Hawaiian Sliders

Hawaiian sweet rolls are filled with a combination of cream cheese, pineapple, Swiss cheese, BBQ chicken meatballs, and crispy onion rings. Your guest will feel the ocean breeze as they kick back with one of these delicious sliders. * Prep time: 12 minutes *| * Cook time: 15 minutes *| * Total time: 27 minutes *| * Servings: 12 * 12 Kings Hawaiian Sweet Rolls (one 12oz bag has 12 rolls) * 12 Fully Cooked Meatballs (I used Chef Bruce Aidells Teriyaki & Pineapple Chicken Meatballs) * 8 ounce(s) of Kraft Philadelphia Cream Cheese * 20 ounce(s) of Pineapple Chunks in natural juice * 6 Slices of Swiss Cheese * 12 Onion Rings * 6 Slices of Thick Cut Fully Cooked Bacon

1. Bake onion rings according to package directions, mine went into a preheated 425 degree oven for 12 minutes and were flipped over half way through cooking time. 2. Put your meatballs along with 2 ounces of cream cheese and BBQ sauce into a frying pan on stove top and cook on medium heat until hot and sauce has coated meatballs nicely. You will stir occasionally. If sauce is too thick you can thin with a little pineapple juice from can. This only took me a few minutes since fully cooked meatballs were defrosted. 3. In a food processor mix 3/4 cup of pineapple chunks drained and 6 ounces of cream cheese until well combined. 4. Slice rolls in half to make your buns. 5. Spread a little cream cheese and pineapple mixture onto all of the buns, top and bottom and place them on a cookie sheet. 6. Slice your Swiss into quarters and place a slice on top of each bun, top and bottom. 7. Slice your fully cooked bacon into quarter pieces and place a slice on each one again top and bottom bun. 8. Place buns now in broiler for 3 minutes or until toasty and Swiss cheese is melted and bacon is hot. 9. Assemble sliders by taking a top and bottom bun and putting one meatball in center along with an onion ring on top. You will want to use long toothpicks or long appetizer plastic forks to keep them nice and stacked.

Ingredients * 3 avocados - peeled, pitted, and mashed * 1 lime, juiced * 1 teaspoon salt * 1/2 cup diced onion * 3 tablespoons chopped fresh cilantro * 2 roma (plum) tomatoes, diced * 1 teaspoon minced garlic * 1 pinch ground cayenne pepper (optional) Directions 1. In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.

Grilled Catfish With Salsa Ingredients: 4 catfish fillets 1/2 teaspoon garlic salt 1/2 teaspoon pepper 3 medium tomatoes -- chopped 1/4 cup chopped onion 2 medium jalapeno peppers -- chopped 2 tablespoon white wine vinegar 1 teaspoon salt fresh homemade salsa----Instructions: Sprinkle catfish with garlic salt and pepper. Place catfish in a well-oiled grill basket or on a well-oiled grill rack. Grill on an uncovered grill directly over mediumhot coals about five minutes $ &216,*10(17 6+23 per side or until fish flakes easily. In a bowl combine tomatoes, onion, jalapeno peppers, vinegar and salt. Stir well. Let stand at room temperature for about 30 minutes before serving. Chill to store. Makes 3 cups. Quick tips for summer entertaining made easy As the temperature continues to rise and the dog days of summer head our way, you'll want to keep your guests refreshed with frosty drinks, cool appetizers and buffet items when entertaining this season. Following are a few tips to keep in mind when planning your party menu for a fun, relaxed event. * Keep it simple. Focus on easy recipes to save time in the kitchen so you can spend more time with family and friends. * Plan ahead. Easy green summer living Summer invites us to take hands with her sunny, warm energy so that our lives can be more easeful and pleasant. So we have collected a baker‘s dozen tips and ideas to help all of us live more simply (and succulently!) during the long, lazy days of summer. Find out how to make the sun your ally, get some ideas on simplifying your life and enjoying the pleasures of the season, and much more. We include a few easy warmweather cooking suggestions and some great keep-cool formulas, including a refreshing crop of body fresheners and some cucumber beauty tips. It’s all right here: Make an Ally of the Sun 1. Hang your laundry out to dry. There is simply noth-

ing like climbing into a bed whose clean sheets smell sweetly of sun and fresh air. And it saves energy! 2. Wash stained items as usual and then throw them over a bush located in full sunlight to take advantage of the sun’s natural bleaching power (our ancestors used to dry their linens on lavender bushes so they would be permeated with sun, fresh air, and the divine scent of lavender.) 3. Anything musty or funkysmelling can benefit from some time in the sun: place items where they will get the benefit of the direct sunlight. 4. Try making Sun Tea. Children are fascinated by the sun’s power to change things and love to get involved in this process. Simply place

1 teabag (black, green, or herbal) per pint of water in a glass container, and leave outside in the sun to steep for an hour. Add sweetener and fresh mint, if you like. Enjoy the Pleasures of the Season 5. Eat outdoors whenever possible. (I keep a collection of big baskets on hand to pack up at a moment’s notice with tin plates, cloth napkins, lightweight cutlery, and our meal. Then all we have to do is transport the baskets to a pleasant spot and enjoy.) The light is so breathtaking in the late evenings: even carryout from your favorite deli will take on a golden glow. And absorbing the sights and sounds of nature while you eat is a lovely way to slow

down, enjoy your meal, and improve both your digestion and your attitude. 6. Water-play on hot summer days never goes out of style: you’ll be amazed how much fun you and your kids can get out of a lawn sprinkler or a garden hose. Or you can save precious water and take a trip to the nearest lake, river, or beach. It’s all about contrasts–warm sun, cool water. And splashing is so much fun! 7. Take some do-nothing time. Sit outside at dusk and watch the fireflies–they hold a special magic for people of all ages. We are so adept at DOING: summer encourages us to simply BE. Simplify 9. When temperatures soar, our bodies crave smooth clean

surfaces. It may be a good time to experiment with bare floors rather than rugs or carpets (Just think: no vacuuming–just a little sweep with the broom or a quick go-round with a damp mop!). Try storing some of those toss pillows and knick-knacks: there will be less tuff to dust, and your home will take on a more Zen-like atmosphere of spacious calm. 10. Ways To Keep Cool When it's Hot

Keeping cool when temperatures reach record highs isn't just about comfort. Dangerously high temperatures can result in heat-related illnesses ranging from heat cramps to heat exhaustion and heat stroke. The following tips can help you keep cool all summer long.

1. Alter your pattern of outdoor exercise to take advantage of cooler times (early morning or late evening). If you can't change the time of your workout, scale it down by doing fewer minutes, walking instead or running, or decreasing your level of exertion. 2. Wear loose-fitting cloth-

ing, preferably of a light color. 3. Cotton clothing will keep you cooler than many synthetics. 4. Fill a spray bottle with water and keep it in the refrigerator for a quick refreshing spray to your face after being outdoors. 5. Fans can help circulate air and make you feel cooler even in an air-conditioned house.

8. Take frequent baths or showers with cool or tepid water. 9. Combat dehydration by drinking plenty of water along with sports drinks or other sources of electrolytes.

6. Try storing lotions or cosmetic toners in the refrigerator to use on hot, overtired feet.

Tips on Staying Fit in the Summer For many, the summer months signify a time of carefree living: summer vacations, staying up late, poolside barbecues and hours spent in front of favorite television programs. Unfortunately, for some this extra dose of freedom can also equate to falling back out of shape. Alternately, you can continue to have fun, stay healthy and look great in your swimsuit all summer, if you abide by some basic strategies. Participate in Community-Sponsored Activities Many communities offer summertime activities, such as resident hikes at nearby trails, community softball leagues and T-Ball for kids. By joining in, you will stay in shape, get to know new people in your area and brush up on your skills. Work Out in the Morning You don't need to fully ditch your outdoor workout ritual if you can commit to exercising in the early morning hours before the sun's rays become intense. The great pay off of working out in the morning is that you get to smell the fresh dew, watch the sun as it rises in the sky, enjoy the tranquility of your neighborhood before it fully awakens, and you become energized early on to face the rest of your day. Try going for a brisk walk with your dog, taking a leisurely swim or rollerblading with a friend. Play Even if summertime doesn't mean "summer vacation" for you, it more than likely means extra play time for your kids. Whenever you have the chance, join them. Go outside and

jump on the trampoline, play Frisbee at the beach, have a swinging competition at the park and dance around the house on weekend evenings. Enjoy Indoor Activities If you're not a morning exercise person, you can still get in a good work out by staying indoors where the sun isn't beating down on your skin and the temperature is cool. Head to the nearby gym and run on a treadmill as you listen to upbeat music on your MP3 player, power walk through the mall for some fastpaced window shopping, or head to the local rock climbing wall with a group of friends. For a mini-vacation from the brutal summer temperatures, take a trip to an ice skating rink in the middle of July and pretend that it's December. Stay Hydrated with the Right Stuff Childhood summertime favorites such as sugary lemonade and iced tea are refreshing and delicious, but only consume them in moderation, as they do little to keep you hydrated and they pack on unnecessary calories. Summertime safety a must this season Summertime and the livin is easy; Fish are jumpin’ and the cotton is high ... George Gershwin wrote these lyrics for the 1935 opera “Porgy and Bess.”They seem fitting to many people, as summertime is seen as a time to kick back, relax and enjoy a slower pace. While summertime is a season to live easy, there are some inherent dangers to summer that can halt plans of fun in the sun. From skin cancer to insect bites, summertime can be dangerous for those who don’t play it safe. With a greater number of people out and about enjoying the warm weather, the risk for accidents and injuries increases. The National Safe Kids Campaign says statistics indicate children will be rushed to emergency rooms around the country nearly three million times this summer. Higher rates of drowning, motor vehicle accidents and bicycle injuries occur this time of year. There are a number of potential summertime hazards men, women and children can safeguard themselves against. Sun-Related Injuries While skin cancer and sunburn are the most obvious dangers from the sun, there are other hazards as well. Failure to protect the eyes from UV sun exposure can result in photokeratitis, irreversible sunburn of the cornea. While it may cause temporary vision loss, recurrent incidences of photokeratitis can lead to permanent vision loss as well. Individuals who are exposed to sunlight between 10 a.m. to 4 p.m. without UV protection may become sunburned, increasing their risk for skin cancer. According to the American Cancer Society, this year more than one million Americans will be diagnosed with skin cancer and about 9,500 people will die from it. Dehydration and heat stroke are other potential hazards. Drinking plenty of water and other hydrating fluids (not diuretics like alcohol) can keep the body cool and refreshed. Headaches, acting angrily, dizziness, and excessive sweating or cessation of sweating may be signs of a serious sun-related health condition. Water Hazards The Maryland CARES Program, which educates health care professionals and the public about pediatric care and safety, offers that drowning incidents increase 100 percent over the summer months. It takes only inches of water to drown a person, especially a young child. Every year the news broadcasts stories of children who fell into backyard pools or adults swept out to sea by choppy waves. People should never take bodies of water for granted. Swimming only where there is a certified lifeguard can make water recreation safer. Individuals should follow the guidelines posted regarding swimming and avoid oceans when storms are brewing because of rip tides and undertows. Children should always be carefully monitored around water. Selflatching gates around pools can help deter entry as well as safety covers or retractable pool ladders. Remember, pool floats and water wings (swimmies) should not be used as a substitute for a life vest. Wildlife Dangers

Children should always be careful when playing near water. Just as many people come out of hibernation when the weather warms, so do animals and insect life. Tick bites are common when the weather is warm. Experts say that the months of May, June and July are peak times for exposure to ticks, which may carry Lyme Disease or another dangerous parasite. Ticks are small and can be difficult to spot. People can do a tick check after coming in from outside, paying careful attention to the areas to which ticks tend to migrate:In ears, in and around the hair, under the arms, behind the knees, around the waist, and between the legs. Mosquitoes, biting flies, bees, wasps, and other insects are in full force. Using an insect repellent can help keep them at bay and avoid bites. In addition to insects, animals like bats, squirrels, raccoons and bears are more active in the warm weather. During the time of dawn and dusk deer may be on the prowl for food before the heat of day. People can pay attention to wildlife when driving, hiking or bicycling to avoid altercations. Most individuals can enjoy the summer if they make safety a priority when planning recreational activities.

Simple ways to ease the ‘ouch’ Sunblock -- and its adequate reapplication -- is one of the single most effective ways to prevent sunburn and a host of sun-related maladies. Despite the warnings of skin cancer and ailments related to the sun, people succumb to sunburn year after year. The results can be quite painful. According to the Centers for Disease Control and Prevention, getting sunburned even once can make a person more likely to get skin cancer. Though it can be that simple to increase risk for skin cancer, there’s actually quite a lot going on behind the scenes when a person gets a sunburn. The very outer layer of the epidermis, or the outside-most skin, is made up of dead skin cells. Directly below them are living skin cells that can be damaged when ultraviolet light from the sun penetrates these living

cells and eventually kills them off. Once the body senses the dead cells, the immune system springs into action. White blood cells are sent to the area to repair damage, which involves increased blood fl ow. This blood fl ow makes the skin red and warm. Furthermore, the damaged skin cells send out chemical messengers that activate pain receptors. This is why sunburned skin is red, warm and painful. There are different remedies for alleviating the pain associated with sunburn. While there are some overthe-counter analgesics that will temporarily numb pain, some of the best treatments are simple and natural. * Cool water baths and brief showers can reduce the temperature of the skin. * Aloe gels often soothe and cool. It is believed that aloe has

anti-inflammatory properties. * Some people say that white vinegar can reduce pain and inflammation when sprayed on the affected area or used in compresses. * Sunburned skin is often dry and chapped. A moisturizer, such as cocoa butter, can help minimize irritation. * It’s important to remain hydrated because damaged skin may not be as effective in locking moisture inside. Plus, the body needs food and water to fuel the repair of sunburned skin. The best remedy for sunburn is to avoid it at all costs. Wearing sunblock, a widebrimmed hat, UV-protection clothing, and sunglasses and avoiding the sun during peak hours are ways to remain comfortable and healthy. There are ways to help a sun burn feel better.

Beach tips and what to take with you The summer sun is calling you to the beach. You anticipate the soft sand, the refreshing water, and beautifully scenes. But now is the time to plan ahead so you are ready for this fun experience.

Most of us stay indoors a lot of the time. When we go to the beach we need the protection of sun hats with brims and beach umbrellas

The Beach Bag

Bring Water

Choose a beach bag made of a strong fabric, and that has comfortable handles. Beach bags take a beating: they sit in the sun, get tossed in the back of a car, are dragged through sand and over rocks. Invest in a beach tote bag made from a tough material, such as canvas or dual-ply nylon to withstand the rigors of many days at the beach. Make sure the handles are of a length that is comfortable for you and that will accommodate what you will be transporting: shorter handles might be better for beach bags that carry towels, while longer handles might be better if you need to put the bag over your shoulder and keep your hands free. Wear Protective Footwear When your at the beach, lake or river, wear protective footwear in the water to avoid cuts, stings and other hazards. This is especially true for the ocean floor which can be hard on your feet. While many beaches are safe and feature little more than sand and the odd shell beneath their waves, there is always a chance for you to encounter a sharp-edged broken shell, or to disturb a crab or other sea creature in his own environment. On beaches with obvious rocky shorelines, you´ll want to be conscientious about stones that might have sharp, jagged edges that can cause nasty cuts. Apply sunscreen with a SPF (Sun Protection Factor) of at least 30 for sunblock and sunscreen. Give special attention to the face, nose, ears and shoulders. Wear a lip balm to protect your tender lips. The sun's ultraviolet rays are at their strongest during the hours of 10:00 a.m. and 4:00 p.m., so limit your time in the sun during those hours. Sunglasses Use sunglasses with both UVA and UVB protection. It will keep you from tiring so quick and help save your eyes from premature cataracts. Protection Clothing There are many choices of clothing made specially made for UV protection. Surfers and other water lovers

have made these items stylish and cool. Hats are also a great protection for your face, scalp and neck. Bringing along an extra T-shirt or pair of shorts is not a bad idea. If your beach trip will continue on into the evening, bring a windbreaker or sweat jacket for everyone, just in case the temperature dips down. Sand Protection Something to sit on As appealing as the sand looks in the glistening sun, it gets HOT! Unless you spend your entire time pruning in the ocean, your going to need a place to sit or to lie down on shore. Some people opt to use their towels as a protection between their bodies and the sand. If you choose to do this, be sure to shake out the towel completely before wiping your wet body with it to prevent chafing of your body. Other options are mats and blankets. Consider materials with smooth surfaces which are less likely to retain sand when you pick up and go like a mat or beach chair.

Kids of all ages love digging and building in the sand so bring shovels and pails, it's a must for a beach visit to build your great sand castle and moat. There is a huge variety of toys on the market made specifically for water play. Nerf balls and lightweight canvas Frisbee discs are great because they float and often come in neon colors so they can be seen easily. Squirting water toys are also a blast and can keep the kids busy for hours. Bring along a plastic jar to collect shells. A butterfly or small fishing net can be loads of fun for catching small minnows near lake shorelines. Only take home empty shells, fossilized starfish, and rocks.
