Creating Touchstone Memories By Tabatha Deans
Many of life’s important moments are steeped in tradition, ritual and symbolism. Brides adorn themselves with something borrowed for their wedding ceremonies, the young enter the world of adulthood through religious ceremonies or birthday bashes, and long-time loves still celebrate 50 years of marriage with gifts of gold. So before Vipul and Madhoo Seth opened Copper Leaf Gardens and Event Center in April, they spent nearly six months renovating the space, making sure there was plenty of tradition and symbolism built into their labor of love. “We create touchstone memories,” said Vipul, of their collaborative vision of making every event held at the venue special. “We want to connect to people on an emotional level, and we will create the vision they want.” Traditionally copper has been symbolic of health, healing and positive energy, and the creative duo knew they wanted to incorporate that into the venue. Accent walls and pillars are adorned in copper providing a calming, rustic, yet whimsical ambiance. “Our name and award-winning logo says it all,” said Madhoo. Copper is warm and earthy, rustic and luster, homey but valuable and desired. Green arugula leaf in the logo ties in with fresh gourmet food and flavor. Opening Copper Leaf Gardens has been a dream in the making for the Seth’s, who have spent 13 years running their award-winning The Gourmet Kitchen Catering. Combining catering with an event facility gives them the opportunity to help people celebrate their special day in every way possible. “We cook in your language!” Said Madhoo about their capability to dish up cuisines from around the world; and bringing families and loved ones together through food and ceremony is what Copper Leaf is all about.
The full-service venue includes a deluxe Bride’s room, and a Groom’s room that is guaranteed to keep antsy groomsmen out of trouble while waiting for the ceremony to begin. The main hall accommodates 250, with a combined indoor/outdoor capacity of 800. The venue is wheelchair accessible throughout and there is plenty of free private parking. A focal point stoned-hearth see-through fireplace, a panoramic vista view, lush gardens, gorgeous lighted gazebo, coupled with The Gourmet Kitchen’s finestprepared foods, the celebrations feel like home with a lustrous elegance sure to please. Their goal is to become a carbon-neutral facility by December 2017. Reduce-Reuse-Recycle is their mantra. They compost, recycle, use reusable dishes, have occupancy sensors and LED/CFL lighting throughout.

1 Some problems are good ones. Some decisions are difficult, but in a good way. Like this one: Where shall we drive for viewing the best fall foliage color?
F
rom the furthest reaches of Colorado’s northwestern mountains to Denver and the quiet plains, the choices are seemingly limitless. So it’s no wonder taking in a leisurely drive to savor the burning reds, fiery oranges and electric yellows that characterize fall in Colorado appeals to so many of us. There’s drama in the wide-open mountain ranges, towering bluffs, quiet forests and expansive eastern plains in our state. The month of September into mid-October is the ideal time to see the gilded aspen spectacle on a scenic drive, but you’ll be lucky if you time it just right. The colors peak for only about two weeks in most areas. So head out for a bright weekend—or midweek to avoid the crowds--to the foothills or high mountain passes where the air above sparkles and serenity awaits.

KEBLER PASS During fall, visitors along the 10,007-foot pass are treated to the mottled hues of the surrounding West Elk Mountains and the Ruby Range, offering an interesting contrast to the delicate, golden aspen in the lower elevations. An old railway grade, the two-lane gravel road that goes up and over Kebler Pass is a popular route for anyone travelling between Crested Butte and Carbondale, Paonia, Delta or Montrose. To begin, head west out of Crested Butte along CR 12 (Whiterock Ave.) – the scenic drive stretching some 30 miles connects Crested Butte and Highway 133.
SANTA FE TRAIL This lengthy (184-miles) scenic byway follows the route of the Santa Fe Trail along U.S. Highway 50 and the Arkansas River from the Kansas border to La Junta, crosses the high plains to Trinidad on U.S. Highway 350, and then climbs Raton Pass on I-25. Along the way, enjoy the Sierra Vista Overlook (1/2-mile north on CO 71) offering travelers their first view of the Rocky Mountains. A threemile section of the original Santa Fe Trail leads to Timpas Picnic Area, a watering hole for the original trail travelers. Begin and/or end at Raton Pass or Highway 50 at the Kansas border.

THE PEAK TO PEAK HIGHWAY

It’s not uncommon to see supervised youngsters selling cookies and lemonade on the wide shoulder of the Peak to Peak Highway during fall aspen viewing in September and October. The 55-mile scenic byway showcases the foothills of Colorado’s Front Range within a short drive of the Denver Metro Area. This route, mapped out in 1918, wanders through the upper foothills from Estes Park to Black Hawk, framing the mountains that form the Continental Divide. Access it via Highway 7 out of Estes Park or CO 119 out of Black Hawk.

COLLEGIATE PEAKS via COTTONWOOD PASS

Arguably one of Colorado’s most aspen-laden valleys, the cozy route stretching west from Buena Vista (Cottonwood Pass Road) is bordered by the Collegiate Peaks on both sides. “The forests are shouting with color,” John Steinbeck once wrote. As you marvel at 10 the multihued flanks of the Sawatch Range, you’ll be treated to the highest section of the Rockies, with 15 peaks over 14,000 feet. For a nice picture opportunity of the Arkansas River Valley, stop at the overlook on U.S. 24 just east of Johnson Village. Launch your drive via Buena Vista.
ROCKY MOUNTAIN NATIONAL PARK Starting in quaint, touristy Estes Park, access Trail Ridge Road via U.S. Highway 34 or Beaver Meadow Road (U.S. 36). Either route joins Trail Ridge Road – the country’s highest paved federal highway, reaching 12,183 feet before descending into the upper Colorado River Valley and Grand Lake. It’s the sudden September frost that 15 produces the spectacle that exalts Coloradans and brings them out of their homes autumn after autumn. Visitors to RMNP will not only be treated to vistas of vibrant color, but also, if you’re lucky, bugling elk and otherworldly views. Trail Ridge Road typically closes mid-October to late May. Entrance fees for RMNP apply.

Dan and Susan easily start conversations with people, and they describe how sometimes the customers bring up a few urban myths about window cleaning, for instance: you should only clean in the summer, you only clean the outsides, etc. “Every customer has their favorite time of year to get their windows cleaned,” Dan says. They keep busy 12 months out of the year. “Some people just assume we only wash the outside glass,” says Dan. “Of course we clean inside and out – and suddenly they’re saying ‘Oh my gosh, it’s so much brighter!” A local family with two young kids, Daniel, 5 and Cassara, 3, and true entrepreneurs, Dan and Susan’s business has grown through genuine word of mouth testimonials and happy long time customers. GOULASH INGREDIENTS •
1¼ lb Italian turkey sausage, casings removed

1 green bell pepper, chopped
•
1 large onion, chopped
•
2 (14.5 oz) cans petite diced tomatoes
•
1 (15 oz) can Manwich BOLD Sauce
•
1½ C water
•
1 tbsp Italian seasoning
•
1 tsp garlic powder
•
2 tbsp soy sauce
•
1½ tsp smoked paprika
•
1¼ C dry elbow macaroni
•
2 tbsp fresh basil, chopped
INSTRUCTIONS •
Brown and crumble turkey sausage in a large soup pot on the stove top over medium heat.
•
Remove cooked sausage from the pot and set aside. Place onion and pepper in the pot and cook until softened, about 4 minutes.
•
Stir in tomatoes, Manwich BOLD, water, spices and seasonings (except for the fresh basil), and soy sauce. Bring to a simmer.
•
Stir in elbow macaroni, cover and let cook for 20 minutes or until the pasta is tender. Remove from the heat and allow to rest 10 minutes before serving to thicken.
