Warming up for Spring With spring in the air and summer around the corner it is thrilling that the world is starting to look a little bit like the one we left behind in March. Dear Waterfall Mall supporters This year has brought with it unprecedented changes and circumstances that not one of us could have foreseen as we started the year, 2020, just like any other. We had barely moved on from our back-to-school madness and were warming up for an Easter season unlike any other, when just like each of you, we were stopped in our tracks by the ever present Covid-19 and the lock-down that followed. Its been a few months already since we were able to open for you, our loyal supporters and we would like to take this opportunity to thank each and every one of you for the support you have shown us and our tenants from day one. As the weather warms, and the rains have arrived, spring is in the air and is already making way for summer. And while we don't know what the future will hold, or whether we may in our future need to distance ourselves again... we do know that this season is a time for rebirth and making changes as we get ready for the summer that lies ahead. Its time to put on our planning hats, and as we start being able to gather in small groups with our friends and family, why not show off your amazing catering talents. This issue of News Flash has some of our favourite recipes, cooking apps and kitchen hacks to turn ever the most homely of cooks into a professional. And while we warms up for summer, why not get on the fitness train and check out some of our favourite on-line workout platforms where you can get into the shape you've always dreamed of, from the safety of your own home. Finally we have all the winners of our Winter Baby at Home competition inside. See if the babies you voted for made it out on top. More than anything, we urge you to stay vigilant and keep safe. Their big new store is situated at the Capitec entrance, with close access via the lifts from the paid parking and open parking areas. Spring Fling Vegetable Skewers with Green Dipping Sauce
INGREDIENTS Skewers » 200g halloumi, cubed » 150g oyster mushrooms » 200g exotic tomatoes » 4 baby brinjals, halved » 80g radishes » 3 quartered baby beetroots » 80g sugar snap peas » 3 – 4 tbsp olive oil » Sea salt and freshly ground black pepper » 4 – 6 kale leaves, stems remove Green Dipping Sauce » 180g kale leaves, stems removed » Sea salt » Juice and zest of half a lemon

1 green chilli, chopped 125g basil pesto 4 tbsp olive oil 1 clove garlic, crushed Thick Greek-style yoghurt Black sesame seeds
METHOD » Thread the cubes of halloumi and variety of vegetables onto soaked wooden skewers. Brush lightly with olive oil, season and grill on a Le Creuset 26cm Signature Square Skillet Grill for 2 – 3 minutes on each side until slightly charred and cooked to your liking. » For the green dipping sauce, blend together all the ingredients in a food-processor. This will keep in a jar in the fridge for up to a week. » Fold a few tablespoons of the green dipping sauce into yoghurt. Serve the skewers with crispy kale for garnish and crunch. Sprinkle the sesame seeds over the green dipping sauce and vegetables.
SPINACH SALAD WITH GRILLED ZUCCHINI, PEAS, FETA AND MINT INGREDIENTS » 350gms zucchini » 2 Tbsp olive oil » 1 cup of peas (fresh or frozen) » 180gms – 200gms feta, thinly sliced » 50gms flaked almonds, toasted » 10gs mint leaves, finely shredded » Salt and Pepper

Dressing: » 1 tsp Dijon mustard » 1 tsp honey » 4 Tbsp extra virgin olive oil » 1 Tbsp good red wine or sherry vinegar » 1 Tbsp fresh lemon juice » A pinch of sea salt flakes and ground black pepper

METHOD » Rinse and slice the zucchini lengthways and brush lightly with olive oil. Fry on a griddle pan or in a frying pan until golden on both sides and just cooked through. Set aside to cool. » While the zucchini slices are cooking, bring a small pot of water to the boil and blanch the peas for 3 minutes until cooked al dente. Drain and refresh under cold water. Set aside. » Slice the feta, toast the almonds (if needing to be toasted) and shred the mint. » Make the dressing by putting all the ingredients into a small jar and giving it a good shake. » Just before you are ready to serve, assemble the salad by tossing 1/3 of the dressing with the spinach, peas and most of the mint. Spread this out over a Le Creuset Oval Serving Platter. Top with sliced feta, grilled zucchini and the flaked almonds. Scatter. Over any remaining mint. Season with salt and Pepper and serve with the rest of the dressing on the side.

Chill Wine Super Fast
No one likes lukewarm bubbles. Find a tall jug about the height of your wine bottle and get cooling. Submerge the bottle in ice water with a small handful of salt and turn every few minutes or so. Your bubbly should chill in 20 minutes (or less!).

Golden Brown Air Fryer Food
We love air fryers for giving us the crispy fried texture we love without the extra grease. However, air fryers don’t always produce that golden hue we crave. You can fix that, though! The secret to that perfect golden colour is giving your foods a quick spritz of cooking spray before popping them into the air fryer basket. That very light coating of oil is all you need.

Get Eggs to Room Temp Fast
When baking, it’s important to use room temperature ingredients (unless otherwise specified). If you forget to take your eggs out of the fridge in time, don’t worry. Just place them in a bowl of warm water for a few minutes

Stop Cheese from Sticking
Grated cheese really makes a difference but it can be a pain to prepare. For easy clean-up, use a quick spritz of cooking spray on your cheese grater to keep the cheese from sticking. You’ll never go back to pre-shredded again.

Waterfall Mall’s Wedding
Waterfall Mall hosted the annual Wedding and Events Expo between 24 – 28 September in Centre Court. This year included a virtual fashion show, revealing the latest wedding and matric farewell attire from the finest local designers. Engaged couples were introduced to suppliers in the events industry and invited to enter this year’s competition. Entrants stand a chance to win a wedding dress or a matric farewell dress, winners will be announced on Facebook.
