am privileged to have been invited to act as Guest Editor for this issue. This is my first opportunity to take on a task of this nature. Facing this new challenge has been so rewarding, enjoyable and therapeutic, enabling me to express my fashion creativity. As Fashion Editor, I have a strong view that EAUX Luxury Lifestyle makes a major impact on promoting all that is good in Suffolk and beyond. The coverage given to fashion, along with the independent retailers in the county, marks EAUX out as a leader in luxury lifestyle trends. Fun on the Farm Suffolk Food Hall’s Tractor Fair is back by popular demand, find out what treats await this year

S

uffolk Food Hall is a local institution, based in a stunning location underneath the Orwell Bridge, just south of Ipswich. Found in an area of such outstanding natural beauty, with inspiring views down the River Orwell, the Food Hall is playing host once again to the ever popular Tractor Fair. Taking place on the Saturday of August Bank Holiday weekend, entry is free, although as the event is held in aid of the Suffolk Community Foundation donations are greatly appreciated. Described as ‘original, honest fun for the whole family’, the combination of vintage and modern tractors, rides, sideshows, entertainment, live music and competitions ensures you’re in for a day of laid back enjoyment. Gates open at 10am, but you can come and go as you please. Be sure to stock-up on some local food, for which Suffolk Food Hall is famed. For this reason, it’s often best to plan the day around lunch. Following the fair, one of the Cookhouse’s legendary Burger Nights will be in full swing! If that sounds like your cup of tea, booking is advisable through eat@suffolkfoodhall.co.uk

magine that you could take a trip back in time to visit 10 year old you. If you could give your young self one piece of advice or pass on one lesson that you have learned about life, what would it be? Don’t jump in the deep end unless you know how to swim, maybe? Lift with your legs and not with your back, perhaps? Or even more useful; don’t ignore the red warning light on your dashboard, hoping it will go away! Quite a thought, isn’t it?

At Woodbridge School, the poster below or versions of it are on many classroom walls, and we love its message for young learners. Even as adults, we all have days where we think to ourselves that we either won’t or can’t do something that we really ought to do. Equipping children with the skill set to motivate themselves at least to try a particular task or challenge is arguably one of the most important life lessons of all. Even if they only get to the ‘I’ll try to do it’ step, they will have achieved something important and valuable.

And yet, this is what good teachers do every day in schools. They inhabit the world of children and, using whatever resources are available to them, they help pupils to play with ideas, discover more about the world around

Something very powerful happens in children when they experience the warm feeling of satisfaction that comes with attempting and achieving in school. It is perhaps the most potent area of teaching and learning, and

a key component in the development of confidence and a sense of self-worth. For a child to be able to say ‘I did it!’ especially, say, after having struggled to overcome particular difficulties, is a not only a great feeling for them but surely the best possible incentive to others to keep climbing the steps. As someone once said, ‘the difference between try and triumph is a little umph!’

Inspiration abound for new and seasoned gardeners at the RHS Hyde Hall Flower Show

P

reparations are hotting up for this year’s Royal Horticultural Society (RHS) Hyde Hall Flower Show, a four-day floral extravaganza (4th – 7th August), set in the beautiful surroundings of the Society’s Essex garden. The show features 60 specialist nurseries with beautiful floral displays, garden trade stands, plus tasty food and live music throughout the weekend.

Now a firm favourite in the gardening calendar, the show’s popularity has seen unprecedented growth with visitor numbers increasing by a whopping 250% over the past six years. Head of site Ian Le Gros said:

We are delighted with how it’s established itself so rapidly, and we will build on this success for this year’s show with the addition of an artists’ marquee and lots of new nurseries and trade stands. It will be a fresh, colourful and enjoyable event that we hope will attract people from far and wide.” Exhibitors will include nurseries fresh from medal-winning success at the 2016 RHS Chelsea Flower Show. John Cullen Gardens Ltd, which offers plants for pollinators, scented plants, and edible plants, and Plants Delivered, specialists in hardy exotics, are both coming to Hyde Hall for the first time along with 14 other new nurseries and suppliers. Also new to the flower show this year is the Artists’ Pavilion, where the RHS is showcasing the work of four outstanding artists: Marion

Sidebottom (creative photographer), Douglas Payne (stained glass painting), Sue Fields (botanical art), and Rhian John (original paintings and prints). In the Floral Art Marquee, innovative displays by local Essex floral artists will celebrate the Queen’s 90th birthday. So, whether you’re just starting out or are a seasoned professional, there is inspiration and guidance aplenty to be found at the show, with mini show gardens and a huge range of quality plants, flowers and tools to choose from. RHS experts will be on hand to answer gardening queries, offer the very best gardening advice and help visitors make informed plant choices. RHS members will also be able to take advantage of a Flower Show Breakfast package on Thursday 4th and Friday 5th August, which enables them to beat the crowds and benefit from a full English breakfast, a guided garden tour, and earlybird entry to the show for just £22.50 per person (booking essential on 020 3176 5830). Entrance to the show is free with normal garden admission, £10 per adult and £5 per child, and the show is open from 10am to 5pm each day.

SKIING IN SUFFOLK A day at Suffolk Ski & Leisure Park in Ipswich will surely tire out the kids. With skiing, snowboarding, tobogganing, ringos, a climbing wall and high ropes, there’s something for every child. For those with the need for speed, Swiss Bob toboggans look like brilliant fun and children from the ages of four onwards can have a go. Another high speed pursuit, Ringos involve going down the ski run on a rubber ring and the activity is led by instructors for safety. There are also lessons for skiing and snowboarding available, and there are even family specials for you all to learn together. IKEN CANOE This small and friendly canoe and kayak hire centre is based on the Alde estuary between Snape and Aldeburgh. Hire a canoe, kayak or stand up paddleboard and explore the river for a couple of hours. The Canadian canoes are easy to paddle and can seat three, and the stand up paddleboards are lots of fun, as well as do a great job of keeping you fit! You’ll be given a full safety briefing before taking off with a map, and a buoyancy aid, to go on your own adventures. SECRET GARDEN PARTY This year’s theme is The Gardeners Guide To The Galaxy, a play on the word supernatural. Known for its eccentric activities and creative immersive experiences, festivalgoers will be in for even more wild parties and quirky games in 2016. With a Mermaid School where you can learn to use your silicone flippers, an Astronaut Survival School to teach you how to survive in Space, and a Star Drive-Xpress with Segways, you never know what could happen at this fun-filled festival. Of course, there’s a whole host of great music to see too. Highlights for us include Caribou, Milky Chance, Andreya Triana, The Temper Trap, Anne Marie and Rae Morris. With its ethos of a fresh approach to festival going, FolkEast is a chilled weekend with roots, folk and world music cascading around the stunning grounds of Glemham Hall. This year’s line up sees Eliza Carthy & The Wayward Band, Blowzabella and Usher’s Island headline the main stage, with other names including Chris Wood, Rura, Andy Irvine, Topette!! and Effra playing throughout the weekend. Supporting local musical talent such as the Aldeburgh Young Musicians and Hadleigh Folk & Acoustic Club, the festival will also feature local food and drink. What to look for: straight-leg jeans in a medium or dark wash with a cropped hem that shows off your cute ankles. They look great with a blazer or simple sweater, but once the weather warms up, try them with a basic t-shirt. For shoes, pair them with booties or chunky pumps right now, and for warmer weather try sneakers or sandals.

There are so many to choose from, so many shapes, cuts, washes and fabrics, it is a minefield!

eans are the skeleton of any wardrobe, so you have to get it right, yes?

We’ve all got our favourite pair that we live in and cant live without, almost like a second skin! No other piece of clothing can be worn in so many ways, for such different occasions and always look good.

My experience has found that each brand of jeans and denims will be individual to them, in turn that means you will find sizes will vary. There is no age limit to jeans, suitable for men and women with all different shapes and sizes, the key is to find a pair to suit your individual body shape. Here is the FASHION CANDY STYLE guide for men and women to find the perfect denims:

WOMEN The four classic jean styles, each serving the perfect solution! BOOTCUT Comfy and sexy, fitting nicely around the bottom. STRAIGHT CUT Flattering, but also trendy, fitting you in all the right places. SKINNY These are great on the right body shape, ending just at the point around the heel of the shoe. WIDE LEG Cleverly cut higher at the back, so they do not gape! Fact: Blue jeans will never, ever go out of style. At its core, a good pair of denim is timeless, boundary-transcending, and able to anchor almost any outfit you can imagine. If you add just one piece of denim to your wardrobe for summer, make it a pair of cropped flare jeans.

As with any new denim trend, it’s important to style your outfit to flatter the silhouette. This casual jean looks great with tailored pieces, like blazers and button-down shirts that balance out the look.

Follow these five simple rules to your perfect denim: THE DENIM Traditional, mid-weight denim with no stretch is your best bet. It’s classic, masculine, and holds a nice shape. Heavier loom-state selvedge denim is fine if that’s what you like, but don’t play up the dated urban woodsman look by turning up the cuffs to show that red seam. THE RISE Fashion-forward men today are demanding a slightly higher rise that gives a nice secure fit around the waist, with plenty of depth to tuck in a shirt and a bit of extra room in the crotch. At the shop, simply ask for a medium rise. THE LENGTH The cropped jean is fading away and the proper contemporary fit demands a bit of length that creates a small break, or, if you prefer, just grazes the top of your shoes. Rolling or cuffing your jeans looks a bit dated at this point, so if they’re too long, simply take them to the tailor to get the perfect length. THE LEG A slightly wider, straight leg is the optimal cut today. It should be tailored, but it should not be tight. You’ll know your jeans fit properly when you can grab and inch or two of extra fabric around the thigh when you stand up. The bottom opening should be as wide (or almost as wide) as the thigh of pants. No extreme tapering here and no boot-cuts. THE WASH Dark, unwashed denim will always look cool and give you years of wear, so if you’re unsure of what you want, stick to that. Still, you should be aware that ‘90s-style light washes are all the rage amongst the cool kids. Evaluate your tastes and choose accordingly.

Along with weddings and festivals, race days are a characteristically British summertime occasion… but what should you wear? Asks Pam Davis

s a personal stylist, I know a day at the races is one of those occasions where there are some useful rules to stick to in order to feel great and avoid any fashion faux pas! We are well into ‘flat season’ with the July Festival at Newmarket, race meetings at Epsom, Ascot, Goodwood and many more. Premier or Members Enclosures will often require smart casual attire – if you’re unsure of the dress code on a particular day, it is best to check with the racecourse. Officials can be strict about entry to anyone unsuitably dressed. Here is the PammyStyles guide to achieve the perfect race day style:

WOMEN Attention to detail Accessories make an outfit! Choose carefully your outfit’s jewellery, bags and footwear. Dress code If your event has a strict dress code, don’t forget to wear a skirt that falls on or below the knee. My choice would be a sleek maxi or midi dress.

British weather! Invest in a covetable cover up and prepare for the inevitable! Don’t forget your jacket or cover up if you want to stay stylish and keep out the chills. Stylish, light and comfortable is the key. Footwear Opt for sensible shoes. Pin-thin heels look great, but a day of balancing – no thanks! Choose low heels, block heels or wedge type shoes. Kitten heels are a good option for elegance. Hats For a modern feel, choose a neutral tone that isn’t too much. Cream tones, gold and navy work with anything. Fascinators Slightly less popular now, as delicate headbands or beaded clips are setting the trend. Trying headwear on is imperative to defining your suitable shape and style.

MEN Suits The most obvious thing to wear is a suit. A day at the races should be fun, so you can wear something a little bolder or brighter than usual. Try different colours such as plum, blue, beige, or something patterned or checked for sheer style.

Attire combinations This type of tailoring and fashion has become very popular, and is a practical alternative to a suit. Go for core colours to make sure everything matches and compliments each other. Dark colours works well with greys, and bold colour jackets work with light coloured trousers well. Footwear Men, your footwear should be smart, this means no trainers! Plain black, tan or brown Oxfords or Derbies will keep the tone of the outfit smart or slick. Inject some colour into your footwear, or wear a pair of smart suede shoes. Shirts/Ties If you are going colourful with the rest of your suit, you’ll need to calm down the colour palette with a shirt in a timeless shade. Go for a tie with a colour that compliments the shirt and jacket. Pocket squares can add to the look, as long as it balances the rest of the outfit. A simple classic square fold is the way to go! Accessories A smart watch and a pair of stylish sunglasses are the perfect accessories for every man.

MENSWEAR For men this summer, patterns are big news, adorning everything from shorts to shirts. While normally we see one stand out pattern for the season, this year we’re seeing a little bit of everything. This is great news for those who tend to shy away from the latest trends in favour of investment pieces, as it guarantees that there will be something for all tastes. One of our favourite designs this season is Lyle and Scott’s Micro Print, which is a rare mix of understated style and eclectic print – it features on both their classic sweatshirt (£75) and poplin shirt (£70). In fact, the only thing bigger than patterns this season is navy. It’s not just plain navy though; there are textured navy marls, sky blues and bold royals, as well as indigo jersey blazers. From the summer of 2015 to date I have been fortunate to have visited some beautiful destinations and experience the fashion culture in these places. I would like to share my journey with you all.

WHEN: AUGUST 2015 WHERE: MYKONOS, GREECE

among fashionistas and very well groomed guests!

This was my summer wedding honeymoon destination, even more special as I had never visited Greece before. My husband had very cleverly chosen the best suited hotel perfectly.

Mykonos has over 175 fashion stores, including high end brands such as Chanel, Hermes, Dior and Louis Vuitton.

We arrived in beautiful sunshine at the luxurious Cavos Tagoo Hotel. A world favoured cosmopolitan 5* luxury hotel, it certainly was just that! The hotel was situated 600m from Mykonos town – perfect! Our first night we had VIP invitations to the Diesel Black Gold party, which was taking place at our hotel. A great evening mingling

The island is chic and contemporary, with cobbled streets full of fabulous designer shops and independent local retailers selling an array of clothes to suit all tastes and budgets. My memory of Mykonos is the cherished purchase of my stunning Christian Louboutins from my favourite store ever, Enny Monaco #proudowner!

WHEN: MAY 2016 WHERE: MANHATTEN, NEW YORK My first time in New York was a family reunion with my youngest daughter and her boyfriend, joining them on the last leg of their two month travels to different states over West America. Arriving at our very tall Manhattan hotel with my husband and youngest brother, New York was everything I imagined and more! Over four days we barely scratched the surface of this fast moving, vibrant, fun city, of which I have heard so much about. So many highlights to mention, Maddision Square Garden, Times Square, Central Park, Grand Central Station (which was surreal), Top of the Rock (at midnight) was amazing, and so many other places that we managed to cram into a full day.

WHEN: FEBRUARY 2015 AND 2016 WHERE: SANDALS, ST LAWRENCE GAP, BARBADOS Barbados... What can I say! It is the only coral island in the region with white sand beaches. Aside from the soothing warm sun that greeted us on our arrival to this exclusive resort, you could see why celebrities and the rich and famous have holiday homes here. In almost total contrast to the style of fashion in Mykonos, Barbados has a somewhat much more relaxed approach to fashion and styling. It is the result of the Bajan’s lifestyle and culture.

My fashion experience was in Limegrove, which is a luxurious ‘mall’ situated in Holetown on the West Coast of Barbados. It has over 100 retailers, stocking high end brands including Burberry, Hugo Boss, MAC, Gucci and so many others. I succumbed to a fabulous pair of sandals from Michael Kors and cocktails in the bar before heading back to the resort. Beautiful people, the warmest sun, the whitest beaches, delicious food and the best rum punches – the best Barbados has to offer!

One morning we all took the subway to visit the site where the Twin Towers once stood. Seeing the actual grounds and absorbing the atmosphere is a memory I will cherish forever. As a fashionista, I was on a mission to visit the famous icon stores in New York. Whilst the boys went to the Museum of Modern Art, myself and my daughter hot footed it off to Bloomingdales and Macys. Three hours later, shopping and more shopping... The rest is history! New York, an amazing city and a must have on any bucket list. Never have I walked so much over 4 days... exhilarating indeed!

ave you ever wanted to experience what it’s like to star in your very own glossy fashion magazine photo shoot? Well here’s your opportunity to work with a brilliant creative photographer on just that! John Ferguson is a commercial photographer working in London and throughout East Anglia, specialising in environmental portraiture for documentary, lifestyle and editorial clients. I came across some of John’s new pieces of work, which centre around black and white fashion portraits. Like John, I’ve always been an admirer of black and white photography but never really had the opportunity to get more involved with this side of fine art photography. John has just started a new fashion portrait service, where he offers his clients the option of being photographed either at home, at his studio, or at a special location of your choice. This could be a favourite outside venue, like a beach or a wooded area for instance. Or, like me, choose a fantastic hotel of your choice. I spent a lovely afternoon with John last week, being pampered and royally looked after on my very own fashion photo shoot.

‘I love making women look beautiful and feel confident’, says John. ‘Whether you’re a plus size lady or a size 8, I love to photograph women with my unique artistic style. As if they’re stepping onto a real life fashion shoot’, John tells me. John has worked with a string of well known celebrities, including Beyonce, Pink, Jon Bon Jovi, Naomi Campbell and Michael Jackson to name but a few.

John tells me that, ‘It’s important to find a photographer who makes you feel comfortable. The key to producing the best possible photographs, where you’re the star, is to act like one. ‘Your confidence will shine through in all your photographs.’ John certainly keeps the photo session moving along at a nice pace, with a mixture of good direction, bright ideas and a lot of laughter. We had a scream during my shoot, with John’s small team of creatives helping to make my day a very enjoyable one. After initially speaking with John about different photo ideas, and obviously with me having a passion for fashion, we settled for a series of elegant photographs based around myself getting ready for a night out after one of my mammoth shopping sessions. I chose the beautiful Seckford Hall Hotel, near Woodbridge, for my fashion portraits. The hotel has a large selection of beautiful rooms and I knew it would work perfectly for this type of photography. I wanted photographs that had an elegant and a classical feel to the theme. So I chose a few of my favourite dresses and shoes, classic pieces that complemented the theme of the shoot. I was able to use my own ‘props’ and the images have all my own accessories from my dressing room... Sheer bliss!

The session was a great opportunity to step back into ‘model-mode’ in front of the camera. It is such a great form of therapy as it gives you that feel good factor about yourself, one that you’d just love to bottle! Laura Green heads to one of EAUX’s favourite beauty retreats to try out a Four Hands Massage

I

n a beautiful historic building, set just off of Angel Hill in the heart of Bury St Edmunds, SK Clinic + Spa is the perfect place to hide away after a day of shopping or exploration. The atmosphere was immediately welcoming as I walked into the spa. The SK team introduced themselves and acquainted me with the building’s facilities. Before my chosen treatment, SK Clinic’s new signature ‘Synchronised Massage’, I was led into a dimly lit area to stop for a moment while my therapists readied themselves, with comfortable sofas and a selection of cold drinks on offer as I waited. After being given a moment to complete a short questionnaire, ensuring the treatment was suitable and tailored perfectly to one’s needs, I was led through to the treatment

room. Dim and tranquil, the room smelled divine!

were working out all the knots and muscle aches, but without any uncomfortable feeling.

I was given a few moments of privacy to prepare myself for the treatment and get comfortable on the massage table. I have been for massages and spa treatments many times before, however I wasn’t sure quite what to expect from a massage delivered by two therapists, and I must admit I was a little apprehensive. Those worries disappeared almost immediately. I had thought that having two therapists might make the room feel a little claustrophobic, and it wasn’t until a short time into my treatment that I even remembered there were three of us in the room. The therapists are incredibly well synchronised, it was difficult to tell who was doing what!

After thoroughly working my neck and shoulders, the therapists moved onto my lower back, arms and hands. They used a combination of essential oils, which felt amazing on my skin and smelt beautiful. The therapists then asked me to turn onto my back, so that they could work on the front of my shoulders, arms and legs. As they worked their magic on my calf muscles and feet, I could feel the strains of the working week melt away.

The therapists started by focusing on my problem areas, which were my shoulders and neck, applying just the right amount of pressure. They checked in occasionally, ensuring I was happy. It really felt like they

Once they had finished, and roused me from my almost sleeping state with soft voices and a cool glass of lemon water, the therapists once again left the room to give me ample time and privacy to gently wake myself up. Care UK homes throughout Suffolk have been hosting fun events for their residents

he homes were opening their doors as part of Care Home Open Day, an annual event that gives care homes across the country the chance to showcase care home life, forge links with local people – and have some fun!

A ROYAL APPOINTMENT At Prince George House in Ipswich and Britten Court in Lowestoft, visitors were treated to some right royal fun, celebrating the Queen’s 90th birthday. There were pamper sessions from The Body Shop, live music, magicians, and even a summer panto.

FUN FOR POOCHES… Hartismere Place in Eye and Davers Court in Bury St Edmunds both hosted 1950’s themed parties, with music, barbecues and stalls. There was even a dog show, including a prize for the dog with the waggiest tail.

AND SOME GLITZ AND GLAMOUR At Cleves Place in Haverhill, staff and residents laid on a glitzy ‘Day at the Oscars’ party. Visitors were treated to canapés, fizz, a catwalk show plus afternoon teas. The glamour continued at Mills Meadow in Framlingham with Strictly-inspired ballroom dancing.

Lodge in Mildenhall were all inspired by the Rio summer games, getting in the carnival mood with a steel band and carnival headdress competition.

GETTING CREATIVE Residents and visitors to Asterbury Place in Ipswich enjoyed a bird and butterfly themed event, including the chance to hone their creative skills with wildlife artist Ken Oliver. he short back and sides has now become the staple haircut in barbershops across the country, and it’s not just hipsters getting in on the trend. When Brad Pitt’s film ‘Fury’ hit the screens, it was certainly responsible for influencing many of the short sharp styles we’ve seen so far this year. Along with the influence of the incredibly cool BBC show ‘Peaky Blinders’, now on its third series, the style is going from strength to strength. It appears short back and sides won’t be going anywhere just yet.

Many barbershops are offering bald fades, razor fades, ‘0000’ fades… This basically means down to the skin, and has become the benchmark in the barbering industry as to how low you can go and still achieve a faultless fade. If you’re thinking of taking on the Peaky Blinder look, there are a few things to bear in mind.

MAKE SURE YOUR BARBER IS UP FOR THE JOB There is no room for error; an unforgiving fade can look bad for the next week after it has been cut, and becomes expensive if you have to get it corrected elsewhere.

DO YOUR RESEARCH Check out your local barbershop on social media. If they’re passionate about what they do, chances are they will want the world to see their work.

AVOID THE ‘RONALDO’ Unless you’re a footballer or under 18, the half-shaved head look is definitely out of date. Associated in the industry with lazy barbers and hairdressers, it’s a very easy haircut option, not requiring much skill. Once you have found your barber, speak to them about your hair type. They should be able to advise you on what style and length will suit your hair and head shape. It’s worth

A

lot of people ask me what they need to do to get ‘beach body ready’ for their holidays. While there are no shortcuts or miracle cures, the following tips should definitely kickstart your journey, and maybe help you lose a few extra pounds in time for your break!

1. INTERVAL TRAINING Instead of marathon cardio sessions, focus on short bursts of intense training, followed by a less intense recovery period. For example, I like to do 30 seconds on and 30 seconds off. Simply choose five endurance based exercises, such as jumping jacks or squats, do as many as you can for 30 seconds, and then rest for 30 seconds. Once you’ve completed all five, finish off on a crosstrainer for 10 minutes, and if you’re feeling really adventurous repeat the circuit of five exercises again. I cannot express enough the effectiveness of intense exercise in short bursts. Why do you think sprinters are so lean and toned? Not only will this shed pounds of unnecessary weight, but it also shortens your overall cardio sessions and saves time.

2. CHANGE YOUR WORKOUTS You need to constantly challenge your body in order to see results. It takes your body approximately four weeks to adapt itself to any training modality and reach a plateau. If you’ve been doing the same routine for more than four weeks, consider trying a new, more challenging workout. Focus on a total body workout that will tone your stomach, abs, upper body and legs. For example, a great addition to any circuit would be squat thrusters, targeting your legs, core and upper body, effectively killing three birds with one stone. Ask your personal trainer for a demonstration, or examples can be found all over YouTube. You should ideally check with a professional before attempting any exercise, but if you’re going to be following a YouTube tutorial, make sure you follow the form on the video exactly to avoid injury!

3. EAT AS OFTEN AS POSSIBLE Frequent meals help you boost your body’s metabolic system, which pretty much means you will burn more calories by literally sitting on the sofa. Just to be clear, I don’t mean eat more, but rather eat every few hours and never let yourself get hungry, keeping portion sizes small. In order to work out just how much you should be eating, you’ll need to know your basal metabolic rate (BMR). This is something your trainer can help you with, or you can use one of many BMR calculators online to work out how many calories you

should be consuming on a daily basis. Once this figure has been calculated, your trainer can help you with a nutrition plan, or you could use this with a fitness app to help you keep track. MyFitnessPal, for example, you can use to scan the barcodes of what you eat, automatically calculating and logging all the nutrients! What a great time to be alive!

4. GET PROFESSIONAL ADVICE As I’ve mentioned throughout, the best thing anyone can do is work with a professional trainer. I cannot stress enough how important it is to work out using the correct movement patterns and technique. Not only will you reduce the risk of injury by over 90%, you’ll make the most of your workout time! A good personal trainer will help you stay motivated when you need it most, and add some variety to your training to keep things interesting. As summer is almost here, they’ll help you utilise the time you have efficiently to achieve results in record time.

5. FEEL THE LOVE Many people find that they are more successful with long-term weight loss when they involve others in the process. How could your partner, family, or friends support you in your goals? Could you share healthy meals or exercise together? If you’re feeling like skipping a workout or eating something you shouldn’t, could you text or call them to help you stay on target? There is a tendency to slip back into old eating patterns after the first couple of weeks, so the people around you will play a massive role in keeping you on the right track.

6. ACCEPT YOUR WEAKNESSES If there’s an upcoming family BBQ and it will be hard to stick to your meal plan, work around it by planning ahead. Consider that you’ll be eating a lot of delicious food there, so could you minimise your calorie intake during the day? Remember, being healthy is hard work, it doesn’t come easily and you may not always enjoy the process. Expect tough times when you are bored of your meal plan and feel like rebelling, or resent having to work out because you just don’t feel like it that day. Having a clear goal set in your mind, a strong support system, and completing regular interval training will give you the edge. DISCLAIMER: I believe every body is ‘beach body ready’. N

othing hits the spot more than a relaxed al-fresco lunch. The winter months are long gone and it is time to throw out the comfort food and stock up on those lighter picnic classics. When it comes to summer dining, ‘It’s simple; take a few quality ingredients, straightforward flavours, and do it well,’ says James, head chef and mastermind behind Suffolk Food Hall’s Our Kitchen range. The

range includes ‘tried and tested favourites’ at its core, carefully pairing well received recipes with seasonal ingredients to create mouthwatering temptations for your picnic basket. ‘Honest food, that’s what’s important. The food isn’t avant-garde, we simply don’t have the demand for it. Customers want traditional, good quality grub and this is what we give them.’ With various jobs throughout the catering industry, James is surprised by the challenges

presented by Suffolk Food Hall. ‘I assumed I’d have seen it all already! As a restaurant chef, you create dishes to be served fresh straight away. Here, you have to think about every aspect; the appearance, texture, quality, how well it will last on the shelf. If the product is a hit, more will need to be made, and the levels will need to be kept on top of. It’s been an interesting challenge, adjusting the recipes to get the balance just right, but I think we’re pretty much there now!’

Suffolk Food Hall pride themselves on being a ‘Whole Carcass Operation’. Alongside ingredients from the food hall’s own farms, Our Kitchen often adds value to the excess from the butcher and fishmongers counters into their dishes. ‘There is a real focus on communication and teamwork throughout, it is terribly important. Take chicken breasts, for example, the most popular part of the bird. The demand for chicken breasts means more birds need to be butchered, which leaves surplus legs and wings to sell. The butcher will contact us, and Our Kitchen can then create something delicious to be sold on the deli counter. Minimal waste, and keeps stock fresh; it’s a win win!’ As Suffolk Food Hall is a champion for the region, the majority of the Our Kitchen range is sourced locally. ‘We get an awful lot of ingredients from our local farms, however the focus is always on quality. We’re all for celebrating Suffolk, but if the product isn’t up to standard then we’ll be looking elsewhere!’ The biggest challenge the team have found so far with supplying consistently good quality food is the quantity/batch size. ‘Due to the nature of the deli, and the popularity of the products, it can be a struggle to know how much of each item to produce, especially when everything is produced freshly. We’ve found it’s important to cook smaller batches more frequently to ensure everything stays fresh when out on the counter. Larger batches can go unsold, resulting in waste.’ Timing is also key; ‘We start early in the morning to ensure everything is cooked and cooled in time to get out to the delicatessen. Once the cooking is done we can work on the cold items, such as salads.’

Unsurprisingly, it’s the traditional products that are the crowdpleasers.

The scotch eggs are the best sellers; they are so good we’ve currently run out of them on the delicatessen! It is important to keep innovating and introducing new flavours and ingredients so the line doesn’t go stale. It’s about striking the balance.’ The team are always open to new ideas. ‘Plans include making items for the café, and maybe incorporating some sweet treats into our range as well. We also plan on starting bespoke orders, hopefully to start in the Autumn at the earliest. We have a schedule but it can be difficult sticking to it!’ With an ever expanding range, look out for the ‘Our Own’ label in the Food Hall, to enjoy a freshly prepared and unique product. Products change with the seasons, so you are sure to find something new to savour.

This makes the process slightly more expensive, but the product is higher quality and certainly more delicious.

WHAT IS GLUTEN, AND SHOULD I WORRY? Gluten is a protein found in wheat, rye and barley, giving these foods elasticity and strength. The modern western diet has become increasingly high in refined wheat products, leading to the consumption of more gluten, in comparison to generations before. If you’re sensitive to gluten, overconsumption may lead to pain and digestive issues. For this reason, growing numbers of people choose to follow a gluten-free diet. Coeliac disease, on the other hand, is a completely different kettle of fish. Affecting one in a thousand people, coeliac disease is a lifelong autoimmune illness. For those with the disease, consuming gluten causes an immune reaction to the lining of the small intestine, resulting in a range of symptoms. The varying degrees of severity associated with coeliac disease make it particularly difficult to diagnose, and can only be treated by following a gluten-free diet for life.

Recently, there has been a surge in popularity over gluten-free diets, with health food companies capitalising on this and boasting a range of benefits for cutting gluten from your diet, such as weight loss. Regularly touted as one of the best pastry shops in London, Hulya from Belle Époque speaks to EAUX about their history

elle Époque’s philosophy and strength lies in understanding the working kitchen, focusing on the needs of the chef, unrivalled in his expertise. ‘Eric and I, we set up our business 14 years ago,’ Hulya explains. ‘We were young with lots of passion and we were very ambitious. We still are, but 14 years ago was completely ‘fou’, as the French would say!’

Since opening its doors in November 2002, the boutique very quickly became a popular destination for Francophiles as well as locals.

When they found an 18th century building in the heart of Stoke Newington, Eric and Hulya knew that this was their opportunity to transform the listed building into a pastry shop.

In the shop we offer bespoke cakes, quiches, traditional French bread, light lunches, mouth-watering viennoseries and more to our customers, where they can enjoy an authentic Parisian café environment with perfectly made coffees. In Belle Époque, customers can discover hard to find French goods and traditional ‘terroire’ products, directly brought from France.’

‘When I found our first shop in Newington Green, it was a real revelation and brought such great excitement!’ states Hulya. ‘We

We delve into The Suffolk Cook Book for some of the most mouth-watering summer dishes from our local restaurants

THE GREAT HOUSE BAKED HALF-SHELL

SCOTTISH QUEENIES Serves 4 • 5 vine tomatoes, peeled, quartered and deseeded (seeds, pulp and juices reserved) • 2 tsp. extra virgin olive oil • Pinch of Maldon salt • Pinch of caster sugar • 250g salted butter • 20g fresh coriander, finely chopped • 1 fresh Thai chilli, deseeded and finely chopped • 1 banana shallot, finely chopped • 100g smoked streaky bacon, finely diced • 500g fresh chestnut mushrooms, finely chopped • 50ml medium white wine • 100ml whipping cream • 32 half-shell fresh queenie scallops • 150g buffalo mozzarella, diced into 32 cubes • 32 micro coriander leaves • Salt and black pepper

Start by making the tomato butter. Pass the reserved tomato pulp, seeds and juice through a fine sieve and keep the juice. Heat the olive oil in a saucepan, add the quartered tomatoes and cook to a purée consistency. Add the reserved juice, Maldon salt and caster sugar, and simmer until reduced by half. Put in the fridge. Cut the butter in cubes and whip with an electric beater until it forms a white and foamy consistency. Add the coriander, chilli and the cooled tomato purée. Mix well. On a work surface, layer three sheets of cling film on top of each other, making sure there are no air bubbles between each sheet. Place the tomato butter on the cling film and roll it up into a sausage. Put the butter in the fridge to set. Make the carbonara. In a saucepan, sweat the shallot and streaky bacon. Add the mushrooms and cook together until any liquid has evaporated. Add the white wine, simmer until reduced by half and add the cream to finish. Season to taste, then set aside. Preheat the oven to 200°C (fan 180°C). Place eight half queenies on each plate. Add one-third of a teaspoon of the carbonara mix on each half queenie, a cube of mozzarella and a thin slice of tomato butter on top. Put the plates in the preheated oven for 3 minutes until the butter is melted and the queenie is still soft and moist. Add a micro leaf to each queenie to decorate. Bon appetit!

SUMMER ROASTED VEGETABLE PASTA SAUCE Serves 4

TO SERVE:

2 medium red onions, roughly chopped 3 cloves garlic, finely chopped 1 large carrot, cubed 1 large courgette, cubed 1 red pepper, cubed 4 ripe tomatoes, quartered 1 red chilli, finely chopped (optional) 2 bay leaves 2 tbsp. Suffolk rapeseed oil 2 tbsp. Suffolk runny honey 2 tbsp. Suffolk balsamic vinegar 400g tin of chopped tomatoes A good handful of fresh basil, roughly torn Flaked sea salt and freshly ground pepper

• 500g penne pasta • Parmigiano Reggiano cheese • A handful of fresh basil leaves

Preheat the oven to 200°C (180°C fan). Scatter the prepared vegetables (onion, garlic, carrot, courgette, pepper, tomatoes and chilli) in a large roasting tin along with the bay leaves and coat with the rapeseed oil. Roast in the preheated oven for 15 minutes. Bring a pan of salted water to the boil, ready for the pasta. Remove the vegetables from the oven, drizzle over

the honey and balsamic vinegar and season well. Roast for a further 10 minutes. Cook the pasta in the boiling water according to the instructions on the packet. This usually this takes about 10 minutes. Remove the roasting tin from the oven and set aside one-third of the roasted vegetables. Place the remaining mixture (including the bay leaves) into a large saucepan and add the tinned tomatoes. Bring to the boil and simmer for 2 minutes. Remove from the heat and fish out and discard the bay leaves. Blitz the sauce with a stick blender until smooth(ish). Return the reserved roasted vegetables to the sauce along with the fresh basil. Drain the cooked pasta. Serve the pasta in warmed serving bowls with the sauce, fresh basil leaves and shavings of fresh Parmigiano Reggiano cheese.

PUDDING WITH EARL GREY ICECREAM Serves 12

FOR THE EARL GREY ICE CREAM: • • • • •

250ml semi-skimmed milk 750ml double cream 2 Earl Grey tea bags 250g egg yolks 125g caster sugar

FOR THE STICKY TOFFEE PUDDING: • • • • • • • • • • • •

400g dates, chopped 600ml water 4 tbsp. bicarbonate of soda 2 Earl Grey tea bags 180g unsalted butter 340g dark brown sugar 2 tbsp. golden syrup 2 tbsp. black treacle 4 medium eggs 350g gluten-free flour 50g ground almonds 1 tbsp. gluten-free baking powder

FOR THE ULTIMATE TOFFEE SAUCE: • • • • •

600g double cream 240g unsalted butter 240g dark brown sugar 50g black treacle 50g golden syrup

Make the Earl Grey ice cream. Put the milk and cream in a pan with the tea bags and bring to the boil. Simmer for 25 minutes. Mix the egg yolks and caster sugar with a wooden spoon until combined. Add the hot milk mixture to the egg yolk mixture, stirring gently in a figure-ofeight motion. Strain through a fine sieve. Continue to stir over a low heat until it coats the back of the spoon. Allow to cool, then place in the fridge to chill. Once chilled, either churn the mixture in an ice cream machine or transfer to a Tupperware container and put in the freezer, whisking it every 15-20 minutes until firm. To make the sticky toffee pudding, preheat the oven to 180°C (160°C fan). Put the dates, water, bicarbonate of soda and tea bags in a pan, bring to the boil for 15 minutes. Remove and discard the tea bags and allow to cool, then

blend in a food processor and set aside to cool completely. Whisk the butter and dark brown sugar together until creamy, then add the golden syrup and treacle. While whisking slowly, add the eggs, one at a time. Fold in the gluten-free flour, ground almonds and gluten-free baking powder, using a figure-of-eight motion with a spoon. Fold in the date mixture in the same way, until completely smooth. Line an 8 x 6 inch cake tin with greaseproof paper, pour in the batter

and bake in a preheated oven for 45 minutes. Make the toffee sauce. Place all of the ingredients into a thick-bottomed pan and bring to the boil, stirring occasionally. Once it has reached boiling point, the sauce is ready. As it cools, the sauce will thicken. Serve the sticky toffee pudding warm from the oven, drizzled with the sauce and accompanied by the Earl Grey ice cream.

ithin the delightful heart of the Suffolk countryside, you will find the peaceful village of Tuddenham. Home to the historic Tuddenham Mill, an enduring landmark in Suffolk history of which I had the pleasure to visit. The Mill is almost 1000 years old and has been professionally restored by a team of architects, engineers, craftsmen and conservation officers, who gave it a new lease of life, changing its use from a working mill into a contemporary restaurant and boutique hotel. The building cleverly fuses modern design with ancient features; exposed brickwork and beams grace the spacious bedrooms, and the illuminated old cast iron water wheel is easily viewed from the bar area, or from the restaurant via a stylish glass floor. These impressive features really are a marvelous surprise to discover. This lovingly restored Mill conversion was oozing rustic charm, stylish and absolutely immaculate, with

an ambient atmosphere that made it a very pleasant place to be. We were welcomed warmly by Paul Richardson, Assistant General Manager. With all his passion and love for the Mill, he walked us through the bar, hotel bedrooms and restaurant, sharing historical facts and stunning renovation secrets before showing us to our table and offering a drink. The restaurant itself was very charming; with the lighting dimmed and candles on the table, it truly made a romantic setting for dinner. As we relaxed further, we looked out upon the idyllic views that could almost have been taken from one of John Constable’s paintings of the rural English landscape. Observing a family of swans gliding on the water near the weeping willow, the Restaurant Manager arrived, greeting us in a friendly

manner and offering canapés before dinner. They included Dingley Dell pork scratchings and small cubes of crispy pig’s head served with truffle mayonnaise, as well as Italian Atlas olives with Mayfield English Swiss cheese, and Baked Bosworth Ash goat’s cheese with apple and celery, melting delicately and tasting delicious. Along with home-made sour multigrain bread loaves, all this made for a delightful start to our evening. From the menu, I was tempted to begin with a dish of Tilbrooks asparagus, cooked but still crunchy and full of flavour – the best I ever ate! Served with a soft boiled duck egg yolk, covered with grated Pecorino cheese, fresh parsley and sprinkled with rapeseed oil, this dish gave an incredible mix of textures in just one bite.

Trying my dining partner’s choice of cured sea trout, it was tender and delicate in taste, and served with marinated young cucumber, smoked roe, fresh nasturtium leaves, and garnished with beetroot ketchup and olive oil. It was an amazing flavour experience, as well as a treat for the eyes. I have to admit, I was looking forward to trying these dishes, as the Head Chef of Tuddenham Mill, Lee Bye, was awarded ‘Best Restaurant’ in the EADT Suffolk Food & Drink Awards 2016. He also recently won a very prestigious Acorn Award, joining an elite list of chefs being recognised nationwide. Having been head of the team for two years, his talent continues to impress not just Tuddenham Mill’s diners, but also restaurant critics and award judges. With that in mind, we could not wait to try our mains. I opted for black bream, grilled with butter and Debenham cider, served in an aromatic, creamy French based St. Jacques sauce, topped with brown shrimps and finished with delectable traditional German herby spaetzles, seated on a leaf of lettuce. This, along with a glass of elegantly clean and crisp Burgundian Domaine Laroche Chablis wine, was an absolute delight. My partner was indulging in a well presented chargrilled Denham Estate lamb rump, succulent, tender but still pink, accompanied by Jersey Royal new potatoes, broad bean and creamy Feta cheese, pureed

parsnip and almond flakes, with a garnish of Monk’s beard; a green vegetable, succulent and slightly bitter in taste. Alongside the vintage light and soft Suffolk Pinot Noir Giffords Hall Cider, this may be the finest lamb dish we have ever tasted. We were blown away with the quality of the food, from the different vegetable selection, mainly produced locally, to the first class local meats, and the attractive presentation of each dish, displaying huge amount of work and aestheticism. To finish, my partner selected a dish of Suffolk strawberries, sweet and juicy, contrasting well with a hint of sourness from the sprinkling of sea buckthorns and the garnish of crushed pistachios. The bitter, yet refreshing taste of ginger beer ice finished off the dish to perfection. It was an excellent choice, not to mention the delicious coffee served with chocolate pralines and cocoa nibbles.

I could easily say that Tuddenham Mill has the mark of a very top restaurant, as well as being able to provide the most incredible location for a special occasion, wedding or anniversary. For my dessert, I decided to ask the Restaurant Manager for the Chef’s recommendation, and it was suggested I try the English garden rhubarb. Cooked in a water bath and soaked with grenadine syrup, it had a beautifully contrasting sweet and sour taste. Served with creamy yoghurt mousse, sugar coated lemon thyme and sweet baked oats, and decorated with soft Italian and crispy French meringue, it was absolutely amazing. I was over the moon, savouring each bite of this scrumptious dessert. I could have easily eaten

Oslo From fortresses to fjords, Hannah Cutts gets to the heart of Norway’s unique capital city

hen most people think of Norway, it is images of the fjords, train rides through the mountains, incredible scenery and natural beauty that come to mind. Oft forgotten is Oslo, the Norwegian capital. As the smallest and quietest of the Scandinavian capitals, Oslo isn’t known for all that much – except, perhaps, for constantly being rated as one of the most expensive cities in the world. Bustling and beautiful it may be, but a visit certainly isn’t cheap.

It’s a city of contrast; street art is just as at home as historic palaces, tiny coffee shops and microbreweries sit comfortably alongside great museums and landmarks, and even the quietest of bars during the day are packed and lively well into the night. The vast natural parks, contemporary architecture and stunning marina are within half an hour of mountainous ski resort Oslo Winterpark, should you fancy getting onto the slopes. Oslo is a city that well and truly surprises.

Arriving by train from Rygge airport was an experience in itself. The train line wound it’s way down the coastline, providing unparalleled views of the fjord and the dense pine forests that cover the land. After an hours scenic journey, the train eventually arrived at Oslo Sentralstasjon, shortened to Oslo S by the locals. Oslo is an incredibly easy city to get around, with a variety of transport options and deals available from the tourist office, handily located next to the train station. The best way to explore in my opinion is to walk; with so many gems hidden down winding side streets, you’re guaranteed to miss something worth seeing by jumping on the bus.

One of the first things you’ll see upon arrival is the beautiful Opera House, set into the fjord. The unique design of the building allows you to climb up onto the roof, providing unparalleled views of the fjord in front and the city behind, including the famous ‘barcode buildings’. Head away from the water’s edge and back into the city, and you will find one of the most unique attractions throughout Europe. Vigeland Sculpture Park, housed within Frogner Park, is home to over 200 bronze and granite sculptures created by famed

Norwegian sculptor Gustav Vigeland. Each of Vigeland’s sculptures bar one portrays a naked human form, depicting the range of the human condition. At the highest point in Vigeland Park lies the most popular attraction, the Monolith. Towering over the park, it took three stone carvers 14 years to accomplish Vigeland’s design of 121 entwined human figures, with the piece eventually opening to the public on Christmas 1944. The only non-nude sculpture is the artist’s self-portrait. Dressed in his everyday working clothes, hammer and chisel in hand, he stands as a signature of his own work. If the weather isn’t great – and it is particularly fickle in Norway – there are more than 50 museums and galleries in central Oslo, dedicated to everything from magic, music, medicine and the military. It would be impossible to visit them all in such a short period of time, but the Viking Ship Museum is a definite must see. Based in Bygdøy, also known as ‘museum peninsula’, prepare to step back in time to the 9th century. The museum boasts the world’s best-preserved wooden Viking ships, used in burials. The Vikings believed you passed on to another life upon death, and as such the body would be loaded onto a boat along with all sorts of goods, including sledges, tools, textiles and household utensils, to prepare them for what came next.

A brisk 15 minute walk will bring you to our next stop. Also situated in Bygdøy, the Fram Museum takes you on an Arctic expedition, along with Fridtjof Nansen and the other brave explorers of the late 19th century. The cornerstone of the museum is the Fram itself, the most famous polar exploration ship in the world. Don’t forget to venture inside the ship and see what life was like below the decks. This next attraction will require a bus or metro journey. Holmenkollen Ski Jump embodies more than a century of skiing competitions and is a source of national pride. This landmark has been hosting ski festivals since 1892, and has been home to many prestigious international competitions, including the Winter Olympics. The jump itself is an impressive sight, and the adjoining ski museum, the oldest of its kind in the world, presents over 4,000 years of skiing history. If you’re feeling brave, you can choose to follow in the footsteps of Olympic champions and ride a zip line down the ski jump. Feel up for the challenge?

If the weather is on your side, a fjord excursion is essential. In the summer, the 100-km-long Oslo Fjord buzzes with life. The many boat services based in the marina are ready and waiting, offering everything from reasonable sightseeing trips to exclusive evening cruises. Should you prefer to explore privately, try island hopping on the public ferries, rent a kayak, or simply go for a swim. With the quaintly painted wooden houses, stacked up high on precipitous cliffs, yachts lazily drifting; the view alone is worth the trip. Overshadowing the marina sits the majestic Akershus Fortress. Dating back to 1299, this medieval castle had a strategic location at the very end of the headland and has

The main shopping street in Oslo has a bit of everything, lined with designer boutiques and well-known high street favourites, as well as nightclubs, bars, jazz clubs and cafés, and of course the odd souvenir shop or two! Stretching from Sentralstasjon, this street is the living, breathing backbone of the city, a constant hive of activity. Meandering down at a leisurely pace, you’ll find yourself amongst many historical sights, including the Oslo Cathedral, Parliament and the old university buildings, eventually winding up at the beautiful Det Kongelige Slott, or the Royal Palace in English. A concrete symbol of Norwegian history since 1814, the palace was built as the residence of the French-born King Charles III of Norway. Still home to the Norwegian monarchy, the palace opens its doors to the public during the summer season, provided all visitors follow a guided tour. If a tour is not your cup of tea, there is plenty of space in the palace gardens to relax. Scenic and serene, this park certainly lives up to its regal reputation. As all good things must come to an end, it is soon time to hop back onto the train heading south. As the energetic city centre quickly fades into tranquil woodland, you’re afforded a moment to yourself to reflect. This is one trip you undoubtedly won’t forget in a hurry.

Fjords Award-winning cruise blogger Danielle Fear takes a journey on Fred. Olsen Cruise Lines’ Balmoral around the Norwegian Fjords

t was a wet and miserable day in Newcastle, but Fred. Olsen Cruise Lines’ Balmoral was the sunshine at the end of the dock. After all, she was promising her 1,200 excited passengers a five night scenic voyage to Norway. Balmoral joined the Fred. Olsen Cruise Lines fleet in 2007 and has since become a firm favourite among Fred. Olsen’s loyal passengers. On board, you will find no shortage of public lounges and bars, alongside two large swimming pools and several jacuzzis, a spa and hair salon, several boutiques, fitness centre, Bookmark Café, library and photo gallery. There are also three main dining restaurants, and for something less formal, you can opt for the Palms Café. Check-in at Port of Tyne was swift and I was soon on board and in my stateroom. I had balcony accommodation on Deck 6 and it was far bigger than I had expected. There was a small safe, tea and coffee making facilities, large vanity area with chair and a flat-screen

TV, and a large picture window – ideal for taking in the stunning sights that would soon be upon us. The Balmoral is a traditional cruise ship in many ways and that’s one of the things that draws me to the Fred. Olsen fleet. I can sit on the open deck and see the sea! I know this may sound ridiculous, but you don’t get that from a lot of cruise ships these days, it’s all about cramming on board as many features and facilities as possible, but on Balmoral it’s about enjoying ocean travel as it was meant to be. There’s nothing more peaceful than watching the sun set across the stunning fjord, where snow-capped mountains tower above you and gently remind you just how small you are in the world. The voyage took us through Lysefjord, Hardangerfjord, Maurangerfjord and by the Fureberg Waterfall, Hidrasund, Stransfjord, Flekkefjord and Stolsfjord. Try saying all of that after a few drinks at the Lido Bar! I visited Norway several years ago on an Arctic Circle voyage, but everything then was covered in snow. This time I could see the lush greenery that had been hidden beneath and the wonderful small towns that were now basking in the spring sunshine. It was picturesque to

say the least and something you must see with your own eyes to truly appreciate. Our first port of call was Bergen and I was looking forward to heading ashore and exploring. Once the ship was docked, I grabbed my excursion tickets and left to explore Mount Fløyen and the city. The day had started off rather overcast, but by the time our coach arrived, the sun was out and the clouds had lifted considerably. We began our ascent up Mount Fløyen, and the views from the top were nothing short of breathtaking – as you’d expect at 1,000ft above sea level! Once back on the coach we had a panoramic drive around the city before heading back to the ship. I had intended to go back into the city after lunch, but the clouds rolled in and it started raining, so instead I stayed in the warm, taking part in the afternoon quiz. Our second and final port of call was Eidfjord. With nothing planned, I decided to take the day as it came and enjoyed a walk around what I can only describe as a little toy town with the most incredible backdrop. Mountains towered above us and the waterfalls that weren’t frozen snaked their way down them. It really was an incredible sight.

One of the biggest features of any cruise is the food, and the Balmoral certainly doesn’t disappoint! Every evening the menu was exciting and I eagerly anticipated dinner in the Spey Restaurant on Deck 10, my allocated venue for the cruise. During a Fred. Olsen cruise, you must never miss out on the soup. I always look forward to a good, creamy bowl of something homemade and delicious, the cream of potato and the roasted garlic variations being my favourites. My voyage aboard Balmoral was my third cruise with Fred. Olsen Cruise Lines and as I’d expected, it did not fail to deliver. The scenic aspect was the absolute highlight for me. We were presented with some magnificent sights throughout, including the Fureberg Waterfall. In fact, there were several times when the ship stopped so we could admire the scenery. At Lysefjord, one of the more impressive fjords, the ship completed a 360-degree turn so every passenger could get a good view. Fred. Secret Escapes Discover Margot House, a secret boutique hotel in Barcelona where luxury and privacy meet

A tireless traveller, Durany was inspired by a mix of accommodation from different corners of the globe in order to envision a unique hotel with personality, free of any convention. The nine guestrooms at Margot House are decorated with fine materials such as light wood, and cement micro lamps from award winning designers such as Miquel Milà and other Japanese designers. Thanks to the Durany design, VansKap Studio Interiors and Ambit Interior Decoration, they have been able to achieve a spectacular result.

Discovering Dubrovnik Georgia Watson discovers Dubrovnik for her EAUX travel debut

he Pearl of the Adriatic, Dubrovnik is one of Europe’s most beautiful and ancient cities. When you first round the coast and catch a glimpse of the walled

town of Dubrovnik, the sight before you is simply breathtaking. With high stone walls, light blue seas and red tiled roofs, the Old Town welcomes you by revealing its harbour; little boats bobbing up and down on the waves as the sun shines.

you can instantly see how the city had such an advantage over their enemies – the seascape stretches out almost endlessly with boats tiny little dots in the distance. My favourite angle from the walls was of the impressive building that is Fort Lovrijenac, the waves crashing against its rock in a foamy mass. To enjoy this view further, we left the Old Town out of the Pile Gate and had dinner at Dubravka 1836 on the terrace overlooking the Fort. Opting for a seafood risotto, the fish was so fresh and delicate in flavour making it the perfect summer dish. Also offering many traditional meat plates, my partner chose a huge steak with melted cheese, mushrooms and fries. The next day we took a boat from the Old Port out to the tiny island of Lokrum. Just a ten minute journey from the main city, Lokrum is

Our first day exploring the Old Town led us through the bustling Pile Gate (one of two gates into the town) and onto the main street, the Stradun. Full of shops and restaurants, the paved walkway, like the rest of the Old Town, is pedestrianised. Without the hustle and bustle of cars, you really get to experience the town as it would always have been. Sandy coloured marble stones line the floor and elegantly designed buildings with red tiled roofs lead the way with curved doorways and green shuttered windows. Making you instantly feel a million miles from everyday life, it’s exactly the sensation you dream of when escaping on holiday to a city destination.

The legend goes that Richard the Lionheart was shipwrecked here on a return from the crusades and built a votive chapel, but there are many intriguing stories that surround Lokrum that you can discover from locals on your visit. The island is home to a large group of beautiful peacocks roaming around, as well as many little lakes such as the salt water Dead Sea that is popular with visitors. We took a turn around the Botanical Gardens before making the steep ascent up to Fort Royal. The climb up to the fort is enough to put off most, but it truly is worth it for the outstanding views across the Adriatic and is one of the best spots for photos of the walled city from afar.

As we sailed back to the city, the grandeur of the walls rises out of the sea creating an overwhelming understanding as to why Dubrovnik is called the Pearl of the Adriatic.

Taking the day to get the feel for Dubrovnik life, we explored the narrow alleyways filled with street performers dressed as pirates with parrots on stands and brightly coloured stalls selling souvenirs of lavender bags, flavoured liquors and beautiful paintings of the local scenery.

Day two and it was time to tackle those city walls, a must-do for visitors to Dubrovnik. Able to leave the walls at various places, we managed to walk its entirety in around 45 minutes, stopping to snap multiple panoramic photos, of course. The views from the walls are even more glorious than you can imagine, and

Visiting the Aquarium housed in an old fort, before going upstairs to the Maritime Museum, there was plenty to learn about Dubrovnik’s marine life from these small but perfectly formed exhibits. We also took a walk around the Old Port to take in the stunning views of the coastline and mountains, with the delicious aromas from nearby restaurants tempting us to enjoy their dishes full of fresh seafood straight from the Adriatic Sea.

The ancient city walls and Fort Lovrijenac are of course a major historical and cultural draw, not to mention their stunning views, however there is also plenty of museums to learn more about Dubrovnik and Croatian culture as a whole. The Museum of the Croatian War of Independence offers a real insight into the recent struggles, and you can enjoy a cable car ride up to the museum whilst taking in the sights. There is also an Ethnographic Museum in an old granary, a Natural History Museum perfect for kids and many monasteries to visit in the Old Town.

Take walking shoes. Dubrovnik is incredibly hilly and has lots of uneven ground, especially in the older parts and when visiting Lokrum island.

FINE DINING Dubrovnik’s Old Town is full of busy restaurants and cafes. The ones on the main streets often charge more, so it’s worth wandering the side streets for hidden gems. For fine dining inside the city walls, Restaurant 360° serves up Mediterranean flavours in a setting with panoramic views across the city. It’s known to get booked up in peak season, so make sure you reserve a table before you go. For those staying outside the city walls, Orsan Restaurant at the yacht club in Lapad was our favourite and offers incredibly fresh seafood platters. A relaxed restaurant on the harbour, you can look across to Gruž and dine on fish cooked in the traditional Croatian way. Back in the Old Town, if you’re looking for craft beer or ale, there aren’t many options however the Glam Café has a brilliant selection of Croatian ales if you’re missing having a pint or two.

If you’re planning to go to many of the attractions and museums, it’s well worth buying the Dubrovnik Card. You can purchase it for either one, three or five days and it will give you access to eight attractions as well as free use of the buses and discounts in some of the cities restaurants. The Old Town can get extremely packed with tourists due to Dubrovnik’s popularity as a cruise port. Try to get into town earlier in the morning or later in the afternoon.

WHERE TO EXPLORE The peninsulas of Babin Kuk, Lapad and Gruž in Dubrovnik are less explained in guidebooks but hold beautiful views, fantastic restaurants and long walks along the coastline. A great walk can be found around Babin Kuk, starting and ending at Gruž harbour. Along the way don’t forget to stop at the Cave Bar More for a drink before sunbathing further along on Copacabana beach. If you want to explore further afield, Dubrovnik offers plenty of boat trips to nearby islands. Tour the Elaphiti Islands for swimming in caves and coves, or party on a pirate ship with a glass of bubbly in hand as the sun goes down. There is also kayaking, submarines and glass bottom boats that sail from the harbours.

It’s been over a year and a half since Road Test began. I have had the luxury of driving and reviewing some of the most amazing cars available to drive on our fair roads. We have had the sensible, the incredible, and this month we have the ultra fast and ultra amazing; the Audi R8 V10.

Audi has created something truly special with the R8, from the partnership with Bang and Olufsen for the sound system, satellite navigation with DVD, colour-matched wing mirrors, and 19” ten spoke Y-design wheels, ensuring the R8 is even more of a head turner than before (if that was possible). With the 2016 model available now, there have been changes made to the ride position and body shape, so be sure to drive the old and the new when it comes to picking the R8 for you. Myles Davies puts the Audi R8 V10 Coupe through its paces free, ready for a day at the races, or that important business meeting in the city. There are only two seats in the car, so of course you’re not going to be able to take the children to nursery, or take the dog to the woods, and it does not have space for a pushchair. But that is not what this car is about; this is not a family car that caters for a busy family lifestyle. This is a luxury lifestyle choice for the most sophisticated drivers. It complements a family household car (I would recommend the RS Q3, having one myself) and is a thrill to drive. The car holds the road, is quick when needed, and the technology installed does not leave you wanting. When it comes to the sound and exhilaration of acceleration, it reminds you of being a child again. I was grinning from ear to ear as I tore off down the slip road to join the motorway. This is one of the best cars I have ever driven on a UK road. It has made it to the top of my list of cars to accompany the family car, and will be on my mind for months to come.

The Bealach na Bà (Pass of the Cattle) in Ross and Cromarty in the Scottish Highlands is one of the most scenic, with rolling mountains all around. The ascent, with hairpin bends and narrow single-track sections, leads to the reward of the view across the Applecross Peninsula. The pass rises by a huge 2053ft in five miles, starting from Loch Kishorn. As you continue the drive southbound you’ll enjoy stunning scenery of the Loch before turning west and downward for breathtaking views. The gradients on this road peaks at 20%, so we don’t recommend you bring your caravan or attempt this during wintery weather.

2. HUMBER BRIDGE As the world’s seventh-longest single-span suspension bridge, this is definitely worth a trip up to Hull between Lincolnshire and Yorkshire. It may cost £1.50 to cross, however the views over the estuary make it more than worth it. Ranked as the sixth most scenic drive in the UK, there are some places of interest along

the way, such as the Humber Bridge Country Park, to make your trip even more memorable.

3. BALLYRUSH TO CUSHENDUN Take in the spectacular views over Murlough Bay in Northern Ireland by travelling the road from Ballyrush to Cushendun. Head off the main A2 onto Torr Road before turning onto Murlough Road and towards the coast. For those that watch Game of Thrones, you may recognise some of the scenery as part of the show was filmed at the Cushendun Caves, a must visit for die-hard fans. Stop off at the idyllic little village of Cushendun to explore the harbour before continuing your adventure.

5. A3055, ISLE OF WIGHT The A3055, better known as the Military Road, from Chale to Freshwater on the Isle of Wight reveals sections of unspoilt National Trust Land that runs parallel to the cliff top. The sea rolls down below you and at its high point you can see the entire coast of the Isle. Originally built as part of the islands defence network in 1860, it was a private gate road for 70 years and served as a road between forts. Suffering from coastal erosion, it’s worth making this trip sooner rather than later.

4. BLACK MOUNTAIN ROAD According to the Telegraph, this is the most memorable five miles you’ll ever drive. The Black Mountain Road in Powys, Wales, twists, dips and climbs from Llangadog to Brynamman through the Brecon Beacons National Park. Featured on BBC’s Top Gear, this 27 mile route has some of the best corners for testing out your vehicle, just watch out for wandering sheep on the road!

WHAT INSPIRED YOU TO START UPCYCLING FURNITURE? I started back in 2010 when I started watching home makeover shows, and thought to myself 'I can do that!' I went to the British Heart Foundation charity shop, purchased my first piece of furniture, and haven't looked back since.

AT WHAT POINT DID YOU DECIDE TO OPEN THE SHOP SKYLAR-BELLE? It was always a dream, a dream I never thought possible, however an opportunity arose in 2014 and I snapped it up!

WHY DO YOU THINK ‘SHABBY CHIC’ IS SO POPULAR? I think it's popular because it's accessible to everyone, shabby chic furniture can look great in every home as it sits comfortably alongside a lot of interior themes.

YOU MUST ALWAYS BE ON THE LOOKOUT FOR NEW PIECES OF FURNITURE, WHERE DO YOU FIND THEM?

I am always looking! Most of the pieces are found by scouring the internet, charity shops and auctions. I also sometimes have people contact me, looking to get rid of old furniture they no longer want.

WHAT IS THE MOST CHALLENGING ASPECT OF UPCYCLING? I think it would be finding the furniture! Since it's become so popular, lots of people are hanging onto pieces of furniture they would have previously discarded. However, it is great that so many people now see the potential in their old furniture, meaning that less and less is being thrown out.

WHAT’S THE MOST EXTRAVAGANT PIECE YOU’VE EVER CREATED? Probably a green and pink kitchen dresser I painted a few years back. There was also a dressing table that took hours, I was picking out all the tiny details in white and painted the background a bluey-purple colour, it truly was beautiful!

WHAT ADVICE WOULD YOU GIVE TO SOMEONE WHO WOULD LIKE TO TRY UPCYCLING FOR THEMSELVES? The best advice I can give is to ensure you use really good quality paint. This is key for longevity, and for the piece to look it's best. It doesn’t matter what else you do to the piece, if you use poor quality paint it will show! We are an official stockist of Frenchic furniture paint in the shop, which is chalk-based and incredibly easy to use. We also provide classes on how to upcycle, so if this is something you’re interested in, come along to the shop to find out more!

The Opera House is built on piles of rock in the Oslo fjord, abutting reclaimed land. This extends Oslo’s harbor, giving more of the city’s waterfront space back to the public. The building faces the city as much as the fjord, creating a strong visual connection between the downtown area of the city and Oslo’s eastern areas. In the winter months, ice often forms along the ramp, with snowdrifts altering the form of the building.

The high glass facade over the foyer has a dominant role in the views of the building from the south, west, and north. The glass plays an important part of the building’s overall aesthetic, both during the day and in the evening, where the glass acts as a lantern illuminating the external space. Much attention has also been given to the interior, with oak surfaces bringing warmth and contrast to the

coolness of the white marble. The focal point of the main auditorium is an oval chandelier, containing 5,800 handmade crystals. The building has much to offer the public, including those not necessarily fans of opera, ballet or orchestra. One of many keyless structures Snøhetta has designed, the building’s lobby is a public space, free and open to the public 24 hours a day, 7 days a week. A plethora of art projects were commissioned for the interior and exterior of the Opera House. The most notable is She Lies, a sculpture constructed of stainless steel and glass panels by Monica Bonvicini. It is permanently installed on a concrete platform in the fjord adjacent to Opera House and floats on the water, moving in response to tides and wind to create an ever-changing face.

slo’s Opera House is part of the city’s revitalisation strategy, helping to redevelop the city’s historically industrial waterfront into an active public space. A competition was held to win the design contract, which was eventually won by architecture firm Snøhetta. Construction started in 2003 and was completed in 2007, both ahead of schedule and under budget. Snøhetta’s prize-winning design was characterised by the judges as having ‘a strongly identifiable theme, tying the building to its culture and place whilst also presenting an unusual and unique expression’.

As much a landscape as a piece of architectural art, the roof is designed to be accessible in all seasons, inviting visitors to climb up and over the Opera House. Providing panoramic views of Olso and the fjord, it truly is a sight to behold, a stroke of genius from Snøhetta. While much of the building is covered in Italian white carrara marble, the stage tower is clad in white aluminium.

As time goes by… Emma Woollard of Blocks Solicitors discusses the importance of planning for the future, before it’s too late

O

n a beautiful July day in 1955, the bride wore an ankle length, flutter hem gown with tiers of Chantilly lace and a bouquet of roses with trailing gypsophila. On an equally sunny July day in 2015, Cyril and Margaret celebrated their golden wedding anniversary surrounded by family and friends, glasses of champagne and strawberries. On a not quite so nice day the following December, Cyril was admitted to hospital with a severe stroke, affecting his ability to walk, talk and communicate. With Cyril unable to return home, it became clear very quickly to the family that Margaret was struggling being on her own. Cyril had always looked after the family finances, he paid the bills and dealt with the bank and pension companies. Margaret, always being so busy with the children and

grandchildren, had just left Cyril to it, and now she had to try and make sense of what she needed to do. Margaret picked up the phone to her daughter Helen and admitted she needed help. Helen, being a long-term client of Blocks Solicitors, phoned us and we arranged to meet with Margaret and the family. As a result of that meeting, we were able to set up Lasting Powers of Attorney for Margaret, so that Helen and her siblings could help her with the property and financial affairs, taking those worries away from her. Margaret also decided to enter into Lasting Powers of Attorney for Health and Welfare, so if she was ever unable to make decisions for her own care then her appointed attorneys could step in. We were also able to apply to the Court of Protection for Helen and her brother to be appointed as Deputies for Cyril, so they could

deal with his finances and make sure they were working as efficiently as possible. Unfortunately for Cyril his health hasn’t improved, but we were able to advise the family on a successful claim for NHS Continuing Care, meaning that his nursing care is fully funded at no cost to the family. Margaret and Cyril’s wedding day was perfectly planned, down to the very last sugared almond for the guests. What wasn’t quite so carefully planned was their later life and what would happen to them if they needed help in the future. Lasting Powers of Attorney, up to date Wills and a general review of their finances would have saved Cyril and Margaret from unnecessary worries and additional expense. H

ome insurance cover is essentially split into distinct sections; buildings, contents and combined policies. Building insurance will protect you against costs arising from damage to the building as a result of burst pipes, fire and floods, amongst other things, and can cover the cost of rebuilding should your home be completely destroyed. Contents insurance covers fixtures and fittings, such as carpets, curtains, televisions, computers, and personal items such as jewellery. If you’re a homeowner, it is possible to cover both the building and contents within a combined policy. However, when insuring a second property, either in the UK or abroad, it is important to remember the following:

BE HONEST Most insurers will expect holiday homes to have a lower occupancy than main residences. You must provide your insurer with an accurate account of how often you visit your second residence, to ensure an accurate quote with the fairest terms and premium. This will also avoid any nasty surprises in the event that you need to make a claim.

TAKE A GOOD LOOK AROUND Under-insurance is an issue affecting many homeowners in the UK. Insurance brokers can offer an appraisal service, during which they will review the value of your contents against the ‘sum insured’ on your policy and check that the cover is adequate. However, it is not always available in the case of holiday homes,

particularly those located abroad. I would advise to go through each room carefully and check your contents. You might be surprised at just how much it would cost to replace some, or all, of your possessions.

LETTING OUT YOUR PROPERTY Numerous homeowners wish to take advantage of the earning potential held in their properties, most commonly achieved by letting it out to tourists. It is critical that you inform your insurer of this, in order to ensure your policy covers you against any damage caused by tenants; this is not always included in standard wording.

IS ANYONE KEEPING AN EYE OUT? Insurers will often ask questions about the risk management of the property before underwriting cover for holiday homes. One way to help keep your premium down is to invest in security. Insurers will normally provide better terms on holiday homes where someone regularly visits the property to inspect it, or where there are fire, intruder and water leak detection devices installed.

LANGUAGE BARRIERS AND LOCAL LAWS It may sound obvious, but approaching a local insurer where the holiday home is situated can be problematic due to language barriers. It can be difficult to understand the local laws and legal system practices, and interpreting a policy wording that is not in your native language is no easy feat. Many UK-based insurers now offer cover for holiday homes abroad. Your broker can advise you on finding the right policy.

hen George Osborne introduced the pension changes on 19th March 2014, the retirement market changed overnight. Instead of needing to buy an ongoing income, people with individual pensions could simply elect to take their money out of their plan as they wanted, in stages or even in one go. ‘Pension freedom’ was born.

What types of pension do you have? Before looking at your options it is important to take stock of your current and future pensions. Almost everybody will be entitled to a state pension, which can start at your state pension age, and in addition you may have one or a combination of the following; a final salary pension, a personal pension, or a company money purchase pension. It is important to remember that you will pay tax at the marginal rate on any lump sums (except the 25% tax free) or income. This means that even though you might normally be a basic rate tax payer, you could become a higher rate tax payer after taking out a cash lump sum. The only arrangement that can pay an income for life is an annuity, because it converts your pension pot into a stream of future income. Where to start: annuity or drawdown plan? Decisions, decisions! If you want to know which options are most suitable for your circumstances, you should contact a financial adviser. Whether to purchase an annuity or invest in a drawdown plan is probably one of the most difficult financial decisions in

personal finance. Not only are the two financial policies designed to do different things, they have different risks associated with them. Retirement is not what it used to be! Previously people thought of their pensions as a black box, which they didn’t look into until they retired, and even then they didn’t necessarily understand what was going on except they were getting a regular income. What you want to happen to your pension fund is now a matter for you and nobody else. You have total freedom to do whatever you want, however this does not mean you should spend your pension pot unwisely. It is worth remembering that retirement is like a long holiday; enjoy it to the fullest, but not so fully that you run out of money! What to do next The next step is to get financial advice.
