Yes, Colorado residents love the outdoors and being fit. And while we’re not all sculpted supermodels, we can get a little bit closer with a cutting edge scientific treatment by MediSpa called Coolsculpting. The Coolsculpting treatment is specifically approved by the FDA to use the term “permanent” regarding the elimination of fat cells. The results can show up in as soon as three weeks with typical results over eight weeks to ninety days as the body naturally clears the dead fat cells. Each procedure takes an hour and you can schedule this over the lunch hour without any major interruptions to your day. “It’s really convenient. You can read a book, watch Netflix, work on your computer, take a nap,” says AmyBeth. “I’ve had people take conference calls and conduct work and make business calls during the procedure. I’ve had
women in tears because they’re so happy with the results. There is no post-procedure protocol, you just go about your life. “I’ve had men who work out religiously and they have little love handles that won’t go away, they are just thrilled to remove that last little bit,” says Amy Beth. Some people come back to treat more areas after being so impressed with the first procedure. Hence the “sculpting” of your body can be as precise and noticeable as you’d like. iking with children yields some of the best memories, whether it’s gorgeous scenery or laughable mishaps. When exploring a trail as a family, remember to take your time, indulging youngster’s curiosity and their need to stop frequently. We want to foster their love and respect of the outdoors, not treat hiking like a grueling chore or something to check off a to-do list. Starting from the north metro area to the south, the following are some favorite family friendly hikes within an hour of Denver.

Barr Lake State Park A relatively flat, gravel surface trail offering an extended 9-mile loop, visitors can go as far as time and ability allow. With a nature center on site and a boardwalk out over the water, this is a family favorite. Getting There: Drive north on I-25, turning east on I-76 toward Ft. Morgan. Follow I-76 for 16.7 miles to exit 216 (Bromley Lane). Turn right, driving 1.2 miles to Picadilly Rd., marked by a sign for Barr Lake State Park. Fee: $7 daily

A trek through this cozy area is always a treat for families and kids. Of moderate difficulty because of some steep sections, the trek only sums to about 2.5 miles. The kiosk offers important route information.. Getting There: From Denver, drive west on 6th Ave. to its intersection of Hwys. 6 & 93. Take 93 north1.4 miles, turning left on Golden Gate Canyon Rd. to the park entrance.
Boulder’s Mesa Trail The 4.2-mile Big Bluestem Loop along the famed Mesa Trail is ideal for families and out of town guests not acclimated to the state’s higher elevations. While the route doesn’t offer much shade, it does yield stunning views of the Flatirons and the Devil’s Thumb rock formation. Getting There: From Denver, drive west on 6 Ave. to its intersection of Hwys. 6 & 93. Take 93 north 14.5 miles to CO 170/Eldorado Canyon Rd. Turn left and follow the road, turning right into the South Mesa Trailhead parking lot. th

South Denver’s Big Dry Creek With its water feature and playground, Cherry Knolls Park is just about a half-mile from the trailhead, making it an ideal destination for families with young children. Tall cottonwood trees frame the wide, smooth route. Getting There: Take I-25 south, exiting on University Blvd. South. Take University to park at the South Suburban/Goodson Recreation Center, just about a half mile south of Orchard Rd.

Lair O’ the Bear Park Jefferson County’s gem offers families a welcome respite from city life. Trail options include the Creekside Loop, Bear Creek and Bruin Bluff Trails. The Lookout Nature Center offers campfire programs and events throughout the summer.
Roxborough Park Fountain Valley Do avoid this non-shaded area during the hottest part of the day, but enjoy it for its 20 interpretive signs among the spectacular red rock formations the park is known for. The self-guided nature walk is easy, summing to about 2.5 miles.
Getting There: Take 6th Ave. West to Kipling. Go south 4.4 miles to Morrison Rd/Hwy. 8. Turn right (west), driving through Morrison and bear right on Hwy. 74 toward Evergreen and Kitteridge. Lair O’ the Bear Park will be on your left in about 4.5 miles.
Getting There: Take Wadsworth south past C-470 and in 5 miles turn left following the signs to Roxborough Park. Fee: $7 daily

Castlewood Canyon An ideal fall hike, this is one to enjoy with older, more experienced kids who like to be out in nature and are good with distance (3.6 miles) and elevation gain (500 feet). Getting There: Take I-25 south to exit 182, following the signs for Hwy. 86 and Franktown. Turn right toward Castle Rock and take a left on Fifth Ave. onto Hwy. 86, following the signs to Franktown. After 6.5 miles turn right on Castlewood Canyon Rd. and go about 2.5 miles to park at the Westside Trailhead. Fee: $7 daily

INGREDIENTS
T
his is a really simple dish requiring only a few ingredients,
but it’s important to use fresh lemon juice and fresh parsley to get bright flavors. The other key is to pound each chicken breast into a thin scallopine before you cook it. I’ve tried many techniques but have determined that the easiest way to do this is to place the chicken between two pieces of plastic wrap and then gently pound it from the center out with the smooth side of a meal mallet. The chicken gets a simple dip into seasoned flour, is pan seared in some extra virgin olive oil and butter, and the whole dish is finished with a splash of wine, some lemon juice and a sprinkling of parsley. Serve the chicken over a bed of rice, risotto or some egg noodles with a bit of butter on them. Easy enough for a weeknight dinner, elegant enough for company – my favorite kind of dish!

4 small boneless chicken breasts, pounded thin 1/2 cup flour, seasoned with salt and pepper 2 tablespoons extra virgin olive oil (or half butter and half oil) 1/4 cup white wine 1/2 cup freshly squeezed lemon juice 2 tablespoons butter 1 tablespoon capers, optional 2 tablespoons minced fresh parsley
INSTRUCTIONS Dredge chicken breasts in seasoned flour, then shake off any excess. Heat oil in a large skillet over medium high heat and add chicken breasts, two at a time. Cook until well browned on one side, then turn chicken and cook on second side until chicken is cooked through. Remove to a serving platter and repeat with remaining two breasts. Remove chicken to a platter and deglaze pan with wine and lemon juice, then stir in butter until melted. Add capers if using, then pour sauce over chicken and sprinkle platter with minced parsley. (Serves 4)

Peach Festival Celebrates 16 Years

A good summer harvest is the perfect reason to invite a few friends and family members over to partake of the fruits of the season’s labor.

you’re the Lafayette Chamber of Commerce, those friends and family members run in to the tens of thousands, who are all invited to sample some of the best peach products in the country, including 4,500 servings of peach cobbler, and more than 500 peach pies. The much anticipated Lafayette Peach Festival, scheduled for Saturday, August 15 in Old Town, is in its 16th year, and as always, is free to the public. More than 30,000 pounds of fresh, organic peaches will be available from local growers, along with prepared peach dishes, live entertainment and dozens of vendor booths. “There’s a little bit of everything for everyone,” said Pat Vero, Special Event Coordinator for the Lafayette Chamber. “We have people come from all over to enjoy the fun, and stock up on their peaches.” Nearly 200 local artist crafters and antique dealers will be on hand to offer a unique shopping experience, with goods ranging from paintings, sculptures and more one-of-a-kind pieces that can only be found at the annual festival. “The booths are strictly for artist crafters and antiques,” said Pat. “We have 232 spaces available for the event, and there’s always a lot of unique things to see.” Two stages will be full of live entertainment, beginning at 10 a.m. The main stage, located in the tent at Lafayette Florist, 600 S. Public Road, will feature the Boulder Friends of Jazz Club from 10 a.m to noon, and returning local favorite, The Jacob Larson Band, from 1 to 3 p.m.

Peach Festival veteran, manager and father of Jacob Larson said they are excited to return to the stage for an event that has become a family tradition. “The Peach Festival is kind of special to us, more than a regular gig. This is right in our backyard. Jacob loves the peach festival, and he loves performing for our neighbors, basically, and making people smile.” Said John. This is the second year the 10 piece funk and soul band, of which Jacob is the youngest, at 17, has performed at the festival, and John hopes it will become

a tradition. “We’re big on tradition in our family, and Jacob carries on the tradition of music, which came from his grandmother Sandy.” Kids and adults can enjoy entertainment on the KIDS’ Stage at Festival Plaza, W. Chester St. and Public Road, starting at 10:30 a.m. A Circus of Art with Jim Jackson will take place at 10:30a.m and 1p.m. Birgitta De Pree will be performing at 11:45a.m and 2:15p.m. Bonfils will be on hand for those who wish to donate blood from 9:30a.m to 3:30p.m, and the Chamber will be selling their traditional peach smoothies, with the help of Centaura’s boys’ soccer team. Martino’s will be back with their famous peach dessert pizza, and the Huckleberry will be serving up cobblers and pies. The farmer’s market will be open for fresh produce, and festival-goers will enjoy fresh baked breads, gyros, burgers and much more from the food vendors. The festival strives to be a zero-waste event, with vendors using compostable, disposable and/or recyclable containers. Last year’s event achieved a 96 percent success rate of zero waste. Patrons are asked to utilize the zero waste containers set up along Public Road. Pat says it takes a community to plan a party for 20,000 people, including volunteers, vendors and students. “We couldn’t do these events without the school groups and volunteers. It just wouldn’t be possible. Volunteers set up the entire event, assist with traffic, and then tear everything down. It’s always a great event, and everyone has a good time. I think it has become a tradition for a lot of people and their families.” Pat does offer a word of advice to festival veterans and first-timers alike, to help avoid any frustration or disappointment for those whose hearts are set on enjoying the delicious baked goods. “If you want your peaches, pies and cobbler, you better come early.”

Funds raised in the 2015 Bike Jam will be used by the Good Samaritan Foundation to purchase specialty trauma equipment, provide scholarships for first responder/EMS professional training, fund a three day “Stroke Camp” for 20 stroke survivors and care givers to learn there is life after stroke, support suicide prevention classes for adolescence and adults supporting behavior health community needs.
