APRIL 2015 • VOL. 9 • ISSUE 4 Now that our brutal Southern California winter with 14 days of measurable rain is behind us, we can breathe a sigh of relief that spring is here. This time of year reminds me of the annual Easter egg hunts my cousins and I shared at my Aunt Mary Ellen’s house in L.A. Although I have an abundance of rich memories from this annual tradition, I reaped modest rewards by today’s standards in south Orange County. When I was a kid, we wouldn’t hesitate to take a blood relative out over a foil-wrapped mini chocolate egg or even an unwanted marshmallow chick. These days, my three-year-old daughter barely appears to have the motivation to bend down the foot it takes to grab a prized Cadbury or Reese’s. As I cheer her on and shout out pointers from the sidelines, her nonchalant demeanor and haphazard skipping speaks volumes about how times have changed and perhaps how little I have. This time of year also signals the official launch of Summer Camp Season. Fortunately for busy parents and active kids, there are plenty of local options to keep the little ones engaged with safe and stimulating fun. Our 2015 Summer Camp Guide on page 12 is your resource for everything fun in the sun to becoming an entrepreneur. Opportunities to help create set pieces and costumes as well as outdoor breaks and playtime are built into the daily schedule, and the focus is on fun! “We find that the majority of kids who test-drive our program at a summer camp want to stay with us for the academic year,” Stephen reflects. “It’s very rewarding for us to be a part of the memories created here.” Future plans for the Acting Academy include securing a home for the programs for decades to come. Stephen Zygo founded Acting Academy for Kids in 2008 with the aim to provide an opportunity for children to experience the performing arts firsthand and to gain exposure to a larger world through creative expression. Stephen’s lifelong love of performing and his background as an educator led him, along with his wife and cofounder, Maggie, to develop a program that has since reached thousands of local children. Acting Academy for Kids has become a bright light in the community and a resource for families who seek enrichment in the arts. The Zygos have been rewarded with a growing legacy and have seen their vision come to life. Academy alumni now return to the theater on breaks from college to volunteer backstage, and lasting friendships that transcend school and extracurricular life have formed among students from all over Orange County. The Acting Academy offers a complete performing arts program for children ages 4 to 17, with opportunities in acting, dancing, vocal training, guitar and piano classes or private lessons. Students can also enjoy hands-on experience in set design and construction, sound engineering, lighting design and directing. Four full-scale musicals are staged every academic year in the Musical Theater Series, along with week-long summer camps that each culminate with a performance. The most recent addition to the company repertoire is Academy Voice, a brand new professional recording studio where a sound engineer can help students create their

own high-quality CDs and albums. No previous experience is required! A key component of the program’s success is the professional staff of teachers, administrators and activity directors. “We bring in artists who are also trained educators,” Maggie explains, “They each have a unique perspective and can teach the concepts in ways that allow for students to learn in the most effective way.” Students develop bonds with the staff that translate into leadership skills and a sense of personal responsibility. “Our programs ignite a fire and awaken curiosity in a child,” says Stephen. “Our staff and amazing volunteers provide support and training, and the result for the student is confidence, poise, discipline and an ability to commit fully to a team dynamic. Many of our students refer to the Acting Academy as a second home, and that’s as important as anything else we could possibly do.” Right now, the Academy is accepting enrollment for summer performing arts camps, which Maggie describes as “a one-week snapshot of the musical theatre experience.” Each week of the summer, students attend daily classes in acting, singing and dancing in preparation for a Friday afternoon performance on the main stage with full costumes and professional lighting and sound. Campers can sign up for one week, all ten, or anywhere in between, and the curriculum is geared toward kids of all levels of experience. The camps take place both at the Acting Academy’s home in San Juan Capistrano’s Camino
Acting Academy for Kids is an environment where lasting memories and longtime friendships are created. BFFs Sean Soper, Mickey Galvin and Sam Drust have grown up together at Acting Academy for Kids and all support each other’s dramatic, athletic and academic endeavors. All three students plan to pursue performing after high school. “I started [with the Academy] in fifth grade,” Sam says, “I was in one of the first shows, but my favorite was Grease.” “Me, too,” Mickey chimes in, “I joined the group later, but they immediately welcomed me in.”

Basics of Skateboarding (BOS) offers Summer Skate Camps for kids ages 3 to12 in San Clemente, Ladera Ranch and Costa Mesa. Whether you’re a three-yearold who’s never been on a skateboard, or an intermediate 12-year-old, BOS provides the guidance and instruction necessary to take your skateboarding to the next level. All campers receive direct instruction from an experienced skateboard teacher and are grouped according to ability and age. As the farm-to-table renaissance changes the local restaurant scene, patrons at El Mariachi in San Clemente have discovered the difference that pasture-raised meats, organic vegetables, sustainable seafood and a thoughtful presentation can make. Tucked away near the south end of town on El Camino Real, El Mariachi has been a local favorite since the Jimenez family opened the doors in 1996. The beach-close, family-friendly restaurant features a large outdoor patio, hand-carved chairs and elaborately painted Mexican murals. Although the setting is classic-Mexican-restaurant, the food is anything but. In an effort to bring “new” Mexican-style cooking to the kitchen, owner Rafael Jimenez recruited locally-famous chef Jose Colin (pronounced “ko-leen”) to reimagine the entire menu. Chef Colin’s philosophy is simple, “My cooking is ‘comtemporano.’ Better, fresher ingredients, flavorful sauces, and the highest quality meats are the foundations of this menu. I use Jidori chicken, Kurobuta pork and skirt steak and complement them with market-fresh vegetables and seasonings.” Voted “Top Ten Chef” in 2014 by Orange Coast Magazine, Chef Colin has created an opportunity at El Mariachi for guests to enjoy a true culinary experience close to home. My friend and I started our leisurely Saturday lunch with skinny margaritas as Javier, the General Manager, gave us the lowdown on the menu’s evolution under Chef Colin. The La Tampiquena is El Mariachi’s most popular dish. This selection is portioned for two and has all the hallmarks of Colin’s contemporano style. The flavorful and tender marinated and pan-seared skirt steak is presented on two enchiladas and topped with chunky guacamole, tri-colored tortilla ribbons and queso fresco. The enchilada sauce is light and zesty, and it doesn’t overpower the steak. The savory combination is a hearty, delicious indulgence. It's evident why this is a hit with diners. The outstanding Pollo a la Chipotle features Jidori chicken sautéed with Portobello mushrooms and onions, served over rice and drizzled with creamy, earthy chipotle mushroom sauce. The chicken’s robust flavor worked beautifully with the subtle, layered flavors of the sauce. This was perhaps my favorite. Next we sampled another Jidori chicken dish—the Pollo en Mole Poblano. Since I’m a lover of all things chocolate, I was especially interested in tasting Chef Colin’s version that’s created from over 100 ingredients. The rich and smoky sauce is the ideal combination of spicy-sweet. Fresh sautéed vegetables, including wilted spinach, zucchini, squash and onion provide balance to this well-portioned dish. Carne Asada fans rejoice—you no longer have to travel south of the border for your favorite Mexican specialty! El Mariachi’s secret is the marinade that’s soaked into the thinly-sliced skirt steak. Ingredients including dry mustard, pineapple juice and olive oil combine to enhance the meat's flavor as it is char-grilled. The carne is topped with fresh pico de gallo and grilled bell peppers—mi gusta, and you will, too. 44 APRIL 2015
