So here we are 6 months on from the last issue, and already it feels like we are heading into Winter with the wet, windy, cold weather and nights drawing in. The pubs have all had a great summer and have lots planned in the run up to the Christmas period, which we will give you a taste of in this magazine.

We have so much to tell you about this issue with our “have you tried?” and “fancy a trip?” articles you can also find out where Michael purchased that huge Moose's head from, at The Crown. We are running our dog of the issue competition again and announce the winner of our last one and of course not forgetting all the action happening across the pubs in the coming months. Feature | Dogs for the deaf Kneaded!

Dogs for the deaf KnEADed! Here at KnEAD Pubs we absolutely love dogs and we are lucky enough to have some fantastic customers that come in with theirs and let us fuss them. One such customer was John Milnes who works with puppies and trains them for people with hearing difficulties and for the deaf.. The puppies are not only adorable but also loyal, kind, hugely alert and intelligent - so we decided we wanted to help. We have all heard of dogs for the blind but dogs for the deaf are vital too! How can a deaf person hear a speeding car, oven timer or fire alarm without the aid of their trusted companion?

Training each dog as you can imagine isn't cheap and so we thought we would raise the huge amount of ÂŁ10,000.00 which will be used to train just one dog and in return he or indeed she will be called Crown.

About the Charity:

Hearing Dogs for Deaf People is a national charity, and centre of excellence in training hearing dogs to alert deaf people to everyday household sounds and danger signals in the home, work place and in public buildings.

Hearing Dogs was launched at the world famous Crufts dog show in 1982. Since then they have created over 1,600 life-changing partnerships between deaf people and hearing dogs in the UK. There are currently over 750 working partnerships in the country.

They train hearing dogs to alert deaf children and adults to important household sounds and danger signals such as the alarm clock, doorbell, telephone and smoke alarm providing independence, confidence and valuable companionship.

Hearing dogs alert their deaf recipients to household sounds by touching them with a paw or nudging with a nose to gain attention. The recipient then asks the dog 'what is it?' by voice and/or hand command and then the hearing dog leads the recipient to the source of the sound. For danger signals such as the smoke alarm, the hearing dog will alert the recipient in the same way, but when asked 'what is it?' the dog will lie down to indicate danger.

The breeds they train to become hearing dogs are typically Labradors, Golden Retrievers, Cocker Spaniels, Miniature Poodles and Cavalier King Charles Spaniels. They do train a small number of Labrador crosses and Cocker crosses alongside these breeds in order to ensure we have the right dog to match each and all of their applicants. They have their own breeding scheme and adopt puppies from breeders to train. They also adopt from rescue centres as and when a suitable puppy is identified. The training of a hearing dog takes around 18 months, consisting of initial puppy socialisation training (eight weeks to 12-14 months of age) with volunteers before moving onto sound work training at one of their two Training Centres. During this period a suitable recipient for each dog is identified. The recipient and hearing dog then spend a period of time training together before qualifying as an official partnership.


Hearing dogs are easily recognisable by their distinctive burgundy jacket and lead slips, which helps to identify the recipient’s otherwise ‘invisible’ disability, bringing increased peace of mind for the deaf person. Deafness can be a very isolating and lonely disability, a hearing dog can offer a life-transforming practical alternative to technical equipment – particularly for those deaf people who find such equipment restricting – with the added benefit of giving the recipient greater independence, increased confidence, companionship and a feeling of security.

KnEAD Pubs | What’s Happening Well in our last issue of KNEAD to Know we set up a competition for Dog Of The Issue and we were absolutely overwhelmed by your huge response.

KNEAD Pubs comprises of a huge number of people and sometimes it is difficult to recognise each and everyone of them but we are aware of all our staff's contributions and know that the organisation wouldn't be half as good without them.

However, like in everything there can only be one winner and after a lot of deliberation we decided that ‘Lizzie Cuteface’ really had to win. Lizzie is always soaking up the atmosphere in Smith’s of Bourne. She even has her own Facebook page!! So huge congratulations to her and her owners. We have got together with Carlsberg to give one of our employees a well deserved thank you for all their hard work and continued support of the business. We will be giving each winner some Carlsberg goodies and a voucher for £50.00 to be used in any of our establishments.

Toni Bellward our Head Receptionist at The Crown has been chosen as our employee of the issue. Toni has been working at The Crown for 8 years and really helped us settle in when we took it back over last year. Toni was tasked with growing the rooms and has really risen to the challenge hitting all targets set. She has helped us set up our new reservation system and trained the rest of the staff on how to use it. Toni has a great rapport with both our customers and staff alike. She is always pleased to see you and really makes our reception function to the best of its capabilities.

Our transformation of The Crown continues With The Crown being the newest member to our group it feels like it is here that has seen the greatest transformation. Since our last issue we have completely overhauled the front restaurant and as you can see from the photo it is unrecognisable.

We have created a raised soft seating area around the front bay window, where you can sit leisurely and look into the beautiful town square. The colours and decor are very calm and toned down for Michael - the walls are painted a simple dove grey and we have carried the seating through from the back restaurant. The original stone walls have been exposed and instead of filling the walls we have kept it very clean with just a Pashley Bicycle hanging in the centre. By all of the positive comments we think you will love it!

We all had so much fun last year with the Christmas Advent calendar that we are bringing it back this year - through the whole of December we will be awarding a daily prize to the best Christmas selfie using our Xmas dress up box!

Also it often gets overlooked but our Esso conference room is available to hire. It is fully equipped and a great venue for a meeting or get together especially after all the brain storming you can pop opposite for a few drinks or even ask us to bring them to you!

A Full day is £150.00 & Half day £100.00.

We are still going through all the bedrooms and updating them - it is quite a task but we are more than happy with the calm colours, wrought iron beds, new furnishings and bathroom changes so far… If you do book in for a stay we are sure you will love it too!

The Crown is probably our busiest site through the Christmas period probably due to its size and great location for all those Christmas parties. The menus are all ready so if you are still looking for a venue make sure you keep us in mind.

Our Pubs | Smith’s of Bourne

A summer of festivals at Smith’s

Chris and Ashley have had a fantastic first summer and really started their time as Managers with so much passion and excitement that we think it has come through to you our customers and the pub itself. The Sausage & Cider Festival on August Bank Holiday weekend was fantastic including 35 real ciders, Groovy Foods sausages & live music. Everyone had so much fun and the sausages went down a storm!

In a bid to use the garden to the very last this year the guys have decided to put on an ‘End of Summer Festival’ from 25th -27th September where we will be celebrating all things beer and generally just having a good time with some live bands and delicious food. The festival will see the most bands Smith’s has ever had on over one weekend. So we are sure there will be something in their to tick your music box - make sure you keep a look out for a line up list around the pub.

November is always a bit of a boring month for us as we are gearing up for Christmas so we have decided to do something about it! We are having a Welsh themed month with all our Real Ale coming from Wales!

Finally, it’s coming around thick and fast, Christmas! In December we will be holding a Christmas market - it is still in the planning stages but we have been speaking to local arts and crafts businesses who will set up stalls and we will have plenty of mulled wine, mince pies and carol singing to get us all into the festive spirit. At some point we expect Father Christmas to pay all the children a visit too! Once we have everything settled we will let you all know.

Will Fry

A fond farewell for much loved Landlord! After 8 years together Will Fry our much loved Landlord of The Tobie Norris decided it was finally time to move on to pastures new. He was such a well loved character and part of our team that we have found him very hard to replace. Will has started working for Oakham Ales so we are lucky enough to still see him regularly and also as a valuable member of Uffington Cricket Club he can still be found drinking after a match with the team!

We held a send off for him in the pub and I am sure many of you popped in for a drink and a nibble! We all would like to wish him the best of luck with his new adventure!

Our Pubs | The Prince Rupert

Summer of festivals at The Prince Rupert

The summer has been fantastic at The Prince Rupert this year and despite the lack of sunshine we have still managed to get out & enjoy the courtyard area. The Sausage and Cider Festival 27th-31st August was a real blast with live music on the Thursday and the Friday evenings and over 30 different ciders and 15 sausages including some local from Porters (on Newark Marketplace). Everyone had a great time and drank us dry! We absolutely love Newark as there is always something happening in the town, and September is no exception. The Newark Blues Festival ran from Friday 11th to 13th September. Keeping up with tradition, and as we are a live music venue we had 3 bands in just 1 day. The Main event was hosted in Newark Castle Gardens but we definitely got in on the action with all our bands being free entry.

Parliamentary Beers took place 4th-10th Sept with votes being counted and announced on 12th Sept. Max strength 4.2%, we had 2 beers on from a local brewery (ours being Mallard Brewery, brewer Steve Hussey). There were ballot boxes for the public to vote which beer is best and the winning beer goes on in The Houses of Parliament. One form to be given out per pint. One pint = one vote.

The pubs in Newark are great at promoting each other and getting together to create events - As part of PINT (Pubs In Newark Together) we are taking part in Alloween. All pubs &

staff are to be dressed up and we are putting on extra dark beers to celebrate all things spooky!

The Civil War Ale Trail has been great for us & The Civil War Centre is bringing a lot of custom our way. Nickii was on BBC Radio Nottingham early in August discussing it along with a member of the Newark Business Club. We are hoping to put a Civil War themed dish on our menu soon so watch this space and let Nickii or Marcin know if you have any suggestions.

Nearly every week we are asked, “Where did Mick get that from?� and on a weekly basis you see him walking into the pubs with some new treasure under his arm to place somewhere in one of the pubs. So we thought we would take an item each issue and tell you exactly where we did get it from and what the inspiration, thinking and ideas behind it are. 12

When we first opened the “Red Cow” restaurant at The Crown one of the most talked about pieces right from the very beginning had to be the giant Moose’s head above the fireplace. It hangs there boldly keeping order with a keen eye on all our diners and staff alike and whilst taxidermy isn't for everyone, we have always thought that he looks a happy old thing - unlike some of the horrified hogs and wild boar you see in so many other establishments. The moose was originally from Sweden and by all accounts probably isn't that old (1970’s) but it has been remarked upon ever since we hung him and people are always asking where we found him.

Well, let me let you into a little known secret - There is an amazing antiques fair in a little place called Ardingly - being so close to London it is fair to say it is very cosmopolitan with the very trendy venturing out to fill their urban pads with cool & quirky finds.

Spread across acres of prime show ground, this is a comprehensive shopping experience, with traders and visitors piling in for the two day event from all over the world. Savvy homemakers, stylists and those in the know pick over the cream of the crop in British, European and worldwide antiques from all eras. Just wandering the endless avenues gives you a buzz, especially when the sun decides to shine. Katie Grassby is style director at clothing company White Stuff while Lou Burnett is head of interiors. Both were out hunting for props for their ninety UK shops and a handful of newly opened international stores whilst we were last there. Among their finds were a battered blue reclaimed airline storage box bought from industrial furnishers Paul & Lucy Vintage, a Dutch sage green bread bin and a vintage suitcase.

dealers and buyers regularly attend the largest IACF event in the south of England. There are Up to 1,700 stalls housing thousands of goods – from fine antique furniture to delicate ceramic. It also has a reputation as one of the UK antique fairs where quality European decorative items can be found. With a combination of inside and outdoor stands, the mid week fair is the perfect opportunity to indulge in a little vintage shopping – or hours of professional trading!

We have stumbled across such a wonderful wide variety of goods ranging from our tartan lamp shades with feathers made by Valerie to a lovely lady who just sells cushions in the hundreds, and comes all the way from Wales. However you have to be quick as she sells out in minutes! From great big stone urns and statues for the garden to Champagne Barrels sold by the most French looking man I have ever seen (all he was missing was the string of garlic.) It is a great day out and you can spend hours just wandering around. The antiques range from the very old to fairly modern - instruments turned into lights and old cinema chairs were scattered amongst 17th century mahogany tables. So all that’s left to tell you is how to get there: By Road: One hour from London, 30 minutes from Brighton. Near M25 & M23. Due to local highway restrictions we are not allowed to use temporary signage for this fair, please follow signs for the 'South of England Show ground'. By Rail: London Victoria to Hayward's Heath

Farming | On the KNEAD Farm

On the KnEAD Farm Whilst Spring & Summer are busy times for us with the livestock come Autumn everything is beginning to slow down. Since the beginning of the year we have had 17 new calves born with the majority being in May - August and lambing was a real success with many of the sheep having triplets and being able to keep all three going. Andy’s asparagus had a bumper year and judging from your response to it in the pubs it really went down well and tasted, as always, delicious.

So when it comes to September onwards we really turn to harvesting the fruit from the tress and hedgerows. There is an abundance of apples, plums and pears this year- most of the apple trees are weighed down by their heavy load and look all set to collapse. We begin to laboriously harvest the blackberries, bullace and sloes but as it is quite a tedious job set ourselves an hour each morning no more or less!

All of the fruits from the farm will end up in our jams, chutneys and desserts. Not forgetting the vodka that Michael passes round at Christmas - we are looking at making some blackberry vodka this year so watch this space!

Speaking of alcoholic drinks we thought we would share with you our love of Sloe Gin, and our fool proof recipe to making the best one around. Of all the alcoholic drinks that can delight and engage the home-brewer none engenders more discussion, argument, speculation, recipes and experimentation than sloe gin. Considering the earnest secrecy with which people guard their sloe patches, one would think the blackthorn (on which sloes grow) to be a rare tree, and not the

common inhabitant of hedgerows nearly everywhere, that it is.

A blackthorn in full fruit is a remarkable sight with the fruit clustered densely around the branch like bunches of grapes. Attractive as the fruit looks the taste is worse than a disappointment. A late, warm, wet spell can sometimes sweeten the fruit to bare acceptability, but only for the brave.

This season's weather has produced abundant and exceptionally fat, sweet sloes, so if you have always wanted to make sloe gin this year is as good as it gets. How you pick sloes is easily answered – carefully because of the vicious, sepsis-inducing spines from which the tree gets part of its Latin name – Prunus spinosa. When you pick them, however, is one of those issues that excite endless discussion – before the first frost or after? Alan, Michael’s fathers view is to pick as late as possible but, provided the sloes are ripe (not bullet hard), it does not matter too much.

For a drink that has only three ingredients and which requires little more than putting them all in a jar at the same time, there is a surprising and rather intimidating wealth of advice available on precisely how to make the stuff. To this burdensome bounty I will add the most important advice of all – be patient, very patient.

Alan’s best bottle by far has been 18 years in the making! But you'll be pleased to hear that even an October brew drunk at Christmas is perfectly pleasant. Here is an extremely non-prescriptive recipe, I will leave you to adjust to taste.

Alan’s Sloe Gin

About 500g ripe sloes About 250g sugar (the more sugar you use the quicker the flavour comes out but, obviously, the sweeter it is) About 1 litre of gin (any gin, or even vodka if you want a purer flavour) Prick the sloes with a fork (or don't, or put them in a freezer and then defrost them). Put them in a suitably sized Kilner jar, pour over the sugar and the gin, close the lid, shake, shake every day until the sugar has all dissolved, store in a dark cupboard, strain out the sloes through muslin after about three months, bottle, store in a dark cupboard, and wait.

So just where are we talking about? The Gunton Arms in Norfolk which was opened in October 2011, The Gunton Arms is a traditional pub with 8 bedrooms in an extensive historic park near Cromer in North Norfolk. The park is really breathtakingly beautiful with deer roaming around ancient trees and an eerie mist that seems to settle each morning. Think Jane Austin novel and you sort of get the picture. On first walking into the place I didn't know whether I loved or loathed it as it pushes all boundaries. Are the chairs just the wrong side of tatty, is the artwork a bit distasteful and is it just too on trend. Which is probably exactly what Ivor Braka wanted you to think when he did it.

Art dealer Ivor Braka bought the Gunton Arms in 2009 and started a major restoration. Robert Kime helped design the bedrooms and interior, Martin Brudnizki the bar and restaurant. Stuart Tattersall and Simone Baker (manager and front of house) both formerly worked at Mark Hix’s restaurants in London: Selfridges, Brown’s Hotel, and Hix Oyster and Chop. They bring with them the Hix ethos of using local, seasonal produce and a style of cooking which is vigorous and ingredient led.

A bit of History: The Gunton Arms is situated in the one thousand acre deer park which surrounds Gunton Hall near Cromer in Norfolk. The park was created in the early 18th Century by the Harbord family and was comparable in scale to the great estates to the west, Holkham and Houghton.The Park evolved over a 150 year period with a succession of great landscape architects being employed: Charles Bridgman, Humphrey Repton, Gilpin and Teulon. The Gunton Arms, originally Steward’s Farm, became the second house to Gunton Hall; and during the 1890s a frequent visitor was Lillie Langtry, famous beauty and mistress of the future King Edward VII. In the 20th Century the park declined into ruin, buildings were sold, the land ploughed up and the woods cut down. In 1982, rescue came in the person of Kit Martin, who along with Charles Harbord-Hamond and Ivor Braka succeeded in buying back much of the land and the buildings. In 2007 the park won the 'Genius of the Place’ Country Life / Savills award for the best restoration of a historic landscape. So lets move on to the dining experience - The chef Stuart Tattersall (ex head chef at Mark Hix) cooks from local ingredients including venison

from the surrounding deer park. They have an opened fire barbecue in the centre of an Elk Room with a massive elk skull over the top which really is a show piece and where most of the action takes place. The food is exciting and delicious and there is something altogether a bit theatrical / caveman about watching your meat sizzle in front of you. For starter we shared pork crackling with Bramley apple sauce - it arrived properly hot and thick, the muffin top of salty fat under the crisped skin melting on your tongue. The portion is huge for £2.50.

And then the beef, which we watched being seared and then rested and then sliced so that the rosy muscle unfolds like the pages of a good book. There were goose-fat roasted potatoes with crisped, golden, crenelated edges & a huge jug of frothy béarnaise. The rib of beef for two costs £60. Except it would easily feed three.

For dessert we had Eccles cakes of crisp, sugared pastry with the massively sweet hit of currants alongside the salty punch of the Norfolk hard cheese, Dapple. There is a thick-set posset flavoured with the fruity tones of sea buckthorn. All in all it was a carnivores heaven but all you fish lovers and vegetarians don't be put off as they have fresh Cromer crab and fish delivered each day - not forgetting a great selection of vegetarian dishes.

In summary, this isn't the best place to take the grandparents for afternoon tea or lunch however if you are looking for something that has style, pace and energy with fantastic food and a real cool chilled vibe then this is your place. Stuffy Norfolk this isn’t… Shorditch dwellers putting there stamp on Norfolk this is. By the end of our stay I think we had worked out that we really quite liked it. It is fun and edgy and whilst the artwork and style may not be for everyone at least it has one and is positively willing to shock in its strive to be itself. ISSUE TWO | KnEAD To Know

Yellow Lentil and Partridge Curry One Pot Wonder This dish is a great mix of British and Indian flavours - at this time of year there is an abundance of partridge and by combining with spices and lentils it gives an excellent twist to this already tasty bird, the best bit it is a very cheap & healthy dish just bursting with flavour.

Ingredients: Serves ? -

100g yellow lentils (dried) 4 whole Partridge 5 shallots finely chopped 8 cloves of minced garlic 150g of Pancetta diced 1 Chicken stock cube crumbled 200ml of light coloured Ale 50g of Sultanas 10 medium sized tomatoes chopped 10 curry leaves

Spice Mix - 1 tablespoon of black mustard seeds - 2 chopped fresh chillies - 1 teaspoon of ground turmeric - 1 teaspoon of ground cumin - 1 tablespoon of kalonji seeds - 2in of peeled ginger finely chopped

This pair of wines are from Lisboa, Central Portugal, only 30 kilometers from the Atlantic ocean so there is lots of influence from coastal breezes making the wines really fresh and fruity. The moustached man on the label is in honor of the winemaker, Antonio Mendes’s father, who was well known in the region for his outstanding preened Poirot styled facial hair!

Method:

1. Soak the lentils overnight in cold water, drain well when you want to use. 2. Remove legs and breast from the Partridge, bone out the thighs and put the meat to one side . 3. Cut all the meat in to 3cm cubes leaving the drum sticks whole. 4. Heat 2 tablespoons of vegetable oil in a saucepan, add all of the spice mix and cook for 2 minutes making sure it doesn’t stick or burn. 5. Add the Pancetta, shallots and garlic & cook until shallots are soft. 6. Add the thigh and drum sticks first, stir and coat in the spices in the pan 7. Add the tomatoes, stock cube, Ale, sultanas, a pinch of sugar & curry leaves. 8. Bring to the boil then add the lentils and reduce the heat to a simmer and cover. Cook for 30 minutes and stir from time to time. 9. Now take the lid off and drop the breast meat in and cook for 10 minutes. Do not let the breast meat over cook because it will become dry . The curry should look yellow in colour by now and should be thick and full of flavour. 10. Season to taste with salt and pepper and allow to rest off the heat for 3- 5 minutes. I like to serve the curry with mushroom rice, coriander yogurt and chapattis.

Indulge in our Fentimans range This issue we are going to pay homage to our range of soft drinks that we offer throughout the pubs.

We so often recommend our new wines and ales but having just been pregnant myself it will be intriguing and good to know for a fair few of you who don't indulge in alcohol the range of tasty soft drinks we have on offer. It seems quite an in vogue thing now to brew your own flavoured soft drink and we have tried and tested many new brands some local and some far away, however we have settled on Fentimans as being our favourite and we now stock their range throughout the group

Just who are Fentimans?

In 1905, Thomas Fentiman, an iron puddler from Cleckheaton, England was approached by a fellow tradesman for a loan. A deal was struck up and a recipe for botanically brewed ginger beer was provided as security. The loan was never repaid so Thomas became the owner of the unique recipe. Thomas began using the recipe and producing botanically brewed ginger beer which he delivered door-to-door using a horse and cart for transport. Fentimans ginger beer quickly became very popular and the business grew, with several factories being opened in the North East

of England. Fentimans of old made all manner of soft drinks, carbonates, fruit juices, mixers and even their own brand of malt vinegar. When Eldon Robson restarted the company he saw the real opportunity in reintroducing the Brewed botanical Beverages - They were always consumed by adults because they were proper thirst quenches and full of flavour, so from the original ginger beer recipe he refined the process to comply with modern day regulations. The products are still brewed and fermented, mildly carbonated and pasteurised. The alcohol content is less than 0.5%abv, so the products can be sold as soft drinks. An old fashioned style proprietary bottle was designed to package the products and they were launched as The Original Adult Soft Drinks. The business is still in the Fentimans family and is owned by the great grandson of Thomas Fentiman. The production process may have been brought up to date but they still ferment all products for 7 to 14 days in order to provide an authentic recreation of the original beverages. The most popular Fentimans drink in our pubs is by far their Traditional Ginger Beer however we also stock several unique and distinctive flavours including lemonade, coca-cola, shandy & dandelion & burdock.

So next time you are having a “dry day� make sure you give one of them a try - they are full of flavour and accompany all our dishes a treat without being too sickly sweet like most other soft drinks.

This issue we would like to introduce you to our only management couple in the group Danielle and Lee at The Lord Nelson. They didn't begin working for us as managers or indeed as a couple but met when we first opened The Lord Nelson 4 years ago. Lee had worked for us at both The Crown & The Periwig and wanted to learn more skills as a barman/manager and Danielle joined us as bar staff when we first opened the pub. Therefore you could say we brought them together (cheesy!)

They have been working at The Lord Nelson since we first opened the doors and really helped the pub grow and flourish into what it is today. They took the managers role when Adam left over a year ago and have really gone from strength to strength helping to constantly move the pub forward, maintain our high standards and bring in their own mark and personality to the place.

So lets tell you a bit about them both: Danielle was born in Burton on Trent but moved to Rutland, Greetham shortly after. She lived between here and Cottesmore up until last year when she brought a house with Lee. She went to St Nicholas Primary school in Cottesmore & then on to Casterton Secondary school. After school she went to Stamford College studying public services.

After college Danielle worked at The Sun Inn in the kitchen for a few years but decided she wanted to concentrate on front of house and so applied for a position at The Lord Nelson.

Danielle is very close to her one younger sister Tilly who lives near by and both her and Lee have just brought an extremely cute 6 month old puppy whom they have called Soggy.

Danielle has always supported Leicester City and she really enjoys going to and watching the football. Her and Lee like to go walking and cycling more often than not with Soggy in tow. She also likes trying new bars / restaurants & concepts out with friends and family whenever she gets the chance.

She was lucky enough to spend 10 days in Mexico earlier this year and then a week

visiting her Dad who lives out in Spain, leaving Lee at home to look after the dog. They are both looking forward to going to the Peak District with Soggy in October, where they have hired a cottage and plan to do lots of walking and relaxing.

Lee was born in Peterborough and brought up around the Stamford area living in Empingham and then Ryhall. He has one younger brother, Aram and a sister Tara. He went to Ryhall primary school & then attended Casterton and Stamford college.After college Lee took a gap year and decided to go travelling. He bought an open ticket with his first stop being Indonesia - He loved it that much that he couldn't bring himself to leave and ended up spending his whole time out there embracing the culture and opportunities the country had to offer. Whilst there Lee took up scuba diving and did his SSI course (Scuba schools international) which he then used to go on and teach and take out groups of divers. He saw some amazing sights under the ocean cuttle fish and clown trigger fish were his favourite.

When it was time to come home Lee moved back to Stamford where he worked in his mums coffee shop Pennies from Heaven and he also picked up some part time shifts next door at The Kings Head. The owners at the time Graham and Julie really got him into the trade and so he decided this was the career path he wanted to take and moved on to a busier scene being The Crown hotel, he then moved across the street to work with Jimmy and Naomi at The Periwig. He looks at them

as his mentors teaching him the ropes of the then Thurlby Group. Once he had gained copious amounts of experience there he fancied a fresh challenge and so moved across to The Lord Nelson when we were first opening and hasn’t looked back since!

Lee also has a mutual appreciation of football and luckily supports Leicester City too… And Newcastle on the side! He plays five a side against Nelsons Butchers for a bit of friendly local rivalry which is always fun and his other interests seem to have taken a bit of a back seat what with their new puppy Soggy always wanting so much attention. As always we asked them what they loved and what they hated about the industry: Love’s – Lee – “I’ve loved seeing the transformation of the pub over the years, being here when everything was a mess and all the bar was being made and tables put in. Its great seeing how the place has really come along and thrived over the years, we have a great bunch of regulars now and the free staff pizza’s are fab too.” Danielle – “Meeting new and interesting people and all the socialising! I love working with all the staff at The Lord Nelson we have a really good team that get along very well.” Hates – Both had to agree that the hours are often very hard and that you do have to get used to a terrible eating and sleeping pattern!

This is issue we decided to stay a little closer to home - with our quest to keep our finger on the pulse and keep up with the ever changing dining industry, we often visit cities around the UK to see what is new and exciting and of course to pinch a few ideas. We visited Liverpool way back in January and even though it was freezing (and I mean freezing - ice winds literally blowing straight from the Atlantic across the Mersey) we had a fabulous time.

The city of music and fascinating history.

It’s impossible not to fall in love with Liverpool, with its charming locals, world-famous music scene, and amazing shopping. The perfect blend of old and new, this stylish city is the birthplace of the Beatles’ music, home of Liverpool FC, and makes for an unforgettable city break.

With its unique attractions, exciting events, world class sport offerings, unrivalled musical heritage and famously warm welcomes, Liverpool is the ideal destination to visit and explore. With the largest collection of museums and galleries anywhere outside of the Capital, Liverpool’s culture and heritage are at the very heart of the city.

Liverpool city is soaked in culture, and has one of the most impressive collections of museums and galleries in Europe and also the famous centre of research in Liverpool University. Our favourites include the Walker Art museum, which houses works by Hockney, Degas, Turner and Rembrandt; and the 300-year-old Bluecoat arts centre. The city’s arts scene is firmly at the forefront – the brilliantly cool FACT (Foundation for Art and Creative Technology) is the UK's leading media arts centre and features everything from provocative arts projects to the latest Hollywood blockbusters.

Music and nightlife

Music is the beating heart of Liverpool. The Capital of Pop is most famous for giving us the Beatles, and the Cavern Club Liverpool is a must for any fan of the Fab Four. But don’t miss the opportunity to catch the next big thing at live music hotspots like Liverpool Academy, Bumper, and Magnet. And if you’re more into string quartets than big bass lines, grab tickets for the Royal Liverpool Philharmonic Orchestra – the UK's oldest surviving professional symphony orchestra – at the Liverpool Philharmonic Hall. Make sure you stop by the Beatles museum and listen to the best John Lennon songs.

For families

Why should grown-ups have all the fun? Liverpool is family friendly and has plenty to keep kids of all ages entertained. The World Museum Liverpool is a great place to spend a day, with everything from dinosaurs and Egyptian mummies to creatures from the deep and live creepy crawlies to discover. And for something completely different, take little ones to the 550-acre Knowsley Safari Park, where they’ll get up close to rhinos, camels, monkeys and lions.

Sport

Liverpool is a sports-mad city, and it’s not hard to see why. The city is home to two of the Premier League’s biggest football teams – Liverpool FC and Everton FC. The rivalry between the two stretches back generations, and the local derbies are always exciting. For the biggest fans, the famous football jerseys are available in the Liverpool FC store. But it’s not all about football – you’ll also find three Royal Links courses on England’s Golf Coast and Aintree Racecourse, home of the Grand National.

Shopping

Liverpool is a very stylish city, and they take shopping seriously here. With more than 400 shops to choose from, you might have trouble knowing where to start, but we suggest heading for Liverpool ONE in the heart of the city. This brilliant shopping centre houses more than 160 famous high street names, from John Lewis to Apple, Topshop to Cath Kidston. For a touch of luxury, head to the exclusive Liverpool shopping centres Cavern Walks or Metquarter, where you’ll find brands like Vivienne Westwood, Jo Malone, L.K. Bennett and Tommy Hilfiger.
