E a ideia estava lá!

Our Project 25

This is our city

Paredes is in the North of Portugal and it belongs to the Douro Litoral Region which is part of Oporto district. Although Paredes is in the countryside, it’s near the second most important Portuguese city- Oporto. It only takes us twenty minutes to arrive there. Paredes municipality is in the Vale de Sousa Region and archaeological evidence showed that there’s human trace here for more than 5000 years ago. It has 18 parishes and it is was declared a city in 1991 but it was already long known for designing and manufacturing furniture. Paredes is famous for being the city of Rota dos Móveis (Route of Furniture). Paredes has been recently announced as the winner of Region Stars 2014 Awards in the category 1 Smart Growth- with the project Art on Chairs. Neverthless, Paredes is far beyond furniture, it’s its welcoming people, it’s their stories, it’s their culture and their proud of who they are. Paredes belongs to the The Route of Romanesque and to the Route of Vinhos Verdes. We celebrate history –we have

important ancient monuments, we celebrate modernity – we have great modern art and we celebrate life and what nature gives their ancestors’ traditional dishes like Cabrito Assado roasted in bread dipped into sugared hot water seasoned with cinnamon and peppermint) and Regueifa (a special soft white bread). A new dessert has been recently created to celebrate our Rota dos Móveis- Cavaco. It was named so because it has the shape of a wooden stick. Although being recent, it was inspired on ancient recipes and it’s made of eggs, sugar and chestnuts seasoned with lemon and cinnamon. Paredes has a lot to show and their people a lot to tell. We are sure you will not forget our city.

The Route of Romanesque

In the land of the valleys of Sousa, T창mega and Douro, in the heart of the North of Portugal, stands an important architectural heritage of Romanesque origin. The Romanesque of T창mega and Sousa presents very peculiar and regional features which make it unique within the context of Portuguese Romanesque. The Romanesque architecture of the region is also a testimony of the important role that this territory has once played in the history of nobility and religious orders in Portugal. In these lands inhabited some of the noblest families of the beginning of the Nationality, as the Ribadouro family. The richness of the Romanesque architecture in the region is also highlighted by the diversity of typologies, as expressed in the monuments of the Route of the Romanesque: monasteries, churches, chapels, bridges, castles, towers and memorials.

28

Experience the tastes and odours of traditional cuisine, always served with green wines of excellence sprung in these lands. Recover your strengths in the quietness that surrounds the rural tourism units in the region or go for a walk in the centenary gardens, where time seems to have stood still. Wherever you go, you will be welcomed with the courtesy and authenticity of the local population. This is our school

Agrupamento de Escolas de Cristelo is a grouping of schools divided into early years (ages 3-5), primary education (ages 6-11) and secondary education (ages 12-15/18). In total we have 1341 students, 688 of which are now attending at Escola Básica de Cristelo (secondary education level). We are in Cristelo, a small parish next to Paredes. Our school is big and comfortable. We have a student’s room, where we can work on computers, listen to music, play table tennis or just chat. There’s a big playground and a new gym. Besides this, we are even given the chance to play golf at Paredes Golf Club. We are encouraged to work as a team and as a group we may have better results. Isn’t it what we are doing now by taking part on this Erasmus project? Our teachers are fully committed to help us to become good students, good citizens and to help us and our parents in whatever we need. We are treated fairly and we also have a word to say. But of course not everything is perfect… Nothing is… But we know that this school tries to do its best and students too (at least most of them do).

From grapes to wine

We live in the city of Paredes, in the North of Portugal. Paredes belongs to the Sub-Region of Sousa. This area is one of the subregions of Vinho Verde region. It begins at the seaside and goes into the inner part of the country. The climate is temperate and the rainfall is high. Its soil is mainly granite and has a sandy texture. These particular features combined with the high rainfall make this region a special vineyard zone whose produced wine is unique.

34

Autochthonous grapes They possess a local story that can’t be discarded. These are some of our local wine grape varities: Arinto, Loureiro and Alvarinho.

Arinto has a citrine taste, it is a white variety with a medium size.

Loureiro is a variety with a medium/small size and white colour. It

Alvarinho grapes are small. They have a fruity smell and taste.

35

We went to Quinta de Lourosa to discover‌ How wine is made 36

37

After the harvest, the grapes are taken to the vineyard.

Destemming and crushing Then, they are separated from their stalks and crushed.

38

Pressing Next, the grapes are taken to the pneumatic press and pressed against their walls.

The juice falls into the “bath.

39

Settling After settling for some time, the particles of the skin and the pips are at the bottom of the vats and the must is ready for fermentation.

Fermentation The must will rest for a 14-18-degree temperature for 20 days.

Racking The new wine is then changed into a new vat. At this stage the new wine is like this: 40

Filtering the wine is cloudy.

Before and after

Bottling The wine is bottled and ready to be sold.

We also learnt that not only wine is produced from grapes. There are other products, named by-products and in these lots of beauty creams and oils are included. These by- 41 products are great to your skin.

A few days later we picked grapes from our school’s vineyard and‌

We started by selecting the grapes.

43

Then we destemmed them and gently crushed them-just enough to open their skins. 44

Afterwards, we put the must into a jar, covered it with a plastic bag and bound it with an elastic band. Finally, it settled for a couple of days.

We finished this activity by filling a Science Report about all the procedures. 45

trip to Instituto do Vinho Verde

We visited Comissão de Viticultura da Região dos Vinhos Verdes, with the abbreviation of CVRVV situated in Oporto. CVRVV is an inter-professional organisation which aims to represent the interests of the professionals involved in the Vinho Verde production and trade. It also tries to defend regional and national inheritance of its Denomination of Origin. Legally, this institution is a regional association with a private corporate body of public interest with a long lasting duration. We learnt that if the produced wine intends to use the denomination “Vinho Verde”, it should be made exclusively from grapes of the recommended grape varieties of the demarcated subregion. The labelling of Vinho Verde wines and its by-products standard of quality.

Vinho Verde is a wine produced in a DO (Denomination of sensory analysis or organoleptic test is one of these criteria. What is an organoleptic analysis ? The same term is used for other food items. This sensory test has a
