Fall tugs at all of our souls - even here in the lowcountry the weather seems downright cool after the dog days of summer. We begin to long for the comforts of harvest season and to venture outside with a new spring in our step as we note the (slightly) crisper, cooler air, the clearer skies and begin take part in the rituals that announce to our hearts that it’s time to shift gears. Throw pillows and porch plants go from cool blues to bright oranges, reds and golds. Fall veggies debut at the farmers market and the fair comes to town. Folks follow their football teams and kids begin to pick their halloween costumes. And how great is it when you actually have to grab a sweater when you go out for the evening instead of mosquito spray? Besides the arrival of fall, team lily has a special reason to Celebrate Fall as this is our ONE YEAR anniversary!!! It’s hard to believe how far we’ve come & how fast we’ve grown! And how overwhelmingly positive and supportive our beloved Charleston community has been to us! Thank you readers for letting us know how much you appreciate content, authenticity, originality and a true locavore spirit - you GET it… And we celebrate YOU, too! C H E E R S , L I LY

SKILLET MEAL (CHICKEN PIE): Half the crust, half the gravy, half the time, half the calories! Chopped chicken, chicken gravy, veggies of choice, ready made pie crust. Heat oven to 425 degrees. In a skillet, saute chicken pieces with garlic. Remove chicken and set aside. Add 1Tbsp butter and when melted, sprinkle with 1 Tbsp flour, whisking. Add 1 cup chicken broth and 1/2 half cup milk. Whisk slowly and heat until thickened. Add chicken and prepared veggies. Cover with one readymade pie crust. Cut slits into crust. Bake until golden brown and interior is bubbling, around 20-30 minutes.

When kids are in sports or band programs where missing a practice (even for something important) means being benched, left out or otherwise unreasonably punished or where taking extra private lessons or being on training teams for years are necessary for even being a part of a school or sport program, it’s hard to NOT be over-scheduled as a family. (Admit it. How stressed are you and your kids as a direct result of having what used to be a normal childhood activity be treated like a full time career for all of you?) And yet, extra curricular activities, being on a team and learning skills as a part of a group is a life enriching experience - and something that is as necessary for a kid’s “resume” for college as good grades. On the flip side, we know that is is absolutely crucial for EVERY family member’s wellbeing that quality time, down time and neutral communication time be a part of the equation. Team lily’s chicken wants to know why humans would cook supper in a pan that emits fumes that have been shown to kill pet birds in the house and give factory workers flu like ailments and lung issues? Okay, some some folks say Teflon pans are totally safe UNLESS you overheat them (gee that never happens in a kitchen) or unless you use some completely normal cooking utensil and it scrapes the teflon off and you must consume bits of it with your food. Or unless the pan is old enough for the coating to peel off with heat. (You never use old pans, right?) Geez. We quite agree with our wise feathered friend - better safe than sorry. Why not cook with something you KNOW is safe for you (and your pets)? Cast your cares with cast iron - a cookware that is so safe you can use pans that are a hundred years old!

DYE TO DIE FOR???

Red Dye No. 40, also known as Allura Red and Red 40 is no joke. And it’s the most common dye used in U.S. commercial food production - yet another questionable common additive that the FDA approves (insert eye-roll here). This synthetic dye (that comes from petroleum) hides everywhere so check that all-important ingredients box before you buy! The annoying thing is that there are a plethera of natural additives that are not only safe but often healthy that could be used in its place! How can you go wrong with a classic Angus burger and fries?

The Cause for Cast Iron

Season’s the Reason

Some folks love the idea of cooking with classic cast iron - most of us have some kind of old cast iron somethingor-other from a family member that goes way back. But because they hear things about having to “season” cast iron and how it gets cleaned differently, they aren’t sure where to start or if it’s worth it. Here’s how to get started with cast iron and why it’s SO worth it!

The reason cast iron cooks so beautifully and is nearly indestructible is because of being seasoned. “Seasoning” is vegetable oil (although some swear by animal fats or rubbed-in shortening) baked onto the iron at a high temperature. This creates a non toxic “easy release” texture the more you cook with your pans, the better it works, BONUS!

The Soap Dope Cleaning cast iron is easy peasy. Most of the time you can literally just wipe it out! For stuck on food, a quick soak in plain water is fine as long as you DRY the pan and wipe a bit of oil in if it gets dull. Contrary to popular belief you can use soap if you need to - just rinse thoroughly, DRY and oil.

are WAY too smart to be hoodwinked by marketing companies whose slick advertising seems to say that bottled water is better for you or better tasting than good old tap water. Yes, it’s super convenient to throw a water bottle in your bag or a ton of them into your cooler. But here are some reminders why it’s better to use a totable metal container on the go or glass at home and in the office. (We use small jam jars at the office and at our lily parties - super cheap and cute to boot!) • Here in America (and many countries) the tap water is as good as anything you buy in a bottle. (Except for that annoying flouride…) • Water is often bottled in #1 PET or PETE bottles (polyethylene terephthalate), which leach DEHA, a known carcinogen, into the water. • The bottles leak toxic additives, such as nasty phthalates, into the groundwater.

plastic bottles. Plastics numbered 3, 6 and 7 are worse; they contain Bisphenol A (BPA), which is suspected of causing neurological and behavioral problems in fetuses and children. BPA mimics the female hormone estrogen, which may have detrimental effects, including cancer of the brain, breast, and prostate, on the female reproductive system and the immune system in adults! • 4 of every 5 bottles end up in landfills, according to the Container Recycling Institute. They report that 86% of plastic water bottles used in the U.S. become garbage or litter. They end up there because incinerating used bottles produces

Are we being environmentally squeezed by the cold pressed juice movement? Like most trends, there are reasons to be cautious about jumping on the juicing bandwagon according to a recent article in Modern Farmer Magazine. We’re not ani-juicing of course. But we believe that lily readers want to know the facts before they make decisions. Here’s the deal: A single 16 oz serving of cold pressed juice generates a whopping 3.5 lbs of pulp waste on average! Why is this so bad? It’s hard to compost. This type of waste is super-quick to deteriorate and super smelly as well - that fast action creates acids that slow down the breakdown of other food wastes in the compost. Many places that would ordinarily welcome food waste for composting from restaurants or companies don’t want this pulp.

The amount of pulp from juicing that ended up in landfills last year alone is an estimated 175,000 tons! It actually contributes to global warming! The methane generated by the pulp as it decays is equal to 200,000 tons of carbon dioxide into the atmosphere! You get way less vitamins and fiber from a “healthy” juice than you do a healthy serving of veggies! There is a bright spot though - SOME juicing companies work to have less of a harmful environmental impact by using imperfect fruits and veggies that farms would otherwise discard. And there are folks in the food biz experimenting with ways to repurpose that pulp for flavoring and other uses. LOOK FOR LABELS THAT BOAST BEING MADE OF IMPERFECT MATERIALS! More calories and less nutritious than a serving of veggies

It’s time to Pansy it up! Pansies are THE go-to flower for fall and winter mixes.Their endless varieties go with any other flower, they are hearty in cold temps, old timey, bold, sweet smelling, EDIBLE and just darned adorable - admit it, they look like little faces waiting to be kissed!

Pansy flowers have been used in herbal medicine for centuries. Uses include breaking down of tumors before they turn cancerous, as a mild sedative, to ease headaches and help with dizziness (an active ingredient in pansy is salicyclic acid - which is in modern day aspirin) and the flower has antiinflammatory properties, so they are commonly used for upper respiratory infections.

Skillet Shepherd’s Pie Tip: use organic veggies and grass fed beef. This dish makes for great leftovers and freezes well too! Heat oven to 400 degrees. Cook potatoes, mash and season. Cook veggies of choice. Set aside. In skillet, brown ground beef with desired seasonings. Remove from pan, add 1Tbsp butter and when melted, sprinkle with 1 Tbsp flour, whisking. Add 1 cup beef broth and 1/2 half cup milk. Whisk and heat slowly until thickened. Add meat and veggies, top with mashed potatoes and cook until top is golden brown and interior is bubbly.

Stephen’s picks for Fall dishes: LORIEUX FRÈRES, ‘EXPRESSION’. ST NICOLAS DE BOURGUEIL A dry red, medium in body, the tannin frame is firm but not out of balance. The aromas are subtle but I’m engaged by perfume reminiscent of lavender, fresh crushed berries and herbs with hints of tobacco. I never get bored drinking this one and often crave it, but I would say its delicate subtitles make this its strength.
