A Letter From Meredith We are doing something a little different this summer by bringing you our magazine in mini form. With most of our clients in full jet set mode and so many taking well deserved vacations, this was the perfect opportunity for us to pack in some design favorites and get geared up for our largest issue ever (debuting this September). This issue gives you a look into the beautiful Mont Blanc boutiques around the world that are draped from head to toe in custom Windfall designs, a cover story on the always incredible Jonathan Browning and a venture into the global cuisine that keeps our clients coming back for more. As always, thank you for joining us each quarter as we share our latest and greatest, and we look forward to celebrating the One Year Anniversary of Ligné Magazine with you this Fall!

CAST BRONZE Exquisite and timeless are the words most often used to the describe the work of Jonathan Browning Studios, who have been creating cast bronze lighting and hardware since 2003. Owner and designer Jonathan Browning has a resume as prestigious as his collections. Graduating from the highly renowned Southern California Institute of Architecture, he went on to become the EVP of Design for Starwood Hotels and Resorts Worldwide, where he re-engineered the image of Sheraton, Westin, W, St. Regis and the Luxury Collection. It comes as no surprise that when he started his own lighting collection it was immediately embraced by the world’s leading architects and designers who have since placed his work in luxury hotels, resorts and residences across the globe.

SPOTLIGHT | SUMMER 2012 Embracing the French Industrial and Decorative Arts Era of the early 20th century, the Jonathan Browning Collection is about clean lines and bold, yet simple designs. Using the now rarely executed investment casting technique, Browning is able to achieve a level of detail so fine that it would be hard to duplicate. arms of the Americain Sconce are physical proof of the time and labor that go into these works of art. In a dramatic shift from his coveted designs in cast bronze and brass, his latest Kalmar Collection incorporates rosewood, crystal and hand-blown glass. This collection is a collaboration with Vienna based lighting firm Kalmar, whose design archive dates back to 1881. Browning created the collection by pulling from the legendary archives and re-working the designs for today’s market. The designs are sophisticated and clean signature to Browning’s style - with lines that are simple, yet unexpected when given a second look. Most intriguing is the Hallstadt Chandelier, which viewed laterally is quite uniform, but an aerial view revealing the criss cross structure that forms the round shape would suggest otherwise.

Well Seasoned

Global explorers Douglas Hutton and Jiun Ho give tasteful insight to their favorite summer dishes from around the world.

Quick Eats from Asia WRITTEN BY JIUN HO

Hainan Chicken Rice: Chile Sauce:

2-3 tbsp. fresh lemon juice 2 tbsp. chopped fresh red chiles 5 cloves garlic, chopped Salt

Chicken and Rice:

1- 2 lb. chicken 1 scallion, cut into 1-inch pieces 4 slices fresh, peeled ginger 6 tbsp. vegetable oil or olive oil 6-8 garlic cloves, finely chopped 4 c. long-grain uncooked rice 1 tsp. fine salt

Directions: Make the Chile Sauce: Combine all the ingredients in a bowl, mix well, and season with salt, to taste. Set aside.

“I love my childhood comfort food: Hainan Chicken Rice, it is a national dish of Malaysia and Singapore. During my recent visit to Singapore I had it every day; it cost two dollars. Singapore is famous for their food courts, my favorite place to have Hainan Chicken Rice is at the Maxwell food court. This dish pairs perfectly with a 2007 New Zealand Marlborough Sauvignon Blanc or a 2009 Ken Forrester Cape Breeze Chenin Blanc”.

Make the Chicken and Rice: Bring a large pot of salted water to a boil (enough water to immerse the chicken). Stuff the cavity of the chicken with the scallion and ginger. Add the chicken to the boiling water, breast side-down. Lower the heat to a simmer just under boiling point and cook, covered, until just cooked through, about 40 minutes. Transfer the chicken to an ice water bath for 5-6 minutes. Drain. De-bone the chicken and cut into bite-sized pieces. Reserve the chicken stock, and keep hot. Heat the oil in a wok or saucepan over high heat. Add the garlic and stir-fry until fragrant. Add the rice and stir-fry for 1-2 minutes. Add enough of the hot reserved chicken soup to reach 1/2- inch above the top of the rice. Bring to a boil, add the salt, and lower the heat to low. When steam holes form in the rice, cover the wok, and steam until cooked, about 30 minutes. Whisk 1/4 cup of the hot chicken stock into the chile sauce. Arrange the rice and poached chicken on a platter and drizzle with the chile sauce.

Iconic Italian Seafood WRITTEN BY DOUGLAS HUTTON “My favorite meal in Europe in the summer is the Pesce Crudo followed by the Misto di Mare and then the Risotto at Ai Frati in Murano. It starts with with fresh sliced raw fish, olive oil and sel de mer. The young fruity olive oil is the perfect compliment to the subtle flavor of the raw seasonal fish. The rock salt replaces the soy sauce in the traditional Japanese version of the dish called sashimi.

Ingredients:

Next is a mixed plate of local Gambas, (I've never seen them anywhere else), seasoned bay scallops in the shell, pink shrimp, and a fish salad. Finally we have the Risotto in a cuttle fish sauce. A deliciously subtle but earthy flavor similar to bottom feeders like catfish. The risotto is perfectly cooked and served scalding. Eat around the edges. The crudo goes very well with the house prosecco while the primi and secondi are perfectly matched with the house white which is a locally made zesty Friulli from the Friulli-Venezia-Giulia hills. "Giulia" referring to Julius of Julius Caesar who I was told incorporated his name because he enjoyed the wine.

Directions:

Bring 6 quarts water to boil and set up ice bath. Cook the shrimp for 1 1/2 minutes and plunge into the ice bath. Cook scampi for 1 minute, and plunge into the ice bath. Cook the calamari 1 minute and do the same. Cook lobster for 8 minutes and then cool in ice bath. In a large saute pan, place the mussels and clams with 1 cup of water and bring to a boil. Cover and steam, removing each shellfish as it opens. Discard those shellfish that do not open. Keeping each type of shellfish separate, dress each individually with 1 to 2 tablespoons extra virgin olive oil, a touch of lemon juice, a pinch of chile flakes and 1 to 2 tablespoons parsley and salt and pepper, to taste. Do the same with the crabmeat. Arrange all the seafood on a big platter. Garnish with lemon wedges and serve.
