Shhh…I’m about to tell you one of my deepest, sweetest secrets. I love honey. Not just at Rosh Hashanah, either. My fam is totally obsessed with it all year long. Why? It’s super sweet and adds so much flavor and moisture to any and everything you make with it. Now, let’s talk about honey. I totally thought all honey was the same. And then I tasted Nature Nate’s. Inspired, I set out to create some easy, family-friendly recipes that are elegant enough for the holiday, but easy enough that your kids can make them (I love those little honey sticky fingers in the kitchen!) So I’m super excited to share 5 of my secret honey recipes. Ones that I’ll be making this New Year and, to be honest, even after. (We all need a little Honey Chocolate Ganache in our lives.) Why Honey is Better than Processed Sugar On the surface, it seems that processed sugar is a better choice; at 45 calories and 12 grams of sugar. And while raw and unfiltered honey has slightly more calories and sugar, it has something that table sugar doesn’t: nutritional value. Just as your body breaks down the sugars in apples and cookies differently, it does the same for raw and unfiltered honey vs. processed sugar. Your body benefits from raw honey's trace vitamins and mineral content, where processed sugar just provides empty calories for your body. Ultimately sugar is sugar. Too much of any sugar in a diet can lead to health issues. Honey Chocolate Ganache yield 3/4 cup | prep time 5 minutes | cook time 5 minutes

ingredients

5 ounces bittersweet chocolate

2 tablespoons extra virgin olive oil 2 tablespoons Nature Nate's Raw & Unfiltered honey

directions

1. In a bowl over simmering water, stir together chocolate, evoo, and honey until smooth and combined. 2. Use glaze while warm, or cool completely overnight in refrigerator and then using a mixer fitted with whisk, whip at medium speed until light and fluffy. Spread on cake as a frosting. Use ganache to spread over cupcakes, use as a dip for apples or roll into decadent truffles. Autumnal Plum Galette serves 8 | prep time 80 minutes | cook time 50 minutes

Honey Glaze

ingredients

CRUST 1 cup all-purpose flour + a small amount for rolling out crust

GALETTE 2 pounds ripe plums, halved and pitted

½ teaspoon kosher or sea salt

1/3 cup Nature Nate's Raw & Unfiltered honey

2 teaspoons Nature Nate's Raw & Unfiltered honey

2 tablespoons cornstarch

6 tablespoons cold unsalted butter or vegan butter, cut into ½-inch pieces

2 teaspoons lemon zest

1 egg yolk

Honey Glaze (pg. 6)

¼ cup ice water

1 tablespoon fresh lemon juice

directions

CRUST 1. In a food processor, pulse flour, salt, honey, butter, and egg yolk until mixture resembles coarse meal. 2. With the motor running, add water 1 teaspoon at a time until dough forms a ball and clings together (you may not need all the water). 3. Gather dough and flatten to a disk, wrap in parchment, and refrigerate for at least 1 hour and up to 2 days. GALETTE 1. Slice plum halves into thin wedges and toss with honey, cornstarch, and lemon zest and juice. 2. Roll out dough, on lightly floured surface, to a 12-inch circle. 3. Pile filling into center of dough. Gather edges of dough and draw them to center, allowing the dough to fall into pleats. You should have a 3- to 4-inch opening to show off plums. 4. Chill galette for 30 minutes. 5. Preheat oven to 400°F. 6. Brush galette with honey glaze. Bake at 400°F for 40 to 50 minutes or until dough is medium brown and filling is bubbly. Cool slightly before slicing and serving.

Honey Date Pudding Cake serves 9 | prep time 15 minutes | cook time 45 minutes

ingredients 2 cups pitted dates

1 teaspoon kosher or sea salt

1 teaspoon baking soda

1/3 cup Nature Nate's Raw & Unfiltered honey

1 cup of water

2 teaspoons vanilla extract

1 1/3 cups sorghum flour

2 eggs

1 teaspoon baking powder 1 teaspoon ground cinnamon

Honey Whiskey Sauce (pg. 9)

directions 1. Preheat oven to 350°F. Grease an 8-inch square pan with cooking spray. 2. Simmer dates, baking soda, and water until dates break down and mixture thickens, about 3 to 4 minutes. 3. Whisk flour, baking powder, cinnamon, and salt together. In a separate bowl, whisk together honey, vanilla and eggs. 4. With a sturdy spoon, mix together dry ingredients with honey mixture and then add in dates to form a thick batter. 5. Bake for about 35 to 40 minutes or until a skewer inserted, comes out clean. Cool slightly, then drizzle Honey Whiskey Sauce over cake and serve immediately.

Honey Whiskey Sauce

In a small saucepan, add 1/3 cup Nature Nates' Raw & Unfiltered honey, 3 tablespoons whiskey or apple cider, and 1 teaspoon vanilla extract. Simmer over low heat until just warm. Immediately spoon over cake.

Chocolate Honey Cupcakes yield 12 | prep time 15 minutes | cook time 15 minutes

ingredients ¼ cup vegan butter

2 teaspoons vanilla extract

½ cup Nature Nate's Raw & Unfiltered honey

1 cup flour 3 tablespoons cocoa powder

1 egg

¾ teaspoon baking soda

1/3 cup almond milk 3 ounces bittersweet chocolate, melted

Big pinch kosher or sea salt Garnish: powdered sugar, Honey Chocolate Ganache (pg. xx)

directions 1. Preheat oven to 350°F. Line a muffin tin. 2. In the bowl of a mixer, beat butter and honey together until light and fluffy. Add egg, almond milk, melted chocolate, and vanilla. Beat for another minute. 3. Add flour, cocoa powder, baking soda, and salt. Mix until just combined. 4. Spread dough in prepared pan and bake at 350°F until a toothpick inserted comes out clean, about 25 to 35 minutes. Cool completely. Serve with powdered sugar or Honey Chocolate Ganache (pg. 5).

Honey Apple Strudel

serves 8 | prep time 15 minutes | cook time 45 minutes

ingredients 4 apples such as Granny Smith or Honeycrisp, peeled, cored, and cut into quarters and then cut crosswise into ¼-inch pieces

½ teaspoon kosher or sea salt

2 tablespoons lemon juice

½ cup bread crumbs

1/3 cup Nature Nate's Raw & Unfiltered honey

8 phyllo sheets, thawed

1½ teaspoons ground cinnamon plus ½ teaspoon for sprinkling

½ cup dried and chopped apricots or raisins

½ cup extra virgin olive oil Garnish: drizzle of honey

directions 1. Preheat oven to 375°F. Line a baking sheet with parchment paper. 2. In a mixing bowl, toss apples, lemon juice, honey, cinnamon, salt, apricots or raisins, and bread crumbs. Set aside. 3. Lay 1 sheet of phyllo on lined pan. Brush with evoo and continue layering and brushing remaining phyllo. 4. Scatter apples on phyllo, being sure to leave a ½-inch border. Roll phyllo, starting on the long side, to enclose filling. Tuck seam under. 5. Brush top with evoo and sprinkle with a dusting of cinnamon. Bake at 375°F for 45 minutes or until golden brown. 6. Slice with a serrated knife and drizzle with honey before serving.

Chocolate Honey Covered Apples yield 2 | prep time 10 minutes

Make 1 recipe of Honey Chocolate Ganache on pg 5. Wash 2 Granny Smith apples and dry well. Insert a stick or twig through the stem of the apple. Dip an apple in the ganache and spoon the sauce over until it's completely covered. Place on a wax paper-lined baking sheet. Sprinkle with chopped nuts, coconut, or sprinkles. Place in fridge to harden.

Chocolate Honey Truffles

yield 8 | prep time 10 minutes Make 1 recipe of Honey Chocolate Ganache on pg 5. Once chocolate is cool, allow to soften a bit at room temperature. Scoop out small balls of chocolate and roll them in cocoa powder. Store, covered in refrigerator for up to 1 week, or freeze for 2 months. For extra crunch: roll truffles in chopped nuts.

5 Benefits of Using Real Honey

1. Real honey has a richer flavor. So you can use less honey to achieve the same level of sweetness. 2. Real honey contains several vitamins and enzymes. Processed sugar contains nothing but sugar. 3. Real honey is a low glycemic index food. Processed sugar has a high glycemic index, which causes a “sugar high� and then a crash. With real honey, you get energy without the sugar crash. 4. Real honey is a monosaccharide, while processed sugar is a disaccharide. Disaccharides are harder for the body to break down and lead to fat synthesis. Monosaccharides break down before fat synthesis can occur. 5. Real honey does not contain high fructose corn syrup.
