Dump the diets and make food fun again with quick, achievable and healthy food! This is the message that Callum Hann and Themis Chryssidis will be promoting when they launch their cookbook “Quick.Easy.Healthy.” with the Mount Gambier Library this Thursday. Callum Hann was the runnerup on the 2010 series of MasterChef and won the 2012 MasterChef All Stars. Callum has become a frequent visitor to the region, with previous book launches at the Mount Gambier Library and his involvement in the Jamie Oliver’s school based Home Cooking Skills Program. Themis Chryssidis, a fellow South Australian, is a dedicated and passionate dietitian and health professional and has helped countless people change their lives. Together, Callum and Themis run Sprout Cooking School in Adelaide, with the Sprout Health Studio. “The first cooking class we ever conducted at Sprout Cooking School was called Quick, Easy & Healthy,” said Callum. “Five years on, it remains our most popular course! It is what so many of us want, and in fact, need; healthy food for ourselves and families with minimal effort – all day, every day. And so together we decided to collate our recipes for everyone to use.” In Quick.Easy. Healthy. Callum and Themis present more than 70 recipes that use only easy to find ingredients, require minimal preparation and clean-up time and represent good value for money. “As a chef and dietitian, we don’t believe in health products, superfoods or diets or strict eating plans. We believe that learning to cook helps build healthy habits and a better understanding of what we are putting into our bodies,” said Callum Hann.The key to their food philosophy is providing useful and relevant information along with achievable and enjoyable recipes. With only 225 litres of the 2014 vintage up grabs (one barrique), the unique blend of Grampians Winemakers Shiraz is sure to be hotly contested. Best’s winemaker, Justin Purser was the man in-charge of the 2014 Shiraz blend that includes wine from Montara, Best’s Great Western, Seppelt, Grampians Estate, Mount Langi Ghiran, AT Richardson wines and Clarnette & Ludvigsen. Justin describes the wine as, “Vibrant dark red. Black olive gives way to fragrant spices, blue fruits and cool mint with subtle oak. Cool red and blue fruit flavours on the palate held by a fine line and length through the palate.� At a recent back-vintage tasting (2003-2014) of the Grampians Winemakers Reserve Shiraz with wine critics in Melbourne the 2014 vintage was a sure-fire stand out. Each year producers from the Grampians region donate a quantity of their own Shiraz wine from the previous year’s vintage to produce a unique Barrique of Grampians Reserve Shiraz which is auctioned during the first day of the Grampians Grape Escape festival weekend. Students at All Saints Primary School are being encouraged to become more physically active and to make better use of their playground equipment. The health promotion team at Portland District Health has been working with the school to develop a comprehensive set of instructions and activity cards for using indoor and outdoor play equipment. The result has been a great success. “The kids love them,” All Saints Primary School assistant principal Berkley Muldoon said. “They are easy to follow and innovative with the activities.” Portland District Health’s Exercise Physiologist Amy Goetz, as part of the SEA Change project, has been working with the school to increase the physical activity levels of students. “Being physically active and outdoors has always been a part of the Australian lifestyle; however in recent years this hasn’t been the case,” Ms Goetz said. “Australian children are less active than in the past with only one third of children meeting daily physical activity guidelines.” Inactivity in children can lead to weight gain and the number of overweight children in Australia has more than doubled in recent years. Overweight and inactive children are at a higher risk of developing health problems at an earlier age, such as type 2 diabetes, eating disorders, orthopaedic disorders, liver problems, respiratory disorders, sleep apnoea and cardiomyopathy. Children aged 5-12 years should accumulate at least 60 minutes of moderate to vigorous intensity physical activity every day, engage in activities that strengthen muscle and bone, and limit use of electronic media for entertainment to no more than two hours a day. Ms Goetz said schools are in a great position to help achieve these goals. The sessions are run by teachers who are provided with detailed instructions, utilising the school’s sporting equipment, playgrounds and indoor and outdoor open spaces. PDH health promotion team leader Lindy Stuchbery said the card system was allowing the school to better utilise their equipment and outdoor facilities. “It creates a circuit of activities, including a warm-up and cool-down, and is tailored to suit the school environment and give children a variety of options for making the best use of the school’s resources.” Ms Muldoon said the children have taken ownership of the activities. “That’s because they know the cards have been made for them,” he said. “The older children have used them to instruct younger children and the cards have been designed for our school environment which caters for our particular needs.”

Elsie Mitchell is emerging from her latest fight for life with her smile intact. However, the pressure of dealing with three major life-threatening health scares is starting to take its toll on her Warrnambool family and an online funding appeal has been launched to help. Elsie was diagnosed with Down Syndrome at 20 weeks gestation after genetic screening, meaning her parents Anthony and Geraldine needed to travel between Warrnambool and hospitals in Melbourne for repeated ultrasounds. The situation was further complicated when Anthony and Geraldine discovered their baby girl had a serious heart issue and would require surgery in her first few months. After her birth Elsie returned home to Warrnambool before her heart surgery at three months. She required round-theclock parental care, feeding and isolation to avoid any illness due to her weak immune system, all of which represented grave risks to her. “She got through her heart surgery and we went home thinking we’d been through the worst of it,” Anthony said. However, the

biggest challenge was yet to come. On Christmas Eve 2015 Elsie was diagnosed with Leukaemia (AML) and the family was told she would have to stay in Melbourne for treatment for six to eight months. By this time Geraldine was 32 weeks pregnant but the family including older son Archie had to relocate. “After we got over the initial shock we came to terms with what a diagnosis of Leukaemia meant,” Anthony said. “We will not be home as a family for quite a while.” After moving between family and emergency accommodation they rented a house close to the hospital. “We welcomed our third child to the world in February a long way from home and our five-year-old son has had to start prep at a local school,” Anthony said. NEW FINANCIAL PROGRAM FOR PRODUCERS A new financial management program for Limestone Coast red meat producers is set to get underway this month. The Limestone Coast Red Meat Cluster (LCRMC), in conjunction with business management consultancy ProAdvice, has developed the program to build stronger red meat production businesses in the region. There are only three ways to improve profitability in any business, according to program presenter Chris Scheid of ProAdvice. “You can increase turnover, reduce overheads and improve the gross margins,” said Chris. “When I work with businesses facing profit problems, I find that many producers are on an automatic pathway of expansion by increasing production,” Chris explains. “But if their enterprise gross margins are poor or if there are too many overheads like labour or machinery then expansion can just make their profitability worse.” The key, according to Chris, is to know which of the three secrets is holding your business profitability back. “This financial management program will teach red meat producers how to calculate key ratios, provide some comparison benchmarks and support the business decision makers in taking action to improve their profitability,”

he said. Known as ‘A Better Red Meat Business by Your Design’, the program comprises four one-day workshops in Naracoorte between April and July, as well as mentoring from experienced red meat producers who have already made changes to their businesses and improved their profitability. The LCRMC has developed the program’s benchmarks specifically for red meat production businesses in the Limestone Coast through analysis of wide-ranging industry data including National Livestock Identification Scheme, PIRSA, ABARES and Australian Bureau of Statistics. This is the first time data from these sources have been accessed, brought together and analysed in this way. Heat 1 tsp oil in a non-stick 21cm (base measurement) ovenproof frying pan over medium-low heat. Add garlic. Cook, stirring, for 30 seconds or until aromatic. Add spinach and cook, stirring, for 2 minutes until wilted. Transfer to a sieve set over a bowl to drain. Heat 1 tsp oil in pan over medium-high heat. Add zucchini.

Cook, stirring, for 3 minutes or until just tender. Season. Transfer to a plate. Microwave rice for 30 seconds or until grains just separate. Whisk eggs, yoghurt, shallot, lemon rind and 1 tbs juice in a bowl. Chop threequarters of the dill. Add rice, mint, spinach mixture, chopped dill and half the feta and zucchini. Season. Heat remaining oil in pan over low heat. Add egg mixture. Cook, shaking pan occasionally, for 6 minutes or until just beginning to set. Top with remaining zucchini, dill and feta. Bake for 25 minutes or until just set.

OLYMPIC CHAMPION TO ATTEND MOVIE SCREENING

Australian Olympic champion Lydia Lassila will be in Warrnambool later this month for a one-night screening of a film chronicling her inspirational life. Kathleen Millikan Centre’s new coordinator plans to use her more than 20 years’ experience in administration and human resources to further strengthen the centre’s early learning program. Tracey Gould, who resides in Coleraine with her partner and two young children, previously worked in the Glenelg Shire Council human resources team. She said she was enjoying the transition into early learning, using her extensive experience delivering digital learning programs. “We are incredibly fortunate to have such an amazing facility in Casterton, and I look forward to being part of a dedicated team of educators providing high quality care for our future leaders of the community,” she said. “I look forward to working and getting to know the wider community, educating the public about the innovative services we offer at KMC.” After relocating to the south-west in 2004 from Melbourne, Ms Gould joined Western District Health Service as the education manager, before transitioning into business support and development. This role had a particular emphasis on the development of e-learning courses across the region’s heath care network. The Kathleen Millikan Centre offers both three and four-year-old kindergarten programs , long day care, occasional care, before and after kinder/school care, school holiday programs, and maternal and child health services. Ms Gould said the centre currently had 37 kindergarten enrolments with pupils busily preparing for next week’s Responsible Pet program, a day which provides education about the importance of caring for domestic animals. “KMC is always a hub of activity with plans being made for National Families Week celebrations from May 15 to 21 and the launch of Casterton’s now infamous Reading Egg initiative on May 26,” Ms Gould said. “These events are not just for mums and dads; we encourage all family members and friends to visit the centre and join the festivities,

EASY PARKING SOLUTION FOR CHEMO PATIENTS People undergoing life-saving chemotherapy and dialysis treatment at Portland District Health (PDH) can now rest easy about parking. PDH and Glenelg Shire Council have joined forces to introduce parking passes for patients who are undergoing treatment. The passes will allow patients to stay in the two-hour parks close to the hospital entrance for up to 24 hours and not be fined. Lisa Barby Acting Nursing Unit Manager for the dialysis and chemotherapy unit, Lisa Barby, said the new permit system removed a potential source of stress for patients. “Some patients come in for longer treatments, some drive themselves and some come from out of town and need to stay for more than the normal two hour parks,” Ms Barby said. “Treatment times can vary and some chemo patients may be here all day,” she said. “It was difficult for people to find somewhere to park.” There are now 10 parking permits available to be displayed on car windscreens while patients are in hospital for treatment. PDH is keeping a log book of the permits and will inform patients about the service. Glenelg Shire Council CEO Greg Burgoyne said the council was pleased to provide patients with free parking. “It is difficult enough for patients having treatment which can be an emotional and stressful time and parking should be as easy as possible” he said.

Honey ricotta crepes 150g reduced-fat fresh ricotta cheese 1 lemon, rind finely grated, cut into wedges 2 tablespoons honey 3/4 teaspoon ground cinnamon 3/4 cup plain flour 3/4 cup skim milk 1 egg olive oil cooking spray Method Combine ricotta, lemon rind, 1 tablespoon honey and 1/2 teaspoon cinnamon in a bowl. Sift flour into a bowl. Whisk milk and egg together

in a jug. Add to flour. Whisk until well combined. Spray a small, non-stick frying pan with oil and heat over medium heat. Pour 2 1/2 tablespoons batter into pan, swirling around to cover base. Cook for 2 to 3 minutes or until light golden. Turn and cook for a further 1 minute. Transfer to a clean tea towel. Cover to keep warm. Repeat with remaining batter. Spread 1 tablespoon ricotta mixture over each crepe. Roll to enclose filling. Drizzle with remaining honey. Sprinkle with remaining cinnamon and serve with lemon wedges.

SOUTH EAST WINNER OF INAUGURAL ARTS SCHOLARSHIP The winner of the inaugural Nathaniel O’Brien Class of Cabaret Scholarship 2016 has been announced for the South East, with local high school student Reilly Muller taking the prize alongside Zara Nicholson in the Riverland and Murraylands. Reilly has annually participated in the Mount Gambier Singing Eisteddfods and Choral Showcase alongside involvement and performances with numerous other vocal groups in the area. “I feel that this cabaret scholarship will expand my performance experience in a way that will benefit my long term career prospects by exposing me to the world of cabaret,” said Reilly. The scholarship winners each have the opportunity to perform at the Adelaide Cabaret Festival Roadshow in their home region of either the South East or the Riverland

and Murraylands. They will receive express entry into the 2017 Adelaide Cabaret Festival Class of Cabaret program, assistance with travel and accommodation and private tuition from one of Adelaide’s leading vocal teachers. The prize is named after Nathaniel O’Brien (pictured), a Class of Cabaret participant in 2013, Class of Grads in 2014 and X Factor contestant, who died tragically on a regional SA road near Burra in late 2015. Nathaniel was very supportive of other young and fellow artists at the start of their career. He loved music and performing and this Scholarship honours his life and dedication to music.Tickets are still available for the Roadshow which will also feature the Scholarship winner. “We are looking at ramping up other ideas such as screening for autism, alcohol and other drug services, and youth and family counselling.” The suite consists of 18 consultation rooms, two physio treatment rooms, 2 medical treatment rooms along with an open designed large reception and waiting room. NEW CONSULTING ROOMS SET TO OPEN Portland District Health’s new-look and newly-named integrated health consulting suites will be officially opened this week. Member for Western Victoria Gayle Tierney will open the refurbished former primary and community health precinct which is already proving to be popular with

patients and could lead to expanded services in Portland.Ms Tierney will open the $485,000 project, now called the Portland District Health Consulting Suite, between 10am11am on April 22. PDH received State Government funding for the project which was supplemented by philanthropic support for additional works such as video conferencing. Director of Primary and Community Health, Fiona Heenan, said the new area was working well and integrated allied health, specialist and community consulting services and programs in a newly refurbished building. It has also created more

The Browning Street based supplier of aluminium windows and doors, which services the Green Triangle region, was also winner of the Manufacturing Trades or Construction category at last night’s gala awards ceremony at the Portland Golf Club. More than 160 guests celebrated the new-look award program which recognised the Glenelg Shire’s business and tourism elite across 13 categories. Glenelg Shire Mayor Cr Max Oberlander said Portland Aluminium and Glass, operated by Gavin and Doreen Symes, had expanded their operation to include a Warrnambool showroom in recent years. He said the business focused on providing customers with a “showroom experience”, using various digital mediums to broaden their marketing power. “This innovative operation, which has been part of the Portland business landscape for 27 years, is continuing to look at ways to open new trade opportunities whilst delivering high quality products. Gavin, Doreen and their hard-working team are focused on service delivery whilst providing a caring work environment which focuses on staff development,” Cr Oberlander said. Portland Aluminium and Glass’ talented sales and administration officer Kristine Godfrey was among the evening’s award winners, named the Young Achiever of the Year. Three South East born and bred players have been an integral part of the championship winning South Australian Under 17 netball team that went throughlast week’s national titles undefeated, taking the crown with a five goal victory over New South Wales. Former Western Border netballer Mary Wilson (left) skippered the side and played goal attack and goal shooter throughout the tournament, while former KNT player Maisie Nankivell (centre) was her deputy and was the team’s starting centre and a model of consistenby, while Western Border defender Sienna Allen (right) has capped off an astonishing rise to prominence to be the key defender for the SA team at goal keeper. And the synergy of Allen being part of this championship winning team 25 years after her mother Nicola Allen (Day) was part of a championship team just added to the moment. Local Sport ATHELTICS - Medal haul at State Individual Titles Local athlete Sam Dukalskis is off to the Australian Little Athletics competition this weekend as part of the South Australan Under 13 State team following his performance at the recent State Individual Championships. Sam jumped a new personal best of 1.65m in the Under 13 High Jump to win the event. A member of the Mount Gambier Districts Little Athletics Centre, Sam was joined by 20 other athletes in all to compete in the top level competition, bringing home 20 medals which included five goal, 10 silver and five bronze. The event was held last month over three days, with a number of athletes also returning home with new personal best times. RESULTS

FOOTBALL - Major sponsor secured The South East Zone Carnival has become a major event on the local football calendar and it now has a major sponsor to match with Infigen Energy signing up to the football tri-series ahead of the 2016 even on June 11 & 12. The 2016 carnival will be hosted by the Kowree Naracoorte Tatiara Football League at the Naracoorte Football Oval, with the senior and Under 17 competition on Saturday, June 11, and the remaining junior events on Sunday, June 12. The carnival has grown since its inception in 2014 with the three football leagues in the South East - Kowree Naracoorte Tatiara Football League, Mid South East Football League and Western Border Football League - competing for zone honours. Each league hosts the carnival on a rotation basis with the carnival returning to being hosted by the WBFL next year. The carnival concept has each league compete at Under 17 and senior levels with the top two sides playing off in the grand final. There is an award for the player of the carnival for the Under 17 and senior teams. Games are played in two halves to follow the State championship format. At the completion of the carnival players will be named in the training squad for the Murray South East team to play in the South Australian Country Championships which will be held in Port Lincoln on July 9 and 10. The Infigen Energy sponsorship will help alleviate some of the cost pressures of running the carnival and help strengthen its future and allow for the June long weekend to become a real festival of football. The matching of Infigen Energy which supports various community groups that play an important role in making life better, healthier and safer for individuals and their communities with this great community event that organisers hope will be of mutual benefit to both parties. Infigen Energy runs both the Lake Bonney and Woakwine wind farms.

COLLECTED STUPIDITY - I’M A SIMPLE MAN... by Robbie Tansel Do you ever think about how the world has changed over the last thirty five years? I guess that depends a little on how old you are. If you’re only fifteen, you probably don’t think about that much because you weren’t there. If you’re only fifteen, I doubt you’re reading this because you’re too busy Facespacing and Instatweetchatting anyway. You don’t have time to read my rubbish. Thirtty five years ago nobody did the social media thing, that’s for sure. If you were lucky you might have had a computer but it certainly didn’t do the things it does now. In fact I’m not sure that it really did anything. They took up a lot more room than they do now. You had to set aside an entire room to house the device. You weren’t carrying them around the house or putting them on your lap. A computer wasn’t really an entertainment device. As I remember it was primarily a glorified typewriter. The great news though was that you could choose between three fonts printed

I wouldn’t want to even start estimating how long I spend each day choosing between fonts. Arial or Calibri? Belwe Bd BT, Belwe Cn Bt or Belwe Lt BT? Wingdings 1 or Wingdings 2? Do I want my Franklin Gothic heavy or medium? I really think we have far too many fonts these days. Being a parent must have been a lot simpler thirty five years ago too. Pretty much every problem you had with your children could be solved by breaking a wooden spoon on a kitchen bench. “Don’t make me come over there…” Whack spoon on bench to emphasise threat. Try to stop self from laughing and maintain seriousness of moment. Is there any house in Australia that didn’t have a splintered wooden spoon in the utensil draw? Car trips were different thirty five years ago compared to today. Back then the most fun a child could have on a road trip came from annoying your siblings or winding your windows up and down. Winding, not pressing a button. A parent wouldn’t think of driving somewhere these days without DVD players in the back of the front seat headrests or an iPad in the youngsters’ laps. Children require expensive entertainment at all times. What did you do for fun as a youngster? There were about three possibilities. Option one. Board games. They’ve actually changed the name of board games recently because everything else is so much more exciting now. They’re now called bored games. Option two. Go outside. That was the phrase your mum used to say when you had been

a little too rambunctious in the house. What you got up to out there was up to you. You could play cricket. Ride your bike. Climb a tree. These are things that once again modern mums won’t let their children do without extensive paperwork and a wide variety of safety precautions. Most jobs have changed dramatically over the last thirty five years as well. These days most jobs are more paperwork than actually performing the job. Twenty five years ago you could be a treecutter and cut a tree down without filling out a novel’s worth of forms. You could just do your job, get a saw out and cut. If you happened to accidentally cut off a limb (from your body, not a tree I mean), that wouldn’t have involved paper work. It would have only involved your mates christening you with a new nickname: Lefty. What about teachers? They had the best job in the world a few decades ago. If someone annoyed you, you could hit them. You could hit them with a big long stick if you wanted. You could even throw a blackboard duster at them. And then you got twelve weeks of holidays. Best.
