercera irá la vencida.

You know the theory that says that reality is always stranger than fiction? Well, the truth is that not even in Saura´s best dreams, neither in the most hilarious scripts by Jose Luis Cuerda or the most surreal follies by Buñuel, never a Spanish man, no matter how creative or hilarious he was, would have imagined a story like this. Imagine a town were where general elections are called. The Cortes are dissolved, there is an eternal and repetitive election campaign –when shall we do a good braimstorming about how to make entertaining campaigns? - people vote, the votes are counted, the negotiations to form a government begin ... but no way. Mariano wants nothing with Pablo, Pablo is making eyes to Pedro but Pedro prefers Albert, and Albert and Paul did not speak each other ... In the end, nobody brings a solution. So deadlines finish. Because, thank God, there are deadlines for these things. And as it was impossible to form a government, we have to vote again. And you think: "well, maybe what

we chose the first time wasn´t right, we even do not know how to vote”. And we vote again. Another election campaign. Again speeches and multicoloured ballots in the mailbox. Again a Sunday with elections. Again the counting. And oh, surprise again the same result. Okay, not exactly the same. Some have won a couple of voters. Others have lost two faithful fans. And as time goes by, the candidates – again, long live groundhog day – reach the deadlines, the Spanish people – tall and short- wonder what the hell is wrong with what we have voted twice now, and why they insist on making us think that we were wrong –twice - and that we must change our vote. Se cumplen cuatro años de la creación de Kaöri Sushi Galego. Con este motivo se celebró una fiesta degustación para agradecer a sus clientes, proveedores y colaboradores la confianza y fidelidad mostrada durante estos años. A tasting even was organized for the fourth anniversary of the creation of Kaöri Sushi Galego, in order to thank its customers, suppliers and partners the trust and loyalty shown over the years. The celebration took place on Saturday 17th September in the Pañol of the the Real Club Nautico de La Coruña. A party where they not not alone, Olga Albariño and gin Vanagandr were responsible for the pairing, in an event in which Antonio Reboredo, co-founder and main sushi main at the Kaöri, delighted the attendees. Olga Albariño, as a collaborator in this event, welcomed the guests by offering its first vintage 2015. Olga is elaborated in O Val Do Salnés, a delicious white wine that, as demonstrated in this event, is the perfect pairing for Japanese food and delighted all the attendees. It is a wine with low acidity, without forgetting that we are talking about an albariño wine, easy to drink, and we predict it will have a great success. Hay que felicitar a la organización por conseguir un eventazo con avión incluido, customizado con el lema #pullandbearhouse y por un trabajo en redes sociales que días antes dejaba ver, paso a paso, el montaje de la fiesta, creando así toda la expectación posible. Ahora sólo nos queda esperar otros 25 años más para la próxima.

VIVIR EN CASA DE LA ABUELITA

LIVING AT GRANNY´S HOUSE

— Comida casera, cama y techo a cambio de ayuda en el hogar y compañía. Cada vez más jóvenes estudiantes se decantan por la opción de compartir piso... con una persona mayor. El proyecto “Homeshare” crece, y tiene muchas ventajas.

Estudiar fuera de casa puede llegar a ser misión imposible para muchos jóvenes: a las cada vez más altas tasas de matriculación hay que sumar la práctica incompatibilidad entre estudios -que hoy cuentan con una enorme cantidad de horas presenciales- y trabajo, y los inevitables gastos de alojamiento y manutención. Bueno, inevitables... hay quien ha encontrado una opción interesante que permite a quienes se acogen a ella ahorrar estos gastos y al mismo tiempo hacer algo bueno por la comunidad: compartir piso con un anciano. Programas como Homeshare ofrecen este tipo de opciones, cada vez más comunes en los centros de estudios españoles: una persona mayor ofrece su domicilio para el alojamiento de un estudiante, con habitación propia y derecho a comida, a cambio de que ayuda en las tareas del hogar y compañía. Algo parecido al trabajo de un “au pair” pero con una ventaja muy interesante: en lugar de conversar con niños de 5 años, lo haces con adultos. Este tipo de proyectos terminan siendo experiencias muy interesantes socialmente, permitiendo por un lado las relaciones interegeneracionales, y por otro activando tanto la vida de los ancianos como la experiencia de los más jóvenes. Casi todas las universidades públicas españolas ofrecen esta opción, consulta en tu rectorado.

Programs such as Homeshare offer such options, which are becoming more common in the Spanish study centres: an older person offers his/her home for student accommodation, with private room and food, in exchange for help in the house work and company. Something like the work of an "au pair" but with a very interesting advantage: instead of talking to a 5-year-old child, you talk with adults. Such projects end up being very interesting experiences, allowing on the one hand the intergenerational relations, and on the other by activating both the life of the elderly as the experience of the younger ones. Almost all Spanish public universities offer this option, ask in your rector’s office.
