By Gary Martin ND. Iron is a vital mineral for all human beings. It is so essential for life, that even a slight variation from the optimal range can affect almost every aspect of health, including growth, immunity, energy levels and even the body’s natural detoxification process. Ironically, iron is also extremely toxic. Therefore it is crucial, that we not only consume adequate quantities of dietary iron, but that we also take care to ensure that all iron consumed can be tightly bound, handled and transported within the system without harming sensitive tissues or damaging the immune system. At a medical seminar in Brisbane, H.L. “Sam” Queen M.A., C.C.N., C.N.S., of the Institute of Health Realities in Colorado, USA, described iron like this: “Suppose iron is like a tiger. Just as tigers are strong and full of vitality, so iron is needed for might and vigour. But a tiger on the loose is very dangerous, even deadly. So too, is iron. When iron levels are unmonitored or mismanaged, the groundwork is set for degenerative disease, metastatic cancer and nearly all infections. An altered iron status may underlie almost all health conditions, from anaemia, to every

Ferritin is a spherical molecule which can hold 4500 iron ions separated by protein partitions. Serum ferritin molecules are usually made up of 63% protein and 27% iron. Overloaded and distorted ferritin molecules are referred to as hemosiderin.1 Their irregularity promotes inflammation and elevates

The copper-rich protein known as ceruloplasmin (the handler) enters the ferritin molecule (the holding cell) to release iron (Fe2+) ions (the tigers) by changing them into ferric (Fe3+) ions. They are still tigers! It is important to note that the release of stored iron can be compromised if the diet is deficient in copper and protein. Once free in the bloodstream, these ferric ions are again bound by proteins called transferrin2 (the transporters), to be

We can, however, successfully coexist with both tigers and iron when they are properly confined and monitored.” Meat, poultry, eggs and certain plant-based foods contain significant levels of iron. When these foods are consumed, the digestive system treats the iron like a zoo-keeper treats his tigers. The iron is carefully bound,

liver enzymes. This condition often occurs in those whose protein intake is so inadequate that the body is unable to make sufficient ferritin molecules. Subsequently, the ferritin molecules that are available will store extra iron in an effort to hedge against anaemia. Iron is of little value when caged in ferritin. It must be released and transferred into cells to do its

the IRON tiger cont. As a safety measure the body maintains a fleet three times the necessary number of transferrin molecules, constantly circulating throughout the bloodstream. Accordingly, no more than one third of all these transporters will be occupied at any given time, provided adequate protein is available to produce them in the first place. If a blood test reveals a transferrin saturation higher than 33% and a low total iron binding capacity reading, one would suspect the presence of free iron and a possible protein deficiency.4 Upon docking with the receptor, transferrin and its load of iron are absorbed into an endosome (a processor within the cell). The iron then separates from the tranferrin and moves into the cytoplasm (the thick liquid that holds all the intra-cellular components in suspension). Here, an iron carrier molecule shuttles the iron to mitochondria (the power supply) and intra-cellular ferritin. The ferritin molecules are absorbed by the lysosome (the sorter) where the iron is secured, synthesised and degraded. When iron is needed, enzymes in the lysosome break down the ferritinprotein shell, releasing iron for use in the production of haemoglobin and other compounds as needed.4

As we can see, the body is extremely careful in its management of this essential, yet toxic element. When iron deficiency is suspected, one needs firstly to look at protein status, as protein is the key to proper iron storage, handling and transportation. When dietary protein is inadequate, the body will either urinate iron out as quick as it is consumed or it will face the risk of a destructive assault by free unbound iron. Blood chemistry readings indicative of iron deficiency include low serum iron, low saturation percentage, low ferritin, high total iron binding capacity and low mean corpuscular volume (MCV). Over a long period, iron deficiency can result in a low haemoglobin reading, low hematocrit and low red blood cell count. In such cases, iron supplementation should be considered only when protein status is adequate, acid stress factors have been remedied and intestinal mucosa has been re-established. Otherwise iron supplementation could produce a state of free iron toxicity. If iron deficiency is suspected or diagnosed, it is important to increase the consumption of foods that are rich in iron-binding proteins, such as cultured dairy foods (rich in lactoferrin)5,6,7 and organic eggs (rich in

A diet that is high in refined carbohydrates can adversely affect iron status. Sugar, for example, can draw iron out from the ferritin and transferrin molecules, basically releasing tigers into the bloodstream. The French and other European nations traditionally eat soft cultured cheeses after consuming sweets. Basically, they are using the lactoferrins to bind up the free iron that was released by the sugars. So, if you are planning to indulge in a sweet, it is beneficial to follow it down with a piece of Brie or Camembert. In over twenty years of clinical practice, I have seen hundreds of cases

of iron deficiency that were diagnosed based only on partial iron studies. These people were given inorganic iron supplementation, such as Ferrous Gradumet, while their protein status or intake was not even addressed. The supplements increased free iron, resulting in infections, heart disease, blood disorders, cancer and other illnesses.8, 9, 10, 11, 12 Dietary iron is essential for life, but we must never forget that iron is highly toxic. The body knows how to deal with iron when nutrition is adequate. If iron status is altered, then we need to look at our lifestyle and correct the body’s terrain before flooding the system with excessive free iron. ROSS RIVER VIRUS After suffering from Ross River Virus for four months I came to Living Valley Springs after receiving positive feedback from my email enquiry. On arrival, I was suffering from debilitating pain in the feet and hands and had major problems walking around the retreat. After my first fever bath I noticed a 70% improvement and was able not only to walk to my room 2-3 times daily but also managed a 2.2km walk on consecutive days on one of the bush walking trails at the retreat. Towards the end of the 10 day program I was also able to climb to the lookout on Cooroora Mountain. After the second fever bath I improved about 95% and on returning home, have been doing things I had been unable to do for four months. Potatoes + Green Beans in Coconut Sauce, serves 3-4 from Coconut Lover’s Cookbook by Dr. Bruce Fife ND. In India this dish is called Aloo Phalli. Like many Indian curries, this recipe does not contain “curry”. Curry is a term used in the west to describe any type of Indian stew or main dish. One of the primary flavorings used in this recipe is garam masala. Garam masala is a combination of spices popularly used in Indian cooking. Like many Indian dishes this one can be made with or without meat. This recipe includes free range, organic chicken, but you can leave it out if you like. It makes a delightful vegetarian dish.

Mix together yogurt, coconut milk, garam masala, chili powder, ginger, turmeric, cumin, cardamom and salt. Set aside. Heat coconut oil in large frying pan and sauté onion until tender. Add garlic, potatoes, green beans, cauliflower and capsicum. Cook for about 10 minutes, stirring occasionally. Add chicken, cashews, and flour. Cover and cook for 3 minutes. Stir in yogurt mixture. Continue to cook, stirring occasionally, until vegetables are tender. Add coriander and cook for 1 additional minute.

My name is Werney and I live in South Africa. After a thirty year struggle with an ever-increasing range of symptoms, I found the answer to my troubles half way round the world near a tiny village called Kin Kin. Having excelled at primary school, I was later left behind by my peers. Reading and study became difficult as I could never concentrate well. For most of my life my diet consisted of high carbohydrate foods, margarine and protein substitutes. From the time my first permanent teeth appeared my mouth was a battleground of toxic dentistry. Early in adult life I endured extensive renovations to my old deteriorating amalgam fillings. Very soon, I developed symptoms of depression,

Things initially improved, but six months later I hit rock bottom with symptoms of colitis, depression, forgetfulness, inability to handle stress or make decisions, insomnia, loss of confidence, nervousness, a stiff and dead-like feeling, anger, antisocial phobia, anxiety, aching joints, liver and kidney pain and chronic fatigue. Suicide seemed like a good option. Finally my eyesight and brain concentration were affected, compromising my ability to communicate. I was useless to my business, family and society. I was only just alive. After a desperate email to Gary Martin he advised me to come to Living Valley Springs for treatment
