Spirit of the Sea Victoria Guthrie speaks to Sean McMillan, CEO of Spirit Yachts

‘I never really had to consider where to come back to in England – I love Suffolk. From a boat-building point of view it’s great,’ says Sean. ‘Although the South Coast is the main area where yachting is concentrated, there is a healthy industry here too. We have a great pool of experts and suppliers nearby. It’s much more peaceful which I like and I think it’s a great place to work.’

ean McMillan was thrown into dinghies as young as three and has sailed all his life. He was just 12 when he built his first boat. After university Sean bought a large cruising yacht and worked abroad, sailing and boating still an amateur hobby. It was in his mid-thirties when he returned to England that he decided all he really wanted to be doing was making boats.

Sean and his talented team are world leaders in wooden yacht construction. Over the years they have developed a very sophisticated way of building. Their yachts have a classic, elegant look and are very lightweight which makes them extremely fast. Instead of nailing planks of wood to a frame, they are constructed from multiple laminates – thin layers of timber that are glued together to create thicker pieces that are as strong as carbon fibre.

because we only build two or three – maybe four a year.’ Outside in the yard there is a beautiful 65ft fast cruiser racer which is going to the Singapore Yacht Show in Hong Kong for April. Inside there’s a 40ft super yacht tender, a new 46ft being started and a pair of small 37fts in for engine changes and services. The amount of man-hours that go into crafting a single yacht is incredible. ‘The 65ft that we are just finishing has between 10 and 12 boat builders on it, a couple of cabinet makers, specialist electronics engineers and mechanical engineers so it’s a complex team that has to work in schedule with each other. The engineers can’t get in at the beginning so it all has to run to a tight schedule of who gets in and does what when,’ explains Sean. Perhaps one of the most prevalent trends that have been emerging in the boat industry is that of the super yacht industry – boats of

Sean is certainly an advocate of wood as a material for boat building: ‘it’s light, incredibly strong and a laminated wooden structure is as strong as steel. Wood is cool in the summer, warm in the winter, has insulating qualities and looks great, too.’ A wooden yacht has indefinite life and is almost infinitely repairable. Sean goes on to explain that the only thing wood has against it – which is also why there are so few yards practicing it in the world – is that you need a highly skilled workforce. ‘It has taken me 15 years to put my team together and they are the best in the world. I’m often asked where I find my staff but often they find us.’ Sean has CVs fly in from all over the world with talented boat makers wanting to work for Spirit, from as far away as Australia, the USA and South America. Surprisingly, Sean’s team is relatively young: ‘people are still training, learning the skills and going to specialist colleges or doing apprenticeships. We sometimes take a few school leavers if they have the right flare for it. We can cherry-pick the finest. We are the best so they will find us if that’s what they want to do.’

80-90ft and upwards. ‘I feel there is a bit of an arms race amongst the world’s wealthiest to get the biggest and best. However, there are issues coming with that; it is very difficult to justify one human being having such a massive proportion of the world’s resources and thousands of litres of fuel.’ Sean believes that a big green agenda is going to arise and that yards like Spirit Yachts will be at the forefront because they are using a renewable energy source. ‘There will always be extremely wealthy people who want the biggest and best,’ says Sean, ‘but it may become rather socially unacceptable after a while and I think our industry needs to be sensitive to that and manage that.’ © 2014 Tim Wright

As working in wood is so rare, it adds an air of exclusivity to Spirit yachts. ‘It’s to do with the intensity of labour and number of man hours that go into each and every yacht,’ explains Sean. ‘Due to this yachts are inevitably a relatively expensive thing to create and also

Sean has been making boats for almost thirty years now – that’s around 75 wooden yachts to his name. Sean does all the design work himself in-house. On the drawing board in front of me there is a technical drawing of a 57ft fast cruiser for a repeat American client. ‘It’s extremely rare – I don’t know of any other yard in the world – that yachts are designed and built all in once place. Everything being in-house is a selling point for clients because they can just have one conversation.’ Lots of the work is from existing clients upgrading to larger models from ones they had originally bought from Spirit Yachts. ‘The repeat business is very encouraging – we must be doing something right! Though interestingly very few of our boats go on the second hand market. There have only ever been about half a dozen that have changed hands. I think some of them have become heirlooms and will stay in the family for many years.’

Pearl of the Ocean Gemma Cresswell speaks to Rob Humphreys of Humphreys Yacht Design about the new Oyster 825

F

ounded in 1973, Oyster yachts are renowned for their performance, quality and comfort. They are recognised globally for their comprehensive range of hand-crafted yachts and, with its elegant and contemporary style, the Oyster 825 is an exciting new addition to the fleet. The original Oyster 82 was designed more than twelve years ago and has been a successful model for the company. The CEO of Humphreys Yacht Design, Rob Humphries, headed up the redesign. He explained that it was a little daunting to design its replacement; making sure that the new design captured those aspects which made the Oyster 82 so popular, while looking ahead to the future. ‘The blue water capability for which Oyster is renowned was a fundamental requirement but further to this we needed to reflect the increased interest in Oyster regattas and other events which a future Oyster owner will want to enjoy.’ Measuring in at over 80ft, the 825 offers more space than its predecessor, giving owners the feeling of light and space below deck as well as the opportunity to sail alongside a

professional crew. Rob said: ‘by the time one gets to about 80ft there tends to be clearer demarcation between guest areas and crew areas in order to achieve some level of social separation if that is called for by the owner. That’s not to say that few crews integrate with the guests, but it becomes an owner’s prerogative rather than a design constraint imposed upon the owner.’ While the yacht is impressive in size, it can pose several challenges to the design team. To ensure that the dimensions don’t compromise handling and sailing, performance enhancement was built in to offer the robust construction and storage capabilities needed for self-sufficiency at sea. Yet, according to Rob the biggest challenge wasn’t one of scale but instead in how to move forward while respecting the values and history of the brand. As such, it is this combination of forward-thinking and traditional values, which make this latest addition to the Oyster fleet so unique. When asked which elements of the Oyster 825 he is most proud of Rob responded: ‘It is the seamless harmonisation of traditional Oyster virtues with

a turn of speed and handling response that causes general surprise for all who sail on her.’ The Oyster 825 isn’t the only yacht that Humphreys Yacht Design have worked on; Rob has been involved with the evolution of the Oyster fleet for 20 years. The company are also working on three further Oyster yacht designs which are yet to launch – the 675, 745 and 115. ‘Most of the design work is completed on the 745 and we are well under way with the 675. Similarly the 115 has already gone through a long design process although the precise build strategy of this exciting yacht has not yet been finalised.’ Speaking of the projects he has most enjoyed working on, Rob said: ‘as in life, the first of everything is always very memorable and the Oyster 56 therefore enjoys a unique position. But, novelty aside, it has been both a pleasure and a privilege to work on this outstanding range of yachts, with no one model claiming priority in terms of either pleasure or anxiety! Even with some changes in company ownership and structure it is great to see the collection’s DNA remaining true to its history, yet stepping forward in terms of wider capability.’

New Era for RHYC We find out about the history of Royal Harwich Yacht Club

T

he Royal Harwich Yacht Club (RHYC) has a long and fascinating history; it was formed in 1843 under the name of Eastern Yacht Club by a group of yachtsmen at the Three Cups hotel in Harwich. Today it is an integral part of the local community, offering regattas and racing events, attracting children, adults and everyone in-between from far and wide. In 1845 the club was renamed Royal Harwich Yacht Club and an Admiralty Warrant was also awarded for giving its members significant privileges in the form of mooring rights, exemption from lightage fees and free pratique in various foreign ports. RHYC moved into a new clubhouse next to the Navy Yard, ideally placed, offering views across Harwich Harbour. After the landlord went bankrupt, in 1859 the club was forced to find alternative premises and for 60 years meetings and events were held in a range of local hotels until WWII broke out. Around this time many yacht owners still wanted moorings nearby and moved up-river to Pin Mill in Suffolk. This prompted the general Committee to make the decision that the RHYC clubhouse should be on an old houseboat, but these plans never made it to fruition. In 1946 the club moved onto land alongside a boat yard with Nissen huts in Woolverstone.

This allowed space for running small yacht and dinghy racing, though access was shared with the boat yard and was tricky at times. Forward on 22 years and the Nissen huts were demolished to make room for a new clubhouse which was opened by Sir Robin Knox-Johnson in 1969. Over time the building expanded; another ground floor room was added as well as an extended car park and more storage. RHYC grew as outbuildings were erected and a marina built on the foreshore.

In Spring 2013 the club moved into contemporary new premises, 170 years after it was first formed and opened again by Sir Robin Knox-Johnson, 45 years after the last building was opened. part from maybe your wedding planner, your photographer is usually the vendor that you’ll spend the most amount of time with on your wedding day so it is really important that you choose someone who really is a great fit for you personally and well as creatively. With many photographers of all styles, approaches and personalities in the industry today, my clients often tell me that the process of finding the perfect wedding photographer can sometimes be a little daunting; even knowing who to book in a meeting with from the sea of prospective vendors can often leave you a little dazed and confused. So in light of this, I would love to share my top five tips for what to consider when looking for a wedding photographer, before you make that step to scheduling consultations:

Talk it over What is it exactly that you’re looking for when it comes to your photography? Would you like the full day covered? Is a wedding album a must-have? You’d be surprised how many couples haven’t taken the time to discuss this together before they sit down with a

prospective photographer. Putting some time aside between yourselves now, to discuss your likes and dislikes over coffee, will save a lot of time later down the line as you’ll be making more informed decisions of who to meet with.

Consult your network Like any big decisions we make in life, we love to have trusted referrals. There is nothing like speaking to someone that has been through the experience of working with a wedding vendor themselves and so it is worth talking to friends, family and colleagues who have recently been married. You may even learn about some really great suppliers who you may not have come across before.

Spend some time online

With the wedding blog quickly catching up with the glossy bridal magazine of THE place to find inspiration for your wedding day, it is also a fantastic place to find wedding photographers. With many of the top blogs publishing real weddings on a regular basis, with the photographer for each, credited in the article, it can be a great way to really get a sense of how a certain photographer captures a complete wedding story.

Get social

A great way to really get a sense of how a business communicates with their clients is to connect with them via social media and via their website. With many wedding photographers being active on sites such as Facebook and Twitter, it’s a great way to keep up to speed with what they’ve been working on as well as seeing first hand how they converse online with their clients and followers

Select your top three

From working through the above steps, it should have enabled you to find some really fantastic photographers that you just can’t wait to meet. My only advice now is to drill down that list to your top three and go meet them, safe in the knowledge that you now have a greater idea of what you are really looking for and so will hopefully save you a lot of time and energy in the long run. his season textures are key. It’s official – knitted dresses are back and there are a lot of different ways to wear them. Team them with tights, black leggings or skinny jeans. The jumper dress is a great fail-safe one-piece outfit. Some dresses come in plain colours or in stunning prints and which one you go for is entirely your choice. Buttoned Cardigan

Long cardigans in soft colours are back in. This is a relaxed way of wearing a smart-casual outfit, whilst still keeping comfy. Think bohochic combined with effortless French style and edgy textures.

Chunky Jumpers

You’ll see plenty of grunge, mannish touches, sports-chic and animal inspired motifs in chunky knitwear this season. Popular colours include navy, cream, black, grey, pale pink and burgundy. Personally, I love seeing women who combine jackets with an oversized thick jumper and sophisticated pencil skirt. Carefully chosen, this is a wonderful look.

Poncho

This season the ponchos are both fitted and feminine. Worn with a stylish black cigarette trouser, this is a clever way of pulling off a distinct look in a simple and uncomplicated way. Keep an eye out for cable knit ponchos and those with black and white Aztec patterns.

Long Chunky Scarves

This trend is about serious layering. Double up any scarf to be at least double the normal length. Look out for scarves with pretty embellishments, which are perfect for making a statement. If you don’t want to change your whole look, a scarf is a great way to give a quick nod to the season’s knitwear trend without going all out.

A single mum from Suffolk has turned her passion for improving people’s hearing, into an award-winning business, that has changed the lives of hundreds of people

I

n just over 16 years local entrepreneur Karen Finch has transformed from a single mum with a hefty business loan, struggling almost single-handedly to build her business, to having one of the most respected companies in the hearing care sector, prescribing and fitting the latest hearing aid technology to patients. Karen Finch is owner of The Hearing Care Centre. Born in Ipswich, from a medical family, Karen had a career in sales. After having a family she worked as an administrator for a healthcare company before joining the NHS. In 1997 she took her audiology exams and whilst working as an employee, recognised a significant gap in the market; the need for a business that put ethical, holistic hearing care before profit. Despite the huge risks, she remortgaged her home to set up The Hearing Care Centre in rented property in Ipswich. As the demand for the company’s services grew, Karen recognised that she needed more audiologists, so invested £100,000 to train two existing employees. Now the company has six qualified audiologists, operating in nineteen centres covering East Anglia. 40% of all business is repeat and in the most recent

survey, patients gave a satisfaction average of 96%! 16 years on, Karen’s passion for helping to improve people’s hearing has not wavered. ‘I truly love my job and consider myself a very lucky person. My team and I help to improve the lives of hundreds of people every year. However, we are all too aware that there are still many people out there struggling with hearing loss, who have yet to take action. Struthers for Morgan Victoria Guthrie talks wristwear with Rebecca Struthers of Struthers London

W

e had the exciting opportunity of speaking with Rebecca Struthers, one half of Struthers London, British watchmaking husband and wife team known for their award-winning designs. Struthers have combined forces with The Morgan Motor Company to create the ultimate bespoke watches tailored to reflect the values of this classic car company – the epitome of British classic car designage. Rebecca and Craig had been fans of Morgan for many years but it was a chance encounter with Charles Morgan at the Birmingham Made Me Expo 2013 that

started the ball rolling with their collaboration. ‘We attended the Midland automotive seminar day and saw Charles present a talk on the Morgan brand, heritage and design ethos,’ said Rebecca. ‘As an emerging business we really admired the Morgan style looking at designing instant classics and reworking traditional designs with contemporary technology to create modern luxury. ‘We actually found Charles’ talk so inspiring that we decided to design a watch based around Morgan’s design heritage. I decided to be a bit cheeky and let them know what we were planning on doing. Morgan’s Head of Design, Jon Wells, asked to meet with us and

found the concept exciting enough to ask us to make the collaboration official, and the rest is history!’ Rebecca started training as a jeweller and silversmith at the age of 17, when she discovered horology and started a course at the School of Jewellery where she was already training. In 2005 Rebecca started studying the joint HND and British Horological Institute courses and hasn’t looked back since. ‘I have always found myself in the difficult spot of having an equal love of the arts as I have of science,’ she explained, ‘and there are very few subjects that have a mutual respect for both.

Horologists get to play the role of both artist and engineer.’ Rebecca now works with her husband Craig, master watchmaker, who has spent years learning from some of the greatest antique and vintage restorers and even completed an apprenticeship with a veteran chronometer maker for Mercer. The duo are passionate about combining contemporary design with traditional watchmaking skills and after deciding they wanted to do things their way. ‘Craig and I have very different skill sets so we never tread on each other’s toes, plus being self-employed leaves you working so many hours that if you weren’t married to your business partner you’d never get to see them. ‘We both hit a point in our careers back in 2012 when we wanted to make a break and do things our own way. We’d gathered quite a bit of

experience working in different elements of the industry by this point and had the skills to set up our own business.’ Struthers is known for combining contemporary design and technology with traditional skills which really sets them, apart from other watchmakers. Rebecca says that a well-made case should be a beautiful thing on its own, and the aim is to introduce an equally beautiful movement to it. ‘A lot of manufacturers focus solely on movements and use a lot of modern technology. We have created a balance between the two by using really traditional techniques like joint making, burnishing and forging alongside modern Computer Aided Design (CAD) and rapid prototyping.’ Rebecca was taught by a master goldsmith for the first two years of her training and his outlook inspires the way she works to this very day: ‘I remember preparing to make a brooch I’d designed in base

suppliers. The duo tried to mirror the Morgan brand in every last detail of their watch so that even without the Morgan logo on the dial you could hold it beside a 4/4 or Plus 8 and see the synergies. Craig favours the period of watchmaking around the same time as The Morgan Motor Company was founded in 1909 – the earliest commercial wristwatches which are referred to ‘trench’ in style. ‘It was a fortunate coincidence that we had a genuine love of the style of watches which would have been worn by the first Morgan owners,’ explained Rebecca.

He told me that if I was going to go to all the effort of designing and making something beautiful with my own hands I should chose a metal that respects that; the metal needs to be equal to the love and time that goes into everything you make which is why to this day we only ever work in precious metals.’ Rebecca and Craig entered the Morgan collaboration in the knowledge that their last partner was the Swiss watch giant Hublot. They set out to design something that founder Henry Morgan would have been proud of. It was important to respect the Morgan handbuilt production techniques and locally sourced

‘Every watch is hand built to order and customised to our client’s requirements and takes three months to make from start to finish. At the point of order we agree the dial combinations, crown types, movement style, case metal, lugs, straps and so on. From there we work with our network of local craftspeople to commission bespoke leather work and box making while we build the watch.’ Clients are invited to the Struthers studio to go through samples and see their watch in progress and each is updated with emails and photographs directly from the bench which makes the process of buying and owning a Morgan for Struthers watch more than just a purchase, it makes it an experience. ‘Our buyers like to know they have invested their money in homegrown talent, supporting local craftspeople and preserving traditional industries.’

With so many watches available it is no wonder that many are looking for something a little more unusual and Struthers for Morgan certainly hits the spot. hen you walk into Image you could be forgiven for thinking you’ve just stepped into a beauty salon in the heart of London’s swanky Marylebone. A clean, sleek white interior combined with plush purple furnishings with hints of lime green makes this recently refurbished building one of the most impressive and welcoming salons I’ve had the pleasure of being in. Image is owned and run by beauty expert and entrepreneur Sue Carter. You can see her incredible passion, enthusiasm and respect for her industry shine through in everything, from the high end products used to the carefully thought out decor and the atmosphere created in the reception and treatment rooms. The range of treatments offered at Image goes far beyond the standard and Sue and her team of talented therapists offer a wide variety of more advanced treatments, from teeth whitening and advanced facials to permanent make-up.

I had the pleasure of visiting Image for a back and neck massage at the end of a busy week. Relaxing music plays quietly throughout the salon, creating a calming effect from the moment you step through the front door. The reception is a well-lit space but still has a very welcoming feel to it. A large designated waiting area means you can comfortably sit and soak up the atmosphere upon arrival and enjoy complimentary hot drinks, OPI hand cream and Clarins perfume should you want it. Industry awards are proudly displayed on the mantelpiece above the fireplace for all to see. There is a large range of products on display for purchase in the reception area – perhaps the biggest I’ve seen in a salon before – from Clarins and Jane Irdale make up to Dermalogica skin care and teeth whitening products. I was shown upstairs to a treatment room and left to make myself comfortable on the couch. The room was really lovely and warm to walk into (just what you need when you’re about to take your top off) plus very minimalist (great for clearing your head). My therapist returned and quizzed me on problem areas – mine

being my shoulders. The massage was great and a good amount of time was spent focusing on my problem areas without neglecting the rest of my back. n the last couple of years we’ve seen a rise in the popularity of Balayage and Ombrè colouring techniques. Throughout the spring and summer these techniques have given clients the ability to wear an on-trend look without the maintenance

and commitment of other more traditional highlighting methods. This look can be adapted so during autumn and winter the depth and tone of the contrasting colours can be made deeper and

richer to complement differing skin tone. It’s the versatility and low maintenance of these styles that means we will still be creating plenty of these beautiful styles and all of their various incarnations throughout 2015. Shape and length is something that can be tailored to each individual client. Gone are the days of everyone wanting one particular style, regardless of whether it suited. Your hair stylist should be able to offer advice on what will work for you. Cutting techniques vary greatly and it is important to find someone that understands your hair type and will use an appropriate technique to help aid dayto-day styling. Many of today’s styles are far less textured than they were five years ago. Short hair is now sleeker, sharper and far less

feathered; there is still a place for texturising but it must be used wisely. For longer hair, volume and body are back in a big way. Men’s fashion evolves less quickly than women’s, so the 50s inspired quiffs that we’ve have been seeing will continue into 2015. Also traditional barbering skills such as really tight clipper work are really going to be popular this coming year. New products from ghd are set to be big. Their incredible new Eclipse stylers have new features to help curling and waving and they have also just launched their new Curve range of barrelled tongs and wands; our stylists absolutely love using them to create soft, gentle curls and waves.

There have been huge developments within the world of haircare and styling products and big for 2015 will be the growing market of volumising powders. We’ve used many within the salon but we love L’Orèal Super Dust. These products sprinkle into the roots of dried hair and give real volume and lift. Britain’s youngest baker and published cookery writer, Amy-Beth Ellice speaks to EAUX 52

I hope I inspire lots more people who may be new to baking to get in the kitchen

A

my-Beth Ellice has had a passion for cooking and baking from an exceptionally young age. Inspired by her mother, Gillian, Amy-Beth has been baking homemade cakes and treats for special occasions since she was small. Over the past few years Amy has received a large number of orders for her special cupcakes and decorated cakes, including tiered wedding cakes. Her recipes have even been published in the Sunday Express newspaper when she was just 14. We caught up with Amy-Beth at a book signing at Essex’s finest food hall and gift retailer The Food Company. DO YOU REMEMBER THE FIRST CAKE YOU MADE? The first cakes I remember making were butterfly cakes – we’d always have them at birthday parties or cake sales at school. HOW DID YOU GO FROM BAKING FOR FRIENDS AND FAMILY TO HAVING YOUR OWN BLOG? I had always baked for friends and family and they were always asking me for the recipes. It made sense to write them all down in a book (and online) so everyone could enjoy them. I had been writing recipes since the age of 10. HOW DID THE BOOK COME ABOUT? I approached a few publishers after appearing in the Sunday Express. They did a feature on me after I sent them some of my recipes. Most of the publishers said they already had

too many baking projects on the go but John Blake took me seriously, liked my story and offered me a publishing deal. IS WRITING A BOOK SOMETHING YOU’VE ALWAYS WANTED TO DO? Yes. It was hard work, ensuring that all the recipes were right, and I was also heavily involved in the design of the book. I love art so I wanted to create the right look that I was happy and felt comfortable with. WHAT WAS THE PROCESS OF WRITING THE BOOK LIKE? I had a deadline to meet and had to be quite disciplined about the whole process, but it was great fun. It took two years from getting the book deal to handing it in. When I finally finished it was a mixture of relief, excitement and happiness. HOW DOES IT FEEL BEING BRITAIN’S YOUNGEST BAKER AND PUBLISHED COOKERY BOOK AUTHOR? It feels amazing and I hope I inspire lots more people who may be new to baking to get in the kitchen. Everyone can bake – all you have to do is make sure your ingredients are measured properly and follow the recipe to the letter. If it doesn’t work out first time, remember practice makes perfect. DO YOU HAVE A FAVOURITE THING TO BAKE? I think my favourite thing to bake would be biscuits because of the childhood memories they evoke for me. I also like decorating them because of my love of art.

ARE THERE ANY FLAVOUR COMBINATIONS YOU HAVEN’T TRIED YET BUT REALLY WANT TO? I’ve just tried bacon and maple syrup flavoured popcorn here at The Food Company, and now I really want to try it in a cupcake! WHAT WOULD YOUR DREAM CAKE BE? I made a salted caramel cake for my Mum’s birthday which was really delicious and everyone loved it. It was a bit of beginner’s luck as it was the first time I’d made it but it worked out really well. DO YOU HAVE ANY SECRET BAKING TIPS? Tidy as you go then you don’t have a huge mess at the end. It’s also a good way to pass the time when things are in the oven. Always use a reliable timer that you can take with you if you leave the kitchen! WHAT PLANS DO YOU HAVE FOR THE FUTURE? I hope to have more books – I have lots more planned – and my dream goal would be to have my own TV show, to have my books on the shelves of Waterstones and in every kitchen in the land! Fine Dining in Suffolk Our editor Victoria investigates the delights of 1530 restaurant at Seckford Hall

W

hen you drive up to the Seckford Hall building you could be forgiven for thinking you’d just walked into a 15th Century novel. The main entrance to the beautiful red brick Tudor hall is through a large old wooden door. Seckford Hall is an AA 4 star hotel and 2AA rosette restaurant with leisure and spa facilities in beautiful grounds just 20 minutes from the centre of Ipswich. My dining partner and I were greeted warmly by the restaurant manager, Pawal, before being shown to our table. 1530 has recently undergone a swanky refurbishment and looks amazing for it, painted in calming colours with a cosy but indulgent feel. The ambiance was relaxed with an air of luxury and refinement. I opted for the baked stuffed Portobello Mushroom with Roquefort Cheese, Walnut Crumb and Fresh Herb Salad whilst my dining partner chose the Bread Slate with Mixed Olives, Olive Oil and Balsamic Syrup. I have to admit, I struggled choosing between the 28 Day Aged Beef with Pommes Allumette, Green Bean Shallot and Bacon Salad and the Wild Mushroom and Baby Leek Sauté with Parmesan Cream and White Truffle Oil. I asked Pawal which he would recommend and he helpfully suggested that with my choice of starter the steak would be a good choice. And he was certainly right.

Both courses were presented beautifully, the mushroom and cheese a small burst of intense flavour; the herb salad an unusual yet delightful accompaniment. The walnuts were a great touch and added a lovely extra crunch to the dish. The steak arrived with glistening melted caper button on top, looking decidedly succulent. It arrived on a bed of bacon and al dente green bean salad which had a wonderful intense flavor. The dish came with a portion of pommes allumette (fries), a salad and juicy roasted cherry tomatoes. The flavours worked really well together. The steak was melt-in-the mouth – perhaps one of the tastiest I have had the pleasure of trying. Both my dining partner and myself were also very impressed with how the steak was cooked perfectly to our requested level. The staff were unobtrusive and very helpful and there was no pressure to leave the table. Pawal persuaded us to sample the Chef’s Tasting Plate, four miniature desserts, all handmade on site by the pastry chef. This consisted of treacle tart, raspberry and white chocolate crème brulee, lemon posset and cinnamon doughnut. It was the care and attention – small touches – that really made the experience great: the half-melted butter on the steak, the water which is passed through a filter seven times on

site before being bottled, and the Florentines (to die for) offered at the end of our meal. With great food, wonderful staff and swanky surroundings, 1530 should definitely be your next dining experience. WINTER WARMERS

At The Cookhouse our menu changes seasonally and our winter menu came into play at the start of December. All the chefs play a part in writing the menu, we are a team and I believe it’s really important that we all have belief in what we are cooking and serving. Pomegranates, squash, assorted cabbages, cranberries and root vegetables all feature throughout our winter menu. Our focus is on seasonal, local, quality produce that is cooked very simply and served with the minimum of fuss; a good portion of big, bold, flavoursome food that warms you up. We’ll be working closely with the greengrocer to make the most of the seasonal vegetables that he has available. Freshness is the main benefit of working with local producers. In essence we have to do less to it because the flavour is so much better and doesn’t need to be dressed up and enhanced by adding things to it. It’s also good to get the opportunity to work with smaller producers who can offer you a product that they truly believe in and have poured their heart and soul into. We use as many of our own products as possible such as the Red Poll cattle for our beef and the venison and pheasants are shot on our own estate where we also grow onions and potatoes. We have just started to buy

fish from Simpers of Suffolk who are based in Woodbridge. All of our mushrooms throughout the menus come from Capel St.Mary and we buy as much fruit and vegetables as possible from Virginia nurseries in Newbourne. We also use other local suppliers such as Aspalls, Stokes, Tiptree jams, HillFarm oils and St.Peter’s ale. We’re so lucky to be based in Suffolk with such an abundance of seasonal and local food.

any people think that the food available in the winter is as bleak and dark as the weather but this really isn’t the case. When it comes to vegetables there are plenty to choose from like root vegetables (swede, parsnip, shallots, leeks, Jerusalem artichokes and celeriac) and cabbages (Cavalo Nero, Savoy, red and kale). Mussels, whelks, clams and cockles all become available from the fishmonger, venison and pheasant from the butcher and of the fruit that is available you can choose from pomegranate, clementines and – one of my favourites in these months – blood oranges.

TRY THESE SALADS aren’t just for summer. You can make a lovely winter salad of roasted butternut squash, cous cous, toasted pine nuts, pomegranate and blood orange dressing. The zest will really lift all the flavours and you could even finish the dish with a few charred segments.

Why not make the most of the vast selection of ROOT VEGETABLES that are available and prepare a stew, forget the beef and lamb though and opt for venison, pheasant or the very underused mutton. These will all have a much stronger, deeper flavour. I love CABBAGE and at this time of year there is so much available that it’s hard to avoid. You really can’t beat fried buttery cabbage. Brown, caramelised and crispy and with that wonderful smell. Serve with a spoonful of creamy mashed potatoes, salt beef and a fried egg. Easy and simple to produce but full of flavour; comforting on a cold, dark winters evening in front of the fire with a pint of Broadside.

Ingredients • 300-340g (10-12oz) Rainbow trout fillet • 50g Salt • 100g Dark soft brown sugar • 3g Coriander seeds • 1 Lemon juice and zest • 5g Dill, chopped • 100ml Beetroot juice Trout is in the same family as salmon, the oily fish family. It has a much gentler flavour, and the physical make-up of the flesh means that there is just as much moisture as a piece of salmon but much more delicate flesh. Cure the trout 24 hours in advance to eating. Combine all of the above

ingredients except the trout to a paste. The trout fillet should be pin boned and have the excess fat removed. Place the fillet in the cure and be sure to cling film over the top. Refrigerate for 24 hours. The fillet should be firm but supple, this will be the tell-tale sign that it is ready. Wash the fillet gently and quickly under a cold running tap. Slice as thin as possible, ideally you would have slices as thin as smoked salmon. To eat alongside the trout you could have fennel and beetroot, as we use at the Salthouse. We have simply sliced the fennel on a mandolin and dressed with lemon juice and salt. The beetroot we have roasted, peeled and seasoned with olive oil and salt. Present as you desire on the plate!

Firstly start by rehydrating the raisins at room temperature for serving. Slice the cauliflower thinly to allow it to cook as quickly as possible to keep its vibrancy. Pour the milk and cream into a pan and bring to the boil. Add sliced cauliflower and cook until soft. Sieve from the milk and cream and blend until smooth, adding extra of the cream and milk mix should it need to be a looser consistency, we are looking for a whipped cream texture. Slice new potatoes to around a cm in size. Place the cod fillets skin side up on a cutting board and season with salt. Heat two heavy non-stick pans, add vegetable oil to both. Once ‘smoking’ hot, add sliced potatoes to one, and lay the fillets in the other, skin side facing down. Season with sea salt. Move the potatoes around the pan once they have begun to colour and keep them there until they are golden on both sides. Once almost finished, add 50g of butter, and once that has melted add the spinach and remove the pan immediately from the heat. Toss the potatoes with spinach until melted. The cod should be achieving a lovely golden brown colour by now, and very nearly opaque on the upper side. Once it looks white on the outer edges add in 75g of butter and leave to melt. Once butter is caramelising remove pan from the heat and turn the Cod. Lovely, eh? Next, melt the remaining 125g of butter in another pan, and leave on a high heat until it turns to a golden foaming texture. Add in the curry powder, and remove from the heat. Take a spoonful of cauliflower puree and add it to each plate. Decorate in any fashion that you desire – add the rest of the ingredients on top or around.

Passionfruit Curd with Meringue and Coffee Icecream

Passionfruit Curd • 100g (4) Egg yolks • 150g Butter • 75g Caster sugar • 90g Passionfruit puree

Bind the yolks and the caster sugar until a glossy paste has been achieved. Melt the butter in a microwave and add this to the yolks, then cook in a thick-bottomed pan on a low heat until a temperature of 84 degrees has been achieved. Add the passionfruit puree to the curd, this will stop the cooking process. Allow to set in the fridge.

Italian Meringue • 2 Egg whites • 50g Caster sugar • 1 tsp of glucose syrup • 20ml water

Whip the egg whites in a bowl until the form and hold peaks; you should be able to do the infamous ‘upside down’ trick. Next, add the sugar, water and glucose to a small saucepan. Another chef’s trick is to run your finger under water before attempting to coax the syrup from the spoon – no sticky finger! Heat this mix to 121°C (this is really important), and slowly whisk into the whites. The temperature of the sugar syrup cooks the white, and sets it. Pop it in a piping bag to serve and use.

Coffee Ice Cream • 300ml Double cream • 100ml Milk • 6 Egg yolks • 100g Caster sugar • 3 Double espressos

Boil the milk, cream and coffee. Bind the yolks and sugar, then pour a small ladle of the milk and cream over it. Cook until thickened to the consistency that coats the back of a spoon. Present all together as you wish on the plate and enjoy! Italian meringue is one of my favourite things to make. The principles are very basic – sugar syrup to a specific temperature then whipped into egg whites – but the amount of air already in the whites prior to the syrup being added plays an important role. Too much will give a slightly lumpy appearance. Too little and it will simply be a runny mess.

Lizard Island

Kimberley Coastal Camp is on the northeastern coast of Western Australia – one of the least explored and wildest places on earth. What makes a successful home hub? This varies from family to family and depends on what they require from the space. Jamie explains that the design largely depends on how the family wants to spend their time in it on a daily basis.

T

he home hub is growing in popularity, but what is it? The home hub is designed to provide a space for all members of the family to be in so they can do their own thing, yet still be together in the same room. Home hubs tend to be large open plan extensions to existing houses, which generally include a kitchen, dining, seating and sometimes study area. Jamie Christensen says they are becoming increasingly on trend and more of the work Christensen Brownlee Design takes on involves designing these. Open plan living has become more popular in recent years, but the idea that you can have a large space that can happily

Ricky Brownlee says the duo is particularly proud of a design they have just recently acquired planning permission for and are currently working on building regulations for. Ricky says: ‘it’s a large house conversion and extension that incorporates a large open plan kitchen, dining, living and playroom space, specially designed for how the family plan to use their house. The designs look fantastic and when it’s completed it will be an incredibly impressive space – one we would both love to own ourselves.’ The design process for Christensen Brownlee is the same for all of their projects, big or small. ‘We meet up with the clients initially to gain a good understanding of what is required, and discuss initial ideas with them,’ explains Jamie. It is very important for Jamie and Ricky

that they fully understand their client’s needs – client input gives a clear understanding of what they require from the design and how they want to use the proposed space. ‘Without this it would be tricky to get the right design and layout the first time. Also, from just meeting clients you can understand their tastes and the size of their family. ‘We then go away and discuss the project between the two of us and come up with ideas that we think would work the best. We then provide drawings for the client, including Computer Generated Images as standard with all designs. This allows our client to gain a clear understanding of how the space will look, feel and work.’ CGI rendering is an important aspect of their work as reading 2D plans isn’t easy for everyone. ‘We tend to include multiple designs for clients to pick and chose from, using combinations of ideas that we have, and ideas that the client may have come up with at the initial meeting.’ This allows the client to take elements of all of the different schemes and condense ideas into a final design. Jamie and Ricky love to put their own spin on all of their designs: ‘we try to create as much of an interesting design using different

property materials, lighting and layout as we can,’ says Ricky, ‘however, we are fundamentally guided by the client as to what we can do, and what they want. We get our own touches in the designs here and there; sometimes they are subtle, but they are definitely there!’ Once the design is agreed by the client, Ricky and Jamie then discuss the official channels that are required for the design, like planning permission and building regulations, and action as required. was the night before Christmas, when all through the house, not a creature was stirring, not even a mouse.’ Absolute rubbish! The designated Turkey Preparation Squad is frantically soaking, rubbing, basting or singing to the pale fleshed bird whilst tripping over a million pairs of family members’ shoes casually strewn around the kitchen searching for the critical utensil that someone has kindly dried up and then stashed somewhere utterly random so you have to improvise with a broken toy and a knitting needle that has appeared out of nowhere! ….and, breathe. It’s all over for another year. Here are a few pointers that might bring back the joy of Christmas catering for good.

property A great deal of the culinary anxiety we experience at Christmas can be linked to one thing: space – or rather a lack of it. Space in the fridge once you’ve done ‘the big shop’, space in the oven for that bloomin’ turkey and the vast array of must-have ‘trimmings’, plus space for all the pesky ‘guests’ who will not stay out of the way! Fear not! You can make your kitchen feel far larger (and more user-friendly) by having appliances that meet your household’s specific needs. Take storage for example, by replacing ordinary drawers with Fisher & Paykel CoolDrawers, you can remove items from the fridge or pantry and keep them cool and dry elsewhere. This comes in especially handy for extra food and drink needed at Christmas. As the cooking begins, you start to notice more problems: it could be that there’s not enough room on the hob. Four rings are just not enough. The FlexInduction hob by Neff solves this problem by only having two zoned areas; the rest of the hob is an extra-large cooking surface capable of being home to a roasting tin or several smaller pans. The system recognises the size, shape and position of the pans and only heats those areas. A lot of people panic about undercooking the turkey. Save on uncertainty by using a good

They require little to no pre-heating and you get great results due to even heat transference and no loss of heat when opening the door. The way they deliver heat is perfect for roast dinners! By the end of the day, no matter how hard you try to avoid it, there will be an awful lot of washing up. For this you need a huge sink (at least 40l) with a separate half-bowl and waste disposal unit to blitz away food waste: think potato peelings and uneaten brussel sprouts. Finally, cease the endless interruptions by people wanting a cup of tea or coffee. A Hot Tap from Quooker dispenses boiling water instantly. Put all your mugs and tea and coffee-making paraphernalia in a cupboard away from the cooking area. This way, you will be free to sauté, baste and chop to your heart’s content. Amazing Spaces Juvet Norway

No trees were cut were cut to make room for the buildings

ombining modern architecture with rugged landscapes, Juvet hotel is set in a small village in Norway on a natural levee.

Designed by architects Jensen and Skodvin, the duo aimed to create a series of minimalist individual rooms that blend in with the landscape. Minimalist and tranquil. Juvet hotel is built on a nature reserve. The architects placed a high importance on the preservation of the surroundings and sustainability as well as reduced energy

consumption. No trees were cut to make room for the buildings; they were designed specifically to minimise disruption to the terrain. Each room was individually designed to make use of the space available and built in winter when the ground was covered with snow in order to minimise any damage to plants in the area. The hotel has nine unique rooms that are spread across the hillside. Seven of these buildings are set into the hills amongst rocks and trees and there are also two bird nesting boxes perched on steep slopes.

It’s all about the view. Each room built into the hills has at least two walls that are built of glass so each building gets its own exclusive view of the surrounding landscape. The exterior of the glass walls are mirrored and the remaining wooden exterior is dark so as not to draw away from the views across the levee and of the landscape. Although not luxury in the traditional sense (there is nobody to carry bags, serve champagne), a stay at Juvet is the ultimate in tranquil escapes.

Your Garden: The Year Ahead Horticulturalist Melvyn Prentice looks at planning your garden for 2015

artin Prentice is a horticulturalist with 37 years experience in the industry. He currently works at Daws Hall Nature Reserve, Lamarsh on the Essex/Suffolk border, where he has been for more than 20 years. The garden of Daws Hall has a large collection of beautiful old-fashioned roses and some unusual trees and shrubs. There is also a study centre; it is a truly wonderful place for school children of all ages to learn about the natural environment. It’s open several times a year to the public and garden groups plus WI groups by appointment only. Melvyn also works at two other large rural gardens in Pebmarsh and in the past has spent a good many years at the Braxted Park estate in Essex as Head Gardener in charge of gardens and grounds maintenance. WHAT ARE SOME OF THE CHALLENGES THAT CLIENTS CAN FACE WITH LARGER PROPERTIES? The main challenge for clients with large gardens and estates is finding competent and reliable contractors or staff. There is also the main expense of ongoing maintenance of the gardens. It’s all well and good to have your garden redesigned but the maintenance costs are often overlooked and should always be considered in the client’s budget. WHAT ARE THE BENEFITS OF USING A HORTICULTURALIST/GARDENER FOR LARGE GARDENS AND ESTATES? Using qualified and experienced gardeners means that the client can be reassured that his or her garden will be looked after correctly. I would recommend always choosing your gardener through word of mouth – their work is their best advert.

WHAT TRENDS DO YOU PREDICT FOR GARDENS IN 2015? In recent years the trend for using the garden for entertaining friends and family has risen dramatically. Barbecues, furniture and lighting sales are definitely up. With careful thought and consideration, lighting it can give your garden another dimension. Plant fashions come and go but conifers and evergreens have certainly made a comeback, giving structure, form and shelter to many gardens.
