Leigh-on-Sea Situated on the Thames estuary, Leigh-onSea is ideal for Christmas shoppers who want to enjoy shopping in a picturesque town with a seaside atmosphere. The Broadway, Broadway West and Leigh Road became a shopper’s paradise after a reinvention of the high streets provoked the arrival of independent bars, boutiques, galleries and gift shops, amongst many other retailers. Some of our favourite shops include Just Fox Boutique in St Clements Arcade on The Broadway for high end ladies fashion, Hatton Jewellers on Elm Road for quality jewellery and traditional service, Tiny London on Leigh Road for luxury cosmetics and Uptomen in Rectory Grove for smart men’s accessories and gift ideas.

This year, the centre will play host to a Santa’s Grotto, open on weekends from 21st November, and a Christmas Open Evening complete with themed demonstrations, mulled wine and roast chestnuts on 19th November. Roast turkey (with all the trimmings) will be served every Wednesday and Sunday from 25th November to 16th December; but if you’re still hungry, follow up your lunch with homemade mince pies and Christmas cakes from the coffee shop. Studio Hannah Limb investigates the creative talent behind Wales-based bespoke fashion firm The Design Studio

F

irst a mother, forever a friend – and a business partner! Mother and daughter duo Sally and Lettie decided to set up shop and pool their talents to become fashion queens, creating one off, exclusive faux fur bomber jackets. The pair started The Design Studio to share their creations with those who have fun with fashion and desire a modern and unique twist to their style. Where the idea of crazy-coloured, boldly designed faux fur bomber jackets came from, I have no idea. But I’m glad it came about. These bombers are the perfect feature to any outfit and come in an abundance of unique styles. The duo use exclusive designs for every jacket, ensuring each has its own characteristics that makes it unique and a

true one-off. I have to admit, at first I was dubious. A bomber jacket is an American-style, slick jacket I would typically pair with a pair of skinnys and my not-quite “white” converse. A bomber is not a luxury, high quality jacket made of… faux fur? But I was wrong. So very wrong. The daring duo have put their British twist on this American classic and it works very well. The bomber jacket has had a makeover and has been transferred into a versatile style piece. Of course you can still wear it with your converse, but now you can also pair it with your favourite LBD, those leather pants in the back of your wardrobe, and of course your trusted jeans. The bombers go from day to night effortlessly and add a sense of 1950s Hollywood glamour to any evening occasion.

Originally starting off by sharing pictures on Instagram, Sally and Lettie have built not only a business, but a brand. A brand that celebrities such as Rosie Fortescue and Suki Waterhouse rave about; sharing photos of themselves lounging in the beautifully jackets brought even more fans to The Design Studio and pushed demand sky high. Sally and Lettie aim to create new collections of 15-20 jackets every 1-2 weeks. I’ll just set up my direct debit now.

All the faux fur jackets are sold intuitively via Instagram and Lettie has created huge interest and a large following all over the world. They have reached over 21,000 followers on Instagram, where they showcase and sell their products to fans worldwide. Starting a business in the ‘social media age’ makes it easy for the pair to advertise solely through online social networking and you can find them constantly updating their profiles to promote the products. The jackets come in a range of exclusive designs, colours and textures. French Personal stylist Sarah Jones looks at what it is that makes French style so alluring

G

oing to Paris was life changing. Not only because my childhood dream came true with a trip to Disneyland (one of my many 30th birthday treats) but because I witnessed first-hand the beautifully alluring yet undone nonchalance of the French. To fight the winter chill, women wore glamorous, over-sized sunglasses and warm fur coats. Men favoured traditional trenches or a thick woollen Paletot with fedora hat. Both looked completely chic. I only saw one youth wearing a pair of joggers while carrying a plastic supermarket bag; people used stylish straw or leather ones.

The thing I did notice was that they chose to dress in what works. Trends were far less evident; people dressed for their shape and size. Women chose classical, smart-cut trousers or loose, airy dresses. Men were perfectly tailored and refined, with personality shown in colourful scarfs. Each piece was chosen with precision. The same precision seemed to be applied to all their choices. French women have always stood out. Just think about the style icons such as Gainsbourg, Bardot, Poesy and now Doillon. With their style heritage being Coco Chanel and Dior it’s no wonder the French have the edge. So what is it that makes us Brits so enthralled by these masters (or mistresses) of foreign flare? I believe the key is in the details. Although polished, the French women I saw were able to give an ‘undone’ impression. Hair was often teased into soft, bed head styles or makeup left clean and basic. It was as if they had primped and primed themselves to perfection

and then casually undone one element, giving them a sense of nonchalance. The look of not trying too hard. So how can we emulate this ‘foreign’ allure? On a basic level the French favour quality over quantity. Even the simplest of casual knits can be striking when it is beautifully made. Identify items which will be excellent not only this year but in five years’ time. This will ensure that your look is always sharp and considered. Proportion and fabrics are also important and remember to wear clean, smart shoes. Scuffs and marks should not be evident. The French favour interesting over pretty. This gives the freedom to accentuate your personal beauty or quirkiness, whichever suits you better. Looking at the French style icons named, they appear to have mastered a ‘uniform’. All have identified what works for them and what they love, and they stick to it. They are not always traditional but they are always true. True to themselves. This is their appeal. Dressing for you and dressing for your shape. If it does not enhance your figure or even your colouring then choose not to purchase it. There will be something better suited, thus eliminating unwise style choices. The tried and tested French belief is to keep things simple. Neat is chic. Too much really is too much. Forgo overdoing things and consider the overall look. Dip into the trends that inspire you but aim to not be trend led. Follow the French by mixing it up, sticking to your own signature style. And above all remember that staying fashionable and staying stylish are two very different things.

hristmas is fast approaching, and that means late night Christmas cocktails and minimal sleep is on the cards. To help you get ready for all those black tie festive parties I’ve put together some top tips to get you ready for the Christmas season.

Plan ahead; leaving things until the last minute always ends in panic, leaving us feeling stressed which isn’t what you want just before you’re about to head out to party! Getting organised before the festive season will work wonders in ensuring you’re calm and ready to enjoy yourself.

Pop into your local salon to have a make-up and hair trial to get some ideas of styles in advance. Having someone else taking care of your hair and make-up not only makes it easier for you but you’ll feel extra pampered and ready for a good night out. You’ll often find your beauty technician and hair stylists are booked up months in advance, so if you’ve got events planned already, give them a call to find out if they can squeeze you in now. Treat yourself to a manicure; whether it’s varnish or gel, a really rich red is great for a classic feel or a nice sparkly gold will pep up your look and give you that finishing touch. I also love a nice dark forest green this time of year. If you haven’t got time to get to the salon, here are some top tips for your night out:

Apply a primer underneath your foundation. This will give your skin a silky smooth texture but will also minimise the appearance of pores and keep your foundation looking fabulous all night long. I really love Smoothing Face Prep from Mii Cosmetics as it boosts your collagen and elasticity by 45 percent. Apply lip liner before your lipstick. It helps to act as a barrier from when you are sipping those cocktails but will also prolong the life of your lipstick so you don’t have to keep reapplying through the night. ancy yourself a decent shave without leaving your home? Great! Let’s talk about shaving brushes; did you know there are multiple types? We are going to take a look at a few of them and the benefits of the different styles. A shaving brush is used to mix your soap or cream into a foamy lather and apply to your face. It helps to apply in a circular motion, and when hot, will help soften the skin and hair before you shave. It also ensures that bacteria from your hands are not rubbed into your pores, preventing infections and spots. Shaving brushes are all graded, although not every manufacturer will use the same classifications.

FINEST BADGER BRUSH The title is a giveaway. These brushes use the finest badger hair available, picked from the backs of a specific longhaired species of badger which is only found in remote provinces of China. This type of brush will set you back more than any other due to the rarity and quality. It is thought that over half the badger hair used when making a finest brush is wasted during production. These brushes have the best water retention and the softest tips. This brush will last you through years of shaving and is well worth the investment.

SILVER TIP BADGER BRUSH This brush has some of the most expensive and rare badger hair, which has a natural white end. The bristle is designed to be flared, which gives a fluffy feel and appearance. This also enables the brush to hold a large amount of

water and in turn quickly work up a lather.

SUPER BADGER BRUSH Using the same hair as the silver tip, these brushes are treated slightly differently during production. They are shipped back to Europe and redressed. This means that the hair is bundled and any short or curly badger hairs are removed. This means that the hairs are all even length, with a fuller appearance which helps water retention and provides an incredibly fast lather.

PURE BADGER BRUSH These are the most common in the UK market. The hair is picked from the neck, back, stomach and buttocks of the badger (around 60 percent of the animal’s body). The hair varies from brush to brush in colour, texture and size. They are often darker than the above brushes; the bristles are coarser than the others mentioned above and it has a larger shaft.

SYNTHETIC BRUSHES Synthetic brushes, although using synthetic hair, actually have brilliant lathering qualities. However, they don’t heat as well, and have low water retention. I have been using a synthetic brush for six months and find that I have to re-apply soap more often as the lather is weaker and dries out quicker. Now you’ve discovered the different kinds of brushes, all that is left is to pick your weapon of choice. Will you go for a traditional safety razor, a shavette razor, a cut throat razor or a modern three to five blade hand held?

of waggy-tail spaniels and owner, Mr. Charles Trollope. He invited me to see his orchards. It was a lovely sun-lit morning;the excited dogs scampered about, noses down, sniffing every tuft of dewy grass.

Then I see the lines of quince trees planted by the Trollope family in 1975. Quinces were eaten in Tudor England by Henry VIII – as well as being a firm favourite of Charles II. Hence its name: the fruit of kings. Originally from Turkey, Pakistan and Uzbekistan, they were imported to Spain and Portugal and from there shipped to England mainly as marmalade. It was thought to aid digestion, but that’s not all. Quinces were considered an aphrodisiac and in London the seventeenth-century prostitutes were nicknamed the Marmalade Madams. In Victorian times trees were planted in sunny gardens where frost would not damage the early, beautiful blossom. At the end of September the golden aromatic fruit was harvested, pear-shaped and thick-skinned. A popular recipe was quince tart – when quinces were hollowed out and stuffed with bone marrow, sugar and cinnamon then baked in pastry. High in pectin, quinces make excellent jam, jelly and chutney. In Pakistan they are stewed with sugar until they turn bright red, then preserved in jars. In Morocco quinces are added to lamb tajine along with herbs and spices. ‘When we first started everybody asked, “What’s a quince?” But we soon found that demand was bigger than we could meet. We used to send direct to Covent Garden.’

Charles pauses by a leafy tree to call the dogs. ‘This is Vranja – a large quince weighing anything up to 2lb. They’ll be ready in October. Other varieties we grow are Ludovic, PearShaped and Meecher’s Prolific’. Then he speaks of the past: ‘my father-in law grew apples here in 1937 and I bought the farm off him in 1964. I decided to focus on forgotten fruits when the common market flooded our shops with cheap apples from Europe. I had recently left the army – came out and wanted something to do; I couldn’t bear taking orders from anybody else. I planted Medlars too – I think I’m the only one to grow these commercially in the country. Then the hurricane came in 1987 and left 90% of the trees on their side. They were all covered with mud. The tide was out and the wind picked up the mud in the estuary. All the leaves turned black because of the salt. The government said – “pull them all out and start again – we’ll give you a grant”. But how was I to live for five years until they produced a good crop? So we very carefully pulled many trees upright again and re-staked them’. I ask about the demand today. Charles beams. ‘We could sell twice as many quinces as we produce. They go up to London to smart restaurants where they are made into jellies and sauces. They take crab apples too. A fishmonger in Mersea takes fresh fish up to London overnight and he adds quinces to his delivery. They go to jam factories in Tiptree and the West Country. Bramley and Gage make quince liqueurs – a ‘must-have’ at Christmas to go into the bottom of cocktails. But we sell from the farm, so please come to the farmhouse and buy a few pounds. If you stand a quince on a shelf in the kitchen it simply brings a gentle fragrance into the room.’ Clay Barn Orchard is a family affair. Shirley, Charles’ wife and their son Alastair work here. In the autumn other family members arrive to gather in the harvest. If you’d like to try your hand with quinces, be warned – with their thick skins they are not easy to access! Before we say goodbye, Alastair produces a bottle of Apple and Quince juice for me to but – delicious!

We came to a row of small trees – boughs laden with dark red apples. ‘These are crab apples, I grew them as an experiment’, Charles told me. ‘The most successful is Harry Baker. To make jelly people want to throw them straight in the pot whole. They boil them and strain away the pips and so on. • 2lb quinces • 2lb loaf sugar • 1pt water • Brandy Peel, core and cut into quarters and put into cold water. Boil peelings and core until tender and strain off liquid. Add quinces and sugar and boil until soft, keeping the lid on the saucepan. Beat them until thickened and pour into jars. When cold cover with paper sprinkled with brandy, and seal.

• 1 quince • 12oz white sugar • Bottle vodka Grate a large quince. Place in wide necked jar with 12oz. white sugar. Add a cheap bottle of vodka and shake it daily for six weeks. Strain it into a bottle and drink it at Christmas. The longer you keep it – the better it tastes.

Fine Church Street Tavern, Colchester

T

ucked away from the busy high street, just a stone’s throw away from Colchester’s cultural hub, sits Church Street Tavern. Originally a savings bank, the tavern is now a ground floor bar and lounge serving simple, wholesome food. The decor is rustic yet still has a modern element which looks effortlessly thrown together. Smooth jazz piano played in the background and there was an intimate atmosphere that felt like a 1920s speakeasy. The drinks menu was extensive and featured lots of craft beers, a variety of house cocktails and sizeable wine list. The desert island wine menu featured rare releases served in Zalto Denk Art stemware. Our coats were taken on arrival and water was brought to our table – always a good start – along with fresh caramelised onion bread to graze on.

To start we enjoyed Lamb Sweetbreads with Brocolli, Tarragon and Cream. This came with crisp chargrilled bread and the lamb was beautifully tender. The Beetroot Terrine with Horseradish Sorbet and Pickles was really nice and sweet. The horseradish sorbet was really unusual and interesting as an iced flavour, all on a bed of light salad and crisp radish. English Veal Chop, Fat Chips, Watercress and Slow-Roast Tomato Sauce was a great choice for main. The veal was served pink and was really tender with a delicate flavour; the hand cut chunky chips were lovely and fluffy yet crispy on the outside. We really enjoyed this dish. Our other main was the Grilled Plaice, Rockpool Bisque and Clams with Sea Grass and White Wine and Crushed New Potato. The sauce felt really naughty as it was wonderfully creamy and buttery and the clams were cooked to perfection. The portion of mash was silky smooth and the fish really was the centrepiece of the dish. The bisque had a distinctly salty flavour and worked really well together with the creaminess. The Crème Caramel with Roast Rhubarb had a really nice, almost savoury flavour and the

texture was smooth and light. The roast rhubarb was my favourite part of the dish purely for its intense sweetness. We also had the Elderflower Marscarpone with Gooseberries, Ginger and Oats. The dish had a great mixture of different textures and floral flavours; I was really surprised I could taste the elderflower so strongly in the mascarpone as it’s such a delicate flavour but it worked incredibly well. The gooseberries were nice and firm and gave a burst of zingyness to the dish whilst the ginger added a hint of warmth. A firm favourite! Service was very quick but we never felt rushed and the staff were very polite and happy to help as well as very attentive and knowledgeable; our waiters could reel off literally every ingredient in a meal and recommend sides and wines to match. Portion sizes were spot on – very generous in terms of meat – but still left us reaching for the dessert menu. A great experience and I’d encourage others to seek out this hidden treasure. Choosing your festive

Jonathan Hare from Wines of Interest, handpicks some amazing wines to accompany your Christmas meal

C

hristmas means different things to different people: for some it’s the perfect excuse to open a few really cracking bottles for seasonal indulgence, for others it means working the corkscrew to melting point.

Each household seems to maintain its own traditions with goose, game, beef, ham and baked salmon, all featuring as the Christmas feast centerpiece in houses around the county. However the favourite by a country mile remains turkey.

Turkey’s detractors criticise it as boring and dry; if you buy a budget, frozen bird and roast it for too long it will be both of those things. Start with a well-grown, fresh, free range bird and roast it carefully with plenty of herbs and chopped vegetables inside and it will be delicious! It will also, with the essential aid of a good giblet stock, provide you with buckets of richly flavoured gravy; it is this rather than the bird itself that you match to your wine. If you add the extras like chipolatas and a spoonful of herby sausage meat and chestnut stuffing into the mix, the wine needs to be able to complement some pretty big flavours.

WINES YOU’LL LOVE

Pinot Noir does it for me and the best examples still come from Burgundy, though New Zealand and carefully chosen Californian variants offer a riper, fuller – if less refined – alternative. For indulgent, classic Pinot Noir, consider Givry Rouge, 1er Cru Petit Marole, from the endlessly talented François Lumpp, the best grower in Givry. It is an elegant and balanced offering style without clobber; not cheap at £29.50 but certainly a treat. If you need more quantity, less subtlety and a bit more punch, you can’t beat Borsao Seleccion Joven, Bodegas Borsao, Campo de Borja, Spain for big sunny fruit flavours and versatility. Mostly Grenache with a splash of Syrah and a dollop of Tempranillo, it’s big enough to take on red meats and cheese, fruity enough to handle white meats. At £8.25 it is super value and gives real character and depth.

For Christmas pud, mince pies and fruit cake, try Campbell’s Rutherglen Muscat. It’s an Australian speciality that is lusciously crammed with figgy, raisiny, dates-and-toffee apple richness. In fact, hold the pud and just have a big glass of this – much less filling. Yours for £13.25 per half-bottle. If white is your favoured tipple, you are going to need something with a bit of heft. For your treat bottle White Burgundy is about as much fun as you can have without taking your trousers off. Lumpp’s fabulous Givry Blanc, the beautiful sister to the red above, is refined and classy and would improve any Christmas table for £29.50. Less ethereal but unexpectedly fine is Tabali Reserva Especial Chardonnay, from a Chilean estate, which shows a class and style that puts many a lumpen southern hemisphere Chardonnay to shame. At £11.75 it’s a great buy.

WHAT PROMPTED YOU TO START THE MISTLEY KITCHEN? I started the Mistley Kitchen in 2001 after running my first restaurant (The Stour Bay Cafe 1989-97) and having a two year break in Santa Barbara, California. I decided that I wanted a better work-life balance and, as I had a young daughter at the time, it was a better fit than running a restaurant kitchen. Little did I know that within five years I would be running the workshops as well as two restaurants and a retail shop!

DO YOU FEEL THE DEMAND FOR COOKERY WORKSHOPS HAS INCREASED SINCE YOU BEGAN THE BUSINESS? The demand for workshops has increased considerably because people are looking for ‘learning experiences’ as well as having fun in a social atmosphere. Our workshops are geared for all levels of expertise, so we get folks that want to brush up on skills as well as those who have very limited cooking experience. We also get groups that book private workshops as it is a great alternative to family gatherings, office parties or the usual team building experiences.

WHICH WORKSHOPS ARE PROVING SOME OF YOUR MOST POPULAR? Historically, our Ethnic Workshops have been a big draw, although our Bread and Baking Workshops are now extremely popular, thanks to the Bake Off series. We have also started

a Kids in the Kitchen programme and that is working out nicely too.

WHY DO PEOPLE DECIDE TO CHOOSE COOKERY WORKSHOPS? WHAT IS THE DRAW? I think people decide to choose cookery workshops because they love food want to learn something new. When I travel, I always try and include a cookery class as it gives me an insight on the culture of the area. I also find out where the best markets are and places to eat. Cookery classes also tend to be very social, fun and relaxing. We always include wine in our adult classes, so there is usually a party atmosphere by the end of the session.

HOW INVOLVED ARE YOU IN THE DAY-TO-DAY RUNNING? I am extremely involved in the day-to-day running of the workshops and our retail shop, although I have Sam Lilley, my fabulous manager who runs the office and shop, as well as teaching several classes. I still teach many of the workshops and I am usually on hand when we have any guest instructors, including Ursula Ferrigno, Sue Hudson and Badu Thobhani, to name a few. We have also started a Supper Club, which is great fun. Our most recent Supper Clubs have been guested by Ross Pike and Madeline Bonvini-Hamal of The British Larder, and were a huge success.

DOES YOUR TRAVELLING INFLUENCE YOUR CHOICE

OF WORKSHOPS, THE FOOD AT THE MISTLEY THORN AND YOUR OWN COOKING? Luckily, I travel quite a bit and in the last year I have been to Japan, France, Portugal and Spain and, most recently India. As I mentioned before, I am always learning by taking workshops and visiting markets when I travel to learn about the regional cuisine and to get a flavour of the culture. I spent a day with a top chef in Kyoto and learned how to make fresh tofu, which has featured in our new vegan class. I also went to the famous Tsukiji fish market in Tokyo to learn about sushi techniques. While in India, I learned all about the different lentils and how to cook them, how to make a proper Masala Dosa, as well as various chutneys and breads, all of which will be passed on in a future workshop. I have also worked in restaurant kitchens, including La Notizia in Naples, to learn different recipes and methods which have influenced the menus at my restaurants, The Mistley Thorn and Lucca Enoteca.

WHAT DO YOU MOST ENJOY PREPARING AND COOKING? At the moment I am totally obsessed with regional Indian food, as I have only just returned last week, so I am re-reading all my Madhur Jaffrey as well as perfecting my bread techniques. My favourite food that I like to prepare are fresh, simple seafood dishes with lots of seasonal vegetables. Luckily, I am able to get the best of the local bounty nearby as I have such wonderful suppliers.

HOW DOES IT FEEL KNOWING THAT YOU’VE CREATED A PRODUCT THAT PEOPLE LOVE? Frankie: We love hearing from our stockists and customers! Launching a business can be such a rollercoaster ride, so hearing from people who love it as much as we do and sharing the creative ways in which they use it is an incredibly rewarding part of what we do. It’s what it’s all about.

WE’VE ALL TRIED TOMATO KETCHUP, BUT HOW DIFFERENT IS BEETROOT KETCHUP? AND WHAT ARE THE BENEFITS? Desiree: What we’ve seen so far is that the people who taste our ketchup never go back to what they were using before. This is also the first all natural, gluten free option – for some mothers it meant their children could experience a ketchup for the first time! Our ingredients give our ketchup a real depth and it’s a lot more versatile than ‘traditional’ tomato ketchups. People are using it as a condiment with their Sunday brunch and roasts through to mixing it up with a glug of olive oil to make salad dressings, or as a base to a mean risotto or soup – we’ve had lots of ideas from our customers. There has been so much coverage on the benefits of beetroot over the last couple of years and that coverage hasn’t waned at all. The benefits are still being talked about, from helping dementia and easing blood pressure through to performance enhancement for the more athletically inclined. Beetroot is a great addition to our diet!

DO YOU FEEL THE INDUSTRY IS STARTING TO CATER FOR PEOPLE WITH SPECIAL DIETARY REQUIREMENTS? Desiree: The food industry reacts – albeit sometimes slower than we would like – to consumer demands, and the consumer is becoming more health aware and their choices reflect this. We have already seen how much the range available for those who are following a gluten free diet has grown even in just the last two years, so it’s all going in the right direction. Frankie: We feel very proud to have had our Beetroot Ketchup Highly Commended in the Free From Food Awards (2014). We have also recently received our accreditation from The

Vegetarian Society and have been certified as Gluten Free by The Coeliac Society.

DESIREE, WHAT WERE YOU DOING BEFORE FRANKIE ASKED YOU TO BE A CO-FOUNDER? Desiree: I worked in the City for about 20 years before joining Frankie in the business as Co-Founder. Shaking hands over our ‘small producer’ stall at The Speciality & Fine Food Fair in 2014 marked the start of one of the most exciting adventures I have ever undertaken in my life. And this is just the beginning!

HOW DO YOU FIND JUGGLING A GROWING BUSINESS WITH BEING MUMS? Frankie: Desiree and I each have two small children so running a growing business does come with a number of challenges. We talk on the phone most days and meet at least weekly to plan our schedules and manage our priorities. We both have a very strong work ethic and enormous respect for each other and share responsibility on all aspects of the business to allow each other the flexibility to work round the demands of family life as much as we can – and most importantly allow each other to take some time off!

YOU’RE BASED IN HATFIELD BROAD OAK; HOW HAS BEING IN THE COUNTRYSIDE AFFECTED YOUR BUSINESS? Frankie: It is a great part of the world to be based, it’s lovely to work surrounded by natural beauty and be able to watch the seasons pass. On a practical level, we have good broadband and are lucky enough to have a great village post office and good transport links by road and rail.

CAN YOU LET US IN ON SOME OF YOUR FAVOURITE PLACES TO VISIT IN ESSEX? Frankie: Essex is such a beautiful county, with so many lovely little villages and swathes of unspoilt countryside, perfect for cycling and walking. Possibly my favourite place though is Hatfield Forest. It really gives you a sense of perspective being in an ancient forest, and catching a glimpse of deer is quite magical. It holds infinite variety for the kids from climbing trees to den building – a place they can feel truly wild.

PORK BELLY

SALAD Serves 4 • 400g Pork belly (ask your butcher to remove the skin but leave the rib bones in) • 150g diced pancetta • 200g black pudding • 1 frizze of Lettuce • 250g ruby chard For dressing: • 1 punnet fresh redcurrants • 1 lemon • 1 orange • 4 heaped tbsp of redcurrant jelly • 1tsp ground ginger For pork: • 2 white onions • 1 head of garlic • 2 carrots • sprig of thyme • chicken stock

Preheat oven to 150°c. Roughly chop onions, carrots and garlic and place them in a deep baking tray. Place the sprig of thyme and the pork belly in a tin, season with salt and pepper and cover with chicken stock. Cover tightly with foil and bake for 2-3 hours or until soft and tender. Carefully remove pork belly from the stock and leave to cool, flesh side down on a baking tray. Remove all the rib bones and cartilage from the belly, wrap in cling film and sandwich between two baking trays, using something heavy to press it flat. Place the pork in the fridge for 6-12 hours to set. Once set, cut pork belly into ½ inch slices. Heat a non-stick frying pan and begin to brown pork on a medium heat. Add the diced pancetta and diced black pudding to the pan. Drain off any excess fat and continue to cook until all golden brown and crispy. Wash and drain the salad leaves. Make the dressing by combining all the ingredients together (except the redcurrants) and whisking. In a mixing bowl, mix together the salad, the pork, the bacon and the black pudding and coat with the redcurrant dressing. Divide onto plates and garnish with the fresh redcurrants.

PAN FRIED SEABASS WITH BRAISED FENNEL & SAFFRON VELUTE Serves 4 • 8 seabass fillets, skin on • 1 large baking potato • 1/2 celeriac • 150g spinach • 100g melted butter • salt and pepper • chopped thyme For velute: • 5 shallots sliced length ways • ½ head of garlic • 15 peppercorns • sprig of thyme

• 1 bayleaf • 1tsp Maldon salt • 1 bottle of Noilly Prat • 500g double cream • 1 litre fish stock • 2g saffron For braised fennel: • 4 fennel • knob of butter • oil • thyme • hot chicken stock • salt to taste

To make the velute, place all ingredients for it (except the double cream and fish stock) in a suitable pot and reduce rapidly until you have 100ml of liquid. Change the pan and add the fish stock to this reduction and again reduce this to 500ml. Transfer to a clean pan and pour in the double cream and fish stock reduction. Bring to the boil for 10 seconds then remove from the heat, taste and season accordingly. Slice the fennel in half, lengthways and remove some of the core. Remove the tops and fronds. Pan fry the fennel cut side down in the oil using plenty of herbs to season. When the fennel has started to brown pour on enough stock to just cover the bulbs. Add a knob of butter and allow to simmer gently for 10-12 minutes. Remove the bulbs, reduce the stock to a glaze and then pour over the fennel. Grate celeriac and potato into a mixing bowl. Squeeze out any excess water from the mixture. Add melted butter, salt and pepper and the chopped thyme. Fry in a hot non-stick frying pan on a medium heat for 8-10 minutes each side until the rosti is golden brown and cooked all the way through. In a hot non-stick frying pan cook the seabass, skin side down for 2-3 minutes until the skin is crisp, then turn over and cook for one more minute. Place spinach in a saucepan, add small knob of butter, pinch of salt and pepper, place the lid on, and allow to wilt for 2-3 minutes. Assemble the plate by starting with the rosti, adding the braised fennel, topping with the seabass (skin side up) and finally the saffron velute.

BOMB Serves 4 • 200g dark chocolate • 50g roasted shelled hazelnuts • 2 oranges, zested • 1 cap vanilla essence • 75g plain chocolate • 175g caster sugar • 6 eggs, separated • 2 level tsp cocoa powder

Lightly grease swiss roll tin with baking parchment and preheat oven to 180°c. Melt chocolate slowly in a glass bowl over a pan of hot water, and allow to cool slightly. Place sugar and egg yolks in a bowl and whisk until light and creamy. Add cooled chocolate and stir. Whisk the egg whites in a mixing bowl until stiff, stir a large spoonful of egg whites into chocolate mixture and gently fold in remaining egg whites. Pour into prepared tin and bake for approx 20 mins until firm to the touch. Once cooled cut into required shape to go into your mould/cup/claride mould, and use the cling film to line your mould. Mix orange zest into the vanilla ice cream and place inside lines mouldVanilla ice cream – Add orange zest to it and then place inside your lined mould. Once ice cream has set again, cut a lid out and place on top of the ice cream. Chop ¾ of chocolate into a bowl over hot water, making sure the bowl doesn’t touch the water and ensuring the water does not boil. Stir regularly, allowing it to melt smoothly. Check temperature with thermometer and when it reaches 55-58°c remove bowl from bain marie. Add remaining chocolate (chopped) stirring continuously to bring temperature down to 28-29°c. Once you have achieved this temperature pour over your turned out ‘bomb’ – ensure that it is sat on a wire rack on a tray to catch any chocolate that leaks over. Sprinkle with the chopped roasted hazelnuts and serve.

Nigel Sadler, the UK’s first beer sommelier and tutor at The Beer Academy, talks pairing beer with food

A

s we head into the winter months and the festive season, when more hearty fare replaces the barbecues and summer salads, I thought in this second article we should take a look at some of the darker and stronger beers available. Amongst these we’ll find Barley Wines, Stouts, Porters and Milds: good traditional British beer styles. It might go without saying, but as beers get darker generally they will exhibit greater flavours from the coloured malts used in their production. These flavours range from lightly toasted biscuit through toffee and caramel notes to bitter chocolate and coffee. Bitterness levels can be low, as in many Milds, to quite high levels in Stouts. Though as a norm the overall hop aromas and flavours are quite low in many dark beers with Black IPAs and Cascadian Dark Ales generally being the exception. It’s in these beers that we now have our counterparts of red wines if you like; they can prove very versatile and worthy partners to a whole host of dishes. Porters started gaining popularity in the early 1700s. They were the world’s first mass produced commercial beer. Dark brown in colour, sometimes black in the more robust versions, their richness, medium body and lower levels of bitterness give them a huge versatility when it comes to pairing with food. The roast notes in the beer match up nicely with the charred and caramelised flavours

from the cooking. So at this time of year try them with a flame grilled steak or game meats such as pigeon and venison. In the meantime London Porter and Fuller’s London Porter are both fine examples but for a more local beer look out for Essex based Red Fox Brewery’s Black Fox Porter – a very smooth easy drinking version at 4.8%ABV with subtle chocolate roast notes (www.redfoxbrewery.co.uk). Stouts vary greatly: gentle sweetish milk stouts such as Mackeson, those made with oatmeal for smoothness, strong rich imperial versions at 10-11% ABV and of course the drier, Irish type such as Guinness. Historically they followed on from Porters in development and over the years became darker and with a much more pronounced roast character. Often served chilled they can be quite refreshing in warm weather; try pouring a coffee flavoured stout, such as Dark Star Espresso, over a top quality vanilla ice cream in a tall glass for a grown-up version of the traditional ice cream float. The classic combination of oysters and Irish stout really does work fantastically well, the slight salty sweetness of the shellfish being nicely offset by the dry, roasted and bitter notes in the beer. Don’t just stick to oysters though, try it with mussels or crab next summer. Guinness Export with roast ham is another fine pairing and remember it also works very well as an ingredient for the gravy of steak pies and casseroles. Oatmeal versions are not so dry, often displaying a sweetish, slightly nutty flavour and smoothness in texture. They work particularly

well with grilled or roast lamb and venison or even good old shepherd’s pie. Wibbler’s Brewery, based in Mayland, Essex have a stout, Crafty Stoat, in bottles. It is a beer which recently won CAMRA’s Champion Beer of East Anglia this year. At 5.3% ABV it features finest English Fuggle hops and is based on a recipe dating back to 1885 (www.wibblersbrewery.org.uk). Milds have changed greatly since the 1800s. Generally thought of as a low hopped, low alcohol working man’s drink, there are some fine examples available and at least one bottled version is usually to be found on the shelf in the pub. Their low bitterness, greater caramel, even liquorice character means they’re a great companion to coarse pork pâtés, mushroom risotto and cheeses such as Cheshire or Wensleydale. Look for stronger versions (over 4.5% ABV), they’re good with liver and bacon or humble pork chops. Norfolk based Woodfordes Norfolk Ales’ Mardler’s Mild is a good example with just 3.5% ABV, it gives a wonderful aroma of caramel, treacle, coffee and oats (www.woodfordes.co.uk). Finally I would like to leave you with a cheese and beer pairing which is a firm favourite of mine: good old English Barley Wine and Stilton. What finer way to end a meal than sipping a glass of this in front of a log fire on a winter’s day? These ales are usually strong with some sweetish notes. Often aged for 2-3 years they develop complex character and blue cheese is the perfect match. One of the finest in the region is Lowestoft based Green Jack brewery’s Ripper at 8.5% ABV. Inspired by Belgian tripel ales this multi-awarding winning brew is dangerously drinkable. Rich amber in colour Ripper is both sweet and fruity with a warming finish (www.green-jack.com).

EPPING FOREST Head to this ancient woodland for sunlit glades, criss-crossed footpaths and around 100 lakes and ponds set over 6,100 acres. Straddling the border between Essex and North-East London, the forest is designated as a Site of Special Scientific Interest due to the abundance of various wildlife and thriving habitat potential – so you’re sure to come across some wonderful natural spectacles along your way. There are handfuls of marked trails available in Epping Forest; depending on how far you would

like to walk, we recommend choosing from The Gifford Trail, The Chestnut Trail and The Oak Trail. Starting from The Horseshoes pub, The Gifford Trail takes you on an hour-long walk around a section in the north of the forest, whilst The Chestnut Trail is a two-hour walk in the area surrounding Wanstead Park in the south. The Oak Trail is the longest of all, and will take a mammoth three or four hours to complete; this begins at Theydon Bois Tube Station and leads you through Epping Thicks, past Ambresbury Banks and around the Deer Sanctuary where you’ll see fallow deer and muntjac deer, as well as the rarer black fallow deer.

Epping Forest

FLITCH WAY If you want to explore rural Essex out in the open, rather than in the enclosed environment of a forest, Flitch Way is a beautiful 15 mile walking trail which follows a former railway line. Beginning at Bishop’s Stortford and ending at Braintree, you and your family can enjoy this flat and relatively straight, well-surfaced route that is favoured by joggers, cyclists, dog-walkers and horse riders. Along with fantastic views of the countryside, you can see Victorian railway stations, Great Notley Country Park and several historic towns and villages. Visit the Rayne Station Visitor Centre, built in 1866, for refreshments, public toilets and baby changing facilities.

FLATFORD MILL Explore the beauty of Constable Country at Flatford on the Suffolk-Essex border, and take in the views of the River Stour and its surrounding countryside. Here, you can take a three to four mile walk starting from The Red Lion pub, leading you past John Constable’s early studio and stunning views of the Stour Valley, towards Flatford Mill and Willy Lott’s House, then back into the main village. Stop along the way at Haywain Tea Rooms

for a spot of cream tea, or at the delightful King’s Head if you’re hungry for some British pub favourites.

NORTHEY ISLAND A remote island in the Blackwater Estuary, Northey Island amalgamates rural and marine nature, creating an environment that is completely unlike any other location within Essex. Now a national nature reserve, the island can be accessed by a causeway that becomes submerged for two hours either side of high tide. Take the Northey Island Circular Walk to get the best views of the estuary. Start in the Marine Parade Promenade Car Park, before following the marked path towards the causeway. Enjoy the fantastic birdlife whilst on the island, including Brent geese, shelduck, godwit, greenshank and grey plover, amongst many others. Here, you’ll also see the salt marsh, inundated with salt water from the estuary, which has made Maldon internationally famous (Maldon salt is used in cooking all over the world).

TOLLESBURY Located at the mouth of the River Blackwater, Tollesbury is a picturesque village surrounded by countryside. If you have a day to spend here, we recommend a nine mile ramble

around Tollesbury Wick, starting by the marina. Continue along the sea wall to Shinglehead Point where, at certain times of the year, you can see terns, oyster-catchers and ringed plovers nesting on the shingle. Venture around Mill Creek, Rolls Farm and Prentice Hall Farm on the outskirts of the village, before following the route back to your starting point.

The GLE Coupé comes with some fantastic added extras: the glass sliding panoramic roof was a nice touch, and the onboard control system worked with simplicity as I connected my phone to the car. I loved the ease of using the controls with the touch screen interface, allowing seamless navigation around the onboard system, switching tracks with a swipe. The icing on the cake for me was the input method for satellite navigation. I was able to trace letters and numbers from addresses with my finger and the onboard computer inputs this into the system – and away you go.

T

his Christmas, all we can think about is 903 brake horsepower, a 3.8 litre twin turbo V8 engine and a top speed of 217mph – we’re talking, of course, about McLaren’s P1: the limited edition supercar which has been tipped as the best driver’s car in the world. Utilising 50 years worth of racing experience and success, the British automotive manufacturer designed the car as the longawaited successor to the McLaren F1, which ceased production nearly two decades ago; however, the new vehicle is lighter, more aerodynamic and more powerful, reaching 186mph from standstill in less than 17 seconds (five seconds faster than the F1). A petrol hybrid, the P1’s carbon dioxide emissions are less than 200g per kilometre – a pleasant surprise for a powerful supercar. The petrol engine is coupled to a single electric motor, which provides instant torque, making the innovative IPAS powertrain superbly responsive. The exterior is geared around maximising downforce; using lightweight carbon fibre technology, the body is lightweight, yet strong and rigid, thus improving performance, safety, handling, agility, durability, efficiency and ride comfort. Airflow is optimised around the body through the use of an active wing and underbody devices; plus, the adjustable rear wing can extend by 120mm on the road and up to 300mm on the racetrack, maximising the levels of downforce. In addition, the P1 features adjustable ride height as part of the

new hydro-pneumatic suspension, lowering the car by 50mm in Race Mode to produce ground effect aerodynamics. With just 375 P1s in production, owners will become part of the elite McLaren family and will be the only people to receive an invitation to purchase the even more exclusive P1 GTR, of which only 35 units will be manufactured.

Out with the Old M

any of you may have visited Hintlesham Hall before its most recent renovation began: the carpets were tired from years of use, the curtains were heavy and dark and the walls displayed the age of its décor. Perhaps this aesthetic didn’t demonstrate the full potential of the building (even though its mixedera exterior is astounding in its own right), but with a carefully planned overhaul currently underway, the hall is being granted a new lease of life, with thanks to Jayrest Interiors. Driving past the long driveway leading up to the hall itself, the Georgian façade appears picturesque amongst the towering trees and cultivated gardens, but walk to the rear of the building and you’ll find unspoilt Elizabethan brickwork – a tell tale sign of its true origins. Inside, these allusions continue, particularly in the exposed timber framing in certain rooms - a characteristic that Jayrest have chosen to make a feature of – and the grand oak staircase leading into the distinctive Salon. Towards the front of the building, the long, well-lit galleries have been repainted in elegant blues and whites to compliment the monochrome floors; Jayrest’s bespoke sofas line the walls, providing contemporary accents with contrast flocking in various colourways. The luxurious hotel rooms have received brand new colour palettes, each one boasting a different, carefully curated theme. Often, Jayrest have incorporated pre-existing furniture

to use as a foundation from which to build upon the colour scheme of the room – a thoughtful method of blending the old with the new. It is the newly opened spa that has seen the most change, with an interior now unrecognisable from its previous state. Walking in, the colour scheme is calming and warm: a trinity of cream, navy and dove grey at its centre, with pale wooden and tiled flooring throughout to create the illusion of a larger space. Jayrest crafted bespoke, solid beech framed furniture for the open-planned spa, upholstered using durable material from Kobe Fabrics and Romo Fabrics; an inviting corner sofa and footrest create a casual communal area leading onto a sheltered patio, whilst two chairs in the main area form a cosy corner for afternoon tea. These pieces compliment the orb-patterned wallpaper from Harlequin, which is found throughout the spa and features tiny crystal beads for a unique textured effect. Instead of heavy curtains, sheer voile blinds were meticulously chosen from a retailer in France to match the wallpaper with a similar circle pattern; found in both the main relaxation area and the individual treatment rooms, these blinds are translucent enough to let in natural light, whilst at the same time providing privacy for the client. Audley’s Well That Ends Well Jennifer Meredith investigates the history behind Audley End House and Gardens, Saffron Walden’s majestic country estate

udley End House appears grand and majestic, sitting imposingly above the vast estate that surrounds it on the outskirts of Saffron Walden; however, the original mansion created in 1605-14 by Thomas Howard, first Earl of Suffolk, was roughly three times the size that it is now. Many of its original exterior characteristics are still visible due to an unusual commitment by subsequent owners to honour the original design; this includes more or less consistent Jacobean style architecture.

The interior, on the other hand, has been much altered over the centuries, with both major redesigns and smaller décor changes making the living areas unrecognisable from their former states. For example, the state apartments were originally connected by a long gallery forming the east range of the inner court. This was demolished by the Countess of Portsmouth in 1752, and in 1764 a picture gallery and service gallery (the Coal Gallery) were added above on the first and second floors, rising behind the hall. These galleries contain paintings by great artists such as Canaletto, Jan Asselijn and Cipriani. The gardens and landscape, shaped by various owners to complement the house, reflect many changes in English garden fashion. Lancelot ‘Capability’ Brown, a renowned 18th century landscape architect, remodelled the grounds in

1762 to create one of England’s finest gardens, inserting mock classical monuments into the stunning vista to add extra grandeur. The grounds are divided by the River Cam, which are crossed at several points by ornate bridges, while a miniature railway now winds through the estate’s woodland. 1984 saw the takeover of the house and gardens by English Heritage, which cares for over 400 historic buildings, monuments and sites across England. The walled organic kitchen is stocked to match the traditional garden, the River Cam has been dammed to provide an artificial lake and a museum has been erected in the Stable Block to educate visitors about the landscaping and development of the estate. Although the house is continuously undergoing renovation and restoration (it was only last year that the nursery was open to visitors for the first time), English Heritage hosts special interactive days throughout the season where visitors can meet costumed interpreters cooking, washing and ironing as if they were a part of the original household. This Christmas, Audley End House is opening for a festive celebration in the style of a Victorian Christmas on 28th and 29th November. Experience shows and music, play seasonal games and enjoy traditional rides, and indulge in hot chestnuts and seasonal punch. There will also be a range of festive tunes to really get you in the mood, falconry experiences, a magician and Father Christmas’ toy workshop. At the 2013 Milan Fair, Carl Hansen & Søn introduced a new product designed by Tadao Ando. The master architect wanted to extend a tribute to Hans J. Wegner and the result was both very distinctive and unique. It was a challenge for us to produce – but we are very proud of the result, dubbed the ‘Dream Chair’. During this year’s Milan Fair, we introduced a new chair designed by the Austrian designers, EOOS. The chair was based on the DNA of the Carl Hansen & Søn quality, and unique and rounded woodwork; but WHY IS IT THAT SCANDINAVIAN DESIGN HAS BECOME SO POPULAR ACROSS THE GLOBE IN RECENT YEARS? Denmark has a very strong design tradition and is renowned for the design and production of furniture – it is simply in our DNA. We have a tradition of using the materials around us – such as wood and leather – to create furniture that is characterised by function, aesthetics and quality that all come together. Danish design has, since the 1960s, enjoyed great popularity, and we can see that foreign countries attach great importance to the fact that our designs are produced in Denmark. In light of the financial crisis, it seems that there is a growing interest in buying quality combined with elegant design. People no longer just consume for the sake of consumption. People will invest in good quality and good design that the upholstery was entirely created on the ideas of EOOS. Here again, the result – the ‘Embrace Chair’ – was very interesting and exclusive. I joined Carl Hansen & Søn in 2002 after working in the shipping industry and also as managing director of Tempur-Pedic. THE SECOND LEVEL OF YOUR SHOWROOM IN LONDON FEATURES A LARGE COLLECTION OF RUD RASMUSSEN FURNITURE. WHAT RELATIONSHIP DOES CARL HANSEN &

WHAT ARE SOME OF YOUR FAVOURITE PIECES OF FURNITURE FROM YOUR BRAND? My favourite design is the Wishbone Chair. It is not only a fantastic dining chair but also a totally unique chair with the most fantastic lines. It has survived more than 60 years of competition and it still sells more than ever before. SON HAVE WITH RUD RASMUSSEN? Rud Rasmussen – Denmark’s oldest cabinet making workshop – is owned by Carl Hansen & Søn. The transaction took place during 2013 – but Rud Rasmussen was purchased entirely by heart because of its total commitment to the old methods of producing furniture. The workshop is situated unchanged in the centre of Copenhagen, where it has resided since 1872. The planks are still being stored in the basement – where they lay for ages drying and acclimatising until the carpenters need the wood and cut pieces from the planks to make the furniture upstairs. Besides the iconic Wishbone Chair, my favourite chair is the sculptural Oculus Chair designed by Wegner in 1960. Until its recent launch in 2010, the design remained a prototype. One of the prototypes was carefully prepared for production through close cooperation with the Hans J. Wegner Studio, using Wegner’s original drawings and clay models. ‘Oculus’ is Latin for ‘eye’, and refers to the chair’s curved back which forms an ‘eye’ in the upholstery. WHAT DO YOU FEEL ARE THE QUALITIES YOU NEED TO BE A SUCCESSFUL SOLICITOR? All through my studies I was told how competitive the legal market was and, as well as ensuring I had good academic grades, I was encouraged to partake in extracurricular activities which would make my CV stand out from others. Whilst it is true that it is a competitive field to get into, when it comes down to it your academic record and extracurricular activities may get you in the door but, in my view, it is not these which make you successful; a solicitor should be ambitious, enthusiastic and have lots of energy. Interpersonal skills are a must and it is important to be a team player. Equally as important is the need to have good commercial acumen; solicitors need to know and understand the business they are in – this not only makes good business sense, but also enables a high level of client service to be achieved.

WHAT INFLUENCED YOU TO CHOOSE TO SPECIALISE IN FAMILY, DIVORCE AND RELATIONSHIPS? The decision to specialise in family, divorce and relationships was always an easy one for me to make; I have never wanted to specialise in anything else. The area, whilst often challenging, is extremely rewarding. It is never easy for clients to come and see a family solicitor; it means they are going through a very difficult stage in their lives. As a family solicitor I am able to offer advice tailored to the specific situation, enabling them to move forward with the support and knowledge they require.

WHAT IN YOUR CAREER ARE YOU MOST PROUD OF? I feel very privileged to be working as a solicitor; it was a dream of mine to become one and to know that it is a reality never fails to make me smile. I have achieved a lot at a relatively young age and been given opportunities that I never dared imagine were possible. I am currently the team leader for the Divorce and Family Team at Birkett Long, which is spread across its three offices in Chelmsford, Basildon and Colchester. I am looking forward to continuing the team’s growth and expertise in the years to come.

WHAT IS THE MOST COMMON MISCONCEPTION ABOUT YOUR ROLE? I am often met with relief by clients when
