Brown Butter & Toasted Coconut Rice Krispies Holiday desserts fall into two camps- routine, and mythical. Each year you have to suffer through apple pies with gummy undercooked crusts and depressingly stale gingerbread men at cookie swaps. You nibble politely and tuck the offending “treats” under napkins and hope that no one spots you. Luckily, it’s pretty easy to climb off the struggle bus and prepare an easy treat that your friends and family won’t forget. Rice Krispies might be a staple of elementary school lunch boxes, but the addition of toasted coconut and brown butter give this recipe grown-up edge.

INGREDIENTS 4 Tablespoons Unsalted Butter 1 10.5 oz Bag of Marshmallows 6 Cups Rice Krispies Cereal 1 Cup Shredded Coconut 2 Teaspoons Malibu Coconut Rum (optional) DIRECTIONS Before starting, coat an 8x 8 pan with non-stick spray, and set aside. Preheat the oven to 350 and line an additional cookie sheet with parchment paper. Once the oven has preheated, spread the coconut in a thin layer on the cookie sheet and bake for about 10 minutes, or until the coconut starts to brown. Take out of the oven and set aside to cool. Use a large saucepan to melt the butter on medium-low heat, until the butter starts to foam and turns golden color. Keep a close eye on the pan, because the butter can go from browned to burnt very quickly. Lower the heat and stir in marshmallows until smoothly melted, followed by the rum and toasted coconut. Once the coconut is incorporated into the marshmallow, take the mixture off the heat and stir in the Rice Krispies cereal. Pour the finished mixture into the 8 x 8 pan and let the treats cool. Once the pan has cooled, cut into bars and get ready to be showered with compliments.


A New Kind of New Year's Resolution By Carole Ann Penney 2015 is just around the corner. As a life coach, I love the energy of the New Year - reflecting on what came before, and the blank slate of knowing that we’re on the precipice of a new beginning. I love how it pulls us toward a vision of our best selves, and carries with it a sense of possibility. So much can happen in a year. And so, the buzz about New Years resolutions has already begun. A few years ago, I abandoned this practice of setting goals in January on how I wanted to be different. I was tired of getting to March and already losing sight of my list of aspirations, and beating myself up in July for not making greater strides. I was tired of making (and not really accomplishing) the same resolutions each year. There is a time and a place for goal setting, but I believe coming off of the hectic holidays is not that time! Instead, I have a new resolution practice that focuses more on a sense of openness and possibility: choosing a guiding word for the year. Unlike New

Years resolutions, which are about what you want to do in the year, a guiding word is about how you want to be -- How do you want to feel? How do you want to show up to your life? What do you want to be tuned into? This year, my coaching clients chose guiding words like: authenticity, freedom, dedication, adventure, and even simply “yes.” They each looked for opportunities to embody and connect with their guiding word, and they used their word as a tool to help them make decisions. When faced with a tough choice about a job opportunity, I asked client, “If this year is about freedom for you, where is the freedom in this situation?” A guiding word pulls you toward your vision of how you want to move through your year, but leaves room for surprises. Here’s how you can choose a word that will set the tone for your 2015:

Setting Attainable Goals in the New Year Statistics show that most people don’t stick to their New Year’s resolutions but you can beat the odds. While you can of course make resolutions for change any time of year, the New Year brings a fresh new-start energy and momentum that invites change. Making a successful resolution begins with your frame of mind. Here are a few tips to support YOU in resolution success this year: Set Your Intentions How do you want this year to be different from last year? What changes would you like to see? What is your heart longing for more of, or less of? This isn’t a dress rehearsal - it’s your life. What do you want to experience? Write it down. Then … Activate the Power of Decision Be specific about what you are setting out to accomplish. Getting clear on how you will know when you have fully achieved your intention or resolution is key to success. Too often people sabotage their goals and dreams by being vague about what they are looking to create or achieve. Be specific at the start about what success will look like for you and you’ll know with clarity when it’s time to celebrate! Determining your end point at the start is a gift you give to yourself. Answer “Why?” Before taking action on your resolution, get clear on what is at the heart of your motivation. Check in to be sure it’s not a “should” or something someone else wants for you. Why do YOU want this? By getting clear on your “why” at the start, in the event that you do get off track, you’ll be able to quickly reconnect to your resolution fuel.

Who says cookie swaps can’t have healthy options? And who says healthy can’t also be delicious? You don’t have to be a health nut to enjoy these no-bake, gluten free vegan treats. They take minutes to prepare, you can get as creative as you’d like with add-ins, and they are packed with nutrients, fiber, and healthy fats - great fuel for athletes especially! The two key ingredients for these scrumptious treats are dried fruit (medjool dates or figs work best) and nuts or seeds. For every ½ cup of nuts or seeds you’ll want about 4 large dates or figs. Play around with the proportions, and from there you can experiment with other add-ins. The recipe below is my favorite combination: - 12 large medjool dates, pitted (make sure all pits are removed!) - 1/3 cup shredded unsweetened coconut (optional, don't think it needed it) - 1 cup raw unsalted cashews, almonds, or sunflower seeds - 1/4 cup raw pumpkin seeds - 3 tbsp chia seeds Dump everything in food processor and pulse, then blend on high for 2-3 minutes. You should be able to form a ball with the mixture; if it's too crumbly, add in more dates; add in more nuts or seeds if it seems too sticky. Dump the mixture into a glass pan and mash it with your palm to even it out and refrigerate for a couple of hours. Later, cut it into bars, go crazy with cookie cutters, or roll into little balls. Store covered in the fridge. Add-ins: Dark chocolate chips, dried cranberries, chopped dried apricot, protein powder, cacao powder or nibs, spirulina; coat with shredded unsweetened coconut or sesame seeds, etc. You could even dip these in or drizzle with dark chocolate and then freeze them for the ultimate treat. For optimum health benefits, choose only organic dried fruits, raw nuts and seeds (soaked is best), and choose organic chocolate with at least 70% cacao.
