Since 1968, HotCakes Gourmet has served the Charlottesville community at its “informal and welcoming” café and eatery. For Owner Lisa McEwan, it hasn’t always been just about crafting delicious and locally sourced food. Educating others on how to prepare meals, even kids at cooking classes, is another aspect of the foodie industry that McEwan feels passionate about. Since its inception, HotCakes has become a sought-out eatery where many locals can be spotted for any meal of the day, indulging on their made-fromscratch daily dishes. What are your favorite recipes to make? I eat mostly vegetarian, so lots of my meals start with roasting any veggies that I have on hand. Roasting is a good way to increase flavor. I’m doing the bowl thing these days, so the vegetables are then paired with a grain such as faro (Trader Joe’s 10 minute faro is a not-bad convenience food) and a condiment such as lime-cilantro cashew cream for the yum factor. Do you have any current projects? Outside of work, I don’t have anything creative going on right now. I need to fix that. What was your favorite book as a child? I would have to say The Little Rabbit Who Wanted Red Wings by Carolyn Sherwin Bailey. It’s a book with a happy ending but a little sad in the middle. The image of the little white bunny with red cardinal wings really stuck with me. H-4

Whom do you admire? Christine Lagarde, the first woman to head up the World Bank and currently the managing director of the International Monetary Fund (IMF). What traits do you find admirable in others? I admire others who show bravery to persevere through something scary, such as traveling solo. Where do you love to eat out? What do you order? We love to let Toshi at Now & Zen cook. One dish we order every time is the Aburi Salmon. I will never forget a spicy citrus sorbet that he served with yellowtail, but I’ve not had the opportunity to eat that again. What is the best advice your parents have ever given you? My parents didn’t tell advice so much as live it. They just followed through on the regular duties of life and were completely dependable. There was never any doubt that they would be there to do everything that needed to be done. What is your favorite go-to snack? Whole grain pretzels accompanied by sharp cheddar cheese.

Pumpkin Muffins Makes 2 dozen muffins
INGREDIENTS • 1 cup vegetable oil (soy or canola) • ½ cup coarsely chopped walnuts • 3 large eggs • 2 cups canned pumpkin puree • ½ cup golden raisins • 3 cups unbleached, all-purpose flour • ½ teaspoon salt • 1 teaspoon baking soda • 1 teaspoon ground cloves • 3 cups granulated sugar • ½ teaspoon baking powder • ½ teaspoon ground nutmeg
DIRECTIONS Combine all ingredients in the first group at top. Sift together all the dry ingredients in the second group. Mix wet ingredients into sifted dry ingredients. Bake in greased molds or muffin tins line with papers. Bake at 350 degrees for about 20 minutes or until the muffins spring back when touched lightly.

Can you share a recipe that is quick and easy to make with kids that they will love? Kids do love our Pumpkin Muffin recipe (at left). They are not a terrible thing to eat because they have plenty of vitamin A. I frequently have a pumpkin muffin and a latte for breakfast, and it gets me through past lunchtime. If you could have a super power, what would it be? Being in two places at once. One of me would be working while the other one tossed a tennis ball into the ocean for a dog to retrieve. Why is it important to teach children about healthy eating? I think it is important because it would be very embarrassing as an adult to be at a business dinner and not know how to order proper grown-up food. I do believe in the health aspects of a varied diet, of course, but eating is also social, and it’s nice to be able to commune over food. I have taught kids cooking classes and found that once they get their own hands on the food and are involved with preparing it, they will eat actually eat it. What advice do you have for parents when eating out with kids? Don’t order Mac & Cheese or chicken fingers. Give them bits of what you are eating and make that the norm.

What’s the first thing you remember building as a kid? When I was 7 or 8 years old, I, along with my siblings, built tunnels and forts in my dad’s hay barn. We built with the old-style rectangular bales by stacking them to make tunnels that we had to crawl through on our bellies, and by going vertical, we could build a lookout tower that seemed to be about 50 feet tall at the time. It was probably only about 10–12 feet tall. When I was 9 or 10 years old, we moved into a house that was built prior to the civil war and had been unoccupied for a long time. We poured a concrete floor over the dirt in the basement, and our family lived there in the basement for a few years as we re-built the house above. I think that is where my desire to build went from interest to reality. When do you think a homeowner needs a professional for a home project? The DIY industry is flourishing, and many homeowners are capable of doing deck or shed building projects, and doing them well, if they use the resources available, such as books or Internet articles on the particular subject. The level of expertise needed is stepped up when it comes to finishing a basement or bonus room over a garage. In those cases, the structure is there and is presumably sound, so with the help of experts in the fields of electric, plumbing and HVAC, the average handyman can do the rest if they are willing to take the time necessary to experiment and learn the techniques that lead to a professional-looking job in the end.

When it comes to building a house or adding an addition, I think it is important to go to a professional builder. From design and permitting to the end of construction and issuance of a certificate of occupancy, there are just too many pitfalls for anyone to handle who does not have a lot of experience and a lot of time. How should a homeowner interview a builder when choosing one? There are a lot of the standard questions such as price, time-frame and examples of completed projects a homeowner should ask. The single biggest factor though is references of prior customers. If they are happy, the builder is doing a good job; and if not, there are going to be problems. So, it is important to check several prior references before making a decision.

There is no room in the house that perhaps demands quite as much flexibility as your child’s bedroom. Children grow in spurts, and their bedrooms, which are far more than just a bedroom to them, needs to be able to adapt to their ever-changing selves. Their bedrooms need to carry them through from a nursery to a young child’s room to the lair of a teenager. In order to avoid frequent redecorating of their rooms, approach your child’s bedroom with the idea of “room to grow” by selecting a few well chosen anchor pieces set in a neutral backdrop, while leaving accessories as the items to move in and out when your child’s taste and interests change as they grow overnight.

That way, when Junior has tired of the color or print, you’re only committed to redoing a solitary wall as opposed to the entire room. Keep the expensive items like the furniture neutral and able to grow with your child. They will always need a bed to sleep and something to store their clothing, so when choosing a bed and dresser, invest in items that have the means to serve your child throughout all the phases of childhood. Resist the racecar bed, and instead, transition your child directly from their crib to a twin bed or larger, if the space permits. Your tot may be just 2 ½ feet tall this week, but they will be within 6 feet before you know it. So, having a bed ready to suit those sudden growth spurts will avoid a scramble to get a bed he fits in later on. If newer solid wood furniture doesn’t fit your budget, consider vintage pieces, which can add character and can often be better made than newer inexpensive pieces. These vintage pieces may need a facelift, but avoid painting in a color that can seem dated. Stick with a more neutral shade that will stand the test of time and your child’s whimsy. Beyond a dresser, your child will always need storage for their books, toys and other various sundry collections they are sure to acquire. A mix of both open and closed storage spaces offer flexibility while also adding character to the room. A bookcase or

collections, trophies and photos as well as books; whereas, a chest, storage bench or other closed unit can accommodate toys now and larger items later on. Storage bins that fit into shelves are a great option for a child’s room as well, creating a tidy look while also giving a home to some of those harder-to-store items that seem to end up sprawled all over the floor (I’m looking at you Lego’s). There are some items that might not stand the test of time in your child’s bedroom, but that’s okay. That nursing chair can make way for a few bean bag chairs when your child is ready. They
