demi glace adds decadent indulgence. A rotating selection of high-quality Butcher’s Cut steaks range from prime bone-in Kansas city strip loin to a 16-ounce dry-aged rib eye, and more exotic, hard-to-find game meats such as antelope and elk will be making an appearance in the near future.

Temptingly accessorized appetizers run the gamut from seafood and meat to vegetarian items, including Roasted Beets with shallots, horseradish crème fraîche and taro chips (see recipe on page 96). Two long-standing favorites, Crab & Mango Spring Rolls and Chicken Dumplings, are also served at sister-restaurant ZEST. The recent relaunch of lunch incorporates diverse sandwiches on the midday menu.

All of these choices may be savored in the ambiance of your choosing: The easy-going elegance of the original vintage restaurant and bar attracts a businesscasual crowd, and the industrial-rustic chic vibe of the airy loft, which includes mezzanine dining and a wrap-around bar and lounge, provides more casual socializing. Glass walls on the year-round covered porch fold back for seasonal open-air dining and lead to a patio. An adjacent tent offers additional dining space and can host private events when inviting spring weather arrives.
