The ‘King’ of beers Specialty ale commemorates 75 years on the ‘Town Hill’ By Jake Nichols Maybe the brewers at Snake River Brewing got tired of saying no. They get hit up a lot by organizations, businesses, nonprofits and all sorts of groups to make a specialty malt just for them. “We’ve had more people than we can count come to us as some time or another,” said Auggie Katzer, a beer rep for SRB. “There are more than 200 nonprofits, and it seems like every single one of them wants a piece of the pie. But we were more than happy to do one for Snow King.” Snow King Resort’s director of sales and marketing, Jim Goslin, approached longtime friend and head brewer Cory Buenning about a one-off festive beer for Snow King’s upcoming 75th anniversary. Before he knew it, Buenning found himself saying “why not?” As SRB director of operations Chris Erickson said, “There was just no way to say no to this one.” So the 75th anniversary commemorative Snow King Pale Ale was born. SRB had never done a specialty can before. They set their graphic designer Scott Wood (Studio 6k, Brain Farm) on task to come up with a cool can while Buenning got to work figuring out what to pour in it. Buenning settled on a pale ale and started with a combination of two popular hops from the UK: Challenger and Fuggle. He mashed these with the American-grown High Alpha Magnum to come up with a dry-hopped ale, copper in color, with a moderately bitter bite for cold skiers. “It is selling like hot cakes, we can barely keep it on the store shelves,” Katzer said. “The marketing of the can and the art that’s on it couldn’t be better for early winter. That skier and the snowflakes. It’s genius, and a big reason for the early success.” SRB had hoped to sell the ale

12 JACKSON HOLE AT NIGHT • WWW.JHWEEKLY.COM

through the end of the ski season, up until April, but Katzer says it looks like the award-winning brewery will run the vats dry by February. The limited edition cans are sure to become collector’s items. Beginning with a single cable tow in 1939, Snow King Mountain became Wyoming’s first ski area . The “Town Hill” has hosted numerous world-class ski events and practice sessions. Each spring it ends the ski season with the World Championship Hill Climb, a high-marking racing event for snowmachiners. Snake River Brewing has produced dozens of world-class beers and has won hundreds of national and international brewing awards. Will the local brewery ever say “yes” again to a specialty beer? Katzer says, “Maybe.” “I think we’d be more than happy to do one for Jackson Hole Mountain Resort,” Katzer said. “Also, the Town of Jackson is turning 100 this spring. We’ve also been interested in doing something with Search and Rescue or the Jenny [Lake] Park Rangers.”

Hole: Il Villaggio Osteria. Before ordering one of its savory pasta, meat or fish entrees, try the house-pulled mozzarella and smoked pancetta or nibble on fried olives stuffed with house-made sausage. Exhausted and it’s only 8 p.m.? Grab a wood-oven fired pizza togo; opt for the guido sarducci with mascarpone, button mushrooms, house-made sausage, caramelized onions and wild arugula. Il Villagio Osteria, inside Hotel Terra at Teton Village. www.jhosteria.com; 307739-4100. Located in Teton Mountain Lodge, the Spur is a confluence of Western and continental tastes. It’s also a great

spot to get your après on. First, order an RPK3 cocktail to warm up – that’s cinnamon infused rum with ginger beer, or a spicy margarita made with jalapeno-infused tequila. Once you’re thawed out, share some buffalo sliders, made of dry-aged ground buffalo, pancetta and topped with oven-dried tomatoes and arugula. Spur, inside Teton Mountain Lodge at Teton Village. www.tetonlodge.com; 307732-6932. If you’re in town, peel off your soggy ski clothes and head to Trio Bistro, a local’s favorite for its posh yet low-key ambience, consistently good food and creative cocktails. We suggest a blood orange margarita to launch your culinary journey, followed by a wild mushroom and arugula salad, and the BLT soup – tomato soup with arugula pesto, applewood smoked bacon and sourdough croutons. Next, try the short rib pasta – braised beef short rib, truffled ricotta, pappardelle pasta, broccolini and parmigiano-reggiano. Sample Trio’s infamous waffle fries served with bleu cheese fondue, scallions and fresh ground pepper. And save room for dessert. Trio, 45 S. Glenwood. www.bistrotrio.com; 307-734-8038. For some Southern-style cooking with panache, head over to Broadway, east of the Town Square, until you reach the historic log cabin housing Café Genevieve. For starters, we’re fond of the crispy pork belly lettuce wraps served with pickled carrots, cucumber, Thai basil, mint and cilantro. Pig candy, otherwise known as candied bacon, is also a must-taste from Genevieve’s appetizer list. Delicious entrée options include fried chicken with macaroni and cheese, caramelized diver scallops and mouth-watering Double R Ranch New York strip. Café Genevieve, 155 E. Broadway. www.genevievejh.com; 307-732-1910. A more casual option, Sidewinders serves up a long list of tasty salads,

sandwiches, burgers, ribs and more. Order a Sidewinder’s pretzel – a homemade soft pretzel stuffed with a combination of gooey cheese and pepperoni or jalapenos – while you settle in to a comfy booth and watch B-ball on one of the many HD television screens. Saddle up at the bar to enjoy its extensive liquor and beer-on-tap options. For some tasty Tex-Mex flavors, and colossal margaritas, try Sidewinders’ sister restaurant, Merry Piglets. We especially like the shrimp and spinach quesadilla. Sidewinders, 945 W. Broadway. www.sidewinderstavern.com; 307-7345766. Merry Piglets, 160 N. Cache. www.merrypiglets.com; 307-733-2966 The West Bank offers up some casual, family-friendly options, such as the Q Roadhouse and Brewery, where tossing peanut shells on the ground is encouraged while you sip house-made brews. Arrive by 5 p.m. to enjoy happy hour.
