Catering courses for your workforce 2010/2011


Lakes College offers the following Catering Courses at the main Lillyhall site and can also offer the qualification for up to 12 learners at your individual premises.

Food Safety in Catering Level 2 What’s on the Course?

How long does it take?

1 day programme, offered at Lakes College, within industry or out in the community. .

Introduction to food safety Current food safety law Food safety hazards Food storage and temperature control, hot holding, cold holding, reheating food. — Cleaning — Pest Control — Food Handlers Principles of safe storage By the end of the course you should be able to understand and appreciate the fundamentals of good food hygiene practices to comply with the latest food hygiene legislation.

When does it start? Dates, costs and times can be arranged to suit individual groups of up to 12 learners.

Who is it suitable for? Anyone working within the industry where food is prepared cooked and handled. i.e. Pubs, hotels, restaraunt, hospitals, care homes, schools, prisons.

Supervising Food Safety in Catering Level 3 What’s on the Course? — Introduction to food safety — Current food safety legislation • Applying and monitoring good hygiene practice — Temperature Control — Workplace and equipment design • Waste disposal, cleaning and disinfection — Pest Control — Personal hygiene of staff — Contribution to staff training — Implementation of food safety management procedures — Food safety management tools By the end of the course you should be able to understand and appreciate the fundamentals of good food hygiene practices to comply with the latest food hygiene legislation.

How long does it take? 18 hours course, delivered 1 day per week over 3 weeks. Offered at Lakes College, within industry or out in the community.

When does it start? Dates, costs and times can be arranged to suit individual groups of up to 12 learners.

Who is it suitable for? Anyone with a supervisory role within Catering and Hospitality

Personal License Holder – National Certificate What’s on the Course?

How will I be assessed?

— The roles, responsibilities and functions of the licensing authorities — The application process — The role and legal requirements of the licence holder and the penalties relating to failure to comply — The premises licence — The content and purpose of operating schedules — The role and duties of designated premises supervisor — Unauthorised licensable activities — Permitted temporary licensable activities — Rights of entry to licensed premises — Police powers — The specific prohibitions — The strengths and effects of alcoholic drinks — The protection of children from harm — The responsible retail sale of alcohol

Assessment will be in the form of a 40 minute exam consisting of 40 multiple choice questions and the pass mark is 28 out of 40
